L E T T E R F R O M T H E S TA F F

Well hi there, April! Not to freak you out, but we’re one-fourth of the way through 2018 already. Yep, really. April is here and beautiful weather is sneaking its way in, nature is in bloom (and so are my allergies), and another food issue is here! As someone who loves food, these issues are always some of my favorites to work on. In case you weren’t aware, we have some seriously great restaurants here in OKC – extremely talented chefs, creative business owners and really, really good food.

If you’re more of a make-it-yourself type of person, we created 8 eggtastic dishes just for you! We made them all, tasted them all ourselves and can let you know firsthand they are EGGcellent (I can’t get enough of the egg puns, apparently). Give them a try and be sure to send me a picture if you try one! It’s going to be a fantastic month, I can feel it. Patio season is here (Yokozuna has a beautiful rooftop patio in Chisholm Creek, just FYI) and there is a lot of GREAT food to try throughout the city. Be a little adventurous, you’ll thank me later. I hope you get outside this month and enjoy the gorgeous outdoors, try something new and make meaningful memories to treasure for years to come.

This month you’ll want to take a read through our feature On Bread! Bread is that one thing you have convinced yourself to quit, but you just can’t because it’s so chewy, warm, fluffy and perfectly risen – we know. Some of the greatest culinary creations are sandwiched between two pieces of it, placed on top of it or even mixed together with it. It’s a staple with so many dishes. We found some of our favorite bread features from great local spots Happy Eating! around the city. You’ll definitely want to work your way through this list.

Allow the Hefner family to introduce you to your new favorite sauce! Inspired by true Argentine gauchos, Galimaro Sauce was created by locals Robert Hefner IV and his wife Carol as Christmas gifts for friends and family. The circle became larger and the demand increased (thankfully), and now we all can have Galimaro Spicy Argentine Sauce! This red sauce is bold and full of amazing flavor and spice, and you can truly put it on anything. It complements all different kinds of grilled meats, seafood, pastas, veggies, tacos and even casseroles. But it doesn’t stop there – this versatile bright chimichurri sauce can be used as a marinade or in dips. The entire family has put their heart, soul and history into this sauce and you can definitely taste it. This local deliciousness is not only being distributed to local retailers within Oklahoma, but also Texas, Louisiana, New Mexico, Kansas, Colorado, Tennessee, Mississippi, Nebraska, Missouri, Georgia, Alabama and Florida. That’s a huge accomplishment for the Hefner family! Once you try it, you’ll wonder why it took you so long to do so. It has many different flavors combined into one, with a subtle heat that is not too overpowering or harsh. Find it in one of our local stores like Culinary Kitchen, Uptown Grocery Co., and La Baguette Bistro. You can find all of this information and more on their website, galimarosauce.com. Check out some quick tips below for cooking with Galimaro Sauce.

R E C I P E S Add two tablespoons of Galimaro Spicy Argentine Sauce to all your favorites:

• In a chili recipe • In cheese dip • Over a block of cream cheese the slow cooker with chicken breasts served • Inshredded, in tacos or over rice • Poured over any meat fresh off the grill to a baggie of fresh shrimp as a marinade • Added before grilling to perfection

PUPPY OF THE MONTH Meet Mabel!

OWNER: REBECCA & MITCH KUEHN This extremely loving, playful and extra cute Pomeranian is one year old and weighs a whole four pounds. Contrary to the popular belief that Pomeranians are hyper and loud, Mabel is relatively quiet and even-tempered. Pomeranians tend to adjust to their environment and adopt the personality of their owners. If you have ice, she might just become your best friend – she loves it! You might even catch her dancing in circles on two legs. She is a smart pup! She completed obedience school and knows an impressive list of commands. Miss Mabel is the queen of the house, but does have selective hearing from time to time. This cutie gets a whole lot of love and has a lot of love to give. Fun fact: Michelangelo had a Pom beside him every single day while he hung upside down painting the Sistine Chapel.

EATS Tamashii Ramen House sits in a cozy building in Midtown. They’re whipping up authentic Japanese soul food, which might just be our new favorite thing. What is Japanese soul food, you ask? Their ramen: bowls of homemade broth packed full of noodles and many other delicious toppings. But their menu doesn’t stop there. Tamashii Ramen was founded by husband and wife duo Wakana Kamesato Sebacher and Matthew Sebacher, who learned both age-old methods and newer, evolving techniques to come up with their perfect ramen recipe. Wakana was born and raised in Japan. Matthew learned to cook when he was 5 years old and went on to do extensive research in Osaka. So needless to say, you know you’re getting the real deal from two very talented people. It’s common these days to find places that make ramen using prepackaged broth, but we can guarantee you won’t find it at Tamashii Ramen. They perfect and craft their broth (arguably the most important part of ramen) for 8 to 10 hours from scratch. You can taste it in every single bite, let me tell you. The layers of flavor and creaminess it adds to the dish are unbelievable, and that’s before any of the many different toppings are added. The menu comprises a collection of great options. You’ll find many traditional dishes, including potstickers and fried rice, as well as favorites like mochi ice cream. Trust us, you can’t go wrong with anything you choose. If we can give you one piece of advice, it’s this: be adventurous and try this spot – you’ll be beyond glad you did. It’s not every day you can get a taste of Japan right in your backyard. It’s something out of the ordinary (for Oklahoma City), and for that, we really, really love it!

WHAT WE TASTED: TONKOTSU RAMEN Dense and creamy, this dish is topped with chashu, negi, menma and nitamago and finished with a drizzle of black garlic oil. VEGAN RAMEN Light vegetable broth topped with grilled tofu, moyashi, menma, negi, corn and nori CURRY RAMEN Extremely savory and comforting, Curry Ramen comes with a half slice of chashu, diced and curried, and is finished with shredded cheese, nitamago and negi. MITARASHI DANGO Skewered mochi, sweet soy topping GARLIC FRIED RICE Skillet fried rice with egg, garlic butter and negi SPICY RAMEN Packed with flavor and notes of sesame, this dish is the spice of Tamashii. Topped with spicy ground pork, negi and jalapeño. GYUDON Marinated thin sliced beef, handcrafted sauce, negi and pickled ginger

There’s major buzz going on around the newest fast-casual

Ponyboy is the newest concept from 84 Hospitality Group, which has brought us some of our favorites like Empire Slice House, Goro Ramen and Revolución. Ponyboy, which sits in the historic Tower Theatre in the Uptown 23rd Street District, is a mix between a cocktail bar and a coffee shop. They’ve partnered with KLLR coffee, and they serve crafted coffee rather than drinks with a bunch of syrups pumped into them. It’s a great spot for a late coffee, an afternoon meeting or happy hour with friends. The place comes alive at night with live music, locals from the surrounding neighborhoods and really, really great cocktails. It has a comfortable Oklahoma feel with a new and modern vibe. Currently they only serve small snacks, but they’re from great local establishments like Jerky.com and Woody Candy Company.

concept located in Midtown OKC. This spot specializes in Korean BBQ rice bowls and burritos, and if you haven’t tried them, you’re going to want to ASAP. There’s no other concept like this in the city, so you know it’s unique. You can choose between their signature bowls or create your own bowl or burrito. Their signature Gogi Go Chicken Bowl is packed with grilled chicken, cucumber kimchi, pickled red onions, cabbage, butter corn and Gogi sauce. (All the praise for the Gogi sauce!) They have delicious toppings like crushed peanuts, cucumber kimchi, pickled daikon, avocado and more. This is also a great spot if you’re not afraid of spice – they can bring the heat!

Just as the name suggests, you know you’re getting quality made-from-scratch goodness in both food and drink at Scratch. After much success in Norman, they’ve opened their second location in the Paseo District. Pretty much everything is made in-house with the highest-quality ingredients. We love Scratch because it’s anything but boring. From the unique and quaint menu options to the well-thought-out cocktails – this spot is one of a kind. It’s a place for vegans, vegetarians and meat lovers alike, and it has plenty of gluten-free options. There really is something for everyone here. The spot in Paseo is smaller than their Norman location, but it’s just as great. We 100% recommend this spot for lunch, dinner, happy hour and everything in between.

Since 2015, The Fit Pig has graced Automobile Alley in downtown OKC with a unique and healthy food concept. They’re combining great chefs and talent with high-quality ingredients that can be delivered straight to your door or picked up in the store. Their meals are packaged to eat on the spot or to save for a later date. They’re helping so many across the metro to eat well. You’ll find breakfast options like gluten-free/vegan pancakes and sprouted oatmeal, or lunch/ dinner entrees like chicken satay, veggie tacos, and spaghetti and meatballs. Just about every single dish is gluten free and many are vegetarian or vegan. Whether you’re looking for a healthier alternative when dining out or for someone to help with your meal prepping, The Fit Pig can get you on track without compromising flavor and quality.

INFANT CRISIS SERVICES Welcome to our new monthly section, in which we highlight local charities and nonprofits of all kinds that are doing great things in our city. We believe change can come in all sizes and at all times. The smallest act can turn around so much for even just one person, animal or place. If we can lift up one small aspect of one life, imagine what we can all do when we come together for the greater good of the people in this amazing city. ICS provides life-sustaining formula and food as well as diapers and clothing, wipes, blankets and more for babies and toddlers in times of crisis through private donations, grants and volunteer efforts. Through their amazing hard work, they are reaching a massive amount of those in need and helping in tremendous ways. Infant Crisis doesn’t stop at rescuing and providing for children – they also have a great resource wheel to help connect families to other assistance and helping agencies. Good nutrition is critical to a child’s physical and mental health, and they’re doing everything they can to aid and improve our state’s statistics. They’re doing so much good for the babies of Oklahoma.
