Happy New Year!

I always get a little bit of a bittersweet feeling at the turn of a new year. The festive holidays that run from October to December’s end are over, which is a little sad, but the start of a new year is always so exciting! How lucky are we to have a new year to start fresh? Sure, we don’t have to wait for the excuse of a new year to do better, to eat healthier, to work out more, to reach out to old friends and make new ones, to tackle all of those things we really wanted to do the prior year, but sometimes it helps seeing a new year on the calendar to put a little pep in your step. Have you set new goals for 2016? I plan on continuing my clean eating throughout the year (but I promise you, pizza won’t get neglected), to read as many books as possible, to travel, to let situations be what they are instead of what I think they should be, to step out of my comfort zone and say yes to more things and plans I would normally say no to, to make new art, to meet new people, to have deep conversations both with strangers and those close to me, try new recipes, to watch more sunrises and sunsets, and to spend as much time with my family as possible. Sounds like I have a busy year ahead, huh? Don’t feel bad if you’re not one of those who set new goals or resolutions each new year, because sometimes just waking up and putting two feet on the ground and pushing forward is enough, and I am proud of you!

Southern Plains Pastures is raising happy, healthy heifers and steers that have never been given steroids, antibiotics or grains. The animals spend their lives munching away on grass in clean, green, luscious pastures. The chicks feed on 100% all-natural feed ration. This 160-acre family farm has been in operation just on the northwest side of Norman since 1982. A family brought together by a love for growing food is now able to venture into public sales thanks to Oklahoma’s farmers markets and local sustainable food movement. Using primarily natural methods, the farm raises chickens, keeps honey-producing bees, and grows small fruits, including table grapes, blackberries and strawberries.

The Fishers are still farming land that Luke’s family settled in 1905, growing delicious produce. With a love for gardening, the family decided the most logical thing to do was make the garden bigger, so they could grow enough for them and for us!

On 60 acres, the Thorntons are raising alpacas and Merino sheep for fiber and meat, Nubian goats for milk and soaps, ducks and Jersey cows for meat, and chickens for eggs. Their 3-acre garden produces an abundance of vegetables and herbs. They raise bees for local honey and have a 76-tree orchard with a variety of fruits.

Acadian Family Farm Producer: Rod & Nanette Ardoin Place: Fort Cobb, OK Produces: Sweet potatoes Having been in the farming business for 30 years, the Ardoins know what they’re doing with sweet potatoes. Their 80-acre farm is certified organic with the Oklahoma Department of Agriculture, Food and Forestry. They’re producing the truest, purest sweet potatoes, using absolutely no genetically modified seed, chemical pesticides, herbicides or chemical fertilizers.

This sweet farm is churning out all-natural and delicious homemade cereals for granola. Each batch is mixed, turned and baked by hand in small batches to ensure the consistent and delicious flavor Briarberry is known for.

A former New York City chef who has worked with the likes of Mario Batali and Lidia Bastianich moved to Oklahoma City with his wife. His passion is traditional, artisan pasta, and you’ll find his homemade creations, made with organic durum wheat semolina, in spots like Whole Foods Market, Olive & Co., Native Roots, Bill Kamp’s Meat Market, Urban Agrarian and more.

10 Acre Woods, A Family Farm

10 Acre Woods was founded in 2012 with just six chickens. The farm’s responsibilities quickly multiplied as the flock grew and non-GMO produce was added. The large garden is seeded from organic and heirloom seed sources.

Eat To Work Out Recipes, Tips & Tricks


PRE-WORKOUT MEAL Food is fuel. It’s recommended you eat a nutritionally balanced meal 1-2 hours before you train.

BANANA BLUEBERRY OVERNIGHT OATS Credit: apumpkinandaprincess.com Yield: 1 serving

Ingredients: •

⁄3 cup old-fashioned oats (not instant)

Handful of blueberries

⁄2 cup plain Greek yogurt ⁄2-2⁄3 cup almond milk (vanilla is OK) ⁄2 tbsp chia seeds

⁄2 banana

Instructions: 1.

In a sealable bowl or mason jar, add oats, yogurt, milk, chia seeds and brown sugar. Start with 1⁄3 cup of milk and add up to another 1⁄3 cup, depending on how thick you prefer your oatmeal.

2. Cover and chill in the refrigerator overnight. 3. When ready to eat, top with sliced bananas and blueberries.

ALMOND BUTTER TOAST WITH BANANA Spread fresh almond butter on a piece of whole-wheat or Ezekiel toast. You can opt to top with banana, toasted pumpkin seeds, slivered almonds, or chia seeds.

PRE-WORKOUT SNACK If you don’t have time or aren’t up for a full pre-workout meal, opt for a quick but effective snack 60 minutes before training. You want it to be a combination of lean protein and slow-acting carbs.

VANILLA ALMOND GRANOLA Credit: sallysbakingaddiction.com Yield: 2-3 cups

Ingredients: •

2 1⁄2 cups old-fashioned rolled oats (not instant)

⁄2 teaspoon ground cinnamon

Pinch sea salt

⁄2 cup pure maple syrup or agave nectar

1 tbsp vanilla extract

⁄4 cup melted coconut oil ⁄4 tsp almond extract

Instructions: 1.

Preheat oven to 300°F. Line a large baking sheet with parchment paper.

2. Toss the oats, almonds, cinnamon and salt in a large bowl. Set aside. In a medium bowl, whisk together the maple syrup, coconut oil, maple syrup and extracts until combined. Pour over the oats and stir.

Spread onto the prepared baking sheet and bake for 45 minutes, stirring every 15 minutes. Allow granola to cool completely, This will allow it to get crunchy.

Enjoy 3/4 cup of the finished granola by itself or with almond milk and fruit.

Tips

3.

Keep fiber consumption to a minimum before a workout. Too much can lead to belly bloating and cause muscle cramping.

It’s not recommended to eat right before a workout. Try to give yourself at least 30 minutes for settling and digestion.

Good carbs are GREAT! Don’t eat bad sources of carbohydrates that will energize you quickly, but will also make you crash quickly.


BERRY GREEN SMOOTHIE Credit: damndelicious.net Yield: 2 servings

Ingredients: •

1 cup spinach leaves

1 ripe banana (you can use frozen if you’d like)

Dash of honey

⁄2 cup frozen blueberries ⁄2 cup frozen raspberries

⁄2 cup almond milk or water

Instructions:

Combine all ingredients in a blender and blend until smooth. Enjoy immediately!

Ingredients: •

1 apple

2 tbsp all-natural peanut butter or almond butter

Pecans (optional)

Coconut shreds (optional)

Chocolate chips (optional)

Instructions: 1.

Core the apple.

2.

Slice apple into thin rings with a knife or mandolin.

3.

Spread 1 teaspoon of peanut butter over one side of the ring.

4.

Repeat until all apple slices are covered with peanut butter.

5.

Sprinkle with toppings and munch!

POST-WORKOUT MEAL Refuel with food. After a workout, make sure to combine the right balance of protein, carbs and healthy fats. For best results on building or rebuilding muscle and fueling your body, try to eat 30-60 minutes post-workout.

Ingredients: •

4 cups shredded red cabbage

2 cups cooked quinoa (red quinoa works well)

2 cups shredded carrots

Asian Honey Vinaigrette

⁄2 cup slivered or sliced almonds, toasted

ASIAN HONEY VINAIGRETTE: • • • • • •

1/3 cup olive oil 3 tbsp rice wine vinegar or apple cider vinegar 1 tbsp honey or agave 1 tsp low-sodium soy sauce 1/8 tsp sesame oil Pinch of salt and black pepper

Instructions: Toss all of the ingredients together until combined. Serve immediately or refrigerate in a sealed container for 1-2 days.

BUTTERNUT SQUASH, BRUSSEL SPROUTS & JICAMA HASH Credit: thehealthyfoodie.com Yield: 6 servings

Ingredients: •

1 ⁄2 medium butternut squash, peeled and diced (about 4 cups)

⁄2 medium jicama, peeled and diced (about 4 cups)

3 cups Brussels sprouts, cut into 2 or 4 pieces, depending on size

1 large red onion, chopped

2 sprigs fresh rosemary, chopped

⁄4 cup pecans, chopped ⁄4 cup dried figs, chopped

FOR THE SAUCE: •

3/4 tsp Himalayan or fine sea salt

1 tsp freshly cracked black pepper

2 tbsp Dijon mustard

1/4 cup coconut oil, melted

1/4 cup apple cider vinegar

3 cloves garlic, minced

1/2 tsp smoked paprika

Instructions: 1.

Preheat the oven to 375°F and line a shallow baking dish or sheet with parchment paper.

2. In a large mixing bowl, combine all the vegetables, pecans, dried figs and fresh herbs. Set aside. 3. In a smaller mixing bowl or in a small food processor, combine all the ingredients for the sauce and mix until well incorporated. 4. Pour the sauce over the reserved vegetables and mix until well combined. Transfer the veggies to the prepared baking dish and bake in the oven for about 40-45 minutes, stirring once or twice. 5. When the veggies are cooked to your liking, set the oven to broil and cook for 2-3 minutes, just to slightly brown and crisp the top a little. 6. Serve immediately as a main dish or pair with grilled or baked chicken breast.

POST-WORKOUT SNACK Put down the weights, pick these up. If you aren’t ready for a full meal after a workout, try to eat a snack immediately following a workout.

CHOCOLATE MILK 1-2 cups of low-fat chocolate milk seals the deal with extra carbs and protein. In addition, it’s full of vitamins and minerals, like calcium, vitamin D, vitamin B, vitamin A, potassium, sodium and electrolytes.

CHOCOLATE CHIA RECOVERY DRINK Credit: minimalistbaker.com Yield: 2 servings

Ingredients: •

14 oz chocolate coconut water beverage*

2 tbsp salted peanut or almond butter

⁄2 tbsp banana, sliced or frozen ⁄4 cup ice

1 tbsp hemp seeds

⁄2 tbsp flaxseed meal *If you can’t find chocolate coconut water, sub coconut water + 2 tbsp cocoa powder.

Instructions: 1.

Add chocolate coconut water and chia seeds to a blender and let rest for 10-15 minutes, so the chia seeds can swell and activate.

2. Add remaining ingredients and blend. For a thicker shake, add more ice and/or frozen banana. 3. Divide between two glasses and serve immediately.


TUNA STUFFED AVOCADO Credit: thestayathomechef.com Yield: 2-4 servings

Instructions: 1.

Scoop out some of the avocado from the pitted area to widen the “bowl” area. Place the scooped avocado into a mixing bowl and mash with a fork.

2.

Add the tuna, bell pepper, jalapeño and cilantro to the mixing bowl. Pour the lime juice over everything. Stir it all together until everything is well mixed.

3.

Scoop the tuna mixture into the avocado shells. Season with a dash of salt and pepper.

4 avocados, halved and pitted

2 4.5-oz cans tuna, drained

1 red bell pepper, diced

1 jalapeño, minced

1 cup cilantro leaves, roughly chopped

1 lime, juiced

Salt & pepper

You can’t outwork a bad diet. Don’t reward yourself with foods high in calories and saturated fats after a hard workout.

Not all of these meals and snacks have to be made fresh. Spend some time in advance meal-prepping and placing into ready-to-go containers, for convenience and a major time-saver!

Don’t skip a post-workout meal even if you’re not hungry. It’s vital for maximum results and muscle building or rebuilding.

EATS Eleven years ago, the famed Chef Bruce Rinehart brought his love for East Coast-style food to the corner of 28th and Penn, where he founded a restaurant and named it Rococo. Fast forward six years: his success has resulted in a second location on the northwest side of the city, in Northpark Mall. This is a spot that boasts comfort, camaraderie and delicious food. One of the many things we love about Rococo is that almost everything on the menu is house-made, from the coleslaw to the ketchup. What isn’t house-made is shipped overnight directly from the East Coast, so you know you’re getting the freshest seafood available. But the menu isn’t restricted to East Coast fare: it wouldn’t be Rococo if it didn’t have a little bit of flair, like the Rococo Cookies or the beloved Hawaiian Poke. 4 oz cooked Japanese rice, mixed with vinegar, sugar and salt 1 ⁄2 sheet of dry seaweed (nori) 4 oz crab meat, water squeezed out, chopped, and mixed with some Japanese mayo 3 pieces of shrimp tempura (fried) 1 oz cream cheese 2 oz eel sauce (sugar mixed with soy sauce) 1 oz spicy sauce (mayo mixed with Sriracha sauce) 1 oz flying fish roe (tobiko) 1 oz tempura flakes

Cover the entire sheet of dry seaweed with the rice. Gently press rice down. Flip the rice upside down so that the seaweed is on top. Place cream cheese, shrimp tempura and spicy sauce on the seaweed. Using a sushi mat to help hold the roll in place, roll it tightly. Place crab meat and tempura flakes on top of the roll.
