Happ y July

L E T T E R F R O M T H E S TA F F

This issue is going to be the one most dear to my heart, because I got to be part of the whole process! Yep – I’m a newbie to the So6ix Family! Honestly, July is one of my favorite times of the year. I love the summer, even with the heat, and this month embodies every great thing about it! From the Fourth of July, to the music, to new friends and festivities, July is just filled with awesome things to get into!

Also in this issue, we continue the Street of Dreams story, highlighting two amazing home builders that are part of the Central Oklahoma Home Builders Association. I hope you’re able to soak up what they have to offer and take something away from their story.

This issue is our summer food issue, and if you know me, you know this is my language! Food is a great way for people to share their cultures and diversities with one another, and this issue does just that, showcasing the wide variety of food we Oklahomans celebrate, especially in the summer! We took a different approach and focused on the beautiful food trucks that Oklahoma has become home to. The old, the new, the sweet and the spicy: whatever kind of food truck you can think of, we’ve got it in here. It was really inspiring to see the process that goes into running these mobile restaurants. I think you all will love reading through it as much as we loved creating it!

Finally, I hope you enjoy this month, get out as much as you can, spend time with family and be your happiest self! July is the best time to explore and be adventurous with every aspect of your life! So don’t hold back – let yourself experience all the new things! I promise you won’t regret it!

PUPPY OF THE MONTH Old English Sheepdog

Adaptable, gentle and smart, the Old English Sheepdog is famous for its sweet and agreeable nature, according to the American Kennel Club. These large-sized pups have a medium level of energy, which makes them great for families, especially those with kiddos. They make pretty mellow house dogs and are a generally healthy breed. They do have long fur, so weekly grooming is recommended. 24

Oklahoma City’s food truck community is as large as it’s ever been, and it keeps growing. Nowadays, there’s a food truck for just about everything, whether it’s breakfast, coffee, Cajun food, donuts, vegan or burgers – you name it. We love everything about this trend: we love that the community is coming together to enjoy these mobile eateries in festival-like settings, along streets, and in front of businesses. We love that the owners and operators have created their own inner communities full of support and advice. We love that there is most likely going to be a food truck for whatever you’re “feeling.” Lastly, we love good food with effort, passion and hard work cooked into it. We’ve got food truck fever and we don’t see it going away anytime soon. *Many, if not all, of these food trucks can be hired for private events if their schedule allows.

Mim’s Sam, a culinary school graduate, and Emily, a pastry chef, grew up in the restaurant business and shared not only a love for food, but a passion for vegan fare. They started out in 2013 making custom-order cakes and selling wholesale to restaurants. They noticed that dining choices for vegans in OKC were limited and vegan dessert choices were almost non-existent. They created this vegan sweets and eats truck, and they’ve been making both vegans and non-vegans full and happy since May 2015. Their goal is to bridge the gap between vegan food and that of the more traditional eater, taking pride in serving plant-based food that isn’t intimidating to omnivores. If you’re hesitant on trying vegan eats, we’ll go ahead and share the secret … their food is so good you won’t even tell a difference! They keep the favorites around, like falafel and an assortment of cookies and cookie sandwiches, but the cake changes daily, the soup changes seasonally and they regularly run entrée and dessert specials. Try it once and we think you’ll keep coming back. We know we will.

The F:

Healthy Hippo

Husband and wife duo Fiorella and Craig own and operate this purple giant: The Healthy Hippo. Both come from a background of working in restaurants and gourmet cooking, so why not follow their passion and open up a mobile eatery? They were inspired by a food truck in Texas that was serving up glorified grilled cheeses, aka Grilled Panini Sandwiches. They were confident they could do this, too, and do it well. This old bus-turned-food truck is serving up healthy options, taking pride in great-tasting, non-fried food for all dietary needs. They have gluten-free, vegan and vegetarian options. Their menu changes with monthly specials, and they add stew during the winter months.

Pitchfork Kitchen & Bakery A unique-looking truck serving up unique and delicious flavors: meet Pitchfork Kitchen & Bakery! The inspiration for this mobile eatery came from their family farm, Bar-D farms, which has been in continual operation in the family since 1893! Many of the recipes come from the farm, as well as the truck, a 1952 wheat truck. Talk about rich history packed into a food truck – we love it. Another thing we love: Pitchfork strives to use as many Oklahoma ingredients as possible! They’re proud to serve Blue & Gold sausage, chicken and bacon, as well as their own personal blend of coffee, roasted by Crowed Coffee of Oklahoma. They menu is constantly changing and since they have a bakery onboard, you never know what they might be whipping up.

Metro Minis Gourmet Mini Donuts A couple came up with the glorious idea to share their love for mini donuts, and they saw a need for a mini-donut food truck in Oklahoma City! Yes, need: we all need these mini donuts in our lives. Metro Minis, born from the inspiration of a yearly Colorado vacation, has been serving up sweetness since October 2015. These sweet treats are made fresh to order and they literally melt in your mouth. There are so many wonderful options, and to make it even better the menu changes almost every week, sometimes multiple times a week, as they’re constantly experimenting with different toppings and adding new flavors to the menu.

The

Sugar Shack The Sugar Shack is making all of our sweet dreams come true. This sweet eatery has been a truck for almost a year and a half, making lots of bellies really, really happy. Shelby Parks may just be the youngest food truck owner and operator in Oklahoma City, at just 20 years old. Shelby has always loved to bake, but it was just a hobby until she was attending college and looking for a career she would actually enjoy. Then, ta-da! Her baking became a career with The Sugar Shack. Their menu changes with the season: for instance, in the fall they add pumpkin products to the menu. One great thing about this truck is that if Shelby wakes up with the urge to add something totally random to the menu, she can do just that. You’re going to want to try one of everything, trust us.

Coit’s Like us, many of you probably grew up driving through Coit’s and making memories over hot dogs and ice-cold root beer. We were crushed when we heard the news that they were closing, so you can guess our excitement when the Coit’s food truck was born, bringing the old traditions back to life in a mobile version! Some of the staples of Coit’s that you grew to love are back in action around town. They’re slinging out chili dogs and life-changing root beer – yes, it’s really that good. Do yourself a favor: drop everything and find this food truck when and where you can. You’ll thank us.

Bacon N’ Cakin' Owner Chris Schwerdtfeger, a Le Cordon Bleu Culinary Institute graduate, saw a niche for breakfast food and made his food truck dream happen. Plus, who doesn’t love bacon? Chris has always had a love for food and customer service, and for him the food truck is the best of both worlds. He is finding creative and delicious ways to infuse, top, sprinkle and flavor with bacon. Bacon’ N’ Cakin’ does both breakfast and lunch, serving up pancake creations alongside a new slider menu that they plan to continually grow. Bacon, breakfast and sliders – we’re in!

Pinky’s Rolling Fresh Pinky’s is rolling out the fresh food and we love it! Vondah Stockbridge, owner of Pinky’s, was strongly influenced by her grandmothers, who were wonderful cooks. Her father’s mother managed the infamous Cattlemen’s in Oklahoma City for as long as she could remember. On numerous occasions Vondah tagged along and helped out with some of the small stuff. Her mother’s mother was a great down-home country cook who ran her own café near Elgin. So with Vondah, Pinky’s is in great hands! Pinky’s likes to keep it fresh, with the motto “any venue, any menu.” They of course keep the favorites around, like their famous lobster roll, but they like to change it up with the rest of the menu. This mobile eatery is so popular that they’re currently working on a second truck and are opening a brick-and-mortar bistro in Norman soon!

A Latte Love Coffee House A Latte Love started as an at-home hobby for coffee lovers and quickly grew into a dream for a mobile café. A Latte Love sought out a coffee vendor and found that Grounds 4 Compassion was the perfect fit, as they both share the desire to provide an amazing product for customers to enjoy. They’re loving being full-time in the food truck world, but have big plans for the future, like more mobile units, a possible brick-and-mortar shop and maybe even a franchise! If you haven’t heard of A Latte Love yet, you will. If you’re getting a little bored with plain coffee, they have so many fun flavors, like Turtle Cheesecake and Snickers, and they love to incorporate seasonal flavors. We think you just found your new coffee addiction.

Wicked Hangry Being a single mother and working full-time can be a real struggle, so Heather decided to open up her own business: a food truck! After a little research, it was decided you can’t go wrong with handmade gourmet burgers with a variety of fresh and tasty toppings to keep them interesting. This is Wicked Hangry’s first season to go to full-time status, and we are super happy about it! We love the unique and tasty toppings, like mac & cheese, grilled pineapple and mango salsa, and fried onion strings, and you if you like spicy you HAVE to get the wicked sauce on anything and everything you can.

That Pie Truck It’s a dream come true: delicious pie, traveling all over town! Meet That Pie Truck. It’s a family affair: a mother and her two daughters, with the help of her husband, were already successful in their pie selling, so they thought – why not a truck? The mom, Gina, has a civil engineering master’s from the University of Oklahoma, and she thought she would never do anything else. Four years ago, during retirement, she began selling pies to the metro Garages, Pub W, and Wes Welker’s, and she saw the need for a pie truck. Now in circulation for a little over eight months, they’re as popular as ever, with new additions like fried pies and cobblers, and savory pies in the fall. Their pies are so heavenly – we suggest you find them where you can!

La Gumbo Ya Ya Homemade Cajun food driving around in our city is a dream come true! La Gumbo Ya Ya lives up to all its hype. They won 2nd place for Best Cajun Food Truck in North America by Mobile-Cuisine.com, which is a huge honor! La Gumbo Ya Ya features both authentic Cajun food and Puerto Rican flavors. Both cuisines on the truck are inspired by three distinct cultures: Spanish, French and African. Chef Willy, William Fontanez, is Puerto Rican by birth and grew up in New Orleans, where he learned about the great flavors of the South, and he now gets to share his passion for food and his love of the community here in Oklahoma City with his entire family on board. You’ll find tasty eats like Gumbo (one of their staples), Red Beans and Rice, Etouffee, Jambalaya, Cuban Sandwiches and more. One of the many great things about La Gumbo Ya Ya is that they offer suspended meals for purchase. You can buy a $5 suspended meal, and when someone comes to the truck who doesn’t have enough money, they’re able to pay it forward with the help of your suspended meal purchase! Such an awesome addition to a wonderful truck.

The

Fried Taco The Fried Taco is bringing the robust and unique flavors of the Caribbean to the streets of OKC, and we’re all for it! Ruben Pacheco and his wife own and operate this taco heaven on wheels. Growing up, Ruben was inspired to cook by his mother, who was constantly cooking for friends and family. Ruben is from Puerto Rico, and his mother served up traditional Puerto Rican cuisine. Though he’d been working in the energy industry, Ruben decided to take his passion for cooking full-time with The Fried Taco just a little over 3 months ago. There’s nothing else like this truck in OKC and that makes us love it even more. If you close your eyes while you’re indulging in these tacos, it’s almost as if you’re sitting in Puerto Rico. Eventually they’d love to take this concept into a brick-and-mortar store, but until then we can enjoy it in the mobile version! P.S. Do yourself a favor and try the tostones: double fried, smashed, unsweet plantains, aka Puerto Rican french fries – so good! 44

The Flying Pig BBQ BBQ & Mobile Smokehouse

After spending 30 years in the healthcare business, including over 20 as a registered nurse, it was time for a change for Dave. After quitting his job and trying out the stay-at-home-dad life, he decided it was time to get out and do something new. Over the years he always had three or four big cookouts at his house, with between 20 and 50 people enjoying his delicious BBQ and cooking, urging him to “please open a restaurant!” Dave had just gotten his pilot’s license, and so The Flying Pig was born! The basics of the delectable BBQ menu stay the same, but they always have some sort of special going, with new ideas like loaded avocado or spicy mac & cheese. They are serving up some seriously tasty smoked meats that will have you finding The Flying Pig wherever it lands.

STREET OF DREAMS 2016

Adams Kirby Homes

Allenton Custom Homes

Meet Adams Kirby Homes, a family business managed by Richard Adams and Michelle Kirby. The Adams Kirby Homes family team values integrity, meticulous attention to detail and absolute personal supervision of each home.

Meet Authentic Custom Homes, owned and operated by husband and wife duo: Kenyon and Brandi Woods. They want your home to be Authentic, not like every one else's. To them, every house should be as special as the family that makes it their home.

Adamskirbyhomes.com

1. Do you have a building style? If so, how would you briefly describe it? Our style varies from home to home, however our commitment to quality and attention to detail is unprecedented. We value our customers; we always strive to incorporate their vision and style. 2. We can't wait to see your Street of Dreams custom home! If you could give us one little sneak peek, what would it be? We are featuring a Mediterranean-style home with a barrel tile roof and an elegant backyard oasis. The master suite will be incredible, from the unique ceiling treatments to the see-thru linear fireplace, a huge master closet, a fabulous master shower for two and a beautiful freestanding tub. No detail left undone! 3. What's your favorite thing about being a home builder? Building a personal relationship with our clients is our favorite thing about being homebuilders. Each client deals directly with one of our owners, Rick or Michelle, on all stages related to building their custom dream home. It is truly fulfilling when our customer’s vision becomes a reality. 4. If you can pick one, what is your favorite design trend right now?

Our designer, Amber McCullough, does an outstanding job of embracing design trends while keeping with an overall timeless appeal. We will be spotlighting gold lighting and hardware in our Street of Dreams kitchen, incorporating it into an overall home style that will be enjoyed for years to come. 5. What is your best advice to readers when it comes to custom home building/design? Communication is the key! Direct communication between the builder and customer will be very important to ensure the home vision is accomplished. Adams Kirby delivers because we work directly with our clients during the entire process so that when the project is finished we have met or exceeded expectations. A great home designer is also very important. Brent Gibson Classic Home Design was chosen for our dream home. 6. What's it like to be a part of Street of Dreams? And what are you most excited for with Street of Dreams? It’s an honor to participate in this elite event. Adams Kirby Homes is looking forward to sharing our expertise and quality homes with the community and developing new relationships with potential clients.

allentonhomes.com

1. Do you have a building style? If so, how would you briefly describe it? We build a variety of styles including Transitional, Traditional, Craftsman and many more. We unveiled some modern plans this year and we are excited to showcase a Modern Farmhouse style with our Street of Dreams home. 2. We can't wait to see your Street of Dreams custom home! If you could give us one little sneak peek, what would it be? This home will have so many things that people will love, from the two-story master closet to the large windows in the main area that bring in a lot of light and overlook the spa and the trees in the backyard. We have a restaurant-style wine storage, a rock climbing wall, and a master shower that people will be talking about! I don't want to give away the details of the master bathroom, but it's a must see. 3. What's your favorite thing about being a home builder? The building industry has given me the ability to build a very successful and reputable company with my wife as my partner. I am so proud of our company and the service that we offer to our customers. Our focus is on quality and customer service. Each home built employs many people in this community, and that gives me great joy as well. 4. If you can pick one, what is your favorite design trend right now?

Right now, our favorite design trend is the modern farmhouse and we wanted to bring that to OKC. Urban Farmhouse has partnered up with us, as well as Amini's Galleria, to decorate this home and complete the vision. 5. What is your best advice to readers when it comes to custom home building/design? Custom building is only as difficult as you make it. Do your research, find a Certified Professional Builder to build your home, and then trust that they will make your dreams a reality. 6. What's it like to be a part of Street of Dreams? And what are you most excited for with Street of Dreams? We are honored to be one of the Street of Dreams builders. Every home will be amazing. People love homes and home design and this is an exciting event that will give everyone the opportunity to see seven incredible homes in one neighborhood. We are excited to showcase what we can do on a large scale.

GUYUTES

EATS Guyutes! Guyutes! Guyutes! This beautiful spot is known for its peculiar name that no one seems to know how to pronounce. (Just to keep the mystery going, we’re not going to teach you either.) Since this issue was focused on food trucks, it seemed only right to do a review on a brick-and-mortar restaurant in OKC that actually serves street food. And not just any kind of street food, but ELEVATED street food! Imagine if numerous food trucks in OKC came together and opened a restaurant – that’s exactly the magic that Guyutes has captured. Every single item we tried just got better and better! The dessert was absolutely to die for, literally melting in our mouths, and the drinks reminded us of the first time we found our favorite wine – grown-up heaven! Then the entrées! Let’s just say Chef Drew Gallegos must have the tears of a unicorn mixed with sugar and spice in that kitchen, because we have never tasted anything so good! Each dish was seasoned to perfection and made fresh, in-house, and with as many locally sourced products as possible. The menu is such a great eclectic mix, which we think suits the owners perfectly: Wayne is a traveler who has been in the food industry for 10 years, and Jarrod worked in the construction industry before opening Guyutes. It gets better, too! They have a full brunch menu on Saturdays and Sundays from 11-3 p.m. On Thursdays, they host an “inebriated” spelling bee. They stream concerts on their rooftop patio. They have rotating drafts during happy hour. They have daily specials on drinks and dinner. And last but not least, they have vegan AND gluten-free options! Magic, right? This spot is the jackpot, and we’re definitely going to be regulars here! Wayne and Jarrod, please reserve a permanent table for the So6ix family because we’re hooked forever. 52

COOKING WITH CHEF MINH NGUYEN

TERIYAKI STEAK

INGREDIENTS •

4 oz thinly sliced steak (any cut, ribeye pictured)

1

4-5 mushrooms, thinly sliced

1

⁄2 zucchini, sliced longways

⁄4 white onion, sliced

CHEF MINH: MUSASHI'S •

1

⁄2 red bell pepper, sliced

2 stalks green onion, sliced

1 tbsp butter

2 tbsp teriyaki sauce

Salt & pepper

Chef Minh, born in Vietnam, has been a chef for the last 23 years. He got his start in Canada and moved to Oklahoma in 2000, and soon started working at Western Concepts. His favorite thing about being a chef is that he can continue learning new things every day and working with people. Chef Minh loves to be creative in the kitchen.

PREPARATION 1.

Slice all of the vegetables and steak with a sharp knife and set aside.

2.

Melt the butter in a hot wok or pan. Sauté vegetables until almost done, but not quite.

3.

Toss in the steak with your veggies and stir until steak is cooked medium, about 2-5 minutes depending on the heat of your pan. Sprinkle with salt and pepper.

4.

During the last minute, coat your veggies and steak with teriyaki sauce (store-bought or homemade).

5.

Enjoy! so6ix.com | JULY 2016
