Happy 4th of July! This month is one of my favorite times of the year. Growing up in Oklahoma means knowing how to have a great 4th of July. I have so many memories of going to the fireworks stand with my family, picking out fireworks that I knew could make the biggest boom, and having one accidentally go off in my hand at least once a year. I can’t even count the times my siblings, cousins and I got into massive Roman candle and bottle rocket fights. If you’re from Oklahoma, you know what I’m talking about. These days I prefer a comfortable chair and a killer view at one of the great shows in the city, but I will always cherish growing up in Oklahoma during the 4th of July! We have an extremely awesome issue for you this month. July is a really big food issue for us, and we pulled out all the stops to make this one great. We decided to pick avocados as the central theme for all our restaurant partners to show off what they can do, because who doesn’t love avocados? It was so much fun to see some of the best restaurants in the city make us amazing and creative dishes incorporating avocados in tons of different ways. We hope you enjoy the AVO. spread, and make sure you try all of them for yourself. Tell them you saw it in So6ix!
I must take a minute to brag on our COO, Lauren Wright. She said she wanted to do a feature on hot dogs, a summer staple food. As soon as she told me the idea, I got extremely excited because I know that when she undertakes projects like these, they always turn out amazing (e.g., the toast spread she did in April). She did the research, went to the grocery for the supplies, and then spent hours making all kinds of creative hot dogs for this issue. It’s Hot Diggity Dog! Step out of your comfort zone and give them a try. You won’t be disappointed – they are delicious. We sincerely hope that you love this new issue as much as we do. Summer is a great time for having new adventures. Why not make some memories in the great outdoors? Even though Oklahoma can get pretty toasty in the summer, we have tons of great camping areas near waterfalls and lakes for the perfect summer getaway. Whether you plan to do some hiking, hang out at the lake or just spend a night or two in your backyard in a tent with the kiddos, we’ve laid out some of the best food ideas (because half of camping is about the eating, right?!) and some helpful hacks to get you through the trip smoothly. A lot of these things can be made ahead at home and brought with you to the campsite to make your life even easier. It’s all about proper planning and having fun.

BLT BITES Credit: pinchofnom.com Serves: 12 sticks
Ingredients: • • • •
12 cherry tomatoes 6 pieces bacon Iceberg lettuce 12 skewers or sticks
Instructions: 1.
Cut the cherry tomatoes in half and set aside. Cook your bacon until done. You’ll want it in between soft and crispy, so you’re able to thread the skewer through.
2.
You can either cut the iceberg lettuce into chunks or just peel the amount and size you need away from the head of lettuce.
3.
Start building your skewers by putting a tomato first, then lettuce, then bacon. Repeat the lettuce and bacon and end your skewer with the other side of your cherry tomato. Serve with a dip or eat plain.
CAMPFIRE CONES Credit: the-girl-who-ate-everything.com Serves: Any amount
Ingredients: • • • •
Waffle ice cream cones Marshmallows Desired toppings: chocolate chips, bananas, raspberries, Reese’s, etc. Foil

Instructions: 1.
Fill and layer your cone with desired toppings and wrap in foil so the entire cone is covered and secure.
2.
Toss on the campfire for 5-7 minutes or until everything is nice and melted.
Tip: These can be assembled ahead of time and thrown on the grill, or can even be put in the oven at 400 degrees.

HOT HAM & SWISS CROISSANTS Credit: lifewiththecrustcutoff.com Serves: 4
Ingredients: • • • • • • •
2 tbsp Dijon mustard 1 tbsp honey 1 tbsp brown sugar 4 croissants, split 8 slices Swiss cheese 1 lb deli ham Foil
Instructions: 1.
Mix the mustard, honey and brown sugar together. Spread the mixture inside each of the 4 split croissants.
2.
Place a slice of Swiss on each half (2 pieces per sandwich).
3.
Top the bottom half of the croissant with as much ham as you’d like. You might not use the whole pound.
4.
Place the halves back together and wrap in foil. Store in a fridge or cooler until ready to cook, then throw on the campfire grill for 10-15 minutes or until the cheese is melted.
Tip:
Make ahead of time before you leave the house and bring them with you in a cooler. Everyone will love these!

Sifting through luggage when it’s hot and you’re on the go sounds like a great way to raise the blood pressure. Stay cool and organized with easy outfit bags already prepared before you head out into the wilderness. Write the day on a resealable plastic bag and place the outfit you’re going to be wearing into the bag. This is an easy way to keep your luggage organized and keep yourself calm, cool and collected.

Ingredients: •
1 package crescent rolls
• • • • •
1/4 cup sugar 1 tbsp cinnamon 1/4 cup powdered sugar 2-3 tbsp water Wooden skewers
Instructions: 1.
Combine cinnamon and sugar in a small bowl.
2.
Separate crescent rolls and wrap them around the skewer. Roll in the cinnamon sugar mixture.
3.
Cook over the campfire for 5 minutes, rotating frequently.
4.
Mix the powdered sugar and water together to make a glaze. Drizzle the cooked skewers with glaze and enjoy!
MASON JAR YOGURT PARFAITS Credit: savorypantryblog.com Serves: 4
Ingredients: • • • • •
Greek yogurt, or any other yogurt Granola Fresh fruit Raw honey 8-oz Mason jars
Instructions: 1.
Fill each jar with half a cup of yogurt, or halfway up the container, depending on the size you choose. Drizzle with honey.
2.
Make a layer of fresh fruit or berries and top with a handful of granola if desired.
3.
Pop the lid on top and store in a cooler or refrigerator for up to 3-4 days, depending on the ripeness of your fruit.

CAMPING MAC ‘N’ CHEESE Credit: laurenslatest.com Serves: 4
Ingredients: • • • • •
1 1/2 cups elbow macaroni 8 oz prepared Alfredo sauce 1/2 cup sharp cheddar cheese, grated 1/2 cup Parmesan cheese, grated 1/4 cup mozzarella cheese, grated

1/4–1/2 cup whole milk Salt and pepper, to taste Mini aluminum pie tins, or one big one
Instructions: 1.
Cook pasta according to package instructions. Drain and rinse.
2.
Stir Alfredo sauce into the cooked pasta with the three cheeses and enough milk to keep it from getting too thick. Stir in salt and pepper to taste.
3.
Spray the pie tins with nonstick cooking spray and fill with the mac ‘n’ cheese. Wrap with foil and store until ready to cook.
4.
Place the tins on a cooking rack over the campfire and cook 8-10 minutes or until melted through.

Instructions: 1.
On each label, write the name of each spice you are storing in the container. Let dry.
2.
Stick a label to each one of the compartments. To make sure the label doesn’t smear or get torn off, put the clear tape all the way across the pill organizer. Open each compartment and cut in between them, leaving the appropriate amount of clear tape on each. You should be able to open each compartment separately.
3.
Fill each compartment with the appropriate spice and store away for campside cooking!

Ingredients: • • • • • • • • •
1 1/2 pounds large shrimp, peeled and deveined 1 packaged smoked andouille sausage, thinly sliced 2 ears corn, each cut into 4 pieces 1 pound baby red potatoes, halved 2 tbsp olive oil 4 tsp Cajun seasoning Kosher salt and freshly ground black pepper 2 tbsp chopped fresh parsley Foil
Instructions: 1.
Cut or tear four sheets of foil, each about 12 inches long. Divide shrimp, sausage, corn and potatoes into 4 equal portions and add to the center of each piece of foil.
2.
Fold up all four sides of each foil packet. Add olive oil, Cajun seasoning, salt and pepper to taste. Gently toss to combine.
3.
Place foil packets on the grill and cook until cooked through, roughly 12-15 minutes, depending on the heat of the fire.
4.
Serve, garnished with parsley if desired.

Divide blackberries, pineapple and mint between two glasses. Use the end of a wooden spoon to mash everything together in the bottom of each glass.

As you may know, Kong’s doesn’t make your average bar food; far from it, their creativity, quality and flavor is on another level. The menu comprises creations that have an Asian fusion or Latin flair. You’ll find diverse options like creative burgers, loaded Kimchi Fries, Bibimbap Rice Bowls, Roasted Chicken, Truffle Mac & Cheese, Korean Short Rib Tacos and more. You’re drooling, aren’t you? 4 oz cooked Japanese rice, mixed with dash of vinegar, sugar and salt 1/2 sheet dry seaweed 1 small cucumber, sliced longways 1 small medium-firm avocado, thinly sliced 2 crab sticks 2 pieces of tempura shrimp

3 oz seared tuna 1/2 oz black sesame seeds 1/2 oz Japanese mayo 1/2 oz Sriracha sauce 1 oz goma sauce (soy sauce, vinegar, Sriracha and Japanese pepper)
PREPARATION:

Cover the sheet of seaweed with the rice and press gently.

Using a sushi mat to help hold the roll in place, roll tightly.

Using a sharp knife, cut the roll into eight pieces. Top the roll with goma sauce and enjoy!
Flip the seaweed over so the rice is facing down. Place 1 long slice of cucumber, the tempura shrimp, the crab sticks, the Japanese mayo and the Sriracha sauce on the seaweed. Alternate pieces of seared tuna with black sesame seeds and avocado slices on top of the roll.

SMOKIN' OKIES
If you’ve lived in Oklahoma for a while, you’ve probably heard of this smokin’ truck legend. Smokin’ Okies is our oldest family-owned food truck, currently in its eighth year of serving up quality barbecue goodness. Husband and wife duo Larry and Nancy are passionate about food, and you can taste it in every bite. Larry built his first smoker in 1971 and has been barbecuing ever since. He was a widower when he met the lovely Nancy, who was a chemist at the time. She knew both of their hearts were in food and smoking meats, and she encouraged him to start a food truck. At the time, there was only one other food truck in business in Oklahoma City, so they took the leap and haven’t looked back since. They have two smokers on the truck and three back at home, so you know they’re serious about quality smoking. They have competed in Kansas City cook-offs where they place high and place often, and they’ve won a four-state championship in Joplin, Missouri, out of 76 teams with their ribs – so you can be sure that yes, they’re that good! Just to keep bragging on them, they have been named one of the 100 Best Barbecue Restaurants in America by Johnny Fugitt and they are the only food truck named in the book, the rest being brick-and-mortar stores. That’s something special! Smokin’ Okies makes all of their own rubs, which really makes their meats unique. They use three separate rubs – one each for the chicken, brisket and ribs – so you’re getting a different delectable taste with each one. You can purchase their rubs from the food truck, online and on Amazon under BBQ-XTC. All of the recipes used on the truck are theirs, some created out of a dead sleep at three o’clock in the morning. Smokin’ Okies is also available for hire for their Whole Hog Parties, an event in itself and a way to bring people together for something unique and fun.
