Happy May! Wasn’t it just yesterday that we were talking about Thanksgiving recipes? Now we’re five months into 2016, but it’s okay because it’s such a great time of the year. I feel like I say that every single time – maybe it’s because I really do love life, or just because I get easily excited over the little things, like summer warmth approaching, festivals coming out of the woodwork, homemade popsicles, and BBQs with family and friends. This issue focuses on something that is near and dear to my heart: everything made in Oklahoma! Oklahoma born and bred, I’m such a supporter of anything local, so it’s exciting to have an entire issue dedicated to the products of local makers and producers. There are so many different things that are made here in our great state, and made well. Clothes, salsa, tea, chocolate, jelly, beer, art – really, it’s almost impossible to name it all. We hope you make an effort to buy local when you can! It’s a small thing you can do to support each other and keep our state great. It’s easy to eat and drink your way through Oklahoma, and one of our favorite stops is Pops, both the Arcadia and Nichols Hills locations. This bubbly eatery sells over 700 different kinds of sodas! Everything from grass-flavored to pineapple – you can try them all! Their

modern-style diner food is making many bellies happy. Check out our food review and then stop into Pops for yourself. Chef Shane Roel of the Lobby Bar Café and Bar, part of Western Concepts, whipped up a delicious made-in-Oklahoma recipe you’ll want to impress guests with. Mark your calendars for June 4th – you’re not going to want to miss the 5th annual Made in Oklahoma: Wine, Beer and Food Festival. This festival is absolutely FREE to attend! Tasting packages can be purchased for $20 that include commemorative festival glassware and 10 tasting tickets. The festival is open from 10 a.m. to 6 p.m. We have a great state full of great tastes, and they’re being showcased and celebrated in Midwest City on June 4th at the Sheraton Midwest City Hotel at the Reed Conference Center. Everyone can come out and experience an extensive variety of wine and beer samples from local producers, as well as food tastings and culinary delights from several of Oklahoma’s premier restaurants.

Oklahoma has so much great produce! We’ve got everything from peaches and pecans to watermelon and raspberries. Each of the recipes below includes at least one ingredient that is grown or produced in Oklahoma. You can pick many of these items yourself in season at local farms. PECAN PIE ENERGY BITES INGREDIENTS: medjool dates, pitted * 21 cups pecans * 1/21/2cupcupsrolled * 1 tsp cinnamonoats * 2 tbsp maple syrup *

INSTRUCTIONS: 1. Place dates in food processor and process on high for about 45 seconds, or until a date ball begins to form. 2. Add the pecans and process for another 1-2 minutes. 3. Add remaining ingredients, scraping down the sides of the processor bowl if necessary, and process for another 1-2 minutes. 4. Using a small ice cream scoop or a tablespoon, roll the mix into balls with your hands. You should end up with about 25 balls from the recipe. 5. Enjoy right away or pop into the fridge for 15-20 minutes to firm up. 6. Store in a sealed bag or airtight container in the fridge for up to a week.

BLACKBERRY PIE BARS INGREDIENTS: all-purpose flour * 31 cups sugar, divided * 1 tsp⁄ cups powder * 1 tsp baking * ⁄ tspcinnamon * Zest andsaltjuice of one lemon, divided * 1 cup (2 sticks) cold unsalted butter, * cut into 1-inch slices egg * 12 large vanilla extract * 4 tsp fresh blackberries * 4 cups * tsp cornstarch 1

MEXICAN STREET CORN (ELOTES) INGREDIENTS:

* 3 tbsp mayonnaise * ⁄ tsp garlic powder * ⁄ cup cotija cheese, crumbled * 3 tbsp cilantro, chopped * ⁄ tsp chipotle chili powder * 1 lime, quartered * 3 ears corn

INSTRUCTIONS: 1. Preheat the oven to 350°. If you are going to bake the corn, leave the husks on. Place the corn directly on the oven rack and bake for 35-40 minutes or until the corn is tender and juicy. If you are going to grill the corn, you can leave the corn husks on or take them off for some pretty grill marks. 2. In a small bowl, combine the garlic powder with the mayonnaise. Place the cotija cheese in a shallow baking dish or on a plate. 3. When the corn is done, remove the husks and brush the corn with the garlic mayonnaise. Roll in the cotija cheese and sprinkle with cilantro and chili powder. Serve with the lime wedges to squeeze over the corn.

INSTRUCTIONS: 1. Preheat the oven to 375°. Grease a 9x13 inch pan. 2. In a food processor, pulse together flour, cinnamon, salt and lemon zest. Add the butter, egg and vanilla extract. Pulse until dough is crumbly. Pat half of dough into the bottom of the prepared pan, saving the remaining dough for the topping. 3. In a medium bowl, stir together the remaining 1 ⁄2 cup sugar, cornstarch and lemon juice. Gently mix in the blackberries. Sprinkle the blackberry mixture evenly over the crust. Crumble remaining dough over the berry layer. 4. Bake in a preheated oven for about 45 minutes, or until top is slightly brown. Cool completely before cutting into squares.

BALSAMIC PEACH CHICKEN SKILLET INGREDIENTS: olive oil * 2⁄ tbsp yellow onion, sliced (about ⁄ cup) * 4 (5medium oz) boneless skinless chicken breasts * Salt and freshly ground black pepper * 2 cloves garlic, * ⁄ cup balsamicminced * 1 tbsp honey vinegar * 2 cups sliced peaches, firm but ripe * 1 (14.5 oz) can diced tomatoes, drained * ⁄ cup thinly sliced basil * 1

INSTRUCTIONS: 1. Heat olive oil in a large skillet over medium-high heat. Add onion and sauté 3 minutes, then push far to one side of the skillet. 1 2. Add chicken and season with salt and pepper. Cook until golden, about 2 ⁄2 minutes per side. Remove chicken from skillet and transfer to a plate, while leaving oil and onions in skillet.

3. Add garlic to skillet and sauté 20 seconds. Add balsamic vinegar. Cook and stir until reduced by half. Stir in honey and add in peaches and tomatoes, then toss. Season lightly with salt and pepper. 4. Return chicken to skillet, nestling it between peaches and tomatoes. Cover skillet with lid and reduce heat to medium-low, and allow to simmer until chicken has cooked through, about 6-9 minutes. Top with fresh basil and serve warm.

WATERMELON FETA BLACKBERRY SKEWERS INGREDIENTS: seedless ripe watermelon, cut into 1” cubes * 16 small ounces of feta cheese, cut into 1” cubes * Fresh firm blackberries * Small ripe, * wooden skewers or long toothpicks

CINNAMON HONEY BUTTER INGREDIENTS: (2 sticks) salted butter, room temperature * 11 cup powdered sugar * 1 cup honey * 2 cup * teaspoons cinnamon

INSTRUCTIONS: 1. Use the whisk attachment on your mixer to beat the butter for 1 minute. You can do this with regular beaters or a wooden spoon. 2. Add the powdered sugar, honey and cinnamon. RASPBERRY SORBET INGREDIENTS: fresh raspberries * 51 cups water * 1 cup sugar * 1 tspâ „ cups extract * 1-2 tbspvanilla fresh lemon juice * 1

INSTRUCTIONS: 1. Add water and raspberries to a food processor. Pulse until mixture has a smooth consistency. 2. Place a fine-mesh strainer over a large bowl. Add pureed raspberries to the strainer (1/4 of it at a time) and press through the strainer with the back of a large spoon or a rubber spatula to remove the seeds. Repeat with the remaining raspberry puree. Discard anything left in the strainer. 3. Add sugar, vanilla and lemon juice to the raspberry juice in the bowl. Whisk until sugar is dissolved. 4. Freeze 1-2 hours for a fresh sorbet. 20

3. Scrape the sides and bottom, then beat again until smooth. 4. This recipe will fit into 6 4-ounce mason jars or 3 half-pint mason jars. Store it however you would normally store butter. Put it in the fridge if you plan on keeping it for a while, or on the counter if it will be eaten within a couple of days. Either way, it should be served room temperature.


TOMATO + OKRA CORN CAKES INGREDIENTS: grape or cherry tomatoes * 11 cup okra * 4 cup * 1 scallions bunch of fresh parsley * 1 small small bunch of fresh dill * 2 eggs * 1/2 cup corn flour * 1/2 cup all-purpose flour (or gluten-free flour) * 1 1/2 tsp baking powder * 1/2 tsp salt * Oil *

INSTRUCTIONS:

1. Chop up the veggies and set aside. 2. Whisk to combine the dry ingredients in a large bowl. Add the veggies and eggs. 3. Mix and fold until you have achieved a super-thick pancake batter consistency. If the mixture is too wet, add a bit more flour; if it’s too dry, add a little water. 4. Heat a pan with a little oil to medium-high heat. Create patties in the pan and cook about 2-4 minutes per side (depending on how thick you made them). They are done when cooked through and beginning to brown. 5. Top with garlic aioli.

ROASTED GARLIC AIOLI INGREDIENTS:

* ⁄ cup mayonnaise * Juice of half a lemon * Fresh ground pepper * Pinch of cayenne * A bit of oil for roasting * 6 cloves roasted garlic

1. Peel garlic and pour a bit of olive oil into a pan set on medium heat. Roast the garlic until light brown and fragrant. 2. Scoop the garlic cloves out. Mix all the ingredients together in a food processor until smooth.

INSTRUCTIONS: 1. Line a large baking sheet with waxed paper. 2. Melt chocolate chips, butterscotch chips and vegetable oil together in a large microwave-safe container. Heat on high for 30 seconds, stir and repeat, until chips are melted and smooth. 3. Quickly stir in the peanuts and marshmallows. 4. Drop spoonfuls of the mixture onto the waxed paper. You can make them as large or as small as you like. Let set up in the refrigerator for 15 minutes before packing. Store leftovers in an airtight container. so6ix.com | MAY 2016

EATS Many great things are Oklahoma born and bred, like Pops! If you’re from Oklahoma you probably know and love the iconic 66-foot soda bottle that stands in front of a gas station and the Arcadia location of the original Pops along Route 66. It doesn’t get much more Oklahoman than that. As it’s such a popular destination for tourists and locals alike, it made sense to bring the beloved Pops closer to the heart of the city, and its second location is situated comfortably in Nichols Hills Plaza. Its vibrant atmosphere is extremely bubbly (pun intended). With bright soda bottles spanning the walls, a section dedicated specifically to candy and sweet treats, and an old-fashioned soda counter with a modern twist, Pops is a spot for everyone and all ages. They’re serving up delicious diner favorites like burgers (many creative versions), 1/4-pound hot dogs, BLTs, shakes, wraps and so much more. Seriously, they have a lot of great food. They do breakfast until 10:30 a.m., and they have some unbelievably tasty and creative creations, like their Pops Womlette (yes, with a W), a jalapeño and cheddar waffle topped with hash browns and a cheese omelet and tomatillo salsa. *Cue drooling.* Each item we tasted was unbelievably good and some of it is messy, which makes it extra great in my opinion. We Oklahomans sure do love our root beer (myself included), and Pops is serving up their house-made brand, Round Barn Root Beer! They have several other flavors as well, all made right here in OKC: Catoosa Cream Soda, Okie Orange, Grape Plains, Cadillac Ranch Cola and Dr. Pops. As if this spot couldn’t get any more Oklahoman, they offer a Made in Oklahoma section in their Arcadia location, with locally made goodies like candies, sauces and snacks. You feel the 46
