I can’t believe it’s already November. I am not sure what is making the time fly by so fast, but it has definitely been an awesome year so far. Oklahoma City continues to grow in so many ways and has quickly become rich in everything from adventures and entertainment to food and festivities. When I started So6ix almost eight years ago, the social and entertainment scene was nothing like it is today. Even the consensus attitude about living here was different. It seemed back then that so many people talked about getting out of Oklahoma and moving to cities that have more to do. Now people from other cities are moving here, our young people are staying in state, and social and economic growth continue to go up. Maybe time is flying because there are just so many things to try, taste and see in OKC! Every month, we do our best to showcase everything we think is great about being an Okie. Now we want to hear from you! November kicks off our second annual Okie Honor Awards, in which we find out what you think is #1 in OKC. We have all the categories you care about, everything from where to eat and shop to which Okies are your favorites. We started the Okie Honor Awards last year in hopes of getting unbiased opinions on everything our great city has to offer from the people who know best: Okies. We also wanted to make it extremely easy for people to vote, and vote only on the

categories they really care about, instead of requiring a minimum number of categories. The response was tremendous! This year, Okie Honor voting will be done by text message beginning on November 1 and running through November 15. This will be our nomination period, when you can nominate who, what and where should be in the Top 5 for each category. The nominations will be tallied after November 15 and our December issue will reveal the Top 5. Then, our final voting process will be from December 1 through 15, and we’ll go on to find out who is #1. Now, open up a fresh text message and text your nominations in to us. We want to know who your favorites are so we can show them off in So6ix Magazine!

THANKS GIVING Leftovers

We all have so many things to be thankful for – like Thanksgiving leftovers. Yes, you read that right. No more trying to give as much away as you can to family members so you’re not stuck eating the same thing for days on end. Thanksgiving is full of staple dishes that can be repurposed into their own new recipes, and these will have you hogging the leftovers for yourself. We promise you won’t get bored with the same flavors over and over because many of the dishes can be transformed into entirely different styles, like Mexican nachos or Asian-inspired egg rolls. Step out of your Thanksgiving leftover comfort zone and give these new concoctions a try. You’ll be thankful for your leftovers, we promise!


Creamy Turkey Casserole Credit: cutefetti.com Makes 6 servings

Ingredients • • • • • • • •

4 cups prepared stuffing, divided 1 lb coarsely chopped turkey (about 4 cups) 3/4 cup mayonnaise, divided 1/4 cup fresh whole cranberry sauce 2 cups mashed potatoes 1 1/2 cups shredded mozzarella Nonstick cooking spray Fresh cranberries, for garnish (optional)

Instructions 1.

Preheat oven to 375 degrees. Spray an 8-inch baking dish with cooking spray. Spoon in half of the stuffing and spread evenly. Top with turkey.

2.

Combine cranberry sauce with 1/4 cup of the mayonnaise, then spread evenly over turkey.

3.

Combine remaining mayonnaise with mashed potatoes and cheese in a large bowl. Spread evenly over the other ingredients and top with remaining stuffing.

4.

Bake 40 minutes or until hot and bubbling in center. Let stand 10 minutes, then garnish with fresh cranberries (optional) and serve.

Thanksgiving Leftover Savory Bread Pudding Credit: theflavorbender.com Makes 4 large servings

Ingredients

2 1/2 cups stuffing 4 cups of stale 1-inch bread cubes 1 1/2 cups half-and-half

Cranberry sauce Chopped parsley Leftover shredded turkey, about 2

1-2 pears, cut into small cubes 1-2 sprigs rosemary 5 eggs

packed cups, at room temperature 1/2 cup shredded cheddar cheese Maple syrup (optional)

1/4 tsp salt

1.

Preheat oven to 350 degrees and butter a 9” x 5” baking pan.

2.

Place half-and-half in a saucepan with the rosemary. Bring it to a boil and turn off the heat. Add the shredded turkey and let the herbs steep in the milk for about 20-30 minutes, to infuse the flavor and to let the milk cool down to room temperature. Remove the rosemary once done.

3.

In a bowl, whisk eggs and the cooled rosemary-infused milk and turkey mixture. Add salt.

4.

In a large bowl, mix the stuffing, bread cubes, pears and parsley to combine. Add the custard (the milk, egg and turkey mixture) and mix well to coat.

5.

Pour half of this into the buttered dish. Pour some leftover cranberry sauce on top, and place the other half of the bread pudding mix over it. Push down and leave for a few minutes to help the bread pieces soak up the custard.

6.

Spread some more cranberry sauce on top and sprinkle generously with cheese and sea salt.

7.

Cover with foil and bake for 20 minutes. Uncover and bake for another 10-15 minutes, until the cheese is bubbling and the custard has set.

8.

Serve warm with maple syrup if desired.

Thanksgiving Pizza Credit: thegunnysack.com Makes 1 pizza (8 slices)

Ingredients • • • • • •

1 puff pastry sheet, thawed according to package instructions 1/2 cup mashed potatoes 5 tbsp gravy, divided 1/4 cup corn 1/4 cup green bean casserole 1/2 cup chopped turkey

1/2 cup stuffing 1/2 cup shredded cheddar cheese 1/4 cup French fried onions 1/4 tsp freshly ground black pepper Basil, parsley or thyme for garnish (optional)

Instructions 1.

Preheat oven to 400 degrees.

2.

Gently press puff pastry sheet into a greased 9-inch tart or pie pan. Trim the corners and use them to fill in any empty spaces along the sides of the pan.

3.

Spread the mashed potatoes over the bottom and drizzle with two tablespoons of gravy.

4.

Sprinkle with corn and green bean casserole.

5.

Top with turkey, stuffing and remaining three tablespoons of gravy.

6.

Sprinkle with shredded cheddar cheese and bake for 18-20 minutes.

7.

Sprinkle with French fried onions and bake for an additional 3-5 minutes.

8.

Garnish with black pepper and basil, parsley or thyme. Dig in!

2 tbsp olive oil 2 cups chopped onion 1 cup chopped green bell pepper 4 garlic cloves, finely chopped 2 tbsp chili powder (up to 4 tbsp if you like it hot) 1 tbsp ground cumin 3 15-oz cans crushed tomatoes 1 tbsp tomato paste 1 cup turkey stock or chicken stock

2 15-oz cans kidney beans, drained 1 tsp dried oregano 1 tbsp sea salt 1/2 tsp black pepper 3-4 cups of shredded, cooked turkey meat 1-3 tsp sugar (optional) Shredded cheddar cheese, chopped green onion and sour cream (optional), for garnish

Instructions 1.

In a large pot, heat the olive oil on medium-high heat. Add the onions and green peppers and cook, stirring until golden. Add the garlic, chili powder and cumin, stirring for a minute or two more. Add tomatoes, tomato paste, stock, kidney beans, oregano, salt, pepper and cooked turkey meat. Bring mixture to a simmer and reduce heat to low. Simmer, partially covered, for an hour.

Salt to taste. Add sugar to taste if needed, to balance the acidity of the tomatoes.

4.

Serve with optional toppings if desired.

Turkey Corn Chowder Credit: diethood.com Makes 4-6 servings

Ingredients • • • • • • • •

2 tbsp butter 1/2 tbsp olive oil 1 yellow onion, diced 1 large carrot, thinly sliced Pinch of salt 2 cups diced or shredded cooked turkey 3 russet potatoes, peeled and cut into 1-inch cubes 1 tsp dried thyme

1 tsp salt 1/4 tsp freshly ground pepper 1 can cream-style sweet corn 1 can sweet corn, rinsed 2 cups low-sodium chicken broth 3 cups 2% milk Chopped fresh parsley, for garnish (optional)

Instructions

Heat butter and olive oil in a large soup pot over medium-high heat.

Add onions, sliced carrots and a pinch of salt. Stir occasionally until browned.

3.

Stir in the turkey and potatoes. Season with thyme, salt and pepper.

4.

Add cream-style corn, sweet corn, chicken broth and milk. Bring mixture to a boil over high heat.

5.

Reduce heat to low and cover the pot. Simmer for 20 minutes, stirring occasionally.

6.

Remove from heat. Let stand several minutes. Give it a stir and taste for seasoning, adjusting if needed. Garnish with chopped parsley and serve.

Thanksgiving Leftover Turkey Nachos Credit: blessherheartyall.com Makes 6 servings

Corn tortilla chips 2 cups leftover turkey, chopped and pulled 2-3 cups shredded Colby-Jack or cheddar cheese 1/2 cup chopped tomatoes

1/4 cup white onion, chopped 1/8 cup green onion, chopped 1-2 jalapeños, thinly sliced Sriracha 1-2 tsp taco seasoning

Preheat oven to low broil. Fill the bottom of a baking pan with tortilla chips. Add the turkey and then the cheese evenly on top of the chips. Sprinkle the tomatoes, green and white onions, and jalapeños on top. Drizzle with Sriracha and sprinkle with the taco seasoning. Broil for 4-8 minutes, or until the cheese has melted and the outside chips and cheese are starting to turn a nice golden brown color. Remove from heat. Allow to cool a few minutes and serve while cheese is still stringy and melty. Enjoy it messy!

Sausage and Stuffing Balls + Cranberry Dipping Sauce Credit: ishouldbemoppingthefloor.com Makes 36-48 balls

1 pound ground breakfast sausage 1/2 tsp ground sage 1/2 tsp salt Freshly ground black pepper 1/2 cup onions, finely minced 1 stalk celery, finely minced 1/2 cup shredded cheddar cheese 1/3 cup dried cranberries, minced 3 cups leftover stuffing 2 eggs, beaten 1/4 to 1/2 cup chicken broth

Cranberry Dipping Sauce • • •

1 1/2 cups leftover cranberry sauce 1/4 cup orange juice Pinch of salt

Preheat oven to 375 degrees. Brown sausage in large skillet over medium heat. Add seasonings and cook until pink is gone. Add onions and celery to skillet and continue to cook until vegetables are soft and onions are clear. Allow to cool for 10-15 minutes. Add cheese, cranberries and stuffing to sausage and stir. Stir in eggs and chicken broth, starting with 1/4 cup and adding more if needed. Make sure entire mixture is completely combined. Using a cooking scooper, scoop out heaping balls of the mixture. Place balls on a cooking sheet lined with parchment paper. If any of the mixture falls off, just press it back into place. Continue with the entire batch of mixture. About 24 balls can fit on a standard cookie sheet. Bake for 15-18 minutes, until the tops begin to brown. While sausage balls are baking, prepare Cranberry Dipping Sauce. Combine cranberry sauce, orange juice and salt in a small saucepan over medium heat. Stir until thinned out and completely combined. Transfer everything to a serving dish and enjoy!

Loaded Leftover Mashed Potato Balls Credit: handletheheat.com Makes 24 balls

Ingredients •

3 cups chilled leftover mashed potatoes

3 tbsp flour

2 tbsp chopped green onions 2/3 cup shredded cheddar cheese 4 strips crisp-cooked bacon, crumbled into 1/2-inch pieces (or cubes of leftover ham) 2 large eggs, divided and lightly beaten

1/2 tsp freshly ground black pepper 1/4 tsp garlic powder 1 1/2 cups panko breadcrumbs Salt, for sprinkling Sour cream, for dipping

Preheat the oven to 400 degrees. In a large bowl, stir together the mashed potatoes, green onion, cheese, bacon, 1 egg, flour, pepper and garlic powder until combined. Roll into balls roughly 1 1/2 inches in size. Place the beaten egg in a shallow pan. Place the panko in a separate shallow pan. Dip each potato ball in the egg, then cover completely in breadcrumbs. Place on a greased baking sheet and briefly spray with olive oil or nonstick cooking spray. Bake for 12 to 15 minutes or until crispy on the outside. The balls may not brown very much, but they will still get crispy Serve alongside sour cream and garnished with additional chopped green onions.

Turkey + Cranberry + Brie Egg Rolls Credit: reciperunner.com Makes 8-10 egg rolls

Ingredients • • • • • •

8-10 egg roll wrappers 1 cup shredded turkey 1/8 teaspoon poultry seasoning (optional) Salt and pepper to taste 1/2 cup cranberry sauce 9-10 slices of Brie cheese, 1/4-inch to 1/2-inch thick

Cranberry Mustard Dipping Sauce • • • •

1/2 cup cranberry sauce 1 tbsp Dijon mustard 1 tbsp honey Salt and pepper to taste

Instructions 1.

Preheat the oven to 400 degrees and line a baking sheet with parchment paper.

2.

In a small bowl sprinkle the salt, pepper and poultry seasoning over the shredded turkey and stir together until the turkey is evenly coated in the spices.

3.

Fill each egg roll wrapper with approximately 1 tablespoon of the shredded turkey, 1-2 teaspoons of cranberry sauce and a slice of Brie.

4.

Brush water all around the edges of the egg roll wrapper, then tuck in the sides and roll it up tightly like a burrito.

5.

Seal the end of the egg roll with a little more water, then place it seam side down on the baking sheet.

6.

Repeat the process until all of the egg rolls are made.

7.

Spray or brush the tops of the egg rolls with cooking spray or oil and place them on the middle rack of the oven. Bake for 10-12 minutes or until they start to turn golden brown.

8.

Mix the Cranberry Mustard Dipping Sauce ingredients together until smooth. Place in a serving bowl.

9.

Cool the egg rolls on the baking sheet for a few minutes and serve with the sauce.

Cranberry Cream Cheese Thanksgiving on a Croissant Credit: sweetsaltytart.com Makes 1-4 servings

Ingredients • • • • • •

Store-bought croissants Cream cheese Leftover cranberry sauce Leftover stuffing Leftover gravy Leftover turkey

Instructions 1.

Split croissants in half with a bread knife and toast them. Warm the stuffing if desired.

2.

On the bottom half, layer stuffing, gravy, sliced turkey and cranberry sauce.

3.

On the top half, spread cream cheese to desired thickness.

4.

Combine bottom half and top half together and enjoy!

The long-standing landmark formerly known as The Coach House has received a gorgeous overhaul and is now The Hutch on Avondale. The Hutch is headed by two familiar faces from The Coach House, Chef David Henry and Kyle Fleischfresser. Both the menu and the inside of the restaurant have undergone a complete remodel, modernizing across the board. One of our favorite new features is a Chef’s Bar. This is a premier spot where you can reserve a barstool in front of the open-window kitchen and enjoy a tasting menu prepared by the head chef. The entire restaurant is an open-kitchen concept: you can see your food being prepared even from the main dining room seats. The menu itself is comprised of Okie favorites with a modern spin. Every single item down to the condiments is completely house-made. One of our favorite things about The Hutch is that they source everything local when possible. Not only is the food top-notch, but so are the cocktails. They have researched all over the world to give you a taste of some of the best cocktails, wine and spirits out there, presenting choices that will pair well with any occasion. Mark our words, this spot is definitely going to be the new Nichols Hills hangout. It has a more relaxed feel; you don’t have to wear your suit and tie (unless that’s your thing). We also love that you can really make the experience what you want it to be: a celebration of a special occasion, with multiple courses served slowly, or a quick stop in for a bar snack and drink after work. As for the menu, every single item we tasted was stunning. We’re pretty sure we said, more than once, “Oh my gosh, this is my favorite version of this I’ve ever had.” You can taste the creativity and love put into each item, and we love the fresh spin on bar staples like wings. Goro Ramen is one of the newest spots to find a home in the booming Plaza District. Izakaya is pronounced “EE-ZAH-KAHYAH,” and it means a Japanese tavern or pub that serves beer, sake, cocktails and food. Homemade ramen is still taking the food world by storm, and we are not mad about that at all. No, this is not your typical dorm-room microwave ramen: we’re talking broths that take days to cook and simmer, with freshmade noodles, soft-boiled eggs and complex flavors. This Japanese comfort food is full of warmth and flavor. At Goro they use a chicken-based broth that is prepared for over 12 hours, resulting in a rich, silky and creamy broth that is similar to the popular pork-based tonkotsu. They not only have a great and creative food menu, but a wonderful cocktail and sake menu as well. It’s the perfect spot for any occasion, and we have a feeling you’ll become a regular.

This mobile eatery has turned brick-and-mortar restaurant, and it’s loved now more than ever. Patty Wagon’s food truck was followed by many for years, and the time was finally right for a stand-alone store where you can have any of their delicious eats at more consistent times. We feel like their French fries need an award all of their own. They are the real deal: fresh potatoes hand-cut and fried to perfection. All of the burgers are made with locally raised, grass-fed hormone- and antibiotic-free beef. You can choose between the simple single burger, the double, or a gourmet burger piled high with condiments and tasty ingredients. Patty Wagon whips up all of their own sauces, and you’ll definitely want to try their spicy mayo or Dr Pepper BBQ sauce. One of their crazy combinations is the La Straw-Racha: a burger with shredded lettuce, a juicy patty, crispy bacon, tortilla strips, straw-racha sauce and peanut butter.

This new eatery is serving up fresh and fast Mediterranean food at lunch and dinner daily, with plenty of seasonal specials. They use only the best ingredients and they prepare everything to order, so you’re guaranteed to have your food come straight from the kitchen. The menu caters to every appetite, whether you’re in the mood for something savory or something light. They’re mixing in a ton of regional Mediterranean flavors that are beyond yummy. We recommend you start out with the Green Leaves Mummy (stuffed grape leaves) or the secretrecipe Spicy Potatoes. They’re known for their wraps, so of course you have to try one of those, but we also recommend the Egyptian Quesadilla or Lentil Soup. We’re all for this fresh international fast food.

GENERAL TSO SWEETBREADS

INGREDIENTS • • • • •

Prepared sweetbreads 1 /2 cup flour General Tso Sauce Brussels sprout leaves Pickled vegetables (carrots, shishito pepper and onions)

GENERAL TSO SAUCE INGREDIENTS • • • • • • •

1 cup ginger beer 1 tbsp hot sauce 1 /4 cup mirin 1 cup soy sauce 1 /4 cup rice vinegar 1 tbsp brown sugar 2 tbsp black sesame seeds

PREPARATION 1.

Dust prepared sweetbreads in flour and sauté with high heat.

2.

When browned, add sauce and cook to caramelize the sauce on the sweetbreads Lower the heat and reduce the sauce. It should have a sticky consistency but should not be burned.

3.

Garnish with pickled carrots, shishito pepper and onions. If there is leftover sauce reduction in the bottom of the pan, drizzle it on the serving plate.
