Hello, October! Boo! That’s the natural way to say hello in October (obviously). This is literally one of the absolute best months of the entire year and you can’t convince me otherwise. It’s officially fall, it’s sports season, cooler weather is arriving, a few rainy days are upon us, there are so many great events happening around the city, it is unofficially the kickoff to the holiday season, AND there’s all of the fall food! Speaking of food, thanks for picking up our October food issue!

Apples Fall kicks off apple season and we love it! (Although honestly, we eat them year-round.) Have you ever gone to the grocery store and paid attention to how many different kinds of apples there are? A single grocery store can carry 8 or more, and that’s just the start: there are 2,500 varieties of apples grown throughout the United States and 7,500 varieties throughout the world. And yes, they do all taste different! Apples can vary in their crunch, sweetness, tartness, water content, and the color and thickness of the skin. So many different varieties means lots of different recipes you can whip up. Get up to date on your apple knowledge and try a new recipe or two this fall season!

Honeycrisps are one of the newer apples on the market, after being developed in Minnesota. As the name indicates, they are crisp and juicy with a honey-sweet and tart flavor all in one.

The Honeycrisp is the official state fruit of Minnesota. It took 31 years to develop the Honeycrisp, and the first apples didn’t land on grocery store shelves until 1997. Honeycrisps love cold weather. They need it to develop a crispy texture and honeysweet flavor.

OKIE BEER TOUR Craft beer and local products are two things locals can’t get enough of, so it’s no surprise the local craft beer scene is booming. There are both new and older brewers with a lot of passion, great taprooms and a high demand, which makes for a lot of tasty beers to go around. You might have tried some of these, and some you may have never heard of – so we set out on a mission to do a mini Okie beer tour to bring the knowledge directly to you. There’s a lot of love being poured into these products. We highly recommend setting up brewhouse tours with any of these this fall and stopping into their taproom for a tasting flight. They’re all different and unique in their own way. Cheers to the local Okie beers!


Anthem Brewing Company ANTHEMBREWING.COM

If there’s any brewery that has taken Oklahoma by storm over the last six years, it’s Anthem Brewing. Like many others, Anthem started from a love for beer and home brewing, and it’s exploded since then. Not long after their start, Anthem really capitalized on a market that was thirsty for craft beer. Anthem found its new home not too far from Film Row and the Farmers Market District. We were given the official tour through the brewhouse (which we totally recommend scheduling on your own time). It’s amazing to see what they’re producing and how much in person, and it’s only going to continue to grow. If you’ve taken a sip of their infamous Golden One, you’ll understand why. They’re amping up production in the near future to keep up with demand with new warehouse builds, new vessels, and even a new and improved taproom. There are a lot of great people behind this business making it happen so we can enjoy their delicious products. It’s ohso-true that here, good beer brings good people together.

IPA This India Pale Ale has a fruity and dank hop aroma, a clean, malty backbone and just the right amount of bitterness to merge into this tasty creation.

Arjuna This Belgian-Style Wheat Ale has fruity notes of orange peel, coriander and chamomile, which makes for a refreshing experience.

Golden One Golden One is the infamous Anthem beer that consumers can’t get enough of. It’s a Belgian-Style Blonde Ale with a fruity nose and hints of coriander and pineapple, bringing balance to this beer’s malty base.

OK Pils Have you been looking for a clean beer that you can drink day in and day out, month in and mouth out? Well, you’ve found it! OK Pilsner is a heavy dose of German pilsner malt to start and European hops to finish.

Uroboros Stout Stout: a style continually renewing itself in new forms and reborn here as a Belgian-inspired creation. Roasted and chocolate malts, dark candied sugar, oak spirals and Belgian yeast circle in a harmonious union.

ROUGHTAILBEER.COM In 2012, Roughtail came to life, born from two friends that had a love for crafted beer and shared a hobby: home brewing. Roughtail Brewing is all about pushing the boundaries, envelopes and taste buds. You won’t ever get bored sipping on anything that comes from Roughtail. It’s full of character, all the way around – the flavor combinations, the can artwork, the current taphouse and everything in between. Take one sip of their infamous Everything Rhymes with Orange IPA and you’ll understand why Roughtail is growing at a rapid pace. They just announced they are moving to their forever home sometime in 2019 to a 20,000-square-foot building on the northwest side of Oklahoma City, near Santa Fe on Memorial Road. They’ll be able to double their brewing capacity and enable future growth up to 50,000 barrels per year (yay!). We can’t say it enough: Roughtail is so unique and so full of character, and that’s just one of the many reasons we love it. See and taste it for yourself.

Mercury in Retrograde This 8% hazy, wheat-backed double IPA features massive flavors of berries and red currants. A copious double dry hop with both Enigma and Mosaic hops gives this guy one of the best aromas yet.

Roughtail IPA This flagship is brewed to kick your taste buds and leave your palate begging for mercy. Pine, resin and citrus aromas leap out of the glass. The extreme bitterness hits next to give you your fix. The finish is dry and clean and leaves you wanting more. There’s a crazy amount of hops in this beer just for you, you hopheads.

Everything Rhymes with Orange IPA Soft, pillowy mouthfeel, hazy and non-filtered, with juicy, citrusy hops and a fluffy white head. This IPA features mid-low bitterness and a full, soft body while still finishing dry and clean like the rest of the Roughtail lineup. Simcoe hops are featured, with Citra and Mosaic providing backup and complexity.

E-Juice This iteration of their rotating fruit IPA reps their favorite hazy IPA base, hopped with El Dorado and Azacca. There’s a massive dose of strawberry, pineapple and mango puree directly into the fermenter at two different stages. Milk sugar balances the natural acidity of the fruit and makes this IPA smooth and easy to drink, with a punch of tropical fruit aroma and flavor.

Roughtail Pale Ale This beer has four different varieties of hops to give Roughtail Pale Ale a tropical fruit and citrus flavor indicative of a West Coast–style Pale Ale.

Twisted Spike

TWISTEDSPIKE.COM Twisted Spike Brewing Company is one of the newest kids on the block. They opened their doors at the end of 2016 in the ever-growing downtown OKC’s Automobile Alley. The owners had a love for beer and a vision to create a downtown OKC beer destination. The brewery offers a mix of American- and Belgian-inspired beers. They keep a great mix of flavors and styles on tap and in cans and bottles throughout the year, with the occasional sour, seasonal and small-batch beers that can only be found in the Taproom. Twisted Spike is centered on quality. Behind all of their beer is the philosophy that quality is achieved by giving first-rate ingredients to first-rate people in a space where they are free to pursue their passion.

Two Bean or Not Two Bean This is a robust porter made with whole vanilla beans and cold-brewed French roast coffee. It pours a rich, deep brown with a dark tan head. Coffee, vanilla and dark malts dominate the aroma.

Rose Rock Irish Red Ale made with Mosaic and Fuggles hops. It pours a deep red with a tan head. The characteristic red hues are developed by using just a touch of roasted barley. The Mosaic hops dominate the aroma. Caramel malts give it a slightly malty, toffee sweetness and characteristic dry finish.

6.2% ABV

Dirty Blonde This is a gold-medal-winning Belgian Blonde Ale. It pours a light yellow with a small, creamy head. It has a very sweet malt and fruity aroma with pear, orange and clove notes. Styrian Goldings hops adds a spicy finish.

Blood Orange IPA This is close to a classic IPA with a twist – blood orange. Pine and citrus aromatics are present due to Cascade, Centennial and Amarillo dry hopping. The bittering hops and bready malt flavors are well balanced with a punch of blood orange flavor.

Black Snake Black Snake is a Russian Imperial Stout that comes to pack a punch. It pours ebony black with a dark brown head. The aromas of dark-roasted malts, chocolate and alcohol prepare you for this substantial beer. The full-bodied mouthfeel coats the palate with dark malts, roast and chocolate.

Prairie Artisan Ales is a small third-wave brewery that was founded in 2012. Prairie brings their unique perspective and artistic vibe to brewing. Sometimes they put out a big, bold barrel-aged stout and other times a crisp and funky farmhouse ale. Each beer they brew is wrapped in unique, expressive and interesting art, which is our next favorite thing about it – besides the beer of course. They opened up a taproom in downtown OKC near Automobile Alley and it’s everything you could want out of a taproom. You’re going to want to grab a friend or two and get a flight to taste while you soak up the artsy atmosphere and great music. Not only are the locals praising Prairie, but RateBeer has it on their top 100 brewers in the world list! While we Okies will always claim Prairie as our own, you can now find it in more than 25 states and on 5 continents.

Pink Guava Funk In this unique blend you’ll first taste a sour ale, with a kick of the pink guava puree giving it a fruity end.

Paradise Paradise packs a little bit of a punch, but after a few sips you’ll be in paradise with this imperial stout with vanilla and coconut flavors.

Bomb! Here’s another that packs a punch. It has plenty of flavor notes going on that you’ll work your way through sip after sip, as this Imperial stout is aged on coffee, vanilla, chocolate and chiles.

Vape Tricks If you like sour, this is going to be your thing. This sour ale is aged on cherries, which are tart all on their own.

Standard This is one of Prairie’s delicious classics. This play on a farmhouse ale has a bit of a funky flavor with notes of tart that will leave your mouth crisp and dry.

Owner: Chelsea Phillips This cutie is a two-year-old boxer who thinks he’s much smaller than he actually is. His favorite things to do are play tug-of-war with his rope and snuggle up on the couch. Duncan is the ultimate cuddle bug. He’s not the most trained “trickster,” but he does have a notso-hidden talent for catching food that falls on the kitchen floor. His favorite treat, though? His momma’s couch pillows. Duncan is chatty, especially when he wants something, which is usually along the lines of being allowed on the bed. His favorite pastime is chasing rabbits in the backyard, but he would never hurt one. Duncan is a total sweetie who will befriend any animal or person. INGREDIENTS:

Oreos Pretzel sticks Candy corn Marshmallows Black frosting

INSTRUCTIONS:

HARD CIDER PUMPKIN FLOAT INGREDIENTS:

12 oz Woodchuck Reserve Pumpkin Cider or your favorite ale 1-2 scoops Talenti Gelato or your favorite ice cream

INSTRUCTIONS: 1. Pour cider or ale into a chilled pint glass. 2. Add 1-2 scoops gelato or ice cream and serve immediately.

1. Break four pretzel sticks in half to form eight individual pieces. 2. Insert four of the pretzel pieces on either side of an Oreo, directly into the cream layer. 3. Break off just the white bottom portion of two pieces of candy corn. 4. Insert the white candy corn tips into the front portion of the cookie, between the two sets of legs, to form spider fangs. 5. For the eyes, use a finger to press two of the marshmallows flat. (Day-old marshmallows work best for this, as they tend to hold their flattened shape more easily.) 6. Put frosting on the back of the marshmallow eyes and place them just over the fangs on the front side of the spider. Use a dab of black frosting on each to make pupils for each eye. 7. This carb heaven originated in Florida and eventually made its way to Oklahoma thanks to local franchisee Genny. This is the first I Heart Mac & Cheese outside of Florida, and we are so proud to have it right here in the ever-growing Yukon area. They opened up this spot in April of 2018 and have been whipping up delicious mac and cheese creations ever since. It’s a fast-casual restaurant concept that specializes in customizable, madeto-order macaroni and cheese and grilled cheese sandwiches. The menu is full of creative, award-winning recipes, resulting in a grownup approach to this classic childhood dish. Believe us when we say there is something for everyone and every age on this menu! Whether you’re in the mood for a salad, tater tots, a grilled cheese or mac and cheese – there are plenty of options. Their menu features chef specials, which are mac and cheese bowls or grilled cheeses with the perfect accompaniments already chosen. You can pile your grilled cheese high between buttery fresh bread with options like baked buffalo chicken or pepperoni pizza (hello ideal situation!). If you had something else in mind, you can make your own creation by choosing everything from the cheese to the veggies and proteins, making you your own chef! They also are food allergy friendly with vegetarian options, gluten-free options both in bread and pasta, and a vegan option with their veggie marinara (no vegan cheese just yet, but stay tuned!). Autism Oklahoma started in 2002 with a passionate belief that every person with autism is unique and important. This organization strives to help individuals with autism reach their full potential, to help families thrive, and to help communities understand and embrace the differences. Autism Oklahoma is 100% dependent upon donations from individuals, corporations and public involvement. This funding helps create opportunities for those with autism, like summer camps and year-round clubs in specific interest areas, plus college, teen and adult groups as well as additional community events and social opportunities. They’re pulling out all the stops to make sure these kids across our state are supported and educated and that they don’t miss out on life’s opportunities just because of differences. All of their groups provide a safe place that is grounded in grace and kindness, where they can share experiences and challenges with other families who can relate to and support each other. Autism Oklahoma is not only helping these kids and individuals, they’re helping our state to become more aware and supportive of Autism, and once we know better, we can do better.
