The island’s signature meal – and its national dish - is green figs and saltfish. It’s made by boiling unripe bananas and adding salt-cured boiled or flaked cod. It’s a hearty dish that’s enlivened with herbs and spices. Pair this meal with a plate of fried plantains, a bowl of callaloo soup (a spinach-like soup made from the callaloo plant) or a side of breadfruit. Breadfruit, a staple of local cuisine, resembles a potato but has a sweeter flavour.
