Hazard Analysis and Critical Control Point, (HACCP), is a systematic preventive approach to food safety and pharmaceutical safety that addresses physical, chemical, and biological hazards as a means of prevention rather than finished product inspection. HACCP is used in the food industry to identify potential food safety hazards, so that key actions, known as Critical Control Points (CCPs) can be taken to reduce or eliminate the risk of the hazards being realized. The system is used at all stages of food production and preparation processes including packaging, distribution, etc. - go to page 3
Tanglin Trust School is one of our HACCP certified units. It was certified by SGS one of the leading certification company according to the SAC standard document number 2. TTS gained its certification last June 2009 upon successfully passing the 2 stage audit. The success of the certification is a result of a team work, cooperation between TTS School Staff and Sodexo Staff to make HACCP implementation a success.

Sodexo-TTS now has a food safety system based on the requirements of HACCP. Along with all the food safety process we make it a point that the quality of food is a part of the quality mark that Sodexo-TTS attained. Here is some information to remember for conducting self-inspection; Know and follow safety guidelines during all stages of production Take and record product temperatures at all designated times Take quick corrective action whenever necessary Also always put in mind for food safety; Where are food safety problems most likely to occur? What steps to take to control food safety problems and where and when to take them? All staff are involved to control the safety of food served in the unit (canteen/cafeteria) where they work. As we develop our procedure/guidelines, the next step might be for Sodexo to certify other units for HACCP.

As a foodservice company we have the best/trained personnel to handle food safety. While we can control food safety efforts in the cafeteria, there are still risks from food that comes into a school from other places or that is handled with unwashed hands or improper food handling. As part of our operation we keep in mind that we are the authority to spread the message about food safety throughout the school—to the staff, students, and their families. As an added value we are doing Tool box Talks to our staff to teach them on Food Safety and more. Besides food safety we are conducting health programs and health talks to schools in order for them to better understand food hygiene and health.
HACCP takes into consideration products, methods, activities and hazards directly related to food: It identifies and analyse the hazards in all the steps of the food production It identifies the critical control points and creates critical limits to avoid and eliminate the presence of any risk whether biological, physical or chemical It ensures the implemented regulations are efficient through monitoring and verification procedures HACCP Benefits HACCP as a common language in the food sector is becoming a must in the food industry. Tanglin Trust School is our first unit to be HACCP certified, which provided our clients and us with lots of benefits. HACCP ensures a consistent high level of quality and safety of our services and products, higher customer satisfaction and retention rate, business sustainability and opening new market opportunities. We follow HACCP principles in all the site where we provide food services.
