Brisbane’s Food Scene: Evolving & Changing

W

ith quirky cafes popping up on every corner, crazy food and drink trends taking the city by storm and an ever-expanding food culture, it’s safe to say Brisbane has become a foodie hot spot. Once upon a time, restaurants like Sizzler and all-you-can-eat Pizza Hut were the epitome of ‘great’ dining, offering up unique meals you just couldn’t get anywhere else at the time. When the chains were at their peak and booming (from 1985 to early 2000s), some would even go as far as saying they were some of the fanciest restaurants in Brisbane - imagine, what those people would say about our food scene now! Today, we are spoilt for choice when it comes to food, with a new venue popping up just about every week – proving that wining and dining has become a Brisbane way of life. Let’s go back through the years to some of the best foodie trends in Brisbane – do you remember them?

Moving through the years The first wave of food trends to hit Brisbane was fine dining, catering for the people who appreciate the fancier things in life. Although it was around and many restaurants were already doing this, this style of dining became really popular between 2010 and 2013. The style focused on wine and cheese matchings, degustation menus, multiple course meals and meticulous dessert creations, all made from top quality ingredients and produce. In 2013, Brisbane began to see a big change in the food scene, with foodies wanting more convenient and indulgent options. Brisbane was introduced to Eat Street Markets and soon after a wave of markettype foodie events swept across the city. Food trucks and food containers (shipping containers turned kitchen) were the new way to dine out. Now with live entertainment, stores to browse and food from every corner of the world, this trend is still very popular today with many markets around the city - including Eat Street, Eats and Beats, Mt Gravatt Marketta and

more. Today we’ve completely turned away from fine dining, with a range of more quick and easy junk food type options. We first saw the influence of American cuisine back in the 1970s, but as they say, history repeats itself and American food has now come back to us - bigger than ever before. We’re talking biggerthan-your-head burgers, spicy hot wings, loaded hot dogs, loaded fries, New York style pizza, bacon flavoured milkshakes and doughnuts (yep!) and ice-cream sandwiches. American style restaurants like Brooklyn Depot, Lord of the Wings, Miss Kays and The Manhattan Line have popped up all over the city, offering big greasy servings and over-indulgent food options (is ogs t - hotd n Depo that a bad thing?). Brookly We’ve seen so many changes in the foodie scene over the years – of

in 2010. Both series opened up a whole new world for aspiring chefs and at home cooks, allowing them to see that they could create more than just the traditional ‘meat and three veg’ dish at home. rs ge epot Bur Brooklyn D When they first aired, the TV shows introduced us (everyday cooks) to a huge world of new foods and foodie experiences, including cuisines from all over the world, creative masterpieces, food art and unique flavour combinations. Over the years, viewers have s nut Frie o D been introduced to more and ts e et Mark Eat Stre more food ideas and possibilities (they’re endless), and as a result Gelasp resso Donuts the demand for variety and ‘oncecourse, change is inevitable – but what in-a-lifetime’ food experiences not only could be influencing our desires for more at home, but within the foodie society has creative, unusual and overly indulgent foods? reached an all-time high. Customers are no longer after a ‘satisfying’ meal, they want the whole Reality TV Influences experience – art, taste, creativity, atmosphere and Some would argue (who’s arguing, it’s social media share-ability. food?), the changes seen in Brisbane’s food scene and culture can be related to the introduction of reality TV cooking shows and the growth of certain social media platforms. In 2009, Australia was introduced to Channel Ten’s reality cooking series MasterChef, followed by Channel Seven’s My Kitchen Rules

Social Media Influences Social media platforms have had a huge influence on Brisbane’s food culture as well - especially Instagram. Many viral food trends have started with a simple Instagram picture, including the vegan junk food trend and the towering donut milkshakes epidemic (what a delicious epidemic to have). Since then, cafés and restaurants all

around the world, including many in Brisbane, have jumped on the ‘Instagrammable’ food train, creating dishes and drinks specifically to lure social media fiends into their venues to try their creations and hopefully tell the world how good they are. It’s great marketing!

kka’s 2017 Natural Fibres Fashion Parades are synonymous with natural fibres and have a 25-year history of connecting the agricultural industry with Queensland’s most glamorous fashion. This year’s parades, under the new direction of stylist and event director Laura Churchill, will take audiences back to nature from the moment they enter the room and through every aspect of the show. “The theme for this year’s show is Back to Nature so the feeling I’m aiming to give our audience is a complete sensory experience – when the parade is due to start they’ll hear sounds of rain and bird noise, and the set this year will incorporate a ceiling-height panel of falling leaves,” Laura says. “We have produced a video that will screen before the show to take the audience on a journey from fibre to fashion, featuring footage

from cotton and wool farms in rural Queensland, then following the story through to manufacture of the garments, the designers in their workrooms, and the final product – the beautiful locally-made fashion.” Honouring the farming and supply chain links between Queensland grown natural fibres and runway fashion, the designers will showcase garments across categories including daywear, racing/occasion, regional designers and the everpopular formal/bridal segment. There will also be a dedicated student design segment featuring the work of students from Queensland University of Technology (QUT), Billy Blue, Australian Institute of Creative Design (AICD) and TAFE Qld. “We have everything from student fashion to emerging designers, one of which will launch her collection at Ekka, through to the most recognisable names in Queensland fashion

represented on the runway. It’s sure to be a really inspirational show,” Laura says. Brisbane designers featuring in this year’s Natural Fibres Fashion Parades include White Label Noba, Daughter of the Moon, Tengdahl, Urbbana, Sticks and Stone, Pia Du Pradal, Gail Sorronda, George & King, Sacha Drake, Irma J Smith, Maiocchi, George Wu, Wil Valor, Wendy Makin and Darb Bridal Couture. In addition, four regional designers have been selected including Nikke Horrigan (Ipswich), Ella and Sunday (Sunshine Coast), Tyler Giudes (Townsville) and Alexander Kennedy (Toowoomba).

“Education is also a key focus this year, so we have involved all of the major Brisbane design schools on the runway as well as in a static display of student designer fashion. In addition, the new Fibre to Fashion Conversation Series will offer audiences a snapshot of four key aspects of the natural fibre fashion industry,” Laura says. The Fibre to Fashion Conversation Series will be hosted by Laura Churchill on the fashion stage at 1pm in between the 12.30pm and 1.30pm fashion shows on August 13, 16, 19 and 20.

ishart parkrun was recently awarded the Sports Award in the local Southside Queensland Day Awards. The winning formula of inclusiveness, personal best times, and their supporting culture are some of the reasons for their expansion to another location in our Brisbane South area. The new Mansfield parkrun successfully launched on Saturday 15 July with 374 runners and walkers alike. Local Mansfield couple, Martin and Lisa McKern are the Race Directors of this new chapter. Only 12 months ago, they both admitted they were out of shape but completed their first ever 5km parkrun at Wishart. Martin remembers “our first week, we were shocked to find over 100 people of all shapes, sizes, and ages at the park. We were nervous, but everyone was friendly and we were so encouraged to come back. Since then parkrun has helped us both make new friends, get fitter, gain confidence, and run farther and faster”. They are hoping to replicate this friendly, supportive community feel.

The walk and run track will start every Saturday at 7am at Blackberry St, Tilack Park, Mansfield. The paved course winds through the beautiful parks and bushland along Bulimba creek with two turn arounds and some modest hills. “This is a great opportunity for local residents to plug into this free weekly community event, make new friends, enjoy the outdoors and be active. We’d like that in Mansfield” says Martin. If you would like to get involved, simply register on www.parkrun.com.au, bring a bar code and come ready to walk or run. The Wishart and Mansfield parkruns are proudly supported by local business Core Health Coaching Personal Training Studio, Wishart.

Ransomware

L

10

ately it seems like widespread, malicious cyber attacks are happening more and more frequently. A few months ago we looked at the phishing scam that targeted Google and its Gmail users, and now we’re hearing reports of widespread cyber attacks on small businesses and corporations through the use of ransomware. Ransomware is a term used for any malicious software that infects a victim’s computer and encrypts their files, making the computer virtually unusable. The software will then often instruct the user to send money to an untraceable address in order for the attacker to unlock the device - essentially holding the victim’s files to ransom. You may have heard of the ‘Petya’ Ransomware attack that recently infected the Cadbury factory in Hobart, holding their files at ransom for $300USD per computer. It is believed that this virus

www.southcitybulletin.com.au | August 2017

was accidentally activated through an employee’s email and was then able to infiltrate the factory’s network. $300USD may not seem like too steep of a price to pay, however the unfortunate reality is that oftentimes the victim’s files never get decrypted after payment is made. Therefore it’s important to be prepared for such attacks and to ensure your computer is as secure as possible. Installing a virus protection program and ensuring all your software is up to date is the best way to protect your computer, and making sure to avoid suspicious websites or email attachments will reduce your likelihood of infection. Ransomeware attacks can happen to anyone, however small businesses are high priority targets for cyber criminals as they usually have lower levels of security and are more likely to simply pay the ransom to unlock their files. So if you’re a small business owner, or you’re simply

concerned about the security of your personal computer, the tips below will help you to stay safe from ransomware and other malicious cyberattacks. Also, be sure to check out the article on avoiding phishing scams that we posted a few months ago. Many of the tips used to avoid phishing scams apply to staying safe from ransomware as well.

Install a third-party antivirus program on your computer and run it frequently (once per week should suffice). This will hopefully catch any malicious software that may happen to get onto your computer and quarantine it before it can infect any files. I personally use Avast! antivirus and find it to work efficiently with very little intrusion on my regular computer usage.

Keep your operating system and other programs up to date. Many of these malicious software programs target vulnerabilities in the computer’s operating system and similar programs, such as email clients and

internet browsers. Keeping these programs up to date is the best way to ensure these vulnerabilities get patched up before you become a target for ransomware and viruses.

Backup your files frequently. It’s very important to keep backups of all your files just incase your computer does get infected with ransomware or a virus. If your files are backed up to an external harddrive or cloud-based storage system, you can simply replace any files that become encrypted or infected. Keeping backups of all your files is a good habit to get into, particularly for small businesses, as hardware failures and theft can happen without warning.

What to do if you do get infected with Ransomware. In the unfortunate case that you do become infected with ransomware and your files are encrypted, most experts believe it to be a waste of time and money to simply pay the ransom in the hopes of your files being released. Depending on the extent of the infection and the type of computer that you have, you may be able to have your files decrypted by

a computer repair technician. Of course, it’s always better to focus on prevention than to hope for a cure, and taking the above advice is a good way to protect yourself.

HOLIDAY ESCAPES with Vicki Smith

Winter Wonderland

Y

ou have a whole weekend stretched ahead of you, you’re itching to do something but have no idea where to go – well, let me share a few of my special places to go to on the Gold Coast. The Gold Coast is one of my favourite playgrounds on a clear Winter’s day. Stretches of sandy beaches, cafes and parks are there to entice you in. Get up early to beat the rush, head to the southern end of the coast for a cool crisp walk around Greenmount or Burleigh headlands. At this time of year, you’re sure to spot a whale or see dolphins catching a wave or two. Keep an eye out for the bearded dragons sunning themselves on the rocks and marvel at the stunning

beaches that glisten in the Winter sun. You may even like to string up a hammock on the trees around the area and spend a few hours reading a good book. If you’re brave, take a dip, I can guarantee you will feel refreshed afterwards. Early birds that love to catch a sunrise will find that Burleigh or Snapper Rocks are the pick of locations and you would be amazed at how many people are out and about on a Winters’ evening at Snapper to catch the sunset. Need to do something to keep the kids active for the day, pack some watermelon, sausages, bread and tomato sauce and head down to the Broadwater parklands. This is an awesome playground for big and small kids, plenty of pathways to walk or ride

Photo: Vicki Smith

bikes around and grassy areas to sit yourself down and relax in the warm winter’s sun. Once lunch time comes around you can locate one of the free BBQs and cook up a storm. While you’re there don’t forget to check out the Maddie and Mike Sculptures, Blue Perspective Sculpture, Education Pavilion and the Anzac Cenotaph to name a few of the treasure at the parklands.

Want to see heaps of Kangaroos in the wild? Head down to Coombabah lakes conservation area, take a walk through the bush, wander amongst the Kangaroos and try to spot a Koala hiding in the trees. This area is best in the late afternoon and is unspoilt with few people. You may even spot the odd old plane coming into land in the nearby airstrip. Well this is a little taste of my Gold Coast in Winter, I hope you take the time to enjoy a day out exploring its many beautiful locations.

12 HEALTH & FITNESS with Cameron Corish

Seniors fitness training – is it different?

L

ong gone are the times of seniors fading away until their passing. More and more seniors are taking active control of their health and fitness training to experience a fuller life that involves doing and achieving more, socialising and traveling. This is an emerging and growth area within the health and fitness industry that needs specialised training. Some of the reasons seniors are looking for more fitness options are the proven benefits of exercise including reducing the risk of chronic diseases, helping weight management, increasing energy levels, and improving mental health and focus, resulting in an improved quality of life. www.southcitybulletin.com.au | August 2017

To gain these health benefits, first we need to start something. Here are some simple tips to get going: 1. Just start – even walking around the kitchen a number of times to improve endurance 2. Start small – no need to run a marathon on day one 3. Be consistent – commit to doing something each day 4. Do what you enjoy – lawn bowls, ten pin bowling, bush walks, tennis, gardening, golf 5. Seek professional and specialist advice from a specialised Personal Trainer or an Exercise Physiologist to get better results and reduce the risk of injury 6. Functional exercises to help with day-to-day activities rather that isolated weight training such as biceps curls. 7. Extended warm-up and cool-down like 5–10 min each

Seniors should also incorporate in their training and exercise these three key considerations specific to this age group: 1. Flexibility – We lose flexibility as we age, but flexibility is important for even simple things like getting in and out of cars, sitting down rather than falling into a chair, getting off the ground and even putting on clothes. 2. Balance and stability – Injury from falls is probably the most significant issue that can impact seniors’ quality of life. 3. Strength – We lose lean muscle mass as we age, but strength training can specifically help with medical conditions such as osteoporosis and arthritis. Like most fitness training, seniors will gain great health benefits from training, and with applying these simple tips to get started and the three keys, an improved quality of life can be achieved. We’re Going on a Bear Hunt

The Boy from Oz

Set in the French country side in the 1950s, La Fille delights and entertains audiences as a love triangle create comic chaos. Lisa loves Colas. Colas loves Lise. But Lise’s mother, the Widow Simone, has agreed that her wayward daughter should marry Alain, son of a pompous, wealthy vineyard owner. What ensues is a series of mischievous antics as Lise works her way out of the Widow’s marriage contract and into the arms of her love-struck beau.

Adapted for the stage from the modern classic written by Michael Rosen and illustrated by Helen Oxenbury, We’re Going on a Bear Hunt is the wonderful story of a family out for walk and on the lookout for a growling bear - they have to march through long swishy grass, wade through thick gloopy mud and even battle a snow storm before entering a big dark cave where maybe they will finally spot the glinty wet eyes of a slobbering, gigantic bear winking at them through the blackness.

Following his dazzling career, The Boy from Oz details Peter Allen’s life, from beginnings in the town of Armidale, through to his colourful and memorable performances in America. A star-student line-up joins Peter in this fascinating and often surprising insight into his life and loves. This superb musical features an array of Peter Allen tunes, including When I Get My Name in Lights, Tenterfield Saddler and Quiet Please, There’s a Lady on Stage.

The Australian premiere of the powerful stage story An Octoroon by brilliant playwright Branden Jacobs-Jenkins will kick off in Brisbane on Thursday 21 September. A Queensland Theatre and Brisbane Festival co-production, the show will run through to 8th October in the Bille Brown Studio in South Bank. It’s the story of historical Louisiana. Or historical Far North Queensland. Or it’s the story of a black playwright. Or how race is portrayed on stage. Or, maybe it’s about how they’re all the same story. Brash and provocative, this satirical comedy traces its roots back to an 1859 stage melodrama by crowdpleasing Irish impresario Dion Boucicault. When the story of a man who scandalously falls for a slave on his Louisiana plantation premiered in New York, it helped fan the flames of the American Civil War. Today – with race still as incendiary a global issue as it was then – the dazzling and radical African-American playwright has torn apart and rebuilt the original text as a towering, immersive and wildly funny theatrical experience like no other, one which channels society’s view on race today. Leading Aboriginal artist and commentator

Nakkiah Lui (Black Comedy) makes her debut in this Australian exclusive. The show also stars Anthony Standish, Chenoa Deemal, Elaine Crombie and Melodie Reynolds-Diarra, Sarah Ogden, Shari Sebbens, Colin Smith and Anthony Taufa. We have two doubles to the Saturday 16 September, 7:30pm performance at the Bille Brown Studio, up for grabs. To enter visit www.facebook.com/SCBulletin or www.southcitybulletin.com.au

Ace your Job Interview Tips and tricks that really work

R

esearch indicates that over 75% of people regard undergoing a job interview as a stressful experience. Physical symptoms include an increase in heart rate, sweaty palms, trembling hands, and a cracking voice. Our minds can go blank, we stumble over our words, and wish we were anywhere else. The good news is that there are steps we can take to prepare for a successful outcome.

Answer questions concisely and have an upbeat style: Be yourself and be honest. Most people can usually spot insincerity a mile away. Remember your non-verbal communication too – make eye contact and sit up straight.

Have a clear concept of your strengths and weaknesses: And be ready to verbalise them, if asked.

Ensure that you are able to explain how your own abilities make you a great choice for the job on offer. Be prepared to talk about your past experiences and how they have given you a good foundation for the position.

Research the company well beforehand: Prepare answers about why you want to work for them, and be familiar with the way they work. It is also a good idea to have a few of your own questions up your sleeve about the company you could be working for. This will provide proof of your enthusiasm and interest, which is what all employers are looking for.

Dress for success: Wear clothing a notch above what you would normally. For office and corporate roles, a shirt and tie is advisable, but in other fields, such as the construction industry, smart casual

clothing would be more appropriate.

Have perspective: Yes, this interview is important to you, but if the worst happens and you don’t get the job, understand that there will be other opportunities. That’s the way life works. Viewing the situation in this way will relieve your stress and that’s always a good thing. It is common sense, but remember to be well rested and fed before an interview, and arrive early! After the outcome of the interview is known, feel free to ask for feedback on your interview. This will allow you to do better next time. Smile. Always. Despite your nerves, despite everything. This will add a positive vibe to your interview and help the interviewee to see you in your best light.

Evening Out - Classic Smokey Eye Creating the Classic Smokey Eye Look with Kylie Eustace THE TIMELESS SMOKEY EYE makeup trend is a look that doesn’t date! If you’re looking to recreate the smokey eye at home, try shades of charcoal, grey, stone, jet black, browns, plum and taupes - all popular tones for this look.\ Whether you prefer a smokey smudged lined eye or a heavy smudged smokey eyelid, wearing a smokey shadow or defining your eye with liner is what a smokey eye is all about! Try shading your entire eyelid with eyeshadow and blending it out to a smoked-out shadow look appearing more translucent the further as it blends out. Think deepest at the last lines and fading away to a wash of shadow the further it spreads.

When creating the perfect smokey eye for an evening out: • Remember if you are playing up your eyes, go for it, but, try opting for a softer toned or neutral lip to create modern balance within your look. The old saying, ‘play up eyes or lips’ is definitely a good pointer for creating a striking look. • If you are wary of deep or black toned shadows, substitute the dark shades for softer greys, taupes and stone shades to create your smoky eyes. These shades are much softer, but will still give the effect you are after.

• If you want to add a little colour to your look, add a touch of coloured shadow to the centre of your eyelid in your favorite shade such as a Midnight blue, Plum or Green, blend onto the center of the eye. This will make your eyes look bigger and draw great attention to your windows. You may also go for the highlighter on the inner corners of your eyes if you like. This will also open the eye area up.

Accentuate the look by keeping your brows perfectly groomed or go for the natural unkempt brow look. I love both choices and love the earthiness of untamed brows! Fresh looking skin and peachy cheeks always brighten up your winter skin too, so don’t forget to blush it up. For smokey eyes try Mineral Goddess eye shadows in; Stone, Coffee bean, Earth, Smokey, Onyx, Vamp and BlackIntensity. I hope these tips help you with creating that perfect smokey eye!
