Early spring is ripe for picking and making citrus Marmalades. Almost every back yard has a citrus tree of some description or have neighbours who are keen to off load excess fruit. Home grown citrus is so totally different to bought citrus which has been waxed to prolong shelf life. This wax is almost impossible to scrub off and the finished product is never as good as home grown. Marmalade follows a very simple pattern. 1 kilo of fruit, one and a half litres of water and 2 kilos of white sugar. Wash and cut fruit into desired pieces/lengths. Place in a wide neck preserving pan and add water. Leave over night. Next day boil fruit and Waterford approx 1 hour until peel is soft. Add warmed sugar gradually and boil for approx 10-15 minutes, skimming any scum that may appear off. Check for set and pour into hot sterilised jars with tight fitting lids. Voila a beautiful homemade marmalade to enjoy through spring with toast or croissants. Recipe by Carole Ruta, South Coast Providores, Berry.

You‘ve seen them charge fearlessly into raging bushfires during the heat of summer, but do you know what else the Rural Fire Service does? The Sussex Inlet Rural Fire Brigade Open Day on Saturday 13 September is your chance to see behind the scenes, meet these heroic volunteers, see amazing displays and have lots of fun! The open day begins at 9am at the Sussex Inlet Fire Station in Thomson Street Sussex Inlet (next door to the public school) with lots to see and do for the whole family. Feel the intense heat of a live fire demonstration; ‘get down low and go, go, go,’ as you practice escaping from a house fire without the danger in the Rural Fire Service’s ‘Smoke House’; check out the Fire Brigade and NSW Police displays and try your luck in the monster raffle.
You can also browse market stalls; enjoy tasty foods; collect the many giveaways on offer and let your kids have a ball on the free jumping castle and merry-go-round. The Sussex Inlet event is part of a statewide campaign that will see more than 350 fire stations open their doors to the community to display their wares and educate the community about fire safety and the valuable work done by the Rural Fire Service all year around. For more information about the open day contact Daniel Osborne on secretary-sirfs@live.com.au or call 0411 707 651.

Ulladulla, Coastal Villages and beyond Lake Conjola - Milton - Mollymook - Burrill Lake - Bendalong - Bawley Point - Lake Tabourie - Durras - Kioloa
Ulladulla, Milton, Mollymook and Coastal Villages Ulladulla Harbour is the home port of the largest commercial fishing fleet on the NSW South Coast. The town has modern shopping and several fine clubs as well as a leisure centre, cinema complex and the famous Funland. There are some great places to surf, snorkel and dive in nearby Mollymook. Milton is classified by the ‘National Trust’ and has a myriad of wonderful B&Bs, as well as boutiques and shops to browse. The coastal villages of Bendalong and Manyana, are set amongst a beautiful backdrop of bush and beach. Lake Conjola is a deep coastal lake which provides a wonderful playground for fishers and boaters. Just south of Ulladulla is Burrill Lake, where you will find a perfect setting for boating, sailing, windsurfing, prawning (in season), snorkelling or surfing.
Lake Tabourie Located about 10 km south of Ulladulla this lake is fairly shallow and suitable for low-draft vessels, kayaks and canoes. It is also a haven for birdlife and there are a number of excellent beaches on the adjoining coastline.
Bawley Point
What to See & Do ■ Take a trip to Bendalong - not too far north from Ulladulla. ■ Explore the Coomee Nulunga Cultural Trail, created by the local Aboriginal Land Council.
Enjoy spectacular views, taste exquisite wines or enjoy a meal in the award winning Vineyard Kitchen restaurant at Cupitts Winery ■
Visitors to Bawley Point can expect to find tranquil lagoons, beaches and headlands where the local delicacy is prawns. A large amount of the surrounding area has been reserved as a wildlife sanctuary.
Durras A beautiful spot to stop and kayak or spend a few nights. Boasting several stunning beaches. Stay in a tent, caravan or cabin and enjoy everything Murramarang National Park has to offer: walking, swimming and fishing.
■ Enjoy swimming, surfing or fishing at one of the many beaches. Go boating, kayaking, canoeing or fishing on one of the many lakes. ■ Visit Funland Ulladulla to enjoy three floors of games and rides.
