We caught us with Chef Jesus to talk about his culinary background, the dining at L’Auberge and how the food and beverage team at the property strive for success and customer satisfaction with every guest.

Jesus Arguelles: I went to a culinary school in Mexico in 2008, so it’s been for almost 15 years now. My early influences came from my family’s kitchen. My mom really enjoyed cooking and I remember my aunt cooking and my grandmother cooking. It’s just like all this around my family makes me—I want to be part of this, and I want to be serving for people. I want to be making people happy with my food, and that is how it started.

GDD: As your journey progressed through the culinary caveats of your career, have those influences changed? And what have you learned along the way?

GDD: From your perspective, what makes the perfect dining experience from start to finish? And how do you and your team strive to provide that experience for your customers?

GDD: L’Auberge certainly offers the highest caliber customer service at the property. In closing, is there anything you would like to add?

GDD: What’s special about L’Auberge and Red Lotus? What makes the evening or meal special for the customers?

JA: I really believe that all of the team members who work here are what make this property special and unique, and you can see it wherever you go on the property, including our dining options. In all the services and everything you experience, the passion the team members give every day is going to be reflected in what you’re going to see when you come here.

GDD: Do you feel like your personal preferences and cooking preparation comes out in what’s on your menu for your customers? JA: I’m always thinking about what the customer will enjoy, but also incorporating the flavors that I like and that I’m familiar with. I try to put them together to have that perfect balance between my flavors and the Asian flavors, and put something together.

JA: For me, I think it’s service, food, and company. Those are the three things that make it the best experience for me. I mean, obviously, we can’t control who you’re going to bring with you, but I can assure you that me and my team will always do our best to give you the best experience every time that you come visit L’Auberge.

GDD: Tell us about Red Lotus Asian Kitchen and what can guests expect when they visit? What are some of the customers’ favorite menu items?

JA: Like I said before, we have great chefs and an amazing culinary team. Believe me, every time that you come here, we’re going to work hard to make your visit a memorable visit.

JA: We are an upgraded Asian cuisine, I would like to say. We have lamb chops and chicken, but we also have the traditional dishes, but with a little bit extra on that to make it better for the customers. We like to create new dishes. We have lemongrass chicken wings. We have Peking duck. We also have the classics, the fried rice. We have a little bit of everything for the guests.

JA: Working with several great chefs over my career has had a big influence. These days, I’ve been working with so many chefs that I love working with it has really been a tool to motivate me to keep cooking.

G. Douglas Dreisbach: Red Lotus Asian Kitchen at L’Auberge has become a popular restaurant for guests and they seem to really like what you have going on there. Having been at the property for four years, and a vast background prior, what made you interested in being a chef and what were some of your early culinary influences?

GDD: Are there any types of cuisines you like to cook? And how does that transcend to what goes on the menus for your guests?

CN: I still have a sweet spot for anything seafood. I love handling seafood. I love cooking seafood. I love serving seafood. It’s just a great palette and if the product is fresh, looks good and smells good, you can do little things to enhance it. I am an outdoorsman. I like to hunt and fish, so a lot of wild game is consumed at the house, and we try to do some here at the property as well.

CN: It was a mid-level to high-end restaurant in a local community but there were a lot of tourists. We have a great fishery on Saginaw Bay, so there’s a big tourist crowd there, so it was more of a tourist-based restaurant.

G. Douglas Dreisbach: What originally led you to become a chef? And how did you end up at Soaring Eagle?

GDD: It sounds like team camaraderie is important in the food and beverage department as the team presents something to you, and you say, “Yeah, this hit the nail on the head.” That is probably a pretty good feeling for them, almost like presenting a project to the teacher in class and getting it right. CN: Absolutely, having the chefs that oversee the outlets write those menus gives them a sense of ownership and pride in what they’re presenting. I, myself, as the Executive Chef, could write a menu, develop the recipes and give it to these individuals, and say, “OK, this is what you’re going to execute,” but then where is the ownership in that? Where is the pride in that? When someone creates something of their own, it just creates a level of ownership in that end product that, no matter how professional you are, you might not get that if it’s something that’s forced on us. Now, where the executive chef and beverage director comes in is that final refinement, that final tweak, that, “Well, what if we do this? Or what if we do that?” We discuss it as a team and make a decision as a team.

CN: I have the final say on the menus for our internal restaurants. I was recently promoted from Executive Chef to Food and Beverage Director, so those menus go through each of the outlets department chefs and work their way through the executive sous and the executive chef who will put their touches on it. Then between how that menu is presented, how it looks, how it rolls out, how it’s made sure it’s financially feasible for both the organization and our guests, I will have that final say-so on it.

GDD: At what point did the light turn on in your mind and you knew you wanted to have a career in the culinary business?

CN: Well, that’s where I started out, but down the road, I did end up going to the Culinary Institute of America in Hyde Park, New York. It was there that I refined and furthered my education in both the culinary arts and the business end of it, as well.

Chef Chris Nadobny: My parents owned a retail wholesale fish market in Bay City, Michigan and I got my start there cutting fish, delivering fish, working the counter, those sorts of things. So that got me started with food handling, quality control, so on and so forth. In my teenage years, going to school, trying to get a date smelling like fish just wasn’t a thing. So, I ended up getting a job at a local restaurant cleaning dishes and then it just kind of grew. A lot of times in the food industry, a line cook or someone will quit and they look to the next guy to take their place. Well, the owner looked at me and said, “You want to move up?” And there it was.

CN: Actually, I got a job offer through a country club, and when I got there, I started getting a feel for seeing the refinement of how to handle food, prepare food, and present food. That really sparked my interest. The rush of being on a line, throwing down on a line and working as a team really kind of sparked and intrigued me to take it further.

GDD: Did you get your early experience more hands-on in the kitchen versus going to a culinary college?

GDD: So, you came through as maybe somewhat of a novice, and then they polished you up and put you back out into the finer dining preparation of the world of culinary?

CN: Absolutely. And I knew how to run a line. I knew how to throw down. I knew how to work as a team. But you go to school, and that kind of refines everything and it builds on your experience. The experience is, in my opinion, one of the more important details of being a culinarian or a chef or anybody in food and beverage. So they just took the experience I had and kind of refined it a little bit.

There are rules that allow players to adjust their game that are not allowed by the dealers. Players can double down, split pairs and stand or hit at any time. By doubling down, you can double your bet if you think your hand has a better chance of beating the dealer’s hand. Doubling down doesn’t increase your chance of winning but it does increase your chance of winning more when the odds are in your favor. You can split pairs if you have two cards of the same numerical value (two eights, two face cards, etc.) essentially increasing your chance to beat the dealer as you are playing with two hands, but you also have to place an equal bet on your second hand. By learning basic strategy, you can bring the house edge down to 0.5 percent.

TABLE GAME TUTORIAL BACK TO THE BASICS

Blackjack is the most popular game in any casino. The extremely low house edge and the simplicity of the games are two reasons why it is popular with the highest of high rollers in Las Vegas to the first time gambler visiting a riverboat casino. It is played with a standard 52 card deck but can be played with multiple decks. The goal of the game is to not go over 21 (referred to as a bust) but to get as close to it as possible, closer than the dealer. Although, if you and the dealer bust, you still lose.

If you are in the mood for a fast-paced game, look no further than the craps table. If you have ever heard loud cheering or moaning in a casino, you were probably near a craps table. The game consists of players wagering on the outcome of the roll of two die. The “Come-out roll” is the shooters first roll. If it is a 7 or an 11 (called a natural), everyone with a bet on the “Pass Line” wins. On the other hand, if the shooter throws a 2, 3 or 12 (craps), they lose, and the next player takes a throw. Any other number that comes up becomes the shooters’ point and he will throw the die until the dreaded seven comes up and everyone loses their bet except for those who bet “Don’t Pass”. While the shooter is rolling for his point, bets are made on several different outcomes from the straight up on the numbers four through ten, “Hard Ways” in which the outcome equals two even numbers. (Ie. Hard Eight is two fours, Hard Ten is two fives, etc…) and many more.

Baccarat is known to many to be one of the most elegant or prestigious games in a casino but is also extremely simple and great odds for the player. The object of the game is for the players to bet on either the player’s hand (pays even money) or the Banker (dealer) hand to hit or come closer to 9 and pays even money less a five percent house vig. So, if you bet $20 on the Banker hand, you would actually only win $19. The player can also bet on the two hands to tie which pays usually either eight or nine to one depending on the casino. When two cards total a number higher than nine, take off ten for the new number. For example, a total of 18 would become eight. The usual minimum bet is $20 per hand but casinos typically offer the games younger brother “mini-baccarat” for those who aren’t looking to risk quite as much. Same game, smaller bets and typically fewer players.

If you find that craps is too fast paced for your liking, make sure to visit the roulette table where you will find a very simple, slow-paced game where you are simply betting on what number a ball lands on after spinning around a wheel. There are also inside bets, in which you bet on numbers 0-36 either straight up on a single number, two numbers side by side or four numbers all next to each other, and outside bets, in which different scenarios such as red or black, even or odd numbers, numbers 1-18 or 19-36. You can also bet on groups of 12 numbers for one wager on 1-12, 13-24 or 25-36 as well as a column bet where you are betting on a certain column of numbers (also twelve numbers) to come up.

Some Basics While hitting an inside bet is much more difficult, the payoff is much better. A straight bet (betting one number alone) pays 35 to 1, a Split (two number bet) pays 17 to 1 and a six-number bet offers a 5 to 1 payoff. There are payoffs for everything in between from five number bets to low or high numbers. On an outside bet, the odds are more in your favor, but the payoff is low. Red or black, even or odd and high or low bets offer 18 outcomes each but only pay even money while the dozen bet or a column bet offer 12 number outcomes and pay 2 to 1. While your bet is based on your discretion, just keep an eye out for the five-number bet where the house edge is at its highest at over 7.29 percent.

There is also the Odds Bet in which you are betting the point number being rolled before the seven hits or betting straight up on a number to hit before the seven. You can make odds bets on any number , pass line and don’t pass wager but not until after you the point has been established. The true odds are 2-1 for a four or ten and pays $9 for a $5 bet, 3 -2 for a five or nine and pays $7 for a $5 bet, and 6-5 for a six or eight in which you can expect a payoff of $7 on a $6 bet. On a place bet, you are betting on a particular point number to be rolled that doesn’t necessarily have to be the shooters’ point number. Proposition bets are one-roll bets that count on the next roll of the dice to come up a certain way. Proposition bets are widely known as one of the worst bets you can make at a craps table; the high payoff doesn’t equal up to the high house advantage with one of the only upsides to the bet is that you can often bet less than the table minimum. One last note, saying the word “seven” at the table is frowned upon as it is said to “make” the dreaded number appear.

The game involves very little strategy other than tracking trends of the outcomes and leaves the player to bet and then let the dealer do the rest. While one would think that since

Let It Ride is a poker game where the player is simply trying to get a good poker hand, not play against the other players at the table. The game is played with one standard 52 card deck and is started after players make three equal wagers in betting circles on the felt prior to the deal. Each player received three card and the dealer places two community cards face down in front of them. After seeing their hand, prior to seeing either community card, the players can either take back their first bet or “let it ride.” After decisions are made, the first community card is flipped face up and each player can decide on whether to pull their second wager or “let it ride.” Then the dealer flips up the second community card and the players earn their winnings according to a payout ranging from 1,000 to 1 for a Royal flush all the way down to 1 to 1 for a pair of tens or better. The third and final wager always stays and cannot be pulled back.

Five of the worst bets to make at a table game there is no basic strategy and the player does very little, the game would have very even tendencies, especially since the house edge is quite low at just over 1 percent on either hand, with the bank hand a little higher due to a five percent commission charged on winning bank-hand wagers (to keep the house edge.)

While the hand you draw is based on luck, the key to winning at Let It Ride is the same way to winning at a regular game of poker: You have to know a good hand when you see one. If you play all of your hands and go for a lot of high odds hands, you are probably not going to win much. You have to know when to pull your wagers and cut your losses on the remaining wager. You are allowed to remove your second wager regardless of whether or not you left your first wager or of what a “know-it-all” player next to you may say. Poker Versus Video Poker Psychology is a major component of poker, but not VP. That’s why the expression carries a different meaning for each game. Although I’ll mention the relevance in table poker, my focus is on the very different game of VP.

Poker: Some say half the game is based on psychology and half on the cards, while others will argue more or less on each component. Either way, playing mind games with your opponents separates the best players from the rest. In fact, there’s a photo of a well-known celebrity playing table poker while wearing a pair of mirrored sunglasses. This is humorous because you’d never “read ’em and weep” during a live poker game because you want to keep any information about your cards unknown to the other players.

Final Thoughts If you’re playing the felt game of poker, you have to show restraint after the deal and keep your weeping carefully hidden from the other players. (Mirrored sunglasses, for example, are verboten.) If VP is your game, you can cry a river after the deal and, other than annoying others, you’ll suffer no consequences. It’s simply imperative that video poker players practice using tutorial software and ignore hunches for the best long-term results.

While it’s true that some people have a better card sense than others, nobody can accurately know the best VP holds all of the time without home practice. This is especially true when the odds of two holds are mathematically close to each other. An example is when there’s a progressive RF and you have to determine the exact coin value of the Royal that makes it better to hold three to the RF over a paying pair.

When I was around 9 years old, my mom would play poker with me and my sisters (dad was a straight-shooting lawyer) and frequently would say “read ‘em and weep” after her deal. Normally, it applies to a card-reveal needling your opponents after you have a winning combination at the end of the game. My mom, however, was saying it after the deal, meaning cry now about your rotten hand. This came down from her high-roller father and her usage, coincidentally, applies to VP (video poker). Once the cards are dealt, you need to forget about pie in the sky possibilities and deal with the current reality; that means playing according to the precise and accurate holds indicated by WinPoker software creator Dean Zamzow back in the nineties.

Tutorial software indicates the holds that will result in the best long run return. Hindsight We’ve all heard the adage that “hindsight is 20/20,” but it’s not quite true with video poker. That’s because it’s easy to remember a single event, say an auto accident, but unreasonable to remember thousands of VP holds.

If you tell somebody you remember being dealt a RF (royal flush) you’re probably telling the truth. Still, the odds remain as indicated on Table 1.1, that’s one in 650,000 hands. We all remember anomalies, and that’s precisely why you should be playing mathematically accurate VP and that means according to the software.

Video Poker: If you’re playing VP, however, it’s perfectly acceptable and irrelevant to “read ‘em and weep” after the deal. What’s unacceptable is to use that information to determine virtual card holds. It really doesn’t matter how many consecutive bummer deals you get on the device; you must still play according to the odds. Past Hands Table 1.1 indicates the odds of getting dealt any hand, prior to the deal. This is a constant and is not influenced in any way by past hands, good or bad.

Smooth-Calling

Someone now bets into you, and you just call the bet. But because you just called the bet, you let a jackal in with K-Q, and he hit a J on the end to make a straight. Clearly, even the jackal would have folded his inside straight draw for two big bets; but for just one, he was able to dream about a jack and convince himself that hitting a king or queen might win also.

When you have A-x suited and you hit your nut flush draw on fourth-street, you may want to smooth-call someone else’s bet in order to win the maximum with your hand. Let’s say there are four opponents in the hand against you. The first opponent bets out into you, and you decide to raise him in order to build the pot. Now the next two opponents fold, and the original bettor looks you in the eye and says, “ I know you wouldn’t raise me here unless you had a flush, so I fold.” How much money have you made after hitting your nut flush?

One big bet! Why did you raise out the opponents behind you? If you were the last person to act and someone bet out into you, then I can understand the raise, because you would already have several people in for one bet, and people who have called one bet rarely drop out for one more. Now suppose that instead of raising, you smooth-call your opponents’ bets. Now one of the two other opponents behind you calls the bet as well. On the end, the first opponent bets into you again, but this time you raise and you get called by both of your remaining two opponents. This time you have won six bets! All because you smoothcalled the bet on fourth street, and, presumably, allowed your opponents to hit good cards for their hands on the last card.

When you face a situation like this, ask yourself, “What are they holding that’s driving them to put all this money into the pot on the flop?” Probably straight draws, flush draws, pairs, and ace high. Folding your hand on fourth street wisely when the draws appear to have been hit is considered an art form.

When you’re involved in a big multiway pot and there’s been a lot of raising on the flop, watch out for indications that the drawing hands have hit on fourth street. Suppose you have 6-6 and the flop came down 2d-3s-4d. On the flop you have three opponents all putting in some bets. Still, you’re pretty sure that your hand is the best hand on the flop. But what if the worst possible card for you comes on fourth street? Then what do you do? To me the worst possible card here is Ad. If Ad comes off the deck, then the straight draw, the flush draw, and any ace (like A-K or A-4) all get there and beat you. If this card comes off of the deck, then you’d better fold.

Protecting Your Hand with a Raise

The following are examples of smooth-calling, jamming the pot, raising to protect your hand, and folding.

Folding Your Hand

Tricky plays like smooth-calling and slow-playing generally offer bigger payoffs in pot-limit or no-limit than they do in limit, where you can’t grab one giant bet from someone on the end; but even in limit these plays are an important part of the good player’s Jammingarsenal. the pot is the counterpart of the example of slow-playing given above. Sometimes, when you hold the nut hand, you just need to jam the pot on fourth street, in order to make the pot as big as it possibly can be. But it’s hard to know the right time to jam the pot, rather than smooth-calling someone else’s bet. Generally, it depends on whether someone has bet right in front of you or not. If someone has, then you usually want to smooth-call the bet. But if someone has bet and several others have already called that bet, then it’s time to go ahead and raise it up.

Because you didn’t protect your hand here by raising, you lost a pot that you should have won.

The principle of protecting your hand by way of a raise is also very important in Hold’em. (“ Protecting your hand” is all about making raises when you have a strong hand, so that you can eliminate players, thus giving yourself a better chance to win that hand.) It can mean the difference between winning and losing a pot. Suppose that you have Ac-3c (A-x suited) and garner two pair with Ad-10d-3s on the flop. Now on fourth street 9c comes off the deck for Ad-10d-3s-9c.

Players also have the option of “co-banking” with the house. To deal, a player must have enough chips on the table to cover all the other players’ wagers if they were all to win their bets. 1. If a player has no pairs, straights or flushes, he can set the second- and third-highest cards in his two-card hand.

2. If a player has nothing but a single pair, he can set it in his five-card hand and put the two highest remaining cards in his two-card hand.

8. With two three of a kinds, a player should play the higher as a pair in front and the smaller three of a kind behind.

7. With a full house, a player should generally play the three of a kind behind and the pair in front.

6. If a player can play a straight or a flush or both, he should play whichever straight-or-better five-card hand makes the best two-card hand.

3. Two pair is the most common case where strategy isn’t obvious. A player can either play high pair behind and small pair in front, or else two pair behind and high cards in front. The smaller the high pair and higher the remaining cards, the more inclined he should be to play two pair behind. If his side cards are small or his larger pair is large, he should split the pairs. He should always split the pairs if his high pair is of aces, and should almost always split if his high pair is of kings or queens: they are high enough by themselves.

9. With four of a kind, a player should play as if it were two pair, but should be slightly less inclined to split.

10. With three pair and a straight or flush (only possible with the joker), a player should play his hand as three pair (with aces in front).

If you are looking for a new game to play in the casino that is easy to learn and can be very profitable, you should consider Pai Gow Poker. It is a combination of American poker and the Chinese domino game that shares its name. Similar to blackjack, it is a slow-paced table game with plenty of player interaction and dealer assistance. With a 5% house vig on your winnings, this game provides the player with a huge advantage, which is why the house has to take a cut. The actual house advantage is 2.3 percent. The object of the game is to beat the dealer in two hands, a twocard hand (low hand) and a five-card (high hand). On a table similar to a blackjack table, up to six players are each dealt seven cards from a standard 52-card deck plus a single joker that can be used as any ace or to complete a straight or flush. All other hands rank the same as in American poker. The roll of the dice or a randomly generated number at the table, determines who goes first and every seat is always dealt regardless if anyone is playing or not. Once the cards are dealt (facedown), players sort them into two hands, a five-card high hand and a two-card low hand. These are also referred to as the hand “in front” or “on top” and the hand “behind” or “on the bottom,” respectively. To set the cards, the high hand must rank higher than the low hand and is considered a foul to arrange cards so that the low hand ranks higher resulting in a forfeiture of the bet. Players must determine their highest hand of the seven cards then move it to the five-card hand. To win his or her bet, a player must beat the dealer on both the high hand and the low hand and the dealer wins ties. Most hands in Pai Gow poker are pushes. As with blackjack, don’t be afraid to ask the dealer for help setting up your hand as they will always recommend the “House Way.” The dealer may not look at his or her hand until all players have set up theirs, so feel free to ask for help.
