elcome to our latest issue of Boca Piquant, your guide to local country club living. In each issue, we take a look inside a local country club community and give you a chance to sample club amenities, meet the people who live there and see what makes the club special. On the following pages, we visit Woodfield Country Club. Behind the gates of this coveted country club community, you’ll find the finest in dining, golf, tennis, fitness and social amenities. With an extensive juniors program for golf and

tennis and the addition of the PGA Family Course, Woodfield is a superior spot for family fun and community spirit. Last December, Woodfield partnered with Habitat for Humanity of South Palm Beach County to sponsor the construction of a new home for a very deserving family. Through Habitat’s Community Contribution Tax Credit Program, Woodfield made a corporate contribution and pledged 200 volunteer hours towards the construction of a Habitat home. From January to June 2012, Woodfield members and employees donated their time and talents to assist in this rewarding project. On Sunday, July 8, the family received keys to their new home at the dedication ceremony. We also offer local country club news from surrounding clubs so you can stay up to day with the latest in country club happenings. Profiles Eben Molloy, General Manager By Joanie Cox Woodfield Country Club is a place where families can kick back together and enjoy the best amenities club life has to offer. And it’s no coincidence the man behind the club has a firm grasp on how the dream has evolved. “I am proud to say our team is made up of strong people with good intentions making the best decisions for the club. Foundationally, trust and honesty are paramount pieces of the fabric of who we are and what we do here,” says Eben Molloy, general manager of Woodfield Country Club. Molloy has been at the helm of the club for a year and a half after previously serving as its assistant general manager since 2008. “Our whole kind of management philosophy has been enhanced,” Molloy says of some of the changes he’s brought to the club. “We built upon previously established principles and have really dialed in on service standards and foundational processes to allow us to successfully produce consistent results. In fact, our spa and salon operations are a prime example of this continued improvement. We enhanced all services and products we offer and have had such a positive response in doing so.”

THE AMERICAN DREAM Raised in Boston, Molloy has an impressive work ethic that led him to where he his now. His road to Woodfield was paved with years of hands-on experience, hard work and a passion to succeed that defines the American dream. “I grew up in Massachusetts. I went to school there and spent my college years at American University in D.C. I studied finance and marketing,” he says. “By the end of my junior year, I was sitting in a derivatives and securities class and it wasn’t a particularly exciting subject. I was beginning to realize that I didn’t love what I was studying and really couldn’t see it as a career. I wasn’t sure what my path would be, but I knew I needed to love what I did and the environment in which I did it.” Anytime Molloy went back home, he admits he’d find myself back in the country club environment. “Once I was set to complete my degree, I began attending career fairs for jobs related to my major and again realized I wasn’t interested in making a career out of those options. Then there was a three-line ad in The Washington Post,” he recalls. “The ad did not list the country club, only that they were looking for a caddy master. I was a Francis

Ouimet scholarship recipient and golf had been really good to me, so I applied to find out more about the position. It turned out to be Chevy Chase Club, one of the best clubs in the country. So I went in and interviewed.” Molloy landed the job but always intended to return to school for a graduate degree after a few years once he decided his career path. He soon became intrigued about the possibility of making a career in the environment he was always drawn to. Molloy requested to have lunch with the general manager to learn more about a career in club management. After a

few meetings, Molloy realized the country club industry was going to be his destiny. “I had never previously spoken to a club GM from a career possibility perspective before. I felt drawn to this position because it’s half analytical, half creative and completely in an environment that I love. I finally asked him ‘How do I chart my path to the top if I want to be where you are one day?’” Molloy was advised to go through food and beverage and work his way up from there. “In Continued on page 15

Profiles Claude Dubois, Assistant General Manager Time at Woodfield: Two months. WORLD ROOTS: “I come from a luxury hotel background. I was working for the Taj Group of hotels for 15 years. I worked in London, Dubai, Boston and now here I am in Florida. I’m here to assist the General Manager in his duties. My primary focus for the next few months is on food and beverage operations.” DRINK UP: “We have an extensive fine wine list with selections from Europe, South America and the U.S. We are reformatting our mixed beverages, including creating a cocktail every week for our members. We also like to incorporate fresh items from our Englishstyle herb garden into the cocktails to promote what we grow here on property. We also are competing with local restaurants in the vicinity of the club. We aim to look at what the competition is doing and do it better while also discovering new ideas that aren’t being done anywhere else.” YOUTHFUL GROUP: “Our demographic is very different from other clubs. Forty-nine is the average age here and we have a lot of families. It’s a benefit because it maintains the sustainability of the club. We make sure we cater to all demographics within our club. We have a special social and dining calendar for our kids, retirees, working parents and everyone in between.” OUTSIDE THE CLUB: “I love spending time with my wife, who’s pregnant and due in September.”

I’m in charge of putting the calendar together from November through October of the following year.” READY TO ROCK: “We’re excited to bring in a U2 and Bon Jovi tribute show this winter. We’re hoping to do a sushi/sakitini mixer one evening instead of a traditional wine and tapas event. We also host an adults-only mingler once a month in season and each month’s event is set to a different theme.” WELL-SEASONED: “Every November, we throw our Season Kick-Off Weekend party. It’s a huge party with over 1,400 in attendance on both Saturday and Sunday. Our Season Kick -Off Weekend is our most highly attended event and our New year’s Eve party is also well attended.” FAMILY FUN: “We have a lot of familyoriented events that welcome parents with their children and grandparents with their grandchildren. Our dive-in movie nights are always a hit and feature a movie screen set up on the pool deck. We have also hosted Dora, Mickey, SpongeBob and others at our character dinners. A new event we’re looking to do this year is a bonfire complete with storytelling for kids and s’mores.”

ISLAND TIME: “Because we have a younger membership, we’re able to think outside the box more, get creative and take more risks. We’re not sure yet, but we’re hoping to do a Jimmy Buffet-themed event with music, drink specials and decor.”

WHAT A TRIP: “I’m fully hands-on with our Season Kick-Off. This year our theme will be City Nights. Envision one room transformed into Mardi Gras, the next room is Paris. Then on to Vegas, South Beach and Tokyo. From the food to the live entertainment and decor, it’s going to be a lot of fun. With our large club events, such as this one, we also try to incorporate a favor for members to take home such as a collectible T-shirt.”

JOB PERKS: “This job has put me in contact with so many great people and I get to use my creativity on a daily basis. I grew up in West Palm and I was an event planner in Connecticut. I feel Iike I’m really home now.” FASHION MAMA: “Outside the club I enjoy shopping and spending time with my two daughters who keep me very busy.”

KIDS GET COOKIN’: “The Young Chef Cooking Experience is probably our most popular kids’ event. Twelve children sign up for the chance to cook with our executive chef. We try to offer it once a month in season and once or twice off-season. The kids get to cook a different menu each time and have created sushi, pizza, stir fry and more. The kids get to be hands-on in the kitchen and enjoy a three course meal.”

Continued from page 8 the meantime, I would work golf by day and at the Houston’s in Bethesda, Md., at night in order to immerse myself in food and beverage,” Molloy says. “On nights when I wasn’t working at Houston’s, I would work banquets at the club and did paper work for the banquet manager— anything I could to learn more.” After two years in golf, Molloy transitioned full time to the food and beverage department. SUBSTANCE AND CONNECTION Realizing he had many other departments to learn, Molloy began setting up learning rotations in every area of the club. “One week I would work with golf course maintenance. I would show up there at 5:30 a.m. to cut the greens,” Molloy mentions. “I would finish on the golf course and at 3 p.m., shower, put on a suit and head to the dining room to close. I did that for two or three years. I would do a week in tennis, a week in golf. I worked through every single part of the club so I understood how the club operated from every position.” Desiring to fully understand the challenges each department had, Molloy worked all departments of the club over seven years. He later landed a position at Farmington Country Club in Charlottesville., Va., to lead

several departments. Farmington was a great experience for Molloy but one that would only last a few years before being recruited to Woodfield Country Club. At 36, he’s one of the youngest GM’s in the country club business, but he demonstrates the drive and knowledge of a much more seasoned manager. “It’s a different vibe here at Woodfield. I feel there’s a positive energy that flows through this place,” he says. “We work very hard to establish a group of employees who understand the environment and the expectations placed upon them. Two main components for the success of anyone employed at Woodfield are substance and connection. We expect them to know what they’re doing and how to do it well, while also connecting with the people who work here and, most importantly, the people who live here.” Like many clubs in the area, Woodfield is also looking to the future as the club continues to thrive. “We’re working on a master plan like a lot of other clubs in the area to make sure that we’re ready for the next phase of the Woodfield experience,” Molloy adds. “We are planning now for what the club will look like in the future. We are excited for the work ahead that will hopefully begin in the next few years.”

HOOKED ON THE BUSINESS With 1,297 homes in Woodfield Country Club, the quest for perfecting amenities never stops. “Among many, our main commitment is to take care of this place from top to bottom, inside and out,” Molloy explains. “When you drive into our gates or walk around our property--from the way the golf course and buildings are maintained to the way you are greeted when you walk into our buildings, down to the presentation and taste of your food-we want your experience to be extraordinary. We ensure that it is second-to-none because we hold ourselves to the highest standards. Personally, I think it shows.” To ensure member satisfaction, Woodfield conducted a member survey this past season, something they plan to conduct annually. “The numbers speak for themselves. I thought it was great to see that about 92 percent of our membership was either satisfied or very satisfied with the overall operations last season,” Molloy says. While running a club can get challenging, the fact that no two days are ever the same is one of the perks that keeps Molloy hooked to this business. “Everyday is different and you have the Continued on page 30

We have nail techs, aestheticians, massage therapists and a reception team. Aside from managing that, we’re constantly researching the latest trends from the newest nail techniques to new styles for hair and color. We have couples and Thai yoga massage now along with neuromuscular and pre-natal massage.” RELAXING RESEARCH: “We tour all the large resorts and country clubs to make sure we know all the latest treatments available. We make sure we’re competitive and exceeding expectations. We do trunk shows here as well and offer a boutique selection of retail including everything from Hardtail, a lifestyle clothing line, to Voluspa candles.” ABOUT FACE: “We have new Babor facials. The detoxifying and oxygenating facials have been very popular. Spray tanning has been very popular this summer and, of course, deeptissue massage is everybody’s favorite. “ BEAUTY-TO-GO: “We have Babor makeup as well and Osmosis, a botanical skin care line. We have keratin hair products, Wella and Moroccan Oil. We also have a beautiful children’s product line called Circle of Friends. It’s sulfate-free and perfect for kids who spend the summer in the pool. We also carry OPI and Essie nail polishes and offer gel manicure services.”

SWEET RETREAT: “We always have a special every month. During November, we did a pumpkin facial and a minty bliss treatment in December. We also do seaweed masks, lavender pedicures. We have many scents to offer. We even do cupcake pedicures. The member goes home with a cupcake-shaped bath bomb. It has an icing to use as moisturizer and sugar scrub in chocolate and vanilla. The kids love the cupcake pedicure, but we also have children’s birthday parties, which are so much fun. They usually do mini-oatmeal masks, polish changes and hair blowouts. We also host baby showers to pamper moms in the spa, bridal showers and adult birthday parties.”

BOUTIQUE FEEL: “We have a more exclusive feel at our spa. We offer five regular massage- rooms, one couple’s room, two facial rooms and a Vichy shower room. We have five manicure stations and three pedicure stations. Our services include teeth whitening, color, cut, blow out, waxing, nails, massage and more. Many people come from their workout directly to their spa treatment. It’s all in the same building, which is incredibly convenient. They drop their kids off at Kids Korner, and enjoy complimentary babysitting if they’re receiving a service.” ROCK ’N’ NEW ROLE: “I started off as fitness manager here and then became director of spa and salon and now I’m director of the entire building. I love the ability to be included in every department. Fitness is my core; that’s my background. Spa and salon is a really fun industry that I’ve learned a lot about. With my new role, I’ll be interacting with the entire club again. I love how active our members are and how interested they are in trying new things. They allow us to be very creative and it’s a very energetic group.”

COOL POOL: “Our pool is packed during the holidays. For Fourth of July, the area was decorated and featured a live DJ and games for the children. February break is also very busy when a lot of the kids from up north come down. It’s very much a family-friendly atmosphere here; you can grab burgers or pizza and just relax. Our members see every facility here as an extension of their home. Profiles Becky Pearson, Director of Golf Time at Woodfield: 18 years; Director of Golf at the club since 2005. PAR FOR THE COURSE: “I started as an assistant pro in 1994, then became head pro and golf director. I oversee the whole golf program, which involves the day-to-day operations. We have a heavy tournament program, primarily in the wintertime but there are some summer tournaments as well.” TECHNICALLY SPEAKING: “The two primary computer systems that members use on a daily basis are the Chelsea Tee Time System and the GolfNet handicap system. We have an active ladies and men’s league and in the summer they have their traveling leagues. We have about 400 golf memberships and in the winter time, we’ll average about 150 rounds a day.” CHILD’S PLAY: “Our junior program is very active due to our younger demographics. A year and a half ago, we installed the PGA Family Course on all 18 holes and children ages four to 13 can participate. The child gets to experience golf as you and I get to experience it as opposed to them playing beyond their skill level. Now kids have their own little clubs they can buy and their own scorecard. Since the installation, we have seen more activity with our five to 12 year olds.” COOKIES AND CLUBS: “The juniors do set us apart from other clubs. We cater to younger people and kids and create programs for them. With the PGA Family Course, once a month, we run a family play day on Sundays with set tee times. Any member at the club is allowed to come with their kids because we’re trying to promote the benefits of golf for all ages and skill levels. It’s not a competitive situation, but more of a learning experience. They play nine holes and the pros are out there helping kids as they play with their parents. They have long drive contests and provide drinks and cookies. It’s a day that’s all about the children. We have grown the event and typically fill the hour with tee times for families. ”

FUN FOR ALL: “Another unique program we created for members is the Pro-Member Twilight. We have five professionals and two apprentices on our staff. At 4 p.m., every Thursday in the summer, we play a nine-hole tournament with the members. It’s such a

popular event that we now continue it as a monthly event in winter . In the wintertime, we do it once a month. After, we have cocktails and hors d’oeuvres. It’s a way to meet new people who share a common love for the game We mix the men and ladies, hi-handicappers and low-handicappers. We play a little “hit and giggle” as I call it so everybody’s comfortable. That program was started about four or five years ago on a smaller scale and it’s really grown to be one of our more popular events.” GOLF ROOTS: “I was on the ladies professional golf tour from 1980 to 1994. After 14 years with the LPGA, I came down here and started at Woodfield. I’ve been very fortunate to be able to play the game at that high level which opened the door for me to come into this side of the game.” GOLF BENEFITS: “Golf has opened so many doors and I’ve been so fortunate to meet so many people who have helped me along the way in my playing career and here. I feel lucky to have been in the golf culture my whole life.”

GREEN SCENE: “I talk with my staff all the time and remind them that we’re not in the golf business, we’re in the people business. You have to be able to enjoy the people since it’s a huge part of the job. I’m here on a daily basis and members have access to me all the time. We try to meet and cater to each member individually. I always want them to know they can come to me with fresh ideas.” LOVE OF THE GAME: “There are two components I always loved about golf. It’s an individual game where you can challenge yourself. I don’t have to play with anybody else or compete against anybody else. I can compete against myself. I also love that the game is so challenging. It’s never the same and every day is different. You can shoot your best round one day and play terrible the next. It’s the mystique of the game and the challenge of it – you never capture it.” OUTDOOR AMORE: “I love gardening. I spend most of my Sundays in my garden with my flowers.”

Profiles Jeff Cohen, Director of Tennis Time at Woodfield: Three years. CAREER POINTS: “I’ve directed tennis at clubs for the past 20 years, including in the Orlando area and Doral. I also worked on Williams Island. I started playing tennis at eight or nine.” HAVE RACQUET, WILL TRAVEL: “I played collegiate tennis on the tennis circuit. I played for a year at UCF and I also played a year at Foothill College, which is in Northern California. After college, I played some smaller circuits around the world and achieved a world ranking. I was working in my family’s flooring business for a year and a half, but I didn’t enjoy it as much as tennis. Then I started teaching tennis full time. I love tennis and I love it here at Woodfield. I feel so blessed to be able to get up every day and enjoy what I do.” ON THE BALL: “Playing tennis with the members is great. I really enjoy being out on the court, whether it’s socially or I’m giving a lesson. I also enjoy the administrative part of running events. There are a lot of moving pieces to it and I feel very fortunate to do this. Most of the people here are young professionals. When they’re out here on the courts, they really appreciate that they’re outside having fun. I’ve been to all the clubs here and many have off-the-charts amenities, but Woodfield is the crown jewel, for sure. You have the amenities which includes fitness, aquatics, the club, the dining, the social aspect, the tennis portion, the golf and the youth programs.” KIDS ON COURT: “Our juniors program here is huge and we have about 150 kids enrolled in our programs for beginners to advanced players ages three to 16. We have an afterschool program, summer camp, USPTA junior team tennis leagues as well as a tournament training group where we travel with the kids to tournaments from as young as three years old. We also host banquets and carnivals throughout the year. We’ve had coaches here that not only played professional tennis but coached on the tour as well.”

CLAY PLAY: “Our facilities consist of 19 clay courts, one hard court and 18 lit for night play. We’re host to the USTA NTRP (National Tennis Rating Program) State Championships each October. It’s an event I started about five years ago in Central Florida. I wanted to run a

state championship, but I didn’t want to have age divisions. I wanted to run it according to levels. So, myself and a couple people from the USTA got together and created this event. In 2009, I was awarded the Al Mills Memorial Golf Tournament of the Year, which is the NTRP State Championship.” A LEAGUE OF THEIR OWN: “We have about 250 adults involved with tennis here and we support a large men’s program with close to a dozen teams. We also have an incredibly large juniors program and a half a dozen ladies teams. All our leagues and teams are very active.” CELEBRITIES IN RESIDENCE: “Sébastien Grosjean who is ranked No. four in the world lives here. He’s an unbelievable player who recently retired and is currently coaching Richard Gasquet from France. Wendy Turnbull, who has won about a dozen grand slams in doubles from Australia, lives at Woodfield as well. We have a lot of celebrity events here and it’s not uncommon for big name pros to come out here and do exhibitions or

participate in closing luncheons. This year we had John Lloyd and Wendy Turnbull join us for the men’s closing luncheon. In March we did an exhibition with Grosjean.” TEAM SPIRIT: “We are the site for Rally For The Cure, which we’ll hold in March 2013. It benefits Susan G. Komen for the Cure. We also have a unique event for the men during football season called Men’s Monday Night Football. The guys come out and play three sets of doubles and later have wings and beer and watch the football game on Monday nights.” GLOBAL GIVING: “We did an event for the Israeli Tennis Center. Jill and Jeff Shavitz were nice enough to host. There’s a gentleman who brings kids over from Israel and it’s a fundraiser for tennis centers in Israel” OFF THE COURT: “I have a passion for snowboarding and I love spending time with my kids. They’re into karate, music, basketball and soccer and I love doing all that stuff with them when I’m not here. I also enjoy playing a little bit of golf now and then.”


Profiles Brandon Balch, Director of Landscaping Time at Woodfield: 19 years. BLOOMING IDEAS: “My goal is to always create new things. We have the English-style herb garden and the Thai orchid garden to pique people’s interests and make them stop and look. We wanted to create a more interactive landscape.” FLOWER POWER: “We’ve done a variety of garden areas with different themes. We have various flower beds and most have a cottage garden look. We never create the same thing twice. We go to trial garden shows where plant breeders are introducing new plants and we try them out and see if the plants are successful. This year, regular impatiens got hit by a disease. A lot of communities had to tear them all out and replant, which is an additional cost. We didn’t have that problem here because I don’t mass plant anything. We incorporate all different heights, textures and colors.” GARDEN SECRET: “I’ve been here a long time and I don’t want to get in a rut. Just because something worked last year doesn’t mean we should do it again this year. I love offering different plants, different color schemes and bed designs.”

VEGGIE EDGE: “We’re very proud of our English-style herb garden. We designed it, built it and planted it all in-house. The goal was to create an organic garden. We used certified organic compost and raised stone planters instead of wood because wood has preservatives in it. There are drip tubes to irrigate it which uses less water and it’s powered by a solar clock. The landscape staff harvests the produce and anything we grow out there is a certified organic product. We have basil, rosemary, thyme,

parsley, heirloom tomatoes – seven varieties of tomatoes. The zucchini flowers are what many members like best.” HOLIDAY HARVEST: “We change out our display beds during the holidays and accent the property with holiday lighting. For Thanksgiving we plant chrysanthemums and white poinsettias in December. In the spring we plant hydrangeas and lilies. We like to give our members something new to look at.” SCHOOL ROOTS: “I received my degree in horticulture from Auburn University and my major was in landscape design.” OFF HOURS: “Plants are a hobby of mine. I

have a vegetable garden at my home in Wellington. I also like diving and fishing and going out on my boat. And I love spending time with my 3-year-old son. He’s a blast.” DIGGING HIS JOB: “I love the fact that we can use a wide variety of plant materials and the creativity to do that. I also like the sense of starting with an area, redesigning it and then stepping back from it and seeing = where you started and ended with it. It’s a big sense of accomplishment.” FLORIDA FLORA: “For people new to Florida, hibiscus is always good. I also like tibouchina, which is kind of a bushy tree and does great in this climate.”

BOTANICAL BOUNTY: “We have more than 40 types of palms and thousands of different plants and flowers including 600 orchids and 200 hanging plants on our street lights. Our orchids come from all over, but most of the landscape material is Florida grown. You try to buy things that are accustom to the local growing conditions. We do all the interior floral arrangements in the club as well as the orchid arrangements. About half of our interior flower arrangements are from plants grown on our grounds. We host orchid sales here at the beginning of December and sell hundreds of plants to members and guests.”

Several different businesses coexist under one umbrella,” he says. “You have a spa, a salon, a fitness center, child care, five restaurants and full service golf and tennis. You have to take care of each business with a different approach while remaining dynamic and ever changing.” While people love tradition, they don’t necessarily love routine.” With the addition of the PGA Family Course last year and a booming juniors program, Molloy is proud of the unique family aspect his club has to offer with the median member age at just 49 years old. “We host family play days. Jason, one of our assistant golf pros, has doubled the participation in the last year,” he says. He also works closely with Woodfield’s board members and committees to ensure the

members’ voices are always heard. “Our board is comprised of nine members and at least that many committees. Committees aren’t for every club but I find them useful and it works for us,” he says. “Our open board meetings are structured as town hall meetings and serve as an outlet for members to share what’s on their minds.” BUILDING A BETTER CLUB While time behind the desk is inevitable as a GM, Molloy prefers spending as much time as possible out and about on the grounds of Woodfield. “The less time I’m in my office, the more I’m connected with the members and staff,” Molloy says. -“I put a lot of trust in our employees to perform to the best of their ability and I meet with them regularly to know that we are on the same path with the same goals. At peak season, we have almost 400 people and many have been with us for more than 10

years.” When he’s not at the club, Molloy enjoys running around with his own family. “I’m married. I have two boys under two, which is fun,” Molloy says. “I try to play golf on Saturdays and also attend large weekend events happening at the club. Sundays are family day. We love to visit the Palm Beach Zoo and take a trip to the beach. I make it a point to try to get home early enough to be with them. It’s all about finding that balance.” As for the future of Woodfield, Molloy envisions the club as a better version of what it already is. “We are constantly building on what we achieved yesterday. As good as we are, there’s always opportunity to be better,” he says. “It’s a matter of continuing to grow, whether it’s the evolution of our programs or the facilities, we are constantly pushing for improvement. It’s an exciting time and we’re positioned exactly as we should be.”

Tanzy Restaurant delivers with ambience inspired by the Amalfi Coast of southern Italy, artisanal Italian cuisine and drinks that can best be described as “futuristic.” The 250-seat, 7,000-square-foot restaurant in Boca Raton’s Mizner Park reflects the vision of restaurateur Hamid Hashemi, who also owns the iPic Theaters at Mizner Park and a Tanzy Express. Master mixologist Adam R. Seger works with the bartenders on drinks using liquid nitrogen and the freshest ingredients. The Tanzy -189C liquid nitrogen cocktail is served with a white cloud of gases flowing from the glass. The Red Carpet Glamour, with Seger’s own botanical rum called Hum, was served at the 84th Academy Awards Governors Ball and is available at Tanzy. Seger likes to infuse his cocktails with herbs from the garden, a practice he calls “farm to glass.” An herb garden on the west side of therestaurant is used to grow mints and herbs that make their way into an extensive drink list. The bloody mary, for instance, is a bouquet of edible delights. The Spice and Ice has seven spices around the rim of the glass, but my favorite is the Illegalito.

At Tanzy, the bartenders shave young baby coconuts down to the white skin, carve a hole in the middle, and then make a mojito inside with passion fruit, mint pulled from the garden and of course coconut ($13). This drink was very good and seemed bottomless. I literally sipped from it the two-plus hours I dined at Tanzy. The establishment also has a skinny mojito with only 85 calories. As for the food, chef Andre Lane and executive chef Angelo Morinelli are on-site, and they have presented some tasty takes on artisanal Italian cuisine while keeping the prices affordable. I started with the grilled octopus, a salad consisting of pickled cucumbers, purple potatoes, green onions and shaved fennel lightly topped in lemonette, all placed strategically on top of a piece of grilled octopus ($13). The salad was just delicious, and the octopus was tender. I tried to combine all the ingredients on the fork and splash the taste buds with a variety of distinct flavors. For the main course, I had the braised beef short rib with black mission fig balsamic glaze, garlic spinach and goat cheese gnocchi ($29). This dish was humongous. And again, the braised short ribs were oh so tender. As for the gnocchi, it was pan sautéed, just how I like it. It had a different texture, and everyone at the

table was asking for a bite. Eight different pastas make the menu, including the quattro formaggio fiocchi and spiced pear ($23). Another patron at my table ordered this dish, and it can only be described as pasta purses of creamy decadence, like a dessert within the entrée. Filet mignon, stuffed chicken breast, steaks, bone-in veal chops, cedar plank salmon, branzino and duck breast also make the extensive lunch, dinner and brunch menus. In addition, there are paninis, crustinis and sandwiches. Next time, I’ll try the Parma Bar with artisanal Italian meat and cheeses staffed by chefs on the border of an enormous open kitchen. For dessert I had rosemary gelato that was out of this world. It was just one of many dessert dishes that were offered by a knowledgeable server. The only question I have about Tanzy is: How soon can I get back? BOCA WOODS WELCOMES NEW CHEF to winning staff Chef David Sirko is the new Certified Executive Chef at Boca Woods Country Club. Acclaimed in the industry and well liked by his team, Chef Sirko brings his culinary gifts and extraordinary talent to Boca Woods. In 2004, Sirko was nominated as the ACF Palm Beach County Chefs Association Chef of the Year and in 2012, he was recognized as a Certified Executive Chef. Chef Sirko participates in local and regional competitions and has won many medals.
