often have high expectations for Mother’s Day. Sort of like I do for my Birthday. It’s the one day that I sort of technically “get away” with doing, well — NOTHING. It’s the day I have in mind where I am served, the day where I don’t have to wipe down a counter, unload dishes or make dinner… and the list goes on! I kind of envision it where my household is revolving around me, not the other way around. Um, that hasn’t worked out yet. Through the years I’ve collected all the typical handmade Mother’s Day gifts the kids bring home from school. Teachers sure are

amazing, thinking of us moms, right? I have many of those projects scattered around the house reminding me of the early years. As the kids have gotten older, I really miss the handcrafted goodies made by little hands. I miss the running up and jumping on the bed with the glitter spilling everywhere. I miss the excitement of doing something special for “Mommy.” It seems the enthusiasm fades on Mother’s Day with teens but it’s part of life to embrace each new development stage that comes down the path. Try not to put so much meaning on one day of the year and create a special foundation by taking day trips and exploring outside together. This month our writers will tell you how to do just that… Jess Michaels shares 8 Skills Your Kids Will Learn at Camp (page 14). Looking for a fun day in Gloucester County read about “Swedesboro: The Perfect Afternoon” (page 6). South Jersey MOM writer, Lisa Ann Panzino DiNunzio did her research on Berry Sweet Strawberry Dishes (page 12) to bring the family together for a fun-filled day of local strawberry picking and into the kitchen for delicious chicken wraps and strawberry parfaits. Family time is the best Mother’s Day gift of all!✲ Your friend & fellow MOM,

Brighten Mom's day with this easy pop-up card! To make the craft for Mother's Day, you'll need these supplies: • Card stock or construction paper • Tissue paper honeycomb ball • Markers, crayons, colored pencils or paint • Tape First, fold a sheet of card stock or construction paper in half. Then open the tissue paper honeycomb ball and tape it to the card with the center along the inside fold of the card, so that it will "pop" when the card opens. Swedesboro: The Perfect Afternoon By Barbara Wilchensky redevelop vacant properties. King’s Highway, the main stretch through the city was built in the late 1600’s as a connecting roadway between Burlington and Salem. Now situated along King’s Highway you can find a variety of businesses, like a yoga studio; however, Swedesboro is perhaps best noted for their delicious dining options. The Red Hen is one of the choices for a family friendly dining experience you won’t want to miss. In fact, the Red Hen Burger is on the South Jersey Magazine’s best burger list! Complete your visit in Swedesboro by picking up a sweet treat at the bakery or stopping by Latteria’s for homemade ice cream in over 30 flavors.

wedesboro may be small in size, but it is mighty in history. Located in Gloucester County, the history of Swedesboro, originally named Racoon, dates back to Swedish settlers whom, in the late 1600’s, laid stake to the land for only a brief time in history. The settlement was one of two in NJ that was part of New Sweden. The Swedish settlers flocked to the region for the fishing, farming and hunting, as well as the close proximity to the other Swedish settlers across the bay in Delaware. The settlers were noted for introducing the log cabin to the area and you can visit the oldest existing log cabin in the country, The Nothnagle Log Cabin, in the heart of Swedesboro at the New Sweden Park. This isn’t the only piece of history that can be found in Swedesboro. If you are looking for a nice afternoon stroll, you might consider trying one of the walking tours, either the Historic Walking Tour or the Historic Cemetery Tour. The Historic Walking tour will take you past four locations listed on the national or state historic registry, while the Cemetery Tour will high-

Swedesboro is less than a mile in area and home to about 2,500 residents. Just a stone’s throw from Mullica Hill, a hop and skip from Philadelphia and easy drive from Atlantic City, it is conveniently accessible from the NJ Turnpike and 295. Swedesboro is definitely a wonderful day trip, and throughout the summer they make it even extra special with weekly family events. You won’t want to miss the Food Truck Thursdays or Dancing in the Streets which are held once a month during the summer. Swedesboro Day is held in the fall, as well as other holiday traditions. Venturing Out With Baby By Nicole Kekesi

Nicole Kekesi

own comfort. You also may find that a nursing baby covers the breast really well; this alone can provide you with reassurance and comfort when you are out and about. Select a comfortable spot, whether it be a bench or quiet corner. Find where you feel at ease and most relaxed to feed your baby. This is a special time for bonding, so do your best not to feel flustered. Seek out a nursing room when shopping, if available, and choose a booth or back table when out to eat.

A

few years back, while walking around the mall with my youngest son, I noticed a woman awkwardly positioned in the corner with her back toward everyone. As a lactation consultant, I instantly recognized the signs of a new mom desperately trying to be discreet while nursing her baby. Unfortunately, my son noticed too and—to my alarm—ran toward them, clapping and shouting, “baby eating mook!” So much for discreet! I profusely apologized to the mother for my less-than-subtle toddler and offered a sympathetic, understanding smile. When I think of that woman, I think of all the women I know who struggled with breastfeeding in offices, restaurants, shops, and countless other places outside the home. These scenarios can be especially anxiety inducing for new moms, who are still getting the hang of draping, positioning, and the rest.

10 | May 2019

To help ease mothers into breastfeeding away from the home, I have compiled a few tips: Find your comfort zone. Every breastfeeding mother has her own comfort zone depending on the situation and environment. Whether you choose to cover up or not is your decision and you do not need anyone else’s approval. Maternity stores offer a wide range of wraps and drapes, if needed. Many mothers, with practice, are also able to nurse their baby in a sling or carrier. Choose the right clothes. You can buy special nursing clothes or opt for loose-fitting tops and layers. Many mothers find it helpful to pair a t-shirt with a cardigan, jacket, or button-down shirt. Make sure you choose an easy-access or easy-release bra for nursing.

Find where you feel at ease and most relaxed to feed your baby. This is a special time for bonding, so do your best not to feel flustered. Be confident and positive. Sounds corny, right? But feeding your baby is your priority. With practice, nursing in public can become second nature. And now that my son is older, I promise he won’t bother you either. If you would like to learn more about breastfeeding in a group setting or one-on-one, please visit virtua.org/breastfeeding. I also invite you to follow the VirtuaBaby page on Facebook (facebook.com/VirtuaBaby) for fun content carefully selected for moms.

Practice at home in front of a mirror. Observing yourself when feeding can help you pick the best outfit and position for your

Berry Sweet Strawberry Dishes By Lisa Ann Panzino DiNunzio One of the most desired and delicious crops of the spring season are plump, juicy strawberries. Strawberries can be enjoyed in a variety of ways: just as is or in savory or sweet dishes including these irresistibly yummy recipes. Make sure to pick up these little beauties from your local farmers’ market while at their peak -- from about April/May until mid-June.

PECAN CRUSTED CHICKEN & STRAWBERRY WRAPS • 2 boneless, skinless chicken breasts • 1 1/4 cups pecans, finely chopped or ground • 1/4 cup all-purpose unbleached or whole wheat flour • 1/2 tsp. sea salt • 1/2 tsp. black pepper • 3 egg whites • 4 large whole-wheat tortillas • 6 strawberries, sliced • 1/2 avocado, sliced • 1 (11 oz.) can mandarin oranges, drained • Romaine lettuce leaves • 4 tbs. spicy brown or stone-ground mustard • 3 tbs. honey Preheat oven to 450°. Grease a baking pan with nonstick cooking spray. In a bowl, mix together pecans, flour, salt and pepper. In another bowl, whisk together egg whites until frothy. Dip each piece of chicken into the egg whites, coating completely, then dredge chicken into the pecan mixture, gently pressing mixture onto the chicken to help adhere. Place chicken onto baking pan, and bake for 30–35 minutes or until

chicken is golden brown and juices run clear. Remove chicken from oven and let cool slightly, then slice. Take three of the sliced strawberries and mash in a bowl with a fork, add in mustard and honey, stirring to combine. Spread some of the strawberry honey mustard into the center of each wrap, top with lettuce, chicken slices, strawberry slices, avocado slices and oranges, then roll up. Serve. FRESH STRAWBERRY DRESSING • 1 cup fresh strawberries, rinsed, hulled and sliced • 1-2 tbs. balsamic vinegar • 1 tsp. raw sugar or sweetener of choice • Sea salt, to taste • Freshly ground black pepper, to taste • 2 tbs. extra-virgin olive oil Place strawberries, vinegar, sugar, salt and pepper into a blender or food processor; blend until pureed, stopping once or twice to scrape down the sides. Add 2 tablespoons oil and process until smooth. Serve over favorite salad, grilled chicken, turkey breast, etc. STRAWBERRY PARFAITS • 4 cups sliced strawberries, divided

• 1/4 cup raw sugar or sweetener of choice • 1 cup reduced fat ricotta cheese • 1/2 cup (4 oz.) reduced fat cream cheese, softened • 1/4 cup raw sugar or sweetener of choice • 1 tbs. milk, rice or almond milk • 1 tsp. pure vanilla extract • 1 cup granola • 1/2 cup frozen reduced-calorie whipped topping, thawed • 2 tbs. slivered almonds Place 2 cups of strawberry slices and 1/4 cup sugar in a blender or food processor and process until smooth. Set strawberry puree aside. In a medium bowl, combine ricotta, cream cheese, 1/4 cup sugar, milk and vanilla; stir well. Spoon 2 tablespoons granola into each of 4 parfait glasses; top each with 2 tablespoons strawberry puree, then 1/4 cup strawberry slices, and 3 tablespoons ricotta mixture; repeat the layers. Drizzle the remaining strawberry puree over each serving. Chill for 2-3 hours. Top each parfait with 2 tablespoons whipped topping and 1/2 tablespoon slivered almonds. As always, Bon Appetit!

summer camp guide

8 Important Skills Your Child Will Gain at Camp By Jess Michaels

T

here is no doubt that summer camp is fun. What’s not to like about being outside all day playing sports, doing arts & crafts and swimming. But what many families don’t realize is that camp provides the opportunity for children to gain important life skills that will help them to become well-rounded, successful adults. Here are just eight of the life skills your child will gain while spending a summer day or overnight camp.

1

5

Resilience

Problem Solving

As parents, we never want our children to feel any hurt. But if we pave the way for our kids, they will never learn to solve their own problems. Camp allows children to figure things out on their own, whether how to work through some homesickness or how to resolve a disagreement with a bunkmate.

For the most part, campers are solving their own problems at camp. From disagreements with a friend to learning how to live away from mom and dad at sleepaway camp, children are learning how to trust their own instincts and learning how to navigate things on their own.

2 Independence

6 Teamwork

Just by being at camp away from mom and dad, children are gaining independence and learning to rely on themselves. They also practice their independence by choosing their own elective activities, what to eat from the salad bar and at overnight camp, choose their clothes for the day. While these are minor decisions, for a child, these are small steps towards independence.

From creating camp songs together to cheering each other on during color war, an all camp competition, camp is all about learning to work with others.

3 Confidence

Whether you are the youngest camper or the oldest, there are so many opportunities to develop leadership skills. One day a camper might be teaching new bunk mates the camp Alma Mater and the next day a camper might be leading a cheer around the camp fire.

Camp is filled with many opportunities for children to feel good about themselves. It’s a nurturing environment created just for children and every activity is intentional. From making new friends to trying new activities and being good at them, there are so many confidence building opportunities at camp.

4 Communication

The majority of summer camps don’t allow personal technology. Without screens, campers practice talking face-to face, not texting or snapchatting, which allows for quality communication with friends and counselors. 14 | May 2019

7 Leadership

8 Creativity

With schools focused more on academics, there aren’t as many opportunities for children to explore their creativity. At camp, children can try woodshop, ceramics, theater, dance and jewelry making. For the athletic child at home who plays basketball and soccer all the time, camp becomes a place to discover and enjoy their creative side.
