ear Readers,

Passport? Check. Laptop? Check. Phone? Check. Sense of discovery? Often nowhere to be found. As a global traveler who has spent more than 260 days away from home in the last year – including 31 nights sleeping on airplanes – I frequently feel that I am not grounded. To counter this, I rely on my Fairmont colleagues in 20 countries to keep my sense of discovery and wonder intact. This year, I traveled to Africa for the first time, and I am so glad that I was truly able to explore Kenya with Fairmont. My husband and I have been sponsoring a wonderful young student in Kenya for several years through the AmericaShare Program, but had never met the lovely Ruth in person. While at Fairmont The Norfolk in Nairobi I mentioned her in passing to our general manager. Unbeknownst to me, he contacted her boarding school and arranged for Ruth to visit me at the hotel. It was so touching and so personal – and it helped foster in me that ever-elusive sense of discovery. It was then on to our Fairmont Safari Clubs in Mara and Mount Kenya, the latter of which was once owned by actor William Holden. I felt the same magical hold and gratitude that I, too, am now part of the legacy that will protect and enhance these destinations for our guests for years to come. In this issue, we feature inside connections to several Fairmont destinations, but a few are closer to me, geographically and emotionally. First, New York. I lived there early on in my career, and a piece of me will always be a New Yorker. Hence, our cover story, which unveils some heavily guarded secrets of New Yorkers. In addition to New York, Hamburg is one of my all-time favorite cities (indeed, I am writing this letter from the glamorous and beautiful Fairmont Hotel Vier Jahreszeiten), and if it is not on your bucket list already, it should be, along with Monte Carlo where the Grand Prix energy and joie de vivre is present 365 days per year. Finally, we are giving you a sneak peek of two of our newest Indonesian destinations: Bali and Jakarta. We hope to spark your sense of discovery, and look forward to hearing about your favorite #FairmontMag trips.

I, too, am now part of the LEGACY that will protect and ENHANCE these destinations for our guests for years to come.

The famed Canadian cocktail is breaking free of the border and gaining fans around the world.

he year is 1969. The place: Calgary, Canada. The bartender at a new Italian restaurant is tasked with creating a standout signature cocktail, so he draws inspiration from the menu and, a few crushed clams later, transforms a simple Bloody Mary into the Bloody Caesar, a spicy, savory drink that will sweep the nation for decades to come... but draw confused stares when ordered beyond the Canadian border. Until now, that is. Slowly but surely, Canada’s unofficial national cocktail (more than 250 million are ordered yearly) is gaining popularity around the globe, from London, England, where gastropub Newman Street Tavern serves their Caesar up with an optional oyster, to New York, where Brooklyn Crab’s “Bloody Breuklen” comes with Clamato house mix and a salty-aired, harbor-side setting. Back in Canada (including at Fairmont hotels across the country), the Caesar is such a mainstay that mixologists outdo one another with increasingly elaborate garnishes, from turkey jerky to mini burgers. Order Joe Beef’s version (pictured) in Montreal and you’ll have to eat your way through seafood and celery before your first sip. Across the city at L’Gros Luxe, find Caesars topped with everything from onion rings to fried pickles. For a high-end at-home version, spring for some Caesar mixer from Walter, a Canadian company that uses vine-ripened tomatoes, grated horseradish and clam juice from sustainable Atlantic fisheries. “It adds a slight brine and umami note,” says Walter co-founder Aaron Harowitz, who takes a bottle with him on his travels. “I’m always excited and even a little proud when I see Caesars south of the border. I never leave home without — Many books to read. I stack them on my nightstand and regard them with the same sense of joy and greed as a box of fine chocolates. Favorite museum — The Isabella Stewart Gardner Museum in Boston. Utterly unique and enchanting! My idea of travel happiness — Feeling as though you get a real sense of what a place is, and the kind of people who live there. Also, finding street food that’s delicious. My favorite place to write is — At home, at my desk, with a vase of flowers and a cup of coffee nearby. I’ve also taken retreats to places by the ocean. The sound of the water was both calming and energizing, and I really loved to walk on the beach when I took breaks. The best place to people watch — An airport is great. So many nationalities and so many personalities on display. We’re an endlessly interesting species. The Dream Lover is set in France. My favorite part of visiting there is — How, in Paris, nearly everywhere you look is something artful. And the language, of course. Listening to French. Even if you’re being insulted, it sounds sublime.

Fondest travel memory — I once took a cooking class in Positano, Italy – alone. For weeks, I worried about traveling so far by myself, but from the moment I arrived, everything was wonderful. I think it opened me up to having a better experience than I might have had with a companion. Next vacation — I want to go to Nohant-Vic, France, to see George Sand’s country house. Best travel tip — My favorite cab driver said, “I deal with all the problems that come up before I get through security and then, once I’m through, I just let go. I read. I talk to people. I just relax. I start my vacation right then and there.” Favorite quality in a hotel — A rose on a room service tray. Good coffee that you can make in the room. Nice soap and shampoos and lotion. Friendly staff. And nice sheets. Oh, the sheets... When traveling, I wear — Soft, stretchy fabrics that still look good. My favorite is a gray pants and tunic top combination that never wrinkles and that can accommodate a spill or two. Or three. Best thing about traveling — It exposes you to something different and can make you appreciate your own life more. My mother-in-law used to say, “It’s good to go away; it’s good to come home.” I agree. Best way to get to know a city — Leave things up to chance and take cues from the people you meet. Guidebooks are good for a general orientation, but don’t rely on them – or on schedules – so much that you miss serendipitous events. Favorite city in the world — Chicago. It has everything you could want, except good weather.

be a melting pot, but everyone wants it their way,” says Chef Todd English, setting down a plate of oysters fried in bacon butter. The evidence, he insists, is all around his eponymous restaurant: Peking duck buns, steak frites, spicy tuna rolls. The 200-seat space is modeled after a European dining hall, with separate sections for different culinary styles, but with one notable exception – you can order any type of cuisine you want, wherever you are in the room. “We knew we couldn’t tell New Yorkers, ‘You can’t have a burger at this table, you have to walk over there to get it.’ No way,” says English, who opened the concept restaurant five years ago in The Plaza, A Fairmont Managed Hotel. So now locals come in for lunch, sit at the sushi counter and have a BLT from the sandwich station. (Case in point: while I down the oysters, my partner Brett enjoys a kale salad.) Or they spot English at work and ask him to whip up something off-menu. Or they share a communal table with hotel guests, play temporary tour guide, say they “know a little place…” And nobody misses a beat (or a bite) thanks to headset-equipped bussers who weave in and out of the crowd like backstage staff at Fashion Week. Finding that special moment in New York, and in one of the world’s most iconic hotels, can seem like an impossible feat. It doesn’t take a Sex and the City bus tour to feel like you’re part of a herd, not in a town where even “hidden gems” are already at risk of being overexposed.

So, how do you create made-to-measure memories? By letting the city’s visionaries lead the way: characters and creators whose bespoke objects and experiences prove it’s still possible to make New York your own – even if only for a weekend.

L

auren Colchamiro is a good person to start with. She’s a native New Yorker who knows every inch of the city, including the best spots for photo ops. Colchamiro was one of the first employees with Flytographer, a company that lets tourists hire photographers based wherever they’re traveling. What at first seems extravagant (“Like wedding photography minus the wedding,” observes Brett) begins to make sense as we pass a crowd of tourists posing in The Plaza lobby, one of them clasping a selfie stick, a long retractable arm that lets travelers capture moments without having to flag down a passer-by. “It’s not a paparazzi-style experience,” Flytographer founder Nicole Smith assured me earlier. “It’s more like meeting a friend-of-a-friend. They can take your photo in Central Park but also tell you about their favorite café.” As we push through The Plaza’s revolving door, Colchamiro snaps us without breaking stride, as quick and nimble as Bill Cunningham. As we head downtown in a cab, she offers tidbits about each neighborhood we pass: where to shop for jewelry, where to stop for pizza, what the traffic will be like on the way back. “I’ll usually meet people beforehand so we can plot out a route,” she says. “Without knowing the city, you can’t


really tell how long it takes to get somewhere, not even with Google Maps.” The meeting also helps clients get used to her “dancing all around them” with her camera. Colchamiro, who has snapped Taylor Swift and Pharrell Williams, swears that despite living in the age of Instagram, most people still hate having their picture taken. Luckily for her, visitors tend to be awestruck by their surroundings. “They spend too much time looking around to be self-conscious.”

B

rett and I are amply distracted as soon as we hit Nolita, home to Le Labo’s very first stand-alone shop. It’s a postage-stamp-sized apothecary that, when opened nine years ago by French transplants Fabrice Penot and Edouard Roschi, set the tone for Elizabeth Street’s transformation into a neighborhood of indie boutiques. Every inch of the store is a study in industrial chic, a style that so many modern merchants seek out but which can only exist where there is a real confluence of history. One wall is concrete, another, pressed tin – a surprise unearthed during renovations. A clerk in a waxed apron prepares ingredients for a bottle of Rose 31, one of the brand’s 35 scents (and found in Fairmont’s amenities), on a sleek precision scale. The small shop lets staff remain hands-on – compounding perfumes by the order and personalizing labels with their new owners’ name, the date and the store’s address. This is anything but fast fragrance. “I call this place the lungs of Le Labo,” says Isaac Wolf-Tanner, a born-and-bred New Yorker who seems utterly at home behind the white tiled counter. Like Le Labo’s founders (whom the New York Times dubbed “antipreneurs”), he’s not about the hard sell. If anything, he dissuades new customers from leaving with the first bottle they like, comparing the experience to a blind date. “You might have a good first impression, but you want to go for coffee, get to know them first,” he explains

while misting a paper strip with Tubereuse 40, a perfume inspired by and sold exclusively in the brand’s New York locations. I like its hint of citrus; Brett shakes his head. “Fabrice once said he tries to make the perfect scent and then takes one thing away,” Wolf-Tanner tells us. This embracing of imperfection isn’t just a marketing scheme, it’s a founding philosophy. In the corner by a pair of worn leather chairs sits a stack of mustard-colored paperbacks: Leonard Koren’s Wabi-Sabi: for Artists, Designers, Poets & Philosophers, a guide to the Japanese principle of seeing beauty in imperfection. As we spritz and sniff, we do notice one thing missing – the usual jar of coffee beans. It seems there’s no need for a quick palate cleanser when you’re savoring every note.

M

ore entrancing smells and sights await at our next stop: Dover Street Market (DSM) in Murray Hill. The quiet midtown neighborhood seems like an odd choice for Rei Kawakubo’s exceptional take on a department store, but then the creator of Japanese fashion label Comme des Garçons has never been predictable. As we make our way into the somber gray building, the aromas of Rose Bakery – pumpkin quiche, carrot cake – fill the air. The sweet smells cease as we enter the store’s glass elevator, but the sense of being inside a weird, wondrous place permeates all seven floors, with help from a sound installation by Brooklyn-based artist Calx Vive. It’s all part of what Kawakubo calls “beautiful chaos.” A Willy Wonka fantasy for fashion fans in a world where luxury often means stark minimalism. Along with Comme des Garçons’ lines, DSM carries labels hand-picked by Kawakubo, “kindred souls who all share a strong personal vision” (and draw an eclectic mix of shoppers), including 166-year-old French house

ew Yorkers have always considered The Plaza their own, so when culinary director Geoffrey Zakarian (pictured right) and architect Thierry Despont set out to refresh The Palm Court, they knew they didn’t just have to please hotel guests – they had to impress locals, too. Luckily, they had an enviable legacy at their disposal: more than 100 years of archival sketches, clippings and memories. The Plaza is so iconic that every name drop beats the last, from guests like Marlene Dietrich and The Beatles to photoshoots pairing Mario Testino with Gisele or Annie Leibovitz with Sarah Jessica Parker. Even the new cocktail list is legendary: Order a Barbados Red Rum Swizzle from mixologist Brian Van Flandern and you’ll get a taste of Trader Vic’s, the hotel’s former tiki bar. The renovated Palm Court debuted last fall in a burst of palm trees and ivy-covered trellises. Glass tabletops reflect the majestic glass ceiling. Afternoon Tea comes on redesigned trays and a menu remade for New York – lox, organic egg salad, pink clouds of cotton candy for young fans of the Eloise at The Plaza books. The pièce de resistance: a brand-new bar that could have come straight from the Jazz Age. “If someone comes here and thinks this is all original,” says Zakarian, “we’ve done our jobs.”


The IDEA that you can still rediscover or REINVENT a neighborhood in New York... it’s kind of amazing. Moynat’s only purses in the city, leatherwork from 20-something New York upstart Zana Bayne and limitededition sneakers that prompt line-ups around the block. “Coming here is a bit of a pilgrimage,” says a personal shopper bedecked in black-on-black knits and ruffles. “Some people have never even been to the area before. The idea that you can still rediscover or reinvent a neighborhood in New York… it’s kind of amazing.” In addition to original artwork running through the store – yarn bomber Magda Sayeg’s “Everlasting Gobstopper (alcohol inducing),” found-object artist Leo Sewell’s “Rap Wrap” – a selection of brands get to decorate their own space, resulting in an incredible patchwork of colors and textures that couldn’t be cookie-cutter if it tried. Architectural Junya Watanabe jackets give way to a capsule collection of Prada dresses and, past that, skateboards from cult New York brand Supreme. It’s the perfect place for seeking out something special… and leaving with exactly what you didn’t know you needed.

ack at The Plaza, meeting bookbinder Paul Vogel feels a bit like stepping onto the set of The Royal Tenenbaums. In his atelier, tucked in a corner of the lobby’s Assouline book shop, I find Vogel perched by a wall of jewel-toned paper rolls, sporting a pale seersucker suit, his long hair and beard bleached white by the Hamptons sun. His past is appropriately picaresque: laboring in African diamond mines, modeling for life drawing classes in Paris. Concierge So Vogel apprenticed with bookbinders across Manhattan, many of whom didn’t make it into the digital age. (“He retired; they relocated.”) It’s clear that Vogel, who has received commissions from Oprah Winfrey and Ralph Lauren, is a rare find in an increasingly rare industry. But his outlook is hardly bleak: “The funny thing about being on the endangered list is people start to appreciate you again.” Whether you bring him a medieval manuscript or a treasured family cookbook, Vogel can bind or restore it as if it were a work of art, using archival materials like cotton rag paper and linen tape. As for the particular demands of New Yorkers, Vogel remembers a local publishing house that once wanted to work with him. “I explained what I did as well as I could and they called me later asking for a quote on 13,000 books. To

bind. By hand,” he recalls. “I explained again, and they still wanted my fee and a due date. So I said, ‘Oh, I don’t know, about $9 million and 37 years?’” From Vogel’s mezzanine-level workshop, we find ourselves in the perfect position to watch another piece of history evolve: The Plaza’s bustling lobby. Bellboys direct mountains of monogrammed luggage, honeymooning couples stop for a cocktail at The Champagne Bar, little girls go for Eloise Tea in pink tutus. The enduring appeal of the hotel, and this city, is everywhere, whether you’ve visited once or a thousand times. So when, after a Broadway show that evening, Brett and I slide into the backseat of a cab and I say: “The Plaza,” the driver simply nods and we’re off. Sometimes, to get what you want in a crowd of eight million, all you need are the magic words.

When it comes to luxury, Formula One celebrations deliver at every turn. We take an in-depth look at the track-side action in Monaco – and make pit stops around the world. By Ellen Himelfarb — Illustrations by M ads Berg

“W

atch and learn,” says JeanJacques Yeterian as he flicks his Ferrari F430 Spider into first and steps on the gas. I’m thrown back into my seat and feel the salty air whip my hair. As we hurl along Monaco’s Basse Corniche – the marina to our right, prime real estate to our left – I put on my sunglasses and do my best Grace Kelly. It’s no use trying to catch the names of the mega-yachts in their berths. They’re all a blur. Yeterian points out more sites as we climb the palm-studded coastline toward the legendary casino: the new Monaco Yacht Club, styled like a grand Art Deco ship; the baroque Opera House, where Princess Grace hobnobbed with Maria Callas; the fabled hairpin turn that swerves past the Fairmont Monte Carlo’s foyer. I’m so revved up by the whirr of the engine that when Yeterian – whose high-speed tour comes care of Jean-Marc Ayache’s Driving Experience – invites me to take the wheel, I nearly jump into his lap. Monaco and sports cars are inextricably linked, dating back to the principality’s first Grand Prix in 1929. The circuit has been part of the Formula One championship since the ’40s, around the time Ferrari first came into the picture. Because of the rocky ledges and sharp, demanding turns of the city streets, Monaco

is considered one of the top courses in auto racing. As even David Coulthard, the 13-time Grand Prix champion and Monaco resident, tells me, “Monaco is worth 25 points, like any other F1 race, but it’s the one on the calendar for any driver.” Seeing it from behind the wheel of a Ferrari is a luxurious experience for any racing fan. And for a Ferrari naïve like myself, the tour delivers. After our lap of the official circuit (racers do 78), we head into the hills. I take the wheel just outside Monaco’s borders and within minutes I’m veering precariously close to the precipice, accelerating like a pro. And it appears I’m not alone. Lamborghinis and Porsches fill the streets with the roar of engines and the smell of oil. The rumble “is, to me, like music,” says my Monegasque friend Claudia. In Monaco the wave of the checkered flag is like the clock striking 12 on New Year’s Eve. Yet while the F1 props up the tourist calendar in a major way, it is not, my friend assures me, even close to all that Monaco has to offer. Of course, I’ve known that since my days as a student in nearby Nice, having a crack at the slot machines, falling asleep on the steps of the silvery-brick cathedral in wait of the first train back. As we chat over yellowtail sashimi at Nobu, she fills me in on the latest.

Nobu, probably the finest of Monaco’s new generation of restaurants, is on the Fairmont’s main floor. Then, up the steep rock face, between the art nouveau Café de Paris and the sexy Buddha Bar, are the Pavilions, a cluster of amorphous white pods housing boutiques like Alexander McQueen, Lanvin and Saint Laurent. The mini shopping center was built as a temporary substitute for an even posher plaza being built further east. But the curious architecture has proven to be a draw, and my friend tells me they’ll keep it around. “In Monaco, they don’t destroy, they just build.” Bidding my Ferrari farewell, I stroll toward Larvotto Beach to Villa Sauber, one of two restored stucco manors that make up the

outlook and an openness to brew-pubs, architectural marvels and experimental food. Nowhere is the contrast between ancient and avant-garde more vivid than around the Rocher, the 450-foot-high outcropping where the Grimaldi family founded the principality more than 700 years ago. The palace’s medieval tower used to be the highest point in the land. Today the webbed white Simona Tower looms behind, a symbol of this new, progressive attitude.

A landscaped path smooth enough for high heels snakes down the Rocher to Port Hercule, where I peer into La Rascasse, a rowdy nightclub where VIPs party with a first-class view of the circuit. Then I duck into the pedestrian lanes behind for lunch at the revamped Marché de la Condamine, a Euro-style food court with heaps of fresh pasta, oven-fired pizzas and pyramids of chocolate truffles. Further west, in Fontvieille, is the Prince’s Vintage Car Collection. Playboy no more, Albert opened this mindblowing assortment of automobiles to the public, including the 1954 Sunbeam Alpine his mother Grace drove in To Catch a Thief and a 1986 Lamborghini Countach with brazen scissor doors. The “stay out” ropes will drive car nuts mad, but as I begin the walk back to my suite at Fairmont Monte Carlo, past tourists snapping at the palace guards, I console myself with memories of my dalliance with the F430. I may be a mere mortal, but I handled life in this fast lane like a champion.

THE PRESIDENTIAL table at Hamburg’s Deichgraf Restaurant is so-called for a small framed photo of Gerhard Schröder, the former socialist chancellor of Germany, smiling down from the pale-yellow wall. The room is intimate and cozy, with dark hardwood, traditional high-back chairs, woven fabrics and sunny windows overlooking a canal. Thies Conle, a tall chef with a gentle smile, was a new arrival to the restaurant when that photo was taken a decade ago. Ever since, he’s witnessed German food evolve right alongside global politics. And he’s contributed to that evolution. Conle’s light-leaning twists on traditional recipes include labskaus, a vibrant local mash-up of potatoes, beets, onion and chopped beef, topped with a fried egg. “Labskaus is an old sailor food they used to make from salted meat,” Conle explains. “They prepared this when they left Hamburg and would be sailing for two or three weeks. Now it’s a typical dish that just tastes great.” He livens up his version using the best beef, local potatoes and free-range eggs with yolks the color of a July sunset. “Our way is to make food fresher,” he says, “the traditional dishes with fresh ingredients.”

Hamburg is a place where old-world charm and maritime grit come together. Once a gateway for transatlantic passengers and international spice traders, the city on the river Elbe has long been Germany’s window on the world. Today it remains Europe’s third-busiest port, as well as a genteel, walkable city, full of lakes, rivers, canals and more bridges than Venice, Amsterdam and London combined. And though you might spot locals tucking into organic sandwiches and fair trade lattes throughout the day at the city’s chic cafés, don’t mistake Hamburg’s tranquility for a lack of hustle. Germany’s richest city may be demure, wearing its wealth like a fur coat turned inside out, but it’s the country’s financial, media and transportation hub. That understated vibe extends throughout Hamburg’s dining scene. It may surprise some to learn that Germany is second only to France in its number of Michelin stars, with eight of them here in Hamburg, many of which were earned over the last two years. The sweeping changes to the country’s culinary scene have been fast and far-reaching, transforming almost as quickly as Hamburg’s port-lands skyline. What was once a meat-and-potatoes kind of place is now about freshness, quality and a light touch. Chefs are spinning traditional fare into a modern German cuisine movement. And it’s exciting stuff.

airmont Hotel Vier Jahreszeiten, a romantic heritage building located on the banks of the Inner Alster Lake, is the perfect embodiment of Hamburg’s new energy. Recently renovated, it’s as if a boutique hotel set up shop in a grand old dowager. And Christoph Rüffer, chef at its Haerlin Restaurant, is leading the city’s culinary charge. Walking into the twoMichelin-starred beauty is like swanning into a dreamscape of sandy taupe, gold and pale-green hues. The wallpaper is hand-painted Chinese silk, the custom brass wine vault showcases 600 labels and the white-antelope-leather menus detail the meal of a lifetime. Soon after I’m seated, a trio of miniature artworks appears. The evening’s amuse bouche sees whimsy done right, including a spoonful of “paella”: puffed rice delicately paired with raw local shrimp and crisped chicken skin. It’s followed by a dish of goose liver with mushrooms that looks like a trip through the looking glass; its teardrops and meringues of foie gras and mushroom are all taste, texture and magic. A subsequent plate of oxtail, goosed with Périgord truffle and Meyer lemon, includes a smoked potato mash that’s like velvet on the tongue. On it goes, through halibut with cockles, verbena and dill hollandaise, to a saddle of fawn with boudin noir, while wonderful local and international wines are paired and poured by our boy-wonder sommelier (he’s infinitely knowledgeable but looks all of 13). Finally, pastry chef Christian Humbs plays with his veggies for dessert, in a gorgeous arrangement of fennel with cranberry, yogurt and oats. But what really blows my mind about Haerlin Restaurant is the fact that, though each recipe requires a staggering amount of research, thought, time and technique, many of the dishes here change weekly – and the whole menu changes completely each month. With flourishes of statement wallpaper, bold artwork and comfy modern furnishings, Chef Rüffer says, “It looks like a home.” Meanwhile, the staff break room resembles a chic café rather than a school cafeteria – so inviting is the space, it’s often transformed into a venue for private events.

Rüffer notes that the payoff of a charming back-of-house hasn’t just meant a more efficient workplace. “We’re all working a little more creatively since the renovation,” he says. “We’re more in the moment.” For a glimpse behind the scenes, guest tours are available upon request.

perspective, I’ve eaten at three-star Michelin restaurants that keep many of the same dishes on the menu for decades. “I think for me and for the future, this is the right way – to create a new a-la-carte card every month,” says Chef Rüffer, “so the frequent guests have something new to discover, every time.” For a very different example of Hamburg’s Michelinstarred offerings, I make my way the next day to the swank Harvestehude district across the lake from Fairmont Hotel Vier Jahreszeiten. The much-lauded owner and namesake of the one-starred Anna Sgroi has a different culinary perspective from her Hamburg contemporaries, as she’s a self-taught female chef, born in Sicily. Her handsome restaurant, housed in a circa-1897 building, serves up Southern Italian dishes using fresh ingredients prepared with a feather touch. Sgroi’s Ligurian rabbit ravioli is the star of my meal, lively with the salty pop of Taggiasca olives. Meanwhile, the steamed cod with anchovy, crispy capers and cauliflower is a forkable journey through Hamburg’s farmers’ markets. “My kitchen is light,” she explains while sipping a glass of wine, post service. So diners will get ravioli, but not the cheese-stuffed red-sauced variety. “I cook in a light way, but the flavor is strong,” she says. “There’s impact.”

H

amburg was always an address for good food, but not too overdone,” says Stevan Paul, a Hamburg-based cookbook author and food stylist, as we sip a flight of beer at Braugasthaus Altes Mädchen. We’re meant to sample “from head to tail,” lightest to heaviest, from the fresh and fruity Zwickel to a dark stout that tastes like coffee and chocolate. “This brewer is a

maniac,” Paul declares, explaining that, like with Rüffer’s prolific kitchen, Ratsherrn Brauerei launches a new beer every few months. The microbrewery anchors a new complex in St. Pauli, a former working-class area that is now home to hip restaurants and a coffee roaster, lending it a Portland-esque vibe, only with less rain and more Lederhosen. According to Paul, Germans are becoming political about food, just like consumers in many parts of the world: “From the big kitchens down to the street foods, we all want to know more about what we’re eating and where it came from.” At the brauhaus, this translates into a resurgence of craft beers brewed following historic purity laws. He also points to the beer hall’s neighboring Die Bullerei, a former slaughterhouse-turned-trendsetting restaurant, run by celebrity chef Tim Mälzer, host of the German version of reality show The Taste. Known for its dry-aged steaks, Die Bullerei stands alone with its ethically sourced beef, hipper-than-thou service and pop-art surrounds (check out the neon cuckoo clock in the main dining room). Mälzer is also known for his burgers, ranging from juicy American-style cheeseburgers to more adventurous iterations like one filled with confit pork and a veggie burger with panko-breaded trumpet mushrooms as the patty. Yes, the burger wars have reached Hamburg, with eight new eateries opening this year alone. But let’s not forget that this is where the humble hamburger began. The hearty sandwich, invented for the city’s port workers, started as slabs of tender braised pork piled onto a bun and doused in a savory brown gravy. (Try it at its best in the Oberhafen Kantine, a 90-year-old restaurant so crooked and wonky inside, you feel dizzy walking up the stairs.) Filling and fatty, it’s knife-and-fork material. “I cook in a light way, but the FLAVOR is strong,” says Sgroi. “There’s IMPACT .” modern creations, Mälzer gives a nod to the original’s meaty abundance – but gracefully leaves out the mess. A similar reimagining of the classics is afoot at Nil, a neighborhood restaurant housed in a former shoe shop. Nil’s prix-fixe meals are based on the changing of the seasons, with a focus on slow food, seafood and modern German dishes. “Everything is homemade using good ingredients. A lot of handcrafted work,” explains co-owner Elisabeth Fungers, thoughtfully stroking her faux-hawk. This includes dishes such as sweet-and-sour marinated sardines with pine nuts, raisins and arugula (a play on the suz-und-sauer fische traditionally prepared in Jewish kitchens). It also includes the unconventional cooperative spirit of Nil’s 14-chef brigade. “Once Jamie Oliver was here. He went upstairs to say hello and was surprised by what he saw,” she tells me. “He said, ‘So many chefs for such a small restaurant!’ So we are not rich,” smiles Fungers, “but we are happy.”

or a final taste of the German food evolution, I pop by Lokal1, where I’ve heard tales of Chef Hagen Schäfer doing amazing things with seasonal produce. Sure enough, I find mouthwatering match-ups on the daily chalkboard menu, such as beet borscht with duck and dumplings and apple tart with sea buckthorn cream. I also discover a four-play of items containing that most German of supporting dishes, red cabbage. Here, however, the rough brassica leaves aren’t served on the side, but as the core ingredient: a gingery cabbage soup, a croquette filled with sweet-andsour cabbage, a caramelized cabbage roulade with a red lentil curry, and a crunchy slaw with a zingy lime and fish sauce dressing. Unassuming cabbage, no more! This dish, this place, is the embodiment of Hamburg’s culinary scene today, where the past is not forgotten, but rather embraced and made anew. After all, without bold thinking and creativity, you’d be left with meat and potatoes – full but with an unfulfilled appetite for all that could be.

Jingdezhen, in the northeast of Jiangxi Province, has been producing qīng-huā, the iconic blue-and-white porcelain, since the mid-14th century. When artist Jacky Tsai (famous for creating Alexander McQueen’s trademark skull image) designed the Blue Lotus Decorative Plate for international retailer Shanghai Tang, he put a spin on the city’s time-honored patterns. On the day of my birth, my father was playing his beloved violin at a party given for my mother’s newly engaged sister, my aunt Lucie. My mother, resplendent in a ruffled pink silk dress and matching shoes with pearls at the center of their bows, was dancing a quadrille. She excused herself suddenly and repaired to a nearby bedroom overlooking the garden, where she gave birth to me, reportedly without a sound and also very quickly. It was Lucie who attended my birth, a consequence of my mother having latched onto my aunt’s arm at the moment she realized it was time. Fairmont Magazine

fter she ensured that mother and baby were stable, Lucie went back to the party to tell my father the news. She made her way through the revelers and approached the small group of musicians, who stood with my father in the corner of the room. She laid her hand on Maurice’s arm, stopping his playing. The other musicians stopped playing as well, and the crowd grew abruptly silent. Lucie said into the stillness, “Come, Maurice, you have a daughter.” This announcement was greeted with a great burst of applause. “She will be fortunate,” my aunt told the guests, over her shoulder, as she led my father to the bedroom. “For she was born in the time of roses, to the sounds of music.” Now the crowd laughed, and then the music began again. I turned my head toward the sound, drawn to music then as I ever would be. And then there was my father, holding me in his arms. His tears fell on my forehead, and his long forefinger gently wiped them away; but I, still in possession of the shortlasting but infinite wisdom that is ours in the womb, felt his great joy as well. I was given the name AmantineLucile-Aurore, and my father said, “We shall call her Aurore, after my mother, who does not bless her now but, in time, will.” Surely it tore at his heart to hold me that day, an infant whose weight barely registered in his arms, knowing that his mother would condemn his marriage and, by extension, me. He pulled me closer and rocked me side to side, crooning. A writer has a most fertile mind, or he is no writer at all. He has an imagination that soars when given the most meager starts: a wet blade of grass, croissant crumbs on a plate, the sight of a woman hurriedly crossing a street. And in the way that the fiction a writer produces can assume a truth of its own, these details of my birth seem less story to me than memory.

After I was born, my father felt there was no more hiding from my grandmother; now he would need to tell her of both his marriage and the birth of his daughter. My grandmother’s position was always this: she could forgive one’s circumstances at birth. After birth, though, came the choices one made – the life one chose to fashion for oneself. She herself, for example, despite being born illegitimate, had conducted herself properly, married well, lived a life of great dignity, and never gave cause for criticism or scorn. She had plans to raise her own (legitimate!) child, my father, in the same way. She could and did turn a blind eye to her son’s dalliances: he had fathered a son with a girl in the village outside Nohant. My grandmother doted on the boy, called Hippolyte, and contributed money to help raise him after he was put in the care of a peasant woman next door to the estate. But to give him the name Dupin, to consider him in any way an heir to her fortune? Certainly not! His last name was Chatiron, after his mother. Whom her son most emphatically did not marry. My father argued that Sophie’s life experiences had not permitted her to make the same choices as my grandmother and reminded her that Sophie was legitimate, as was her daughter, Caroline. But my grandmother persisted in her complete disregard for Sophie, as well as in her belief that the differences between her and Maurice were too great to sanction a relationship between them. It could not last. It was not proper. My father was an aristocrat: kind, deepfeeling, optimistic, and intelligent. He was also a brilliant artist and gifted in his knowledge of languages and of literature. He was very much sought after to sit at the tables of many important and influential people, for he was a most charming and witty conversationalist. He loved music perhaps most of all, and he was widely praised for both his singing and his violin playing. He acted impulsively, but with the kind of courage and trust that can make rash decisions seem like good ones, even

well-considered ones. He loved – and, I daresay, lived for – the beauty in life. He found it everywhere, and he was as glad to give it as to receive it. My mother was mercurial, a beautiful, dark-completed bohemian with a dramatic way of expressing herself, whatever her mood. She had been cast out of her home in her early teens to work as a dancer in a theater in the hope that she would find a “protector.” She was strong and practical and had, as well, an air of mystery and magic about her; she was one of those charismatic beings who draw the eyes and ears of everyone in the room. Most of all, she was well aware of the uses and power of passion – my father alluded obliquely but clearly to skills she possessed that turned strong men into weak-kneed devotees. Never mind my grandmother’s concerns about such a mismatch. I learned in time to use each side of my family for my own particular advantage. I am sorry to say that in the end, my father lacked the courage to tell my grandmother about his marriage, but he did write to her of my birth. He told her my name was Aurore, after her, in an effort to win whatever goodwill that might bring. But my grandmother had heard rumors of my parents’ marriage, and she wrote to the mayor of the Fifth Arrondissement of Paris with the request that he confirm it, which he did. Soon afterward, she went to the city and set about trying unsuccessfully to have the marriage annulled. She would not stop in her quest to force my parents apart. After her husband’s death, she had turned all her hopes and attentions to her only son. For him to marry a woman like my mother ruined her plans, so carefully conceived and meant to serve as comfort to her in her old age. But there was something else, too, something of which she may not have been conscious: there is always trouble of the worst sort when a widow effectively remarries and the man she weds is her son. When my father heard that his mother was in Paris, he concocted a plan of his own. He brought me to her apartment building and conspired with the concierge to find a way for my grandmother to see me. The concierge came to my grandmother’s apartment to show off “her” granddaughter. “Look at her; I can hardly bear to put her down!” she said, then offered me to my grandmother to hold. When I was in her lap and my grandmother saw my eyes, so like my father’s – large, black, and with the softness of velvet – she understood that it was her own granddaughter she was holding. “Who brought her here?” she demanded. The tone of her voice caused me to burst into tears. The instinct to protect children that lies in the breast of most mothers took hold, and the concierge stepped forward with her arms outstretched. “Ah là là,” she said, “give her back to me. I can see she is not wanted here.” She started to lift me from my grandmother’s lap, but

my grandmother only held on to me more tightly. She raised me to her shoulder and, sighing, began to pat my back. “Poor little mite,” she said, “none of this is your doing. There now, stop your crying; you are safe with me. “Who brought her here?” she asked again, albeit more gently. The concierge raised her fingers nervously to her mouth, then clasped her hands before herself. She spoke rapidly, saying, “If you please, madame, it was your son, Maurice, who waits downstairs. We thought if only you held the child, you would–” “Maurice!” my grandmother cried and, with a great deal of emotion, called for my father to be brought up to her. They embraced and wept, my small body between them, but in the end my grandmother would not agree to meet Sophie or to bless the marriage. All she could manage was to take a ruby ring from her hand and press it into my own; she wanted the ring to be given to my mother. Thus my grandmother made a conciliatory move toward my mother, but with a mediator in between: me. Just like my father, I was caught in the middle.

Fairmont Nanjing — Reflecting nature in a hypermodern structure is no easy task, but BraytonHughes Design Studios rose to the occasion with their concept for Fairmont Nanjing, which occupies the upper half of the Jinao Tower. As a tribute to the city’s numerous plum trees, whose delicate pink blooms inspire celebrations every spring, floral patterns were worked into decor details from wallpaper to carpet. To

experience the hotel’s grandest design, ride the glass elevator up through the 27-story atrium, whose metal-plated walls are covered top-to-bottom in a motif of falling petals. The soaring interior, inspired by Constantin Brancusi’s modernist “Endless Column” sculpture and the form of a Chinese lantern, changes color throughout the day via a network of LED lights positioned discreetly behind the panels.  Renée Morrison Fairmont Magazine
