6 crab sticks, shredded, divided 6 large shrimp, cooked, deveined, tails removed and butterflied, divided Rinse rice bag under cold water to remove starch. Prepare rice according to package directions.
In small saucepan over medium-low heat, heat rice vinegar, sugar and salt until sugar and salt have dissolved, about 1 minute. Set aside.
In small bowl, mix mayonnaise, Sriracha sauce and sesame oil. Set aside.
Transfer cooked rice onto large baking sheet. Drizzle half the vinegar mixture over rice, turning until all rice is fully coated. Taste and add more vinegar mixture, if desired. Spread rice into thin layer and cool to room temperature. Sprinkle sesame seeds on top. Lay down one sushi nori sheet. Spread layer of rice on it. Place half the carrots and cucumbers on rice. Place crab and shrimp on top. Place another sushi nori sheet just under first one and roll. Repeat with remaining sushi nori sheets, rice, carrots, cucumbers, crab and shrimp. Wrap both burritos in plastic wrap. Let rest 10 minutes.
Slice burritos in half and serve with spicy mayo.

RED CURRY CHICKEN AND RICE SOUP
Prep time: 10 minutes
Cook time: 20 minutes
Servings: 6
6 cups chicken broth
2 bags Success Basmati Rice
1 can (14 ounces) coconut milk
2 tablespoons Thai red curry paste
1 tablespoon soy sauce
1 teaspoon brown sugar
1 pound chicken breast tenders
2 tablespoons lime juice
4 green onions, thinly sliced
In pressure cooker on saute setting over high heat, bring broth and rice bags to boil. Boil, uncovered, 10 minutes. Remove bags with fork and set aside.
Add coconut milk, curry paste, soy sauce and brown sugar to pressure cooker. Turn off saute setting. Add chicken. Cover and lock to seal. Set to pressure cook setting over high heat about 10 minutes, or until chicken is tender. Carefully, manually or naturally, release pressure according to manufacturer’s instructions before removing lid.
Set pressure cooker to saute setting over medium heat. Remove chicken and shred with two forks; add to soup along with lime juice and green onions. Remove rice from bags and stir into soup. Simmer until rice is heated through.

It’s finally time to share my family’s favorite “Too Good To Be True Slow-Cooker Beef Tacos” recipe. Passed on by word of mouth from one neighbor to another, it’s an easy-to-remember recipe that I’ve just never taken the time to write down.
Simply put: “Place pot roast sprinkled with taco seasoning in a slow cooker. Set on high and cook 5-6 hours. Spoon tender, shredded beef into warm soft taco shells and add favorite fillings.” That’s it! No-fail, no-fuss cooking that our busy lifestyles demand whenever we want to gather friends together for a robust and tasty evening meal. Here are the details: SLOW-COOKER BEEF TACOS
Serves 6
2-1/2- to 3-pound boneless beef chuck pot roast, trimmed of fat 1-ounce package taco seasoning mix, such as the Old El Paso brand
1 medium onion, peeled and sliced (optional)
12 flour tortillas
Toppings according to taste: cilantro, chopped tomatoes, chili peppers and onions, shredded cheddar cheese, sour cream, guacamole, salsa, and a squeeze of lime juice
Sprinkle both sides of the meat wit h seasoning mix. Reduce the amount according to taste. Place meat in slow cooker. If using onion, spread slices evenly over the meat. (No need to add water.)
Cover, set on high, and cook for 5-6 hours, or until meat is tender and easily falls apart. Remove from slow cooker with a large slotted spoon.
Using two forks, shred the beef into a large bowl. Add onion and remaining warm juices from the slow cooker. Toss lightly to keep moist. To serve, spoon meat into warm taco shells. Add favorite toppings.
Extra Idea: For a spicy pot-roast dinner, after 3.5 hours in the slow cooker, add 6 peeled and quartered potatoes and 6 medium carrots, halved crosswise and lengthwise, on top of the meat. Add pepper and 1/4 teaspoon of salt. When meat and vegetables are tender about 2 hours later, remove meat and vegetables with a slotted spoon and place on a serving platter. Spoon drippings over meat and serve with a fresh green salad.

I personally think they should keep “Matlock” on Sunday nights, as older audiences will likely stay tuned to CBS after “60 Minutes” is over. However, the Justin Hartley drama “Tracker” will air in this slot instead, but if Hartley doesn’t bring in the numbers that Kathy Bates did, I wouldn’t be surprised if “Matlock” is back on Sundays.
Interestingly, it was recently reported that Bates said “Matlock” will be her last hurrah and that she plans to retire, but CBS has said she’s changed her mind. In fact, her co-star Skye P. Marshall, who plays attorney Olympia Lawrence, said that she would “drag [Bates] out of her house kicking and screaming if she thinks America or the world is going to let her retire.”

The holidays will be here soon, and not all of us will do well with getting through that time of the year. Whether it’s the pressures of the social aspects of the season or financial worries or we’re just not feelin’ it, sometimes it’s all just a bit much. But we’re not alone. The Department of Veterans Affairs has a website loaded with resources to help with all kinds of concerns. Go to www.va.gov/ REACH/challenges and scroll down to view the categories, such as life transitions, health challenges, feelings of depression and many more. Select up to three statements that describe what you’re going through (examples are “I don’t care about the things I used to care about” and “I don’t have anyone I can ask for help”), then click the “All Done” button at the bottom.
How long can you stand on one leg? This balance ability is apparently a good indicator of how we’re aging ... or so say several researchers. Some researchers pay attention to this standing business because they think it indicates longevity. Others think a lack of that ability can point to a cognitive decline. If you want to check your balance, stand up and keep your eyes open, don’t hold onto anything, and stand on one leg without any support, lifting one leg off the ground and bent at the knee. If you’re between 50 and 59, that standing time should be 37 seconds. From 6069, aim for 30 seconds. Between 70 and 79, shoot for 19 seconds, and over 80, aim for a bit over 5 seconds.
Another source says in your 50s, aim for 40 seconds. In 60s, try for 20 seconds. In your 70s, the goal would be around 10 seconds.

HOLLYWOOD -- Dwayne Johnson, aka the Rock, has played everything from “The Scorpion King” to the “Tooth Fairy.” Now he’s taking on the action-adventure Christmas comedy “Red One,” with Chris Evans, Lucy Liu, J.K. Simmons, Nick Kroll and Bonnie Hunt, which ho-ho-hoes into theaters on Nov. 15. In addition to his voice role in “Moana 2” (due Nov. 27), he’s working on the sports drama “The Smashing Machine,” with Emily Blunt, which will be released in 2025. Fresh off his second Emmy win for “The Bear,” Jeremy Allen White will play music legend Bruce Springsteen in the biopic “Deliver Me from Nowhere.” About the project, White offered, “Bruce has been really lovely and supportive and available, which has made this whole process an extra joy.” The film traces Springsteen’s journey of making his 1982 album, “Nebraska.”

As the air turns crisp and the leaves start to fall, nothing ushers in the coziness of autumn like the rich, spiced aroma of pumpkin. Whether you’re planning a festive breakfast or just looking to savor the season, homemade pumpkin butter is a simple way to bring a taste of autumn into your every day. Slather it on toast, swirl it into oatmeal or pair it with your favorite baked goods -- it’s the perfect companion to chilly mornings and sweater weather.
This recipe makes three cups of pumpkin butter, but if that feels like too much of a good thing, it can easily be halved. And remember, it makes a wonderful foodie gift as the holidays draw near!
HOMEMADE PUMPKIN BUTTER
Yield: 3 cups
Total Time: 30 minutes
1 (29 ounce) can pumpkin puree, NOT pumpkin pie filling
1/2 cup apple juice or apple cider
1/2 cup dark brown sugar
1/4 cup honey or pure maple syrup
1 tablespoon pumpkin pie spice
1 teaspoon vanilla extract
1/4 teaspoon table salt
1 tablespoon butter
Stovetop Instructions:
In a large, heavy bottom saucepan, on mediumhigh heat, combine all ingredients except the butter. Bring to a boil, stirring constantly. Reduce heat to low and simmer 20-25 minutes, stirring frequently. The pumpkin butter will become smoother and thicker as it is heated and stirred.
For an even thicker consistency, continue heating and stirring over low heat for an additional 10-15 minutes.
When the pumpkin butter reaches the desired thickness, remove from heat. Taste and adjust seasonings as needed, adding more sugar or pumpkin pie spice or salt to balance the flavors to your taste.
When you’re satisfied, add the butter and stir as it melts into a beautifully glossy finish. Let cool completely.
Slow Cooker Instructions:
In the crock of your slow cooker, combine all ingredients except the butter. Cover and cook on high for 3-4 hours. During the last 45 minutes of cooking, remove the lid to allow the pumpkin butter to thicken. Turn off the heat and add the butter. Taste, adjusting seasonings as desired. The pumpkin butter will thicken as it cools. Let cool completely.
To Store:
Store in glass jars refrigerated for up to two weeks or freeze in freezer for up to three months.
Pumpkin butter pairs wonderfully with a variety of flavors! Here are some ideas:
-- Warm Toast or Biscuits: Spread pumpkin butter on warm toast, biscuits or English muffins for a cozy breakfast or snack.
-- Pancakes or Waffles: Use it as a topping for pancakes or waffles, adding a dollop of whipped cream for an extra treat.
-- Oatmeal or Yogurt: Stir a spoonful into oatmeal or swirl it into yogurt for a fall-inspired twist.
