MARINATED TERIYAKI
STEAK WITH TERIYAKI
NOODLE SALAD
Prep time: 1 hour
Cook time: 24 minutes
Servings: 4
1/2 cup dark soy sauce
1/2 cup brown sugar
1 tablespoon Sriracha sauce
1/2 cup unsalted chicken stock
1 pound flank steak
1 tablespoon sesame oil
1 bag (16.9 ounces) Fresh Express Hot or Cold Teriyaki Salad and Noodle Meal Kit
In saucepan, add soy sauce, brown sugar, Sriracha sauce and chicken stock; bring to simmer while whisking. Simmer 4 minutes.
Cool mixture down until cool to touch, about 20 minutes.
Slice steak into thin strips and place in bowl. Pour marinade over steak and marinate for 1 hour.
In large pan over mediumhigh heat, stir-fry steak 2 minutes.

Magical meringue mushrooms are a trompe l’oeil (trick of the eye), as the French say, and in fact, France is where this whimsical holiday recipe originates. They look like mushrooms, but taste like dessert! With family-friendly steps, it’s a must for giving and eating through the upcoming holiday season.
MERINGUE MUSHROOMS
-- 3 egg whites (1/2 cup) at room temperature
-- 1/4 teaspoon cream of tartar
-- 1 cup sugar
-- 1 teaspoon vanilla extract
-- 1/2 cup chocolate chips
-- Cocoa powder for dusting
Here’s the magical meringue-making fun: Preheat oven to 225 F. In a large bowl, beat the egg whites until frothy and foamy with an electric mixer set at a low speed. Add the cream of tartar. Increase speed until soft peaks form. Start adding the sugar slowly, a tablespoon at a time. Let your kids watch as the mixture changes and glossy stiff peaks form. Beat an additional 5 minutes after sugar is added.
Spoon the thick mixture into a large, plastic zip-close bag and push toward one corner to form a pastry bag. Cut off the very tip of that corner so the meringue can be squeezed out of the bag. (Or use a pastry bag and a 5/8-inch tip.)
Let your child try it out by dotting four small beads of meringue at the corners of the cookie sheet. Set a sheet of parchment paper over the top. The beads will provide a bond to hold the paper in place.
Make the mushroom caps by holding the bag over the parchment paper and pushing until a 1-inch mound of meringue forms. Place a 1/2 i nch apart. Once you have made approximately 35-40 caps, let your child dip the tip of thei r f inger in a small bowl of water and gently round any peaks to make a smooth surface L ightly strain cocoa powder across the tops.
Shape mushroom stems about 3/4 to 1 inch high on another parchment-paper-covered cookie sheet by pulling the bag up as you press meringue out. Tap down peaks with wet fingers. These stems will be attached to the caps with melted chocolate after baking.
Place the two cookie sheets in the oven for 1 hour, or until meringues can be lifted easily. Turn off the heat and leave in the oven with the door propped open for an hour or more. The extra time allows the meringue caps and stems to dry.
To construct mushrooms, melt the chocolate chips in a microwave-safe dish. Use a small spoon to spread chocolate on the underside of a cap. Attach a stem. Allow the chocolate “glue” to harden.
Arrange in a festive basket and share with friends at a holiday party.

A: You didn’t dream it; it’s true. A motion picture about Springsteen’s life while recording his iconic acoustic album “Nebraska” in the early 1980s is currently in production. None other than EmmyAward-winning actor Jeremy Allen White (“The Bear”) will portray him and says that he would even like to try singing for the film, as opposed to being dubbed over.
A: Even though Depp won his defamation trial in the United States against his ex-wife Amber Heard (“Aquaman”) and has done some independent films, he hasn’t quite made a comeback as a movie star. It’s doubtful that there will be another “Pirates” movie with Depp in the starring role, but he’s still planning to inch his way back onto our movie screens. He’s recently been cast in his fourth film opposite Penelope Cruz, titled “Day Drinker.” The two previously appeared in the movies “Blow,” “Pirates on the Caribbean: On Stranger Tides,” and most recently “Murder on the Orient Express.” It’ll be his first big studio project since his career went south.

OPERATION GRATITUDE STILL GOING STRONG
Since it began in 2003, Operation Gratitude has sent out in excess of 4 million care packages to deployed service members. Starting several years ago, OpGrat has expanded their range of giving to include first responders, wounded heroes, recruit graduates coming out of boot camp and veterans, saying thank you to those who serve. The kids aren’t left out either. Over 20,000 Battalion Buddy teddy bears have been send out to military children in one year alone. The donated items in the boxes (ranging from expensive gadgets to snacks to games to necessities) come from corporations, small companies, community and civic groups, and individuals. Requesting a care package to be sent to someone is easy. Packages can be sent to Army, Navy, Air Force, Marine Corps and Coast Guard personnel deployed overseas and National Guard serving domestically. Volunteers are at the heart of OpGrat. They write letters to be included in the packages and volunteer at the packing events. Local groups create handmade items, scout troops and companies hold fundraisers and schoolchildren collect loose change. If you doubt the value of this ongoing effort, look at the videos on the website (www.operationgratitude.com). And look for Carolyn Blashek, the woman who started OpGrat in her living room in 2003 after talking to an Iraq War soldier who doubted that anyone cared about whether he’d make it back. She decided to prove him wrong, and 4 million packages later, she has.
I first wrote about Operation Gratitude in 2008 and have been tracking them through the years. While other efforts have come and gone, OpGrat has only grown and expanded. One memorable highlight was the year founder Carolyn Blashek personally delivered a care package to a soldier in Iraq. That box contained the keys to a new vehicle, courtesy of the automaker.

that the Social Security increase won’t make a dent, give your finances a good hard look.
Some ideas: Put off buying a new winter coat for one more year. Buy food in bulk and split with a friend or neighbor. Look for community rabies/distemper shot events to lower the cost of vaccines for your pet. Put clear plastic on the windows to block chilly breezes. Ask for discounts everywhere you

HOLLYWOOD -- What could make Al Pacino shoot five films back-to-back at 84 years old? In 2011, he learned that his accountant stole $50 million of his money for a Ponzi scheme, leaving Pacino with $0. The 1993 Best Actor Oscar winner (for “Scent of a Woman”) realized that he’d have to work to cover his losses. Pacino offered, “The big paydays that I was used to just weren’t coming around anymore.”
He continued, “’Jack and Jill’ was the first film I made after I lost my money. To be
honest, I did it because I didn’t have anything else. Adam Sandler wanted me, and they paid me a lot for it. ... I love Adam; he was wonderful to work with and has become a dear friend.”

This clean version of the classic pot roast skips the usual processed flavoring packets, using whole food options instead. With just 20 minutes preparation, you can have this roast simmering in the slow cooker, leaving you with a savory, fall-apart meal that’s perfect over mashed potatoes with a side of green beans or salad.
SLOW COOKER MISSISSIPPI POT ROAST
Yield: 6-8 servings
Total Time: 8 hours, 20 minutes
2 tablespoons cooking oil
3-4 pounds boneless beef chuck roast
1/2 teaspoon kosher salt
1/2 teaspoon black pepper
1/4 cup butter
1 cup yellow onion, coarsely chopped
3 tablespoon all-purpose flour
1/2 cup water
1 tablespoon Better than Bouillon Beef Base
1/2 cup liquid from a jar of pepperoncini
1/2 cup sliced or 5 whole pepperoncini
Ranch Herb Blend:
1 tablespoon dried parsley
1 tablespoon garlic powder
2 teaspoons dried chives
2 teaspoons dried dill weed
1 teaspoon onion powder
Heat the oil in a skillet over medium heat. Season the beef with salt and pepper. Add the beef to the hot skillet and sear until golden brown and lightly crusted on both sides, about 5 minutes per side. Transfer the seared beef to a 5- or 6-quart slow cooker. Leave the skillet over the heat.
Reduce the heat to medium-low and add butter to the skillet. Once melted, add onions and cook, stirring, until soft, about 4 minutes. Stir in the flour and cook for 1 minute. Meanwhile heat 1/2 cup water and dissolve the beef base in the water. Add the water and 1/2 cup pepperoncini liquid to the skillet, scraping up the browned bits. This mixture will quickly thicken into a lovely, velvety sauce. Pour this sauce over the roast in the slow cooker. On top of the roast and sauce, evenly distribute the pepperoncini, and sprinkle the ranch herb blend.
Cover and cook on LOW for 8 hours or 4 hours on HIGH or until the beef is tender and easily shredded.
After cooking, transfer the beef to a cutting board and rest it for 5 minutes. Next, shred with a fork. Serve with the cooking liquid drizzled over the top, alongside mashed potatoes, green beans and/or a green salad.
For Oven Roast Mississippi Pot Roast: Preheat oven to 275 F. In a Dutch oven, heat oil and sear roast. Remove roast, cook onions in butter, then stir in flour. Add water and pepperoncini juice and stir to combine. Return roast and add pepperoncini and Ranch Herb Blend. Cover and cook for 5-6 hours. Shred beef and serve with juices.
Freezer Instructions: Cool ingredients completely, then transfer to a freezer-safe container. Freeze for up to 6 months. Thaw overnight and reheat as desired.
