ORANGE JUICE BISCUITS
Orange Butter Sauce: 1 1/2 cups Florida Orange Juice
2 1/2 tablespoons unsalted butter
Orange Biscuits: 1 1/2 tablespoons granulated sugar
2 teaspoons grated orange zest 2 cups bleached allpurpose flour, plus additional for kneading
To make orange butter sauce: Boil orange juice 5 minutes, or until reduced by half. Add butter and stir until melted. Remove from heat.
To make orange biscuits: Preheat oven to 425 F.
Use fingers to rub sugar and zest together until sugar is moistened and looks like wet sand.
In large bowl, whisk orange sugar, 2 cups flour, baking powder and salt. Using two forks or pastry blender, cut in shortening to size of small peas.
Combine milk and orange
juice then stir into flour mixture to make sticky dough.
Turn out dough onto wellfloured work surface. Sprinkle top with flour and knead about six times while folding dough over in half and using more flour as needed.
Pat dough out to 3/4-inch thickness. Cut out biscuits with round cutter by dipping cutter in flour then pressing into dough. Do not turn cutter while pressing.
Place biscuits close together but not touching on baking sheet.
Gather dough scraps and fold 2-3 times, pat out again and cut biscuits. Repeat until dough is used.
Brush tops with orange butter sauce. Bake 15-20 minutes, or until lightly browned.
Serve warm or at room temperature with remaining sauce.

MARGARITAS
2 cups Florida Orange Juice ice
2 cups simple syrup
8 ounces silver tequila
2 ounces triple sec or orange liqueur
2 ounces lime juice
4 ounces seltzer ghost pepper salt, to taste

I’ve been baking and writing about bran muffins for years. I recently put my favorite recipes to the test, and if my family tasters are honest, I’ve hit on an updated version so good that I have to hide muffins in the recesses of my cupboard pantry if I’m going to get my share.
Still full of good and healthy stuff, this version calls for the raisins to soak a bit so they puff up before getting stirred into the batter. I also added more chopped walnuts. When I did a taste test with two recipes, one with and one without a smooshed-up ripe banana, the one with banana won. It adds a nice taste and texture.
Taste-testing aside, the fun part of muffinmaking with kids is that there’s a job for all ages and stages. One child can measure and stir together dry ingredients in one bowl, while another can crack the egg or smoosh the banana in a different bowl. Within minutes, the batter comes together, ready to scoop into little paper cups and bake.
Wash and dry the prepping dishes as a team, and before you know it, you’re poking a toothpick in the middle of a muffin to test its doneness and enjoying a healthy homemade snack in a kitchen where the baking aroma of home wafts through the air.
MOUTHWATERING BRAN MUFFINS
Makes 12 large muffins
2 cups whole wheat flour
1 1/2 cups wheat bran
1/2 cup wheat germ
2 tablespoons brown sugar
1 1/4 teaspoons baking soda
1 teaspoon salt
2 cups plus 2 tablespoons milk
1 egg, lightly beaten
2 tablespoons vegetable oil
1/2 cup raw blue agave sweetener or
1/3 cup honey
1 ripe banana, mashed
3/4 cup raisins, soaked in water for
5 minutes and drained
3/4 cup chopped walnuts
Preheat oven to 350 F. Line a muffin pan with paper liners. Stir together the flour, bran, wheat germ, brown sugar, baking soda and salt in a medium bowl.
In a large bowl, whisk together the milk, egg, vegetable oil and agave sweetener or honey, until combined.
Add the dry ingredients, stirring just until combined; then fold in the banana, raisins and nuts with a few swift strokes. Do not overstir.
Scoop the batter into the muffin cups. An ice-cream scoop works well.

Shake and pour into four glasses. Top each glass with 1 ounce seltzer. Pour ghost pepper salt onto saucer and dip edges of orange slices in ghost pepper salt. A: The 25th season of the singing competition show “The Voice” premiered on NBC in February with returning judges John Legend, Reba McEntire and Chance the Rapper. Joining them this season is the Grammy-winning country/pop duo Dan + Shay, who met when they moved to Nashville, Tennessee, separately.
Dan + Shay hit it big in 2018 with their single “Tequila” and followed that with the crossover hit song “10,000 Hours,” which they recorded with Justin Bieber. The twosome actually isn’t new to “The Voice” -- they appeared in season 20 as “battle advisors” for former judge Blake Shelton. In terms of Billboard rankings, the most successful winners from “The Voice” include Cassadee Pope from season three. A: The 96th(!) Annual Academy Awards will air live on ABC on Sunday, March 10. Jimmy Kimmel will host the ceremony for the second year in a row, and it’ll begin an hour earlier than in past years (7 p.m. ET instead of 8 p.m.). There will also be a 30-minute live pre-show on the red carpet.
The earlier time slot is an attempt to boost ratings. With the ceremony expected to end by 10:30 p.m., the network is hoping viewers will stick it out instead of turning off their TVs and other devices before it concludes.

$5 MILLION IN HOUSING GRANTS FOR SPECIAL NEEDS VETERANS
The Department of Veterans Affairs has done the final math for 2023, and the number of homeless veterans who found permanent housing has passed the initial goal. The total now stands at 46,000 veterans who were helped.
At the same time, the VA hooked up with 40,000 veterans to get them the resources they need to find housing and worked to ensure that 95% of housed veterans can stay that way.
All this is part of the Housing First program. The theory is that getting a veteran into a home first is crucial, then to be followed up with the services needed to ensure the continued housing.
Part of that includes education, legal help, health care and jobs training. Veterans who are part of the Housing First program generally find housing more quickly, in 35 days as opposed to 223 days on average.
Now, having the final 2023 number of 46,000 veterans put into housing, the VA has announced funding in the amount of

DEAR PAW’S CORNER: I have a neighbor who puts both of her cats on leashes and walks them through the neighborhood each day. Shouldn’t they be outside on their own, prowling and doing cat stuff?

Island DEAR CONCERNED: As long as the cats aren’t distressed by the leash, I don’t see a problem. Some cats are completely uninterested in exploring the world outside, and some are downright fearful of it. And that’s totally fine. Others, however, want to be outside every chance they get. Letting cats wander outside puts them at risk of being struck by a car, attacked by wildlife or feral cats, or contracting an illness. Cats can be a menace to other creatures, so much so that there’s evidence they are impacting the bird population. Songbirds are already under threat from climate change and bird flu (which spreads just as easily among wild birds as it does on chicken farms), so adding another predator to the list is not a good thing. Putting a cat on a leash (and in a harness, rather than a collar) is a great way to help them explore while keeping them safe. It’s also helpful when taking your cat on long car trips -- they can stretch their legs safely at rest stops. For those who’d like to try walking their cat, buy a harness that fits your cat. Cats won’t like the harness at first; put it on and just let them get used to it while you hold the leash loosely. Make it a positive experience with lots of treats. Once they start exploring comfortably with the harness on, walk around with them, guiding them. Don’t tug on the leash or drag them. Pick them up if they won’t move, but always keep it positive. been reading in too many places about taking steps to hold off memory and cognitive impairment, so I’ve paid attention to some of the ideas we can use to keep our brains active. One idea that’s been very enticing is playing the piano and using that as a protective factor against dementia and impairment. When I began my hunt for a piano, I quickly realized that space would be a major consideration, never mind the expense of a real piano. However, there are smaller electronic pianos, and I bought one: a Yamaha Piaggero NP-12. I’ve placed it on a board between two two-drawer file cabinets to avoid the additional cost of the metal stand and seat. It only has 61 keys, rather than the standard 88, but it’s enough and fits into the space I have and only weighs 11 lbs. It’s a great little piano even for those who’ve played before (it’s touch sensitive, for those who know about these things). It has buttons to select between the sound of piano, electronic piano, organ, strings and harpsichord, with a built-in metronome and volume dial. If you’re interested in such a piano, hunt around the internet or call music stores in your area. Be sure to order the wall plug adapter as well, so you don’t have to worry about batteries. If you don’t already play, consult YouTube online for beginner lessons for seniors on video. Ask at a music store, rec center or college music department about signing up for beginner lessons to get you started. If you don’t have sheet music, look on the internet for free music you can print out (try pianosongdownload.com), or check garage sales or even the library. Even if the first songs you learn are along the lines of “Mary Had A Little Lamb,” it’s
$5 million in grants (renewable for a second year) to help the special needs group of homeless veterans (mentally ill, the elderly, women, the terminally ill and those with children). The Homeless Providers Grant and Per Diem Program gives the cash to community groups that handle both temporary transitional housing and case management, hooking them up with services, permanent housing and access to VA benefits. There are only 16 of the special needs grant recipient groups that can apply for a share of that $5 million. The list of grantees indicates that each group concentrates on only one category of the special needs list, with the Chronically Mentally Ill group having a slight edge over the other categories. The actual awarding of the funds will run from October 2024 to September 2026, with applications needing to be received by April 15, 2024. HOLLYWOOD -- It’s not a good sign when multiple cast members of a movie appear on every talk show to promote their film. “Argylle” stars Henry Cavill, Bryce Dallas Howard, Bryan Cranston and Ariana DeBose hit them all -- morning and night. One reason may be because the $200 million film has received mixed reviews from 33% of the top critics on Rotten Tomatoes, and its success or failure may determine the fate of the next two films in the
spy trilogy. In 2015, Cavill starred in a film version of the hit spy TV series “The Man From U.N.C.L.E.,” with Armie Hammer and Alicia Vikander (who won an Oscar the following year for “The Danish Girl”). The film cost $75 million and only grossed $110 million. Many have hoped Cavill would be the next James Bond, but he probably won’t be considered anymore now that he’s done “Argylle” and Guy Ritchie’s next two films -- an untitled action film that has already been completed and “The Ministry of Ungentlemanly Warfare,” with Alex Pettyfer, Henry Golding, Cary Elwes and “Reacher’s” Alan Ritchson.

In 2022, Ariana DeBose won an Oscar as Anita in Steven Spielberg’s “West Side Story,” a role that also won Rita Moreno her Oscar. It was originally created on Broadway by the late, great Chita Rivera, who passed away on Jan. 30. DeBose, proving to be multitalented, has completed two more films: the superhero epic “Kraven the Hunter” due Aug. 30, opposite Aaron Taylor-Johnson and Russell Crowe,
and her first top-billed film -- the supernatural-horror film “House of Spoils,” in which she plays a chef.

“Dune” was divided into two films, with “Dune: Part Two” scheduled to drop on March 1. The second part stars Timothee Chalamet, Zendaya, Austin Butler and Florence Pugh. “Dune: Part One” cost $165 million and grossed $402 million. Now word comes that there’ll be a “Dune 3” based on Frank Herbert’s second novel “Dune Messiah.”
When asked if she’d sign on for a third film, Zendaya proclaimed, “I mean of course. Anytime Denis [Villenueve] calls, it’s a yes from me, at least.” Chalamet agreed, stating: “I think we’re all superenthusiastic about that.” (His “Wonka” film has already passed $600 million.)
(Spoiler alert ahead!) Even though Butler has completed “The Bikeriders” (due June 21) and the recently released Apple TV+ series “Masters of the Air,” don’t expect to see him in “Dune 3,” except maybe in a flashback. Just like “Elvis” had left the building, Butler has left Arrakis!

Here’s a stellar pantry staple I don’t write about often enough, so let’s dive into some canned salmon. There’s no doubt that salmon is among the healthiest of foods. Yet fresh salmon is expensive, seasonal and sometimes hard to find, particularly salmon that’s wild caught rather than farmed. So, while we wait for fresh salmon to go on sale, canned salmon is an affordable choice for the frugal and fabulous pantry. It’s crucial to scrutinize salmon labels for quality. Farmed salmon, raised in crowded pens with antibiotics and toxins, poses health risks. Avoid Atlantic salmon, which is farmed due to overfishing. Opt instead for wild-caught Alaskan pink salmon, sustainably harvested in well-managed fisheries. Not only is it ethically sound, but also budget-friendly.
If you’ve never tried canned salmon, here’s what you should know. Canned salmon comes in two varieties: with the skin and bones (less expensive) and without (more expensive).
If you buy salmon with the skin and bones, there’s a tiny little drawback. Namely, skin and bones. You’re getting a section of the whole fish (scales and organs removed) then pressure cooked right in the can. The bones are soft and completely edible, in fact, they’re highly nutritious. You can choose to eat everything in the can, or you can pick out the skin and bones, leaving only the fillets.
If you or your family feel squeamish about the bones, I suggest you remove the obvious bits and add a handful of slivered almonds to any recipe using canned salmon to completely camouflage any remaining bones.
Canned salmon is so versatile; you can make sandwiches, salads, chowders, pasta and more. But a family favorite is salmon patties -- crisp on the outside, tender on the inside and bursting with flavor. This adaptable recipe also makes awesome burgers or little appetizer cakes.
SALMON PATTIES
Yield: 4 to 6 servings
Total Time: 1 hour
1 cup mayonnaise
1/2 cup green onion, minced, divided
1 teaspoon lemon zest
1 tablespoon fresh lemon juice
3/4 teaspoon Old Bay seafood seasoning
1/2 teaspoon low sodium soy sauce
1/2 cup celery, finely minced
2 eggs
1 (14.75 ounce) can pink salmon
1 tablespoon slivered almonds, optional
1 3/4 cups panko breadcrumbs, divided
1 tablespoon everything bagel seasoning
2 tablespoons vegetable or olive oil, for frying
In a mixing bowl, combine mayonnaise, half (1/4 cup) of the green onions, lemon zest and juice, Old Bay and soy sauce. Reserve about 1/2 cup of this mixture to use as a dipping sauce or spread later. Into the remaining mayo mixture add celery, remaining green onion, beaten eggs and salmon. For this purpose, I remove the skin and bones, but it’s your choice. Add the almonds, if desired. Stir to combine. Thoroughly fold 1 cup of panko breadcrumbs into this mix. Refrigerate for at least 20 minutes. Meanwhile, in a shallow bowl, combine the remaining panko and everything bagel seasoning. When you’re ready to cook your patties, place a skillet on medium-low heat and add 1 tablespoon of oil.
Divide the mixture and form 4 or 6 patties. Press each patty into the panko mix, covering all sides. The patties are sticky until they’re

coated, then they’re much easier to work with. Place into the heated skillet in batches. Cook on the first side for 4 minutes before carefully flipping over until fully cooked. Repeat with remaining patties, adding oil as needed. Serve with the reserved dipping sauce or as a burger with the usual accompaniments.
