Golden Beet and Rice

Burger Sliders

Prep time: 20 minutes

Cook time: 20 minutes

Servings:

1 bag Success Jasmine Rice

1/2 can (7 1/2 ounces) white beans, drained and rinsed

1 egg, beaten

1/2 tablespoon water

4 ounces (about 1 1/2 cups) golden beets, cooked and grated

3 ounces goat cheese, crumbled, divided

1 tablespoon finely chopped fresh dill

1/4 teaspoon salt

1/4 teaspoon black pepper

2 tablespoons olive oil, divided

12 leaves Bibb lettuce

1 cup arugula

2 tablespoons Sriracha saucel

Prepare rice according to package directions. Cool completely.

In food processor, pulse beans, egg and water until mashed.

Transfer bean mixture to large bowl. Add rice, beets, 1 1/2 ounces goat cheese, dill, salt and pepper; stir until combined. Divide mixture into six portions and shape into 1/2-inch-thick patties.

Spice Rice and Lentil Pilaf

Prep time: 10 minutes

Cook time: 20 minutes

Servings: 4

5 cups water

1/3 cup dried brown lentils, rinsed

In large, nonstick skillet over medium heat, heat 1 tablespoon oil. Cook patties in two batches, 3-5 minutes per side, or unti l golden brown and heated through adding remaining oil as necessary. Place two lettuce leaves together, overlapping ends to form pocket. Place patty inside lettuce pocket; top with arugula and remaining goat cheese. Drizzle with Sriracha. Repeat with remaining burgers.

When I crave a snack in the midafternoon, a bowl of popcorn is a favorite. It’s low in calories and tastes great, so what’s not to like? And it’s a casual welcome treat for anyone who stops by, even the neighbor kids! They happily grab a handful after school and continue with their active play, with a “Thanks, Donna!” in between munches.

When we host a last-minute barbeque at our house and I’m focused on getting food on the table, I don’t fret about appetizers. Along with simple, crowd-pleasing cheese, crackers, nuts and fruit on a board, I’ll set a giant bowl of popcorn to the side. It’s usually gone in minutes.

When my three kids were young, I popped it using the traditional method -- on the stove in a big pot with kernels swimming in a glob of oil. It worked, but there was always a greasy stove, pan and lid to clean up. Nowadays, I don’t have an air popper, nor do I buy the store-bought, butter-laden microwave bags with too much salt for my taste.

Instead, my new strategy uses the microwave, but I pop good-quality popcorn in a bowl instead of a bag. I can have 5 cups in just about 5 minutes. Yes, this homemade, easy recipe is the best and my go-to! A dab of oil, quality kernels, no fuss.

It’s easy, healthy and perfect every time. Just add personal toppings when it’s done for more popcorn pizzazz.

EASY MICROWAVE POPCORN

Makes 5 cups

1/4 cup fresh popcorn kernels

1/2 teaspoon canola or vegetable oil

In a microwave-safe glass bowl that’s 6 cups or larger in size, kids can measure and stir popcorn kernels with oil.

Cover the bowl with a microwave-safe plate and microwave on high for about 4-6 minutes (microwaves and popcorn vary), or until there are only 3 seconds between pops.

An adult should carefully remove the bowl and top plate with oven mitts, as it will be very hot. Pour popcorn into a serving bowl, season to taste and enjoy!

A: Apparently, there are 30 Hannah Swensen Mystery novels written by Joanne Fluke, and Alison Sweeney (“Days of Our Lives”) has starred in nine adaptations of them for Hallmark. “One Bad Apple,” her most recent movie, holds a special place in Sweeney’s heart because she also adapted the screenplay from Fluke’s book “Apple Turnover Murder.” She told TVLine that she watched YouTube videos, read about how authors allocate their

A: Yes, there is a movie in the works about the late King of Pop called “Michael,” which is being directed by Antoine Fuqua and stars recent Oscar nominee Colman Domingo as M.J.’s father, Joe Jackson. Jaafar Jackson, son of Jermaine Jackson, has been cast in the role of his late uncle. The all-star cast also includes Miles Teller as entertainment lawyer John Branca, Nia Long as matriarch Katherine Jackson, and Larenz Tate as Berry Gordy. According to Entertainment Weekly, the film will follow the life and career of Michael Jackson from his “early days as a member of family group the Jackson 5 through to his successes as a solo artist.” It will also trace his “triumphs and tragedies as it examines both his personal struggles

and his most iconic performances.”

Fuqua said that he’s been “blown away” by Jaafar’s resemblance to his uncle: “Sounds like him, dances like him, sings. It’s really uncanny.”

Q: When is “The Real Housewives of Orange County” returning, and is Vicki Gunvalson coming back? -- N.N.

A: LOriginal cast member Vicki Gunvalson won’t be returning to the main squad for the 18th season of “RHOC” this summer. But she reportedly accepted an offer to return in the limited “guest” capacity status, like she agreed to last season.

There will be another “friend” returning who is also a familiar face. Alexis Bellino, who was a regular cast member from seasons five through eight, was seen filming with a couple of the ladies a few months ago. She’ll bring plenty of drama to the show, since she’s now dating Shannon Beador’s ex-beau, John Janssen.

We worry about needing to ask others for help with things we used to be able to do. But the one topic that garnered the most comments was loneliness. We fear losing all our friends when they die. VA BY THE NUMBERS The Department of Veterans Affairs has been going all out to provide expanded access to care to veterans. They’re calling it Access Sprints, and it means they’re scheduling more appointments at night and on weekends, as well as scheduling more veterans into their daily schedule. The effort seems to be showing progress. Just this year so far the VA has had 25,000 more new patients than they did during the same period last year. Appointments increased by 11%. Per the stats, 12% fewer new patients had to wait over 20 to 28 days to get an appointment, and 14% fewer new patients are having to wait to see community providers because of wait time eligibility. This is on top of the care they provided in 2023 in over 116 million appointments. Other 2023 stats are equally impressive. The crisis line took over 1 millions calls, over 33,000 veterans received emergency care in suicide crises and 5.5 million dental procedures were completed for over 560,000 patients. Nearly 5 million veterans were screened for toxin exposure,

THIS LITTLE DOG HAS A LOT OF MOXIE DEAR PAW’S CORNER: I adopted a small mutt from the local shelter and named her “Moxie.” She’s adorable but really energetic. She’ll actually jump straight up in the air as high as my waist! She also tugs hard at the leash when we walk. How do I tame all of this energy? -- Janice F., Hyde Park, New York DEAR JANICE: Congratulations on your new pet! Moxie sounds like a bundle of joy. But I can understand that all her energy can be tiring. In addition to walks twice a day (or more, if you can swing it), give Moxie plenty of puppy toys to play with at home, and spend time with her on the floor just playing fetch and helping her work off more of that energy. She may also respond very well to a consistent schedule of walks, feeding and bedtime (yes, bedtime). Build certain predictable routines around each of these events. When it’s time for a walk, call Moxie and have her sit while you put on her leash. During walks, keep the leash short and work on the “heel” command. But when in a safe, open area, give Moxie more room on the leash to explore. When it’s bedtime, create a routine that is the same every night -one that is positive, with a little play time and a signal to settle down and rest (such as turning down the lights). Now, if Moxie’s energetic behavior is morphing into something more serious, like destroying furniture or being aggressive toward other dogs or humans on walks, that’s a problem you’ll need to address as soon as possible. Talk to Moxie’s vet about ways to reduce her hyperactivity and anxiety (if those are the causes). If she isn’t responding to basic behavioral training, hire a trainer to help. SLOPPY JANES

Yield: 4 servings

Total Time: 20 minutes

1 tablespoon olive oil

1 (12 or 16 ounce) bag frozen 3 pepper and onion blend, defrosted (or fresh equivalent)

1 pound 90% lean ground turkey

1 teaspoon kosher salt

1/2 teaspoon black pepper

2 teaspoons granulated garlic

1 (8 ounce) can tomato sauce

1 tablespoon yellow mustard

1 tablespoon brown sugar

1 tablespoon apple cider vinegar

1 teaspoon chili powder

Optional:

1/8 teaspoon cayenne pepper, or more to

1/2 cup shredded cheese

Optional: bread and butter pickles and/or pickled jalapeno slices

Add the olive oil to a skillet over medium-high heat.

Add the onion and pepper blend. Cook for 5-7 minutes until they release most of their moisture and are cooked through. Push the peppers to the side and add the turkey. Cook for 5-7 minutes until browned and no longer pink. Add the salt, pepper and garlic, and stir it all together. Cook for 1 minute until fragrant.

Meanwhile, in a small bowl stir together the tomato sauce, mustard, brown sugar, vinegar, chili powder and cayenne, if using.

Add the sauce to the turkey mixture and simmer for 5 minutes or until Sloppy Joes are thickened to your liking, making sure to stir frequently. Adjust seasoning, if needed.

Serve hot on toasted buns. Top with shredded cheese and pickles.

Pair this with a crisp green salad or crunchy carrot and celery sticks for a well-rounded meal. Add some French fries or onion rings to really make the kiddies (and kids at heart) happy.
