PASTA SALAD

Prep time: 10 minutes

Cook time: 15 minutes

Servings: 7

1 box Barilla Protein+

Cellentani pasta

4 tablespoons extra-virgin olive oil, divided 2 pints grape tomatoes, mixed color, halved 4 tablespoons lemon juice 8 basil leaves, julienned 2 cups small mozzarella cheese balls, halved salt, to taste

black pepper, to taste

Bring large pot of water to boil. Cook pasta according to package directions and drain. Drizzle pasta with 1 tablespoon olive oil and place on sheet tray to cool. Set aside.

In large bowl, combine tomatoes, lemon juice, basil, remaining olive oil and cheese. Season with salt and pepper, to taste. Add pasta and stir.

LINGUINE WITH ZUCCHINI

CARBONARA

Prep time: 5 minutes

Cook time: 10 minutes

Servings: 8

5 egg yolks

1 cup Pecorino Romano cheese, grated, divided 1/2 cup milk salt, to taste

1 tablespoon extra-virgin olive oil

1 medium zucchini, julienned

1 box Barilla Linguine

1 tablespoon fresh mint, chopped black pepper, to taste

Bring large pot of water to boil.

In bowl, mix egg yolks, 1/3 cup Pecorino Romano cheese and milk. Season with salt, to taste. Set aside.

In large skillet, heat olive oil and cook zucchini.

Cook pasta according to package directions. Reserve 1/2 cup cooking water.

Mix pasta in pan with zucchini. Add egg yolk mixture and 2 tablespoons cooking water. Combine well. Add remaining cheese and mint; mix. Season with salt and pepper, to taste.

Linger Around the Table and Enjoy Artichokes

I just ran across French writer Marcel Proust’s wonderful passage from “Remembrance of Things Past” while sorting through dusty textbooks. He dipped a madeleine cookie into his tea, and an entire village with its gardens and people surged up in his memory.

Can’t we all relate to his involuntary taste and smell recollection? It happens to me this time of year when the subtle aroma of boiling artichokes wafts through my kitchen. I’m reminded of my childhood summers when my mom prepared a favorite vegetable that kept our family lingering around the table.

One by one, we picked off the leaves and dipped them in mayo or melted butter. The sweet, velvety texture of the earthy-tasting meat slid through our teeth. The anticipation was getting to the heart below the choke -- the best part!

Artichokes are a kid-friendly food for the prep (I was in charge of trimming off the pointy ends of the leaves with scissors), and it’s just plain fun to eat finger food. You can cook artichokes easily in the microwave or boiled on the stove. You can also steam, marinate and finish them on the grill for a delicious appetizer. First, to prepare the artichokes for cooking, slice off the stems at the base and cut about 1 inch off of the top. Cut off the points of the leaves with scissors.

Microwave: Arrange two prepared artichokes upside down in a microwave-safe, flat baking dish with 1/2 cup of lightly salted water. Cover. Cook on high for about 8 minutes, or until the base is tender enough to pierce with a fork.

Boil: Fill a large pot with 4 quarts of water, 1 tablespoon salt, and juice from 1 lemon (optional). Bring to a boil and drop in one to four prepared artichokes right side up. Boil uncovered until the base tests tender when pierced with a fork, about 30 minutes. Drain upside down on a cooling rack.

Barbecue: Cut and trim several mediumsized artichokes, then cut in half lengthwise down through the stem. This will expose the choke or furry part. With a paring knife, dig out the choke. Put them in a steamer and cook until the bases are fork-tender, about 25 minutes; add more water as needed. Cool. Marinate with equal parts olive oil, balsamic vinegar, and soy sauce -- about 1/3 cup of each for four artichokes. (Add grated fresh garlic, salt and pepper, if you wish.) Refrigerate at least 2 hours.

Q: Now that “NCIS: Hawai’i” has been canceled, are there going to be any other “NCIS” shows in the works? -- K.S.

A: Yes! “NCIS” has been a very successful franchise for CBS ever since it premiered on the network back in 2003. Starring Mark Harmon, the series has spawned four spin-offs (“Los Angeles,” “New Orleans,” “Hawai’i” and “Sydney”) with two more planned.

“NCIS: Origins” will focus on Harmon’s character at the beginning of his career in the 1990s, with Austin Stowell (“Three Women”) stepping into his shoes. The series will air on CBS on Monday nights beginning this fall, and Harmon is listed as the narrator.

The other new spin-off, “NCIS: Tony & Ziva,” will air on the streamer Paramount+ and will star fan-favorites Michael Weatherly and Cote de Pablo, who reprise their “NCIS” roles. You may remember that de Pablo’s Ziva was presumed dead when the actress left “NCIS,” but later, it was learned that she was alive and went on to live happily ever after with Tony and their baby in France. The new series picks up with the family on the run in Europe.

“I expect intrigue, romance, the background of Europe, impossible situations that will make our life complicated, but somehow a little something about love,” explained de Pablo on a recent announcement via Zoom. Paramount+ has ordered 10 episodes, with shooting to begin shortly in Budapest. ***

Q: Is it true that Susan Lucci is going to be the “Golden Bachelorette”? Will the show air soon? -- J.K. A: ABC decided to give audiences what they’ve been requesting for decades -- a “Bachelor” for Boomers. Gerry Turner, a 72-year-old retired restaurateur and widower, became “The Golden Bachelor,” marrying, and alas divorcing, Theresa Nist, a financial securities specialist from Manhattan. Despite the disappointing conclusion to that romance, the season itself was a hit with many questioning who would be the first Golden Bachelorette. There was a

recent report that “All My Children” star Susan Lucci was asked to be the chooser, but a spokesperson from ABC has denied it.

According to TVLine, they eventually found their “The Golden Bachelorette” star in 61-year-old Joan Vassos, a school administrator who had to leave the “Golden Bachelor” season early to be by her daughter’s side for a medical crisis. She’ll make her debut this fall when “The Golden Bachelorette” premieres, with episodes being expanded to 90 minutes long. ***

Q: Is the PBS series “Antiques Roadshow” still making new episodes? I see reruns all the time where they give updates on what an item would be appraised at in 2024, but they’re still reruns. -- V.O.

A: Yes, “Antiques Roadshow” is currently filming its upcoming 29th season with a five-city tour. The new season will premiere sometime in 2025, with episodes filmed from their stops this summer in Las Vegas; Baltimore; Bentonville, Arkansas; Urbandale, Iowa; and Littleton, Colorado.

HEALTHCARE SCAMS

It takes a lot of nerve to cook up a scheme to steal large amounts of money from government agencies such as the VA, especially since in the end the criminals get caught. One thief tried to convince the VA that he couldn’t use his feet anymore. The scam got him a 100% disability rating (as well as the monthly benefits that went along with it), plus a specially adapted car. He was ratted out by several witnesses who saw him drive to a VA medical center, get out and walk around and sit in a wheelchair before rolling into the center. He was also seen by several others (who had known him a long time) walking around in a mall. Not only did he get sent to prison, but he has to pay back a large amount of money.

And what about the eye doctor who took kickbacks for ordering unnecessary brain scans? His partner in crime was a medical diagnostics company. Not only did they generate fake diagnoses, but they pulled this on hundreds of patients and then sent out the bills. The money he stole ran into the millions, although he only made $100 or so for each fake diagnosis and brain scan he ordered. What would make a doctor, who’d been in practice for 40 years, think he could get away with a scheme like this? He’ll have plenty of time to think about that in prison.

The bigger the scam and the more moving parts, the more likely the criminals are to be caught. Such was the case with a guy who had his fingers in several types of health care fraud: offering and paying kickbacks to doctors who wrote fake test orders, compounded medicines and genetic cancer screenings (costing $10,000 each). The players included not only the doctors but pharmacies, labs and durable medical equipment companies.

The perp’s share of the $51 million cash haul for all these schemes was $10 million. He won’t get to spend that in prison. (c) 2024 King Features Synd., Inc.

Surviving Summer Heat

While winter cold can cause health problems for seniors, the summer heat can be just as dangerous.

Heat that’s too high can lead to heat exhaustion. Nausea, feeling weak or dizzy, being thirsty, having rapid pulse -- those are all signs that we’re too hot. Then there is heat rash, heat edema (swollen ankles and feet), heat cramps, heat stroke ... all with their own list of serious medical results.

The risks can come not only from the temperature, but from some of the prescription drugs we take, drinking alcohol and caffeine, living without air conditioning and having certain medical conditions.

The National Institutes for Health has a list of suggestions for dealing with summer heat: Consult with your doctor about how many ounces of water you need to drink on a daily basis. Ask if it needs to be only water, or if juices count in your daily intake of liquid. Keep the drapes closed to block the

Seniors don’t produce as much sweat as we used to, so there’s little natural cooling as breezes blow over us. Keep an eye on the news for advance notice about heat waves in your area. Plan ahead for where you might go to cool off and for meals that don’t heat up the kitchen. And remember: If you do have air conditioning, use it! A heatwave is not the time to worry about the electric bill!

QUELLING A CAT’S SEPARATION

DEAR PAW’S CORNER: Here’s a weird one. I went away on a business trip for three weeks, leaving my 9-year-old cat “Jenks” with a friend.

Since I’ve returned, Jenks will not leave my side. He clambers onto my lap while I have Zoom meetings; he follows me to and fro around the house; and he insists on sleeping on the bed at night. He also meows loudly if he can’t see me. This is a new behavior for him.

What’s going on? -- Claudio G. in Brooklyn

DEAR CLAUDIO: Jenks may have separation anxiety. Even though he never exhibited these behaviors before while you were away, it’s possible for a cat to develop this issue with no clear triggers.

Monitor his behavior patterns closely for a few days. In addition to meowing loudly when

Now Lohan will become Ann-Margret in a biopic of the sex symbol who held her own opposite Elvis

Presley in “Viva Las Vegas.” I was 17 when I first met Ann-Margret in New York City. She was sweet, wholesome and, yes, very sexy. I took photos of her everytime she came to NYC to publicize her new films. I was in heaven when CBS hired me to shoot her in Vegas, along with Frank Sinatra, Andy Williams, Tom Jones and Sammy Davis Jr., for their special “Cinderella at the Palace” (1978). My photos were used for all the ads and in TV Guide.

“Downton Abbey” fans ... your wait is over! The third “Downton Abbey” film is in the works. Did you realize that National Chocolate Ice Cream Day just took place on June 7?

If you’re anything like me, you’ve already marked next year’s calendar with chocolatey delight to make sure you don’t miss out in 2025!

In honor of this delightful holiday, I want to share with you a technique that will elevate your chocolate ice cream experience to new heights: the Chocolate Bombe Glacée.

Now, you might be wondering, what exactly is a bombe glacée? Well, in culinary terms, a bombe is a frozen dessert typically made in a spherical shape. It’s a fancy pants way of serving ice cream with several different flavors and textures of ice cream that create layers of color and taste sensations. Most importantly, it’s a beautiful presentation. As I’ve said many times before, a beautiful presentation doesn’t cost anything. Creativity is free, or priceless, depending on how you look at it.

For our Chocolate Bombe Glacée, I chose three layers of chocolate ice cream -- chocolate brownie, coffee almond chocolate and mudslide -- with a chocolate ganache filling in the center, drizzled with chocolate shell.

That’s for today, but the flavor possibilities are endless! It’s a dessert fit for royalty, yet simple enough to make at home without breaking the bank.

CHOCOLATE ICE CREAM BOMBE

GLACÉE

Special Equipment:

Three nesting freezer-safe bowls (a large one and two smaller ones that fit inside)

A spatula

Plastic wrap

Ingredients:

Three flavors of ice cream or sorbet

Chocolate sauce, optional

Soften your first flavor of ice cream by placing it in the refrigerator for about 30 minutes. Once softened, give it a stir and spread it evenly along the sides of the largest bowl using a spatula.

Wrap the outside of the second bowl in plastic wrap and press it firmly into the first layer of ice cream to create an even layer. Leave it in place and freeze until firm. While the first layer sets, soften your second flavor of ice cream in the refrigerator.

Once the first layer is firm, remove the bowl and plastic and add the softened second flavor. Repeat the process of wrapping the smaller bowl, pressing firmly and freezing to set the second flavor. Soften your final flavor of ice cream while the second layer sets.

When the second layer has set, fill the remaining space in the bombe with the final flavor of ice cream or sorbet. Return to the freezer for at least one hour to set completely.

To Unmold the Bombe:

When ready to unmold, fill your sink with hot water and carefully dip the bowl into the water for 10 seconds to loosen the edges. Immediately flip the bowl onto a plate to release the bombe. You may need to use a spatula or knife to help it along. Return the bombe to the freezer to firm up one last time before serving. To serve, slice the bombe like a pie using a heavy, sharp knife.

Optional: You can drizzle this with chocolate sauce for some extra pizazz.

CHOCOLATE MAGIC SHELL

3/4 cup semi-sweet chocolate chips

1 tablespoon coconut oil

Using the microwave, melt the chips and oil together in 20 second increments, stirring until smooth. This will harden when drizzled on ice cream.

So, my fellow frugal foodies, even if this year’s main event already happened, there’s nothing wrong with prolonging the celebration and celebrating National Chocolate Ice Cream Day in style.
