CREAMY TRUFFLE CAESAR PORK SANDWICHES
Prep time: 5 minutes
Cook time: 15 minutes
Servings: 4
2 pounds boneless skinless pork chops
4 tablespoons Italian seasoning
2 tablespoons canola oil
1 red onion
1 bag (9.3 ounces) Fresh Express Twisted Caesar Creamy Truffle Caesar Chopped Salad Kit
4 long sandwich rolls
Preheat pan on stove over medium-high heat. Season pork chops with Italian seasoning.
When pan is hot, add oil and pork chops. Cook pork chops, turning halfway through, until they reach minimum internal temperature of 145 F, 6-8 minutes per side (depending on thickness).
Once pork chops are cooked through, remove from pan and let rest a few minutes.
Peel and slice onion. After resting, slice pork into strips; set aside.
In same pan, saute onion until translucent, about 5 minutes. Set aside.
In large bowl, combine lettuce, dressing, croutons and cheese from salad kit.
In separate pan, toast buns until golden brown; set aside.
To build sandwiches, place sliced pork on bottom halves of toasted buns. Top with prepared salad mixture and sauteed onions. Finish with top halves of buns.
CHICKEN CAESAR
TACOS
Prep time: 10 minutes
Cook time: 20 minutes
Servings: 4
3 eggs 3 cups all-purpose flour
1 packet taco seasoning
2 chicken breasts, sliced in half horizontally
3 cups neutral oil
1 bag (9.4 ounces) Fresh Express Caesar Chopped Salad Kit
In shallow bowl, beat eggs. In separate bowl, combine flour and half packet of taco seasoning.
Place chicken in resealable bag and, using meat tenderizer, pound to 1/4-inch thickness.
In medium saute pan, heat oil over medium heat.
Season chicken breasts with remaining taco seasoning.
Coat chicken in flour mixture, dip into beaten eggs then coat chicken in flour mixture again, pressing firmly to adhere.
In pan with hot oil, cook battered chicken until golden brown, flipping halfway through, until chicken reaches minimum internal temperature of 165 F, 4-5 minutes per side (depending on thickness). Fry in batches to avoid overcrowding pan, if necessary.
Once fully cooked, fold chicken over to create taco shell-shape. Place sheet pan on top to hold shape, 3-4 minutes.
In large bowl, combine lettuce, dressing, croutons and cheese from salad kit.
Once chicken taco shells set, carefully remove sheet pan. Fill each taco shell with prepared salad mixture.

Fresh blueberries peak this time of year, so it’s time to make good use of them. Not only are they versatile and delicious, but they are nutritional standouts, being high in antioxidants.
Pick your own or purchase a basket at the market, and start thinking with your kids of all the ways that you can enjoy blueberries from morning until night. Sprinkle them on cereal, toss them in muffin batter, or create smiley faces on top of pancakes and waffles to make happy food art to start the day. Combine them in a fruit salad for lunch, eat a handful for an afternoon snack, or stir them into yogurt fruit pops.
As a sweet finale to any summer day, enjoy my family’s favorite blueberry pie. The uncooked berries in the recipe coupled with lemon juice and zest create a zingy, fresh flavor. This recipe is very easy to prepare at the last minute with your kids when friends come by or when you want to bring a crowdpleasing summer dessert to a potluck picnic. You simply prepare the blueberry filling on the stovetop and pour it into a prepared pie crust. Chill, then it’s ready to serve!
I top each slice with a dollop of fresh whipped cream, or I serve a scoop of vanilla ice cream on the side. Yum! It’s like a taste of summer.
EASY FRESH BLUEBERRY PIE
Makes 1 pie
4 cups fresh blueberries, rinsed and stems removed (Let kids go through them to pick out any crushed or overripe berries.)
3/4 cup sugar
1/2 cup water
3 tablespoons cornstarch
Pinch of salt
1 tablespoon freshly squeezed lemon juice
1/2 teaspoon grated lemon zest (optional)
1 (9-inch) pie crust, baked
In a medium saucepan, gently stir together 2 cups of blueberries, sugar, water, cornstarch and a pinch of salt. Bring to a boil, reduce heat, and stir constantly until thick and clear. It will be a luscious dark-purple color. Stir in the lemon juice and zest, then gently fold in the rest of the blueberries. Cool slightly.
Pour the thick filling into the pie shell. Let set or chill before serving. Serve with whipped cream or vanilla ice cream.

A: You’re correct that a sequel was in the works based on Terry McMillan’s book “Getting to Happy,” which was the sequel to her novel “Waiting to Exhale.” Unfortunately, the project was canceled after the tragic death of one of its stars, Whitney Houston. The remaining three stars, Angela Bassett, Lela Rochon and Loretta Devine, did not believe in continuing the film without their friend Houston. The good news is Rochon and Devine are part of the ensemble cast of “Terry McMillan Presents: Tempted by Love,” an upcoming romance movie for Lifetime, starring Garcelle Beauvais (“The Real Housewives of Beverly Hills”). Beauvais will play a famous chef who falls for a handsome young man 20 years her junior.

A: Not if the show’s creator Marc Cherry has any say in it. Eva Longoria, who played Gabrielle Solis on the show during its entire run from 2004-2012, says she’s all for it. However, she told Entertainment Weekly that Cherry feels like he doesn’t have anything else to say about the characters that he hasn’t “already fully mined.”
You can catch Longoria in the new miniseries “Land of Women” on Apple TV+ and the new season of “Only Murders in the Building” on Hulu. “Only Murders” will be partially set in Los Angeles, with returning stars Steve Martin and Martin Short, as well as the return of season three’s Meryl Streep. Longoria will join Eugene Levy and Zach Galifianakis as one of the show’s signature guest stars in supporting roles.

NEW PRESUMPTIVES FOR VA HEALTH CARE
The VA has added three types of cancer to the list of presumptive illnesses and disabilities that it will consider to be serviceconnected. “Presumptive” means the VA “presumes” your condition was caused by your service, which means you don’t have to prove anything.
The three new conditions are male breast cancer, urethral cancer and cancer of the paraurethral glands.
If you were diagnosed with any of those three new cancers on or after Aug. 10, 2022, but were denied benefits, you might be eligible for those benefits now.
Because of the PACT Act (aka The Promise to Address Comprehensive Toxics Act), the levels of health care and benefits are expanded for veterans who were exposed to toxins. Service locations have been expanded over time and now include Vietnam, Gulf War, Iraq, Afghanistan, Somalia, Djibouti, Egypt, Jordan, Lebanon, Syria, Yemen and Uzbekistan.
During certain time periods, the following are also included: being aboard a military vessel within 12 nautical miles of Vietnam/ Cambodia, and serving in Thailand, Laos, Cambodia, Guam, American Samoa, the Korean DMZ or the Johnston Atoll, or if you served in a location where C-123 aircraft were assigned. Radiation exposure is presumed for Enewetak Atoll, Palomares and Thule.
The toxins list is long as well: burn pits, sand and dust, particulates, oil well or sulfur fires, chemicals, radiation, warfare agents, depleted uranium, herbicides and more. I recently read a report about price increases and inflation. It was financially technical, meaning it used a lot of terms that regular people would need to look up to understand, which means most of us wouldn’t ... which left the writer of the report free to come to conclusions not connected to reality.
For example, this particular report said that during the reporting period we’d had only a very tiny increase in food prices because of a drop in energy costs, and so on, which skewed all the individual numbers when they were averaged out.
Which doesn’t help us at the grocery store, does it?
Here are some ideas to make our food dollars go further: Sign up for every local grocery store loyalty rewards program you can find. Those amounts add up, and sometimes you’ll get a surprise with the occasional coupon for a free item or buy two get one free. At the very least, you’ll get a credit on your

Keep an eye on the coupons that are issued at checkout and watch the coupons if you get the Sunday paper. Check into free senior lunches, the food bank, Meals on Wheels, meals at the senior center, the local Council on Aging and churches with donation pantries as a means of getting no-cost food. Oscar winner Will Smith’s comeback film (post-Oscar slap) “Bad Boys: Ride or Die” made over $200 million during its first two weeks (against its $100 million cost). Smith snuck into a theater showing in Baldwin Hills, California, and when patrons discovered him there, they went wild with praise for him. “Bad Boys for Life” grossed $426.5 million in 2020, and this sequel is poised to beat it.
Chris Rock made $40 million from two specials on Netflix because of the Oscar slap, and Smith is back from exile in only two years. Next for Smith is “I Am Legend 2” with Michael B. Jordan.

In order to leave 007 behind, Daniel Craig is sporting a new un-Bond-like, long-hair look in the upcoming “Knives Out” sequel “Wake Up Dead Man.” His co-stars are Andrew Scott, Kerry Washington, Glenn Close, Jeremy Renner, Mila Kunis, Josh Brolin and Josh O’ Connor. The original “Knives Out” grossed $312.9 million,
while its sequel only grossed $15 million before dropping on Netflix. The “threequel” will probably go straight to Netflix, but we’ll have to wait until 2025 to see it. ***
Billy Zane (of “Titanic” fame) is currently channeling Marlon Brando in the upcoming film “Waltzing with Brando,” based on the nonfiction book of the same name by Bernard Judge. His co-stars are Jon Heder, Tia Carrere, Richard Dreyfuss and Rob Corddry, and the film was actually shot on the island Brando owned, called Tetiaroa.
In 1989, I encountered Brando at South African singer Miriam Makeba’s opening at the Cocoanut Grove nightclub in the Ambassador Hotel. I asked Brando if he’d smile for my camera. He asked, “Why?” I told him that I’d never seen a photo of him smiling, which made him smile. Inside the club, I shot photos of him with Eartha Kitt and Jane Russell, and he showed my lens a lot of teeth, saying, “See? I’m smiling!” Those photos were seen around the world, which made me really, really “$mile!”

This week we have the perfect summer dessert .
Picture this: a bowl of warm, freshly baked Blueberry Cherry Buckle. Each spoonful blends tart and sweet, vanilla and butter, perfectly complemented by a scoop of cool, creamy vanilla ice cream melting into the warm dessert. It’s a slice of nostalgia, evoking memories of simpler times and Grandma’s kitchen.
A buckle is a traditional American dessert with a cake-like batter and fruit, usually berries, baked until the batter rises and the fruit “buckles,” or sinks, creating a rustic appearance. The name “buckle” comes from this effect.
This delightful buckle brings together the patriotic colors of red, white and blue, making it a perfect dessert for July celebrations.
Historically, buckles were a practical way to use up fresh, seasonal fruit, making them a beloved part of home-baking traditions. Blueberry Cherry Buckle
Yield: 4 to 6 servings
Total Time: 55 minutes
1/2 cup (1 stick) butter
1 cup all-purpose flour
1 1/2 teaspoons baking powder
1teaspoon kosher salt
1 cup granulated sugar
1 cup whole milk
1 teaspoon vanilla extract
1 cup fresh or frozen blueberries
1 cup fresh or frozen cherries
Vanilla ice cream, for serving
Preheat your oven to 375 F and position a rack in
the center. Place the butter in a 9-by-5-inch loaf pan and put the pan in the oven. Once the butter has melted, take the pan out of the oven.
In a large bowl, whisk together the flour, baking powder, salt and sugar. Add the milk and vanilla, stirring to combine. It’s OK if the batter is a bit lumpy. Pour the batter into the pan with the melted butter and gently stir with a spoon. Make sure to leave some visible streaks of melted butter, as these will create delicious, buttery, caramelized edges.
Evenly distribute the blueberries and cherries over the batter. Bake for 50 to 60 minutes, until the top is golden brown. Be sure not to remove it too early, as the buckle may collapse in the center. Wait until it’s golden and set in the middle. Let the buckle cool on a rack for 10 minutes before serving warm with a scoop of ice cream.
