Ingredients

Macadamia Nut Pancakes Fluffy, buttery pancakes packed with rich macadamia nuts, drizzled with maple syrup and maybe garnished with shaved white chocolate. These Macadamia Nut Pancakes are what Sunday brunch is all about!

Pancakes: ll Purpose Flour (about 2 heaping cups) 1 TBS Granulated Sugar 1 tsp Baking Powder ½ tsp Baking Soda 1 tsp Salt ¼ Cup Coconut Flakes 2 Large Eggs , separated ¼ tsp Cream of Tartar (optional) 1 ½ Cups Buttermilk 4 TBS Unsalted Butter , melted – plus more for cooking and topping 1 tsp Vanilla Extract Raspberry Syrup: (yield: 1 ½ heaping cups) 1 Cup Pure Maple Syrup 1 TBS Honey Butter , to taste Confectioner’s Sugar , for dusting

Instructions For the Pancake Batter: In a large sized bowl combine all the dry 022 022

combined. Set aside. In a medium sized bowl add egg whites and cream of tartar. Whisk/ beat until stiff peaks form. In a separate large bowl whisk the egg yolks, buttermilk, and sour cream together until well combined. While whisking, slowly drizzle in the melted butter. Using a rubber spatula carefully fold the whipped egg whites into the buttermilk mixture. Continue to fold until JUST combined. Add the wet buttermilk mixture to the dry mixture and fold again until JUST combined, being sure not to over incorporate. The mixture should be lumpy! Preheat oven to 250 degrees. Line a sheet pan with a wire rack insert. Cook the Pancakes: Heat a large heavy bottomed nonstick skillet or griddle over medium heat. Allow skillet to preheat for 5 minutes. Add a small pad of butter or a small drizzle of oil to the pan. Use a paper towel to whip and spread butter until there is none visible to the eye. Using a ¼ cup ice cream scoop or dry measure, scoop pancake batter and add it to the pan, up to 4 pancakes at a time, making sure not to overcrowd the pan. Cook until bubbles start to form on the top and the bottom of the pancakes are golden brown, about the second side until pancakes are golden brown and fully cooked through, an additional 2 minutes. Transfer to wire rack and keep warm in the oven as you repeat with the remaining pancakes.

Heavenly to enjoy. With the blueberry breakfast omelette, you’ll start the day with a spring in your step, or it will give extra zest to a heavenly dessert.

Ingredients 3 piece/s eggs 1 piece/s egg white 25 g cane sugar 1 piece/s lemon zest 100 ml Dream Oat Drink 1 tsp baking powder 1 pinch Vanilla 1 pinch salt 2 tbsp vegetable margarine 1 tbsp icing sugar Instructions Blueberry Compote: warm the blueberries with the rice or maple syrup for 2 minutes. Keep warm. 023

This will take about 2 to 3 minutes. Add the Dream Oat Drink, baking powder, vanilla and salt. Beat for about 1 to 2 minutes. Set aside. Beat the egg whites until stiff peaks form. Fold the whites carefully into the egg mixture. Preheat the oven to 200 °C. Heat the frying pan in the oven. Let then the margarine melt. Pour the egg mixture in the pan. Sprinkle the top with icing sugar. Cook the omelette in the center of the oven for 15 minutes. Divide the blueberry compote over the omelette and garnish with mint and lemon wedges. When savouring the omelette, pour a few drops of lemon on it.

Elite Interiors established their manufacturing department and showroom at 51 Stevens Drive in Msasa before opening a new showroom at the Bond Street Shopping Centre in Mount Pleasant. They not only manufacture custom designed furniture they also offer a full interior design service and they have a huge library of wallpaper and fabric samples for customers to choose from. We recently managed to catch up with Nikki and ask her a few questions.

Nikki: To become the leading brand in high end, high quality bespoke furniture and interior design. And to employ Zimbabweans and give them an opportunity and a platform to grow. N: Hard to choose - The Zozi Tunzi armchair, the pitman sofa and the zendaya chair. N: Design and fashion, worldwide trends and creative uses of materials and fabrics to produce an authentic product that speaks to Zimbabweans and Southern African countries. Making a mark as a woman owned business in a predominantly male industry.

N: We manufacture all our furniture, we outsource accessories and artwork.

N: to meet the demand of the market. I also follow international furniture and fabric houses, from Italy, America and Australia.

N: We have nearly 50 employees mainly carpenters, upholsterers and machinists, but also a production manager, accountant, marketing manager, sales assistants and two junior designers.

N: Not really, we just did the best we could - we came under pressure with our deadlines in August 2021 when half our team had Covid, but we did our best to communicate with the clients and they were all understanding.

N: Both showrooms have a variety of product, so i would go where ever is closest for you. We don’t stock the same pieces twice - so they are usually one off pieces. Custom furniture is about knowing what you want and getting the doing some research or looking at ideas always helps to give the assistants a direction to work from.

N: We’re about to re-launch our website with all our new designs and market into the diaspora to make it easier for our overseas clients to order.

You’ll even start using it when choosing accessories like throws, pillows, rugs, artwork, curtains, and even furniture in the right colours. Because the right colours allow the eye to move comfortably from one focal point to the next, you can make your home look cleaner, better, and more appealing. A prominent piece of artwork can become your focal point. You can select colours you like from the artwork (or a rug, couch, upholstery, etc), and look to the pattern’s whites and beiges for neutral wall paint options. When I was growing up I always wanted to own an affordable perfume shop and perfume bars across Zimbabwe.

T. Our perfumes are imported. All are oil based “Inspired by” good international brands. Our fragrances are exclusively blended in South Africa and sent directly to us.

Do not squash the top note by rubbing your wrists together! The top note needs to evaporate in order to get which will determine what the fragrance will smell like on your skin. Perfume is a personal choice. Try not to purchase a perfume for a loved one based on what you like. It is not an exact science. Oils in your skin can either work for you or against you. What smells good on others can sour on you. Try using a voucher option where a person can rather come in themselves and make an informed decision.

The Arches was opened in November last year providing a superb, new, multi-functional venue. It’s the perfect setting for a romantic wedding, or for conferences, workshops or any type of large gathering or events. Musical recitals are on the cards for the future. It’s currently being used as an art gallery space for a uniquely Zimbabwean exhibition. The gallery is presently showing the Cyrene collection entitled “The Stars are Bright”. It’s a rediscovered collection of extraordinary paintings and drawings by over forty young Zimbabwean artists that have not been exhibited together for almost 70 years. The artists attended Cyrene Mission School which was founded in the 1940s. This remarkable exhibition, featuring works from 1940 to 1947, has been lovingly curated by Lisa Masterson.

As such the landscaping around The Arches is almost as important as the building itself. Great care was taken during construction to disturb the forest as little as possible and minimise cutting down of the trees around the structure. In fact, it was so important to preserve the existing ecology that the pond in front of the structure had to be drained so that cranes could come in with minimal disturbance to the surroundings. The gardens around The Arches were designed and installed by landscape architect Kerry-Ann Goddard to mimic the natural front of The Arches lined with papyrus, reeds and grasses. There are a few concessions to more formal gardens with agapanthus,

refined The structure is basically on two levels with the lower level housing facilities like the air-conditioning equipment, the IT and electrical services and a storeroom. The lower basement level has been partially clad with local stone to help it blend into the site. Talented artisans from the surrounding area were employed for the cladding, and a large portion of the rest of the building work, providing much needed employment, experience and skills training. The upper level includes the reception area, the open plan multifunctional gallery space, a generous conference or meeting room, ablutions, a catering kitchen and an outdoor seating area on the balcony. The gallery has air conditioning to ensure a stable temperature (22 degrees) and constant relative humidity for the preservation of the art works. There are also three storerooms for high value artefacts. The interior of the gallery is highly adaptable with movable screens for hanging art work or displaying to a single open plan space for functions or divided into smaller demarcated spaces. It’s been oriented to face north westerly to maximise the views of the gardens and the the vast open room from the high clerestory windows formed by the different layers of the arched roof. The ceiling follows the high arched roof creating an almost cathedral like ambiance.

Work on the project began in 2019 with the demolition of an existing, underutilised squash court and civil works to prepare the site for the development of the dormitory block and the adjacent pool. The main contractor for the build was Hydro Power Contractors, a company that usually deals with hydro-power projects in the area. However as they are linked to Aberfoyle Lodge (through Eastern Highlands Plantations Limited) they took on the task of managing the project as they have extensive experience in all aspects of the construction business. Work on The Arches started with the ground breaking in July of 2019 with construction of The Arches starting in earnest in October. The completed restrictions made progress on the project a little slower.

Architectural Planning Studio has kept the palette of materials fairly restrained. The open plan gallery space has parquet wood block

verandah overlooking the pond has Eva-last decking which is a composite product that’s very durable and environmentally friendly. Internal walls have been skimmed and plastered and painted white in the gallery space to provide an unobtrusive background for exhibitions, while other internal walls are either whitewashed brickwork or off-shutter concrete. The ceiling in the gallery follows the arch of the roof and has been clad in slatted timber with hessian behind. The timber and hessian provide both acoustic and temperature insulation.

Brown Engineering supplied and helped install the steel skeleton as well as the cranked and curved Chromadek roof which was manufactured off site and then Aluminium provided the aluminium and glass clerestory windows as well as the folding doors which open the gallery out to the balcony. Revolta’s Roots provided the custom made teak interior doors while Nigel Joscelyne supplied most of the furniture including the chairs and tables on the balcony.

It is either talking about mental health awareness, seeking more knowledge on the topic, or just pure denial of the matter. What really is mental health, and is it anyone’s concern? When we talk about mental health, we are exploring issues concerning our mind. The mind is the engine behind everything that we do ; be it our physical life, our emotions, our work, and how we relate to others. All of these aspects, and our whole life is driven by our mind. Unfortunately the mind and its health is the often a neglected topic. 078

Generally, not that it is wrong, people would rather invest and spend on other things including expensive and regular shopping, food, or working too hard to mention but a few. Even though all of this is undeniably essential, the mind, which really carries all these aspects of our well-being, is hardly considered when it comes to being pampered. For us as Africans especially, we hardly believe in the importance of being mentally healthy. This comes from our background and narratives such as, “I am a man, I can never cry or be weak” or, “I am a woman, everyone else depends on me I cannot afford to focus on myself right now.” We believe mental health discussions and seeking therapy is a privilege, a want and not a need. The reality is that challenges, problems, sadness and pain remain the same and affect everyone. There is no discrimination, whether one is rich, poor, black or white, young or old, challenges and aspects that take away our peace of mind will somehow be there. How then can we take care of our mental health? One of the most important aspects is seeking therapy or counselling services. This is when a professional, without bias or judgment, listens and shares professional insight on certain issues.

There is no doubt about how much relief one experiences after talking to someone. It feels as though a heavy burden has been lifted off one’s shoulders. There’s peace accompanied by talking to someone, and knowing that you are not alone. Therapy doesn’t only happen when one is experiencing negative emotions and challenges, with joy and peace, and really just maintaining that tranquil state. Going for counselling is not simply having a discussion, it equips one with life-long coping skills; helps in managing some chronic mental illnesses, and can lead to and effectively contribute to overall happiness and productivity and hence achieving a state of being mentally healthy. Affordability keeps most people away from seeking therapeutic services. Questions often asked include, “Can I really afford this, or won’t I be throwing away my hard earned cash there are some free platforms where one can talk to someone without charge, and there are professionals in private practice who require a certain amount of money. Whatever the case may be affordability should not really be a factor to consider when it comes to seeking help. The world is slowly but surely opening up and warming up to issues to do with mental health. Resources, discussions and articles that can effectively lead to enlightenment are becoming more and more available. We are just required to be bold, take a stand and go out there and seek help. What can we say then is that now is the right time time for us to prioritise taking care of our minds. The world is evolving, bringing with it new challenges that sometimes steal our peace. We also have experiences in our past and our childhoods that continue to hinder us from leaping forward. I encourage all of us to seek help when we have to. It is not embarrassing, it is just as essential as taking a bath, eating and clothing. A healthy mind, is a healthy life.

Without masks, these areas are left exposed; combined with the average 90 times a day we unconsciously touch our face, the risk of transmission upon contact with infected surfaces only increases. After reviewing feedback from clients and also, paying close attention to client experience management practices established its own worldclass centre wholly dedicated to meeting the increasing demands of its customers. The TelOne Highlands Client Experience Centre was launched on the 3rd of November in 2021 by Dr. Jenfan Muswere the Minister of Information Communication Technology , Postal and Courier Services. The facility is an interactive space designed to ensure clients are served in an appealing and high-tech environment. TelOne managing director Chipo Mtasa said they were on a journey to centre the business around clients which is one of the company’s core values.

TelOne felt the need to set up the client experience centre after it became clear that they were lagging behind in terms of client experience with client demands shooting to at least seven years ahead of services capacity and capabilities due to Covid-19 related user patterns. The board chairperson, Mr Douglas Zimbango, said as TelOne they had to step up their client experience services as customer requests and demands were starting to overwhelm them. Highlands was particularly chosen for its large clientele base servicing in the ballpark of 200 000 customers for Voice, Fifth, ADSL, and VSAT services. Again, prioritising Highlands is an obvious choice since the outlet is TelOne’s top revenue earner. What is perhaps groundbreaking about this client experience centre is that they are exclusively using devices assembled locally by the Zimbabwe Information Technology Company, a TelOne owned company. This is an exciting development for it shows the dexterity and competitiveness of TelOne-trained technicians. The TelOne Highlands Client Experience Centre is only a prototype and TelOne promises to establish more customer experience centres across the country which will be tailored around the Highlands client experience centre.
