I
’ll never look at the number “2020” the same again. What once wa s the na me of my favorite Friday night show (“This is 20/20…”) will forever be associated with the year face masks became a must-have accessory, parties were avoided like the plague, and weekends became wide open. Certainly, I’m not alone in these sentiments either. The events of 2020 were trying and unlike anything any of us—even my 100-yearold grandma—have ever experienced. On the bright side, it’s the hard times, hard years, that force us to press pause and often where the greatest lessons are learned. When all is said and done, we will (hopefully) emerge from this experience stronger and more compassionate—with a few new hobbies and better hygiene! No doubt the year ahead is going to present its own set of challenges, but it’s a new year nonetheless, and a prime time to hit the reset button. And what better way to do so than in true New Year’s fashion by setting some health-related resolutions? Turn to page 28 for 15 ways to make 2021 your healthiest year yet. From “knowing your numbers” by getting bloodwork done, to taking a daily probiotic, and practicing mindfulness meditation, the underlying theme of each suggestion is the same: Self-care is health care. Roseville Police Chief James Maccoun retired on December 31, after 38 years of law enforcement service in the region, including 32 years with the Sacramento Police Department. PEAK PERFORMERS Need some inspiration for those lofty fitness goals you’ve set for 2021? These five all-star athletes will inspire you with their stories of determination, hard work, and success.
Husband-and-wife-team Seth and Lauren Totten are bonded over their mutual love of running. Lauren first discovered her passion for it while playing soccer and ended up starting her high school’s first cross-country program—which still exists today. Her first “magical” marathon experience was in 2014 at Grandma’s Marathon, where she ran a 2:35. However, her most special of accomplishments was running a half marathon mid-pack at six months pregnant. “I surprised myself and ran a 1:44; my personal record is 1:12,” she says proudly. Seth started running in order to become a better baseball player but realized the sport he actually needed to pursue was running. He ran collegiately, eventually finding the sport

of triathlon, and turned to marathons after marrying Lauren. “I love running because of the grind; to show up, work hard, and run fast…it’s part of my core,” he says. His best was running 2:14 and taking fourth place at the Dublin Marathon. “[It] really ignited a fire in me to continue pursuing the sport at the highest level,” he says, adding, “I still believe I have a much faster marathon in me.” With races being cancelled due to the pandemic both Lauren and Seth’s days are now looking different—especially with infant son Lachlan added to the mix. They’re both keen on showing him the joys of running and the great outdoors. “I’m able to help my son explore [and] that fills me to the brim,” beams Lauren.

Aspen Kohl Ladd, MMA Fighter, Pollock Pines Twenty-five-year-old Aspen Kohl Ladd says she used to be “a shy kid who needed something to do.” So, when she was 14, her father took her and her brother to an MMA gym. “I realized in the first week of training that this was what I wanted to do when I turned 18,” she recalls. Fast forward to today, and the accomplished MMA fighter for the UFC currently ranks third in the world for her weight class. “I love the competitive nature of the sport and the freedom fighting has given me,” she says. A lot of her time is spent in grueling training sessions—6-8 hours a day, five days a week. And when Ladd actually competes around three times a year, there’s an added 8-12-week “fight camp” to ramp up training. She’s now focused on building the business aspect of her career—during some downtime she gained due to a recent injury—with a website launch (aspenladd.com), seven-part docuseries, hiking vlog, and spokesperson gigs with companies like AllTrails and ESP Fitness. Despite the new opportunities, Ladd is eager to get back to fighting once she heals and hopes to have the title of “world champion” one day. In the meantime, she wants to “enjoy and embrace whatever this crazy ride brings.” Workout snack: I drink 1-2 gallons of water with 4-5 scoops of Optimum Nutrition’s BCAA and eat 4-6 times a day. Gear/gadget: Onx gloves for anything fighting-related and the AllTrails app. Athlete/role model: I admire success in general [along with] work ethic, commitment, integrity, and humility. Amitis Pourarian, Taekwondo Master and Former USA Taekwondo Team Member, Granite Bay Amitis Pourarian remembers a family friend taking her to Folsom Taekwondo Center in the ’90s (it still exists today!) and introducing her to the art of taekwondo. “I loved that it was an individual sport and you could be as good as you wanted to be. No one had to pass you the ball to make the shot; it was up to you how good you could get,” she says of the intricate sport. The four-time national champion and former USA Taekwondo team member also happens to be a seventh-degree black belt and the highest-ranking female in the United World Taekwondo Association. Preparing for her eighth-degree testing in 2023, Pourarian’s ultimate goal is to be a ninth-degree black belt. A lot of hard work goes into her success, including 100 push-ups every day and consistent training, along with the cardio kickboxing and taekwondo classes she teaches at her studio in Roseville, THE STUDIO Martial Arts & Fitness. And through her training, she’s seen it all—a torn hamstring and a broken wrist and nose—but says it’s all part of the game. “The only thing I would call a failure would be to not [compete]. When you compete—win or lose—it’s an experience, and we all learn from experiences,” she says.

Shadrack Kiptoo Biwott had humble beginnings. “Growing up in rural Kenya I had to run [miles] to and from school each day,” he says. Then, at 14, he asked his older brothers for a pair of running shoes—something he’d never owned. “My brothers were professional runners and they agreed to share their shoes with me on the condition that I go for a run with them. Foolishly, I agreed and ended up 10 miles from home, exhausted…[but] I ran every day after that,” he says. Biwott usually runs two or more marathons per year plus a few half marathons and has come in third and fourth in the Boston Marathon, as well as fifth and seventh in the New York City Marathon. His ultimate goal is to win a major marathon, which is not an easy feat. “On more than one occasion I’ve trained diligently for my race only to find myself too injured to compete on race day,” he says of the highs and lows of competing. But in the end, it’s the exhilarating feeling running gives him that keeps him going. “The wind in my face and the ground passing beneath my feet…to me running represents a sense of freedom.”

Visiting them, you can time-travel through our part of California—starting with the earliest inhabitants, the Nisenan, and continuing through the venturesome Gold Rush and railroad, all the way to space travel. IF THE SHOE FITS: HOW TO CHOOSE HIKING BOOTS When choosing hiking boots, there are two important factors: type and materials.
TYPE Hiking Shoes • These are low-cut, lowweight shoes with good traction. Great for day hikes on established trails. Day Hiking Boots • Mid- to high-cut, these provide ankle support and are more flexible and easily broken in than backpacking boots. Backpacking Boots • These are always high-cut and meant for taking on heavier loads. Stiffer but longer lasting and great for off-trail adventures.

A: First, the acupuncturist will sit down and have an initial consultation where they’ll discuss your immediate health concerns, look at your full health history, answer any questions, and provide a general understanding of how acupuncture and Chinese medicine may be beneficial. They’ll also provide an overall understanding of what to expect during the first session (length of time and what the needles are doing). Once prepped and ready to begin, they’ll look at your tongue and pulse, which is a typical part of a Chinese medical exam and may provide additional insight to one's overall health and the issue/s at hand. Next, approximately 10-15 needles will be inserted and retained for 30-40 minutes. During this time, the acupuncturist leaves the room, turns on calming music, and you’re encouraged to relax; some people even fall asleep. STEP 3: Deep Clean Here’s where the fun truly begins. Start in a space that’s likely the center of your daily activities: the kitchen. Since you’ve already decluttered, you can probably see which corners have been neglected since your last bout of cleaning. Grab your duster, vacuum, mop, and cleaning products and tackle the

Wild's Livery & Feed. “We could convert one of our successful pizza restaurants (Chicago Fire) into a BBQ house and provide diners some historical context for its location.” Pretty sound reasoning from over here in my saddle. Ownership has transformed the Sutter Street space into a top-notch smokehouse with some fresh décor, too, including murals and pictures of turn-ofthe-century Folsom. Thai Express // If you’re looking for a quick Thai fix in the Galleria area—try Thai Express! After my inaugural visit a few months back, I’ve been dining in (actually, outside) and picking up takeout ever since. And it’s not just the food—owner Thuy Tran is so effervescent and friendly you’ll feel like you’ve made a new friend within seconds of her greeting. I ordered online last time (Thuy “scolded” me for not calling and saving money), as we were once again on the cusp of indoor dining restrictions, and I decided not to chance it. My green curry with chicken was ready in minutes; the kitchen is fast, frenetic, fresh, and because it’s entirely family-run—very friendly. They consistently ask, “How is your food?” and always with a smile. The curry was mild, as per my request (I probably would go at least medium next time), and the vegetables had snap, indicating they were freshly cut and cooked. I also ordered shrimp spring rolls: maybe the easiest way to eat a healthy salad on the run. The rice paper wrap was bursting at the seams with lettuce, carrots, bean sprouts, cilantro, mint, shrimp, and house-made peanut sauce. Combine the sesame oil, soy sauce, ginger, sea salt, pepper, garlic, and green onions in a 13×9 dish. Place the tuna steaks in the marinade and coat evenly. Cover and keep in the fridge for 4 hours. Make aïoli by whisking all ingredients together. Cover. Refrigerate until ready to serve. Preheat a griddle or skillet to high heat. Sear the tuna for 1 minute per side. Assemble bowls with spinach, cucumbers, sprouts, and avocado. Drizzle with aïoli.

Vegetable oil, as needed 1 carrot, peeled and sliced into coins 2 celery stalks, large diced 1 white onion, roughly chopped Salt and pepper, to taste 8 cloves fresh garlic, crushed with side of knife 5 lbs. organic whole chicken 8 corn tostadas 1 cup refried beans 2 avocados, peeled and sliced 1 cup shredded cheese 1 cup salsa verde
*Cook chicken. In a pot large enough for the chicken to be covered with water and fully submerged by 2 inches, cover the bottom with oil and bring to medium heat. Add the carrots, celery, and onions; season with salt and pepper, stir, and cook until onion is translucent. Add the garlic and cook for 3 minutes. Add the whole chicken and cover with cold water by 2 inches. Turn heat to high and reduce to a simmer once it starts boiling. Cook for 1 1/2-2 hours or until internal temperature is 165°. Remove chicken from the liquid and set on a cooling rack to rest. When cool enough to handle, shred the meat. Strain the liquid and return to the pot, reduce by half. Store chicken stock in an airtight container for up to a week in the fridge and use it to make sauces, or to moisten the meat if it gets too dry. To assemble, spread beans on a tostada, followed by chicken, avocado, cheese, and salsa. Repeat with the remaining tostada shells and eat promptly. *Chicken can be made ahead of time.

Make pickled vegetables. Add coriander and peppercorn to small stock pot. Toast for 30 seconds on medium heat, stirring to avoid burning. Add water, vinegar, sugar, salt, and garlic. Stir until well combined and bring to a simmer. In a jar, pour pickling liquid over vegetables and allow to soften for a few hours or refrigerate overnight.
To serve, stuff artisanal bread/baguette full of roasted pork, pickled vegetables, and freshly chopped cilantro; drizzle with sriracha mayo, then grill in a panini press or on a skillet using a weight to press the sandwich down. *Available at Trader Joe’s; or make by mixing mayonnaise and sriracha to desired spiciness.

3 cloves fresh garlic, chopped 1 cup mayonnaise 4 (6 oz.) fresh albacore tuna steaks 1 large white onion, thinly sliced 1/4 cup soy sauce 1 cup rice wine vinegar 1/4 cup gochujang chili paste 1/4 cup chives, sliced
Mix garlic and mayonnaise together and coat albacore. Sear fish enough to mark each side. In a separate pan, sauté onions with soy sauce and rice vinegar. Slice fish and serve over sautéed onions with chili paste on the side. Garnish with chives.
Heat coconut oil in large pot over medium-high heat. Once oil is hot, add garlic, ginger, and onion. Brown for 3-4 minutes then stir in zucchini and sweet potatoes.
