M
otherhood has made me a complete a nd utter softie. Don’t get me wrong: I’ve always been sentimental and had a sensitive soul, but ever since giving birth to my baby girl, even song lyrics and sappy car commercials make me cry. I don’t know if it’s my hormones or because parenthood is such an emotional, joyous journey, but waterproof mascara is now a makeup musthave (when I actually wear makeup, that is!). Most recently, my eyes turned teary after reading this issue’s Get to Know article, “Super Women ,” where Ta ra Menda n ha sha res four moms’ stories of strength, success, and selflessness that’ll have you laughing and— if you’re like me—crying. And though every mom deserves to be recognized (it really is the hardest job in the world), the ones profiled here truly do rise about the rest. Turn to page 16 to read all about them, including their best words of mom wisdom (“Be present and take lots of pictures with your eyes; time flies by so fast.”)—and remember to honor your own mom come May 9. (Check out page 42 for a Mother’s Day Gift Guide featuring some great, locally found treasures.) If you prefer salivating over sobbing, flip to “Holy Cow” on page 55 where we spotlight over 25 of our region’s best burgers, including the beauty on our cover from Bricks Eats & Drinks. Having grown up on McDonald’s cheeseburgers, I must say, America’s quintessential comfort food has come a long way from the frozen patties and processed cheese of my past. House-made buns, farm-fresh fixings, and over-the-top toppings like bacon jam, garlic pickles, and fried green beans are just a sampling of what awaits. We even showcase a few meat-free offerings (for the veg heads out there) and highlight our favorite French fries. Another perfect burger pairing? A big, bold beer; for five STYLEtested and approved IPAs, check out “West is Best” (page 96). May also marks National Bike Month—a movement meant to showcase the myriad benefits of biking and encourage more —Hodding people to pedal places. Luckily, my daughter is just as obsessed Carter with bikes as my husband and me, which means family rides on the American River Bike Trail are a regular activity for us. Her easy-to-install, secure, and stylish seat (sold locally at Bob’s Cycle Center!) is featured in “Back in the Saddle” (page 40), along with 12 more cycling essentials. Congrats to the City of Folsom for being named the #2 “Best Lake Town to Live In” (based on affordability, weather, safety, economy, education, health, and quality of life across the U.S.), according to personal finance website WalletHub.
Construction on The Venue at Thunder Valley, the casino/resort’s 150,000-squarefoot entertainment venue has commenced. Once complete (early 2023), The Venue will feature 4,500 seats and host musical acts, comedic performances, and sporting events, in addition to providing a large event space for conferences and banquets. Local artist Silvie Park recently donated an angel wing mural to Historic Folsom. The existing Raley’s at 3935 Park Drive in El Dorado Hills recently transitioned to Raley’s O-N-E Market, whose name stands for “organics,” “nutrition,” and “education.” To that end, the store sells a highly curated assortment of wholesome, clean products vetted through a banned ingredients list. Another fun feature is their Raley’s Something Extra Health program, which gives loyalty program members access to classes and nutrition coaching at no cost. The company has plans to open an additional location in Roseville next year.
Fashion brand Fabletics (fabletics.com), which was co-founded by actress Kate Hudson and sells activewear for men and women, is opening a brick-and-mortar store in the Westfield Galleria at Roseville. The location is slated to open sometime this summer.

G
ayle has built an impressive resume all while raising two self-sufficient boys: Jack (25), who studied mechanical engineering and is currently finishing a paramedic program; and Max (20), a talented soccer player who’s majoring in finance. The Placer County Superintendent of Schools is currently on her fourth term and oversees 16 school districts, 150 schools, and over 75,000 students. “I lead by building relationships,” she says of her successful tenure. Her long list of accomplishments includes chair and board positions on countless education committees and receiving of half a dozen professional awards. What has your journey through motherhood been like? I’ve lived through the challenges of working, motherhood, and self-care. I [returned to work] after six weeks of maternity leave for my first child. I got my master’s degree in education thereafter and interviewed for an administrative job just three days after giving birth to my youngest, joining the new position when he was three weeks old. When I ran for county superintendent, my sons—five and nine—helped distribute flyers with a cute “Vote for my mom!” pitch. What’s your parenting style? I wanted my children to be well-rounded, so I paid attention not only to school but their social life and extracurricular activities. I didn’t want stressed-out kids who had unreasonable expectations that took a toll on their mental health. They’re educated, responsible, respectful, and caring adults—that’s a home run. What are your dreams for yourself and your children? I want my boys to be healthy and happy, and I want to make sure that I raised them to be responsible, respectful, and caring. And they are. Now, I wonder what type of parents they will be, and I hope they incorporate some of my parenting strategies when raising their own kids. Q&A
One thing that gets you through the day: I strive to be the best person that I can be for that day. Nothing more, nothing less. Best part about being a mom: I love moving from being an active parent of boys to now being a parent of adult children. Parenting still happens, just in a different way. Not-so-great part about being a mom: The stress. There were times when my boys were younger that life was stressful. Once I dealt with it, I became a better mom. Best mom advice: Love your kids but set boundaries. They may seem like angels, but they don’t always act like angels. Absolute mom must-have: High-quality childcare that you trust. You cannot succeed without it. When the going gets tough…Throw yourself a 30-minute pity party then get up, shake yourself off, and keep moving forward.

A
shlie is a self-proclaimed type A personality, which comes in handy when you’re the CEO—and co-founder—of antitrafficking nonprofit, 3Strands Global Foundation (3strands.com). “My faith grounds me every day and I believe in the power of the human spirit,” she says. She’s been awarded two State Resolutions and will finish her Public Leadership Credential from Harvard and begin her master’s in public administration from Cornell. To top it off, Ashlie is also a triathlete and mom to four (now five, with the addition of her daughter-in-law, Claire): David (24), who’s a numbers whiz in finance; Grace (20), who loves kids and is studying to be a teacher; Matthew (18), an adventurer and freshman at college; and witty Jonathan (15), a high school sophomore. What has your journey through motherhood been like? It’s been pure joy with lots of ups, downs, and laughter. Being a 30year cancer survivor gave me a different perspective on parenting. Each day is a gift, and we pack a lot into it. I’ve made parenting mistakes, but I learned to apologize. This helps my kids see that mistakes can happen but so can forgiveness. What’s your parenting style? I’ve used the love and logic parenting technique for 17 years. I’ve also used motivational interviewing, aka, listening. It meant I needed to learn to not formulate my response as my kids were sharing. It has been one of the toughest things to implement but helps foster trust and openness. Now, parenting is “letting go and letting them fly.” What are your dreams for yourself and your children? I want to continue to advocate for children and protect them from exploitation. [I hope my kids] are grounded in their faith, choose jobs that challenge them and fill their cup, choose spouses who make them laugh, and remain close to each other.

One thing that gets you through the day: Hope. It can get you through the toughest times and it sustains me every day. Best part about being a mom: Every part. I remember telling my mom, “I love this stage.” Then I would say it again and again. She laughed one time saying, “Ashlie, you’ve loved every stage!” Not-so-great part about being a mom: When natural consequences happen and your child really hurts from them. Best mom advice: Be present and take lots of pictures with your eyes. Time flies by so fast. Absolute mom must-have: Animals. They give kids a taste of responsibility and demonstrate what it means to have someone disobey and how to love them anyway. When the going gets tough…Take a deep breath, pray, and step forward.

get to know has a learning disability; and bubbly baby Bella (3). “All my kids are fully involved in charity and enjoy helping others,” she says proudly. Nikki helps run her daughter’s nonprofit, MJ’s Project (mjsproject.org), which provides necessities to teens in need. “I grew up in the foster system and lived on the street. There were never any resources available, so I know how vital it is to have basic life essentials and guidance.” Nikki also finds the time to volunteer with Friends of Folsom and is a member of the Fraternal Order of Eagles. What are your biggest accomplishments? My children! And I’ve successfully created a resource for over 300 struggling teens. I’ve overcome all my challenges, put myself through college, got my kids in, or set for, college, and have risen out of government assistance to be selfsufficient.
What are your dreams for yourself and your children? My dream is to own our own home that no one can take from us. (We just moved from low-income apartments to a house.) My dream for my children is to be successful to where no one can take anything from them! Q&A
One thing that gets you through the day: The thought of my kids being successful as independent adults. Best part about being a mom: I’m able to guide them through all their challenges in order to be successful adults. Not-so-great part about being a mom: Learning to accept that each child is their own person no matter what you set them up for or hoped for. Best mom advice: Teach them, guide them, and accept that they will be their own individual. Absolute mom must-have: Whiteboard, crockpot, and Instant Pot. When the going gets tough…Remember to be kind to yourself! Just know you did your best and they will always carry the best parts of you.

aphne is decidedly driven and diligent. She graduated college with a degree in biological sciences and proceeded to study health care administration and finance. She worked as a health care consultant and in the California State Legislature, then completed a law degree, and now works for the Kaiser Roseville and Sacramento Medical Centers. She volunteers her time on the McGeorge School of Law Diversity Board and sits on the board of KidsFirst (kidsfirstnow.org), a nonprofit that prevents child abuse. Serious stuff aside, Daphne loves a good book, traveling to Latin America, and creative architectural activities—having recently designed a Spanish tile fountain. “All [this is] just a fraction of my persona…I focus my time and attention on two beautiful children,” she says of Ethan (6) who’s precocious and loves Medieval Times; and Esme (3) who, Daphne says, is hilarious. What has your journey through motherhood been like? Motherhood challenges time management, patience, communication, and discipline. We learn so much about ourselves as we care for our children. I have had to balance my career and be available for my children, and I wouldn’t have it any other way.

What’s your parenting style? I believe setting expectations is key as well as appropriate boundaries. That said, it’s sometimes hard to adhere to when a cute three-year-old looks up teary-eyed asking why they’re in time-out after hitting their brother. What are your dreams for yourself and your children? I often reflect on what world my children will inherit. The dream for a kinder, gentler, more inclusive, and thoughtful world is worth aspiring to and starts within ourselves; opening a door for someone, saying hello to a stranger, or simply asking how someone is doing is the example I set for my children. One thing that gets you through the day: Knowing that I get to come home to my amazing, supportive, and funny husband, and our two little ones. Best part about being a mom: Being someone else’s support system and cheerleader in order to help them to become the best person they can be. Not-so-great part about being a mom: Always feeling like you’re not doing enough or could be doing more. Best mom advice: Trust your gut and know that you’re doing the absolute best. Your kids think you’re doing a fantastic job at being their mom. Absolute mom must-have: Coffee machine. When the going gets tough…I put myself in timeout or do an activity outside.

What has your journey through motherhood been like? I was a teen mom, going to college, then attempting to further my career as a young mom. Being a single parent can be overwhelming, and I’ve had to learn how to not be hard on myself. It’s vital to get out and breathe or dance in the rain. I’ve built stuff with my son and daughter and enjoy playing with my toddler. I love making memories.

The term calligraphy comes from the marrying of two Greek words, “kallos” (meaning beauty) and “graphein” (meaning to write). But calligraphy is more than beautiful handwriting—it’s an ancient art form practiced in cultures all over the world, like China and India, each developing its own aesthetic. Hand lettering had to compete with the invention of printing, but calligraphers today continue the tradition with mediums like wedding invitations, diplomas, custom artwork, and even tattoos. Meet six local artists who have made a business of it.

I love that words and art bring meaning to our lives. Words inspire, comfort, connect, and clarify— they express who we are, how we feel, and what we’re thinking. When an artist merges
design elements with letters, their creations give a new dimension to the alphabet.

I’ve always loved to write. When I turned 21, I received a calligraphy pen for my birthday and was instantly obsessed. I found it relaxing and could spend hours practicing. Calligraphy is such a stress reliever.
How did you develop your skills?
How did you develop your skills?
I learned calligraphy by looking at calligraphy books and copying the different styles. Over the years, I picked up more styles, using different type of pens. My favorite right now is brush calligraphy.
What’s your favorite service that you provide?
Teaching calligraphy classes. I was doing different types of classes until the pandemic hit and then transitioned to doing them on Zoom. Now that the weather is getting better and things are opening, I’m looking forward to getting back to in-person classes, even if they’re outdoors and distanced. I love watching people learn and fall in love with the art of lettering. My kids’ summer calligraphy classes are the most fun, because children catch on so fast, and I know they’ll spend less time on devices once they discover such a creative outlet.

In our world of fonts and computer-focused communication, hand lettering is such a warm, personal change. It humanizes our snail mail, our media, the invitations we receive, and the branding we see. No one can write exactly, precisely like anyone else. These days, it’s truly an art form instead of a stuffy etiquette expectation. I also love that it’s accessible to all—anyone can practice with different pens and create their own style.

I’ve been playing around with calligraphy and hand lettering since I was young. I volunteered to make place cards for special occasions at every opportunity. Practice makes perfect, as with anything we want to get better at. There are so many resources that can help someone learn to do calligraphy and hand lettering today: various pens with different tips, smooth writing tablets and graph paper, books, online courses, Instagram how-tos. I’ve used all of them at different times and am also guilty of wandering the “pen” aisle (and buying way too many!). Expensive pens, cheap pens…I’m obsessed. I recently bought my daughter a kids’ hand lettering book, so we’ll see if that sticks and this all gets passed on.
What’s the most interesting project you’ve worked on so far?
Watching snail mail explode during COVID-19 has been a huge bright spot in the last year. Knowing that I’ve been a part of encouraging people to connect with others and forge connection during such an isolating time feels like a real accomplishment. It only takes one person telling you, “That card struck a chord with my sister when she got it,” and my whole week is made.

I’ve always loved everything made by hand. Signs, ephemera, movie posters—all these were things I collected and fell in love with when I was little. I was always into being a pen pal, so I spent my formative years obsessing over stationery, postage, and fancy scripts to delight friends and family. When I was older, I incorporated lettering into my art, and my high school art teacher would laugh at me and was tickled. In college, I worked as a sign artist at Trader Joe’s, which is what really ramped up my appreciation for hand lettering and introduced me to calligraphy.
What’s the most interesting project you’ve worked on so far?
Probably Mary Kate Olsen and Olivier Sarkozy’s wedding stationery. What made it so interesting (besides that I grew up a literal cardcarrying member of the Olsen twins’ fan club) was that I didn’t know about the event until the week of. It was Thanksgiving week, and I didn’t know it was for a wedding the whole time! I was told it was for a fancy Black Friday dinner for their fashion business. Then, the day after their wedding, my friend texted me about them having bowls of cigarettes at their secret wedding, and I told her to my surprise I did their wedding stationery without knowing there was even going to be one!
What’s your most notable achievement?
Working on the wedding of a Vogue art director was a real “pinch me” moment. Other than that, I’m lucky enough to connect with people, make art every day, and be paid enough to travel and have a balanced life. Keeping it a small boutique business where I still do everything by hand, with care and quality—in a world where everything is about automation and cheap mass production—is an achievement I’m proud of.

As a secondgeneration lettering artist, I grew up watching my late father, a sign painter by trade, paint perfect strokes. Drippy 1 Shot paint cans, the trail of wet paint that followed his brushes so skillfully, and the seemingly endless artistic possibilities of the alphabet captivated me from a young age. There’s a sense of nostalgia when I see calligraphy and lettering art. It wasn’t until I was married with four kids that calligraphy became a real passion pursuit of my own. I found my father’s lettering books while digging through my art supplies one day, and the rest is history! Calligraphy allows me to express myself and decompress from the stresses of mom life. I discovered a community of artists online as well who share the same crazy passion for letters. I love that calligraphy is meditative, peaceful, and cathartic. It connects me to my father, to history, and forces me to slow down and breathe deeply.
What’s your most notable achievement?
I’m most proud of teaching myself how to plan and teach workshops, including my first one at West Elm in Roseville. It was all worth it when one of my students told me she had been having a very rough year and was trying to find ways to manage her anxiety. When she left my workshop, it felt like she had just walked out of a massage. She was so relaxed and happy and couldn’t wait to work on her calligraphy! That feels like the ultimate achievement to me.
What’s your favorite service that you provide and why?
I would say the most meaningful and humbling project so far are script tattoos. The fact that someone wants to put my handwriting permanently on their body blows my mind. It’s such an honor and fills me with so much gratitude! I also really enjoy window murals—they’re such a fun way to elevate a brand and attract customers’ attention.

So, does this make me qualified to review gear? While not a “reviewer” per se, I am an enthusiast, so I want to introduce you, or possibly reintroduce you, to a hobby of mine that’s given me great pleasure throughout my life: Listening to music; more specifically, to records. You’ve likely seen stories over the past few years about LPs—vinyl if you will, making a big comeback. Well, it’s true—LPs now outsell CDs in the retail world, and for good reason: They’re hip and sound spectacular! However, listening to records is a process, at least it should be. If you want the best from them, they should be played on high-quality equipment and properly taken care of. You clean your records and treat them like the jewels they are. It’s an activity I find cathartic; it helps set the mood and is part of the excitement of listening to wellrecorded music.

The reason I say “well-recorded” is because there’s a killer on the loose, and little to nothing is being done. The killer’s name? MP3. Now, let’s be clear; we’ve allowed this to happen, all in the name of convenience—no different than frozen pizza or drive-through car washes. But MP3s are a travesty when it comes to quality. These simple little music files, being pumped into your ears by headsets that have no business even being called that, have reduced music to being a convenience, and its now fooling generations into thinking that this is what music sounds like. It’s like being told a Hyundai Elantra Sport is going to deliver a Porsche 911 experience. It’s not— it’s marketing. At this point, you may be asking yourself, “OK, so where do I start?” I’m glad you asked, because I want to share

with you the simple, sheer delight of quality listening. Part of the fun of this hobby is finding gear you like: the looks, the functionality, the overall design, and the value. There’s a lot of product out there, so before I get to the turntable (TT), let me recommend a few products to pair with your TT—gear that offers both great value and sound. Think of it as that bottle of Pinot Noir you bought for $10 that surprises the heck out of you. First, you’ll want an integrated amp, and my choice would be the NAD C 316BEE (nadelectronics.com). It’s under $500, incorporates a phono preamp section, and simply put, sounds great. Speakers are such an objective thing to recommend. There are about 30 times the number of speaker brands and models than there are autos to choose from, and in the end, there are many great-sounding speakers—it comes down to your ear, the room you’re listening in, the kind of power you’re driving them with, and the kind of sound that engages you. Here are a couple of products I own (or have owned), that'll serve you well without breaking the bank. The original KEF LS50 was released more than a decade ago and quickly won just about every major award on

the planet. I own a pair and love them. KEF decided it was time to make a good speaker even better and recently released the LS50 Meta (us.kef.com). It’s a stand mount speaker that delivers astonishing sound and at $1499 SRP is considered by many reviewers one of audio’s best values. Next up, a floor standing speaker that comes from another company I’ve lived with in my home and office for more than 20 years—Bowers & Wilkins, or B&W. This company’s speakers, like KEF,are regarded in the industry as one of the best brands around. They offer superb engineering, quality of build, and sound that—when set up correctly—will make you think they have disappeared. The B&W 603 S2 Anniversary Edition (bowerswilkins.com) is a floor standing speaker that will take you to places you never dreamed you could go for $2,000 per pair. Impeccably designed and engineered, used exclusively at Abbey Road Studios (yes, that one!), B&W will deliver outstanding sound and is another product that delivers an experience way beyond their cost. If you want to spend less but still want quality sound, check out the ELAC brand (elac.com). Now that you’re dialed in to the key parts of your new system, its time to find the right turntable to start enjoying your new/old hobby of listening to records. Turntables have seen a massive resurgence over the past decade, one that few expected, but one that is welldeserved. Do LPs played on a TT sound better than other mediums like a CD or digital/streamed files? My answer is yes. If this is the first TT you’ve bought in more than 30 years, or ever, here are a few things you should consider: Buy a turntable that is “plug and play”; one that matches well with your integrated amp or receiver (has phono preamp); and, finally, one that comes with a premounted cartridge—the device that houses the stylus and translates the information from the record grooves into the signal that turns it into music via the preamp and your integrated amp.
Your choices are many, but again, a few stand out. My journey back to listening to records started when I bought a “plug and play” Rega Planar 1 (rega.co.uk). Listening to a good record for the first time on the British made Rega took me to that place I realized I had been missing. And so I jumped back in, finding my old records and jumped back in and cleaning them, which in and of itself is part of the romance of records and a mustdo if you’re going to really enjoy yourself and the music. Three albums in, and I was hooked again, just like that day in 1975 when I bought my first “good” stereo system. Enjoying the Planar 1 as I did, I was able to get my hands on another turntable, the MoFi
StudioDeck Foundation Turntable (mofielectronics.
com), that did something I never expected—it took the pre-set turntable concept to a level, and at a price I never thought possible. It’s not fair of me to compare the MoFi at $999 to a $500 TT. That said, while the price may be double, its performance quotient at this price point is hard to top. The “made in the USA” MoFi is, in my mind, the best pre-set TT you’ll find at under $1,000. Everything about it exudes quality—the design, the build, and the sound. The MoFi brand has been producing high-quality LPs and CDs for discerning customers for a long time, and their foray into the hardware world has been heralded as nothing less than terrific. With two turntables in the line, the list of positive reviews keeps growing. This is that rare, value-oriented turntable that deserves to be the centerpiece of your system. If my love of records was reborn with the Rega, the Mofi StudioDeck Foundation Turntable has me, as Bob Dylan said so beautifully, “knockin‘ on heaven’s door.”

Claudia’s philanthropic endeavors include the Folsom Historical Society, The Chan House, The Murer House, The Nevada Art Museum, The SF MOMA, The Crocker Art Gallery, Folsom Lake Symphony and Folsom Lake Civic Ballet. y name is Jennifer Tommasini, the owner/director of The Gift of Kids Daycare and Preschool. I’ve lived in El Dorado Hills for 19 years and I have four children.
My journey into the childcare field began in 1999 when I was left disappointed in my search for ”the right” childcare for my son. After going through many programs and with my daughter on the way (now attending Chico State), I began to reflect upon my family’s needs. It was then that I changed my career focus and ventured into childcare. My mission is to provide a nurturing, loving, safe and educational environment for every child. On June 10, 2000, I opened my home to three newborns, two 2-year-olds and a 3-year-old. I immediately knew that this was

my calling. Everything felt so natural. I went back to school full time for early childhood education and started my own preschool program that incorporated home-cooked meals, planned outings, and practiced an advanced curriculum with structured activities that fostered learning.
In 2007 I opened a small pre-school with 60 families while continuing my in-home daycare. In 2010 I expanded again, bringing my preschool and in home-daycare under one roof - The Gift of Kids Daycare and Preschool. It has been a dream to serve so many children and give families the satisfaction I never felt when my son was in daycare. I pride myself on offering a safe place for families to bring their children. The Gift of Kids currently has 32 wonderful, loving, professional teachers and over 200 children. We provide care for infants, preschoolers and private kindergarten. Although the size seems large, the classrooms have a homey feel where the teachers truly care about each child’s development. We work together on communicating with parents and developing each child’s individual needs. It delights me that so many children have the opportunity to experience our program. O
n one of our area's late winter, faux-spring days, I felt the need for a soul-warming bowl of chicken noodle soup—Vietnamese style. You know the one: pho (pronounced fuh), Vietnam’s national dish whose beef-based versions boast a bone broth cooked for hours with star anise, ginger, fish sauce, and a few other conspirators, alongside rice noodles, herbs, and meat. When combined, the resulting bowl of pure umami is incomparable to other noodle soups. I was prepared to eat to-go in my car, or perhaps in a park somewhere, but as luck would have it, Pho Mimi was allowing indoor dining. I decided to sample several items, beginning with their fish sauce-glazed chicken wings. To my surprise (and a little concern), the wings came out in minutes and were quite good: lightly coated with just the right amount of salty/sweet sauce and crispiness to make me ponder how they were cooked so quickly.

I wanted to try one of my other Vietnamese favorites, bún thit nuáng (rice vermicelli with grilled meat) or #33 at Pho Mimi. I ordered the pork, and it was fantastic. The combination of marinade ingredients (lemongrass, fish sauce, and sweet, thick soy HOURS: 10 a.m.-8 p.m. (daily) sauce) and pork charred over an open flame was TRY THIS: Chicken Wings, irresistible. Served atop rice noodles with pickled Shrimp & Pork Spring Rolls, Vietnamese Beef Salad, carrots and daikon threads, lightly crushed peanuts, Pho Mimi Special Pho, Bánh and cilantro, it’s one of the most underrated dishes Mì Sandwich, Vermicelli (if done right) at any pho house. Bagel & Bean // Another brave pair of entrepreneurs have decided to say “Now’s the time!” and open their business, despite the crazy COVID-19 climate we’ve endured the past year. And judging by the response, Bagel & Bean owners Cory and Heather Smart’s gamble has been a success. Their morning rush consists of lines out the door, and lunchtime is only slightly less busy. The reason for all of their sudden popularity is two-fold: quality bagels and Heather’s knowledge of the restaurant industry, which has helped guide them through an uncertain path of shutdowns and mandates. Cory didn’t just jump into the bagel business and start selling someone else’s product; being a trained chef made the transition to baker easier, although not without research and some trial and error. Seriously, these are the best bagels I’ve ever had, bar none. Couple a fantastic bagel with the “bagel-wich” (bagel sandwich) concept they loved from a spot in Humbolt County, throw in some cheffy touches, and you’ve got a success story unfolding in our neighborhood. I sampled a few sandwiches from their “Local Favorites” selection and wish I could’ve tried more: Veg Out (fresh-baked bagel topped with avocado, tomatoes, cucumbers, red onions, carrots, and sprouts, topped with toasted everything bagel seasoning; Pepperoni Pizza (marinara, mozzarella, and pepperoni on the bagel of your choice), and Thai (peanut butter, cucumbers, carrots, jalapeño jelly, and green onions with your choice of bagel). All were delicious and huge. B&B also sells their house-made cream cheeses to go. BIKE SAFETY TIPS CHECK YOUR EQUIPMENT • The seat should be adjusted to the proper height and locked in place. • Make sure all parts are secure and working correctly. • Check that the tires are inflated properly. • Make sure the bike is equipped with reflectors on the rear, front, pedals, and spokes. • A horn or bell, rear-view mirror, and bright headlight also are recommended. PLAN TO BE SEEN • Wear neon, fluorescent, or other bright clothing. • Whenever possible, ride during the day.
