After organising the rescue of over 4000 Ukrainian orphans, Professor Stefan Allesch-Taylor could well be the Isle of Wight’s own Oskar Schindler, but we wanted to know how he does what he does and how the British people can help more.
February 2022 will undoubtedly go down as one of the most heartbreaking periods of the 21st century so far. Just as the Covid-19 pandemic was starting to die down, Europe was plunged into another crisis when Russia invaded Ukraine. But when the going gets tough, the tough get going, and this was when island resident Professor Stefan Allesch-Taylor and US NGO Aerial Recovery swung into action. The problem is, amid such destruction and devastation, how do you know where to start?
Named as one of the Evening Standard’s ‘Progress 1000’, which lists London’s most influential people, and being awarded a CBE for his work in charity, philanthropy and social impact, Professor Allesch-Taylor is well placed to understand the needs of the Ukrainian people and he quickly identified one especially vulnerable group — the tens of thousands of children housed in the 700 ‘orphanages’ that exist across the country.
It isn’t surprising these children are among the most vulnerable during the crisis, but what is surprising is the level of danger they are facing, which goes far beyond just physical risk. “These kids were in children’s homes reminiscent of the British Dickensian style of orphanage. They are potential targets and, sadly, many have become victims of sexual assault, human trafficking, and a myriad of other horrors, too. Whatever you may have read about their experiences, it’s likely to have been worse.”

Making them Stateless or stripping them of their national identity is an appalling option and one that perhaps plays into the hands of anyone seeking to eliminate Ukraine as a Sovereign State. These are Ukrainian children, they speak Ukrainian, they are Ukrainian, and their sense of identity and belonging is in Ukraine. Stability and continuity are the keys to a child’s wellbeing. Of those youths who were evacuated to other countries, it is estimated more than 3,000 are missing. That says it all in my view.”
Professor Allesch-Taylor works with the most vulnerable Ukrainians in orphanages across the country.
Working as the Chair of Operations for Aerial Recovery UK, in partnership with the Ukrainian Military Administration, Professor Allesch-Taylor has overseen former Special Forces veterans from the US not-for-profit group, Aerial Recovery. The group is dedicated to providing relief in areas devastated by natural disasters or war, such as Ukraine, and has been carrying out missions “under the authority of, and in partnership with, the supervising authority of the Ukrainian Military Administration.” To date, Professor Allesch-Taylor and Aerial Recovery have rescued over 4000 children and their carers from areas of Ukraine that are currently under attack from Russian forces. The plan that has been so successful is unusual in that it involves keeping children in the Ukraine as a priority. He explains: “The usual moves are for children to be evacuated to ‘safe’ territories. In the earliest days of the war this involved unauthorised but well-meaning people taking these children to foreign countries or refugee camps. The latter are not conducive to living, more surviving, and they should

be the very last option considered rather than the first. I firmly believe that right now the children need to remain within their own country (Ukraine) in districts (Oblasts) not directly in the line of missile fire or Russian Army
Ensuring Aerial Recovery worked closely with the Ukrainian authorities was crucial for Professor AlleschTaylor. He says, “Well-meaning folks running around with their own agendas (no matter how worthy they seem), are part of the problem — and not the solution — in fast moving ‘threat to life’ situations. As Chair of Operations for Aerial Recovery UK, I had a wide brief and front-line engagement in Ukraine, which allowed me to see and understand exactly what was needed and what was going on, rather than be told second hand. This ‘on the ground’ experience remains invaluable to my on-going work in Ukraine.”

Professor Allesch-Taylor is adamant in his approach that Aerial Recovery is there to aid the Ukrainian Government, not tell them what to do. “It is important not to ‘overstep’ or engage in politics beyond policy and government support where applicable. It isn’t up to us [as outsiders] to implement a solution. It isn’t up to us when this horror ends.” Professor Allesch-Taylor’s work has taken him to some of the most devastated areas of the world, a far cry from the beautiful Isle of Wight that he now calls home. “I was educated in Southsea and Yorkshire – in that order. I love Yorkshire and the Dales especially, but I do think if you’ve grown up by the sea then it’s hard not to gravitate back to it. There is world class beauty on the Island - its microclimate, rolling fields and the many beaches are all wonderful.” Despite his globally impressive career, Professor Allesch-Taylor speaks about the people of Britain with a quiet esteem and empathy: “Everyone on the Island has been unequivocal in

When I’m asked what the British public could be doing to help, I am always mindful that, whilst it’s not comparable, the cost of living crisis is nevertheless extremely stressful and many people are suffering due to lack of opportunity and certainty in their own lives and that of their families. “As a nation we have incredible generosity and intolerance for injustice, wherever we find it. For people to support Ukraine, I would ask that you don’t forget about it, that you use social media to support the Ukrainian people and that you praise the actions of those in power who represent us when you see them helping Ukraine in our name. Beyond that, in our own astonishingly troubling times, take care of yourselves, your families and your own communities.” November and December 2022

“I’d always enjoyed designing our own Christmas card each year to send to friends and family, so I decided to do some more illustration and use my big printer to create a set of four different cards. As no-one could get out to buy anything because of the lockdowns I put a board up outside the house and soon enough people were calling and emailing to place an order, they seemed to really like them, so I did some more and then some more and then some more!” Inspired by train trips around Norway and city breaks in Copenhagen, Kathy’s first set of designs (including an owl, reindeer and moon-gazing hare) had a distinctly Scandinavian feel, combining her love of nature with the patterns and colours found in Nordic folk art. “I’ve been to Scandinavia about four or five times and have always felt an affinity with the place, the lakes, the mountains, the sea and the people’s respect for nature and the environment. I keep the locations I visited in my weather app so I can keep an eye on them and see if it’s still raining in Bergen or Flåm.”
An airy upstairs studio in Gurnard’s Cockleton Lane, today filled with rays of winter light, is the inspiring workspace of illustrator Kathy Pilcher. With a balcony on hand, views down to the Solent, and the call of geese in the distance it’s a pretty unbeatable setup, but for now the scratch of a pencil and whirr of a jumbo printer signal that Kathy is hard at work. For the past 23 years, since the birth of daughter Lauren, Kathy has been a freelance graphic designer specialising in bespoke wedding stationery. She creates colourful designs for couples from Norway to the Netherlands, tailor-made to their exact wishes and desires (which for many American clients involves a Lord of the Rings theme, apparently). However, with the arrival of the pandemic in 2020, and a flurry of wedding cancellations and postponements, Kathy suddenly had time to pursue something different: Christmas cards. For each design, an animal took centre stage, surrounded by intricate (and very accurate) botanical illustrations to reflect its habitat or environment. “I look closely to find the patterns in nature, in plants, in the way things grow and use old reference books to ensure I get the botanicals just right. Then I create the repeat patterns which are an important feature in traditional folk art.” Following the success of the first year’s cards, Christmas 2021 saw the addition of four new winter birds to the range: a robin, blackbird, pheasant and bullfinch (the latter known as a dompap in Norway where it’s as festive for them as a spoon of brandy butter is for us in the UK). And this year, a vibrant nutcracker figure surrounded by holly sprigs, baubles and candy canes will be joining the ranks too, just in time for the Christmas season.

“To start a new design, I begin by getting ideas together and sketching in a sketchbook. Sometimes I can see the design and the colour scheme in my head before I actually do it. After doing my research, looking up grasses or seed heads, I’ll take my sketch to the computer and draw over the top with Adobe Illustrator. Each element is drawn separately and pulled together afterwards to create a circular design, before being printed, hand cut, folded and packed right here in my Gurnard studio.” No longer just a local secret, Kathy’s cards are now ordered online by customers in Germany, Sweden and Iceland, whilst stockists include a Scandinavian-themed shop in Somerset and a design-led retailer and coffee bar in Stornoway. Her designs have also been used in embroidery kits created by Cumbrian brand Bothy
Threads, and sustainably made tote bags and t-shirts featuring her wolves and puffins are printed in Freshwater by Teemill. As we head back down the teal-coloured stairs ready to depart, we’re sure that with Kathy’s love for patterns and colour there will be many more designs to come. “I just feel so inspired by patterns, I love the style of William Morris and looking at old wallpapers. If I’m ever visiting a National Trust property, whilst everyone else is looking at the architecture or the fountain outside, I’ll be the one examining the curtains or taking photos of the wallpaper.”

Style spectrum Ainsley Bennett Born on the Isle of Wight in 1977, Ainsley grew up with an aptitude for art and after leaving school spent several years learning the skills of watercolour painting, producing many scenes from around the Island. He went on to win Landscape Painter of the Isle of Wight in 2004.
Binary Haze, Ashey I took this photo back in 2015 on a cold misty morning during darkness. It went on to win the ‘Skyscapes’ category at the Astronomy Photographer of the Year Competition in 2016. It’s still one of my favourite photos and it shows the Moon and Venus shining brightly through the low-lying mist framed by the two trees.
After purchasing a DSLR camera in December 2012 Ainsley turned his hand to photography, which is now his main creative passion. He incorporates many of the Island’s landmarks in his images and often waits for specific weather conditions to capture images in a different light. Ainsley frequently
heads out at night to utilise the incredibly dark skies we have on the Island, which are perfect for capturing the Milky Way. “From sunrises and sunsets to landscape astrophotography and nature, I am at home capturing the Island’s beauty.”

St Catherine’s Oratory I remember trekking up the side of St Catherine’s Down in heavy frost and thick freezing fog to St Catherine’s Oratory on an early winter’s morning. At times visibility was only a few feet but, after reaching the old stone building, I waited until there was just enough light from the rising sun before taking this shot.

The wreck of the SS Carbon I’ve photographed this wreck at Compton Bay, which is only accessible on very low tides, several times over the years. This image was taken with a very long exposure to smooth out the movement of the sea, isolating the subject from its background. Compton Bay is great for winter walks along the sandy beach.

An 0430 start on a winter’s morning was needed for this photo as I wanted to avoid the unwanted footprints in the snow from the local walkers who often set out very early. I remember taking this during blizzard-like conditions with my hands becoming numb, but it was so worth the effort to get the shot.
This photo shows a snowy scene looking towards Freshwater Bay and Tennyson down on a crisp winter’s evening. It’s not often we get snow, so every opportunity to get a photo like this is a real bonus. Freshwater Bay is my favourite beach during the summer months but is also a nice place to visit during winter storms.

alking through the early evening streets of Cowes, it’s hard to miss the inviting grey exterior of Gastronomy, especially with the rattle of ice cubes and chink of glasses emanating from behind the bar. Inside, in front of a wall of sparkling bottles and busy blowtorching her latest creation, we

Working in hospitality since the age of 16, pulling pints since 18, and doing shifts at venues that made up to 1,000 cocktails a night, there’s not much she doesn’t know about drinks, mixers and the optimum number of lemon wedges to have on standby. Once the sparks have settled and the drink is served, she

what it felt like!” From her first espresso martini at Revelator, Diana moved over to margarita-making at a Mexican restaurant, before being offered a job at Twisted Lemon, a specialist cocktail bar just a stone’s throw from Brighton beach, where she picked up speed and the art of free pouring. “Those early days
were really intense, sometimes I’d have to hug four cocktail shakers in my arms and shake them all at once just to keep pace, but it built up my confidence and I’m so glad about that”. Now she’s back on the Island and, having been given ice buckets full of creative freedom by Gastronomy, her brand new cocktail menu has just
arrived - the first she’s ever developed and written completely on her own. Shifting to more seasonal specialities, Diana’s comforting wintery concoctions include a Jamaican Biscoff latte (which combines spiced Jamaican rum, Baileys, hazelnut, milk and hot espresso) and a blood orange and cherry sangria (including a generous splash of Italian cherry-flavoured Stambecco liqueur). If classic cocktails are more your thing, don’t worry, they’re all available too, including a Negroni based on a recipe Diana picked up from a little bar in Rome. “I work really closely with the kitchen, sharing ingredients all the time, often I’ll be running in there like ‘guys, I need chillies!’. My partner is the head chef actually, and we use rosemary, ginger and lemongrass grown by his mum in her garden in Cowes. The kitchen makes some of my cocktail garnishes too like the chocolate orange shard for my Old Fashioned, so it’s great to have their support.” Since Diana’s arrival at Gastronomy, new spirits have hit the shelves, such as Cazcabel Honey Tequila — “I had to insist on that one” — and a Caribbean rum label that put a share of their profits into marine conservation. She’s also brought with her a renewed focus on the environment — single-use paper straws are out and reusable metal straws in, there’s no plastic behind the bar and all cocktails can be made vegan (swapping egg white foams for ones made from chickpea-based aquafaba instead). Whilst keen to innovate and experiment, Diana is certain that some traditions are not to be messed with. “An espresso martini has to have three coffee beans on top representing health, wealth and happiness. If I see someone make this

cocktail and there’s only one or two, I’m thinking which of those traits are you missing from your life? That said, there’s nothing more exciting than getting a bottle of something new, looking at the ingredients and imagining all the possibilities for pairing.” Although it’s hard to leave her welcoming aura and infectious enthusiasm, it’s last orders for us as Diana starts a new shift. With minutes to spare, she tells us how she intends to continue making Gastronomy’s drink offer the best it can be, to keep learning and keep travelling too. “For now, I’m really happy to be in a lovely independent restaurant using amazing local ingredients. It’s also just great to be on the Island, surrounded by the sea and giving me the opportunity to get back into sailing and surfing again.”

The festive season is all about gathering and rekindling relationships with friends and family, and if that happens around some gorgeous festive food, then so much the better. We’ve brought together some fabulous festive foods, delicious drinks, mouth watering menus and decadent recipes to make sure you feel full of the joys of this sparkling season in ever y sense!
Cantuccini by Viviana at Caffè Isola Cantuccini have a distinctive crunchy tex ture, due to the double bake, and a pleasant almond taste. They are typical of the Tuscan tradition but are baked ever y where in Italy. Cantuccini are enjoyed at any time of the day. Children have them as a snack or with a cup of milk, grown - ups love them with their cappuccino in the morning, but their best match yet is at the end of a festive dinner with a strong desser t wine, typically Cantuccini and Vin Santo.

2 eggs
In a mixing bowl, beat together sugar and eggs with an electric whisk. Add flour and bicarbonate and mix until it resembles breadcrumbs.
170g caster sugar 280g plain flour 1/2 tsp bicarbonate of soda 4 0g butter, sof tened 70g whole almonds Zest of 1 orange 1 tbsp honey 1 egg yolk for brushing
Now add butter, orange zest, and honey, and mix. Divide the dough into 2 small oblong loaves, brush them with egg yolk and bake for 20 minutes at 190°C. Take out of the oven,
leave them to rest for a few minutes, then, once slightly cooled down, cut into 1cm thick cantuccini. Return to the oven for a fur ther 5 minutes at 200°C. Take out of the oven and let them cool down completely before eating.

Gold, Frankincense and A Burnt Honey Crème Caramel If you’re looking for an early Christmas gif t, you can’t do much better than to take a seat at Salty ’s and tuck into chef Tom A xford’s newly unveiled winter menu. On a recent Yarmouth pitstop, we dropped by to see Tom as he prepared a three course preview for our eyes only, using seasonal ingredients and his much -admired culinar y know- how. First to leave the kitchen was a star ter of beetroot- cured cod with pickled fennel, kohlrabi, Granny Smith apple and a caper vinaigrette — a dish there
sommelier recommends is enjoyed alongside a glass of 2021 Kim Crawford Marlborough Sauvignon Blanc. Up nex t was a melt-in -the - mouth grass-fed Scottish ribeye steak — cooked on the bone, topped with a herby Café de Paris butter and accompanied by seasoned chips and a roasted Roscoff onion. New wine glasses appeared and this time a 2020 French red — Fleurie Domain Berrod, Beaujolais — was poured to complement the steak.
Finally, just as the 2017 Château Baulac Sauternes (a sweet French wine from Bordeaux) hit the table, so did desser t — burnt honey crème caramel with tarragon and blackberr y. Ser ved with true precision, a honeycomb lattice sits alongside the crème caramel and a sprinkle of fresh tarragon leaves works to accentuate the burnt honey and blackberr y flavours. Outstanding as usual, we can’t wait to see what Tom’s upcoming Christmas and New Year ’s Eve menu holds.

Established in 2021 by chef Catherine Batchelor, the aim was to “make things that are simply better when handmade and that will appeal to cooks and food lovers, things that are both interesting and useful, rare treats or hard -to -find ingredients”. You could plump for the sweet and boozy prunes in Armagnac (one of Catherine’s personal favourites) which make an excellent impromptu desser t with Greek yoghur t, or you could opt for the tangy pineapple chutney which works well with hard cheeses and ham (both of which are an unmissable feature in many a Christmas household). Before tying up her inaugural apron strings and switching on the Village Gourmet ovens for the ver y first time, Catherine’s culinar y career had taken a ver y different course. For years (alongside par tner Dawn) she

co - owned a boutique ski chalet in Châtel in the French Alps before the pair decided to return to the Island in 2010 and set up Lockslane Bistro in Bembridge. “ We had the intention of star ting a small ‘rustic’ restaurant, the kind you find frequented by locals in the back street of ever y French town”. Despite many successful years they decided to sell the business. Catherine switched to private cheffing and later (af ter a lockdown revelation) star ted pursuing an idea she’d nur tured for years — food hampers, made entirely of her own handmade foods, and so Village Gourmet was born. This year ’s hampers (in a choice of recyclable card or biodegradable wicker) contain an assor tment of Christmas specialities including spiced maple glazed ham, pineapple chutney, pickled pears, and nut-stuffed chocolate dates. Tipsy Wight - Wight Winter Warmer Made using Tipsy Wight Spiced Honey Vodka, this warming winter cock tail combines Isle of Wight honey with four secret exotic spices — a twist on an ancient Eastern European recipe Ingredients: 60ml Tipsy Wight Spiced Honey Vodka 150ml Chai tea, freshly brewed Slice of lemon Twist of lemon peel Cinnamon stick 25ml whisk y (optional)
Method: Pour Spiced Honey Vodka into a tumbler. Add a twist of lemon peel and freshly brewed Chai tea. Finally, add a slice of lemon and ser ve with a cinnamon stick to twizzle. For added depth, splash in 25ml of whisk y.
Island Ales - Wight Christmas Amongst the clinking bottles rolling off the Island Ales production line this winter is the seasonally suitable Wight Christmas, a 4.4% ABV red to amber ale. Brewed on the Isle of Wight by the Minshull family, this festive ale is made using speciality oats (to give a rich, malty flavour), chocolate malt (for an ex tra Christmas treat) and a mix ture of British Golding and Bramling Cross hops. Since the Minshulls first built their Island Brewer y in 2010 with state - of-the -ar t custom - made equipment manufactured in Bolton, their popular ales have found them fans from Poole to Bognor, prizing their brews for the taste, quality and all - natural ingredients. Briddlesford Farm - Briddlesford Christmas Mess with Spiced Briddlesford Cream Briddlesford Farm’s Christmas Puddings are the stuff of legends, made to a closely guarded recipe owned by Mrs Griffin herself. As the festive menu takes over in the restaurant, Head Chef David Holley will be using these prized ingredients to make his indulgent Briddlesford Christmas Mess with Spiced Briddleford Cream — a recipe he has kindly offered to share with us this issue. Ideally, you’ll want one of Mrs Griffin’s puddings to enjoy the full, authentic experience. They ’re available to buy from the Briddlesford farm shop and also from their atmospheric Christmas markets held on Fridays, Saturdays, and Sundays from the last week in November to the second week of December.

For the meringue nests
Make the meringues (although shop - bought ones can be used instead). Heat the oven to 110°C / 90°C fan. Tip the egg whites and lemon juice into a food mixer bowl and whisk until doubled in volume, holding a stiff peak when the whisk is drawn through. Keep the whisk running and add the sugar one tablespoon at a time until all the sugar has been incorporated and the whites are glossy in appearance.
3 egg whites ½ tsp lemon juice 150g caster sugar For the rest 150g Cassis (or blackcurrant jam) 1 clementine 250ml Briddlesford double cream 4 tbsp icing sugar, sif ted 1 tsp vanilla ex tract ½ tsp nutmeg ½ tsp cinnamon ½ tsp ground ginger 100g Mrs Griffin’s Christmas Pudding

Line a flat tray with baking parchment. Spread the egg mix on the parchment. As the meringue will be broken up we don’t need to be too careful, however, the thicker you spread it the more chance the inside will be undercooked.
Bake for 2hrs until the meringues are crisp and lif t easily off the paper. Leave to cool completely before roughly breaking into small pieces. Peel and segment the clementine, removing as much pith as possible. Break the Christmas pudding into small pieces roughly 1cm x 1cm Add the Briddlesford cream to a chilled bowl and beat until stiff peaks are about to form (4 - 5 mins). Beat in vanilla, sugar and spices until peaks form. Put all the components into a cold bowl, reser ving a few segments of clementine for decoration, and gently mix together. Spoon into your chosen dish and ser ve immediately to avoid the meringue sof tening.

Situated on the High Street in Cowes Town, you’ll find one of our favourite Island seafood restaurants, the Smoking Lobster – a perfect lunch-stop for those upcoming Christmas shopping trips. The pedestrianised high-street also hosts a wealth of speciality shops, art galleries, and boutiques. We recently had the pleasure of sampling the Smoking Lobster’s renowned pan-Asian lunch experience ourselves and here’s the type of beautifully cooked local Island produce and seafood dishes you can expect... To start, we sampled the local line caught Sea Bass Tataki with pickled chilli ponzu and roasted pepper. Not forgetting the delicious Uramaki dish, rolls of sushi consisting of avocado, pickled shimejii, crispy leek and smoked chilli with vegan mayo. (We also recommend trying the delicious Tempura Baby Calamari perfectly paired with a sweet chilli dip). For our main courses – or to quote the menu, our ‘large plate’ dishes – we tried the Pan-Fried Catch of the Day (Sea Bream) served with fries, yuzu slaw

and salad. Secondly, and although not what you’d expect to find at this first-class seafood restaurant, we sampled the Steak Burger...yes, a burger! The sizzling teriyaki sliced steak strips with charred gem lettuce are a delicious option for anyone looking for an expertly cooked seafood alternative – served with fries and a fabulous slaw. To finish, we opted for a honeycomb pannacotta with caramelised apple gyoza, poached pear, stem ginger ice cream and almond crumble – a perfectly refreshing ending to a perfect lunch. And just to squeeze one more dessert recommendation in for you... we absolutely love the miso pandan doughnuts with white chocolate – yes... they really do taste as good as they sound.

Swede Pakora With Wi l l Stewa rd, Liv i ng La rder
A staple of our British winter time, swede never goes out of fashion. This bulbous brassica grows much like its cousins in the cabbage family until it reaches the late summer and autumn and starts to swell at the root. Harvest should be after the first frosts, and storage is best in an open field (or on the garden lawn!) throughout the winter months. After cold weather swedes take on a
sweeter flavour as the starches turn to sugar. Also known as ‘neeps’ to our friends on the Scottish side of the border, swedes don’t just adorn our Christmas table, but a typical Burns Night supper too. This is the perfect recipe for any leftovers from Christmas Dinner: serve with the ubiquitous Turkey curry!
Ingredients 1 small swede
2 tsp garam masala
75g plain flour
½ tsp ground turmeric
100ml yogurt
1 tsp crushed cumin seeds
1 red chilli, deseeded and finely chopped
Small handful coriander, chopped
1 red onion, sliced
Mango chutney, to serve
Neutral oil, for frying
Method Peel and dice the swede, then cook in a pan of boiling water for 15 mins until tender. Drain well and then leave to cool, crush with a potato masher. Mix together the flour and yogurt to make a smooth, thick batter. Stir in the chilli, onion, spices, and coriander. Season generously, add the crushed swede, and stir to combine. Half-fill a deep frying pan with oil – check the temperature by cooking a cube of bread: it should sizzle when the oil is hot enough. Cook small spoonfuls of the mixture for 2 mins on each side until crisped and browned. You can also shallow fry flattened spoonfuls if you prefer. Serve hot with chutney. Perfectly Balanced Botanicals and a Splash of Gin In the Kitchen with Matt Egan This issue, we’re returning to The Royal Hotel’s bustling kitchen to meet up with Head Chef Matt Egan and follow him on another local culinary adventure. Catching the tail end of lunch service we watch Matt put the finishing touches to the final few plates, honing the art of stylistic presentation that he’s already well known for. Today he wants to dive deeper into the craft of balancing flavours and pairing ingredients (a skill he loves to innovate with) so with that he takes us north to The Isle of Wight Distillery on the woody outskirts of Ryde.

It soon becomes clear that both Matt and Xavier share a passion for botanicals - the herbs, fruits and spices which, though small in quantity, can make a huge impact on flavour and presentation. With inspiration infusing, Matt starts his culinary creation. Using what he’s absorbed about the different gins and
the balance of botanicals, he creates a luscious Pistachio Frangipane with gin-infused koji sorbet and a delicious chocolate ganache. The dessert is an instant winner and quickly gets the seal of approval from Xavier too. Matt explains: “After today’s visit I was inspired to use the Mermaid Zest Gin as its notes of citrus zest and rosemary perfectly complement the flavours of my koji sorbet. I then balanced the dish with raspberry and chervil, providing both light and herby notes, which went so well with the burnt butter ganache. Altogether, it enabled me to create a perfectly balanced and aesthetically pleasing dish, as don’t forget, we all eat with our eyes to start with”. With the sun setting it’s time to depart but we’re already looking forward to our next meeting with Matt to hear more about the new Se7en tasting experience that takes diners on a seven-course gastronomic journey. Short Glass Tumbler (chilled)
1. Add the following ingredients into the large steel Boston shaker:
Cocktail Equipment Spirit measure, Cocktail shaker, Prong cocktail strainer, Cocktail mixing spoon, Handheld citrus juicer (optional) Ingredients/ Garnish 1 Rosemary sprig (garnish) 1 Luxardo Maraschino cherry (garnish) Ice cubes Lime half freshly squeezed as juice Rosemary leaves (large pinch) 10-15 ml Luxardo Maraschino Liqueur 25 ml Mermaid Zest Gin 5-10 ml Simple syrup 3 ml Maraschino cherry syrup - from the jar of cherries
Fresh lime juice, Simple syrup, Mermaid Zest Gin, Maraschino Liqueur, Maraschino Cherry Syrup and the Rosemary leaves that you slap between both of your hands to release the flavour, before adding them to the shaker. 2. Add plenty of ice cubes into the shaker and stir using the mixer spoon for a minimum of 30 seconds, until there is a thin layer of frost building on the shaker. 3. Add 3 or 4 large ice cubes into the glass and pour ingredients into the glass using the prong cocktail strainer and garnish to serve. Sip and enjoy for a luxurious Christmas treat! Style of Wight caught up with Dr Luther Moss and inv ited him to share his journey to becoming a chiropractor here on the Isle of Wight. What do you do? I am a chiropractor. I’m a specialist in assessing, diagnosing and treating problems involving the muscles, joints and nerves. This may range from back and neck pain to arthritis, sciatica, headaches and migraines, through to hip or knee problems. Why did you become a chiropractor? I chose the profession after observing a fantastic chiropractor in Oxford at 15 and seeing the amazing responses his patients had to treatment. I loved biology and physiology at school, so the career seemed a great fit for me. I applied to the European College of Chiropractic in Bournemouth and after school undertook a 5-year Masters of Chiropractic course. Tell us about your clinic and what you have done previously. My clinic in Shanklin, Osborne Chiropractic, is a small practice where I work by myself and can dedicate 100% of
my time and energy to my patients. Although I have lived on the Island for quite some time, prior to this practice I had a multidisciplinary clinic in London for over 10 years. It was a fantastic experience but my focus here was to minimise management and maximise my time with patients and I am loving the ability to do this! What’s your approach to your patients? Firstly, it’s taking time to listen to my patients and give them the opportunity to explain all their concerns. Then I focus on detailed examination, determining a diagnosis and devising a clear treatment programme suitable for the individual. There are often a multitude of factors contributing to someone’s problem. It may relate to how they are moving, what they are doing, genetic predispositions and nutritional deficiencies. I take all this into account with my patients, advise where I can and refer to trusted other professionals when I feel there is need.

Well over 1,000 people entered the gates of East Afton Farmhouse to attend the Isle of Wight’s very first Homes & Interiors Show on Sunday 23rd October. Hosted by Black Swan Events, the show saw its West Wight venue transformed as exhibitors from across the Island and further afield set up to showcase their brands and offer visitors more interior inspiration than they could shake a velvet cushion at. Centre of attention was the main events barn, home to the Mermaid Gin bar, artworks by contemporary painter Celia Wilkinson, and the exclusive VIP area (decorated by Shanklin-based homeware firm Acacia Bay). This stunning, lofty space was also home to the main cluster of stalls, including those of the event’s sponsors: local estate agent McCarthy & Booker; interior design company Vivus Interiors; and purveyors of swanky floor coverings and alluring geometric tiles Long Lane Flooring.

Over in the historic stone farmhouse, XV Stripes decorated one of the bedrooms in their distinctive blue and white soft furnishings, whilst downstairs Vivus Interiors ran a mood board workshop and Island Roasted gave demonstrations in the farmhouse kitchen. The team from Gastronomy of Cowes was also on-site offering tasty bao buns from their vintage van, whilst the other exhibition areas hosted a range of exciting local brands including Bembridge Flowershop, Alfresco365, SHED Soy Candles, Modh Design Ltd, and ERMC.

Visitors arrived before the gates even opened and the car park quickly filled to capacity as the show proved to be a great success, with both guests and exhibitors expressing their enthusiasm to return again next year. Show organiser Hannah Wilson from Black Swan Events said: “We’re really pleased to be bringing you the first Isle of Wight Homes & Interiors Show. We’d like to thank all the exhibitors for supporting us and also all our guests and visitors for coming. With well over 1,000 people entering those gates today, it’s been a really successful event and here’s to many more!”

NEWPORT by Rebecca Lawson Get the Christmas greetings season off to a strong start
Often referred to as the Island’s ‘Big City’, Newport certainly offers the shopper all the usual chain stores — Marks and Spencer, Next, Sports Direct, Mountain Warehouse — but scratch below the surface a little and you’ll find a sparkling collection of quirky, independent gems. Mix these in with fascinating historical sites and you’ve got an island town that is a must-explore for residents and visitors alike.

erhaps a tour of Newport should start in Church Litten it is, after all, close to three main car parks and an easy place to access the rest of the town from, but don’t be fooled - Church Litten has more to offer the eagle-eyed visitor than chain stores. ‘Litten’ is the Saxon name for ‘graveyard’ and this gentle rectangle of parkland innocently hides its origins as a hastily opened plague cemetery back in 1583. At the time, about a fifth of the population in the area had died a gruesome ‘Black Death’ and quite quickly the graveyard in Carisbrooke was overflowing.

Not much remains now of the old cemetery, with the headstones being removed in the 1950s, but clues to the park’s past identity lie in the trees that shelter the area; the yew, weeping ash, and weeping beech are all traditionally associated with graveyards. The former stone archway that used to house the gates is also still standing and provides visitors with an echo of the area’s former use. But if it’s shopping, not history, you’re looking for in Newport, wander through the town centre and down Holyrood Street to the sparkling gem that is Adrienne Wroath Jewellery. In a world becoming more digital, it’s nice to know some things don’t have to change.”

Snuggled down a quiet side street in the island town of Newport just minutes from the cobbles of Watchbell Lane sits the Grade II listed property of One Holyrood. After a major renovation that took two years to complete, owner and architect Richard Holden, coupled with interior designer David Genty, have turned One Holyrood into a world-class hospitality space. When first completed, the finished premises were so highly regarded that Newport Parish Council awarded the project with the Building Design Award for ‘External and Internal Refurbishment’. DINING AT THE W H E A T S H E A F I N 18 5 7 AND THE CATERING OF JAMES READ - INNKEEPER
In the Newport of 1857, back when St. Thomas’ Square went by the name of Corn Market, and before the Guildhall got its clock tower, the Wheatsheaf Inn was setting a new benchmark for local hospitality. Head of proceedings was the 40-year-old James Read, innkeeper (and a talented amateur artist), who had taken over the running of the pub from his father — also called James Read — and soon made a name for himself with his elaborate banquets and first-rate fine dining. 78

Amongst those lining up to secure a table was the Newport Amateur Dramatic Society, who took their seats at the Wheatsheaf on the 2nd May to mark the close of the theatre season. They were presented with an array of at least 35 different dishes — including white soup, roast turkey, guinea fowls, legs of mutton, and lobster salad, followed by desserts such as custard puddings, blancmange, syllabubs, and ‘tipsey cakes’ — a sweet made from sponges soaked in sherry and brandy, topped with redcurrant jelly and pricked with flaked almonds. Just a few weeks later, the town’s Debating and Elocution Society would take their turn, in a room ‘tastefully decorated with flags and banners’ where they ate tarts, plum puddings, and lemon sponge, ‘embellished with choice and beautiful flowers’. By combining traditional British dishes with specialities
introduced from further afield (like casserole, curried kidneys, and chicken fricasée), artistically executed and always in ‘ample quantities’, James Read had made himself the Island’s goto caterer. By 1858 he was supplying a dinner for 250 constituents of Newport Borough, over at the Queen’s Rooms in Lugley Street; and in 1866 he cooked for 400 members of The Foresters in a ‘spacious booth’ put up at Northwood Park. Of course, he didn’t do all this alone. Joining him in the Wheatsheaf kitchen in 1851 was 19-year-old cook Edith Drudge (who would later become his wife) and a 60-year-old waitress named Elizabeth Linington, who assisted with service. By 1861 Emma Davis from Cowes had taken over the role of cook, and by 1871 Scottish-born Margaret Hobson was the one with ladle in hand, tying up her apron strings and
lighting the stove. Aside from his muchappreciated event hosting, Read also ran a butcher’s shop from the side of the building (well-known for its Christmas window displays ‘which created quite a sensation’) and was much admired for his artwork. He was especially close to the town’s actors and actresses, painting their scenery and decorating the stage, completely free of charge. However, just as things really began to take off for James Read, he became seriously ill and died in 1873 at the age of 57. Thankfully, a local paper — The Isle of Wight Mercury — had printed a number of the menus from his events, allowing us to recreate them today and get a taste of what it was like to dine with one of the Island’s favourite 19th-century caterers. How to Ma ke Your Own Christmas Wreath
This issue we’re returning to flower aficionado Ellie Tuffrey, owner and chief foliage assembler at Bembridge Flower Shop. With the festive season well and truly on its way, we couldn’t think of anyone better to show us how to arrange the perfect do-it-yourself Christmas wreath. So read on to discover her handy step by step guide.

Assemble your equipment! You’ll need a mossed wreath ring as your base, either buy one ready-made or try and make your own from metal wire and moss. Then you’ll require scissors or secateurs, some twine, florist wire plus hardy textured foliage such as spruce, tree ivy, bay, or eucalyptus. To give yourself a helping hand with these initial preparations, pre-order the tools and accessories from Bembridge Flower Shop.
Once your wreath is well covered with lush foliage, tie another knot onto your ring with the twine and now it’s safe to snip it off from the roll. If you notice any gaps simply poke some more foliage into the moss to fill them in, no-one will know! This is also a good time to add more delicate and decorative foliage like holly or mistletoe; see what greenery is available in the shop or maybe head out into your garden and see what you can forage.
For a final flourish, add a ribbon. At Bembridge Flower Shop we have plenty of options in a range of colours and sizes — plus we can help you tie that knot if it’s not going quite right. Use the same process with the wire to attach it and ta da! Your wreath is made.

Next, take your roll of twine, wrap a length of it around the mossed wreath ring and tie a knot — but don’t cut it yet, leave it attached to the rest of the roll. Then, create small bunches of foliage, binding them into the wreath with your twine ensuring the bunches overlap to avoid any gaps. Make sure you snip the ends off your stems and strip the bark to allow the foliage to drink from the moss — it’ll look fresher and last much longer that way!
Add your accessories! Whether it’s fruits or pine cones, candy canes or baubles, you can really have fun with how you customise that wreath. Whatever embellishments you choose, use wire to attach them. Feed the wire through the decoration and, once it’s halfway through, bend the wire in half to create two ‘legs’ - you dig these through the wreath’s foliage so they poke out the back. Then from behind, bend them back into the wreath again to secure the decoration.
P.S. Don’t forget to keep your wreath hydrated over the festive period by watering the moss. It’ll help it stay looking fresh and fabulous well into the New Year!

Step into Chad Powell’s gallery, based at Arreton Barns, and experience the island in technicolour. Deep night sky images showing thousands upon thousands of stars sit alongside peaceful golden sunrises and panoramic rolling landscapes; all island moments captured in minute detail.
I
nspired by the mysteries of the universe, Chad first started experimenting with capturing nightscapes back in 2013. From his garden in Ventnor, he explored his interest in the cosmos. Capturing the colours of the milky way ignited a passion, leading to features in noteworthy publications including The Times and Digital Camera. Nearly a decade later, Chad’s work can be purchased from both his boutique gallery in Arreton and his website, where I find a carefully curated selection of inspiring images. It’s not hard to see why his idyllic island scenes, vivid colours, and depth appeal to islanders, tourists, and collectors alike. Chad recently launched his new, userfriendly website. Customers are invited to select their preferred artwork, mount, frame, and glass, then view in real time via a preview feature. “I wanted to take the gallery experience online”, says Chad. “This means you can seamlessly flick through pieces and choose options to suit your own home and style. The guesswork is taken out of whether

a particular photo will look best in a certain frame, or in a black and white mount.” Recognising that his customers have varying tastes when it comes to presenting artwork, Chad has worked hard to make his images accessible. He’s redesigned his website to offer a myriad of print and gift options for every
image, including canvases, framed prints and even super soft sherpa blankets and jigsaw puzzles — ideal for relaxed Sundays when the rain beats down on the windows and exploring the island piece by piece seems a cosy alternative to a wet stomp.

Creating a Bespoke Gift Intrigued by the idea of selecting not only an image, but the mount and frame (and with Christmas at the forefront of my mind), I decide to give Chad’s website a whirl.
1. Selecting an Image Selecting an image takes some time, with so many vibrant pieces to choose from, but I narrow my selection down using the handy location tool, before settling on ‘Purple Dreams’, taken on St Boniface Down. The image brings to mind memories of family walks, and I can picture it hanging in my colourful, nature-loving mother-in-law’s home.
2. Choosing a Mount & Frame I opt for an open edition, which can be presented on canvas or printed, and framed in black, white walnut, oak, grey and distressed wood. The possibilities seem endless, but after much deliberating I settle on a white mount and a grey frame, to make the purple hues pop.
3. Glass Options The final selection I make is between glass types. I’m impressed to see the difference of Tru Vue Anti Reflective Glass over Perspex – the preview shows a super sharp image, as if there were no glass. This is a Christmas present, after all, so I decide to try out the premium option.
4. The Finished Item When the piece arrives, I’m delighted. The finished look is impressive and clean, with bold colours highlighted against a modern frame. One present down with a seamless and easy online experience, while still supporting a local artist – I’m positive my mother-in-law will be pleased.

Close to the banks of the River Medina sits A. J. Wells & Sons — the oldest manufacturer of wood-burning stoves in Britain. Are wood-burning stoves bad for the environment? Outdated older models tend to be less efficient, producing more carbon and harmful particulates which are bad for air quality. However, newer, more modern stoves, like our Eco Design Ready models, burn much more cleanly, producing up to 66% fewer emissions. At Charnwood, we take our responsibility for the environment seriously and we were amongst the first manufacturers to develop ultraclean burn technology and to achieve compliance with the 2022 Eco Design Regulations. We’re also proud to say that the majority of our stoves achieve Level 5 in the Stove Industry Alliance’s clearSkies certification — the highest ranking available. Does the fuel you use in your stove affect emissions? Yes. The most efficient fuel type to use is dried wood with a moisture content of less than 20%. When buying logs, look out for the ‘Ready to Burn’ label on bags to know they meet that criterion. Wet

wood and coal are much more harmful for the environment, and both were banned from sale for use in domestic stoves in May 2021, a move Charnwood welcomed. Could wood burning ever become a carbon-neutral process? If wood has been dried and is burnt correctly, it could potentially become carbon neutral. Whether the wood is burnt in a stove or decays naturally in a forest, it releases the same amount of carbon into the atmosphere. This can be balanced out by the amount of carbon the tree absorbs from the air during its lifespan. Talk us through the eco-credentials of one of your stoves Let’s take the Bay 5 BX, one of our more sleek and contemporary models. It’s certified Eco Design Ready by the Stove Industry Alliance (SIA) and includes Cleanburn Airwash Technology which controls and directs incoming airflow to increase burn efficiency. It’s been rated A+ for energy efficiency and burns dry wood so cleanly it can even be used in
areas where DEFRA have put smoke controls in place. Light up a Life, Give and Get Active this December at Mountbatten
T
he annual Light up a Life service returns on Sunday 4th December, offering the Isle of Wight community the chance to remember someone special. The service is open to anyone and will include music from the Mountbatten Choir, Medina Marching Band and soloists, plus readings from Mountbatten staff. There is also an opportunity to dedicate a light on Mountbatten’s online Remembrance Tree, in exchange for a small donation. Meanwhile, Mountbatten’s December concert features BBC Radio 3’s Sarah Walker and her percussionist husband, Martin Payn, who will host an evening of Christmas cheer in the hospice’s John Cheverton Centre.

I met with one company recently and the week before placed an enquiry online, using the form they provided on their website, just to see how they managed enquiries. I received nothing. At the meeting I mentioned this. They checked and came back to say that website form enquiries all went to Muriel’s inbox – unfortunately Muriel had left two months before and no one had thought to re-direct them! How confident are you that all your response mechanisms are working effectively? Another company I visited took pride in the CRM System they had invested in, ensuring that all enquiries could be captured, monitored, and reported upon. The meeting concluded in the early evening so I asked if we could take a walk around the now-empty sales office. There we found prospect business cards sitting in trays, post-it notes with enquires stuck to monitors, and enquiries scribbled on pads. Many were now old, and few had made it onto the CRM System. How good are you at capturing opportunity? So, before you say ‘we don’t do this’ take a look around your office. Ask about the leads from that networking event or expo, check if your website forms and generic enquiry email addresses are all working, being received, and managed. ISLAND COMMUNITY COMES TOGETHER FOR SEAGRASS CONSERVATION
A rou nd 250,000 seag rass seeds were col lected i n a bid to u ndersta nd more about the best methods for seag rass restoration across the U K More than 50 volunteers from a wide range of island organisations joined 20 Project Seagrass staff this summer to collect seagrass seeds in the Solent. The effort comes after a year of monitoring to assess the health of existing seagrass meadows around the Isle of Wight and trials to explore restoration potential. The Seagrass Ocean Rescue project is a partnership between Project Seagrass, Swansea University, and WWF working on the Isle of Wight to further understand the best methods for seagrass restoration through scientific planting trials which will help to inform future restoration projects around the UK. Seagrass is an underwater plant that lives in the shallow, sheltered areas of our coastline. It provides a home for thousands

of marine species, helps to stabilise our shores preventing coastal erosion, produces oxygen, creates cleaner water and captures and stores carbon. It also provides a nursery habitat for commercially important fish such as cod and plaice. Unfortunately, the UK has lost the majority of its seagrass meadows in the last century. The Isle of Wight represents a handful of areas where it still thrives. The Isle of Wight is also a UNESCO Biosphere Reserve which recognises the need to develop and promote solutions reconciling the conservation of biodiversity with its sustainable use. It’s critical that we protect and enhance what we have. The Biosphere Reserve status provides a platform to demonstrate this to the rest of the world. Seagrass Ocean Rescue is a collaborative effort, guided by local communities and stakeholders. The project is also working collaboratively with the Hampshire and Isle of Wight Wildlife Trust and ReMEDIES who are working to restore seagrass in the Solent. Many organisations got stuck in during seed collection season including Arc Biodiversity & Climate, Carlsberg, Liz Earle, CGI, Ocean Infinity, Mermaid Gin, Balance and Glo, the Isle of Wight Sea Scouts and Brownies, Open Minds and Outdoor Swimming IW, and Seagrass Champions, a group run by the Hampshire and Isle of Wight Wildlife Trust. Keen locals also got involved, including Island photographer Theo Vickers who managed to capture the beauty of the existing seagrass meadows surrounding the Isle of Wight. The project is funded by Carlsberg, Sky Ocean Rescue and Liz Earle. Evie Furness, research assistant at Swansea University says, “Working on the Island gives
me so much hope for our oceans. It’s one of the few places where seagrass meadows appear to be expanding. This makes it the ideal place for us to study the best ways to plant it, allowing us to provide better guidelines for successful restoration in areas where seagrass is struggling.” Scientific trials were led by Project Seagrass to assess whether a genus of seaweed, Sargassum, settled on bags of seagrass seeds, the method deployed by Project Seagrass staff in their restoration projects. Sargassum blocks light from reaching seagrass, which it needs in order to grow, and can outcompete existing meadows. Fortunately, the trials found that Sargassum didn’t settle on the seed bags planted in this trial. Additionally, a high success rate of seed germination was found. These positive results are testament to the water quality around the Isle of Wight, which is a major concern for seagrass. Ian Boyd at Arc, an Island-based organisation supporting the seagrass project, says, “The results of the research and surveys already conducted are contributing important new data to the understanding of the Isle of Wight’s UNESCO World Biosphere Reserve, two thirds of which is marine. The Solent trials will generate new techniques for propagation and conservation that can be shared across the global Biosphere network helping to protect and enhance these vital habitats so important to sustainable coastal communities and the ecosystems they share with the natural world.” A biodiversity assessment was also conducted on the seagrass meadows in the Solent. Species including corkwing wrasse, juvenile pollock, sea bass, and plenty of pipefish
were found utilising the seagrass meadow as a habitat. Due to its long leaves, seagrass meadows offer a place for small and juvenile fish to hide from predators and grow. This also attracts other species to the meadows as an essential foraging ground for their food sources. Seagrass therefore supports a wide range of marine species and the protection and restoration of these meadows is vital in tackling the biodiversity crisis. There are easy ways to get involved with seagrass conservation. Project Seagrass has designed a citizen science tool to track the distribution and status of the world’s seagrass meadows. SeagrassSpotter is a handy app that you can download onto your phone so when you are out exploring the coast and come across seagrass you can easily upload your sighting. Simply take a photo, use the in-built identification tool to identify what species you have seen and upload into the SeagrassSpotter database straight from the app. If you have old photos of seagrass, you can also upload these through the SeagrassSpotter website www.SeagrassSpotter.org. Island visitors and residents will get a chance to meet and find out more about Project Seagrass at Biosphere-related events led by The Common Space (facebook. com/TheBayTCS) this autumn. Fresh from her very amusing talk with Amber Beard at the Isle of Wight Literary Festival, we sat down with TV chef — and now crime writer — Rosemary Shrager to talk books, confidence, and Christmas cooking.
With Christmas around the corner, any advice on cooking that turkey to perfection? Well to start with, never buy too big a turkey. Always allow 20 minutes per kilogram of meat plus 70 minutes extra on top. I always advise people to get a thermometer to make sure the bird is cooked through. And when carving cut the breast off whole first, it goes further like that.
For those of us who don’t know yet, can you tell us a bit about your ‘tantalisingly delicious’ debut novel The Last Supper? Well, Prudence Bulstrode is basically me: retired, loves cooking, enjoys a bit of sleuthing as a hobby, and goes round the country in her campervan to cook. Together with her granddaughter, she solves a murder mystery in a country house where her rival Deirdre Shaw has been found dead in the rhubarb patch, and from then on it’s a whirlwind!
In your opinion, are Yorkshire puddings ever an acceptable feature of the Christmas dinner plate? No, categorically no. Absolutely not! Why would anyone think they belong with a Christmas dinner? Finally, have you got any more books on the horizon?
Apart from the similarities between you and Prudence, are any other parts of the book based on real life? Yes, there are definitely parallels, like catering for shooting weekends at a country manor, it’s something I used to do at Amhuinnsuidhe Castle on the Isle of Harris. After publishing eight cookbooks during your career, what made you turn to fiction? It was actually my agent who asked if I’d like to write a murder mystery and of course, the answer was yes. I’ve always loved Agatha Christie, I know it’s a cliché but Miss Marple and Hercule Poirot are amazing characters. Losing yourself in an episode of Death in Paradise or getting into a good crime novel is real escapism for me. Have you ever been to the Isle of Wight before? Never! It’s wonderful, I’m thrilled to be here. I came over yesterday and stayed at the Villa Rothesay in Cowes. The breakfast there was superb! I’ll definitely be coming back again. This literary festival is fascinating too, it has such a lovely atmosphere and it’s wonderful that it’s all run by volunteers.

As you may know, we’re famous here for our locally grown tomatoes and garlic. If you were in the kitchen and these Isle of Wight products were in your mystery bag of ingredients, what would you do with them? I’d make the most wonderful pesto, or no, a tomato jam with garlic! I’d call it “garlic and tomato jam” and make it extra garlicky. Your career really took off after you wrote to Michelin-starred chef Pierre Koffman from Chelsea’s Tante Claire asking for a job — even though you were entirely self-taught and he didn’t employ women in his kitchens. What advice would you give to those of us to whom courage and assertiveness don’t come naturally? Just have the courage, it doesn’t matter if you’re nervous or not, it’s important to put yourself forward. When I was younger I was a nervous person but putting yourself out there helps you to grow up and build in courage and confidence.
