> ‘Tis the season to be jolly and I think it’s safe to say Orlando was full of joy this November! What better way to kick off an entire month of fabulous events then with Carmen Steffens’ High Winter Fashion Event? On November 6th, event guests made their way to the Mall at Millenia and joined Orlando Style Magazine and the Carmen Steffens Store in celebrating the best in winter fashion. From minimalist apparel to extravagant designs, attendees were able to preview it all as they enjoyed complimentary drinks, appetizers, live DJ Entertainment and the revealing of Orlando Style Magazine’s highly anticipated November luxury issue. Guests also received an exclusive 20% discount throughout the store during the event. On November 8th, the all-new Vanity Nightclub in Downtown Orlando became an exciting platform for emerging local fashion designers as Orlando Style Magazine presented FashionContender®. This thrilling, high-energy competition brought together three of the top local fashion designers as they showed off their work and competed for fabulous prizes. Contestant Trish Green’s gorgeous designs helped her to win this round and advance to the next where she’ll compete for the ultimate grand-prize of a free trip to NYC Fashion Week. The event was emceed by The Daily Buzz’s Lance Smith and featured a panel of celebrity judges including Orlando Style Magazine’s publisher and founder, our very own Sven Bode! Guest

On November 14th, Mayor Buddy Dyer kicked off the 27th Annual Festival of Trees at the Orlando Museum of Art by lighting the Grand Tree at “Light Up the Holidays,” a special pre-festival opening ceremony. This year’s festival brought the holidays and the arts together from November 16th to the 24th as guests showed up daily for awe-inspiring displays of designer decorated trees, wreaths, gingerbread creations and gorgeous holiday vignettes all for sale. Visitors also enjoyed a stunning exhibition of abstract work, a gift boutique, live entertainment at Festival Café and much more during these nine incredible days full of glimmer, lights, special events and surprises for guests of all ages. The Bohemian Gallery is one of the most visually stimulating art galleries in the nation and on November 15th,

it became the fourth and final stop for award winning French artist Jean Claude Roy and his traveling collection “Where Color Meets Life.” The Orlando community joined the Bohemian Gallery in welcoming the talented artist and his works, which featured vibrant landscape paintings, inspired by Roy’s passionate life. The following evening, visitors enjoyed a Champagne reception and dinner that concluded the two viewing days of Roy’s beautiful collection. This holiday season, Neiman Marcus Fashion Director Ken Downing curated an exclusive gift collection of 37 items and on November 20th, Neiman Marcus Orlando and The Orlando Ballet hosted a private reception and preview of this fabulous Ken Downing Gift collection. The invite-only event was held at Level One and guests fell in love with the various selections of gifts from high-end designers including Chanel, Michael Kors, Alexander Wang and many others. Ten percent of the sales from each of these luxurious gifts benefit the Orlando Ballet’s youth programs. The Orlando Bal-

let Steps Program teaches dance to underprivileged children in Central Florida and their Adaptive Dance Program teaches dance and movement to children with Down syndrome. On November 29th, the 8th Annual Festivals of Speed made its way to Orlando and transformed an actual aircraft hangar into a luxury lifestyle jet port reception. The Ritz-Carlton Orlando, Grande Lakes hosted the event and guests experienced a fabulous display of vintage & contemporary aircrafts, the world’s most exotic cars, custom created motorcycles, high performance boats and the finest luxury lifestyle product displays including colorful jewels, unique timepieces, collectable artwork, exotic travel destinations and more. Guests were treated to premium cocktails from an open bar, themed food displays and a live and silent auction benefiting Arnold Palmer charities. Live entertainment was provided in the form of smooth jazz by a strolling saxophonist, but the festival fun didn’t stop there! The following evening, Cartier hosted a private wine connoisseur’s dinner featuring fine wine pairings to compliment a four course meal at the award-winning restaurant, NORMAN’S at the Ritz-Carlton Orlando. At the conclusion of this memorable culinary experience, guests enjoyed a fine cognac and cigar served under the stars on the gorgeous terrace. Every guest also left the exclusive event with a gift bag full of special gifts from the evening’s sponsors. Although many people refuse to play holiday music before the month of December, Central Florida’s resident professional orchestra made an exception to that sentiment on November 30 and it proved to be a magical day for all. To the pleasure of all attendees, the Orlando Philharmonic performed their annual Home for the Holidays concert and it was a captivating musical experiencing for people of all ages. The Central Florida community had two chances to see the thrilling performance with a 2 p.m. and 8 p.m. showing at Bob Carr Performing Arts Centre. The accomplished musicians in this year’s program were conducted by Albert George Schram and featured the entire Orlando Philharmonic with The Holiday Singers and the Florida Opera Theatre Youth Chorus. Concert attendees were also surprised with special appearances by dancers from Orlando Ballet, an aerialist, and bagpipers from the Rosie O’Grady Highlanders. It was an unforgettable show full of classical selections, contemporary works and seasonal favorites such as “The Little Drummer Boy” and “O Come All Ye Faithful.” There was also a special narrated performance of “’Twas the Night Before Christmas.” Many concert attendees even used the event as a way to give back to the community by bringing non-perishable food items for the Second Harvest Food Bank pantry. < Know of a Not-To-Be Missed Event? at Gaylord Palms Resort By Kelly Lamano

> During the average Florida winter, we might not experience any temperatures colder than 50 degrees. However, ICE! at Gaylord Palms Resort gives us a pretty cool idea of what it would be like in a chillier environment, as guests are invited to walk around in nine-degree weather. The Christmas-themed spectacular brings ice sculptures to life in vibrant color. A new theme each year provides for a fresh experience, enticing Central Floridians and visitors to return. In years past, themes have included Shrek the Halls, Twelve Days of Christmas and Merry Madagascar, featuring characters from classic Christmas stories and animated children’s films. Each theme comes from the imaginative minds of 40 artists from Harbin, China. These artisans work for over a month, slicing and shaving 6,000 blocks of both clear and colored ice. A whopping two million pounds of carved ice are involved in creating the sculptures. Each block of ice weighs an incredible 400 pounds, and there are more than 1,000 LED light tubes frozen into the blocks to light up the magic inside.

A few years ago, friends and I were lucky enough to visit ICE! to celebrate a birthday. I was warned beforehand how freezing it is inside, but as Florida native I had no idea just how cold it would really feel. As soon as you step inside, you are given a bulky but cozy blue parka in the size of your choice to keep your limbs from freezing off. Okay, so that’s a bit of an exaggeration, but be prepared to endure the cold when you visit ICE! Make sure you dress in long pants and a coat, bring gloves, and don’t forget some warm socks to keep those toes nice and snug. Once inside, there are beautiful ice sculptures on display from left to right. Snowflakes and ice walls complement bright blue and white penguins posed in a dancing stance. Two years ago, the exhibit featured an ice carousel for guests to ride and enjoy the view of the sculptures. Guests could ride on ice animals such as reindeer, bears and penguins. The ice slide is a consistent source of entertainment for guests to play in their own little winter wonderland. A fast slide is sculpted for the big kid in us all, and the smaller, slow slide is best for children. Glide down the illuminated slides or sit on Santa’s lap. There are

plenty of great photo opportunities to send postcards to friends and family who couldn’t make the fun. At the end of your ice excursion, kick back with some complimentary hot cocoa in the atrium to warm up and step back into the “normal” Florida winter weather. For even more holiday fun, there are live stage shows, such as Luminescence, and a magnificent 54-foot tall Christmas tree lighting. ICE! at Gaylord Palms Resort is a great place to visit for family and friends. Don’t forget to bundle up before attending! Florida residents are in luck with resident discount tickets. Unfortunately, the holiday season has become notorious for being the most stressful time of the year. To help you shake it up a bit this year, here are a few tips to follow that will guarantee a change in your holiday spirit. Money is the first thing on everyone’s mind during the holidays. Gift giving is becoming strenuous and extremely difficult to afford. If you are one of the many people plagued with this gift giving issue, start with a list and a budget. Make a list of everyone for whom you need to get gifts and allot a certain amount of money for each gift. If this isn’t enough to rectify your dilemma, improvise your gifts! Start by thinking of different experiences that you can share. Oftentimes, a person will get much more out of an experience than a material gift because it truly shows how much the thought counts. Stress can be easily attributed to the amount of sleep that you are getting. It is common to get into bed and have

your mind wander to all of the tasks that you still need to accomplish before the holidays. To prevent this from happening, put on some calming music and allow it to soothe you to sleep. If you’re paying attention to the music, your mind won’t wander off and get lost in the holiday stress. Scheduling can become a hassle during the holidays as well. It’s difficult to attempt to fit in every holiday responsibility in what seems to be a short amount of time. Instead, you should stick to your routine schedule. No, I’m not kidding; if you stick to your accustomed schedule, you won’t be burdened with as much stress. Fit in shopping, cooking, and anything else you have to do to prepare for the holidays when you can. The only thing that you should actively make time for is some “you” time. It is really important for you to be able to relax and unwind by yourself after all of your holiday preparations. Some of the best ways to unwind is losing yourself in a good book, and most importantly, putting yourself on a digital diet. This means that you would put away any electronic device[s] where people can reach you on for at least one night a week.

Along with sticking to the same schedule, it is extremely important to keep up with your exercise routine. This is usually the first thing to go when people are revising their schedules to include time for holiday planning. Even if you cut down your workouts to just 10 to 20 minutes a day, you will see a dramatic change in your attitude and self-esteem. Incorporating these tips into your holiday season will guarantee that you will merrily drink your “gin and tonic-a” during the eight glorious nights of Chanukah or “jingle bell rock” your way to the merriest Christmas you’ve ever had. <

> From Orlando (MCO) to Pensacola, FL (PNS) was a mere 1:45 minutes flight aboard Silver Airlines, which is a small turboprop engine plane with 1-seated rows to the left and 2-seated rows to the right, seating roughly 34. If you’re a bit weary on small planes; think of it as your ‘private jet,’ order a vodka and you’ll be there before you know it! Then, it will take about an hour drive to get into Mobile, Alabama from Pensacola, FL. We drove through the quaint, downtown area of Mobile where charming little restaurants and bars line its streets with an easy, laid-back atmosphere, before reaching our destination – Fort Conde Inn, a boutique hotel that evokes the style and feel of nineteenth century Mobile. Built in 1836, it is the second oldest house in Mobile and was recently restored to its original Victorian splendor. Fort Conde Inn offers amenities of a fourstar hotel in an elegant, historic setting with luxurious guest chambres and suites. The architectural features have been preserved from heart pine flooring and custom-milled moldings to marble fireplaces, complete with12-foot ceilings and crystal chandeliers. Designed with southern hospitality in mind, you can retire to your suite for a nightcap by the fireplace or linger a bit longer on the porch and chat a bit with the innkeeper, a very genial, accommodating host, Alan Waugh about its rich history. Here you will experience fine period antiques, significant paintings, silver and porcelain decorative arts that tell the story of how the wealthy once lived. One of the most memorable photos on the wall was the “Can’t-Get-Away Club” which showed the many faces of brave men whom stayed behind to care for the sick and orphans created by yellow fever. Also on property are the 1850 Cox Deasy Cottage, a popular Mobile brick mason, home to George Cox, his wife and 12 children depicts how the average middle-class family lived in the 1800s. Here you can view an amazing dollhouse with miniature figurines and furniture. The Cook’s House and Garden is under restoration and will open in the spring of 2014 as Mobile’s first African-American house museum dedicated to the post-Emancipation life experience. This cottage was built in the late 1860s and was home to the Gaither family who worked on the Oakleigh estate for many years. departing from Bellingrath Gardens between March and November, the river cruise offers visitors a relaxing and educational tour along the Fowl River. Unique wildlife and birding habitats can be witnessed on the river, as well as a wonderful view of the Bellingrath Home. “The enormity of what had just transpired began to dawn on our winedamaged minds and we hightailed it up to our rooms. We now needed more drinks and we called room service for several bottles of red,” writes Norman Van Aken. The “we” refers to himself, Emeril Lagasse and Charlie Trotter. The location? Miami’s posh Turnberry Resort. “I knew [Charlie had] been right about this guy Emeril, and I knew [he] was going to enjoy retelling this saga for decades to come,” Van Aken writes in his memoir’s prologue. The saga involves smashed Louis XIV chairs and a scared maître d’ in Turnberry’s Verandah Bar. The reason? The maître d’ was “trying to paw [Van Aken’s] wife.” And that’s how an evening honoring Julia Child concluded and how No Experience Necessary opens – so prepare for a thrilling ride. Norman Van Aken’s memoir, released in December by Taylor Trade Publishing, spans more than two decades full of priceless moments, colorful characters and inevitable setbacks. For Van Aken, the road to Ithaca had plenty of bumps. But he “still enjoyed” each moment, he told me. “I wanted to share the true progression of a chef,” he said about his new book. That is, one doesn’t graduate high school and then turn into a celeb chef the next day. The road was long, full of adventures. He hopes that No Experience Necessary reaches beyond the restaurant world. Anyone still searching for what they want to do with their life, or any individual struggling with a career obstacle, can see how success is a journey. In other words, don’t expect things to fall into place over night. “This is a love story of survival,” Van Aken told me. It’s about surviving career setbacks, but it’s also a love story between him and the girl he met in the first kitchen, his wife Janet. “When you start your very own restaurant and you’re the chef and co-owner, you have entered a very dangerous world. You become a ghost to your wife, husband, children,

parents, and friends outside the restaurant world. Each moment is about YOUR MENU,” he writes in his memoir. Despite the bumps and challenging times, the Van Akens survived. “His brilliant story telling,” says Emeril Lagasse, “will leave you inspired and hungry for more.” It does.

THIS IS A LOVE STORY OF

Chef Norman, the only Floridian inducted into the James Beard “Who’s Who of Food and Beverage in America,” introduced “fusion” into the modern culinary vocabulary in 1988. And in 2006 he was honored as one of the Founders of the New American Cuisine. “Norman Van Aken was a true pioneer of the American food movement in the 1980s, when chefs began to combine regional inspirations with modern cooking techniques,” says Wolfgang Puck. “He was the first to blend Florida and Caribbean flavors with a classically trained approach to fine cuisine, and the first meals I ever ate in his restaurant were revelations […] including a creamy conch chowder with sweet corn, and amazing foie gras [sic] served on top of French toast,” Puck recalls. “But one of the best things about the dining experience he has always offered is his warm, kindhearted, good-humored personality. It comes through in this book, just as it does in his cooking to this day.” In Orlando, we know Van Aken as one of the masterminds behind Norman’s Restaurant in the Ritz-Carlton, Grande Lakes. In late August he celebrated the 10th anniversary of his Orlando restaurant, where guests savored a $1000 dinner created by some of the best chefs, including Lagasse, Jeremiah Tower and Dean Fearing. The fine dinning venue has earned top honors as one of the nation’s best restaurants, and the New York Times once called Van Aken Florida’s most gifted chef. But before winning multiple awards,

Chef Norman played several roles in his life: roofer, carnie, house painter, actor … Of course, his role as short-order cook led him to his culinary destiny. No Experience Necessary chronicles his thrilling journey, along with great recipes interspersed between each chapter. “Norman Van Aken is the Jimmy Page of his profession – a man who was THERE at almost every important moment in its history. The OG of South Florida, New World cuisine, and a guy who knows where every body is buried … many of them to be found in No Experience Necessary,” says Anthony Bourdain. Along the way, Van Aken met a multitude of intriguing characters that added to his adventures, or played the role of culinary mentors. One of these mentors was Chef Fred Boomer who missed the “era of ‘celebrity’ chefs,” Van Aken explains in his memoir. “Cooking was still looked at as a deadend job, the result of destructive and pitiable life, not even a profession back then,” he writes. In fact, cooking positions were posted next to stripper ads in the newspaper. Boomer cooked at the Holiday Inn in Greeley, Colorado. It was 1974. After a bad car accident that left Boomer with broken arms, Van Aken had to learn how to cook his mentor’s specialties – his soups. They reflected Boomer’s world travels with the Navy, and Van Aken started to work with exotic flavors like Greek avgolemono (“with its bright lemony notes and satisfying chicken-stock backbone”). This experience may have influenced his future fusion kitchen, but Chef Norman’s culinary eureka moment happened on his beloved island, Key West. It was a morning in 1987 when Van Aken sat on the deck behind Louie’s Backyard. He looked up from the open cookbooks and saw a sailboat drifting south. “I too drifted with it for sometime,” he writes, “wondering where it might be going and what the sailors would see, touch, and taste when they got there.”

accept. The playwright must’ve liked the refreshing concoction because “he [later] set the empty glass down, leaned over, elevated himself on his toes, gave [Norman] a little peck on [his] forehead, and then rejoined the cast out by the pool.”

That’s when everything clicked. Once enamored with the food revolution at Alice Waters’ Chez Panisse in California, Van Aken now set out to change the South Florida culinary landscape, and with that, change North American fine cuisine. “The American culinary landscape would not be the same without his vision,” says Mario Batali, “his authenticity and his highly personal and remarkably provocative food – and his food would be as delicious if not for his story and the recipes in this essential tome.”

SO WHAT’S NEXT FOR CHEF NORMAN?

More great moments took place in Key West, including his favorite, but that will give away the ending of his book. When asked to pick from his other special moments documented in No Experience Necessary, Van Aken will tell you about the night he partied at Tennessee Williams’ house on Duncan Street. He wanted the role of Stanley Kowalski (Marlon Brando’s role in A Street Car Named Desire), but he ended up playing the neighbor. After Tennessee Williams came to the final rehearsals at the Key West community theater, he threw a house party for the cast. Somehow, Van Aken ended up in his kitchen. “Whatever on earth are you making, my boy?” asked the literary icon. “Some tamarind iced tea. Would you like a glass?” Van Aken hoped he would

That’s when a serious thought about South Florida’s cuisine came to mind. “I thought about how North America’s music had evolved, how its literature and architecture and dance were amalgamations of cultures bumping up against one another,” he continues. “Key West was a place where Spanish, African, and Anglo influences converged, yet the food we were eating […] seemed almost frozen in time,” Van Aken remarks. This epiphany directed him to his new teachers: “In the cafés and homes of South Florida.”

“Tennessee Williams just kissed you on the head,” Van Aken heard his inner voice say. Perhaps one can look at this as a blessing.

“I do imagine writing another book,” he told me. But he has to figure out an angle so it’s not a repetition of No Experience Necessary. He sees himself as both chef and writer. He has penned five cookbooks, including My Key West Kitchen co-written with his son Justin. Maybe he’ll open another Norman’s in the future, not sure, but it’s more likely that he’ll open a “freestanding restaurant, something smaller.” Until then, there’s Norman’s Restaurant in Orlando and Tuyo in South Florida. (Tuyo is part of the Miami Culinary Institute, where Van Aken is Chef and Director of Restaurants.) The New World Cuisine’s OG truly enjoys his craft. He always makes sure to create “layers of flavors,” he said. When someone takes ten-twelve bites, each “bite should be different,” Chef Norman told me. In other words, he wants “flavors to keep coming at you.” He aims to create “a taste of Florida on a plate.” And in his writing, he wants to share stories that touch his audience; he wants to give them a “taste of life.” <

Kathleen also serves as a National Director for the National Association of Realtors. She talks to people in neighborhoods every day and has a pretty good idea of what works and what does not. She, for one, has a vested interest. “We sell communities,” she says. “If they’re broken, I can’t do my job.” She cares deeply about her home town and strives to bring excellence back to everything she is involved with. Kathleen’s involvement in the community is well-documented. She served as the 2012 chair of myregion.org with the Central Florida Partnership, was a Rotarian for 12 years including a Paul Harris Fellow, and is involved with the Children’s Miracle Network, served as Vice President for the Emergency Medicine Learning & Resource Center. She is also on the Board of Directors for Seminole State College Foundation, and is currently working on homeless children with families initiatives in Seminole County. She says beyond all the accolades and recognitions throughout her career, her biggest thrill is still being part of that happy moment when a first-time homebuyer gets the news they are getting their first home. “They are jumping up and down,” she smiles. “They are so excited. To me, sharing that joy - that’s what makes you a success in life”. <

> Deborah Garson calls herself a “walking billboard” in her enthusiasm for RE/MAX, its entrepreneurial culture and emphasis on lifelong learning. It was a good fit for this energetic woman with a thirst for knowledge. She has successfully educated and marketed herself, one designation at a time, which shows other realtors how to not only stabilize their business, but to further it through education and diversifying their talents so they can “shift gears” and change focus during good times and bad in the economy. “I see education as architecture: Every course, every certification is another facet in the building my business. “ In the decade she’s been with RE/MAX Properties SW in Orlando, Garson has completed many courses and added a string of designations and certifications to her list of credentials, including Institute Luxury Home Marketing (LHMS), Certified Distressed Property Expert (CDPE), Five Star REO Certification, REO Trans Certification, RES.NET REO Certification, among others. Before choosing a career in real estate, this RE/MAX Hall of Fame member spent years as an executive at luxury hotels. Once she joined RE/MAX, she knew she wanted to continue serving the international clientele she often worked with in the hotel industry. The Certified International Property Specialist (CIPS) and the Certified International Real Estate Specialist (IRES) designations gave her a start, and soon revved up her career. Today, international clients make up almost a third of her business. “The CIPS course was a game changer for me,” Garson says. “It gave me the confidence and the credentials to attract with international clients.” She says the course’s focus on international business protocol, foreign conversion and global-level communication were particularly relevant. Adding ILHM training in luxury properties made her uniquely positioned to work with inter-

national clients pursuing second homes, often luxury residences. Garson says, most of these buyers are aware of the CIPS designation, and they respect it. “International buyers often face financing and contractual complexities that other buyers don’t,” she says. “My training tells them that I can anticipate and overcome their specific challenges.” In the architecture of her business, local and international clients may form the foundation, but she built the next level by mastering a completely different market: distressed properties. Garson says, earning the REO and the CDPE designations opened doors to working with banks during the downturn, when REO and short sales became a significant portion of her business. She enjoyed the challenge and found working with struggling families especially satisfying. She liked counseling underwater homeowners, many of whom eventually became her clients. “It takes a long time to really develop the short sales business,” Garson says, “But in the meantime you can really help people out by explaining the different financial avenues they can pursue.” Today Garson describes her market as “stable.” She’s using this time as an opportunity to develop yet another facet of her business: first-time buyers. Garson plans to offer a series of how-to seminars for employees of local theme parks and hotel. “I want them to understand how today’s low interest rates represent a real opportunity for homeownership,” she says. It’s somehow fitting that Deborah Garson, a firm believer in education, is expanding her professional horizons by teaching others. This lifelong learning wouldn’t have it any other way. <

West Coast Swing is a partner dance characterized by an elastic look and consists of an extension-compression connection, making it a very unique dance. West Coast Swing compares to no other

West Coast Swing is a slotted dance, a dance in which many people dance on the floor at the same time, and it can be kept small or made larger depending on how much room is provided. SAVE A PET FOR THE HOLIDAYS By Cathleen K. Bode

> That cuddly kitten or fluffy puppy is high on Santa’s wish list for many families each year. Before making that wish come true for your kids, keep in mind that pets aren’t presents that may be returned or exchanged without some consequence after the holiday ends. Each year, 7 in 10 cats and 5 in 10 dogs left in shelters don’t make it out alive… That is an ultimate price to pay indeed. If you’re already on stress overload, it’s a good idea to wait. Either adopt a pet before the holidays or after the holidays when life isn’t so crazy. And, when you are ready, make sure you choose your pet wisely. Don’t support puppy mills by shopping in pet stores or shopping online for pets. Do check out the shelters and rescues and do your homework on the pet and organization. Here are some tips on what to consider before adding a new pet: WORK AND TRAVEL SCHEDULE – If you work long hours and travel a lot, consider how much time, if any, you may have to devote to a pet. Good dog walking and pet sitting services can be a godsend. Check out some of the services available in your neighborhood before you take the plunge. TIME CONSTRAINTS - Dogs need to be walked, trained and kept on a tighter schedule and cats need attention to thrive in their home. Some rescue animals may have other issues that need to be addressed. Deciding how much time you have to devote to training a new pet OrlandoStyleMagazine.com

and getting them settled in could help you decide what kind of pet that will work best for you. LIST YOUR EXPECTATIONS – Take the time to think about how much time you want to dedicate to play, exercise and training your new pet. Kittens and puppies need lots of training while many adult pets in shelters and rescues are often trained, kid-tested and better suited for an active household. Senior pets are frequently overlooked, but tend to adapt very quickly because they are used to being on a schedule. LONG-TERM COMMITMENT – Many dogs will live from 12-15-years-old and an indoor cat from 15-20-years-old. If you cannot commit to a pet for that length of time, consider adopting an older pet. PET DEAL BREAKERS – Some people won’t tolerate barking, others can’t handle any destructive behavior and others may have problems dealing with excess medical issues. Figure out what you can handle and use that as a benchmark when looking at potential pets. CONSIDER TIMING WHEN ADDING A PET – Pets of any age are settling into a new situation and the calmer your home can be from the start, the better. Young kittens and puppies are adapting to being away from their mothers and the holiday chaos may be too much for them. Pets tend to adjust better when a home is on a more consistent schedule. Adding the surprise of a pet to the midst of Christmas chaos is very stressful to a new pet. SEARCHING FOR A PET – There are a variety of shelters and rescues that cater to a wide range of animals. Check them out and then talk to the people at the rescue. Find out how long animals are in isola-

tion after being rescued, have they been vetted, vaccinated, spayed or neutered, have they spent time in foster home and have they socialized with volunteers so you know more about their behavior. FAMILY INVOLVEMENT – Some animals handle commotion and kids better than others. If your whole family takes the trip to the shelter for a kitten adoption, puppy adoption, dog adoption or cat adoption, it will be easier to determine which animals react best around your family before you sign the adoption papers. Share some of the information you’ve determined from this checklist with the adoption counselors at the shelter and rescue. They are trained to help families make selections that fit best with their lifestyle. If you’d like to add a pet after the holidays, consider putting together a care package for your prospective pet so the kids have something to open on Christmas day. Adding a pet to your family is a very rewarding experience and could be the best long-term present you may give. Because pets at shelters and rescues have already lost at least one home at no fault of their own, it’s important to weigh your whole situation before adding a pet to your household. Dogs and cats are amazing creatures. They should be loved and cherished. They are wonderful companions; they reduce our stress and lower our blood pressure; they’ll keep us young at heart and they’ll love us unconditionally. If you have room in your heart and your home, please adopt, love them, care for them and make them a part of your family. <

> Oh joy! The tradition of the office holiday party offers many predictable trademarks: secret Santa, eggnog, festive decorations and tipsy co-workers. The goal? To partake in an epic party, dazzle the office in some threads you wouldn’t dare wear from 9 to 5, and exit gracefully and safely before the end-of-party wrap-up. To accomplish this, a few rules must be followed. So take notes everyone, because this holiday list should be checked twice. 1. The most obvious point first: have a designated driver. Arriving to work the following Monday with a new DUI is one way to make an unwanted and lasting impression on the company… 2. For employers, don’t make the party mandatory. No need to make your employees uncomfortable by forcing them to celebrate a holiday they may prefer not to partake in. 3. Talk shop if you must, but don’t talk money! There’s no better way to harbor resentment for fellow co-workers

than to find out you didn’t get the same holiday bonus as everyone else. 4. Follow your boss’s lead. Sort of. Is he or she drinking a glass of water in between each glass of wine? Pace yourself. Dance-offs and flash mobs can be fun! But careful – this isn’t the time to twerk a la Miley Cyrus. 6. Skip the mistletoe. Actually, be very careful when it comes to any physical affection. Holiday parties are ripe with potential sexual harassment suits. Alcohol creates those blurred lines and Susan from accounting may misinterpret the hug from Rick the CEO. Best to just keep the contact professional.

> The year is 1999 and Britney, a newly turned 17-year-old girl from the rural town of Kentwood, Louisiana, is due to release her first studio album. From childhood, her ambition has been to sing professionally and she’s been told that her fresh face, impressive vocals and sweet personality will help her achieve that dream. Although she’s both nervous and anxious to see how the public responds to her big debut, the dazzling smile throughout it all reveals the one emotion that surpasses all the others...excitement. January 2014 will bring with it the 15year anniversary of ...Baby One More Time, the album that introduced the world to the artist who no longer needs any introduction: Britney Spears. The universally recognized pop icon and her dizzying collection of awards and accolades have earned her the much-deserved title of “Princess of Pop.” From

“(You Drive Me) Crazy” to my personal favorite karaoke choice, “Lucky,” Spears’ songs have become an instant nostalgia trigger to the millions who grew up listening to her signature hits. Who could forget the first time you tuned into MTV and saw the music video for ...Baby One More Time? The world stared in amazement at the teenage girl who commanded our attention with her snappy dance moves, large vocals and sexy Catholic schoolgirl attire. The video put Spears on a high-speed train to worldwide fame and it was immediately clear that there was no turning back. In April 1999, the 17 year old got her first taste of negative publicity when she appeared on the cover of Rolling Stone sprawled on a bed in nothing but shorts and an open top that revealed her bra. Many were in uproar over the blatant sexualizing of a minor and the cover went on to be considered one of

the top controversial magazine covers of all time. “I thought the pictures were fine. And I was tired of being compared to Debbie Gibson and all of this bubblegum pop all the time,” said Spears in her famous response to the outcry. As she embarked on her first headlining tour, Spears continued to generate controversy and criticism for her racy costumes which subsequently went on to become her signature look. In May 2000, Spears released Oops!... I Did It Again, her second studio album. Britney, her third studio album, was released in November 2001. Two years later, Spears followed Britney with the release of her fourth studio album, In the Zone. Her fifth studio album, Blackout, debuted in October 2007 and in December 2008, Spears’ sixth studio album, Circus, was released. There’s no question to the fact that her music still has an effect on the generation who grew up with her and the reaction to hearing those hits today is almost instantaneous pleasure and unashamed singing along. She’s achieved a level of superstardom touched by few, joining the ranks of Janet Jackson, Mariah Carey and Madonna in both talent and fame. breathalyzer and a six month suspension if the test was taken and the result was .08% or higher.

A first time arrest for DUI has consequences that include suspension of driver’s license, conviction of a misdemeanor and up to 6 months in jail. A third conviction for DUI within 10 years is a felony.

A recent change to the law allows one to immediately request a business purpose only (BPO) DL if the right to an administrative hearing is waived. If an administrative hearing is held and the suspension upheld, a person must wait 90 days before the BPO license can be requested, if they refused to take the breath test. If the breath test was taken, the period is 30 days.

DUI involves not just a criminal case but also administrative action by the Department of Highway Safety and Motor Vehicles. The first conviction of DUI causes a one year suspension of your driver’s license (DL) if you refuse the breathalyzer test. If the test is taken and the blood alcohol level is .08% or higher, the DL suspension is 6 months. Upon arrest for DUI, the DL is suspended after 10 days. This suspension can be contested by requesting an administrative hearing within 10 days of arrest. The administrative action results in a one year DL suspension if the person refused the SPECIAL PROMOTIONAL FEATURE

The decision to waive the administrative hearing is important and should be discussed with an experienced attorney. The best way to avoid these problems is to use a designated holiday driver when drinking and have a very happy holiday. <

IF YOU STILL WANT TO TRY THE GREEN COFFEE BEAN, THE DR. OZ SHOW RECOMMENDS YOU LOOK FOR BRANDS THAT DON’T CONTAIN FILLERS OR ARTIFICIAL INGREDIENTS.

> “You may think magic is make-believe, but this little bean has scientists saying they’ve found a magic weightloss cure for everybody,” said Dr. Mehmet Oz in 2012. Then sales of the green coffee bean extract skyrocketed. When consumed in moderation, coffee may have a positive effect on our health. In fact, epidemiological studies show that moderate coffee drinking can reduce the risk of developing certain chronic diseases. Even decaffeinated coffee aids in good health. So if it’s not the caffeine, then what makes java healthful?

Enter the polyphenols, a family of plant compounds rich in antioxidants. Various studies suggest that polyphenols found in coffee beans have health benefits such as inhibiting high blood sugar. A 2012 study, published in Diabetes, Metabolic Syndrome and Obesity, focused on the link between green coffee beans (unroasted seeds) and weightloss. Researchers studied the effects of chlorogenic acid (CGA), one of the natural coffee compounds, and found a potential link between CGA and body fat reduction. Joe Vinson, Ph.D., professor of chemistry at the University of Scranton, led the 22-week study. Successful participants who received Green Coffee Antioxidant (GCA®) had an average of 16% body fat reduction. Does this mean we’ve found a magic pill to end obesity? When looked at carefully, the study has a few methodological issues, including a small sample size – 16 adults. Moreover, Applied Food Sciences, the company that makes green coffee antioxidant supplements, funded the study. So Dr. Oz conducted his own experiment. In two weeks, the 50 women who took a daily supplement lost an average of two pounds, while participants who took the placebo lost an average of 1 pound. Despite the non-dramatic results, Dr. Oz still stands behind the extract, and recommends capsules that contain at least 45% chlorogenic acid. Of course, conventional coffee contains CGA too. Then why spend the extra cash? See, when coffee beans are roasted, CGA levels decrease. That’s why green coffee bean promoters recommend the supplements. Keep in mind,

however, that they’re not regulated and not enough studies have been conducted to rule out possible adverse effects. In the spring of 2013, a study published in the Journal of Agricultural and Food Chemistry didn’t support weight loss associated with CGA consumption. Compared to normal diet fed mice, the highfat diet and high-fat diet supplemented with CGA mice gained more weight. Although body weight increase didn’t differ between the two high-fat diet groups, fatty deposits accumulated in the livers of mice who were on the supplemented diet. These little creatures had higher blood sugar levels too. It should be noted that the study used a higher dose of CGA compared to studies that claimed chlorogenic acid reduced weight gain in high-fat diet mice. If you still want to try the green coffee bean, the Dr. Oz show recommends you look for brands that don’t contain fillers or artificial ingredients. “When looking for a green coffee supplement, it should contain the chlorogenic acid extract, which can be listed as any of the following: GCA® or Svetol®,” states the Fact Sheet on Dr. Oz’s official website. Just like with all supplements, consult your physician before starting this diet program. But don’t expect a magic bean that’ll allow you to make bad food choices and still shed pounds. A low-fat diet, rich in fruits and vegetables, can ward off diseases. And a healthy diet in combination with regular exercise can keep obesity away. <

ABDOMINAL AORTIC ANEURYSM – JONATHAN A. HIGGINS, M.D. What is an abdominal aortic aneurysm (AAA)? The aorta is the largest artery in your body, and it carries blood away from your heart to the rest of your body. The segment of the aorta located in the abdomen is called the abdominal aorta and it supplies blood to the lower part of the body. The aorta splits into two branches called the iliac arteries, which carry blood into each leg. An abdominal aortic aneurysm (AAA) is a weakness or bulge in the aorta. Aneurysms are a health risk because they can burst or rupture and, less commonly, AAA can send clots or debris that form within the aneurysm through the blood vessels to other organs in your body.

If your aneurysm bursts, you may suddenly feel intense weakness, dizziness, or pain, and you may lose consciousness. This is a life-threatening situation and you should seek medical attention immediately.

RISK FACTORS: •Men older than 60 years •Immediate relatives, such as a mother or brother, with AAA •Hypertension •Smoking

IMAGING: •Ultrasound •Computed Tomography scan (CT) •Magnetic Resonance Angiogram (MRA)

SYMPTOMS:

•A pulsation in your abdomen •Severe, sudden abdominal or back pain. If this is the case, your aneurysm may be about to burst •On rare occasions, your feet may develop pain, discoloration, or sores on the toes or feet because of material shed from the aneurysm

Observation Small AAA are generally followed up every 6-12 months with imaging to identify signs of changes in the aneurysm size. Close follow up is extremely important. Open Surgical repair Open aneurysm repair is the standard approach to an aneurysm if it is symp-

tomatic, larger than 2 inches, or is enlarging rapidly. During an open aneurysm repair, an incision is made on your abdomen and the weakened part of your aorta is replaced with a synthetic tube called a graft. This tube takes the place of the damaged aorta and allows your blood to pass through it. Endovascular stent graft (Endograft) Endovascular means that the treatment is performed inside your artery using long, thin tubes called catheters that are threaded through your blood vessels. This procedure is less invasive and usually only small incisions in your groin are made through which to thread the catheters. During the procedure, x-rays are used, to guide endograft placement within the aneurysm. Like the graft in open surgery, the endovascular stent graft also strengthens the aorta. Fortunately, especially when diagnosed early before it causes symptoms, an AAA can be treated, or even cured, with highly effective and safe treatments. Most people who undergo treatment do well and live healthy and productive lives. The key is early detection!

When Your Ice is On the Line By Travis Joiner

> So a question not many of ask or even think about when we order our favorite cocktail is what kind of ice should be joining it in the glass. Most places you go to will give you the standard cubed ice and send you along your merry way. This is starting to change in watering holes throughout the country. Who knew you could be getting cubed, crushed, chipped, shaved or spherical ice all by what you order as you belly up to the bar. Ask your bartender for a Manhattan up, for example, and see how they choose to build that classic cocktail using ice and a shaker or mixing glass. I would be willing to bet you see a bartender spoon and a nice stir nine times out of ten these days. The ice takes on a roll at even this stage as a nice stir chills your beverage of choice without watering it down. All these things your bartender does regularly to make sure you get your drink the way you want it and the ice plays a major roll more than you thought. Now having different types of frozen water behind the bar has been a practice that has been popping up as the trend in the industry is starting to look back at the way things used to be done at old speakeasy’s and the like. I like to see it as a reinterpretation of the classic bar from the modern craft bartender. We have started

to embrace the way things were done to ensure that guest experience and getting back to a time where the cocktail was the star at the bar. The ice that rolls and frolics in your glass is one way this is happening. We even have several bars around who either make or purchase whole blocks of ice to use for that evening. The bartender will have a station just for chipping or blocking your ice to order. For example, let’s say you just got out of the cold winter chill in Florida, just pretend, and you want a nice single malt scotch. Most places will usually give you a cube or two if you want ice. Now imagine that you walk in and order the same thing and floating majestically in the middle of that smoky single malt is one solitary island of ice. A giant cube or perhaps a half-spheroid hunk of glacier that is cooling every sip ever so slightly as it hits your lips. This allows the whisky to shine and cause a marriage in the glass between spirit and ice that really is a wonderful present this time of year. We also have the other end of the spectrum that deserves notice. Wonderful cocktails like juleps and brambles that play well together with crushed ice. If you can hunt down a proper tiki bar that uses crushed ice for certain drinks and order whatever it is and see how those frozen little pellets of ice assist in making that cocktail shine. Packed in tight they are small but resilient

when around their peers and don’t succumb to melting like one would think. It is a refreshing julep that can save many a hot day in these parts so do yourself a favor and ask if they do or if they are willing to serve one with crushed ice. We could probably go into the rabbit hole and talk about all types of things from up or rocks or shaken or stirred but I think you get the picture. This is a craft and ice plays an important role in what you order and how you enjoy it. Know this, the options are mind-boggling for those who are heavy into this trend and we as consumers all benefit from the bartenders who have rediscovered this knowledge. There are plenty of examples where the proper ice paired with its spirited counterpart heightens a truly great cocktail and bar experience. I challenge all of you to seek these local places out over the holidays and see what has been missing in all of our glasses. These guys and gals who are bringing us back to a time and place where the cocktails are the stars and so are the people who craft them. Does what you put in your glass matter to your experience when you hit your favorite watering hole? You bet your Ice! <

OCTOBER 9 - KNOX Cassidy Bentley & husband Dierks Bentley Country singer Dierks Bentley celebrated the birth of his first son with wife Cassidy on October 9th. The baby boy, named Knox, is the couple’s third child and joins older sisters Evelyn Day and Jordan Catherine as a part of the family. Dierks and Cassidy have been married since December 2005.

OCTOBER 14 - JOSEPH FREDRICK KUSHNER Ivanka Trump and Charles Kushner Daughter of Donald Trump and businesswoman Ivanka Trump, alongside husband Charles Kushner, welcomed another member to the prestigious family. Ivanka’s son, Joseph Fredrick Kushner, was born on October 14. As the couple’s second child, baby Joseph makes Ivanka’s daughter, Arabella Rose, a big sister.

APRIL 8 - ANNETTE FUNICELLO

Patti Page, one of the best-known female artists of the 1950s and 1960s, passed away at age 85 on the first day of the year. Prior to her struggle with heart and lung disease, Page had made country and pop music history with chart-topping records, such as her beloved song, “Tennessee Waltz.” She has been posthumously awarded the Lifetime Achievement Grammy Award in 2013.

From her early days as one of the original Mouseketeers to her beach party movies of the 1960s, Annette Funicello has become an American cultural icon. The actress and singer, known for her films alongside Frankie Avalon, died on April 8th from complications due to multiple sclerosis. She is remembered as the queen of the beach movie era.

FEBRUARY 17 - MINDY MCCREADY On February 17th, country singer Mindy McCready was found dead on the front porch of her Arkansas home. The singer, who had battled drug addiction during much of her time in the spotlight, ended her own life with a self-inflicted gunshot wound at the age of 37. She had success in the late 1990s with popular country hits, notably her song, “Ten Thousand Angels.”

MARCH 30 - PHIL RAMONE Recording engineer and record producer Phil Ramone ended his established music career on March 30th when he died from a brain aneurysm. The South African born Grammy Award winner had produced and engineered records for Aretha Franklin, Bob Dylan, and Frank Sinatra. He was 79 years old.

APRIL 4 - ROGER EBERT Film critic extraordinaire Roger Ebert passed away on April 4th, ending his battle with cancer at age 70. As a well-known film critic for the Chicago Sun-Times, Ebert became synonymous with film, even attaining the title of first film critic to win the Pulitzer Prize for Criticism.

APRIL 16 - PAT SUMMERALL Pat Summerall, American football player and television sportscaster, died on April 16th at age 82 from cardiac arrest. As a correspondent for Fox, CBS, and ESPN, Summerall has announced 16 Super Bowl games on network television, more than any other sportscaster.

APRIL 26 - GEORGE JONES “He Stopped Loving Her Today” singer George Jones, known for his distinctive vocal style and legendary status as an American songwriter, passed away on April 26th from respiratory failure. The infamous country icon ended his unparalleled career at age 81. Jones had over 150 hits during his lifetime.

MAY 20 - RAY MANZAREK Ray Manzarek, one of the founding members of the progressive rock band, The Doors, died on May 20th from cancer. Serving as The Doors’ keyboardist until the band’s breakup in 1973, Manzarek saw success with rock classics such as “Light My Fire” and “People are Strange.” Manzarek was 74.

following heart surgery. The stage and film actor gained international popularity for his role as Harry Potter’s uncle, Vernon Dursley, in the Harry Potter film series. Griffiths had received a Tony Award and the Laurence Olivier Award for Best Actor.

JUNE 6 - ESTHER WILLIAMS Esther Williams, professional swimmer turned Hollywood movie star, died on June 6th in her home in Beverly Hills. The 91-year-old actress had success in MGM films, starring in roles that required her swimming talents. The swim champion even played herself in the autobiographical film, “Million Dollar Mermaid.”

JUNE 19 - JAMES GANDOLFINI While on vacation with his family in Rome, The Sopranos star James Gandolfini died unexpectedly on June 19 from a suspected heart attack. The 51-year-old actor had won three Emmy Awards for his portrayal of Tony Soprano, a role that had gained him international fame.

JULY 2 - DOUGLAS ENGELBART At age 88, famed inventor and engineer Douglas Engelbart died on July 2 from kidney failure. Known for inventing the computer mouse, Engelbart helped develop innovations in computer technology, including advancements in online processing and display editing.

JULY 13 - CORY MONTEITH On July 13, all of America was shocked to hear that mixed-drug toxicity took Cory Monteith’s life at the young age of 31. The Canadian actor was found dead in his room at the Fairmont Pacific Rim hotel in


2013 Vancouver. Monteith will be remembered for his portrayal of Finn Hudson on Glee, the television series that transformed Monteith into an international sensation.

Prize for literature, and has written several recognizable works, such as “Death of a Naturalist.” He is a famed poet, playwright, and translator, known especially for his translation of the Old English classic, Beowulf.

JULY 26 - J.J. CALE Grammy winning songwriter J.J. Cale died from a heart attack on July 26th. The 74-year-old musician had reached success by writing songs for rock legends, such as Eric Clapton and Lynyrd Skynyrd. Cale released his debut album in 1971, but he officially broke onto the music scene with Clapton’s rendition of his song, “After Midnight.”

JULY 22 - DENNIS FARINA Known for his portrayal of tough characters in television series such as “Law & Order” and “Miami Vice,” Dennis Farina passed away on July 22nd at age 69 from a lung embolism. Farina became an actor after a long career as a Chicago police officer, a past that helped him channel the signature persona he brought to his television roles.

AUGUST 20 - ELMORE LEONARD Elmore Leonard, winner of the F. Scott Fitzgerald Award for outstanding achievement in American Literature, died on August 20th at age 87. The novelist has published over 45 novels, and his works have been adapted into screenplays for films such as 3:10 to Yuma and the FX television series Justified.

AUGUST 30 - SEAMUS HEANEY Irish poet laureate Seamus Heaney died on August 30th at age 74, due to illness. Heaney is the winner of the 1995 Nobel

SEPTEMBER 12 - RAY DOLBY On September 12th, Ray Dolby, inventor of the Dolby Noise-Reduction system, died from leukemia. The 80-year-old inventor revolutionized cinema and home entertainment with Dolby digital surround sound, and he received an Academy Award, a Grammy Award, and multiple Emmy Awards for his accomplishments in audio engineering.

SEPTEMBER 27 - GEORGE SCOTT Baseball great George Scott passed away on September 27th at age 69, due to his struggle with diabetes. Scott served as the Red Sox’s first baseman with a batting average that was fourth best in the American League. His major league career spanned 14 seasons, and his record for hitting 271 home runs made him a three-time All Star.

OCTOBER 1 - TOM CLANCY On October 1st, novelist Tom Clancy passed away at age 66. Best known for his novels with political themes and military plot lines, Clancy became immensely popular with his 1984 novel, “The Hunt for Red October,” which was adapted into a film a few years later. He leaves a legacy of 17 New York Times bestselling books.

OCTOBER 10 - SCOTT CARPENTER Scott Carpenter, one of America’s great astronauts, died on October 10th at age 88. In 1959, Carpenter became a member of one of NASA’s first astronaut crews, the original Mercury 7. Carpenter made many extraordinary accomplishments throughout his career, including his standing as the second American to orbit the earth.

OCTOBER 27 - LOU REED Lou Reed, the iconic frontman of progressive rock band The Velvet Underground, passed away at the age of 71 on October 27 due to liver disease. The groundbreaking singer, known for his signature voice and haunting melodies, broke the barriers of rock music by exploring and discovering modern guitar techniques, as well as challenging the music industry with thought-provoking lyrics. Reed lives on as a legend in music history, and he will forever continue to live through the many bands and singers who have been influenced by his greatness.

NOVEMBER 5 - CHARLIE TROTTER On November 5, world-renowned chef Charlie Trotter passed away at age 54. The trailblazing chef found success in the kitchen with restaurants such as Charlie Trotter’s in Chicago and Restaurant Charlie in Las Vegas. Trotter was known for his exquisite flair for flavor as well as his philanthropic heart, and he helped bring to life the Charlie Trotter Culinary Education Foundation, which educates America’s youth about the culinary arts. Trotter was arguably one of the most influential American chefs and will forever be remembered as one of America’s finest restaurateur.
