THE CASE FOR MODERATION

In case you were trapped on a deserted island with no internet for the past year, you might need to be informed that we just had a very contentious election season in the United States. Families were ripped apart, friendships were ended. Sides had to be taken and there was no room for moderation. When did this all begin? Some have made the case that it started four years ago. Others contend that it goes back forty. And while pundits argue about the starting date of our political polarization, the roots of our need for absolutism may stretch further back than that, and right into our kitchen cabinets. As the holiday season approaches and we gather our guilt for the sins of gluttony we are about to commit, we also start to contemplate which diet we’ll then switch to in order to atone. Very

few of us have moderation on our minds. And at least as far as the kitchen is concerned, we have Dr. John Harvey Kellogg to thank for our extremism.

“Which diet works the best?” I’m often asked, especially this time of year.

Back in the 1800s, Dr. Kellogg ran a health spa. But this was no ordinary health spa. Besides being a physician, Dr. Kellogg was also a religious man and he promoted abstinence from sex, alcohol, and meat. While the French and Italians were enjoying wine, rich foods, and the occasional tryst, Dr. Kellogg developed bland-tasting corn flakes in order to help curb American sexual appetites that he thought were stimulated by the consumption of delicious food. By his calculation, good food, like good sex, was something to be resisted, not enjoyed.

Studies comparing low carb to low fat to calorie counting to intermittent fasting abound. And yet, we still don’t have an answer. The best anyone has come up with is that some diets work for some people and no diet works for everybody. In the short term, most diets result in weight loss and in the long term, very few do. Americans probably diet more than any other people on Earth and still, we have one of the highest rates of obesity in the world. It is estimated that 40% of Americans suffer from obesity while less than 20% of French people and fewer than 10% of Italians do. (https://www. oecd.org/health/obesity-update.htm)

Fast-forward 150 years and we get a myriad of extreme diets that we are told will make our lives better, but that rarely do.

How is it possible that the French and the Italians are eating richer food, dieting less, and still avoiding obesity?

In a word—moderation. Around the world, people who eat reasonable amounts of fresh food, are thinner. They don’t need to avoid entire food or nutrient categories. They simply eat sensibly, stopping when full. When we eat fresh, less processed food, our bodies are better at signaling us to stop eating. When we eat highly processed, so-called convenience foods, the off switch doesn’t work very well and we eat more and subsequently gain weight. It turns out that Dr. Kellogg was sadly misguided. By processing his grains into more bland, less textured flakes, he wasn’t promoting health, he was launching us into an era of obesity. Instead of curbing our appetites, he was stoking them.

Extremism rarely plays out the way it was supposed to. For this holiday season, it might do us good to resolve to look at our plates and instead of piling them high with things that we’ll regret later, instead make better choices upfront. More isn’t better, but deprivation isn’t right either. The key to health is to ignore the false promises made by overly processed, highly marketed foods and instead make the choice to consume real, minimally processed foods year-round. It’s much harder to fix the consequences of extreme choices than it is to just make good ones in the first place.

THE EXPRESSIVE DESIGN OF THE AUDI E-TRON GT PLACES UNUSUALLY HIGH DEMANDS ON PRODUCTION QUALITY.

The Audi e-tron GT is the brand’s first fully electric car to be built in Germany. The Gran Turismo will start rolling off the production line at Audi Böllinger Höfe at the Neckarsulm site at the end of 2020. The small-series production facility has been expanded, upgraded, and converted for its new role. The skilled craftsmanship from the previous facility has been retained and is supplemented by digital processes and smart technologies. During the expansion, production planners made use of new virtual methods. The tests of the work procedures on the assembly line and the logistic processes were conducted in the virtual domain for the first time, with container planning also performed with the help of VR technology. Production of the e-tron GT was designed without physical prototypes – a first at Audi. Large areas of the body of the all-electric Gran Turismo are constructed from ultra-highstrength steel and aluminum. To produce this material mix in the planned quantities, a body shop was established that combines the skilled craftsmanship of the employees with the full potential of automated production technology. It consists of an innovative body assembly line along which each body passes twice. It is constructed around what is called the two-way framer, in which ten robots are used to attach the inner and outer side panels. It combines all manufacturing steps involved in joining the sides in a single system – thus making production of the Audi e-tron GT possible on the existing floorspace. The inline measuring procedure for the bodies is also new. It guarantees even greater accuracy and can respond very quickly to minute deviations. At the end of the body assembly line is where precise craftsmanship comes into

play: Experienced workers fit the add-on parts and check the finish of the completed body. The expressive design of the Audi e-tron GT places unusually high demands on production quality – the side wall frame, for instance, has a remarkably large draw depth of 35 centimeters (13.8 in) between its highest and lowest point. The expanded assembly line includes 36 instead of the previous 16 cycles. The e-tron GT shares it with the R8 – this integration of two technically completely different cars is unique in the Volkswagen Group. Both models are moved using the same driverless transport vehicles and an electrically powered monorail system. At one station of the line, humans and robots work side by side. A 3D printer is also on hand to produce customized assembly aids at the employees’ request. Once completed, every car is driven for 40 kilometers (24.9 mi) on public roads, which also includes sections on the highway and in urban traffic. “With the integration of the Audi R8 and Audi e-tron GT, a unique combination of craftsmanship and smart factory technology is coming to life at Böllinger Höfe,” says Production Head Wolfgang Schanz in summary. “I am especially proud of the passion and spirit of our team.” The e-sound of the Audi e-tron GT Whether it’s quality, design or technical characteristics – the Audi e-tron GT is a car packed with all the passion of Audi. This also applies to the sound of the electrically powered Gran Turismo. Engineers Rudolf Halbmeir and Stephan Gsell conceived and designed the progressive electronic sound – on the computer, in the sound laboratory, inside the moving car, and in customer studies. As with every electric car, the e-tron GT also features the statutory acoustic vehicle alerting system (AVAS), although embedded within a broader acoustic spectrum. A loudspeaker fitted in the front of the vehicle emits the AVAS sound. For customers ordering the optional sound package, a second, large loudspeaker is added in the rear. In parallel, two loudspeakers in the interior provide an emotional sound experience. Two control units continuously remix the e-tron GT sound based on variables such as speed or accelerator position. The Audi drive select system allows drivers to set whether and how intensively they wish to experience the sound.

First thing is to exfoliate. This may be a broken record to some but it is probably one of the most important step in your skincare routine for the face (and body!) It helps with the removal of dry/dead skin cells on the surface of the skin. Exfoliation not only helps many skin problems, it also increases blood circulation, which in turn helps achieve healthy and glowing skin. BE CAREFUL not to over-exfoliate. If you over do it, it can cause skin irritation and inflammation, which can actually accelerate aging. You should try to exfoliate two to three times a week for normal to combination skin, and once a week for sensitive skin. Next is toning your skin. It’s important to buy a toner and use it after you wash your face/ exfoliate. Toners help remove oil and traces of dirt. (Toners are most helpful and necessary for people with oily or acne-prone skin) Toners also shrink your pores, just apply a small amount

on a cotton pad and gently blot or wipe your face. Another benefit is that it helps restore your skin’s pH balance. The skin is acidic naturally and when you clean your face, it can mess up the natural balance and your skin will work to try to get it back which can lead to oily skin, but using a toner will help restore the balance. Final steps are to get an anit-aging serum / collagen serums and moisturizer. These serums help with soothing and brightening of the skin and the long term use of these serums result in healthier and firmer skin, even skin tone, and fewer wrinkles. Choose serums that contain ingredients such as stable antioxidants, essential oils, retinol, vitamin C, and vitamin E. Serums do not replace moisturizers, so make sure to moisturize your face daily. It’ll boost hydration in your skin, prevent flaking and dullness, and work as a protective layer of moisture that lasts all day.

Dr. Ly Nguyen Eye Florida - Board-Certified Ophthalmologist Famous writer Fyodor Dostoevsky has a quote about serendipity and chance encounters: “We sometimes encounter people, even perfect strangers, who begin to interest us at first sight, somehow suddenly, all at once, before a word has been spoken.” It was this very chance encounter over twenty years ago with the late Dr. Jorge Camara that would guide Dr. Ly Nguyen’s future in ophthalmology. When looking back at Dr. Nguyen’s life, many signs point to her professional calling in the field of ophthalmology. When she was a child growing up in the countryside in Hue, Vietnam, she developed night blindness due to severe malnutrition. While studying at University of Hawai’i John A. Burns School of Medicine, she found out her father needed cataract surgery. Scary as these experiences were then, it allowed her to truly appreciate the gift of healthy eyes and vision. Dr. Nguyen came to the United States at a young age as a refugee. Like most immigrants, her family faced many challenges while settling in America. They lived in poverty and move from state to state seeking jobs and opportunities. Still, Dr. Nguyen was able to graduate high school as salutatorian and eventually secured prestigious scholarships for college and medical school. With Dr. Camara as her mentor, she developed an aptitude for patient care and medical research. Together with other international ophthalmology residents, Dr. Nguyen published articles in prominent ophthalmology journals about a new finding in the use of a computer-assisted image-guided system (InstaTrak) in surgery. Dr. Nguyen completed her residency at the University of Colorado Health Sciences Center where she received a Resident Research Award. While in residency Dr. Nguyen published articles in peer-reviewed journals including the American Journal of Ophthalmology and Journal of Cataract and Refractive Surgery.

After graduating, Dr. Nguyen practiced as an associate at Mittleman Eye Center. Needing work-life balance as a mother to her young son she started her own private practice, St. Cloud Eye Center, in an underserved community of Central Florida with a focus on exceptional patient care. St. Cloud Eye Center later became Eye Florida, and since has expanded to a third location in a 5,000-square-feet state of the art eye clinic within the Orlando Health St. Cloud Regional Medical Office Building. As a board-certified ophthalmologist, Dr. Nguyen specializes in cataract, oculoplastics, glaucoma, and minimally invasive eye surgery including facial rejuvenation procedures. Eye Florida offers comprehensive services, include routine eye exams, screening for eye disease, and testing—always with a focus on exceptional patient care. When Dr. Nguyen is not working, she is dedicated to giving back to her community. She contributes as a board members for the Orlando Health St. Cloud Board of Trustee and the An Bang Professional organization. She believes it is important to inspire the new generation, and that is by sharing her time and knowledge with aspiring young professionals. Two of her University of Central Florida College of Medicine mentees were recently selected to present a research paper at the Women in Ophthalmology Annual Meeting 2020 titled, “Postoperative outcome of cataract surgery with history of diabetes mellitus and socioeconomic status.” One lifelong goal is to write a memoir about her family’s escape from Vietnam in the 1980s and their journey through Hong Kong’s refugee camp. “These memories are stories of where we came from. As the President of Fields Auto Group, Dan Fields carries on an inspiring family legacy of almost fifty years, serving customers of the company’s 35 dealerships and the community as a whole with a passion for excellence, care, and compassion. Fields’ family history in the automotive business began in 1971, with Fields’ grandfather’s first Cadillac store in Evanston, Illinois. Then, the decision to purchase a BMW dealership brought the company to Central Florida. “In 1976, a relatively unknown company—BMW, was entering the United States, and we were one of their first dealers in Winnetka, Illinois.” Fields shares. “In 1989, the year I graduated high school, BMW contacted us, and there was a dealership for sale in Orlando.” “Then soon after I went to college, I went to University of Denver for business school and started in ‘97 in the car business. And by then, we had added a few franchises. We basically had a cluster of stores in Chicago and a cluster in Orlando.” Over the years, Fields Auto Group has expanded into more cities in the United States, including 18 locations in Florida, with many dealerships in Jacksonville, Fields’ largest market. Philanthropy is at the heart of Fields’ involvement in the family business, which began with his grandparents’ foundation, The Earl and Betty Fields Foundation. Today, Dan and his wife Amy run the family’s philanthropy projects. “We’re very involved with the March of Dimes and Make a Wish, and my wife is very focused on pediatric cancer. She is on the board of the children’s hospital at Arnold Palmer. In Orlando, New Hope for Kids is a charity we’ve been involved with since we’ve been in the market,” Fields shares. “We’ve really focused on communities around us that were hit hard by the pandemic, and we’ve picked out like certain food banks like Second Harvest and tried to support them during this time.”

In the face of the pandemic, Dan Fields has worked hard to put the safety of his employees and customers first. “Before we knew anything about the coronavirus, we had decided our number-one focus was safety and our number-two focus would be integrity,” Fields states. “We’ve required masks since the very beginning. That being said, we wanted to make sure someone that didn’t want to wear a mask could do a test drive at home, keep a car at home, and do the entire paperwork process at home,” Fields adds.

“You can come just like you did in the old days, and you will be protected because we disinfect the cars with a special chemical, we wear masks, we have plexiglass shields, we have hand sanitizer, and we do deep cleaning all day, everyday…Our employees are like family, so we wanted them to be protected, and it’s the same with our guests.” Recently, Fields Auto Group renovated Fields BMW of Winter Park, an $11 million refurbishment. With over 70,000 square feet including a spacious showroom, innovative enhancements, and top-tier customer amenities, this updated dealership location provides BMW clients with exceptional service and shopping experiences. “I’m so excited about the showroom. You can sit there in the showroom safely and see these cars whip by on I-4 underneath you…we had to raise the dealership about 30 feet,” Fields shares. “The end result is spectacular. It was designed to be more comfortable for the guests, and our lounge area has vastly improved.” The luxurious details that go into every aspect of BMW’s mission is certainly seen in the store’s café experience. “The café area itself is much more conducive to serving a lot of people, and the selection of food will be more gourmet,” Fields says. The Fields BMW staff has made your café experience both safe and enjoyable, with socially distanced outdoor seating. This attention to detail is reflected in Fields Auto Group’s award for Rolls Royce Dealer of the Year 2019, just one example of the company’s dedication to quality service and customer care. “If somebody goes to our Jeep store in Sanford, they should expect to be treated the same as a Bentley customer, and I’d be upset if they thought they weren’t.” says Fields. “It’s as simple as just caring about the people you’re dealing with.” Even with all of the improvement over the years, quality growth is definitely on the horizon for Fields Auto Group. “We certainly would like to grow, but our growth is very focused,” Fields states. “We want to grow with successful brands in the regions that we’re in. I see the success of all the people in the organization as my success. I just look at my job very simply: I try to make the people, the leaders that work for me, successful. MEN of&theWOMEN year Gerald R Mattia D.C. has been practicing chiropractic for 43 years. Even before that his life has not been ordinary. At the age of fifteen he had been given 6 months to live. “I was born with a severe heart condition called aortic stenosis.” People suffering from this condition have an aortic valve in their heart that gradually degenerates and therefore the heart cannot function properly. Heart surgery in the sixties was not as successful as today. He also had bad allergies. His mother was not ready to give up. On a friend’s recommendation, she took her son to a chiropractor. “The aortic valve stopped closing by 92 percent and my allergies were gone.” Dr. Mattia said. He was able to live to the age of 35 when he received his first new aortic valve and the success rate of heart surgery was higher. Dr. Mattia became a chiropractor because of this. He earned his chiropractic degree from New York Chiropractic College and opened a practice in 1977. Dr. Mattia practiced in New Jersey from 1977 to 2001. During that time he received many awards: Chiropractor of the Year 1996 and Sports Chiropractor of the year several times. He was appointed to the Board of Chiropractic Examiners, on which he served for six years, by the governor of New Jersey. He was also a board of director for the International Chiropractic Association and the Northeast Regional Director. Dr. Mattia has been the president of International Chiropractic Association Sports Health and Fitness Council from 1996-2011 during which he joined Arnold Schwarzenegger every year in Columbus Ohio for the ICA Fitness Symposium. The Symposium is held in conjuncture with the Schwarzenegger Fitness Weekend. In his quest to provide clients with the best preventative and therapeutic chiropractic care available, Dr. Mattia studies research, treatments and technologies from around the world. Consequently his office houses some of the most unique, cutting edge technology available: decompression therapy machines which help with disc problems in the low back and neck eliminating the need for surgery, the LPG key

module for endermotherapy, class 4 laser to promote healing , and Spine Force which offers non static exercise for patients and helps rehabilitate and develop muscle strength for the core and intrinsic muscle of the spine. In 2001 Dr. Mattia retired from his NJ practice and moved to Florida to begin semi retirement. But the quiet time did not last too long. Dr. Saad Shaikh UCF College of Medicine & Orlando VA Medical Center Professor of Ophthalmology Although Dr. Shaikh grew up a California native, Orlando is now his home. Dr. Shaikh attended UCLA for his undergraduate degree and UC Davis for medical school. Afterwards, he went to Stanford University to train in ophthalmology and then specialized in retinal surgery at William Beaumont Hospital in Michigan. He arrived in Orlando in 2003 where his first job out of fellowship was with a local private practice. Dr. Shaikh established small-gauge microinvasive vitreoretinal surgery in Orlando by setting up the local operating rooms and proctoring several local physicians in the technique. He’s also taken part in several interesting local cases including a well-publicized surgical repair of a blind 2-year-old war victim brought to the United States, and specifically Orlando, for medical care who regained her vision after his intervention. After a few years in private practice, Dr. Shaikh made a transition to the public non-profit sector as one of the original faculty at the UCF College of Medicine and staff vitreoretinal surgeon at the Orlando VA Hospital. He has remained in academic practice and been responsible for numerous local medical education precedents having established multiple local ophthalmology residency affiliations and the region’s first retina training fellowship. He also serves as educational chair of ophthalmology at the UCF College of Medicine. Many of his trainees have gone on to have outstanding careers in the specialty and several have returned to serve the Orlando community. He currently supervises the visual electrophysiology service at the Orlando VA hospital and is in charge of ophthalmology postgraduate training. Dr. Shaikh volunteers in international telemedicine where he has served for many years as an Orbis and Doctors without Borders consultant for complex eye cases. He holds numerous local and national university professorships and has written several books, book chapters, and over 50 academic papers. His current research interests include artificial intelligence and nanoparticle work in the UCF Department of Engineering. Dr. Shaikh has a special interest in mindfulness and humanity in medicine and has taught several of his trainees to meditate. He hopes to train conscious and mindful surgeons who will be “good” doctors and understand that there is a deep spiritual truth in the patient-healer relationship, that the practice of healing is an art, passed on from one to another, generation after generation, and for those who appreciate it, the journey of a lifetime. Dr. Shaikh is currently single and enjoying life in Lake Nona, where he has raised his three lovely children, soon to all be in college. His Orlando favorites include the Magic, the Winter Park Bach Festival, Orlando Shakes, the Cornell and Orlando Museums of Art and dining on Park Avenue. He also enjoys travelling, photography, yoga, weightlifting, collecting books and art, and literature, but most of all life in Orlando.

Oh boy, where on earth do we begin? 2020 has been… um... well, let’s just say it’s been one for the books. Never in a million years could we have ever imagined all there was to come when the ball dropped on a brand new decade. Celebrity deaths? Sure, that’s always a given. Political drama? Ehh… not a huge surprise. Global pandemic that completely changed the face of the earth? Yikes! I think it’s safe to say we’re all ready to forget 2020 and get the new year’s ball dropped on 2021 (which you’ll have to watch virtually, by the way). In the meantime, here are just a few highlights from the top stories to come out of 2020.

AUSTRALIAN BUSHFIRES •••• Any hope we had that 2020 was going to be a great year was dashed just two measly days in when a third state of emergency was called to Australia as bushfires threatened the south coast of the country. The deadly wildfires caused entire cities to evacuate and burned tens of millions of acres. More than 100 species of wildlife required emergency intervention in order to survive, but at least one billion animals are still believed to have perished in the fires. THE DUKE AND DUCHESS OF SUSSEX •••• While Australia was burning to the ground, our friends across the pond were dealing with their own fiery drama. On January 8th, the Duke and Duchess of Sussex ended months of rumors and speculation by officially announcing that they were stepping down from their duties as senior royals in Buckingham Palace. Prince Harry and Meghan Markle made two big moves prior to the official transition period as they relocated first to Vancouver Island and then to Los Angeles. On April 1st, the duo officially resigned from the royal family and were ordered to stop using their royal titles.

PRESIDENT DONALD TRUMP IMPEACHMENT TRIAL & ACQUITTAL •••• On January 16th—barely a week after Harry and Meghan’s bombshell announcement—President Donald Trump’s impeachment trial in the Senate began. Prompted by a whistleblower complaint initiated last December, the 45th president of the United States was impeached on abuse of power and obstruction of Congress. On February 5th, three long weeks later, President Trump was acquitted of all articles of impeachment becoming only the third U.S. president to be impeached and subsequently acquitted by the Senate. KOBE BRYANT AND OTHER CELEBRITY LOSSES •••• 10 days after President Trump’s impeachment trial began, the world was heartbroken to learn that NBA legend Kobe Bryant, his 13-year-old daughter Gianna and seven other passengers were killed in a helicopter crash in Calabasas, California. The group was on their way to a game at Bryant’s Mamba Academy via a private helicopter which was flying during dangerously foggy weather conditions. The tragedy marked the first of many shocking celebrity losses in 2020 including Glee’s Naya Rivera, Black Panther’s Chadwick Boseman, Jeopardy’s Alex Trebek, 007’s Sean Connery, civil rights leader John Lewis, associate justice of the Supreme Court Ruth Bader Ginsburg and more.

COVID-19 GLOBAL PANDEMIC ••••

THE DEATH OF GEORGE FLOYD ••••

I think it’s safe to say we’re all pretty tired of hearing about COVID-19 so please feel free to skip ahead (you won’t offend me), but for the sake of being thorough, here’s a recap of the number one defining moment of 2020. On January 20th, the first coronavirus case in the US was reported in Washington state. At the time, the disease had killed 17 people and infected more than 470 people in China before spreading to several other Asian countries. On February 11th, the WHO named the coronavirus disease COVID-19 and just one month later, it was characterized as a global pandemic which forced the entire world into an unprecedented lockdown of historic proportions. From the cancellation of the Olympics and global mask mandates to record-breaking unemployment claims and stock market crashes, this is one item on the list that we’ll still be dealing with well into 2021.

On May 25th, the police-involved killing of George Floyd sparked a massive wave of peaceful demonstrations and violent riots across the world as millions demanded an end to police brutality and racial injustice. Four officers were immediately fired by the Minneapolis Police Department for their involvement in the killing and are currently awaiting trial for charges stemming from second-degree manslaughter to aiding and abetting unintentional second-degree murder. In addition to calls to reform police departments, numerous statues and monuments honoring persons or events associated with slavery and racism were vandalized, removed, or destroyed in the U.S. and throughout the world.

BREXIT •••• Prince Harry wasn’t the only Brit who had to make a major transition this year! After more than three years of deliberation, the United Kingdom officially left the European Union at the end of January. The move ended years of political turmoil, but inspired mixed reactions as celebrations and protests sparked across the country. British Prime Minister Boris Johnson spoke of the transition saying, “The most important thing to say tonight is that this is not an end but a beginning. This is the moment when the dawn breaks and the curtain goes up on a new act. It is a moment of real national renewal and change.”

TUMULTUOUS PRESIDENTIAL ELECTION •••• As if 2020 wasn’t contentious enough, who could forget it was an election year? On November 7th, Former Vice President Joe Biden was elected the 46th President of the United States amidst a record number of ballots cast early and by mail due to the ongoing pandemic. As of the time of writing this, President Donald Trump—with the support of many conservative followers—has not conceded and has filed multiple lawsuits disputing the results of the election.
