Bake for about 10 minutes and until golden on top. Remove from the oven and allow the cookies to rest for 10 minutes before you touch them (this allows the coconut oil to solidify again, the cookies may crumble if you don’t do this).
GUILT FREE ALMOND COOKIES What you will need: Baking Tray Baking Paper Ingredients 1 Cup of almond meal ¼ Cup of dark chocolate chips ¼ teaspoon of Himalayan pink salt (optional) ½ teaspoon baking powder ¼ cup Stevia (sugar substitute) 3 tbsp coconut oil 1 tbsp milk of choice (I used almond) 1 teaspoon vanilla extract

Method Pre heat oven to 170 deg. Line a baking tray with baking paper. In a large bowl, mix all the dry ingredients (almond meal, dark chocolate chips, salt, baking powder & stevia). In a microwavable bowl, microwave coconut oil, milk and vanilla essence until melted (approx 30 seconds). Add the wet ingredients to the dry ingredients and mix well until combined. Using your hands, form and shape your cookies

IT’S SPRING SWAP-OVER TIME Late May and early April is the time when we swap our winter visitors for our first spring migrants. Our winter visitors head to places such as Greenland, Iceland, the Arctic and Scandinavia and our spring migrants arrive from Africa and southern Spain. Of course, they need to be sure that they will be able to find enough food at their breeding grounds so, as you can imagine, the weather plays a big part in the timing of their departure. Winter visitors begin to move towards their destination but they may delay their departure from the UK until well into April. They’ll wait for a southerly breeze to help them on their way. Meanwhile, also waiting for a southerly breeze are our spring migrants from as far away as southern Spain and Africa. Over the last few weeks they have been moving northwards, feeding on insects along the way. These birds have to migrate to warmer climes in the winter as they rely on insects as their main food source. They can only advance northwards when the weather is suitable for insects to thrive. In Leeds, the first sign of spring migration is the sound of the chiffchaff, in or around the second week of March. This little warbler has a thin, stuttering and metallic ‘chiff-chaff’, ‘chiff-chaff’ song and it likes to sing from tall trees as it looks for a territory. Around this time, birdwatchers will also be out looking for other early migrants such as wheatear, ring ouzel and sand martin. Wheatears have a characteristic white rump and can be found on rough ground looking for insects. They are gradually making their way to grassy moorland habitat but could easily turn up in your local field or manure pile. Ring ouzels are mountain blackbirds. They have a white band around their chest, and scaly feathers, and are heading up to wooded ghylls on moorland habitat. Many of you will know the sand martin. They traditionally nest in sandy river banks but they take very well to artificial nest sites placed near water at nature reserves. Rodley Nature Reserve installed

an artificial sand martin bank which was used in the first spring and has been a great success. Swallows and little ringed plover have already been seen in the Lower Aire Valley in Leeds so do keep your eyes peeled. Both these birds can be seen at Rodley Nature Reserve. As we move into April, the beautifully melodic sound of the willow warbler will become the sound of summer. This bird looks very similar to the chiffchaff but sounds very different. It prefers lower growing trees in more open habitat. Their song is also thin but it is sweet, starts off high and gradually descends down the scale, like a waterfall. Arriving about the same time as the willow warbler is the blackcap. This warbler is larger and likes dense shrubs. The male is grey with a black cap; the female has a ginger cap. Male blackcaps have a fast, fluty song which sounds like a blackbird played at high speed. Some of you may have had blackcaps overwintering in your garden but these are not the same birds that breed in the UK. Look and listen for spring visitors in your area and get in touch if you need any help identifying them. THE LITTLE GYM HAS BIG AMBITIONS TO GET CHILDREN MOVING The Little Gym Leeds will be opening on Saturday 23rd April 2016 at the Moor Allerton Centre Leeds. Owner Kate Henebury told us “Our Harrogate setting which opened in 2010, is now a thriving gym with over 600 children attending every week. We have been looking to secure the right premises in Leeds since 2011 and we are very excited about our chosen setting in Moor Allerton. It is a great location, with over 3,000 sq ft and will have a mezzanine viewing area, be bright and colourful and a safe environment for children and parents to relax and have fun” The Little Gym was established in 1976 and offers a unique balance between fun and skill development. I hadn’t until a few weeks ago and then I thought it was a new sort of kerb-crawling, which it is not. ‘Verge creep’ happens when the grass verges between a road and an adjacent footway begin to take over the pavement and reduce its width, making it more difficult for parents with pushchairs and disabled people. We have lots of such verges in Alwoodley and councillors have been asked to tell the department where they are particularly bad. If there are any near you or on a footway you use, please let us know and we will pass them on for action. Thanks to those local people who told 14 | SUBURBAN MAGAZINE

This month is a difficult one for gardeners, since the month may start like a lamb – then leave like a lion or the other way around. It is almost certain we will have more frosts and cold spells, so beware of planting anything outside which is young and tender. foot apart. In the vegetable garden, start to sow your first crops of brassicas, cabbage, cauliflower and sprouts etc, together with leeks and early peas. The bean family should be left until conditions are much warmer in May. This is the latest time for sowing parsnips, as they require a long growing season before harvesting. Other root crops to sow now include, beetroot, swede, radish, turnips, carrots and all your other favourites. If the soil is not waterlogged or frozen, it is possible to sow hardy annuals direct in the ground where they are to flower.
