04 april 2013 . thursday advice from webb yates office of engineers

Hi Sue Jan, Thanks for the photos. I think two hinges would be safer, if budget/time allows. To secure the legs of the chair, you could use a rather thick elastic band if any are available? To avoid the legs spanning out, I’d recommend a relatively thick piece of string that went around each one and then met in the middle (I’ve attached a very rough sketch to illustrate what I mean). It would be held in place when not in tension by a small cut into the side of the leg (a deeper version of picture 4 on the pdf you just sent me), but could be removed for storage and folding of the chairs.A slightly more complicated design, but better still, would be what you have now, with the addition of the tie that I just mentioned, which could be clipped onto the string/elastic band that holds the legs together, if that makes sense. It’d have enough give in it to be taken off and put on, whilst also preventing the legs from slipping outward. To stop the chair from slipping on a smooth floor, it might be a good idea to have some sort of rubber pad at the bottom, just to provide friction, especially if you’re going to cover the feet in fabric. Does the chair feel solid to sit on as it is now? Kind regards, Sebastian

// SKYPE DISCUSSION WITH ALLARD 1. Allow the acts to interlap within one another not necessarily having to be separated according to the time of the night section by section. 2. Discuss with Mauricio V. how to involve the music and singing performance to be part of the dining experience more than just a performative value - can the singing instruct guest? 3. How can the designed parts of structure, costume, mask, mylar be intergrated in this? 4. Play with memory, texture - think eating without having to eat.

// EMAILS Hey Jan, How are you? Today i wouldn’t go in this morning to the new studio cause i need to prepare some things for the meeting with MP, Jon, Andy and Immanuel. I will be in for 12 o clock meeting but to be honest this bit time pressure for me... hope i wouldn’t be late. I want to ask you whether you can help me placing top layer of the fabric this afternoon some time. :) I will see you later. Young ______________ Hello Theo, The infill of Young’s costume will be acrylic sheet. Laser cutter is easier to book since everyone finish their final now. I am thinking about laser cut all the infill of Young’s costume on Sat, next Monday & Tuesday. And finish all cutting before school close. Each person can only book 2 hrs. I will ask everyone book 2 hrs, so we can use for 10 hrs per day. My question is we are going to buy lots of acrylic sheet. How we do the bill to Roca? Shall we buy it first, and then figure this out later? or as long as we have receipt should be ok? Elyse

Gluing Instruction Your job is to glue pieces of plastic triangles on fabric according to the drawing under the fabric. There are 7 different sizes of triangles. I call them 1, 2, 3 & 4 as the size is getting bigger. They are also split triangles of 2, 3 & 4 triangles. I call them S2, S3 & S4. Work is easy, simple actually quite therapeutic :) 0 Gluing starts from the middle of the fabric toward the edge as fabric get stretch little during the process. 1 Clear the dust on fabric surface. Sweep with the dust brush. 2 Place the PVA glue and spread it. Glue amount fabric soaks the glue so put the glue until the drawings on the floor looks less visible. Try to remove big dust but if its not big, fat, ugly, just move on 3 Place the triangle which fits to the drawing and press it gently to remove air beneath the triangle. You can place a few triangles and press it together which is quicker. Glue dries fast so you need to do it quickly. 4 after gluing a few lines, come back to check the ones that you did whether it is in the right position. Triangles keep movING until glue dries. Cautions! don’t use the triangles that have brown burnt mark. Put them in to a separate bag.-Don’t sit on the triangles that you glued. Don’t put anything on top of them unless weight wood block. If you have any question, ask Young or Jan.

Hie Raluca ! here are the pdfs of the dishes and some information about the 9th of May : Culinary Experience.i really appreciate your help with this. :) looking forward to learning alot from you! see you on Saturday! please feel free to send updates whenever or ask questions about the night.it will also help me define more details as we go along. thanks! Sue Jan ______________ Hi Sue, Have received your email. today i went in supermarkets to get inspired with different ingredients. I got a black sesame paste that i think will work good with fish and other then black garlic, algie pesto, soar cherries, nuts. I will start experimenting with them, think of combinations and hopefully come by this evening with something more concrete. will email you. tomorrow i am coming around 10 or 10.30 at the workshop place. Ralu ____________________ Raluca, Wow! Sounds really interesting, the ingredients. ;)) l Looking forward to seeing the outcome of the experiments! ;) Sue Jan ____________________ hello, i have attached a couple of thoughts and suggestions. they can be modified, abandoned, taken as they are, etc. the fist 12 are for the opening event while no 13 & 14 are for the event on the 9th. most are made using the ice cube trays (muji has very nice ones: cube, sphere, diamond) these suggestions relied on the idea of water, of letting water shape the taste and moment of our sensation. that we have to use our body heat to melt and release flavours in our mouth. it is un uncomfortable experience at the beginning only to discover what it has to offer. also in some cases, where there is the rosemary leaf or the green chilli piece in white wine‌ i think but am not sure, that by the time the wine freezes and stops the chemical reaction between the ingredients, the leaf and chilli leave its flavour a little bit (around its core i assume and less at the margins). also on combining food based on colour and not taste (the 13 and 14) i am curious to see if a good visual painting also leads to a good taste experience. i thought to have appetiser, soup, main meal, dessert and coffee at the end + drinks = all effortless while shocky shots :) good night and see you tomorrow, ralu

FOOD EXPERIMENTS Sue Jan Yeongm 6/5/2013 To: Theo Lorenz, Raluca, Allard van Hoorn Hello! Did some experiments today with the performative food theme. Below are the pictures of two things I tried. First two pictures: Blended creamy green pepper soup On top baked filo pastry with Fried crispy potato strips and mushrooms. Result: tasted nice together (in my opinion) with the mixture of cold soup and the hot potato. Only failure is the hot oil potatoe doesn’t breakthrough the filo skin, thus making it not so “performative”. 3rd picture: Carrot cake in a different form. The bottom part is a carrot juice + cinnamon sugar and cream jelly. Second layer (can’t see) is walnuts infused with cognac. Top layer is foamy cream cheese with Lemon zest and sugar. still working out the combinations as the cream cheese was too strong in the first experiment. Please do let me know what you think? Would appreciate feedback. I also have the detailed dining night programme to proposed for tomorrow. It would be great to discuss this with you.Thank you! Sue Jan ________________ Sounds good. Instead of cream cheese you could use a nut cream (for example from soaked macadamia nuts). It fits better with the walnuts and you can easier achieve the right texture. Did you use cream in the pepper soup too? With the right green pepper it works perfect without or again with e.g. Almond cream, as it does not dilute the taste as cream would. Re filo performance. You could have less layers in the middle for an easier melt through ... Dud you use saffron on the potato as suggested? Best T _______________ thanks Theo for the vegetarian substitutes! :) i used fresh cream in both recipes. WIll try out the macadamia and almond cream tomorrow with Raluca. as for filo performance : i only used one layer, still quick hard to dissolve. and nope, did not have any saffron, will go look for some at supermarket tomorrow! saffron powder or fresh? Sue Jan __________________ Hi Sue Jan and Raluca, Looks really great everything. Maybe you can make an incision in the FILO for the potato to fall through. Please send the program when you have and I’ll have a look at it! Good luck. Allard __________________

i have sad news, the jelly does not melt into the pasta. i think maybe its too solidified already. i even tried soaking it in hot water but it does not change its form. so i propose we freeze the orange juice and the garlic olive oil in separate cubes. i tried melting them on the pasta, seem to work better than jelly.. what are your thoughts? sue jan ______________________________ Lets have both. Does the jelly taste good? We should cut the jelly super thin. And maybe combine it with the ice cube ______________________________ okay... uhm, taste good? well i think it is less tasty because its colder... and its a different sensation to eat the jelly with hot pasta. as well as cube iced sauce with pasta. hahhaha. i dunno what people will react to it but sure, we should do both. i will get to roca in at 11am and start making the jelly and ice then. what time will you be there? _______ ______________________________ __________________________________________________

flow fields area in matadero Theo Lorenz 8/5/2013 To: aais12@interprofessionals.net Cc: ea@fundacioenricmirales.com Enric Miralles Dear all, I had a long and constructive discussion with olivia at the matadero just now. Due to a lot of changes in their programme they now again can offer us to use the nave 16 middle ship and the plaza in front for our events. at the current state this would have several organisational and publicity advantages for us. 1. we will be able to have the area you all considered as the best interior space (the middle area with metal shutters) for most of the summer as a continues exhibition space. 2. its much bigger 3. we have a higher synergy with the neighbouring exhibitions and events. 4. for the opening on the events we can combine our opening with the opening of the europa exhibition next door and can benefit from their catering (olivia te cuida) and audience. 5. we are much more independent on timing/ rehearsals etc. disadvantage: we have been there before and its quite an area to fill. It seems that after Carlota was here she is preferring this idea and wants us to use this area as she things it fits better. Unless there are any major objectives I would like to confirm this with them ASAP. Best Theo

The price goes up already, so please buy it ASAP. Currently, the price for Easyjet is £ 126.98 Ryanair is £ 134.82 Thank you. Best, Elyse ____________________________ Hello all, I try to find the cheap airfare for Matadero. May 29 Wednesday will be the cheapest, but I don’t know if we can go to Matadero that late. Let’s try to make the decision soon, or the price will get more expensive. Ryanair / May 27 - June 10 / £ 158.90 / May 28 - June 10 / £ 105.98 Easyjet / May 27 - June 10 / £ 177.98 / May 28 - June 11 / £ 96.98 / May 28 - June 11 / £ 119.98 / May 29 - June 11 / £ 95.98

FLOW FIELDS DINING EXPERIENCE THURSDAY 09 MAY 2013 ROCA LONDON GALLERY

09 may 2013. thursday Scenes from dining experience night

10 may 2013 . friday follow up actions after dining experience

AAIS follow up - actions for today Hi all, Thanks for a lovely evening last night, you did a great job! A few follow-up points in advance of your tutorial in the gallery today: Clearing Up There’s still a lot to clear up... I believe Theo said that you’ll all be in at 10am which is great. Please grab Cristiane in reception when you’re finished so she can have a look and advise if there’s anything left to do. The gallery and kitchen should look like it did before you started preparing for yesterday’s event by the end of today. Photography Please can someone send over some photos from last night so we can upload onto the Roca London Gallery facebook page, on the Roca intranet, and share with our directors. Gallery Technical Equipment I’m not sure this has been clear before but under no circumstances is anyone allowed to go into the “server room” without the supervision of a Roca team member. I found out that some of the AAIS team members had been trying to work out/touch/do something with our AV equipment yesterday without asking us before, which to be honest surprised me a little. I would have expected you to ask a Roca team member to help you. Just to clarify: only Roca staff/contractors are allowed to touch the AV equipment. This is also for your own benefit as if something would break you wouldn’t be liable. However after the AAIS team members were doing something with the equipment yesterday we couldn’t get the sound to work... I’m sure this can be worked out but we might have to get an technician in (which is not FOC). Next Week We need to start thinking about inviting more people to the event next week as RSVP numbers are still fairly low. Are you planning to get a reminder sent out to the AA database? We might also send out a reminder early next week. Thanks again for all your hard work, see you next week! Kind Regards, Eva ______________________ Dear Eva, This is Young from AAIS, I woud come in to Roca later than other AAIS members as I need to go to AA first to sort out other stuff so I want to explain a few things about Server room in email. Last night we were trying to play some playbacks for Mauricio’s performance, but we asked one of your member of staff first. That’s how we got the audio cable and instruction. Other time we went in was to play the music as she instruct us. In addition, myself went in to the room a few times since a lot of our equipment was moved in to that room and I didn’t touch anything besides our equipment. I may arrive around noon. Hopefully everything works fine. Thank you. Best regards, Young _____________________ From: Simon Freedman <sf@freedmanchair.com> Date: 15 May 2013 16:34:25 CEST Cc: Andy Dean <andy.dean@musictechnologyltd.com> Subject: Thank you! Hey Guys, Many apologies for not emailing sooner, but as usual things are nose to tail! Just to say, many, many thanks for a wonderfully, enjoyable evening. The venue, set-up and food were brilliantly done and a great laugh too. Very enjoyable and entertaining. Many thanks to you all and your talented students. Matadero Timeline From:Sue Jan Yeong (suejan_231@hotmail.com) Sent:Monday, 13 May, 2013 4: 18 PM Hello everybody, here is the updated timeline for Madrid, Matadero. Please feel free to add in more information about task and things to produce or comment on any of the time schedules. Also, Jonathan & Mauricio, can we confirm NMC & DFE availibility for Madrid on the 07 and 08 of June? many thanks! Sue Jan _____________________ Hi Sue Jan, I can confirm that DfE will be there - Linda, Emma, Alice and Rodrigo will arrive on the 7th at 16h30, probably at Matadero by 18h00. 16 MAY 2013 . THURSDAY CULINARY EXPERIENCE QUESTIONNAIRE FEEDBACK Review of Culinary Experience eva roca london 16/5/2013 To: Sue Jan Yeong Picture of eva roca london Dear Eva, I was hoping, if you could so kindly take some time out of your schedule to give a little feedback and share your personal experience of the culinary night? As this is the first attempt, personally to design such an experience, I am really interested to find out the your viewpoints as this will help and enable me in my further research on the topic of Transformative Food. hence, below are several questions I hope you could help me answer. Also, as in the list of attendees, the two ladies from Roca were not included in it. Do you mind forwarding this email to them so that i could get the feedback from them as well? thanks! 1.Which was the dish you enjoyed the most? and why? 2. What was the most memorable part of the evening? 3. What was a certain element that you thought could be improved for this culinary experience? (ambiance, environment, theme, serving, participative value etc.) 4. Could you share with us the memory that was evoked anytime throughout the dinner? 5. Ultimately has the culinary experience given you a new perspective on the transformative value of food? I truly appreciate you taking the time to help me with this.Looking forward to hearing from you soon. God Bless, Sue Jan

Dear Sue Jan, My feedback to your questions: 1.Which was the dish you enjoyed the most? and why? Taste-wise I probably liked the soup the best, and also the summer roll was nice although I didn’t think the raspberry sauce worked that well. Experience-wise I really liked the dish where you had to pick a material that reminded you of something from your childhood. 2. What was the most memorable part of the evening? The dish I mentioned above (the material/childhood one) and the opera singing. Also the setup/ decorations and ambience were beautiful. 3. What was a certain element that you thought could be improved for this culinary experience? (ambiance, environment, theme, serving, participative value etc.) Ambience and environment was great, and so was the theme. Maybe a slightly longer and more formal introduction to the theme of the evening before we all sat down would have been good - explaining not only what we’re about to experience but also why, what was the background and the original idea to the event? Serving was ok considering that it was not done by professionals. I forgot to get up and talk to other people around the table so it might be worth considering some kind of “changing seats” element to future dinners like these, to force people to talk to all the guests during the evening. 4. Could you share with us the memory that was evoked anytime throughout the dinner? The felt material (during the dish I mentioned above) made me think of sewing class in school :-) Also, although not a memory as such, the Flow Field installations and the set-up of the dining experi ence really made you feel like you were part of something fluid, it definitely felt like you were in another world for an evening! I think the way the table was placed also provided a nice link between the struc ture outside the meeting room and the “foil” installation at the bottom of the gallery. 5. Ultimately has the culinary experience given you a new perspective on the transformative value of food? Maybe, I haven’t thought about it as “transformative value” but rather it has given me a new perspec tive of how you can enjoy a dinner together with a group of people and how the environment + the food play an important role in making you feel closer and more open towards the other guests. It was a great evening, I really enjoyed it - you guys did a brilliant job!

19 may 2013 . SUNday culinary experience questionnaire and feedback ROCA TAKEDOWN To: Young, Liang, Helen Fitzgerald, Mauricio Virgens, elyse Wong, Sue Jan Yeong Dear all, Please all be tomorrow morning at the Roca gallery for take down. I will join at 2pm. Please make a precise list of the items that are going to be shipped to madrid. Try not to forget anything please!!!! ___________ Hi Theo, I’ll still be doing the dome tomorrow morning, so can I go to ROCA at 2 as well? What I can finish by tonight is all the components(long edges, short edges, inbetween timbers) and my plan is to fix them together tomorrow. Do you think we need to ship all the unused timber strips to Madrid? There’s quite a lot left. best, Lyn ___________ Dear all, please remember to bring along all necessary tools (spanner, screwdriver...),packaging (boxes ...) for the takedown at Roca. Please make sure that at least two are there at start of business. And remember that everything will have to be build up again (I.e leave metal parts on one side of structure to know what goes where afterwards...)!

URBAN PICNIC BRIEF

9th of June 2-6pm Urban Picnic Barter Exchange Market of ideas, food, services This Market should create a field of interexchange inside and outside the nave 16.2. The idea is to create an environment where anyone can come and offer something in exchange for something else. This will create a vibrant exchange and flow of ideas between locals, artist and creative that accumulate in one extensive urban picnic and creates at the same time a workshop and knowledge exchange. All exchanges will be documented and guided by the creative team of AAIS and Fundacion Enric Miralles A dynamic flow field: The market should create and environment that binds the overall installation of ‘flow fields’ together as a confluence of form and content. The main design objective for this activity is to create flexible spaces of dwelling, where people can sit down, discuss, eat or prepare food, artefacts etc. throughout the installation. The rattan and wicker structures constructed by the Fundacion Enric Miralles should become harmonious additions to overall setting of the AAIS. These could be maybe easiest described as urban picnic furniture. They could be flat matts to sit on the floor anywhere in the area, benches or stools, tables or stands (for example as base construction for the hexagonal 12 tabletops we have) and floating or moving shading devices (e.g umbrellas).

URBAN PICNIC WISHLIST

CONTACTS / NETWORKS Permission from Matadero to bring in local collaboraters? Local chefs coming in to collaborate : need to negotiate Local artist/designers coming in to collaborate - music, film, photography, fashion, communication, and curatorship etc. (clarify that there will be no monetary exchange) Publicity/media : so that the public that comes know beforehand that there is a need to bring something in order to exchange. DESIGN Barter board – a place of information : infographic for public to know what are the services and items that are up for bartering Stalls and stands for barter vendors to set up (especially for food stalls) Bartering system : coin//ticket// Dwelling spaces : shading devices – umbrellas/canopies/covering eating areas – tables and chairs and stools (some stools already made by AAIS) structural elements that can create a flow between all three structural design of the AAIS performance “stages” for invited guest artist

M. ________________________ Hello Mauricio, As of now, as we haven’t gotten much feedback from Lisbon since February, I can only inform you of the dates I’m aware of.Currently, i only know that we are having our programmes from the 11th - 13th of September. this is the information from Beatrice based on our last meeting with her (12 feb 2013)

10th - All setup should be complete 11th - Press preview all day at the Triennale Headquarters (includes AAIS on the courtyard) - requires us to have something happening at that time (performative programme) 12th - Open to public all day (suggested bazaar/picnic) 13th - Party in the palace (suggested performative programme for the guest of party)

If we don’t have any changes those are most likely dates we would like to have Distractfold In Lisbon. Maybe we will finalize more in Madrid. Hope this was helpful! thanks! Sue Jan ___________________ Thanks - it would be great to get this confirmed soon - we’ll talk in Madrid! See you, M.
