Teas that were once unobtainable are now common, and teas that were once destined only for royalty are now available on the Internet to the casual tea drinker - any time of the day. As tea offerings and selections have become readily available, our philosophies have remained constant. We select and purchase our teas from estates and importers located around the world, and we insist on delivering only superior quality offerings. As a small, family-run operation with long-standing relations in the industry, we have become known for consistently providing great tasting teas at affordable pricing along with superior customer service.

Importers Of Fine Teas for Over a Century

One hundred and six years ago, Boston businessman Mark T. Wendell assumed ownership of his uncle’s business, a firm that imported luxury products from abroad. With a degree from Harvard University just completed, Mr. Wendell settled in the Beacon Hill section of Boston and set up offices on nearby State Street. For many years he imported port, sherry, snuff, olive oil, coffee and rare teas to sell to the upscale clientele of Boston, New York and Philadelphia. One of his most popular items was a smoky China tea that was simply called “XXX”. These three letters were a common symbol of excellence and high quality from this era.

During the decades that followed, Mr. Wendell decided to change the focus of his business and began importing only tea into his Boston waterfront offices. He wanted his smoky tea to stand out from other Chinese teas, so he changed its name to Hu-Kwa (who-kwaa), in honor of the Chinese merchant Houqua, with whom his uncle had traded. Houqua was known for his honesty when dealing with western merchants, and eventually goods bearing his stamp commanded higher prices because their quality was guaranteed. By renaming his tea after Houqua, he was telling his customers that he too was willing to guarantee the integrity of his products, a philosophy that is still practiced today by selecting only the finest teas available.

Mark T. Wendell died in January of 1967 at the age of 85, and Mark T. Wendell Tea Company’s current owner, Elliot H. Johnson, purchased this prestigious Boston tea firm from Mr. Wendell’s successor in 1971. From an initial listing of only 5 teas (with early tins shown above), Elliot and Hartley E. Johnson have expanded to offer over 55 estate grown specialty teas, 10 signature tea blends, 6 herbal and fruit tisanes and 11 imported packaged brands. The company also carries a wide selection of tea pots and brewing accessories. Since 1971, the family’s goal has been to carry on Mr. Wendell’s tradition in the tea importing industry.

An Introduction to Tea

All tea comes from the tropical plant known as Camellia sinensis. The tea plant grows best in a warm climate with long sunlit days, cool nights and an abundance of rainfall. Tea plants grow at altitudes ranging from sea level to 7,000 feet and are indigenous to China, Tibet, and northern India, though they are cultivated in many other countries across the globe, including Sri Lanka, Japan, Kenya, Turkey, Indonesia, Vietnam, Argentina, Tanzania, Taiwan, Malawi, and Zimbabwe. The most complex teas grow at higher altitudes and many bushes can be cultivated for over 100 years. Tea bushes cover about six million acres of the earth and are harvested every week during the almost year-long growing season.

After each winter season, the first small leaves and buds of the tea bush are hand-plucked and harvested. Once exposed to air, the leaf will begin to wither. When the picked leaf becomes pliable, it can then be turned into different types of tea. A common misperception is that the various styles of tea are grown from different types of plants. The fact is that all styles of tea come from the same Camellia sinensis bush; however, the method in which they are processed varies, yielding the main classifications and varieties of tea. White and Green tea are produced by steaming the leaves after plucking, thus eliminating the fermentation process. Oolong tea is allowed to oxidize for a short period of time, and Black tea is allowed to react with the air and oxidize, turning the green leaves black. Pu-erh tea is a style of black tea that has been piled and allowed to ferment considerably.

Tea Yield

New loose tea drinkers often wonder how many cups of brewed tea will be produced from various sized tins. Here is a good guideline to follow:

1 lb of loose tea will make approximately 160 cups

8 oz of loose tea will make approximately 80 cups

4 oz of loose tea will make approximately 40 cups (All based upon one rounded teaspoon used for each cup.)

Please note that these are approximate readings. Some people often use more or less than a teaspoon of tea per cup, depending upon personal preference.

Hu-Kwa® Tea We have had the pleasure of supplying discriminating tea drinkers with this delicately smoked Lapsang Souchong tea since 1904. This long leaf tea from the island of Formosa has long been a tea connoisseur’s favorite. Hu-Kwa gains its distinctive flavor and smoky tang from the pine fires over which it is dried. Distinctive with its smoky flavor and aroma, it produces a deep red liquor and mellow cup when brewed. Hu-Kwa tea is recognized around the world as the benchmark for Formosan Lapsang Souchong tea and has been available exclusively from the Mark T. Wendell Tea Company for almost a century. In order to enjoy the unique flavor of Hu-Kwa we recommend allowing the tea to draw for five and one-half minutes. Stir, and let the tea settle for about one-half minute. Then decant. Hu-Kwa Tea is best appreciated when drunk clear. Milk or too much sugar compromises its delicate flavor. A little cream goes well but sugar should be used sparingly.

HOUQUA

The famous Hong Merchant of Canton, China, who became a symbol of integrity and quality trade between America and the Orient in the 19th century. Mark T. Wendell’s uncle, Richard Devens, traded goods with Houqua during this era and, years later, named his signature tea after him out of respect for his cultural significance.

Black Teas

To produce black tea, the tea leaves are plucked by hand and then left out in the sun until they are pliable enough to be rolled without the leaf splitting. The leaves are then put into a mechanical tumbler and rolled. This process causes the leaves’ juices to react with the air and then oxidize. The green leaves turn black and are then fired in huge drying ovens to produce the final product. Black tea is the most common tea consumed in this country and is cultivated in China, India, Sri Lanka, Africa and Indonesia. To add a varying taste to black teas, they are oftentimes flavored with bits of fruit or scented with oils and flower petals. The drying process naturally leaves black tea with more caffeine than other types of tea. Assam Highly regarded by connoisseurs, this tea is produced in the largest growing region in Northern India, Assam. Its pungent liquor brews to a dark reddish color, leaving a full-bodied cup with a malty taste that is truly unique. Cheericup Ceylon Our whole leaf Ceylon is a strong tea with a full, almost brisk flavor. One of our oldest offerings, Cheericup is a unique blend of seven high and low grown estate teas from the island country of Sri Lanka. China Keemun A full-bodied, yet mellow black tea with a lively bouquet. Keemun is renowned as one of China’s finest black teas, superbly crafted with tippy leaves and an aromatic sweetness. China Lapsang Souchong This rare, long leaf tea gains its distinctive “tarry” flavor and smoky tang from the pine fires over which it is dried. Rich in taste and smoky aroma, it produces a deep red liquor when brewed. China Yunnan Cultivated in China’s Yunnan Province, the birthplace of tea, this black tea has a large leaf with distinctive golden tips. It has some of the best characteristics of traditional China teas as well as teas from India. When brewed, it produces a rich, almost peppery flavor.

Darjeeling Our Darjeeling offering is grown in the high-altitude foothills of the Himalayas at the Margaret’s Hope Estate. Teas grown in this region tend to have a stimulating taste and aroma, setting them apart from other black teas. Often called the “Queen of Indian Teas”, Darjeeling is a full-bodied tea whose infused leaf produces a cup with a coppery-red sparkle and a hint of delicate fruit overtones.

First Flush Darjeeling Comprised of the first tender shoots of the newly grown tea plant, First Flush Darjeeling tea is a unique find and is rarely available in this country. Planted in 1852, Puttabong was the very first tea estate in the Darjeeling district and has an established reputation for producing the highest quality teas. Clonal Queen, our 2010 crop selection from the Puttabong Estate, is an attractive mix of green and black leaves with many silver buds, yielding a full gold infusion. It has a lovely muscatel perfume and produces a lingering sweetness on the palate when sipped. It finishes with a floral and herbaceous nuance that is characteristic of a stand out First Flush Darjeeling.

Pu-erh Tea

A relatively new offering in the mainstream U.S. tea marketplace, Pu-erh is made from fermented Yunnan Black tea. After picking, Pu-erh is created by piling the tea for lengthy periods, allowing a true internal fermentation of the leaf to occur. This process gives Pu-erh its unique earthy overtones. This type of tea is cultivated in the world’s best tea growth areas, from tea bushes as tall as trees. Pu-erh has long been valued for its medicinal benefits, believed to aid in digestion and the reduction of cholesterol. Primarily packaged in compressed shapes of varying sizes, Pu-erh teas are also available in loose leaf form.

Pu-erh Tuo Cha Maintaining the Pu-erh tradition of being sold in various shapes and sizes, this selection has been compressed into small nest shapes, often referred to as tuo cha. We have found that each tuo cha piece will make approximately 16 ounces of hot tea. When brewed, Pu-erh yields a dark, full-bodied brew that has a unique damp and earthy aroma taste. It retains its flavor through several infusions very well. Please note that each piece is covered in a paper wrapper to preserve its unique shape. This wrapper should be removed before brewing.

Oolong Teas

Oolong tea is referred to as a “semi-fermented” tea and is principally manufactured in China and Taiwan (Formosa). After plucking, this type of tea is allowed to wilt in direct sunlight and is then shaken in bamboo baskets to lightly bruise the leaf. The chemicals in the leaf react with the air, producing a reddish leaf color. After a desired amount of time, the leaf is fired and the fermentation process is halted. These steps create the unique appearance and flavor of the two different types of oolong teas. China oolong teas are allowed to ferment for a shorter period of time and are therefore lighter in taste and appearance than the oolong teas produced in Formosan estates.

China Sechung Oolong This semi-fermented tea has large curled leaves that are greenish-black in color. Grown in the Southern Mountains of China’s Fujian Province, this type of Oolong is often referred to as a Min-Nan Oolong. This tea has a delicate flavor with a pleasing taste and lively bouquet.

Extra Fancy Formosa Oolong Sparkling and fruity in character, its pale brew and subtle flavor is unexcelled. The leaves are big and contain the silver tip of the bud, making it a special treat for Oolong lovers. Formosa Oolong This type of semi-oxidized tea from Formosa is known for its unique appearance and taste. Royal Red Robe Oolong Perhaps the best known rock tea from the Wuyi Mountains of the Chinese Fujian province, this tea is a rare find. This Da Hong Pao Oolong is a highly oxidized Oolong whose large, twisted leaves have a unique black appearance. It brews an amber cup that almost startles with its dramatic aroma and smooth, clean finish.

Scented Teas

Scented teas are infused with varying aromas and natural flavorings to make then stand out in each cup. We offer several scented teas, including several styles of Jasmine teas and the ever popular Earl Grey tea blend. A majority of Jasmine teas are made with a pouchong, or semi-fermented tea base. Pouchong tea has reacted with the air for a shorter period of time than black teas and a longer period of time than green teas, creating a varying leaf style and taste from other tea categories. This type of tea is gently touched with Jasmine blossoms picked at the peak of their bloom. Earl Grey is a delicately scented blend of large leaf black teas and oil of Bergamot. Pearl Jasmine is a unique green tea that is hand rolled into tiny compressed balls.

China Jasmine Our standard Jasmine is a lightly fermented pouchong tea, gently touched with freshly picked jasmine blossoms from the Huang Mountain area of China. After repeated exposure to the tea leaves, the flowers are removed, leaving the exotically fragrant aroma behind. China Jasmine makes a sweet and easy drinking brew.

Downy Pearl Jasmine A rare tea produced by hand rolling green tea buds and silvery tips into a tight, pearl shape. The tea is then scented repeatedly with jasmine, creating a wonderfully fragrant bouquet. Upon brewing, each “pearl” unfurls to show the entirety of the tender tea leaves.

Green Teas

To produce green tea, the fresh tea leaves are carefully placed on large bamboo trays and allowed to dry in the sunlight. The leaves are then placed into small hot roasting pans and quickly moved about. They are continuously rolled into balls and then re-roasted for several hours at a time. This process stops the chemical changes from occurring in the leaf by never allowing it to wither and ferment. By eliminating the fermentation process, the dry leaf retains its green color, natural goodness and original beauty. Most of the green teas produced come from various Chinese and Japanese tea estates. Light in color and flavor, green tea is loaded with health benefiting antioxidants.

New! Cloud & Mist Green This tea is a unique find, deriving its name from the high altitude growing areas of the Wu Lu Mountains in the Jiangxi province of China. Grown in the gentle mountain clouds and prevalent mist, this tea consists of single bud and leaf sets that unfurl magnificently when brewed. The brewed liquor has a herbaceous aroma, a smooth and sweet taste and appears a modest yellow-green in the cup.

Gyokuro Jade Dew Green Gyokuro is one of Japan’s rarest and most prized teas. Its long, slender, dark green leaves are produced by shading the tea plant three weeks before it is hand cut with scissors. Japanese Sencha Green This mellow Japanese green tea is produced in the Shizuoka region near Mount Fuji. Its bright green, flat leaves are picked early in the season, then steamed to ensure freshness. It is often referred to as “the white wine of teas”.

Mao Feng Tranquility Green

A premium Hairpoint style green from Eastern China, this tea embodies the reasons for drinking green tea. The dark green leaves of this tea are pointed and slightly twisted, producing a tantalizingly sweet brew with chestnut overtones that refresh.

White tea is the rarest and most delicate type of tea. It is plucked by hand within two days between the time the first buds become fully mature and the time in which the leaf unfurls. The leaves are then allowed to wither, allowing the natural moisture to evaporate before being dried. White tea contains the same antioxidants found in green tea, but since it undergoes less processing, white tea is believed to be more beneficial to your health than other types of tea.

China Mutan White Our Mutan White Tea is an unusual tea, comprised of silvery, downy buds and green leaves. The buds are hand picked before the leaf opens, then gently steamed. The brew is delicate and mellow, with a light pale color. Due to the larger leaf size, more leaves per cup are needed when brewing.

How to Brew Iced Tea

To make a great tasting glass of iced tea, brew one quart of cold, filtered water for every 6 tea bags or 6 teaspoons of loose tea used. Remember that you make iced tea stronger than regular hot tea to compensate for ice dilution.

Once the water has come to a boil, pour it directly over the tea and steep for 3 minutes (green teas) or 5 minutes (black teas). Remove the teabags or strain the loose tea out of the teapot. Let the brewed tea cool down to room temperature before adding ice. Chilling the tea after it has cooled helps keep the brew’s appearance clear.

If your chilled glass of iced tea clouds, try slicing some citrus fruit and adding it to the glass. Since they make a nice garnish, many iced tea drinkers will add lemons, limes, oranges and even grapefruit slices. These fruits are high in acid and will help balance the tea’s PH level, thus making it visually clearer. If tea clouds immediately following brewing, lower the water’s brewing temperature.

With so many teas available, sometimes it is hard for new tea drinkers to know where to start. It is equally difficult to guess what the perfect gift would be for the tea connoisseur on your shopping list. With these situations in mind, we have created a Monthly Tea Tour subscription tea service. Available in 6 or 12 month options, we have selected some of our more popular teas that can be sent each month, either to your self or a gift recipient. This is an excellent way to learn about fine specialty teas with little effort, as well as serving as a convenient and thoughtful gift idea.

Each monthly selection will arrive in our elegant gold 4 ounce tin and will be packaged with a note card that describes the enclosed tea’s origin, character and proper brewing techniques. The Boston Tea Parties – On December 16, 1773 a group of Boston patriots boarded three English Ships, the Bedford, Beaver and Dartmouth, and threw the tea aboard into Boston Harbour. These patriots were disguised as Mohawk Indians and, in order to gain access to the ships, armed themselves with hatchets and axes. In protest against the duty imposed on tea by the Government of King George III, they split open every chest and dumped each into the water. When the first Boston Tea Party was over, three hundred forty-two chests of tea were left floating in the frigid harbor waters. In the months that followed this historic event, many other American seaports took similar action in boycotting British tea. On March 7, 1774, at a second Boston Tea Party, 16 chests of tea from British tea merchant Davison, Newman & Co. were among those once again thrown into Boston Harbor. This was another symbolic prelude to the American War of Independence.

How to Brew a Pot of Tea

Here are a few steadfast guidelines to follow in order to achieve the perfect cup:

Fill a kettle with freshly drawn cold water. We recommend using filtered water because the quality of your water will directly affect the taste of your tea. Many towns have water that has too much chlorine and other minerals. When the water is near the boiling point, pour a little into the teapot, swirl around, and tip away. This leaves a hot, clean teapot.

Measure the tea carefully into your teapot, allowing one rounded teaspoon or one tea bag for each cup required. Many people prefer to use a tea ball or filter to keep the leaves from spreading throughout the teapot. Bring the water to a rolling boil. Do not allow it to boil too long, as it will boil away some of the flavor-releasing oxygen and result in a flat cup of tea. Please note that green and white tea should be made with water that has boiled and allowed to cool for just under a minute.

Pour the water onto the leaves or tea bags. This saturates the tea allowing the flavor to release naturally. Do not pour the water and then add the tea, this will only result in a poor cup of tea. The differing types of tea should be allowed to infuse for the required number of minutes at the appropriate water temperatures listed below:

Pu-erh Tea Steep for 2-5 minutes in 200-212° F (93-100° C) water

Black Tea Steep for 4-5 minutes in 190-200° F (88-93° C) water

Flavored Black TeaSteep for 4-5 minutes in 190-200° F (88-93° C) water

Darjeeling TeaSteep for 3 minutes in 180-200° F (82-93° C) water

Oolong TeaSteep for 3-4 minutes in 180-200° F (82-93° C) water

Green Tea Steep for 2-3 minutes in 170-180° F (77-82° C) water

White Tea Steep for 1½-2 minutes in 160-170° F (71-77° C) water

Herbal TisanesSteep for 5 minutes in 190-200° F (88-93° C) water

Fruit Tisane BlendsSteep for 5-7 minutes in 190-200° F (88-93° C) water

If you prefer your tea stronger or weaker, never vary the brewing time; simply increase or decrease the amount of tea. If allowed to sit in the teapot, the tea can over-brew and turn bitter. Some green, oolong and white teas are good for multiple infusions –just add new hot water to the pot and increase the steeping time slightly. Repeat until the flavor starts to fade.

Yixing Teapots

Yixing Teapots: Yixing (pronounced “ee-shing”) Teapots first appeared in the Yixing region of China, during the Sung Dynasty (960-1279 ME). Since then, they have become the preferred tea brewing vessel of the Chinese and of tea drinkers worldwide. Yixing teapots are intended for individual use, producing 1-2 servings of tea. The purple clay (Zisha) from which these teapots are made can only be found in this region of China. The purple clay has unique properties, ideal for brewing tea. The unique color of the clay, sometimes augmented by pigments, are never covered by glazes on the Yixing teapot. Even the inside is left uncoated. The porous nature of the clay absorbs the flavor, smell, and color of the tea that is brewed in it. From repeated use, Yixing teapots develop a seasoning, making the tea brewed from a well used teapot a treat.

To clean this type of teapot, simply empty the leaves and rinse the teapot with hot water. Never use soaps or cleansers, as they may be absorbed by the porous clay and interfere with the taste of your tea.
