“For every action, there is an equal and opposite reaction”...Newton’s Third Law of Physics.

I propose Newton’s theory to be relevant to events transpiring within the Gold Canyon area.

That is, the more popular we become with increased residential housing, business, and tourist-type activities, the more we will see our quiet, quaint, and serene community diminish and, in some cases, disappear.

A case in point is the coming of the Mavrick Gas Station at the intersection of US Route 60 (USR60) and King’s Ranch Road (KRR). Except for some drainage issues at the intersection of USR-60 and KRR when I first moved here in 2005, it was just a run-of-the-mill intersection with ho-hum activity. But with the construction of the new gas station in our wave of progression (rumor is another large gas station will be built on the south side of USR-60 eastbound, directly across the street from the Mavrick Gas Station) it certainly will make that intersection, should we say, a bit busier. New traffic designs are now on the board to assist with this soon-to-be Maverick happening. Many residents opine that the new traffic design will be a maze of monumental proportions. I guess we will just have to wait and see. The bottom line is that the gas station is coming, along with the traffic designs, and then the added addendum of more traffic as housing construction increases, and that means more people and, subsequently, more traffic.

Another area of concern was written about in the February 10, 2024, issue of the Arizona Republic newspaper. Chuck Antonio wrote an article about the Peralta Road calamity. This devastation by weekend visitors and squatters has been increasing every year, but this year, 2024, has exceeded all others. Chuck commented on the number of campers, trailers, and recreational vehicles that now swamp the Peralta Road and the desert environment. I’ve seen, said

Chuck, campers in the same spot for weeks with one even remaining three months. Mr. Antonio postulates that black water is being spilled on pristine desert land, trash is strewn everywhere, and speeders – especially ATVs – are motoring up and down Peralta Road in a dangerous manner.

Most of the land encasing Peralta Road is State Trust Land, and this means certain rules must be obeyed. The problem is, continued Chuck, they have no enforcement force, which leaves enforcement up to the Pinal County Sheriff’s Office, but they have a limited number of personnel to conduct enforcement activities. Thus, the crime scene remains and increases every year. Why do they come there – because Gold Canyon has become a magnet for Superstation Mountain activities such as hiking, biking, picnicking, horseback/ATV riding, and for, like we, the peace, quietness, and serenity of beautiful Gold Canyon.

Yes, indeed, Mr. Newton, for every action, there is an equal and perhaps negative opposite reaction.

You are reminded of the March 21, 2024, ADOBE Community Meeting being held at the Gold Canyon Best Western Hotel, with social time starting at 6:15 pm and the meeting at 7 pm. This month’s presenters will be Ms. Donna Talley and Mr. Mid Carlozzi, managers of the Gold Canyon Methodist Food Bank. Donna and Mid will explain to the attendees – via PowerPoint –the wonderful work the Food Bank is effectuating for the community, especially seniors. Meeting attendees may bring a nonperishable item to the meeting to give to the Food Bank to assist them in their most praiseworthy endeavors.

Saturday, March 9, 2024 The Queen Valley Fire Auxiliary is hosting its 34th charity golf tournament at the Queen Valley Golf Course. The format will be a four person scramble open to all teams: men, women and mixed. Teams will be flighted by handicap. Entry fees are $40 each for members and $70 each for non-members (this includes cart fees). If you’re in the mood for a deep dive into mythological women of power, this book is a great first stop.

Our staff pick for this month was a young adult novel, the first in a popular series. We decided that we wanted to continue reading the other books in the series –the shocking twists and short chapters kept our attention. We found the themes of privilege and entitlement interesting, although there were mixed feelings about which brother was our favorite!

ECHINOPSIS VS TRICHOCEREUS A ROSE BY ANY OTHER NAME…..

We are getting to that time of year when the Echinopsis cacti start to put on a show. Formally called Trichocereus, most of these giant flowering cacti have been grouped in the genus ‘Echinopsis’. The Latin name is derived from echinos (hedgehog or sea urchin) and opsis (a reference to the plant’s dense covering of spines). Many collectors and growers still use the outdated nomenclature, and the common names are even more confusing. Flying Saucer, Hedgehog, Sea Urchin, Easter Lily and Torch cactus are all used by us common folk indiscriminately on any large flowering cacti. To confuse things even further, some plants changed from Trichocereus to Echinopsis have now been changed back to Echinopsis. Not wanting to get into the weeds on this debate, I will stick with Echinopsis species.

The flowers are the big deal with this genus. Up to 15 inches in diameter, with hybrids producing a riot of colors ranging from snow white to red, yellow, orange, and pink, they are always a pleasant surprise as they magically appear from nowhere.

Native to South America, they do quite well in our part of the Sonoran Desert, preferring sandy or gravelly soil and growing on the sides of hill in rocky crevices. They do not tolerate wet feet. They can be planted in pots or directly in the ground and will do best if they can get afternoon shade during June through September. Cutting off the spent flowers may result in greater flowering.

Since many of the Echinopsis must be pollinated by another plant, they have been profusely hybridized, resulting in the wide range of colors.

Draw backs with this genus is that the critters love the flowers for food as much as we love to look at those flowers. The flowers mostly open at night and last but a day.

If you are interested in this plant, I highly recommend that you do a quick search on the internet by typing in ‘Echinopsis species in your browser. Prepare to be wowed!

PRESERVING OUR STARRY, STARRY NIGHTS

Over the years, our eyes have become increasingly drawn from the skies to our screens. Gone are the days we looked to the stars to forecast the weather, predict the seasons, plant our gardens, or, like the famed artist Van Gogh, simply be inspired. Ninety percent of the world’s population can no longer see the Milky Way because of ever increasing light pollution. The night sky, for millennia a source of awe, is vanishing from our view.

But not in Gold Canyon! We have long been an unofficial dark-sky community. And soon, thanks to local resident Isabelle Petersen, working with Gold Canyon Community, Inc., we will have that official designation by DarkSky International (www.darksky.org). By the end of this year, Gold Canyon is expected to become one of some 200 Dark Sky Places certified around the world – and the first certified Dark Sky Community in Pinal County.

Isabelle has devoted more than a year to compiling the data required for application and approval. “It’s been a labor of love,” says the retired ASU professor. “Our starry nights are just one more beautiful thing that make living here so special.”

Dark sky protection is not about no light. It’s about balancing safety and aesthetics to minimize light pollution and its welldocumented negative effects on human, wildlife, and plant health. Pinal County’s outdoor lighting ordinance (Chapter 2.195) for all residential and nonresidential lighting is consistent with Dark Sky goals. All of us can help protect our nocturnal environment by using 1) warm, yellowish/amber outdoor lights less than 2700 K, 2) bulbs of 380 lumens or 40 watts, and 3) light fixtures that are shielded, downward pointing, motion-sensor controlled, and only on when needed.

Look up tonight and enjoy the view. Van Gogh would be proud… and inspired.

FOOD AS MEDICINE

If you follow this column, you’ll know that I’m a big believer in using food as medicine, but what exactly does that mean? The term “healthy eating” can sometimes be misunderstood as a diet of raw broccoli and rice cakes, but consuming delicious healthful food is really just a matter of being aware of our meals’ ingredients.

I am a “foodie,” and I love to experiment in the kitchen. The other day I came up with a great-tasting recipe that’s an example of what I’m talking about. This hearty soup is packed with proteins and vegetables and offers a delicious creamy texture to the palate.

CREAM OF CHICKEN CHILI SOUP Ingredients:

• 32 oz. Simple Truth Low Sodium Free Range Chicken Broth

• 2 cups organic Simple Truth frozen whole corn

• 2 15 oz. cans Simple Truth garbanzo beans, pureed in blender

• 1 15 oz. can Simple Truth black beans

• 1 15 oz. can Simple Truth tomato sauce

• 1 broasted chicken (deboned)

• 1 can Rotel diced tomatoes

• 1 pack chili seasoning mix

• 1 large chopped onion

• 16 oz. butternut squash (cubed)

• Salt to taste

Add all ingredients to a large pot. Bring to boil for 20 minutes, then lower temperature setting to simmer for 2-3 hours.

Serve with a dollop of sour cream or a side of guacamole or sprinkle soup with tortilla chips. Alternatively, you can place all ingredients in a crock pot on low to medium and cook for 4 hours.

So how can this soup be considered “medicine” for your body? Let’s take a look at just a few of the ingredients I chose.

Butternut squash is rich in nutrients and fiber and low in calories. The nutrient vitamin A promotes eye health, bone health, and contributes to supporting the immune system. This vegetable has plenty of vitamin B that our body requires for red blood cell function and energy synthesis, plus potassium and magnesium that are important for healthy bones.

Both black beans and garbanzo beans are rich in fiber and are digested slowly to prevent blood sugar spikes and weight gain. They may also lower cholesterol. Beans also contain potassium, iron, and magnesium that are responsible for many chemical processes in the body. Beans are high in proteins and very affordable.

All of the Simple Truth brand products listed are USDA certified organic, which means they are produced without the use of synthetic pesticides and fertilizers and are free of genetically engineered ingredients. They are also free of antibiotics and growth hormones as well as many artificial preservatives and ingredients found in more highly-processed foods. Changing to a healthier diet doesn’t have to mean compromising on enjoyable meals; it’s just a matter of being more aware of your ingredients. After all, it really is true that “you are what you eat”!

The Butterfly Garden is certified by the National Wildlife Federation as as official Backyard Wildlife Habitat. It is a certified Monarch Watch as an official Monarch Waystation.

To enhance the gardening skills of its members, the Gold Canyon Garden Club organizes workshops and demonstrations. The members of our organization who are Master Gardeners are a great source of information and encouragement.

Our Garden Club is holding a Plant and Garage Sale in MountainBrook, March 23rd, Saturday from 8:00 AM to 12:00 Noon. SPRING CLEAN YOUR LIFE

The birds are chirping, the sun is shining and spring is in the air. Spring signifies new growth, renewal, and increased vitality and is often associated with spring cleaning. Did you know that spring cleaning can include more areas of your life than just tidying up your space? What if we choose to “spring clean” our life? What if we could think with greater clarity, create a sense of calm, and enjoy more quality time to nurture essential relationships by simplifying and streamlining our lives?

Organizing and simplifying your life can seem like an overwhelming task so plan to start with one drawer, one area, taking small and manageable steps towards your goals. Here are a few additional springcleaning tasks for you to try this March.

Declutter: Even after a good spring cleaning, our homes, workspaces and even cars can still be filled with things we don’t need. Give yourself a talking tohow many of the clothes in your wardrobe do you actually wear? You KNOW you’ve got at least 10 items in there that you will never wear again, so maybe it is time to let go. How many CDs, albums or cassette tapes do you have collecting dust for nostalgia’s sake? When you declutter your physical space and create a serene environment, you pave the way for mental clarity, enhanced cognitive function, and overall well-being.

Unplug: While the digital world may not be the first thing that comes to mind when you think of spring cleaning, unplugging from technology can be a great way to cleanse your mind. Phones, laptops, and tablets mean that we have an endless supply of distraction at our fingertips. A simple way to unplug is to take 10 minutes a day to clear the clutter on your devices: consider unsubscribing and unfollowing, setting time limits on apps, or doing a digital detox. Any of these activities will help you regain a sense of control in simplifying your life.

Rest and Recharge: Spring is also the time to create better habits that strengthen your overall health. Staying rested helps keep weight and metabolism on track and enhances our ability to make healthy choices about the foods we eat. Food relates directly to serotonin, a key hormone that, along with vitamins B6, B12 and folic acid, helps to promote healthy sleep. A good nights sleep is critical and essential to our health, giving our bodies time to rest, repair and rebuild. A lack of sleep can impact not just your mood, but also your motor skills, exercise performance and immune system.

Movement: Another necessity in spring cleaning tasks for a better life is to move your body. A good practice is to establish or continue a regular habit of going to movement classes every week. If you need a quick fix, just turn up your favorite tune and let your body move. Anything, to take your mind off things and boost your serotonin and move your body is a positive step. Exercising sharpens your memory, creates a better sleep pattern, stimulates the growth of new brain cells, and creates joy and happiness.

Get In the Zone: As our day to day lives get busier, people are rediscovering the need for a little “me” time. For some

people, all it takes is a hot bath and some chill-out music. But yoga, meditation and mindfulness are on the rise as goto relaxation techniques. Meditation is a good way to focus on positivity and calmness, whereas Yoga gives your physical health a boost, as well as helping relieve stress and anxiety. Meditation and other mindfulness exercises can be a powerful way to tune into the present moment, reduce stress, and release negative emotions.

Create Room for New Energy: Finally, once you have done your fair share of spring cleaning you can create room for new energy to flow. Consider opening the windows in your home, adding a fresh coat of paint to your home, or buying some house plants to welcome new, feelgood energy into your space.

OCOTILLO AND SPRING

The Spanish translation of Ocotillo -- pronounced oh-kohTEE-yohs -- is “little torch”. It’s also referred to as: buggywhip, coachwhip, candlewood, slimwood, desert coral, Jacob’s staff, vine cactus, and a flowering spiny shrub.

Many think the Ocotillo is a cactus, but it’s not. They are a semi-succulent desert plant in the Fourguieria family.

The plant is indigenous to the Sonoran, Chihuahuan and Colorado deserts from southeastern California to Western Texas and south into Mexico with a life span of 60 to 100 years.

The Ocotillo stem’s (near the base of the plant) divide into several slender, wide-spreading, spiny branches, extending upward 8 to 20 or more feet. Most of the time the stems are leafless but, when the plant receives enough moisture, small 2-inch-long oval leaves grow from the stems. In Spring and Summer red-orange tubular flowers in 6- to 10-inch-long clusters accompany the leaves at the end of the stem. The leaves will remain on the plant until the soil dries out, then they’ll fall off to conserve the plant’s moisture and reduce evaporative loss. The now “leafless” Ocotillo will rely on the chlorophyll in their stems for photosynthesis to survive.

In southern Arizona, the blooming of the Ocotillo’s orangered flowers coincides with the hummingbird’s northern migration which helps to pollinate the plants. The pollen attaches to the hummingbird’s beak and feathers as the bird gets nectar from the flowers. The pollen is then transported by the hummingbird as it flies from flower to flower. This helps to create Ocotillo seeds. Carpenter bees and other birds: Hooded-Orioles, Lucy’s Warblers, Verdins, House Finches, etc., also help to disperse pollen by collecting nectar and/or insects from the flowers.

AJUSD STUDENTS UPHOLD TRADITION: UNPACKING MEDALS FOR LOST DUTCHMAN RACE

The Apache Junction Unified School District (AJUSD) is delighted to highlight the annual tradition of community engagement by our Life Skills (FRP) students from Apache Junction High School. This year, as in previous years, our students have taken on the responsibility of unpacking medals for the Lost Dutchman Race scheduled for Feb. 18, 2024, an integral part of the celebrated Lost Dutchman Days in Apache Junction.

In a display of dedication to the beloved Lost Dutchman event, the FRP students diligently removed packaging from medals, ensuring a seamless experience for participants. This annual initiative not only reflects the ongoing commitment of our students to community service but also reinforces the enduring connection between AJUSD and the local community.

Lisa Ginn, Principal of Apache Junction High School, expressed her appreciation for the students' consistent involvement, stating, "The Life Skills students at AJHS showcase their commitment to community service year after year. Unpacking medals for the Lost Dutchman Race is a tradition for them, embodying the values of giving back and actively participating in the success of a significant event in Apache Junction."

“Save for a rainy day” is an old piece of advice — and a good one. But is it possible to save too much?

To begin with, what defines a “rainy day” in terms of financial needs? It could be any number of things: a temporary loss of employment, a major home or car repair, a large medical bill, and so on.

If you did not have the money readily available to pay for these types of expenses, you might be forced to dip into your IRA, 401(k) or other retirement accounts, incurring taxes and possible penalties, as well as lowering the amount of money you’d have available for retirement. And that’s why it’s a good idea to build an emergency fund containing up to six months’ worth of total expenses, with the money kept in a liquid, lowrisk account that’s separate from the accounts you use for your daily spending needs.

An emergency fund is valuable, but many people may be overfunding it. And while this isn’t the biggest financial mistake one can make, it could result in some missed opportunities.

For one thing, when you keep money in a low-risk account, you can generally count on your principal being protected, which means the money will be there for you when you need it —but the flip side is that this money likely won’t grow very much, if at all. And if you’re going to achieve your longterm goals, such as a comfortable retirement, you need your investment portfolio to provide you with significant growth potential within the context of your individual risk tolerance. So, any excess dollars kept in your rainy-day fund might be used to help fuel some growth-oriented investments.

CAN YOU SAVE TOO MUCH FOR A RAINY DAY?

You could also use these dollars to help diversify your investment portfolio. If you only owned one type of investment, your portfolio could take a big hit if a market downturn affected just that asset class. But by owning a mix of stocks, bonds, government securities and other investments, you can help reduce the impact of market volatility. (Keep in mind, though, that diversification, by itself, can’t protect against all losses.)

Still, before deciding on what to do with extra money you might have in your emergency fund, how will you know if you indeed have too much? Up to six months’ worth of total expenses may be adequate for most people — but everyone’s life is different. For example, if you have reason to believe your employment — or that of your spouse — may be in jeopardy in the near future, or if you anticipate the need for some renovations to your home, but not for a year or so, you might want more than six months of expenses tucked away in your emergency fund. Also, once you’re retired, you may well want to keep a year’s worth of expenses in the fund. If you need cash, you don’t want to be forced to sell investments when their price may be down, especially since you have less time for them to recover.

Ultimately, when thinking about how much to keep in your emergency fund, review your situation carefully and weigh as many variables as you can. And if you do decide your rainyday fund is abundant, use any “overflow” in a way that can help you keep moving toward your financial goals.

Want to try a spin on the Reuben Sandwich?

Try these Reuben Egg Rolls!! Stuffed with all the fillings of a Reuben sandwich!! Makes a great appetizer or lunch!!

• 4 oz Cream Cheese, softened

• 3 Tbsp. Russian Dressing, plus more for serving

• 1 Tbsp. prepared Horseradish

• 3/4lb thick sliced corned beef, chopped in small pieces

• 1 ½ c shredded Swiss Cheese

• ¾ c sauerkraut, drained well

• 2 Tbsp. freshly chopped chives

• 16 egg roll wrappers

• Vegetable oil, for frying

Directions:

In a medium bowl, mix together cream cheese, Russian dressing and horseradish. Fold in the corned beef, Swiss cheese, sauerkraut and chives.

Set an egg roll wrapper in a diamond shape in front of you and spoon 2 Tablespoons of the Reuben mixture in the center. Fold up bottom half then sides and then gently roll, sealing seam with a few drops of water. Repeat with remaining filling and wrappers.

In a large deep-sided skillet over medium heat, heat 1 inch of oil until it starts to bubble, then working in batches, add egg rolls and fry until golden on each side. Drain on a paper towel-lined plate. Repeat with remaining egg rolls.

Serve warm with Russian dressing for dipping! ENJOY!

Lime Pound Cake/ Bundt Cake

This sweet moist cake is flavored with fresh lime zest!!

Ingredients:

• 1 ½ cups (3 sticks) butter, softened

• 1 8oz block cream cheese, softened

• 3 c sugar

• 5 large eggs

• 3 Tbsp. fresh lime juice

• 1 ½ Tbsp Lime zest

• 3 c all-purpose flour

• Glaze:

• 1 c powdered sugar

• 1 tsp. fresh lime juice

• 1 Tbsp. water

• ½ tsp pure vanilla extract

• Zest of 1 lime

Directions:

Preheat oven to 350 degrees.

Grease and flour a Bundt pan OR 4 mini loaf pans.

In a large mixing bowl, combine the softened butter and cream cheese until light and fluffy. Mix in sugar, then gradually add in eggs 1 at a time, beating on low until combined. Mix in lime juice, then flour. Fold in the lime zest.

Pour cake batter into a prepared Bundt pan OR 4 mini loaf pans. Bake in a bundt pan for about ‘60 minutes’. Check with toothpick until it comes out mostly clean. Let cool for 15 minutes before taking out of pan. Do not over bake. I have not made them in mini loaf pans, but recipe says to bake about 43 minutes. *Check sooner though. Baking in the bundt pan took less time than what they specified at 70-73 minutes.

For the glaze whisk together powdered sugar, lime juice, water and vanilla. (If it is too runny add a little more powdered sugar and if it is a little to thick add a little extra lime juice Drizzle on top of cooled cake and top with some lime zest! Enjoy!!

Side Note: If you are a lemon lover, I am sure this recipe would also work well if you used “lemon” in place of lime!

The Superstition Mountain Museum’s free lecture series “Legends and Lore of the Superstitions and More,” has begun. The series brings together local scholars, personalities, historians, artists and authors to introduce attendees to the rich culture of our region.

To enjoy the presentations fully, attendees are requested to:

• Bring your own lawn chair;

• Don’t forget a hat and sunscreen;

• Please, no smoking;

• Please don’t leave your dog in vehicle;

• Coffee and cookies will be available for purchase with all of the proceeds going to the museum for continuing educational programs;

• Come early and have lunch on the grounds. Food will be available for purchase.

The Museum welcomes sculptor, muralist, storyteller and performance artist Zarco Guerrero for a Día de los Muertos (Day of the Dead) presentation. Expect hilarious and moving tales, with original characters including: the poetry spouting “El Vato Poeta,” the flirtatious “La Comadre,” the clueless “Special Ed,” the wise “El Abuelito,” and other beloved roles that Zarco has created. This lecture will be an introduction to the Museum’s annual three-day event “The Magic of Mexican Artistry,” March 8-10, 2024. This presentation was made possible through the Arizona Humanities AZ Speaks Program.

He is the author of several books including The Amazing Kolb Brothers of Grand Canyon, Boots & Burgers: An Arizona Handbook for Hungry Hikers, Arizona Kicks on Route 66, and Crazy for the Heat: Arizona Tales of Ghosts, Gumshoes, and Bigfoot.

Jack’s lecture is based on more than 25 years of research and diligently searching Arizona's Superstition Mountains for the world famous Lost Dutchman Mine. His research runs contrary to the tale of the mine being in the western Superstitions near Weaver’s Needle. He relies on factual and scientific evidence to aid in the search for precious metals and the illusive mine. Jack has been an avid hiker, horseback rider, four-wheeler, and serious researcher of the Superstition Mountains and nearby areas for over 28 years. He is the author of the When Silver was King, Superstition Cowboys, Lost El Dorado of Jacob Waltz, Lore of the Superstitions, and numerous short stories. He also has lectured in central Arizona for more than 25 years on local history, including tales of the Superstition Mountains. Jack is a longtime member of the museum and lives with his wife Winnie in Mesa, Arizona.

The Magic of Mexican arTisTry at Superstition Mountain Museum

The Superstition Mountain Museum presents a celebration of fine art from Mexico at this free three-day event, March 8-10, 2024 from 9 a.m. to 4 p.m. The Museum grounds, patio, and barn will be filled with some of Mexico’s finest artisans. Meet potters, wood carvers and painters, a weaver, and a silversmith — many demonstrating their art and production techniques to visitors.

Artists include Mata Ortiz potters Laura Bugarini, Octavio ‘Tavo’ Silvera and Hector Gallegos, Jr. as well as Oaxacan painter-woodcarvers Julia Fuentes, Jose Juan Melchor, Reina Ramirez, Oaxacan silversmith Yesenia Salgado and Zapotec master weaver Porfirio Gutierrez. Visitors will be delighted with live demonstrations of their craft and a sale of their work. They have traveled many miles to exhibit here and include internationally-recognized, award-winning artists. Their work is sought after by collectors all over the world.

This free event is family-friendly and educational, offering tremendous photographic and shopping opportunities. Parking is also free for visitors.
