Crushing The grinding and pressing of the olive fruits through mechanical means in order to obtain the extra virgin- and virgin olive oils. The olive pomace oil that still remains in the solid part (“orujo) left after the olives have been crushed & pressed is obtained by extraction.

Refining The virgin olive oils that due to their organoleptic caracteristics and acidity are not suitable for direct consumption as well as the olive pomace oils, are being subjected to a physical or chemical refining process.
