The hypermodern processing & packing plant, with a production capacity of over 18,000 cases/8 hours shift, produces more than 400 SKUs of packed product including a large number of olive varieties and presentations, as well as other Mediterranean specialty food items such as Spanish premium olive oils, capers & pickles. As one of the very few olive processors in the industry and hence rather unique, LORETO SPECIALTY FOODS operates, apart from various highspeed production lines for the aforementioned premium food products, a separate pimiento paste or “paglutine” factory that supplies the core ingredient for its delicious and #1 selling SKUs, the pimiento stuffed Manzanilla and Queen olives. This plant, covering LORETO’s need for a consistent, high quality raw material, also supplies pimiento paste to other Spanish olive processors.
The packed products are marketed under the registered brands LORETO, TAPAS and TORREBELLA and supplied in full containers of a sole SKU or mixed with several product items. LORETO is a traditional Spanish (female) first or given name with a history that goes back to very early Roman times, i.e. “Loreto” originates from “Lauretum”, the Roman word for “Laurel ”, a small, evergreen lauraceous tree whose foliage was used as a symbol of victory.
LORETO is the company’s flagship brand and inspired by the monastery or sanctuary “Convento de Nuestra Señora de Loreto”, founded in 1525 in the small town of Espartinas (Seville, Spain). Olives The LORETO, TAPAS and TORREBELLA brands offer a wide range of the best Spanish olives, both green (Manzanilla and Queen) and black or ripe olives, that constitute a tasteful all natural snack or delicious ingredient of salads, pizzas and ingredie many m any other o food dishes. The green olives are harvested in September and October, when they’ve reached full size and before changing their colour, whilst the natural black olives are recollected in December when completely mature. All the fruits, that are hand-picked in order to avoid any damage or bruises, are then processed and packed in a large number of varieties and presentations.
Olive Varieties There are many different varieties of olives cultivated in Spain, though only a few are selected for the production of table olives.
Queen Olives The biggest size olives, with a strong flavour as a direct consequence of the high acidity that is developed during their fermentation.
Manzanilla Olives The olives that are unique in that they can only be cultivated satisfactorily in olive groves in the Seville area. The fruit is smaller in size to the Queen variety, very round in shape, fleshly, finer textured with a small pit and a unique taste.
Hojiblanca Olives The olives with characteristics very similar to those of the Manzanilla variety, apart from their flesh that is of a stronger texture and their colour, which is a deeper green.
Olive Sizing The olives are sized in accordance with the number of fruits with pit per kilogram. There is a direct relationship between the weight of the olive, of which approximately 30% being the pit, and the transversal diameter. Sizes of Queen olives range from 60/70 to 200/220 fruits per kilogram, with smaller sizes called “Azofairon”. The Manzanilla and Hojiblanca olives are found in sizes ranging from 160/180 to 400/500 fruits per kilogram, with smaller sizes called “Perdigón”.
Olive Types According to harvesting and processing the main types of Spanish olives that are being marketed are:
Green Olives The olives obtained from fruits harvested during the ripening period, prior to colouring and when they’ve reached normal size.
Oxidized Black or Ripe Olives The olives obtained from the fruits which, not being fully mature, have been dyed by oxidation. ion..
Natural Black Olives The olives obtained from fruit picked when completely mature or just before and of a colour that may vary from reddish black to violet black, violet, greenish black or dark brown.
Olive Presentation According to their type and preparation, table olives can be presented in the following forms:
Whole or Plain Olives The olives that have not been pitted and hence maintain their original form.
Pitted Olives The olives that have been pitted and maintain, more or less, their original form.
Stuffed Olives The pitted (green) olives stuffed with one or more suitable products, generally pimiento or anchovy.
Specialty Stuffed Olives The pitted (green) olives stuffed by hand with one or more suitable products, generally almonds, hazelnuts, capers, garlic, jalape単o pepper or onions.
Sliced Olives The pitted olives cut in transversal segments of a relatively uniform thickness.
Wedged Olives The pitted olives cut in four longitudinal segments having the shape of a wedge.
Halved Olives The pitted olives cut in two equal, longitudinal segments.
Salad Olives The olives that have accidentally been broken during the pitting or pimiento stuffing process and that normally contain pieces of the stuffing material (pimiento).
“Alcaparrado” Style Olives The whole or pitted olives that are generally small in size (“Perdigón”), mixed with capers and/or stuffing material (pimiento). The olives predominate in the total product marketed in this style.
Olive Packaging The olives are available in a large of packing types, including glass jars, cans or tins, pouches and PVC drums, and packing sizes both for retail and foodservice use. Depending on the way the olives have been placed within the packaging, the olives can be either:
Place-Packed or Hand Packed Thrown-Packed or Machine Packed When the olives, packed in rigid transparent packs, are orderly hand placed and therefore conserve symmetry or adopt geometrical forms.
When the olives are packed in a nonorderly fashion, i.e. machine-packed.

LORETO SPECIALTY FOODS offers a wide range of premium Spanish olive oils, varying flavours and degrees of pungency, as well as packaging types and possible applications: Under the LORETO, TAPAS and TORREBELLA brands, extra virgin olive oils apart from traditional-, light- and pomace olive oils are packed in elegant & attractive retail glass packs and printed cans, or in convenient, transparent plastic bottles for foodservice use. LORETO SPECIALTY FOODS’ olive oils are perfect for all sorts of culinary uses such as frying, dressing and so on.
Olive Oil Production Process The process for obtaining olive oil is relatively simple and has remained practically unchanged for centuries. Achieving maximum quality requires compliance with strict rules and exceptional care during each of the following 4 stages:
Harvesting The gathering of the olives, once they reach the required maturity, through mechanical means (shaking machines) or by hand (whipping the tree).
Crushing The grinding and pressing of the olive fruits through mechanical means in order to obtain the extra virgin- and virgin olive oils. The olive pomace oil that still remains in the solid part (“orujo�) left after the olives have been crushed & pressed is obtained by extraction.
Refining The virgin olive oils that due to their organoleptic caracteristics and acidity are not suitable for direct consumption as well as the olive pomace oils, are being subjected to a physical or chemical refining process.
Packing The extra virgin olive oils are filtered, if necessary, and the refined olive oils are conditioned or blended with extra virgin olive oils to be finally packed in the various presentations and labeled as extra virgin olive oil, traditional olive oil, light olive oil or olive pomace oil..
Olive Oil Types Extra Virgin Olive Oil The olive oil obtained from olive fruits exclusively through physical means and carried out in special thermal conditions which guarantee that no alterations of the final product are produced. True extra virgin olive oils shall have an excellent aroma and flavour with an acidity that shall not exceed 1ยบ. Ideal for cold applications, such as the dressing of all types of salads and gourmet sauces, as well as for the Mediterranean cuisine.
Refined Olive Oil The olive oil obtained by the refining of a virgin olive oil, that due to its organoleptical caracteristics and acidity is not suitable for direct consumption, or an olive pomace oil. A refined olive oil shall be completely transparent, without any aroma or flavour and its acidity shall not exceed 0.3%. Refined olive oils are conditioned or blended with extra virgin olive oil in order to obtain the desired organoleptic characteristics (flavour, odour, colour, etc.).
Traditional Olive oil The olive oil composed by a blend of refined olive oil and extra virgin olive oil, and whose acidity shall not be higher than 1.5 %. Ideal as an indispensable ingredient of the Mediterranean cuisine, preserving and high-lighting the delicate flavours of prepared meals.
“Riviera� Type Olive oil The olive oil composed by a blend of refined olive oil and extra virgin olive oil, and whose acidity shall not be higher than 0.4 %.
Olive Pomace Oil The olive oil composed by a blend of refined olive pomace oil and extra virgin olive oil, and whose acidity shall not be higher than 1.5 %. Ideal for frying foods, preserving the flavours of prepared meals.

Pickles Apart from a full range of delicious olives, LORETO offers a series of other great, natural snacks that form a tasteful appetizer, ingredient and/or accompaniment of salads and meals. These other Mediterranean specialty items, presented under the LORETO, TAPAS and TORREBELLA brands, include capers, caperberries, piri-piri and jalape単o hot peppers, apart from more traditional pickles such as gherkins, cocktail onions and garlic cloves.
Pickles Apart from a full range of delicious olives, LORETO SPECIALTY FOODS offers a series of other great, natural snacks that form a tasteful appetizer, ingredient and/or accompaniment of salads and meals. These other Mediterranean specialty items, presented under the LORETO, TAPAS and TORREBELLA brands, in ncludee ccapers, appers, caperberries, caperberries piri-piri and jalapeño hot peppers, apart from more include trad ditional pickles pickles such such as as gherkins, ghherkinns, co traditional cocktail onions and garlic cloves.
Garlic Cloves The freshly mild & exquisite taste and the absence of the characteristic smell and any other digestion inconveniences, are the properties that make these peeled garlic cloves from oriental origin an ideal snack, apart from an indispensable garnish for sandwiches, chicken, steak or pasta.
Capers Are the unopened floral buds of a shrub (“Capparis Spinosa”) with rounded and petiolated leaves and that due to their processing (fermentation) and conservation (in brine) might be considered a kind of pickle, though rather should be catalogued as a condiment since they’re basically used as flavouring. Anyway, it’s a fact that the caper has a peculiar & distinctive aroma with an own personality and its zesty taste is ideal for spicing up dishes with a smooth or mild flavour. The capers are classified in accordance with their size (diameter) and their price is inversely to their dimension. The following sizes or calibers are being marketed : Nonpareilles (0-7 mm) Surfines (7-8mm) Capucunes (8-9 mm)
Capotes (9-11 mm) Fines (11-13 mm) Gruesas (>13mm)
Caperberries Are the fruits of the “Capparis Spinosa” plant and considered an excellent appetizer or accompaniment of various dishes. Like the capers, the caperberries are classified in accordance with their diameter and the following calibers are being marketed : Finos (<15 mm) Medianos (15-19 mm) Gruesos (20-23 mm)
Cocktail Onions Are the small white or silver skinned bulbs of the onion plant “Allium Cepa”, a member of the “Allium “ genus or class, a large and very formidable family that further includes garlic, leeks, shallots and many other varieties. The cocktail or pickling onions are mainly used in salads and casseroles or as a vegetable dish or garnish, but are also great and flavoursome nibbles.
Gherkins Are the green coloured immature fruits of a variety of cucumber, the “Cocumis Sativus” plant, with a cylindrical form and small superficial protuberances or bulges. Thanks to their firm & crispy texture and characteristic taste, gherkins are without any doubt world’s most popular pickle.
