FRONT EXTERIOR In its previous incarnation, the house was faced with concrete tiles with white timber windows. It’s been brought up to date with zinc tiles on the upper storeys, and cedar cladding at ground-floor level

nly one family had owned Patrick and Cressida Murray’s home since it was first built in the seventies. It had been loved and cared for, but when the couple bought the place back in February 2014, they saw the potential to bring it up to date. With the help of architect Ben Jones, the house is now a slick zinc and cedarwrapped building, extended to the rear, side and into the attic to give them the space they need. Patrick is a CFO and Cressida is a photographer, who specialises in portraits and Fine Art work. With friends already in the area, the couple knew they wanted to live in Lewes, and taking on a large project was their best chance of being able to afford the house they wanted. They’d renovated and extended

properties before, just nothing on this scale. The property had an unusual steeply pitched roof shape that they liked, which was something they felt was worth preserving. As well as renovating and extending the house, the couple wanted to alter the layout. “The kitchen and sitting room were upstairs, and access to the garden was through a balcony and some stairs, or via a utility downstairs. We immediately thought we’d want to move our living space downstairs,” said Cressida. However, Ben brought his own ideas, too.

These included moving the main entrance to the side of the building, which benefitted the flow of the internal layout; and created a large, dramatic double-height entrance hall by taking some floorspace from the first floor. Another ‘huge contribution’ included the idea of constructing a pantry off the open-plan kitchen. Planning permission went to committee: some locals voiced concern about the distinctive contemporary front facade, with its zinc shingles and cedar cladding, in a conservation area populated largely with Victorian houses. But in the end, the committee passed the plans which allowed the renovations to proceed. The start of the build was delayed by a few months while the couple sorted out an issue with their financing as the regulations changed between getting the finance approved and actually having the money in the bank, which required a few more hoops to be jumped through. As experienced renovators, and because they were on fixed budget, the couple took on some of the project management themselves: their main contractor was in charge of sub-contracting the labour, while they sourced most of the materials. With jobs to hold down and a family bereavement to cope with, it turned

into a stressful time. They were in charge of making sure that materials arrived in time to dovetail with the relevant trades: trying to time the work of the cladding installers, which they had sub-contracted themselves, around everything else that was going on onsite, was particularly challenging. Project managing a build yourself “does bring a lot of pressure on you as the client, in particular when it comes to signing work off,” said Patrick. “We still have a small leak issue in one of the flat roofs which stems from this, but we’re working hard to get it resolved.” The couple and their two daughters, Ella and Liberty, moved in in March 2017, but “the work was far from finished,” said Patrick. With their main contractor diverted off on various other jobs, one of his sub-contractors stepped in to take things to completion. Now the build is complete, the front of the house is barely recognisable from its previous incarnation: the steeply pitched

At the rear, the house is clad in cedar, and the groundfloor extension is a couple of steps lower than the original house’s floor level – partly to create a broken-plan layout that delineates old and new, and partly to give extra ceiling height in the extension. The new addition contains the kitchen and a sitting area with an additional snug behind it. On the first floor there’s a large living area

the Peruvian In times past figureheads personified the spirit of vessels and offered protection to the crew during their arduous maritime journeys; and one such figurehead has spent more than a century in Seaford writes Richard Hunter from the Hunter Figurehead Archives website

hips figureheads have always held a particular fascination with the public, seen as exotic and mysterious, survivors of a once beautiful sailing ship. Sometimes the figurehead may be the only surviving fragment salvaged from a tragic wreck site, or more benign removed from a vessel after a full working life at the breakers yard, to be bought as a souvenir or memento. Either way we see and imagine within their painted eyes, a life of travel and adventure, storms and doldrums with no two voyages being the same. The coast of Sussex has had its fair share of tragedies, with numerous fine sailing ships washed up ashore, dashed to pieces, while onlookers from shore scrambled to save the crew. Once the drama was over and as many of the crew saved as possible, the following days and weeks would see the debris washed ashore to be salvaged and

re-used in a variety of ways, an early form of recycling long before it became fashionable. An important, but purely decorative part of a ship’s fabric, the ship’s figurehead would also be salvaged whenever possible, although with little if any monetary value. This was seen as the spirit and character of the lost vessel,

If not protected from the harsh weather conditions on the coast, many of these wooden sentinels would unfortunately rot and decay away, and with them a link to an event in history lost forever. We are fortunate that a few have survived the rigours of time, offering us a glimpse of a bygone age and art form. One such figurehead is that of the Danish Barque ‘Peruvian’ grounded off Seaford on February 8th, 1899. Originally built at the Clyde yard of D&W Henderson in 1874 for the Donaldson Line, by 1890 she had been bought by the Danish owners J Hansen of Fanø.

Another photograph shows the ‘Peruvian’ with a young male admirer ‘Michael Henry’ saved the captain and nine of her crew, while the chief and third mate, decided to stay on board. By the time the lifeboat returned to make a second attempt one of the mates had been drowned. Over the next few days her condition changed dramatically; being full of water and her cargo now washing out onto the beach, through a hole 20 feet by 11

feet in her starboard bow. By the 12th February the heavy gale finished her off, littering the beach with her debris. A number of early photographs have survived, showing onlookers standing on the shore spellbound at the unfurling tragedy. Within days the stricken vessel was pounded to pieces, her valuable cargo spilling ashore. Among the remains her figurehead washed ashore, to be eagerly rescued; a beautiful rendition of a lifesize Peruvian female in a long flowing gown, holding in her left hand a feathered fan, while her right arm is held across the chest, she looked as exotic a visitor as Seaford had seen in many years. Since the old ‘Peruvian’ was salvaged from the wreck she has found her home in a number of locations around the town. Always on display, it was inevitable that she would attract attention, offering a great opportunity for amateur photographers, with friends and family

giving her a hug or kiss, figureheads can be very tactile – a perfect subject.

MAJOR THOMAS CROOK After the wreck, the ‘Peruvian’ figurehead was purchased by Major Thomas Crook, a wellestablished Seaford resident with a large house on the corner of Esplanade and Dane Road called Telesmaure, where she joined a number of other figureheads in his garden. A photograph from the time shows Major Crook, in casual attire standing at the side of the ‘Peruvian’, in the garden of Telesmaure House, giving her an affectionate kiss. It would be one of many she would receive over the years. It’s interesting to note that from this angle Major Crook is kissing the top of her head, which would suggest that at least a quarter of the figurehead was buried in the ground for stability.

THE SALTS By 1906 the Crook family had given the ‘Peruvian’ to the local council, who found a suitable home for her on the seafront. Another photograph shows the ‘Peruvian’ with a young male admirer, although it’s difficult to put an exact date on this particular view, it’s probably from the early 1920s. She appears to be standing at the side of the flagpole in The Salts Recreation Grounds, in front of the café. By this date she was beginning to show the signs of being outdoors in all kinds of weather without much protection and was very much in need of some serious tender loving care. It’s possible that on a number of occasions she was ‘refurbished’ and repainted. Children have a particular fascination for figureheads of any kind, this can be seen in two photographs taken before World War II. One image shows two young sisters fascinated by this exotic female looking up to the sky. The other shows a young boy proudly posing in his school uniform, in a photo opportunity not to be missed! One can only wonder about the countless photographs taken over the years and pasted into numerous family albums. Who knows how many more have survived showing the fascinating ‘Peruvian’ and her admirers?

SEAFORD MUSEUM & HERITAGE SOCIETY At some point in time the ‘Peruvian’ was moved to a location outside Chyngton Primary School but by the early 1970s she had been removed from the school and placed in council storage. After looking for a new home for her, an ideal

solution was found with the opening of the Seaford Museum & Heritage Society in 1979. Housed in Martello Tower number 74, together with other material from the wreck, the ‘Peruvian’ was an ideal exhibit, the largest surviving fragment of a once magnificent sailing ship. Unfortunately, the years

had not been too kind to her fabric and by the time the museum had taken her in, she was in a desperate need of conservation and restoration. Thankfully a local man and museum volunteer named David Taylor was at hand and offered to restore her at his home in one of the Coastguard Cottages. It was a project that would take just over two years, and when finished in 1989 it would see her revived, looking as radiant and colourful as the day she was carved, over a hundred years previously. She remains on display in the museum’s entrance hall, offering visitors a glimpse of why everyone fell in love with the ‘Peruvian’. Children are curious little beings, making parents laugh and despair sometimes in the same breath. With two young ones, Sara Whatley shares some of her family adventures and the funny moments that make the day so worthwhile. This month… TIME FLIES!

ust after I had my second child I was in the park, baby in sling while running around after child number one, feeling the strain. I must have been looking particularly harried as one of the other mums said to me, “The days are long but the years are short,” a quote by Gretchen Rubin which she had been told when her children were very little and one which she said has helped her since. And now it helps me. The years are absolutely flying by but sometimes the days stretch on for an eternity and I cannot wait to pull on my bed socks and snuggle down for 20 minutes before one of them wakes up again.

“In 1922, when the dinosaurs were alive…” she told me recently, very matter of fact “The days are long but the years are short,” I mutter under my breath, along with my other stalwarts: “It’s all a phase”, “This too shall pass,” and “It’s nearly wine o’clock.” This month my little Mia is turning five. Our beautiful Valentine’s baby is growing up yet it seems like only the other day she was helpless in my arms depending on her doting parents for her every need. Now she tells us (when it suits her) she can do it herself. Fine, just do it quicker! The concept of time is fairly meaningless to little ones and they

gauge it on things that matter to them. With Mia it’s dinosaurs. “In 1922, when the dinosaurs were alive…” she told me recently, very matter of fact. I wasn’t going to argue. Another day, when talking about my gran, Mia’s great-gran, she

is guided very strongly by his belly. Although he still has a very limited vocabulary he certainly makes his needs clearly known. “Craga!” he demands, pointing to any form of cracker, rice cake or breadstick. When he’s really hungry he climbs up into his high chair and bangs his sippy cup on the table, looking expectantly over at me as I’m madly dashing round the kitchen to get dinner on the table at 5 o’clock. By two minutes past I’m in trouble. After a particularly good bowl of banana and yogurt he holds up his bowl to be refilled, like a tiny Dickensian Oliver and usually just as grubby. Then it’s bath time and bedtime. It’s always something time with children, be it food, play or sleep. I look forward to the day when they have a bit more autonomy over their own time, but of course when that happens I’ll be missing those precious small years that fly by so fast and wishing I had the power to rewind time. l

Magichour productions are staging a series of performances of a new play about the life and times of Donizetti; at the 2022 Brighton Festival and other locations across the summer The play includes live performances of arias by Donizetti, performed by Sussex-based soprano Karen Orchin under the musical direction of Simon Gray who has wide experience of conducting opera. Donizetti is played by professional actor Robert Tremayne and the play also features Sophie Methuen-Turner. The play looks back from Donizetti’s tragic final year to his youth in Bergamo and his marriage to Virginia, charting his triumphs and comic genius as well as the challenges and hardships, which are reflected in his music. A series of scenes reveals key elements of his life and times, and explores some of the tensions, as well as some of his happiest and most productive years. The play aims to reveal Donizetti’s fascinating life story and the way that his life and times interacted with his music.

How did this play come about? Its two authors, who have worked closely together in the past arrived at the idea of dramatising elements of Donizetti’s life from different directions during lockdown. Duncan Hopper is a playwright who has specialised in dramas focused on real lives. His play Helen’s Shadow features Heinrich Schliemann the archaeologist and excavator of Troy. The one woman play An Evening with Lady Montague explores the life and letters of Lady Wortley Montague. A musical treatment of the life of Marilyn Monroe, Whatever Happened to Marilyn offers the tantalising theory that this iconic figure did not take her own life but was spirited away by a powerful America political family and lived to a ripe old age. Duncan has personal links with Bergamo and Donizetti was a natural subject for another historical and musical study.

Duncan’s collaborator Mike Wells came from a rather different direction. An opera lover since seeing a memorable production of Tosca at Covent Garden when he was sixteen, Mike was intrigued by the Bergamo connection. He directed The Elixir of Love for a Berkshire opera company in 1976 which was, for him, one of the most memorable productions in a directing career which has included over 200 plays, operas and musicals. Conversations during lockdown between Mike and Duncan about Bergamo, Donizetti, new works for Magichour to produce, a possible biography of the composer were the genesis for The Maestro. We hope that in our modest way we can help to show how interesting the career and works of Donizetti are to a wider theatre going public. Our professional actors, never having listened to any music of this period or genre, have been moved and fascinated by the music we have chosen – not all of it familiar. The authors are still pursuing their knowledge of the Maestro’s works.

Where can it be seen? Performances will take place in some stunning venues. The beautiful church of St George’s in Kemptown is one of Brighton’s architectural gems and close to some of the finest Georgian buildings in Britain. Newtimber Church nestles amongst the fine scenery of the South Downs close to the main London to Brighton road. Danny House in Hurstpierpoint is a most beautiful Elizabethan mansion and its music room is a stage in itself. A picnic in the grounds would add to the pleasure of a visit. And after that we hope to stage The Maestro in some other places of historical interest and take advantage of the beauties that Sussex has to offer.

WOODLAND Gems

The term ‘woodland’ instantly conjures up an image of a vast acreage, complete with ancient trees. Plants labelled ideal for a woodland setting are often assumed to be unsuitable by folk with just a modest-sized plot to offer – but, think again, says Flo Whitaker

n early spring, sunlight filters through the bare branches of a deciduous wood, illuminating grounddwelling plants. They enjoy gentle sunshine, but dislike heat, so rely on emerging tree foliage to provide a shady summer canopy. Come winter, falling leaves add nutrients to the soil. Once again, sunlight penetrates the woodland floor – and the cycle continues. So, from a plant’s perspective,

“woodland” can be simply defined as “light shade with humus-rich soil.” No matter how small your garden, if you have deciduous shrubs or a deciduous tree, you can utilise the ground underneath as a miniature habitat for shade-worshippers. Here are three easy woodland characters to try – you’ll find pots of them in the garden centres about now! Wood anemone, (Anemone nemorosa) is a native ‘wild’ plant that also thrives in a border. Extremely slowgrowing; (taking about 100 years to cover a metre of ground!) it produces elegantly dissected leaves, (20 cms high) and flowers in early spring. If, on a countryside ramble, you chance upon a vast carpet of anemones, pause to admire their beauty – and tenacity. That colony may be thousands of years old. Attractive

pinky/mauve cultivars are also available, but nemorosa, with its exquisite starry white flowers, is hard to beat. On a warm day, the scent from the tiny purple or white blooms of common violets, (Viola odorata) carries a considerable distance. They enjoy a damp border, or the cool shade at the base of a hedge. All cultivated violas, (and their large-

ground-hugging foliage is often attractively marked with silvery/ cream highlights. Cyclamen coum has wide, rounded leaves and appears from Christmas through to late February/March, whereas Cyclamen hederifolium carries flowers in autumn, (typically September - November.) They make a useful double-act; as C. hederifolium retreats into dormancy, C. coum obligingly springs into action. Hederifolium’s leaves are more pointed and ivy-like, (‘hedera’ is the Latin name for ivy.) It is the most vigorous of the two and will colonise tough environments, such as rough-mown grass under trees. Woodland plants aren’t bothered by sub-zero temperatures; however,

waterlogged soil is their enemy. Moisture retentive, but well-drained soil is essential. Adding well-rotted compost to the planting holes is helpful, as is an annual mulch of leaf mould or chipped bark – this holds in moisture and mimics the conditions of a woodland floor. Like Goldilocks, woodland plants demand conditions that are ‘just right’, but it’s worth indulging them as they are long-lived stalwarts that bring colour at the dullest times of the gardening year. l

An Admirable Folly

FOR WILDLIFE

When wildlife is in need of urgent medical attention or rehabilitation there are a handful of charities across Sussex in a position to help; so we sent Peter d’Aguilar to meet one of them, at Folly Wildlife Rescue Trust near Eridge

o you ever wonder who looks after badgers hit by passing cars, or deer entangled by their antlers in fences and netting, orphaned hedgehogs and foxes, or birds stunned by window strikes? The answer in some parts of the county is Folly Wildlife Rescue Trust, a highly respected wildlife hospital situated in Broadwater Forest, between Eridge and Tunbridge Wells. Each year over 4,000 injured or distressed animals receive vital care and treatment from a dedicated team of volunteers and professional veterinary staff, before being returned to their natural habitats in the wild. Dave and Annette Risley, founders of the independent charity, first began looking after traumatised hedgehogs as a hobby, at their home in Eridge Green some thirty years ago. Dave had previously

been head-keeper of reptiles at London Zoo. Annette, who sadly passed away in January 2021, was working for Animal Aid, the animal rights organisation based in Tonbridge. Soon their back bedroom, garage and garden shed were packed to the gunwales with recuperating casualties. Pens and aviaries began to appear all over the garden, and by the new millennium, it was obvious they needed larger premises. After a major fundraising campaign, the group, by now a registered charity, purchased a redundant six-acre horticultural site and converted it into the Broadwater Forest Wildlife Hospital – which marks its tenth anniversary in April this year. As well as dealing with injured animals, Folly specialises in handrearing mammals such as hedgehogs, badgers, foxes, mice, rabbits and deer, as well as all species of nestling and fledgling birds. Hedgehogs in particular are now under threat of extinction; in the 1960s the UK population was

The Trust run an education programme through local schools, community groups and clubs; both to promote better understanding of our valuable wildlife heritage and to draw attention to the man-made hazards faced by animals and birds, outlining

ways of preventing accidents. It also aims to debunk some unhelpful popular misconceptions – for instance that all badgers carry tuberculosis, magpies kill all our songbirds and foxes murder indiscriminately. The Trust has a part-time vet and full-time veterinary nurse, plus sophisticated X-ray and diagnostic equipment, and is extending its outdoor enclosures to facilitate its patients’ successful return to the wild. “It costs us around £250,000 per annum to keep Folly Wildlife Rescue

Trust going,” said Dave. “We get no help from government or the National Lottery, and Covid-19 has had a major impact on our fundraising activities. It’s prevented us from holding our regular pub quizzes and sponsored walks. While we are fortunate to have many dedicated supporters, including locally based legendary guitarist Jeff Beck and the wine critic and television presenter Jilly

Goolden, the continuing generosity of local people is critical to our survival.” While there is no avoiding the inconvenient truth that most of the cases Folly treats are caused by human activity; allied to the perils of urban sprawl, road building and intensive farming, there are many opportunities for us, the general public, to help redress this. Readers can help in many ways. They can pledge money by supporting fundraising events, through donations at the door, gifts, standing orders, sponsorship and the adoption of animals, Follys’ Help to Heal scheme, the weekly Online Auction, and also by joining the Friends of Folly. Contributions of animal and bird food are always welcome. There is also a need for new volunteers – to help with collection driving, animal care, administrative support and fundraising. Dave Risley is an inspirational figure with an impressive determination to keep this important project on track. “The tragic loss of Annette and the damaging effects of the pandemic have threatened our very survival,” he revealed. “Nevertheless, we feel that it is vital for us to keep going.” He told me, “the hospital stays open 365 days a year. Volunteers even come in on Christmas Day. They often say that working here has changed their lives and several have gone on to pursue careers as vets or vet nurses.” As members of the public and custodians of our environmental heritage, we can play our part by being more careful not to harm wildlife in the first place – by following Folly’s guidelines. These include clearing away litter and netting, checking bonfires before lighting them, reducing our driving speed and keeping our cats and dogs under control. “I

had been looking for a house for several years, when I went to a friend’s house who’s a photographer,” said Robert Amstad. “He had lovely great big spacious rooms. All the houses I had been looking at were little boxes, and I thought, ‘I don’t want to live in a box. I want somewhere with space like this.’ And then the penny dropped – I already owned somewhere with that kind of space.” Robert bought the building 30 years ago and ran his antique centre across all three floors for most of that time. “The whole building was full of antiques. You couldn’t move in there,” he said. “It was so full of stuff that I’d stopped seeing it.”

Once the space was empty, he was confronted with layer upon layer of additions to the original interior dating from Victorian times right up to the 1970s. “The rooms were divided up really badly. It was dreadful. There were three carpets on top of each other. The walls had four different layers of plywood, wallpaper and just rubbish that had been put on top of rubbish over the years. It was an inch thick in places,” he explained. “I

wanted to get right back to the bare bones. I stripped it all back, ripped the roof off and pulled the floorboards up. Every window was taken out, restored and put back in. In the upstairs living room, a friend and I took every ceiling slat down, stripped each one and put them back. I got right back to the bare bones of the original building.” As Robert peeled off the layers of time, he started to discover original features that in 30 years of owning the building he had never seen before. “The builders discovered part of a wall that dates back to Norman times. The church next door is the third one to be built on that site and this would have been part of the original church,” he said. “You can tell which stonemason shaped which stone because they used their own tools

and so their markings vary – you can even tell who was left-handed. It’s incredible to have history like that in your own home.” Robert also found a huge original ceiling rose above a false ceiling. He painstakingly removed it piece by piece, had it restored and reinstated it. He stripped both staircases by hand, each one taking two weeks. “I wanted to leave some of their story in them, so I stopped stripping before they were perfect,” he declared. “You can still see where the runner was. You have to know when to stop – you have to listen to your gut instinct.” Once the building was back to how it would have originally been, Robert installed a downstairs bathroom, for guests, using doors he found in a skip. Then he whitewashed everything, “just so I could see it properly,” he explained. “Once I could see what I had, it evolved from there. I didn’t plan anything. I just did it.

that’s in there,” he said. “I saw it when I was going through a really hard time and it just leapt out at me. Then I found out that it was called ‘Out of the Dark’ and I had to have it. All the colours in the bathroom are taken from that one image. Black is a bold colour, but sometimes you have to take risks. I think it works.” It wasn’t all plain sailing. When the glass conservatory roof arrived having been made off-site, it was the wrong size. “That was probably the worst thing that happened in the whole project,” recalled Robert. “But you just have to get over it and work out a solution. In the end, I extended the wall out to fit the roof. Funnily enough, it actually made it look better, because I used slate to bring it out, which I really like the look of. “The renovation was a lot of work, but I thoroughly enjoyed it. I think the nicest thing for me was what I achieved for such little money, compared to what I would have got if I’d bought something else,” explained Robert. “Living here is just a pleasure. I’ve got really involved in the local art scene and there are amazing people in this area. I enjoy entertaining. I have great parties and invite all the artists, some of whom are quite famous, and have a good laugh with them. My favourite room is the kitchen. I like looking at art, I like talking about art and this is my social space.” “I was nervous about moving here, about living above the shop and moving back into a town, but it has really worked. Perhaps you’re going on a romantic date with someone new or taking a well-earned night away from family life with your partner. Whoever you are sharing your evening with, you will want to make sure you are looking your best. Let’s start with date night makeup. Personally, I still like to look like me even when I’m all dolled up, so I tend to think a subtle but romantic look fits the bill perfectly here. Firstly, make sure your skin is well hydrated – a dewy sheen makes skin

look healthy and natural. Don’t forget your delicate under eye area as well to keep it plump and moist. Next, go for a light base for your foundation, nothing too dramatic, and blend until you feel happy with the coverage. Define eyebrows with a brow pencil then move onto your eyes. For a romantic and pretty eye, I would choose a palette of light pinks and peachy colours to blend across your lids and to define the look

Finally, lipstick. A lovely subtle pink peony colour would make for gorgeous kissable lips and complete this romantic look. Style with gently tousled hair and a beautiful boho style dress. Joanne Rogers, founder of the ‘Shop and Dine Well in Wealden’ campaign for Wealden District Council investigates their resurgence… In French culture, markets have been a staple of life throughout time and are often the hub of rural market towns, attracting locals and visitors alike. It is great to see their rising popularity again here too. In Wealden, we are fortunate to benefit from a variety of farmers markets and craft fairs, with twelve taking place on a regular basis. They are fast becoming an integral part of our community life, creating a local neighbourhood hub for shoppers and a welcome source of income for our farmers, producers, fishermen and artisan makers.

Love Local One of the best things about embracing markets and the culture they bring with them is the connection they engender between local people and places. During the past two years amid the pandemic, loneliness and isolation became a real issue for many of us and visiting outdoor markets was a wonderful way to shop safely and meet people. The trend seems to be continuing and is a great boost for local life. A visit to a market is especially beneficial if you are new to an area or work from home. You don’t need to travel far to connect with your neighbours and pick up a treat for supper!

Fresh, fabulous and good for the environment Another obvious benefit of visiting a farmer’s market is getting delicious fresh produce at a fair price. The Cause

The primary cause of gum disease is plaque. This starts off as a fine film of live bacteria that grows constantly on the tooth, root, and gum surfaces. If it is not completely removed each day it calcifies to a hardened material called calculus or tartar. Let’s start by understanding what our immune system does. Our immune system is our body’s defence system; when germs invade our bodies our immune system leaps into action

to protect us from getting ill. It also helps to protect us from disease-causing changes to cells within our bodies, such as cancer cells. As the immune system is made up of various organs, cells and proteins, the best thing we can do to naturally keep it in strong working order is leading an all-round healthy lifestyle. This includes:  Eating plenty of fruit and vegetables  Regular exercise  M aintaining a healthy weight for your height and build  Not smoking  Drinking alcohol in moderation

Sleeping well Reducing stress A key element in looking after our immune system is having a healthy gut. 80% of immune cells can be found in the gut, so feeding your gut well will naturally power up your immunity. A healthy balance of bacteria in the gut is what we are aiming for; help achieve this by eating a rainbow of vegetables and fruit, healthy fibres, and foods low in sugar and processed foods. ON PEA PURÉE WITH CRISPY PANCETTA

This Valentine’s Day why not surprise your loved one with a romantic dinner for two? Adele Trathan offers this starter which combines classic complementary flavours for an indulgent appetiser INGREDIENTS 6 fresh scallops 4 slices of pancetta 1 small onion or large shallot, finely chopped Small clove of garlic, crushed 200g of frozen peas 125ml of double cream 2 teaspoons of butter Dash of olive oil Squeeze of lemon juice Salt and pepper to taste

SERVES

METHOD Sauté the onion or shallot with the garlic in 1 teaspoon of butter for 2-3 minutes until softened, add the cream and bring to the boil. Pop in the frozen peas, just to defrost until soft. Put the mixture into a blender and liquidise to a smooth consistency, season with salt and pepper to taste and set aside somewhere warm.

Wipe the pan clean, and then over a 2 high heat fry the pancetta, turning until crisp. Set aside to cool.

Heat a large frying pan adding 3 a splash of olive oil. Season the scallops and add them to the hot pan.

Cook for one minute on each side (time it, to avoid overcooking), add the other teaspoon of butter and squeeze of lemon juice at the last moment. Spoon some of the pea purée onto 4 the centre of a warmed plate and top with three scallops. Crumble or

chop the slices of pancetta and sprinkle over the scallops, serve immediately. February 2022 | SUSSEX LIVING 95

PAN-FRIED SEA BASS WITH CANNELLINI BEANS & TOMATOES

Adele Trathan suggests this quick and tasty fish supper, it’s ideal for a romantic dinner as it only takes 20 minutes to make, but is full of delicate yet delicious flavours INGREDIENTS 2 sea bass fillets 4 tbsp olive oil 1 red onion, finely chopped 1 garlic clove, crushed 150ml (4fl oz) dry white wine 250g (10oz) baby plum or cherry tomatoes, halved 1 (400g) tin of cannellini beans, drained and rinsed 1 lemon, halved 2 tbsp flat leaf parsley leaves, chopped Salt and pepper

METHOD Preheat the oven to 110C (230F, gas mark ¼). Heat 2 tbsp olive oil in a pan over a medium heat, add the onion and garlic and gently fry for 4-5 minutes until softened. Turn up the heat and add the wine, bring to the boil and reduce by half.

Add the tomatoes and cannellini 2 beans, lower the heat to mediumlow and simmer for 10-15 minutes,

stirring occasionally until the sauce has thickened a little. Then squeeze the juice of one half of the lemon, add a tablespoon of olive oil, season well and stir through. Transfer to an ovenproof dish and pop into the oven to keep everything warm.

Pour the last tablespoon of olive oil 3 into a large non-stick frying pan and warm over a high heat. Rub both

sides of the sea bass fillets with salt and pepper. When the pan is hot, sear the sea bass, skin-side down, and fry for 3-4 minutes without moving until the skin is crispy and golden. Then turn over and fry for a further minute. Stir the chopped parsley through 4 the cannellini bean mixture and spoon onto two warm plates. Top with the sea bass fillets and serve immediately with lemon wedges.

It’s Friday 31st July 1959 and the main doors of the Lounge are about to be opened by the Mayor, Horace Bradley. Once he has passed through with the Lady Mayoress and other councillors, there will probably be a rush for seats. If you had lived in Worthing in 1959, wouldn’t you want to tell your children that you had been one of the first residents to take tea in the Denton Lounge? Rhymes for our Times A Hopeful Display Now that I’m aged, I’ve decided to start and grow some spuds, and flowers in carts. It’s the very first time, I’m ashamed to say, horticulture has come to play a part in my life. No need to hog the window seats! In a way the Denton Lounge was a surprise gift to Worthing, although it wasn’t opened until 20 years after the death of the donator. Four-time former mayor of Worthing, James Gurney Denton was a successful grocer and wholesaler who had no children. He decided to give his fortune to the corporation of the town he loved, for the benefit of its residents. First came Denton Gardens along the seafront, then the Assembly Hall, and finally there was enough money left over to build the Denton Lounge. The August bank holiday immediately following the Lounge opening was a busy one. Staff from the AA and RAC organisations counted cars in and out of the town and the Denton Lounge

There used to be a small bust of James Gurney Denton in the entrance vestibule was filled to capacity over the three days. People also flocked to the Lido during

the day and the Max Jaffa concert in the Pavilion on the Sunday night. However, the Worthing Gazette noted that the town’s putting, pitch-and-putt and miniature golf courses, ‘did not draw as many players as in 1958’. In 2015 the Denton Lounge was renamed The

DIVORCE During the early days of wedded bliss, few couples expect their union to end in divorce, but many do, and as Lisa de Silva explains, the divorce laws are being reformed this spring

From April 2022, the biggest reform in divorce law comes into force and here, we explore how the divorce process in England and Wales is set to change. THE DIVORCE PETITION To begin the divorce process, you must be married for at least 12 months, have a permanent home in the UK and your marriage must be recognised in the UK. Currently, one spouse issues a Divorce Petition (the petitioner) against their partner (the respondent). The Divorce Petition seeks to prove the marriage has broken down by citing one of five reasons – adultery; desertion; unreasonable behaviour; separation of

two years with consent or separation of five years with no consent required.

Turn left, downhill from the levee, under the railway bridge and across the field. Keep left of the metal gate and find the wooden steps topped with a stile. A few steps beyond is a T-junction. Turn right and after 100m, turn right again, by the 2-way fingerpost and pair of metal posts. Continue through the avenue of ivy-clad trees into a glade populated with Hart’s Tongue Ferns. This is the base of what was the Offham Chalk Pit funicular railway, which had a vertical drop of 40m at a gradient of 30%, and operated from 1809-1870. Beyond the glade, the path begins to ascend, but not too steeply, passing to the left of the electricity pylon, and ending at a metal gate. February 2022 | SUSSEX LIVING 111

Beyond the gate is St. Peter’s Church, Offham and the junction with the A275. Cross the road with care, then turn left and along the pavement for 50m, before turning right just prior to the chevron road traffic sign. Once among the trees, bear right at the fork almost immediately, then follow the chalk path across the contours, ascending the escarpment of Offham Hill. The gradient gradually ramps up, before easing further on. Once past the metal 7-bar gate the trees thin out and the views become all the more impressive. Beyond the wooden ‘no sheep’ gate, keep right in the field that follows, following the fence line to the wooden 5-bar gate. Once through this gate, the path runs alongside the post and rail fence, and the crop fields until the point it’s parallel to the gallops. Almost ¼ mile further on, cross the old racecourse at the roped off crossing point. At 133m (436 feet) it’s the high point of the walk. Turn right on the other side and follow the path around the inside of the 112 SUSSEX LIVING | February 2022

horseshoe, of what was the final bend of the racecourse. The view to the left into Cuckoo Bottom is glorious and if the weather is in a forgiving mood, Mount Caburn, Firle Beacon and Ashcombe Mill will all be visible. The walk eases ever so gently downhill, past another crossing point and into the scrub. Almost ½ mile further on, the path turns sharp left, away from the old racecourse and into the woods. After rolling gently through the

trees for a while, the path descends the contours, eventually emerging into open fields by a solitary fingerpost. Keep left and continue downhill to a confluence of paths at the far end of the field. Follow the track in the same general direction, through the valley of Houndean Bottom to another fingerpost in front of a redundant barn with a corrugated roof. Turn left here, then right at the 3-way fingerpost 100m further on. The path leads to a track,

Teddy has been contemplating the passage of time, and has noticed the chapters of life are flashing by, so he’s making the case for slowing down, living in the moment and enjoying the shortest month of the year; yipped and yapped as ever via the pen of Helen Stockton

ell, the longest month of the year, in endurance terms, if not in numerical duration, is over, and the shortest month has begun, narrowing the gap between winter and spring. It may not feel like it on occasions, but time passes quickly. This is particularly noticeable if you are a dog. We have a much shorter lifespan than people, with the average for a Border Terrier, being thirteen to fifteen years, and I’ve had over nine of those already. Unbelievably, my apprentice, Bear, who only a seemingly short time ago burst into our lives as a tiny puppy, is now approaching her first birthday. She has grown into a lively, loveable roguesse, into everything and with an unrivalled capacity for chewing that has seen the

demise of leads, collars, harnesses, bedding, toys… you get the picture! Where has that year gone to? ‘Them Indoors’ are feeling the passage of time too. They are presently in the throes of trying to move house, which, according to the vagaries of a web of interconnected circumstances, mainly outside of their control, may or may not happen any time soon. They have been in our present house for sixteen years. When they moved here, ‘Junior Her’ was still at primary school,

and a lot of family life has taken place within these four walls. Now the Juniors are grown, ‘Him Indoors’ has recently retired, and down-sizing will hopefully mark the start of a whole new chapter, which is fine, if you temporarily forget how quickly the last one went by. There seems to be a conspiracy to rush us through life as quickly as possible. ‘Her Indoors’, a few days before last Christmas, noticed some hot cross buns at the top of a grocery delivery, for a neighbour, and commented about the seasonal incongruity to the driver. His response was to point out that Easter eggs were in the warehouse, just waiting for the despatch of the turkey and brandy butter, before making their way out to us avid consumers. There’s no time to wait – get your suntan lotion and flipflops purchased now. In the face of all this speeding up, I’d like to make a case for slowing down. I don’t like to rush about too much. On walks, I like a leisurely sniff, and Bear adds another set of nostrils, ensuring I don’t miss a good scent. I like to lie in the sun, sleep on my bed and enjoy life in the moment, and I reckon we’d all be better off if we did more of the same. So, let’s take February at a leisurely pace, I reckon the rest of the year will come soon enough, after all, time flies. l

Remember the good old days? You awoke, slightly disorientated, on 2nd January, caught up with a fortnight’s worth of washing-up and wondered who was asleep on your sofa and what day to put the bins out. That was it. But January had a makeover and is now a social media ‘thing’ – complete with a host of worthy, guilt-tripping special events, particularly of the animal variety. January’s nauseainducing celebrations included Penguin Awareness Day, National Golden Retriever Day, Red Squirrel Appreciation Day and International Zebra Day; (pity the poor pandas and meerkats, patiently waiting ‘til March and July for their turns in the spotlight). January was also ‘Veganuary’. In case you haven’t heard, Veganuary is a campaign to persuade people to introduce vegan food into their diet. Animal welfare issues aside, the massive consumption of meat is causing immense environmental damage to the planet, so reducing that in any way is surely beneficial for everyone. I naively assumed that, having been a vegetarian for most of my life, I would be let off lightly – sadly not. According to some social media posters, I’m a ‘Chicken-abusing murderer’ and ‘Worse than Hitler’. Blimey! That’s quite a charge sheet. I won’t attempt to defend myself, except to inform the trolls that I’ve been a vegetarian since 1970, but, (as I suspect) they’ve been vegan for a fortnight, they’re doubtless right about everything. I’m tempted to start my own social media event; ‘Be Nice to Vegetarians Day’. Just be kind to one another, folks, and, if you can’t agree – disagree politely.
