Happy New Year! I hope you all had restful Christmas breaks, and are raring to go in 2016 – we have certainly got another exciting year ahead of us at Sussex Living with lots of great things planned. Getting the year off to a flying start, we have got a fab ‘It’s a New You’ feature with health, fitness for both the mind and body and beauty all rolled into one. Check it out from page 20 and kick start your way to feeling fantastic. After all, I can’t be the only one feeling a little ‘festive’ round the middle! Why not give your home and garden the new year treatment as well? Lisa de Silva gives us her tips and trends for what’s hot in 2016, from colours to technology - page 45. And keeping your garden in check (p50), Flo Whitaker reminds us to keep watering! Roger Linn has been digging in his history books and has unearthed a fascinating story for us, all about Devil’s Dyke and the intrepid Victorians (p6). Tanis and I had our own adventure recently when we paid a visit to the West Sussex Record Office in Chichester. This building is positively humming with thousands of stories from Sussex history, and the resulting article starting on page 55 is the beginning of a new feature. Nowadays Devil’s Dyke, situated six miles or so north of Brighton, is simply a renowned beauty spot covering some 200 acres of stunning downland and affording what the artist Constable described as the “the grandest view in the world”. North, the panorama takes in the entire sweep of the towns and villages, farms, fields and woods that make up the weald of Sussex and the eye is lead all the way to the faint purple line of the North Downs. To the south is the ever-changing, majestic sight of the English channel, swept by its cloud-driven kaleidoscope of light and shade. The far southerly horizon offers a parade of merchant shipping; tankers, bulk carriers, and container vessels all making their stately way down channel en route to the world’s

ports. While away to the west, on a clear day, one can see the misty outline of the Isle of Wight. The Dyke itself is a steep sided gulley some 700 feet deep and three quarters of a mile long. Supposedly created by the Devil in a failed attempt to flood the churches of the weald, it is the deepest dry valley in the world. Today the area is popular with dog walkers, hang gliders, mountain bikers and walkers on the South Downs Way. However, busy though the Dyke is today, it is nothing compared to its Victorian heyday, when on Whit Monday 1893 some 30,000 people visited. How they got there and what they all did when they arrived is an extraordinary story. Throughout the 19th century, people had been coming out from Brighton to take the air on the Dyke. There, they could be refreshed in an early version of a tea room, or from the mid 1800s onwards in one of the previous versions of the Dyke Hotel - of which there have been at least four, including continued on page 8

one which burnt to the ground. Of course in those days they had to travel on uncomfortably hard seats in horse-drawn wagonettes and the round trip would take a couple of hours. However in 1887, the construction of a single track railway from Hove which wound its way to a specially constructed station some 200 feet below the summit of the hill saw the Dyke gain a rapid increase in popularity. The station is now Dyke Farm and what was the platform is now crowded with black Aberdeen Angus cows, pushing and shoving for all the

world like commuters at London Bridge. The railway was an instant hit and the energetic new landlord of the Dyke Hotel, Mr Hubbard, set about taking advantage of it. He was reputedly a rich, big game hunter from Canada and he had some pretty revolutionary ideas as to how to attract people to his establishment. Today we would recognise his plan as nothing less than an adventure theme park. The old photographs show that over time he created a huge range of activities and exhibits including a fairground, two bandstands, an observatory, a camera obscura, a wooden model of a huge naval gun, a coconut shy, and supposedly, the skull of a whale. There was a pavilion with a bar capable of seating 150 people and amazingly, a mini, gravity operated switchback railway. In 1894, even more excitement was added when an aerial cable railway was built across the chasm of the Dyke. Two steel towers were erected on continued on page 10

opposite sides of the valley some 650 feet apart and 230 feet above the ground. A cable was strung between them and two cars each capable of carrying four people were pulled, swinging and swaying, back and forth by a small oil-powered engine. All that remains of the cableway now are the two concrete plinths upon which the edifice was constructed, but just looking across the gulf can make your head swim. The Victorians were certainly intrepid. When I visited, I found that on one of the platforms there was a posy of wildflowers and a chalked message saying “Fairies welcome”. The aerial cableway was followed in 1897 by the construction of a ‘Steep Grade Railway’ which ran down the precipitous north slope of the Down towards the village of Poynings. The

two open-sided carriages could take fourteen people each and for the princely sum of 2p each way, day trippers could have a thrilling descent from the tiny station at the top, to stroll around in a field at the bottom. The remains of the top station and the clear line of the track are still visible today, but the foot of the hill is now thick woodland grown over the hundred years or so since the little funicular closed. Both these attractions had closed by 1909 and the funfair steadily lost its attraction for the Edwardian generation, but the railway continued to chug its way slowly up from Hove - so slowly in fact that it was said passengers could pick blackberries on the way. Throughout the 20s and 30s generations of golfers in their tweed plus fours and caps the size of aircraft carriers were carried to their golf and at the end of the day were eased out of the clubhouse by the Steward who was charged with ensuring that the members did not miss the last train. The very last train to the Dyke ran on the 31st December 1938 and subsequently the tracks were picked up to help with the war effort. Devil’s Dyke is now managed by the National Trust as a part of the South Downs National Park and although the railway has long gone, you can still take a trip out from Brighton to the top of the Downs on an open top bus. And it is still one of life’s great pleasures.

The 24th Burgess Hill Bike Ride takes place on Sunday 5th June 2016 with circular routes of 10, 20 and 40 miles. Attracting about 600 entrants, it provides an enjoyable summer’s day out and promotes a healthier, more environmentally friendly life-style whilst raising much needed funds for local charities. The Burgess Hill Bike Ride is run by charities for charities, being jointly organised by Burgess Hill District Lions Club and the Rotary Club of Burgess Hill & District. Both Clubs (and the town’s wider community) provide unpaid volunteers to help run the event on the day. All profits from the event are donated to charity. Over the years the event has attracted thousands of entrants and since 1993 has raised around

Puss in Boots From 12th-16th January 2016 at Clair Hall, Haywards Heath. This is the 73rd panto for the Weald Theatre Group and we have been raising thousands of pounds for local charities in this time. Our Puss in Boots cast is made up of children and adults from the local area including, Haywards Heath, Burgess Hill, Cuckfield, Lindfield and surrounding villages. More than 40 children turned up for auditions and they are split into two teams, taking it in turns to perform on alternate nights. The children love having the chance to perform to a live audience, however they are aware that they are part of a team working together to raise money for children less fortunate than themselves.

We were delighted to be able to donate £1,000 each to last years charities, which were Laurens Silver Swimmers and the Albemarle Centre. This year we will be supporting three charities: The Young Epilepsy, Action Medical and Gladrags Community Costumes. The show is written and directed by Lance Milton who has been involved with the group for the last 15 years both on and off stage. Both Sarah, Lance’s wife and Emily and Evie, his daughters will be treading the boards this year while Lance is busy with lighting, sound and set design. Ditchling Players auditions We are just finishing our autumn production ‘Nightmare’ by Norman Robbins and do hope that you managed to get along and see it. It was a lot of hard work for everyone both on and off stage but what makes it all worthwhile is when we have an audience and we know that some of you support us at every production. Turning now to 2016, our spring production (performance 11th to 14th May 2016) is to be directed by Jill Hewer and will be ‘Blithe Spirit’ by Noel Coward. For those of you not familiar with the play it was first produced in the West End in 1941 and revolves around Charles Condomine who brings in Madame Acarti (the unforgettable Margaret Rutherford and latterly Angela Lansbury) to rid him of the spirit of his first wife, Elvira, who has appeared following a previous séance. As well as Charles and Madame Acarti the cast consists of Ruth (his second wife), their friends Dr & Mrs Bradman and the maid, Edith. An audition for this production is being held at the Ditchling Village Hall

Ditchling Film Society Our first film for the New Year will be on Thursday 7th January 2016 and is called ‘Diplomacy’. Adapted from a stage play of the same name, this is a historical drama which depicts the relationship between Dietrich von Choltitz, the German military governor of occupied Paris and Swedish consulgeneral, Raoul Nordling. During the waning days of the Second World War, Raoul Nordling sneaks into the German HQ to try and persuade General von Choltitz not to carry out Hitler’s infamous order to flatten Paris. A tense battle of wills ensues. ‘Diplomacy’ is a fascinating film about duty, history and what lay behind the eleventh-hour decision to save Paris. Director: Volker Schlondorff . Our film on Thursday 4 February 2016 will be ‘Still Alice’ based on Lisa Genova’s 2007 best-selling novel. ‘Still Alice’ is about an acclaimed professor of linguistics at Columbia University who is happily married with three grown up children. When words start to escape her and she becomes lost on her daily jogs, Alice comes face to face with a devastating diagnosis – the early onset of Alzheimer’s Disease. 8th Burgess Hill Scout Group, situated in Royal George Road, Burgess Hill is recruiting two new leaders to join the team running the Scout Troop. The Scout section is for both boys and girls aged between 10½ and 14 and there are currently 16 young people in the troop. Leadership positions are equally open to both male and female, with an age range from 18 to 65+. As these are volunteer positions the pay is zero but the rewards are high. The troop meets on a Friday evening from 7.30pm to 9.30pm. It does not matter if you work on a rotating shift basis, as with a number of members in the team, the shift patterns can be accommodated. The group is looking for people who have a positive attitude, are keen, enthusiastic with a sense of humour and work well with adults and young people. You do not need to have been a Scout or Guide yourself as training is always given. In return you will build on your personal skills such as teamwork, confidence and leadership – all benefits in the workplace. What do Scouts do? Scouts have a varied programme based on three key themes: Outdoor and Adventure, World and Skills. These 3 themes can encompass anything, dependent on the interests of the young people and the leaders. It could be, for example, hiking, camping, a speaker from a foreign country, building a boxcar or a demonstration of taekwondo. This only scratches the surface of Scouting in the Troop. We also have spaces for leaders in the Cub and Beaver sections. As well as 17 hours of live programming a day, 7 days a week, we have attended 55 charitable events promoting social awareness and encouraging our community to

Round Table party The Burgess Hill, Haywards Heath and District Round Table will be swinging into action again this year when they will be hosting their annual party specifically aimed at the elderly members of our community. The Swingtime Sweethearts have been booked to provide the entertainment and they will be singing a wide range of songs from the 1940s, wartime and

swing, including the hits of The Andrews Sisters, Vera Lynn, Anne Shelton, Gracie Fields and Glenn Miller. The event will be at Cyprus Hall, Cyprus Road, Burgess Hill on Sunday 28th Feb 2016. I took over the practice when the previous owner, Wendy Carey, retired but I’ve always strived to retain the traditional values of personal service and genuine client care that was at the heart of the business,” says Catriona. “The move means we can build on this reputation within a contemporary spacious environment, with all the latest eye care and computer technology needed to modernise

As technology has advanced, most prescriptions are suitable for contact lenses and it seems that the trend for daily disposables is showing no signs of slowing down. “Disposable contact lenses are really popular these days as they’re so convenient. People like the fact that you don’t have to clean them, there’s a reduced chance of infection as deposits don’t have a chance to build up on the lenses, they’re great for most sports and they’re a good option for those who have to wear glasses all the time as it gives them the chance to have a break from wearing spectacles,” says Catriona. In fact, the practice has seen a growing trend in clients adopting a mix and match approach to wearing both glasses and contact lenses. Eye health is vital for quality

of life and regular eye tests are always recommended. “Eye tests are important because as well as giving people an idea of their general eye health, we also screen for various eye conditions. Some of these have few initial symptoms, but like all health issues, the earlier problems can be detected the better the outcome, as it limits the damage being done.” Catriona explains that regular eye tests are particularly important for children, diabetics, those with a family history of glaucoma, the elderly and those buying off the peg reading glasses. As natural changes occur to your vision in your forties and early fifties, an eye test can help to explain what is happening to your vision now and what to expect over the coming years. Games Limber up, stretch it out and feel the burn! Incorporating a mental workout into your exercise regime will make you feel switched-on, quick-witted and full of life – what are you waiting for?

In January our thoughts turn to our health. For most this may come in the form of healthy eating and exercise, but bear in mind that while looking after our bodies by keeping active is important, it is equally important to make sure your mind is also kept in use as well as relaxed. A healthy body can help towards a healthy mind, and vice versa. In this day and age, it is easy to feel stressed and anxious on a regular basis, due to the fast pace of life in the 21st century. Keeping your mind busy and healthy can help combat some of these modern-day stresses, while learning to focus your awareness on the present moment through meditation and by practicing yoga, thi chi or Pilates can be very effective in keeping you feeling energised and comfortable in your own skin. There are other methods of keeping your mind going that are even easier – and so much

more fun than you may think. Something as easy and enjoyable as reading a book helps exercise your cognitive skills and helps increase your vocabulary. Choosing a novel you find a bit challenging and makes your brain really work will not only have mental benefits but escaping into a fictional world is also relaxing. Doing jigsaw puzzles, solving maths problems, crosswords, Sudoku puzzles and playing card games are all ways to have a mental ‘workout’, but if you want to do something a bit more social just whip out those really challenging board games at home and get the family round for a friendly game. Alternatively, you could end your brisk winter walk at your local pub and join in on quiz night – these may not always be known for their intelligent questions, but are so much fun and will keep your mind whirring as the questions fly thick and fast. Try to combine your physical and mental workout: let’s say, when you are out jogging

or walking the dog, practise becoming aware of your feelings, thoughts and bodily sensations. Being aware of your stream of consciousness may seem like an unusual thing to do, but getting rid of the hustle and bustle of modern day life gives you a sense of serenity and relaxation, that you will only get from spending some oneon-one time with yourself. Winter is a great time for this as nature hibernates and the quiet and peace of the countryside becomes even more apparent. It doesn’t matter how old you are, keeping your mind stimulated is always a good thing; learn something new: a language or even taking a cooking class will add to your skill set and keep your mind engaged and challenged. It also helps in coming up with a witty comment when you need one – and everyone needs one of those once in a while.

The Forest Way The Forest Way started life back in 1866 as a railway line. Today, this rural pathway is a haven for walkers, horse riders, cyclists and an abundance of wildlife Back in 1866 the sound that interrupted the chorus of birdsong emanated from the steam engine, from the fi rst trains running along the recently opened Three Bridges to Tunbridge Wells Central Line. It was well used but not a busy line, mostly popular with commuters between East Grinstead and Tunbridge Wells. Yet in 1967, after 101 years of timetables and ever decreasing services it was closed after Dr. Richard Beeching, then Chairman of British Rail, published “The Reshaping of British Railways”. Ironically, Beeching cut off his nose to spite his face, as this was the line he sometimes used for his daily commute to London. For five years little happened, except for nature taking it’s course. Weeds grew through what remained of the track bed and the arboreal canopy linked fi ngers high above the line, creating a long green interwoven tunnel. Railway buildings fell silent and into disrepair, while some were converted into homes.

A second life began in 1971 when East Sussex County Council purchased the line between East Grinstead and Groombridge. Three years later in 1974, it was designated a country park. For many years it was little more than a long woodland footpath,

interspersed with faded relics of once grand railway architecture. My grandparents brought my eldest sister and I here in the late 1970s. Their navy blue VW Beetle was parked at Ham Bridge near Groombridge and we walked as far as Balls Green. My sister and I felt like two of the Famous Five after stumbling across the redundant platforms at Withyham Station, but our Grandad soon explained away what appeared mysterious and ghostly to us. On the way back I found my one and only four leafed clover. My sister got stung by a wasp shortly after. The route remained an idyllic little known secret until the turn of the 21st Century, when plans to make it continued on page 24

more widely used were put in place. In 2002 a hard surface was laid down along the old track bed and the footpath was upgraded to become a cycleway. Simultaneously, the route became integrated into the Sustrans National Cycle Network (Route 21). These days, the Forest Way, as it has become known, is a 10-mile (16km) linear park, a green corridor, a nature reserve, footpath, cycleway, bridleway and dog walkers paradise. Be up early enough and you can see deer grazing amongst the sheep and cattle in the fields off to the sides. Later in the day, you might see a Kingfisher or angler, fishing the upper reaches of the River Medway. The Forest Way is free to access at all times. Park users are requested to show respect for each other, keep it litter free, to leave as you find and to follow the Countryside Code. Adjoining footpaths veer away from the route, towards Weirwood Reservoir, Ashdown Forest, Pooh Bridge and the Spa Valley Railway to name just a few locations. The only gradient is between East Grinstead and Forest Row, beyond which, the route flattens out. There are also four circular walks that vary in length and difficulty, which use part of, and then deviate from the Forest Way: • The 2½ mile Green walk is from Hartfield through Lower Parrock and St Ives Farm. • The 3½ mile Orange walk is from Forest Row to Cansiron Lane. • The 3½ mile Red walk heads from Hartfield to Ham Bridge alongside the Medway. • The 4¾ mile Purple walk is from Groombridge

There are plans that might one day see the Forest Way linked to the Cuckoo Trail and all the way to Eastbourne via Motts Mill to Balls Green. The only missing link in the route is a section of the current A22 that runs through East Grinstead, at the western trailhead - from the roundabout at the junction of the High Street and the Lewes Road through to East Grinstead Station. It’s named Beeching Way after Richard Beeching, who lived along the adjacent Lewes Road. The eastern trailhead at Corseley Road in Groombridge is just over a mile from Eridge Station. As well as the trailheads, access points exist in several places: Forest Row, Hartfield, Balls Green, Ham Bridge and Hendal Bridge. Each has room for a few cars to park along the roadside. Bus services stop at East Grinstead, Forest Row, Hartfield, Withyham and Groombridge. There are plans that might one day see the Forest Way linked to the Cuckoo Trail and all the way to Eastbourne. In the meantime, the western end of the route is linked to the Worth Way at East Grinstead Station. This makes it possible to get to Three Bridges traffic free, along the other half of the old Three Bridges to Tunbridge Wells Central Line. On my recent autumnal venture along the route,

all that interrupted the birdsong was the crunch underfoot, a solitary canine bark, the squeal of a bicycle brake, one singing horse rider and the sound of several happy children. The ghost of railways past has become an inspiring country playground.

The centre has an Ayurvedic doctor and consultant available for appointments, alongside a variety of therapists offering treatments which range from reiki to acupuncture, massage to hypnotherapy, shiatsu to psychotherapy. The range of treatments

on offer are constantly updated and new for 2016 are macrobiotics, astrological counselling and natural, non-invasive face lifts. The range of children’s services is also expanding to offer yoga, Kung Fu and clinical psychology. Over the coming months, the centre will be developing their programme of Packages which will include Detox, Destress, Fertility, Well Woman and Sports. Each package comes with a set number of treatments which give clients the flexibility to pick and mix according to their specific needs. The idea to integrate a whole host of health and wellbeing treatments was prompted by Melissa’s experiences when trying to get help for her son. “When Louie was ill we were sent to Brighton, then London and had appointments all over the place. I felt lost and confused and so I wanted Alternative Healthcare to be able to operate within one space, to help people feel nurtured and secure when dealing with health issues.” Another aspect of healthcare that Melissa found lacking was the actual care itself. “It’s why I decided on the name, Alternative Healthcare, with all the emphasis on care,” she tells me. A caring philosophy lies at the heart of the centre, which offers off site visits, for those unable to travel and low cost Thursdays for those on low incomes.

Ingredients: • 60ml freshly squeezed orange juice • 30ml homemade mango puree (just blitz some peeled and deseeded mango in a blender for a couple of seconds) • 20ml fresh lemon juice • 15ml agave syrup • Crushed ice • 30ml cranberry juice Method: Shake the orange juice, mango puree, lemon juice and agave syrup together in a big jam jar or a cocktail shaker. Put some crushed ice into a martini glass, then add the drink and top it up with cranberry juice. Enjoy!

(serves 4)

Ingredients: • 500ml Sussex apple juice • 250ml cranberry juice • 250ml pomegranate juice • Zest and juice of an orange • 1 cinnamon stick

• 5 cloves • 2 cardamom pods • Half a tsp of grated nutmeg • 1 apple, sliced

Method: Keeping back a few slices of apple for garnish, put the rest of the ingredients into a pan and warm on a low heat for about 15-20 minutes. Make sure the pan doesn’t come to the boil, as the juice will lose its flavour. Pour into mugs and garnish with the apple slices.

Rosemary and Blueberry Mule (serves 1)

Ingredients: • A handful of blueberries, crushed • Leaves from a small sprig of rosemary • 1 tsp of honey

Method: Mix the blueberries, rosemary leaves and honey in a jam jar or cocktail shaker. Add the lemon juice and crushed ice and shake until well combined. Missing the flutter of summer butterflies, Ruth Lawrence discovers how these delicate creatures winter out the cold months, and looks forward to their return in the spring While the New Year may herald fresh beginnings for us, nature is at her slowest; branches are bare, fields are empty and the woods are quiet and still. One of the sights I miss in winter is the glimpse of a passing butterfly. So symbolic of warm summer days, they seem to disappear once the cold weather bites. Yet all lay waiting in one of four forms throughout the darker, shorter days. Britain has nearly five dozen types of butterfly and just over half spend the winter as caterpillars, the remainder existing as either eggs or chrysalises while only six hibernate as adults. Their life cycles are perfectly timed so that the caterpillars emerge alongside their specific food plants; some depend upon a single plant and here on the South Downs, we have a perfect example of nature’s synchronicity. Caterpillars of the Chalkhill blue and Adonis blue both feed on one plant alone, horseshoe vetch, found on the unimproved chalk grassland of the Downs. If both caterpillars emerged simultaneously, they would be in competition, so the Adonis caterpillar emerges at the winter’s end and the Chalkhill six weeks later, by which time the Adonis has become a chrysalis, leaving the vetch for the hungry Chalkhill. The only adult butterflies to survive in a state of torpor over winter are the colourful species such as the Red Admiral, Brimstone, Comma, Peacock and Small Tortoiseshell. They

lie dormant in sheds, log piles and tree hollows, waiting to be ignited by warmth. Sometimes, an uncharacteristic prolonged winter sunny spell can awaken them, which can be fatal if there is no food to sustain them. If you find a dormant butterfly over winter, leave it undisturbed so long as it is dry and sheltered; if it has woken in your house because of the central heating, some action can be taken to help it return to dormancy.

The only adult butterflies to survive in a state of torpor over winter are the colourful species such as the Red Admiral, Brimstone, Comma, Peacock and Small Tortoiseshell It can be placed in a shoe box with ventilation holes and after being kept in a cool dark place for an hour, it can be placed somewhere sheltered and dry like a woodshed to sleep out the winter. If you decide to let it remain in the box in a dry cold place, make sure you cut a couple of slits 5cm high by 1cm wide in the box so it can emerge in spring when it awakens. The coldness makes sure it does not wake before its food becomes available and the dryness avoids fatal fungal infections. Special insect hibernation boxes are available or can be built; they resemble bird boxes with the same waterproof roofs, but have slits instead of a hole in one side and can be placed with the slits facing the brightest part of the garden. For me, knowing that the butterflies are waiting out winter in one form or another makes the short days more bearable with the promise of delicate wings taking to the skies once more. www.sussexliving.com

Give your wardrobe a January detox to feel organised, re-energised and most importantly, make room for some classic New Year bargains Are you feeling overwhelmed by the amount of clothes that are bursting out of your wardrobe? If so, it’s time to declutter your closet as the New Year begins. As most of us don’t have walk-in wardrobes, shopping for new items soon catches up with us. Decluttering does not mean throwing everything out, but rationally considering every piece you own, weighing up the level of use it gets and how much you love it. Organisation is also an important factor, as keeping your wardrobe disciplined can help weed out clothing that you haven’t worn in years and have forgotten all about. Take a look at these tips on how to start 2016 feeling unburdened and refreshed: Set up a divider line in your wardrobe – this could be a brightly coloured hanger or a colourful clothes bag – and every time you wear something put it on the right hand side of this border. After a month or two you will start to get an overall picture of which items you wear on a regular basis, and those remaining on the left hand side of the border should be carefully evaluated: are they uncomfortable or make you feel less confident? Are they a poor fit? If the answer is yes, it’s probably time to remove them from your wardrobe. Organise your closet correctly (skirts with skirts, jackets with jackets) and this will make your clothes collection a lot more transparent. It will also make it so much easier to fi nd things. Don’t throw anything away that you may later

regret: remember fashion comes in cycles, so you may want to hold on to key pieces. Get hold of some storage boxes and make use of your loft or storage space to pack away your beloved items, which are just not on trend at the moment. One small step at a time: most people have at least one thing they are sure they don’t want or need. If you are one to get attached to items, start yourself off gradually and try to get rid of something just once a week. Get hold of boxes and baskets to organise smaller items in, like bags, shoes and belts, and arrange them at the bottom of your wardrobe. Getting to your accessories will be easier and will free up some space for your clothes. Alternatively you could keep your shoes on a shoe rack for the ultimate way to see your collection in one place. Once you’ve downsized, make sure on your next shopping trip you don’t get caught up in the moment; buy clothes you love, rather than just like. Your wardrobe will remain a stress-free zone, and you won’t have the trauma of decluttering on your hands again for a while.

It may not appeal to all, but Burns Night celebrations would not be complete without a Haggis – now the question just remains, how do you address yours? On the 25th January it’s traditional to dust off the kilt and salute all things Scottish. In our house this means hunting down a Haggis to celebrate Burns Night. Haggis is made from oatmeal, sheep’s offal (heart, liver, kidney and lungs), onion, salt and pepper. It’s a list of ingredients to make most children recoil with alarming speed. Cooking Haggis is straightforward; simply simmer for just under an hour. Unfortunately an hour seems an excruciating eternity, always feeling much longer. Eventually most of the water boils away, the kitchen windows are covered in condensation but the Haggis is ready. In our house, we don’t bother with ‘The Selkirk Grace’, piping in the Haggis, or the ‘Address to a Haggis’. It’s not that we’re disrespectful, it’s just that having waited so long for the thing to cook we are

starving hungry. Now, every Haggis I’ve ever seen has appeared dimensionally transcendental when it comes to cutting it open. No sooner has the knife made an incision than Haggis seems to overflow from the casing, fi lling the plate with alarming speed, like expanding offal foam. There’s so much of the stuff you wonder how they crammed it all in to begin with. It is wonderful to eat. I like a Haggis smothered in sauce, be it brown or red; that’s the best. I leave neeps and tatties to the purists. Sometimes we toast it with whisky, more often we just put more whisky in the Tipsy Laird that follows. In place of traditional Scottish country dancing, my good lady prefers to watch re-runs of Strictly on the iPlayer, which is fi ne with me – all those glittery outfits certainly put a smile on my face… www.sussexliving.com

Ingredients 290g gluten free white bread flour 5g salt 245ml warm water 50g sugar 7g yeast 55g melted butter 2 medium eggs 1. Measure the water into a jug and add the yeast and sugar. Place to one side. 2. Place the flour and salt into a large bowl. 3. In a third bowl, beat the eggs into the cooled, melted butter. 4. Add both the egg and butter mixture and the water, sugar and yeast mixture into the flour bowl, mix together.

5. Place the bowl in a warm, draught free place (I find that the airing cupboard is often a good place) and allow to rise for 1 hour. 6. Preheat the oven to 190C, Gas Mark 5. 7. In a non-stick muffin tin, half fill each hole with the mix and place back in a warm place. You can place muffin cases in the tin if you wish, however, this is not essential. 8. Allow to rise for a further 30 minutes until the dough has risen to the top of the tin. 9. Place the muffin tin in a preheated oven for 20-25 minutes 10. Allow the buns to cool in the tin for around 5 minutes before placing on a cooling rack.

Let’s Eat...

French onion soup This is a lovely, tasty, and light soup to be enjoyed all year round, but especially in the chill of January. It is easy to tweak to your own taste by adding less sugar or substituting some wine for stock, but this is how we as a family have perfected it to our tastes. We quite often make this as a starter when we are entertaining or on it’s own for a light, tasty meal. SERVES 6

French onion soup 4 large white onions 2 tbsp butter 2 tbsp olive oil 3 tbsp brown sugar 2 tbsp brandy 400ml dry white wine 3 pints vegetable stock Salt & pepper French baguette 150g gruyere cheese, grated Pinch of thyme Pinch of sage

1. Peel and cut the onions in half, then finely slice them lengthways. Put the olive oil and butter into a large saucepan and heat on a medium to high heat (keep a close eye on it as you don’t want it to burn), then add all of the onions. 2. Stir the onions well so that they are covered in the oil and butter and then add all the sugar and leave to caramelise, stirring every 3-5 minutes. You want the onions to go golden brown in colour and soft, but

not burn, which should take twenty minutes to half an hour. Don’t worry if the pan gets a little sticky and brown, just stir in some more butter if need be. 3. Add the brandy and cook out for a couple of minutes, then add all the wine and let it simmer for five minutes. 4. Make up three pints of vegetable stock. I use two vegetable stock cubes, but you can also use chicken stock if you’d rather, it’s just as good. Add a good pinch or two of sea salt and lots of pepper to

taste. Leave the soup to infuse on simmer for about twenty minutes to half an hour. 5. While you are waiting for the soup you can prepare the French bread cheese toasties. Cut the French stick into thick slices and pop under the grill to brown on both sides. Heap on a generous amount of grated gruyere cheese and a sprinkle of fresh thyme and sage, and place back under the grill until melted. Serve the French onion soup with two of the gruyere melts on top.

Aiming high Cuckfield & Lindfield Rotary Club are looking forward to their next Sponsored Darts Marathon, one of the biggest fundraisers for this community spirited group The very amiable Trevor Clapp had his genesis moment for the Sponsored Darts Marathon as far back as 1978, while working in Knutsford, Cheshire. But it would not be until 1997 when he joined The Rotary Club of Cuckfield and Lindfield that the idea was finally put into practice. “It will be a winner,” he recalls telling Chairman of the Day Derek Hopkins, with absolute certainty. The genius behind the Sponsored Darts Marathon is the sheer simplicity of the event. There’s no need to be an experienced accurate darter to take part because chuckers are just as welcome. The marathon invites teams of six to take part and these teams can be all male, all female or evenly mixed. The event itself is sixty minutes of speed darts, requiring team members to step up to the oche in rotation, scoring as many points for their team as they can.

There are £100 prizes for the highest scoring teams and the team that raises the greatest amount of sponsorship. The male record score stands at just over 40,000 points, or 666 points per minute. Each event is on a date of the teams choosing, usually during January to April but it’s best to register your team before mid-January 2016.“We’ve had up to 44 teams in the past,” beamed Trevor. Three Rotarians – one on the stopwatch, one scoring, and one keeping control of the running total attending each event. Trevor continued, “Spectators come along for the ride, to cheer on their team and create a jolly good atmosphere.” The Sponsored Darts Marathon is Cuckfield and Lindfield Rotary’s biggest contributor to the £25-30,000 they fundraise annually. In 2012 the event raised a mammoth £16,221 and in 17 years the grand total has exceeded £140,000. In 2016 five new causes

will benefit, along with traditional beneficiaries: Chestnut Tree House Hospice in Arundel and St Peter and St James Hospice in Chailey. The Cuckfield and Lindfield Club was set up in 1984 and several original members are still present amongst a total of forty. Trevor told me the Rotarians are keen to recruit new male and female members in the thirty to fifty age range but, “We hope to take anyone with a genuine interest in community service. It’s for people to give a little back to society,” he continued with earnest, pointing out the Rotary Club help several good causes each year rather than just one in particular. Meetings take place weekly and in the fifth week of a five week month partners are invited to attend as well. The Rotarian’s motto is “Service and Friendship” and Trevor has plenty of both to offer, although ironically he has never played real darts himself. So whether it’s joining the Rotary Club or taking part in the Sponsored Darts Marathon, grab your arrows - It’s best of order and game on!

Snuggle up this January with these two involving books, reviewed by Sara Whatley. Enjoy an epic 400 page drama where the book of a family history resurfaces many years later, and an intriguingly dark tale of self-sacrificing evil

The Book of the Randalls By Jane Reid (Author Essentials £9.99) out now At just a whisker off 400 pages long, this book is not for the faint hearted. Born in Hurstpierpoint and still a local Sussex resident, author Jane Reid has a clear interest in her home county, which is where much of this story is set. Starting in 1794, we are introduced to the Randalls. Richard Randall, the head of the family, is thrilled to have recently penned his long established Sussex family history. His two daughters – beautiful Lucy and feisty Caroline – will not continue the Randall family name, much to Richard’s chagrin. However they both lead their own lives, encompassing

many adventures, marriage and children. We follow Caroline and her family right up to the grand old age of 90 when it is Christmas 1859. Time then jumps to the summer of 1956 to the diary of Charlotte Louise Randall, who has a great interest in her family history. Finding an account of Richard Randall’s cherished book, the family connections are made. Intricately written with particular attention to detail, Reid successfully manages to immerse the reader into her fictional world. This story is set at a slow pace (not one for the thriller lover), but a pace which mirrors perfectly the genteel feel of the era.

Long Shadows By Julie Haiselden (Austin Macauley Publishers Ltd £6.99) out now Long Shadows is Julie Haiselden’s debut novel. A West Sussex resident herself, Haiselden has taken inspiration from her many visits to the Lake District, which is where her story is set, and where the Tennyson family move to start a new life in the Blenthorne Inn. We meet the protagonist, Lizzie Tennyson, and are launched into the domesticities of her life.

Some detail feels slightly tedious and not particularly relevant to the story, however this all builds a strong background for this interesting character. Initially, Lizzie seems a little bit of a push over, looking to please others (particularly her husband) more than herself, but as the story progresses another side to Lizzie’s character emerges; dangerous, dark,

predatory and yet somehow still innocent. Throughout the book tragedy strikes many times, but Haiselden still manages to portray warmth in her character’s relationships, particularly between Lizzie and her son. Easy reading and entertaining, Long Shadows will keep you hooked for a light yet intriguingly dark read.

Think you can let up on your watering over the winter? Think again! A well hydrated garden is a happy garden I’m writing to remind you to water your garden. You’ll probably respond with derision, “In January? Is she completely bonkers?!” No, I’m not (quite) as daft as I look. Even if your plants aren’t in visible growth, most of them aren’t dormant. They’re not ‘asleep’ because gardens never sleep something’s always on the move. Dry and/or breezy wintry weather can be the kiss of death for a recently-planted shrub. Gales can loosen ties and stakes and the term ‘wind rock’ is exactly as it sounds; a plant that has not yet put out anchoring roots can be blown over or completely rocked out of its planting hole, so it’s important to check on new plantings. Holding a stem, give the plant a gentle tug - it should resist your pulling and feel fi rm at the roots. If not, examine the planting hole, backfi ll with more soil if necessary, gently fi rming it as you go, then apply a mulch of old potting soil and/or leaf mould. The mulch can be as thick as you like, just make sure it’s not pushed up hard against the stem(s). Strong winds also have a desiccating effect, so check the plant is damp at the roots by carefully excavating a couple of inches of soil. If it seems on the dry side, give the plant a good drink. Two gallons, gently applied, is not overdoing it. Plants grown in containers often suffer from neglect; especially in winter, when tasks such as watering are far from our minds. However, those bedding plants and bulbs you planted last autumn will be on the move now; especially daffodils, which start into growth as early as September. Dryness at their roots will severely check them, so examine your patio pots carefully. Dry potting compost can be difficult to re-wet, as the water simply gushes through and runs out of the bottom of the pot. Try adding a few tiny drops of washing up liquid to the water. It will not harm the plants and the action of the detergent helps the water to bind to the soil particles. Immediately after flowering,

Dry potting compost can be difficult to re-wet; try adding a few tiny drops of washing up liquid to the water shrubs such as camellias and magnolias make new flower buds for the following year. The buds remain dormant throughout autumn and winter, ready to burst forth the following spring. Lack of moisture causes the buds to abort and fall off, so these plants can suffer from drought - even in the depths of winter. Once again, containerised specimens are most at risk, although they should never be watered in frosty weather - the water will freeze, which may break the pot. Water your containers on a mild day - preferably before noon. This gives time for surplus water to drain away before evening temperatures fall.

The West Sussex Record Office is simply bursting at the seams with fascinating, local historical information. Sussex Living spent a wonderful day being shown around the archives and came away so impressed with the scale of vital work they do we just had to tell you all about it

Hurtling across the Sussex countryside on a crisp and sunny winter day, Tanis Banham and I were o on an adventure. We were heading in the direction of the cathedral city of Chichester, the only city in West Sussex and one which boasts a long settlement history dating back to Roman and Anglo Saxon times. It is also home to some of the oldest churches and buildings in Great Britain, and

as such there are some really pretty old cobbled streets. Despite being geographically challenged for the merest of moments on some seriously windy back-roads of West Sussex, we arrived safe and sound at the West Sussex Record OďŹƒce. We were welcomed in by Matthew Jones, our patient and very knowledgeable guide for the day. continued on page 56

Founded in 1946 in the County Hall basement, the archive collection started as all collections do, with a relatively small amount of material. However, this soon gained a width and breadth which was perhaps at first unexpected, and it outgrew its home. The search for new premises was on, and thankfully in 1989 after some vital funding was found, a new, bespoke office was built specifically to house this important collection. Another new premises has also been built very recently to house the East Sussex archives – The Keep just outside of Brighton. As with all good collections, the West Sussex archive continued to grow until in 2009 it had again outgrown its home. Rather than uprooting once more, plans are afoot to create more space with an extension to the building. As well as the extension, a large-scale plan is underway even as I write to make better and more economical use of the already existing space they have, including a reshelving project – a reshuffling of the deck if you will. There is no end to the subject matter being preserved at the Record Office, and with all sorts of people bequeathing their documents to the archive, there is an endless supply of variety. For an example of just a few subjects they have on record, Matthew lists police, fire brigade, the church (reaching back to 1538 with baptisms, marriages and burials), local estates such as Goodwood and ordinary family records such as personal letters, diaries and photographs. They have an extensive collection of information on microfilm (or microfiche), wills dating back to 1482, births, marriages and

We were privy to information such as who owned what house or shop, and for how long – all very interesting

deaths. And for the Royal Sussex Regiment, which was founded in 1701, they have one of the best regimental collections in the country. The first area we enter on our tour, after signing in and securing our coats and bags in the lockers provided, is a large room with a huge table. At one end a box of measuring devices and magnifying glasses is on hand to help identify your point of interest, and the rest of the table is covered with maps. They have a range of OS maps going back through the 19th century and estate maps from the 17-18 hundreds. The Tithe maps (a map of an English parish or township denoting the ownership and occupancy of the land) on show are beautifully simplistic and pleasingly colourful, yet the data they hold on the computerised records is extensive. Tanis and I looked up Hurstpierpoint High Street and we were intrigued to see how the layout has stayed largely unaltered since the map was first made. We were also privy to information such as who owned what house or shop, and for how long – all very interesting. Further into the Office is the Original Document Area. Here, you fill out your reader ticket number (available on the front desk as you sign in – just bring some current ID) on a request slip and post it into the waiting box. Within 1015 minutes someone will have searched out your requested documents and you could be holding history in your very own hands. Such quick and available resources like this help to break down

barriers of museum-esque ‘don’t touch’ history, and really bring it to life. Imagine researching a school history project and seeing the actual original documents and pictures? I think any child would be fascinated by that. Collections of family history material are very popular. Matthew explained that some family papers are donated when a family member has died. Never knowing what sort of treasures these donations may bring up, there might be a stack of WWI love letters to a sweetheart or personal diaries and notebooks documenting everyday life and world events. There might be photographs of bygone fashions and vintage motor cars. And who knows, if you want to fi nd a long lost relative, you might just fi nd the clue you need right here in the Record Office. To help you on your way, there is free use of sites such as Ancestry and Find My Past. Next we are taken behind the scenes to the Strong Rooms. There are five Strong Rooms in total, and they are like the back office of the archive. In total they hold eight miles of shelving and tens of millions of documents. Matthew points out in particular how the space in the Strong Rooms could be utilized more efficiently, which will happen in the mass reorganisation. As we enter through two sets of doors from the rustling and murmur of the main room outside, I am struck by how peaceful and quiet it is in this long,

low vault. It is also markedly cooler; a constant temperature of 17˚ Celsius and 50% humidity is maintained at all times. Too warm and mould becomes a dangerous possibility, too cold and the paper will dry out and crumble away. When put like that, I can see how vital this atmosphere control is. To further help maintain the integrity of the documents, acid free boxes are used in the Strong Rooms, as well as brass paper clips, soft cotton cloth to roll the maps in and most importantly, a highly sensitive fi re and smoke detection system. They have tested it and the fi re brigade can reach them in just a couple of minutes, a good job too when you are preserving 1,200 years worth of history for future generations. document dating back to 1817. It is a hand written list relating to the selling of slaves in South Carolina, and is shocking reading indeed. For each person on the list there is their age, sex, scant personality traits and a monetary value beside their name to denote their estimated worth. For example the elderly, injured, disabled or very young were deemed less useful so were sold for pence, whereas a young, fit and healthy boy was sold for a few dollars, deemed as an able workman. We moved on. The next room we entered was much warmer, and again racked out with boxes of documents. This is where they keep the newly received documents before they have gone through a rigorous cleaning and decontamination process in order to enter the Strong Rooms and the rest of the Office. The documents are not harmed by this process, and it safeguards the collection as a whole. Through another door a strong smell meets us and brings me straight back to the darkroom at college. This is the Screen Archive South East and is like a fi lm student’s fantasy. Reels of fi lm are stacked up everywhere you look, tantalizing you with their hidden stories and information. We don’t delve too far into this room, but I can see its potential is huge, with fi lms dating back to 1896. Up the stairs and along a corridor with a glass wall overlooking the main room downstairs, we pass by the Conservation Workshop. There is a man sitting at a bench in deep concentration over a piece of work; I wonder what it is he is working on. The room is clean, light and airy – the perfect atmosphere for careful restoration and conservation.

Reels of film are stacked up everywhere you look, tantalizing you with their hidden stories Back down the stairs and we have come full circle. It is still as busy as when we arrived, and I can see what a well used resource this is. They receive approximately 10,000 visitors a year, and it is a particularly popular resource with historians, teachers, students, solicitors and authors. Indeed, Matthew informs us that local Sussex author Kate Mosse has spent hours in the archives researching original material to breathe life and vitality into her characters, such as the day-to-day life and school records of the Victorians. I can absolutely envisage these stimulating and studious surroundings being a wonderful place to come and write; the hum of background noise provides a welcome distraction to silence, the tables are large and well lit and there is a bank of computers hooked up to the internet. The many staff on hand are all experts in their field and have an excellent reputation for being helpful. Bidding farewell to Matthew, Tanis and I headed back out into Chichester for a spot of lunch and to digest all we had just learned. There is a mind-bending amount of information stored in that one building, and it really is history on our doorsteps. The opportunity to tell some of the wonderful stories sitting on those shelves is something we felt we must grasp with both hands, and so from next month Robert Veitch will be starting his new archive column. Enjoy the wild side of Haywards Heath on this 3.5 mile circular. Woodland paths, a few uphills and a little boggy area make for an exciting ramble to blow the January cobwebs away This 3.5 mile walk from Fox Hill on the B2112 south of Haywards Heath is along mainly woodland paths and established tracks and an attractive area of semi parkland. There is a feeling of remoteness for much of the walk which is surprising given the close proximity of the urban conurbation of Haywards Heath. Opposite the Fox and Hounds pub, walk along Hurstwood Lane for about 300 yards then go right into Colwell Lane. Go through a metal barrier, and in about 200 yards, go right on an obvious track through woodland. This path through to Slugwash Lane, is not marked for much of the route so I advise following the instructions carefully to hopefully avoid getting lost and to carry a map! Just before reaching a

wooden gate, side step to your left and go over a stile and into a field. Cross the middle of the field and into another short section of woodland through a gap by a fence. Leave the woodland by a stile and cross the next field on a

rather thinly defined path to the third section of woodland. Go over another stile and drop down some steps and through a short boggy area then pick up the path through the wood. Cross a stream on a small footbridge, and follow the obvious path ahead uphill. At the top of the hill turn right as indicated by a waymark attached to a post. Follow this obvious path along a wide track through the wood, and on reaching a field, follow the left hand edge out to Slugwash Lane. Turn left along Slugwash Lane shortly passing the buildings of Home Farm on your left. Look for a signed path on your left, opposite the Old Farmhouse. Follow this path uphill through woodland. Eventually, leave the wood and continued on page 64

go over a stile and into a field. Keep close to a metal fence bearing right around the grounds of Abbots Leigh. This large country house was built in 1892 by an aide-de-camp of Queen Victoria. At the top of the field, go over a stile and into another field and keep slightly left on a thinly defi ned path across pasture. Go over another stile and follow a wide path ahead through an area best described as parkland. Cross a drive and carry on ahead between trees to pick up a narrow fenced path which leads you out to the A272. On reaching the A272, cross the road carefully to the pavement opposite and turn left. Opposite Foxglove House, turn left into Colwell Lane. The lane is initially tarmacked, with properties on either side. At a metal barrier, carry on ahead on a wide track with Hurst Wood on your left. Eventually join your outbound route and follow this back to your car and no doubt much needed refreshment! We are very grateful to Les Campbell for bringing us new and exciting local walks every month. I’ve always thought that the middle of winter is a silly time to start anything new, let alone a completely new year. There’s not really much incentive to reinvigorate, rethink, revitalise or re-anything when the daylight is so short and the weather is so awful that staying in bed often seems the best option. It’s the time of year when the sunlit uplands of the cricket season seem impossibly distant. How much more sensible it would be if we threw ourselves into new things in the spring, when we would have the energy and the optimism to think that in the next 12 months we would keep to diets, write a novel or learn to speak Italian, even if our past experience would suggest otherwise. However, we must put our best feet forward and advance into 2016 with hopefulness and high hearts, assuming we all recover from our New Year’s Eve celebrations. I may have some difficulty in recalling all the resolutions I’ve made at the turning of the year, but I can always remember where I was when I made them – some more fondly than others. Like being stranded with a warm Coke in the transit lounge of Mumbai airport or dining with friends waiting

High Hearts for the ‘Millennium Bug’ to trigger the end of the world or, more recently, in a not very jolly pub in rural Norfolk. Counting Liz and me, there were only eight of us in the bar where we’d thought there would be a party. At ten to twelve, the landlady came over and said: “Are you going to be here at midnight then?” When we said yes, she gave us each a single party popper and a paper hat. I just loved the spontaneous enthusiasm of it all. In my native Scotland, of course, there is rather more exuberance at Hogmanay, though I was never entirely sure whether we were celebrating the start of a new year or exhibiting profound relief at having successfully survived the old one. And what will the good folk of Mid Sussex wish for in this shiny New Year? The more fanciful ones will be hoping that we can reach the end of 2016 with some countryside left that hasn’t been earmarked for property development. The more pragmatic will be happy with fine days for our village festivals, good health and companionship for our older generations and joyful days for our children. Happy New Year to all of you.

The Sussex Chamber of Commerce offers help and advice with all aspects of export documentation to make trading overseas as easy and successful as possible. We assist exporters throughout the process of completing the documentation. Chamber Certification and Embassy Legalisation of all Export Documents If you are exporting goods, correctly prepared documentation is vitally important. Incorrect completion of the required paperwork can lead to delays at Customs, which in turn can result in storage charges. The Chamber can certify all types of export documentation and arrange subsequent embassy legalisation if required. Authentication of EUR1 and ATR forms An EUR1 is a Movement Certificate used to support claims for preferential rates of duty in the country of importation. The

goods must ‘originate’ in the UK or EU. The ATR Certificate entitles goods, which are in ‘free circulation’ in the EU to receive preferential import duty treatment when shipped to Turkey. The Chamber is able to authenticate these forms on behalf of HM Revenue & Customs. Notarisation Service or Foreign & Commonwealth Office Express Service Do you need documents Notarised by a Notary Public or legalised by the Foreign & Commonwealth Office? Letter of Credit Processing Service This can be an arduous task and incorrectly completed documents can incur both bank charges and a delay in payment. We can arrange production of all the documents, shipment of your goods and presentation to the bank, saving you hours of valuable time. ATA Carnet for Temporary Export This is an international Customs document which allows the temporary importation of commercial samples, professional equipment or goods going to either a trade fair or exhibition to countries which are part of the ATA Carnet system. It simplifies the custom formalities by allowing a single document to be used which is valid for one year and allows for movement of the goods shown on the Carnet as many times as required during the 12 months to any of the destinations applied for.
