While dogs have always been man’s best friend, good for our physical and mental wellbeing, Medical Detection Dogs use the animal’s amazing sense of smell to detect deadly diseases helping to save lives. Lisa de Silva investigates

The Bio-Detection Dogs work in NHS ethically approved studies to detect various cancers by odour including urological, prostate and colorectal cancer. There have also been encouraging results using dogs to identify malariainfected individuals, while another exciting development includes their ability to detect conditions such as Parkinson’s Disease long before any symptoms emerge. The most recent research has centred on the identification of bacterial infections. With antibiotic resistance a growing problem, canine detection can help to detect specific bacteria as well as discriminate between bacterial and viral infections. Equally impressive are the Medical Alert Assistance Dogs trained to identify minute odour changes emitted prior to a medical emergency. The dogs alert their owners to any potential danger

laire Guest co-founded Medical Detection Dogs in 2008 and this charity is at the forefront of pioneering research. As a psychologist specialising in animal behaviour, Claire always had a hunch that dogs could be trained to sniff out and identify minute odour changes created by disease. As every dog has the talent to sniff out one tiny teaspoon of sugar in two Olympic-size swimming pools, she was convinced this extraordinary ability could be used to help save human lives. As a result, Claire was responsible for the world’s first study of canine detection of bladder cancer by odour, published in the British Medical Journal in September 2004. When Claire’s own dog, Daisy started behaving strangely with her obsessively nudging her side, she consulted a doctor and tests revealed she had a very deep-seated breast cancer. Owing to the location of the cancer and Claire’s young age, the doctor felt that without Daisy’s help, the cancer would not have been found for several years. This experience confirmed Claire’s belief that all disease and conditions have a specific

It’s a Dog’s Life Teddy knows ‘them indoors’ are frightened of the odd thing here and there, and being a sometimes mischievous little chap he plays on this from time to time… unless spiders are involved! This month’s column is barked through his human mouthpiece, Helen Stockton

I

t is fair to say that we all have certain things we’re frightened of. November, following hard on the heels of that celebration of spookiness, Halloween, brings its own contribution, with mists and dark evenings, that people, with their reliance on their visual sense, find a bit un-nerving. Now I’m not afraid of the dark; what can I tell you I’m a roughty-toughty terrier, but my predecessor, the Boss, taught me how to play dark evenings to advantage. You wait until, ideally, one family member is home alone, and then you unexpectedly bark sharply. If they are watching a tense film on TV then this needs to be timed for the

14 SUSSEX LIVING | November 2019

quiet moment when the suspense is building nicely. It makes them jump a treat. The secret is to follow this up promptly. I’m a master of tilting my head with pricked up ears so that it looks as if I am listening intently. I actually only do it because ‘Them Indoors’ think it’s appealing. However, in this instance, having given the appearance of listening carefully, something certain politicians are good at too but without my cuteness,

I’m not afraid of the dark, I’m a roughty-toughty terrier

I then give a low, rumbling growl, as if I’ve heard something sinister. This usually leads to them gabbling reassurances which have nothing to do with soothing their pooch, but everything to do with quietening their own fears. For maximum effectiveness the whole process needs to be repeated several times so they can’t relax, and a good variation is to do it when outside for a late-night garden visit, accompanied by staring fixedly into the shadows. It gets them rapidly scuttling back inside I can tell you. And talking of scuttling, there’s one fear I share with people; that of spiders. ‘Her Indoors’ doesn’t like big ones and ‘Junior Her’ has a similar reaction to even miniscule arachnids. The Boss used to help by eating them, although for some reason, ‘Junior Her’ thought spider’s legs poking out from between his teeth unattractive. When I arrived, they assumed I would help with spider catching duties, but there’s no way. I just hide in my bed or add to the general sense of drama by barking. Anyway, a friend thought it would be fun to buy me a toy spider as a joke, and it took me about six months before I’d play with it. However, revenge is a dish best served cold and Incy Wincy has subsequently been de-squeaked and de-stuffed which is no less than he deserves! Whilst I’m not keen on spiders, one of the Boss’s fears that I don’t share is that of fireworks. He used to hate the bangs and barked at them. Last year, on my first bonfire night with ‘Them Indoors’, they stayed at home in case I needed comforting. However, ‘Her Indoors’ was impressed by my fearlessness and we ended up watching them through the window together. So, considered in the round, I’m really quite a brave dog after all. l

AT HOME WITH… THE OWNERS: Philippa and Neil Ejje, live here with their three children Thomas, 7, Max, 5 and Harry, 2. They moved to this area because it was commutable from London, yet felt rural. It was a part of the countryside that Philippa had known well as a child, having grown up in the neighbouring village. Philippa’s father and mother still live nearby. THE HOUSE: Late 15th century hall house with 20th century extension attaching it to its converted 19th century barn. ROOMS: Entrance hall, kitchen, dining room, living/playroom, sitting room, drawing room, office, 7 bedrooms, three bathrooms. WHAT WE LOVE MOST ABOUT LIVING HERE: “We love how self-sufficient we feel here. When we lived in London we spent all of our free time dashing about looking for entertainment, but here we just want to stay at home.” WHAT MAKES THE HOUSE A HOME: “We love the fact that we have a very cosy intimate home when we are here as a family, all tucked into the older part of the house. It is full of character and period features which we have always loved in older properties.”

W hen the estate agent drove Philippa Ejje down the winding country lane leading to the Moat House, she fell in love. For there in an exquisite position, sunnily overlooking a duck-filled lake was the perfect 15th century brick and stone farmhouse. Sadly however, the house wasn’t for sale. Its neighbour was; an equally well situated, if not quite so historical converted barn, which would once have made up part of the Moat House’s farmyard. The stunning location of the barn, its large garden and fields on the doorstep, its spacious interior (especially

when compared to their previous London flat) and its proximity to a mainline station for Neil to make the daily London commute all contributed to the Ejje’s decision to set up their family home here. Their two year old son Thomas was fast outgrowing the confined space of their London home, and with baby Max on the way time was running out. “Although we’d always really wanted to live in a period property the barn did have some history and would make a fantastic family home,” says Philippa. For four busy years the Ejje family thrived in their converted barn. Interiors expert Philippa renovated and decorated the house to perfection. As if this didn’t keep her busy enough, she also found time to fit in another baby, Harry. “Life was happy and very busy in the barn,” remembers Philippa, “but I did feel the odd twinge of envy for the beautiful house next door.”

Philippa fell in love with the French shutters (now behind her bed) but they never fitted the windows in any of her bedrooms, and so she decided to use them instead as a bedhead

And so, when their neighbours slipped them the wink that they were about to put the Moat House on the market, they were thrown into a quandary. They had set up a home for life in the barn, but knew that the opportunity to buy the Moat House, which had really been their dream for all these years, would most likely never arise again. The temptation proved too great for them, and they had an offer accepted within days.

Moving twenty yards along the lane seemed like a breeze to Neil and Philippa, who, to somehow assuage slight guilt at moving again, decided to move all of their furniture without the help of removals vans. “Our first whopping mistake,” tells Philippa ruefully. “It was a nightmare! 20 yards felt like miles as we puffed and panted to and fro, heaving sofas and tables from one house to the other.” When at last they, and all their worldly possessions were in place, however, they knew they had done the right thing. The furniture that Philippa had collected over the years and brought back to life fitted perfectly into its new surroundings. The main house dates back to the 1400s, and in the 1980s the previous owners had built an extension to join the house to its 19th century barn, across the original farmyard opposite. Philippa’s beloved antiques and classic furnishings fitted in well. The house itself is a

She has also brought a freshness to the old part of the house with a mellow colour scheme and her carefully chosen antiques (never too heavy) set against pale soft furnishings with the occasional quirky ornament thrown in. It strikes the perfect balance in this atmospheric house. In layout too the house works perfectly for family life. The Ejje’s base themselves mainly in the old part of the house. A bright farmhouse kitchen, beautiful old beamed dining room and a cosy child-friendly living room make up the downstairs, and upstairs are four bedrooms and two bathrooms for the family. This side of the house is beamed, bursting with character, full of nooks and crannies (even a hidden door). It creaks with history and is perfect for the Ejje family of five. For larger get-togethers the single story joining extension comes into

What gardeners really want for Christmas

I

n the gadget-obsessed world of horticulture, it pays to remember that a few carefully chosen tools are all you need. A well-made carbon steel spade is a sound investment and will be strong enough to last a lifetime. Look for one that’s constructed from a single piece of metal and has a choice of handle length – a short handled spade used by a tall gardener is a recipe for backache. Some spades have a foot rest plate which cushions the sole of the user’s foot; particularly useful on heavy/compacted soil. For hand tools, single piece construction is also desirable as welded or bolted joints can break under stress. Wide trowels are ideal for general work, whereas long, pointy ones are perfect for bulb planting. Think about the recipient’s style of gardening and purchase a tool to suit. Some companies offer a customising service and will engrave a message on a trowel, making a uniquely personal gift. For budding youngsters, a scaled-down ‘junior set’ comprising hand fork, trowel and rake combines cuteness with functionality. Even the smallest garden should have several watering cans dotted about, ensuring there’s always one conveniently

to hand. Cans with long-reach spouts are useful if there are lots of pots to water and gardeners who like the retro look will love a vintage galvanised can. If you feel like blowing the budget, fill a can with little wrapped gifts; string, plant labels, lip balm, etc. An electrically heated propagator brings a new world of horticultural possibilities – the growing season can be extended and seeds that would otherwise be difficult to germinate can be considered. Propagators come in many styles (and prices!). Choose one fitted with a thermostat

Gardeners who like the retro-look will love a vintage galvanised watering can to give a greater level of temperature control. The fanciest types are multicompartmented, allowing for a range of different temperatures to be set.

Long, narrow propagators are great for raising seeds and small cuttings on indoor windowsills. In a chilly greenhouse, a large, high-sided propagator is a cost-effective way to overwinter tender plants as you only need to heat the propagator interior, not the entire greenhouse. Christmas wouldn’t be Christmas without socks. Gardeners want soft, knee-length socks made from natural wool, cotton or bamboo fibres. What we don’t want is novelty nylon musical socks that will make our feet sweaty and cold. Thank you. Good secateurs are essential. It may sound daft, but take a moment to recall the size of the recipient’s hands. Chunky secateurs look impressively macho but if they don’t sit comfortably in the hands, they will, literally, be a pain to use. Left-handed secateurs are hard to find but garden centres often stock them in the run-up to Christmas. Left-handed/ ambidextrous gardeners, (like me!) will be delighted with such a gift. Not that I’m hinting, or anything… l

Bond Street – Edward Johnston’s design of roundel and typeface

E

ach day, millions of people, commuters, tourists, students and politicians among them pass the work of a gentle, unassuming man who lived in Ditchling during the first half of the twentieth century. His name was Edward Johnston and he designed the iconic typeface that graced London Underground and became one of the most memorable symbols of the capital. Johnston was teaching Illuminating and Writing at the Central School of Arts and Crafts in London when he published his classic book, Writing and Illuminating, and Lettering, which still remains in print today. During the First World War, he was commissioned by Frank Pick, the man in charge of London Underground’s publicity, to design a typeface and roundel that would have “the bold simplicity of the authentic lettering of the finest periods.” He had to supply a typeface that would differentiate bus and train destinations from the overbearing advertisements that were confusing travellers. Frank Pick chose Johnston on personal recommendation from Edward’s friend, Gerard Meynall who he knew as a trusted printer. Johnston, by then the leading teacher and practitioner of lettering and calligraphy in the country, was an expert at analysing script. Initially he looked to the half uncial scripts of the Roman Empire but later, on advice, studied those from the Carolingian period, particularly the tenth century Ramsey Psalter which became the key to his later teaching. For the London Underground typeface he turned to second century Roman capital letters typified by those at the base

THE LETTERS OF LONDON Edward Johnston was a modest man whose work is seen daily by millions of Londoners, yet few are truly aware of his contribution to society. Ruth Lawrence visited his home village of Ditchling, going ‘underground’ to discover more of the Trajan Column in Rome for his inspiration. These letters possess fine geometric proportions which are grouped into three distinct widths and have a timeless quality, which is the key to the success of the Johnston Underground Sans typeface. unveiled at Farringdon station. The memorial is simple, bold and arresting, consisting of huge wooden printing blocks mounted on the station wall, detailing his entire lower case alphabet and containing his surname, discreetly slotted within the alphabet between letters ‘j’ and ‘k’ At sixty feet in length and displayed in reverse as in block printing, the construction of the alphabet was a major undertaking. Straight grained lengths of cherry wood had their edges machined into matching tongues and grooves before being cut to length and glued together to form a flat slab of the required width for each letter. Once each slab had been sanded, it was mounted in a computer-controlled

A permanent memorial to his masterpiece was unveiled at Farringdon station routing machine where different cutter sizes were employed to form each letter’s shape by multiple passes of the tool. Once finished, the letters were inked to recreate the impression of printing blocks and coated with a fireproof finish before being mounted in order on rails attached to the station wall.

During the unveiling ceremony, Edward Johnston’s grandson, Andrew, made a speech, while accompanied by his own son and grandson, bringing three generations together for their ancestor’s memorial. Andrew commented that his grandfather was an unlikely choice to design the typeface, being neither typographer nor graphic designer but a self taught scribe, who had almost singlehandedly revived the lost art of formal penmanship.

Apparently, Johnston loved science and was always tinkering with tobacco tins, soldering them together to make various electrical gadgets. Andrew recalled a family postcard from Meynell to Johnston, humorously requesting ‘Dear sir, I am sending you two sardine tins, please make me a telescope and a motor bicycle’. Andrew mentioned how his grandfather’s alphabet was much easier to read than the previous incarnation, being better spaced and proportioned, and far more handsome. While conveying authority, it is a friendly typeface and has been called ‘London’s Handwriting.’ The centenary was marked by the introduction of the ‘Johnston 100’ which restored some original features of Edward’s design after it was modernised in the 1980s by Eiichi Kono, a graphic/type designer who also attended the unveiling of the memorial. Kono was commissioned to modify the original type to make it more suitable for modern needs and the ‘New Johnston’ ensured the type’s survival into the digital age. Edward Johnston’s legacy is continued by the Edward Johnston Foundation, a registered arts charity based in Ditchling where he remained until his death in 1944. Dedicated to raising public awareness of calligraphy,

the foundation aims to make Johnston’s valuable teachings accessible to everyone who is interested and to preserve the craft of calligraphy and the lettering arts. They have recently published a superb comprehensive book on Johnston’s Underground typeface entitled simply ‘London’s Typeface’ which details the evolution of his design and its eventual celebration in the memorial

at Farringdon. He died sleeping on my chest in the small hours. That’s when I joined the fight to stop premature birth.” Around 60,000 babies are born prematurely each year in the UK, and globally it’s the biggest killer of children under five. THE 300 CHALLENGE

In our September issue local cyclists Adrian Davies and Kirsteen Daly were about to embark on a 300 mile challenge for Cancer Research. The power pedalling duo completed their challenge on the 29th September with a 50 mile ride in gale force winds from Henfield to Goring, Shoreham and back, celebrating afterwards with friends, enjoying tea, cake and a sense of achievement. Adrian commented, “This amazing lady biked 301 miles in September, only six weeks after completing her fourth chemo. I can’t put into words how impressive that is. Between us we raised an incredible £1,200 enjoying the most fun 301 miles I will ever cycle. Next year, look out for our Sussex Borders Ride which will be raising money for the breast care unit at Worthing Hospital.”

This year’s event takes place on the 29th November, beginning with the children’s torchlight parade at 4pm. Burgess Hill Marching Band will provide the music and it’s been rumoured that Santa may be joining in. It is hoped there will be more stalls than ever before and that high street traders will put stalls outside their shops and remain open. During the evening, there will be live music emanating from both ends of the High Street. In addition, there will be over twenty-five stalls with some fairground rides, and of course Santa will be in his Grotto. It will be a great experience, one not to be missed. ver wondered what you’d look like with a goatee, a handlebar or even a full-on Santa Claus beard? Now’s the time to find out. Letting your mo’ grow in the run-up to Christmas isn’t just a style statement – it’s also the easiest way to raise money for charity. BONFIRE BEARDS There’s nothing new in the concept of cultivating facial hair for a good cause, but it was the Movember movement that first widely publicised the idea. Founded by two friends in a Melbourne bar, Movember quickly spread across the world. The campaign has raised over £440 million for research into men’s health over little more than a decade, transforming cancer survival rates in the process, encouraging men to open up about their mental health and even bringing the long-derided ‘tache back into fashion. By 2030, Movember aims to reduce the number of men dying prematurely by 25%. Barcombe resident Mark Engineer is among those who have taken up the challenge. So, why Movember? “Well, basically I’m pretty lazy,” he admits. “Some folk run marathons or sit in baths full of baked beans to raise money for charity. That all seemed like a bit too much effort. Movember is a way to support a good cause by doing very little. “It was fun. WARM AND FUZZY Movember isn’t the only movement encouraging men to cultivate their facial hair for charity. If you prefer the idea of distinguished whiskers to a furry upper lip, Bowel Cancer UK runs ‘Decembeard’ in the run-up to Christmas. “Bowel cancer is the third most common cancer in men, with 1 in 15 diagnosed with the disease every year,” explains Luke Squires, Director of Fundraising at Bowel Cancer UK. “Decembeard is a fantastic opportunity to raise awareness of bowel cancer in men. Since we launched the campaign in 2011, we’ve had thousands of people take part in raising an incredible £1.4 million to help fund our vital services and lifesaving research.” Taking part, he says, couldn’t be easier. “Sign up, ditch your razor and get sponsored to grow a beard throughout the month of December. Already bearded? No problem. Dye, ditch or decorate your beard and join the campaign.” Women can get involved in the no-shave movement this autumn, too. Movember asks ‘Mo Sisters’ to take part by hosting a Mo-ment gathering for friends and family or making a donation. Sweet singing in the choir Sara Whatley, soprano, is looking forward to the festive run up to Christmas in her choir, and urges you to do the same

A

t some point in our lives we have all had a go at singing. It might have been at school, in the shower or round the campfire. It’s part of our history as humans, part of the oral telling of tales that entertained and passed on knowledge for many millennia. And happily, group singing is again becoming popular. I love singing. Take a deep breath, fill your belly, relax your shoulders and open your mouth… If you want to get technical there is a bit more to it than that, but it really can be that simple. The benefits of singing are numerous and quite astonishing: from the physical engaging in aerobic exercise and oxygenating your body, to the social; thinking; learning; relaxing; confidence building and even the neurological. Neural pathways are built between the right and left hemispheres of our brains as we sing, that is between the right feeling, imaginative, creative, musical, intuition, visualisation side and the left maths, facts, logic, linear thinking, sequencing, and analysing side. These connections are hugely beneficial to our overall thinking and being, attention and cognition, and connects us with our human qualities of emotion, creativity and love.

on a stage in the spotlight and some with a group of like-minded people. All are great, but there is something particularly enjoyable about singing with others, especially at Christmas. I know, I know, it’s all still an age away, but in choir terms, it’s actually just around the corner and you better get practicing! I have sung in my local village choir for a while now – and in many other choirs before this one – and can contest there is always something very special about the run up to the festivities. Learning new arrangements to age old favourite carols and hymns is lovely, as are the silly hats, mince pies and glass of something mulled when it comes to the Christmas concert. I would urge anyone who fancies singing to have a look around and join your local group. There are so many places to sing in Sussex, so many brilliant choirs and small groups – even a few friends round a piano is a fun thing to do! Grab some bells and a triangle and ding dong, you’re away! l

The Wivelsfield Mediaeval Nativity This December, the folk of Wivelsfield can look forward to the return of a modern tradition as the local church and theatre join forces to tell an old story the old way, once again. Robert Veitch finds out more

W

ivelsfield might linger a little in the shadow of its larger sibling Wivelsfield Green, but once December arrives it will emerge into its own bright spotlight. Peter Leigh, who volunteers at the church was keen to tell me about The Nativity, which is being performed at the church this December, embarking on its seventh run. “The first staging took place in 2003 and since then it has evolved into triennial production, performed every three years. I’ve only seen it once myself, but it left a lasting impression. I was amazed at how good the production was. Some people I know have seen it several times over the years.” The performance follows themes that prevailed in mediaeval times and usually plays to a packed house, with an audience of seventy. Peter revealed half the pews are taken out and replaced with wooden benches to help create a rustic, ancient staging, almost as if it’s taking place in the round. With the audience so close to the action, it’s all the more immediate. “Parts of the church are a thousand years old and date back to Saxon times, so it’s an aposite setting for a nativity. The cast perform under candlelight, creating a dramatic environment. It is very, very atmospheric.”

However, the nativity is not suitable for under 12’s as there are darker elements too; it includes King Herod’s ruthless decree to kill all babies under a year old – something sometimes glossed over in other nativities. Wivelsfield Little Theatre began in 1964 and usually embarks on two productions a year. Peter continued, “The cast live locally and are all members of Wivelsfield Little Theatre. The production is directed by Paul Welch this year.” Ticket prices include a soft drink or mulled wine on arrival and any profits are shared between the church and Wivelsfield Little Theatre. A voluntary retiring collection supports local charities The church and theatre work well as Peter revealed, “We work in tandem; the theatre create the production and provide the actors, we provide the setting and sell the tickets. Green

As the festive season draws nearer, Sara Whatley starts to think about the all-important Christmas wreath

E

very December I like to mark the beginning of the festive season by making a wreath for our front door. I go foraging in the forest for greenery, pinecones and berry-laden holly, then lug it all home and get the kettle on. I find it easier to make the wreath on the garden table, with hot beverage by my side of course, to save the mess in the house. To keep my wreath as easy as possible, I simply take the branches of greenery and bind them together with green cotton, gradually building up height and breadth to create a sturdy wreath. I then snip smaller pieces of holly and any

other interesting greenery I have found, poke them into the wreath, nestle in pinecones and do a final round with the cotton to secure everything. You could use a festive ribbon for this final round if you wish. Finally, I tie on red ribbon to hang it from the door. As is tradition, I also love to bring the greenery inside and tuck little sprays behind picture frames, across the mantelpiece and anywhere I can! If I can incorporate lights, oranges and natural festive decorations in amongst the greenery, all the better. Trends for this Christmas are natural, nature inspired looks – think greens, browns, golds and reds in rustic materials. Blue is another big look, which will look bold set against a natural backdrop. Lights of course are big news, but on I simply take the branches the warm, golden side of things of greenery and bind them rather than bright white. Happy together with green cotton decorating! l

He was making a statement with this image; Canon Woodward, who lived in nearby Martyn Lodge had a cat that had killed Bob’s canary and he found it was the perfect way to remind his neighbour of his simmering anger. enfield is a village that rewards curiosity; hidden behind the High Street which may have originally been the site of an Anglo Saxon drove route for animals, sit several dozen well preserved buildings from 1500-1800. One of the quirkiest is the Cat House, a timber framed, thatched cottage from 1550. In the 19th century

Pinchnose Green was an accurate name Martyn Lodge from 1862 for almost three decades. Next to the Cat House is ‘Pinchnose Green’ which was an accurate name because this is where the effluent from the tan yard used to collect! Frontage

along what is now the High Street was developed before and during the 14th century when the buildings stood on shallow plots backing onto a ditch. Five medieval hall houses stood here with full height central halls and open fires; these days the street buzzes with cafes, and shops selling everything from antiques to artisan foods. During the 1600s the village developed on its western side north of Church Street and at this time, a thriving tanning industry was building up, employing many village men. It had ten tanning pits, a bark mill, a leather house, glue furnace, lime pits and a shed for shaving and drying skins. Now, the Tanyard as it is still called is a protected green space and haven for wildlife; I spied a couple of foxes dozing in afternoon sun, nestled in the long grass and a jay was searching for

acorns nearby. A wildflower meadow is planned, with native trees and shrubs such as blackthorn and hawthorn to attract diverse species. A traditional hedge has been laid to demonstrate the beauty of an ancient craft and act as habitat for birds as well as making an effective barrier. A new pond has been created which is already attracting wildlife and a third pond at the field’s northern edge carries out the same function. North of the Tanyard lies St Peter’s Church, dating from the 13th century and boasting one of the ‘best rings’ in Sussex with its eight bells. The first bell was made over 400 years ago and all were recast in 1913. Several attractive

ancient timber framed buildings are scattered around the church because in the 14th century, houses and other buildings may have encroached on the church precincts which were larger than those that exist today. In the town centre, Henfield Museum is tucked behind the High Street and although only consisting of a single room, it’s a room packed with treasure and the stories that span generations who have made this village their home. I was surprised to discover some wonderful items of clothing that read like documents of particular eras. Some 1940s shirts made of parachute silk told of the frugal years during the war when women had to sew clothes

from whatever materials were at hand and use their ingenuity to remain smart and fashionable regardless of the uncertainty around them. A two kilo heavily beaded 1920s flapper dress was a reminder of how fashionable women could still be weighed down by clothing even though they had been released from the confines of the tight corsets that had been de rigueur for decades. Moving south, Golden Square, at the junction of the A281 and A2037, comprises an attractive group of buildings dating from the 1400s including the cut away ground floor of the white boarded corner building which was modified just before the First World War. Henfield Common is a partly wooded common where locals used to be able to graze animals. These days, dog walkers love the extensive stretch of field leading to attractive woodland which provides shelter and contrast with its surroundings. The cricket ground at its eastern end is home to one of the oldest cricket clubs in the world, founded in 1771, although the sport began in the village half a century earlier. Currently, the club has three men’s teams competing in the Sussex Cricket League and a women’s team playing in the Sussex Cricket Foundation’s 35 over league. Henfield holds another ‘oldest in the world’ title, this time the 1st Henfield Scout Troop, founded in the winter of 1907/8. Major A.G. Wade was an officer from Henfield who accompanied

Lord Baden-Powell back from Africa and learnt of B-P’s plans for a training scheme for Britain’s boys. Wade relayed these ideas to his sister Audrey, who ran a boy’s hockey club in the village. Audrey converted the club into a troop for scouts and using B-P’s newspaper series, ‘Scouting for Boys’ she began to train them in scouting activities during that winter. By the time of the official launch in January 1908, Henfield had thirty scouts. Plans for a Scout Community Centre are progressing and it will be run as a not for profit charitable community building. Henfield Henfield has a thriving, well established Garden Club who attract some headline speakers, as Sara Whatley discovered when Bob Flowerdew came to visit

O

ne wet and windy Tuesday evening in October I found myself in Henfield Hall for a very exciting evening. Bob Flowerdew was to take the helm of the Henfield Garden Club for the evening and wow us with his horticultural expertise and in particular his ‘no work gardening’ approach to looking after your garden. He did not disappoint. The hall was heaving, the tea and biscuits flowing, as organic guru Bob took to the stage. Relaxed and humorous, he perched on a stool and captivated us all with his practical, no nonsense approach to gardening. Full of stories and his own particular wisdom, Bob’s message was “measure twice, cut once.” In other words, don’t make life

hard for yourself in the garden, a bit of practical thinking and a bit of not following all the conventional gardening rules will save you masses of time and effort, leaving you to get on and enjoy the garden. I came away with a heap of great tips – like pouring left-over boiling water on weeds to kill them – and a renewed enthusiasm to get into the garden.

This evening was also my first introduction to Henfield Garden Club. Started in 2000 by a group of friends, over 150 people turned up for the first meeting. The club has grown from there to over 200 members today who all enjoy a full yearly schedule of winter talks and summer outings, socials, plant sales and coffee mornings. Their next talk is on 7th January 2020. New members are always welcome and the club has a special social evening just for them, to meet and get to know each other. Pan-fried breasts of pheasant in apple sauce With the clocks going back this month autumn is well and truly here. Bryony Hill draws her inspiration from the local landscape after seeing a pheasant perched in her garden among the apple trees INGREDIENTS 1 tbsp oil of your choice (not olive oil) 1 large banana shallot or 4 small, round ones, finely chopped 4 pheasant breasts, skin off 15g butter 2-3 small, sweet eating apples – Russets are ideal – peeled and sliced thinly

2 tbsp Calvados (apple brandy) 150ml chicken stock 100ml single cream Salt and freshly ground black pepper METHOD Heat a shallow frying pan then add the oil and the shallots. Cook over a moderate heat, stirring every now and then to prevent

burning, for 5 minutes or until soft but not brown.

When the apple is 4 nearly cooked, add the Calvados and the chicken stock, bringing gently to a bubbling boil.

Pour in the cream and 5 season with salt and pepper, stir and heat through.

Add the pheasant breasts Sprinkle over a little 2 and cook these gently for 6 finely chopped parsley about 2 minutes. and serve immediately with

ennon and McCartney. Bacon and eggs. Torvill and Dean. Fish and chips. Morecambe and Wise. Strawberries and cream – all of them pretty good individually, but even better when working as a pair. And the same applies to wine and cheese – but not just any old combination, selected at random. The coming together of the right wine with the right cheese can be a marriage made in heaven. The successful pairing of food and wine is a developing art form – especially when it comes to the cheese course. While it has always been important to get this delicate process right, these days there is so much to choose from and so many different producers and variants, the task of achieving a perfect match calls for ever greater sophistication. The balance of flavour intensity is crucial in successfully pairing food and wine. For example, foods with high acidity like tomato or lemon-based dishes make wine taste fruitier and less bitter, while the opposite is the case with spicy food. Salt is a wine-friendly flavour that makes even the biggest and heaviest wines feel smoother, richer, less bitter and acidic. Sweet food needs the company of a sweet wine. Finding a successful partnership is particularly important in the case

rest assured that there is a cheese out there somewhere that will match it to perfection. People have been consuming wine and cheese together since the dawn of time – or at least the earliest days of civilisation. Because the two complement each other so well, it may be tempting to believe that any old combination will do. However, some careful research and planning is needed to achieve the perfect fit. Why is it that certain wines work so well together with particular cheeses? As soon as the cheeseboard starts to circulate, many people automatically reach for the bottle of red but this is not always the best pairing. Bold, heavy, red wines are great with aged cheese like a mature cheddar. On the other hand, white wine can provide an ideal accompaniment to soft creamy cheeses. As white wines are lower in tannins, they complement gentler flavours without overpowering them. White wine, especially the sweeter versions, are particularly well suited to blue cheeses, as its lighter notes enhance the saltiness of the cheese without

detracting from its full-bodied flavour. Let’s look at some specific examples. For instance, in the case of cheddar, much depends on the strength of the cheese. A full-bodied Cabernet Sauvignon or Malbec with their bold flavours will hold up well against a sharp and mature cheddar. Conversely, a mild creamy cheddar will taste better when accompanied by a more delicate wine such as a Chardonnay. An oaked Chardonnay’s citrus and stone fruit flavours with hints of nuts also pair well with Gruyère.

Port is arguably the wine most closely associated with cheese

My freedom In our Centenarians special in June we were spellbound by Herta Stanton’s amazing story, so we reunited her with Robert Veitch, to learn more about her Kindertransport journey as the 80th anniversary approaches

W

hen Mr Kern, my ‘A’ level history teacher taught The Third Reich it didn’t seem possible I would ever meet someone who lived through it, and yet I have. At 102½ years, Herta Stanton has a clear and lucid memory, detailing a warning from history. “I was born in 1917, in Vienna, into a Jewish family. After Hitler’s rise to power in Germany in 1932 the Nazi influence seeped across the border and Vienna changed. Some started to wear a Swastika, but didn’t realise what it entailed, that it might have been dangerous for Austria.

‘Juden Verboten’ [ Jews forbidden] signs appeared outside some shops. But I was young and didn’t take much notice of them,” she said with a nonchalant defiance. After the Anschluss with Germany (12th March 1938) and Kristallnacht

Obtaining basic food and groceries proved problematic while armed Nazis patrolled Vienna. “They were welcomed,” Herta noted with a sense of incredulity. “To wear a Swastika as a disguise? If they found out you were Jewish, it would be... the finish of you.” “The Gestapo could knock at our door at any time; day or night. to take us to a camp, but my mother pleaded, saying I was too ill. Our neighbour, the doctor, confirmed it, ‘this girl is very ill, she will die if she is moved.’ The Gestapo let us stay. My mother was advised to take me away as soon as I was able to move because they would return, then take us to a camp.” In Britain, the government encouraged Kindertransport; a planned rescue of Jewish children from Germany, Austria, Czechoslovakia and Poland, prior to WWII. To speed things up, British Home Secretary Sir Samuel Hoare issued travel documents for lists, rather than individuals. After an appeal for foster homes on the BBC Home Service, 500 volunteered. Herta was offered a chance to

escape on the first Kindertransport, but she needed a visa. “It meant queueing outside the British Embassy. Nazi brown shirts would break up the queue by kicking people, their boots armed with razor blades embedded in the soles. It took four or five days but I was granted my visa, and told about the train.” Herta left home on December 10th 1938 for the midnight train from Westbahnhof station. She paused to reveal a coruscating, haunting, insight, “For several years all I had was the memory of leaving home for the station. The image of my parents, sat at the table, their heads in their hands, crying uncontrollably. They were certain we would never meet again. I thought it was goodbye forever too.” Each child was allowed one suitcase. Toys, money, jewellery and accompanying adults were banned, “I wore a straw hat with a velvet ribbon. I had to chaperone a four-year old boy that I met at the station.” The steam engine released its brakes and slipped away, carrying 500 fortunate young souls. It was almost 18 hours to Rotterdam and there was nothing to eat or drink on board. “At the Dutch border, Nazis stopped the train, taking anything of value. I saw them coming and threw my little Agfa

They fed us oranges, apples and chocolate,” Herta remembered gleefully. “The little boy cried on the ferry to Harwich, it was awful, but I had to look after him. Once docked in Harwich,

we were all medically examined. I was separated from the boy, I never saw him again.” From Harwich, Herta travelled to Liverpool Street station, and onto Crawley where her foster family lived. “Do I feel British or Austrian? It’s very difficult to take sides but Britain gave me a home, when Austria didn’t. When I laid the Remembrance Sunday wreath at a service in Beckenham I got a round of applause. It brought back so many memories. That moment meant so much.” Remarkably, Herta’s parents and three siblings all survived the Nazis. Their family was reunited after a small ad was placed in the Daily Telegraph. Around 10,000 children came to the UK thanks to Kindertransport, but two-thirds never saw their family again, making Herta’s story all the more astounding. “I was invited to the 60th Anniversary celebration of Kindertransport at Clarence House and met Prince Charles and Camilla.” Commemorative memorials have been installed at Westbahnhof and Liverpool Street stations. Herta is one of the very last surviving Kindertransport children. As Mr Kern would have said, “Ich bin Freiheit…” I am freedom. l

Pilot Officer John D Crossman

As the Battle of Britain raged above Southern England in 1940, a fatal plane crash left a lasting legacy in the fields of Forest Row, uniting a local boy and Australian pilot in eternity, though they never met. Robert Veitch investigates

ohn Dallas Crossman was born in 1918 and grew up in New South Wales. Aged twenty, he applied to the RAAF but wasn’t accepted so in 1939 he applied to the RAF, made the grade and endured an eight-week voyage, docking at Southampton on 12th October 1939. He was airborne before the month was out and the Battle of Britain began before he completed training. Crossman commenced active service on September 14th 1940 and in the 16 days that followed he flew 18 sorties. On September 30th 1940, Crossman’s Hurricane engaged several Messerschmitt 109’s, showing ‘stupendous courage’ causing significant damage to one. It would later crash on Ashdown Forest, but not before the stricken German aircraft caused fatal damage to Crossman’s Hurricane, causing his crash at 1:30pm at Tablehurst Farm. Anna Pearce, who runs the memorial Facebook brought the story up to date when I met her on 30th September, the 79th anniversary. Peter Wheeler was two-years old in 1940, a babe in arms in the garden with his brother and mother. When he was a little older he visited the scene and it left a lifelong imprint. Anna recalls, “After

They never met but they’re united by this the crash Pete said it wasn’t widely known that Crossman was Australian, people assumed he was German.” Pete visited the scene on each anniversary. As the boy grew into a man, he would leave a small wooden cross to honour Crossman and place a notice in the local paper. A small boys tribute became an old man’s bequest, ensuring John Crossman’s sacrifice left a lasting legacy in the village. Of the many Battle of Britain crash sites, few are officially marked as names were added to nearby war memorials instead. Pete campaigned for a permanent memorial for years and years, eventually gaining permission to

install it on private land. The unveiling of the memorial took place on the 76th anniversary of the crash. “I went along because I was curious,” remembers Anna. Pete had completed his bucket list but it was just the pair of us in attendance. It was an awful anti-climax and I was deeply upset. We got chatting and I resolved to help raise awareness so I set up the Facebook page. Pete was never really heard, despite his willingness to shout.” Pete was diagnosed with cancer and admitted to East Surrey Hospital in Redhill. Anna recalled, “When I visited, he told me more and more about John Crossman,” as if passing on a living will. Pete passed away in April 2017. “I knew Pete for less than a year but I want to perpetuate his and John Crossman’s legacies, now their lives have ended. At the centenary of the Spanish Flu outbreak, Hanna Prince discovers how the deadliest pandemic in recent history spread through Sussex

n February 1919, the war poet Robert Graves was laid up in a Hove villa with a dangerous bout of Spanish flu. The pandemic was at its height and there were no working nurses to be found. The first wave was relatively mild. Twenty fatalities had occurred across Brighton and Hove by the end of August and the media gave little coverage to the disease. The Sussex Daily News called it an “ingenious attempt” to sabotage the upcoming general election. THE DEATH TOLL MOUNTS Within three months of this advert’s publication, a second and far more deadly wave of ‘flu had gripped Sussex. October and November saw fatalities rise steeply across the area, with Brighton and Hove the worst affected. At its peak, the Spanish Flu was claiming 80 lives per week in Brighton alone. Symptoms were gruesome.

DITCHLING BEACON For November, Robert Veitch took our graphic designer Ruth Preston out for a Sunday afternoon coddiwomple from Ditchling village to the Beacon and back

F

rom the car park find your way up to the road, then left to the mini roundabout at the crossroads. Turn left and walk down South Street for 150m, to the junction of Beacon Road and Clayton Road. Cross to the white fingerpost, where the path continues between the fences by the telegraph pole. Ruth saw the sign marked ‘public footpath to the downs’ and noted “here we go, up the Beacon.” After 50m the path chicanes right, then left, before emerging at the roundabout in Neville Cottages. On the roundabout another sign marked ‘public footpath to the downs’ points right, leading between the houses, it zig-zags to a bridge, stile, bridge, gate, and then open farmland. Aim left, across the field, towards the gap in the hedge by the oak tree. Then strike out across the next field towards the fingerpost by a gap in the hedge. Through the gap, the path follows the edge of Molehilly Shaw, before continuing along the field boundary all the way to the water trough in the corner. Through an open gate is a vineyard on the right and what we thought to be a ‘grand designs’ property on the left. Beyond the ‘please shut the gate’ gate follow the path to the stile and Underhill Lane. Turn right and walk for 150m, turning left by the rough layby. This is Burnthouse Bostall, an ancient path. Once beyond the double gates, the gradient will gradually ramp up.

Avoid the stile on the left and aim right, it’s a little narrow in places, sometimes squelchy, sometimes chalky, continuously tree-lined; “Get me a stick, Gandalf,” said Ruth with a smirk. After 350m the path emerges on to the open downs, and a refreshing breeze. The path follows the line of ditches and ridges as it curves left, continuing uphill. There may be livestock present, which should be treated with respect. It’s mostly chalk and continues all the way to the top gate and the summit of the bostall. On learning she had ascended to 224m (735ft), Ruth noted, “It was easier than I

thought,” while admiring the views. Turn left and follow the South Downs Way; past the dewpond, past the gorse, and into the nature reserve. Summit baggers will see the trig point to the right of the path. At 248m (814ft) Ditchling Beacon is the roof of East Sussex. Continue to the car park and the road. Cross carefully, watching out for vehicles and summiting ‘grimpeurs’ clad in lycra. Once across, turn left before the gate, and follow the footpath hugging the road. It’s steep in places, and lumpy in others, but take it steady and all will be well. The sound of the traffic fades away as the path wends a way downhill. Ignore the stile to the right and keep going. Ruth finally found her Gandalf stick, used it for a bit, then parked it safely for a reader to use another time. At the fork in the path, bear right, past the back of the ‘nature reserve’ sign. The path widens a little stepping downhill through the tree roots, passing a vineyard on the way to the road. Turn left, then after 50m, turn right by the sign for Wick Place. Follow the track, veering left at the telegraph pole. After 450m, the concrete track turns 90° left, but the path continues straight on. Bear left at the first fingerpost for Ditchling, and then right at the second “which could be confusing” as Ruth pointed out.
