Editor’s comment Welcome to our December issue, which is all about Christmas – surely everybody’s favourite season. This year, we have Rushfields Plant Centre in Poynings to thank for our beautiful Christmas front cover photo. With a huge selection of seasonal decorations on display at Rushfields, our photographer Lee was truly spoilt for choice! Cuckfield’s Christmas Tree Festival is in its 11th year, and it’s looking more festive and sparkly than ever. The idea is pure genius: get local organisations to sponsor and decorate a tree, display all the trees in a beautiful village church and make a community event of it – all in the name of charity! Roger Linn went to investigate (pages 7-11). The Christmas panto is a much loved British tradition – but have you ever wondered where it comes from? Hanna Lindon looks into its history, as well as other countries’ quirky Christmas traditions, on pages 45-46. If you fancy yourself as a bit of a Christmas conoisseur, why not try your hand at our ‘12 Days of Christmas Quiz’ on pages 56-58. It’s all about festive foods and, just to whet your appetite even more, there are three mouthwatering prizes to be won! Our thanks go to The

Ruth Lawrence caught up with Peter Bourne, an avid collector of antique photography equipment, who was kind enough to share his wonderful collection of Thornton-Pickard cameras with us (pages 31-33). Getting from London to Brighton before the railway linked coast and capital was an arduous business involving coaches, horses and regular stops at inns en route. Interestingly, many coaching inns have survived to this day, though perhaps without the equine facilities. Find out more on pages 61-62. Christmas Festival fairytale of lights and music at Cuckfield’s

Pure magic and enchanting are words you hear a lot when people describe what has become one of the most delightful events of the Sussex Christmas season: the Christmas Tree Festival at Holy Trinity Church, Cuckfield. This year the body of the church will be filled with over 70 decorated and illuminated Christmas trees. It will be open to the public from 6th December – to coincide with the Cuckfield village street festival – until Sunday 8th December. The Festival will close at 6pm on the Sunday evening with a traditional carol service sung amongst the scents of pine, amid the softly lit trees. And, of course, the service will be followed by mulled wine and mince pies. Now in its eleventh year, the Christmas Tree Festival has almost doubled in size since the Revd Jean Sedgely, then the assistant priest of Holy Trinity, came up with the idea as a way of raising much needed funds for the church and for a selected charity. ‘Sponsors’ are invited to purchase a tree in the festival which they can then decorate in any way they please, but usually in a way that reflects their business, aims or objectives. Nowadays, such is the Festival’s reputation that sponsors come from a wide area of Sussex, not just from Cuckfield village itself. They include charities, schools, local companies, shops and stores; estate agencies, sports clubs, youth organisations and many other groups. They are asked to pay £15 for the privilege of having their own tree, though many of them contribute much higher amounts. In a ringing endorsement of the event’s popularity, there’s already a waiting list for next year. After the event, sponsors can take their tree away or simply ‘un-decorate’ it and the bare trees are sold off continued on next page

again to anybody who wants to buy one. The public pay an entrance fee of £4, and under-16s go free. When I spoke to Jean, she told me that the idea was not entirely hers originally, but one she had imported having seen it work elsewhere. “The daunting thing,” she laughed, “was not whether we could make it work, but whether we could pitch the idea successfully to the Parochial Church Council. I felt as though I was in an episode of Dragons’ Den!” Fortunately, Jean must have ‘sold’ the idea well, because the church council not only approved it, but agreed a loan of £200 to get the Christmas Tree Festival off the ground – a loan they subsequently turned into a gift. That first year, there were 40 trees in the church and the selected charity, St Peter and St James’ Hospice, received £1,500. Since then, the Festival has contributed a remarkable

£38,500 to other charities including local ones like St Catherine’s Hospice and national ones like Help For Heroes. During the three days of the Festival last year, over 3,000 people visited the church. Jean is immensely proud of how her ‘baby’ has grown. “I think it’s been so successful because it appeals equally to men and women, children and adults. Everybody is simply enchanted by the sight of so many beautifully decorated trees in Cuckfield’s lovely church.” To find out how everything comes together, I spoke to Paul Goldfinch, a member of the Festival Planning Group and the man responsible for the publicity surrounding this year’s event. “It must take an enormous amount of work and planning,” I said. Paul laughed. “It certainly does but we have a regular army of volunteers drawn from the continued on next page

congregation and, of course, we have a plan to work with.” He went on to explain that the 5-6’ tall trees are delivered pre-wrapped, but before they can be placed inside the church, all furniture has to be carefully removed and put into store. Then, and only then, can the trees be carried in and carefully sited within the main body of the church. As well as furniture moving and tree-carrying duties, the seemingly tireless volunteers provide the stewards for the Festival itself, and offer allday refreshments in the Old School buildings next door. The day after the volunteers have done the

Finally, on the last day before the Festival opens to the public, the proud sponsors come and decorate their trees. This year, Action For Deafness is the local charity chosen to share the Festival’s proceeds with the church. It’s one I know well having written about them on a number of occasions, so I contacted Jane Shaw, Action for Deafness’ Chief Executive Officer, and asked her what she thought about being chosen. She said: “We’re delighted to have been selected as the charity partner for the 2013 Christmas Tree Festival. Action for Deafness is a local

charity supporting both profoundly deaf and hard of hearing people and we would like to thank the people of Cuckfield for this opportunity and their generous support of our work. I hope the Festival is a huge success.” As this year’s charity partner, Action for Deafness also gets a (much bigger!) Christmas tree which, once decorated, will stay inside Holy Trinity Church for the duration of the Christmas season. Part and parcel of the Festival is the astonishingly rich and diverse programme of live music for visitors to enjoy while they stroll among the trees. As a concert programme it would be more than worth the entrance money on its own, but it works particularly well in the spectacular setting of Holy Trinity at Christmas. From my advance copy of the line-up, I counted over 30 live ‘acts’ which include classical guitarists, school choirs, solo voices, organ recitals, gospel singers and handbells. The delightfully named saxophone quartet In the Pink will be performing, as will The Cuckoo Choir and the Sussex Harmonisers. The Three Tenors are also on the list (presumably not those three tenors!) as are the Cuckfield Concert of Viols and The Singing Allsorts. As Paul showed me the layout of the new, re-ordered interior of Holy Trinity, I asked him what he valued most about the Festival. He didn’t have to think for very long: “It allows a very broad community of people to become aware of what a beautiful church we have in Cuckfield.” The Cuckfield Christmas Tree Festival is a truly joyful event and it is set in probably the most delightful small church in Sussex. Go along and enjoy it with your children and your grandchildren.

Stuck for a gift for a gardener this Christmas?

goes the usual thought process. Beware!

Unexpected Christmas gifts of plants are well-intentioned but can reduce the recipient to secret thoughts of the ‘I’ve got no space for it/It won’t like my soil/ I hate it’ variety. Yes, of course, gardeners’ love plants – but not necessarily all plants. I love trees with a passion, but present me with a monkey puzzle and I’ll run a mile. There’s nothing worse than giving a plant that’s doomed to remain unloved. Unless you know precisely what would be welcome, best to steer clear. There are plenty of other gift ideas to choose from. Modern clothing has revolutionised gardening. Nowadays, we can keep dry and snug in lightweight fleeces – and you can never own too many. Likewise,

thick socks, especially knee-length ones that keep legs warm on even the coldest days. Good quality hand cream is always appreciated and is more effective if applied before you go gardening – it creates a waxy barrier that helps keep hands clean. Economic times are tough, so don’t go thinking you have to spend £80 on an artisan handforged spade, lovely though it may be. Many ideal horticultural tools come disguised as something else – and they make great stocking fillers. A paint scraper’s ultra-flexible blade quickly slices moss off paths and, used edgeways, removes weeds from paving cracks with ease. Kitchen scissors are an essential part of any gardeners’ kit and having several pairs scattered about means they’re always within reach. Ensure the handles are a gaudy colour – much easier to retrieve when accidently thrown onto the compost heap. Handy pocket-sized

pincers and pliers easily chop through chicken mesh and wire, and packs of wooden barbeque skewers, conveniently pointed at one end, make fabulously cheap supports for young plants. If you have children to amuse in the run-up to Christmas, get them making string dispensers. Find a large jam jar and a responsible adult. Ask the responsible adult to punch a hole in the jar lid, sufficient in diameter to pass a length of garden twine through. The jar can be decorated using glass paints or with a paper label, varnished to keep it waterproof. Drop a ball of twine into the jar, thread the twine end through the hole and screw on the lid – hey presto! String dispensers are brilliant bits of gardening kit: so simple, yet so useful. A homemade one costs pennies to make and is a lovely gift to receive. And what am I hoping for this Christmas? Well, my letter’s already on its way to the North Pole. I’ve asked Santa for a cement mixer. No, not for construction work. To mix compost in, of course!

By opening their garden to the public in return for a donation to St Catherine’s, green-fingered Sussex and Surrey residents can show off the fruits of their labour whilst helping St Catherine’s nurses care for local people with a terminal illness. Since 2010, Open Garden hosts have raised a fantastic £75,000 for their local hospice, with many taking part in the National Garden Scheme at the same time and selecting one day to support St Catherine’s. Opening your garden is a rewarding way to share your passion and for the public to discover hidden gems in their local area. St Catherine’s will offer all the support participants need to make their Open Garden events a success, from help with advertising to providing materials needed on the day. Gabi Field, Community Fundraiser at St Catherine’s Hospice, said: “Every year we are astounded by the variety of gardens on show and the generosity of the visitors and hosts. Last year, Open Garden events raised more than £20,000, which helped St Catherine’s Hospice to ease the physical and emotional pain of local people with a terminal illness and their families. The size of your garden is not important, anyone can get

parkrun was launched in Clair Park, Haywards Heath in July, with the help and support of West Sussex County Council, Mid Sussex Country Council, Haywards Heath Town Council and two local running clubs: Burgess Hill Runners and Haywards Heath Harriers. parkrun is a free, timed 5km run every Saturday morning at 9am. It is a run and not a race and is aimed at people of all ages and abilities, so please don’t feel that you are too slow to participate. There are always people cheering the last person over the line. We have created a warm and welcoming atmosphere for people to get fit for free. Our youngest participant was 6 years old and the older being in his 70s. In the 16 events since we launched we have completed over 1100 runs with times, ranging from just over 17 minutes to over 45 minutes. 500 different people have participated with many becoming regulars every Saturday morning. Donate your old phones Woodlands Meed, a special school for 2-19 year olds in Burgess Hill, which opened in 2012, have joined with Hearts & Minds, a charity that raises awareness and the quality of life of individuals and families affected by Autism, to help raise funds for much needed resources. Hearts & Minds will exchange mobile phones for equipment – 165 phones will get us an iPad, 150 an iPad mini, 120 a 15” laptop. Woodlands Meed have found iPads to be extremely beneficial in supporting all the children at school and college sites, particularly those with communication needs. The Big Give Christmas Challenge St Peter & St James Hospice’s fundraising department is pleased to announce that we have completed the first phase of the Big Give’s Christmas Challenge, a national matched giving event. Become a Waste Prevention Adviser Most people recycle the usual items: wine bottles, milk cartons, egg boxes, tin cans and cereal packaging, and some even go as far as having a composter or food waste digester in their garden for all the kitchen scraps. But this is just part of the bigger picture. We are being encouraged to consider preventing waste, not just what to do with it once we have it. The manufacturers are doing their bit by changing packaging and choosing different materials to make their products. What about the rest of us? Did you know that every year the UK produces over 177 million tonnes of rubbish and each family uses 6 trees worth of paper? So what can we do to help? Could you repair something instead of buying something new? Could you make better consumer choices? Choose cardboard over plastic packaging? Take bags with you to the supermarket? Reject unnecessary packaging by buying your fruit and vegetables loose? Support your local traders, farmers and suppliers? At Christmas time, we could make old Christmas cards into gift tags, use gift bags instead of wrapping paper (they have a much longer life), and make a food shopping list and stick to it! If this sounds like you and you have other tips to share, there is a way you can make a real difference and spread the ‘reduce, reuse and recycle’ message. Capturing the memories…

…preserving the magic Peter Bourne does not do things by halves. His camera collection spans three centuries and encompasses such a broad variety that i was forced to limit my curiosity to a single manufacturer, upon which Peter has become a passionate authority: Thornton-Pickard.

To the untrained observer, Thornton-Pickard sounds like a couple of prohibition era detectives. In fact, the name denotes a partnership that produced cameras from what claimed to be “one of the finest camera works in the world” at premises in Altrincham. Founded in 1888 by John Thornton and Edgar Pickard, their range included large field cameras with a ground glass focusing screen, which required the photographer to compose the image under a dark cloth to cut out light. Peter showed me one stunning example, a T-P ‘Amber’ camera with red bellows and a mahogany body (pictured left). This could either be mounted on a sturdy tripod for stability or braced against the body using a neck strap. It’s easy to see the appeal these cameras hold; they are chock-full of character and visual beauty while producing incredibly detailed results due to the large area that makes up the negative. One of the first cameras in Peter’s collection was a T-P Junior Special. As the photographer looks down from above the camera to focus, there’s a much more portable feel to these models that were made in the interwar years of the 1920s. Initially, Peter wasn’t so fascinated by these early cameras but his interest was sparked in the 1970s, which led to him becoming a serious collector in the decade that followed. He admits he’s never counted the number of cameras he’s owned, but ownership is only part of the appeal. “I’m into old things and I like to restore them,” he said while picking up a ‘seaside’ camera, used by photographers who would prowl the beaches looking for holidaymakers keen to continued on next page SuSSex Living December 2013

pay for a snap as a memento. Examples of the photographer’s work were displayed above the camera body and a pencil and notepad were clipped to one side to take orders. Cameras were not owned by everyone, and photos of our ancestors were likely to have been taken by opportunistic photographers while relaxing on their annual holiday. The military needed sturdy cameras that would survive during warfare. Peter has a solidly built T-P military camera used to take photos in the trenches. It is mounted on a heavy duty wooden tripod with a central weight. Such cameras like these have left us with a record of what life was like for soldiers fighting on the front. It’s easy to forget that, in a pre-digital age, every image had to be produced by hand and negatives were susceptible to damage

or destruction. Peter showed me an album of photographs from the 1840s where the quality of early work could be clearly seen. Subjects spring to life because of the fine detail, possible because of the size of early glass plate negatives. One of the most surprising cameras in Peter’s collection looks more like a weapon than anything to do with photography. The Mk III Hythe Gun camera (pictured above) was developed for the training of aerial combat gunners to enable them to hit their targets successfully. Initial experiments consisted of mounting a camera on the gun but, by 1916, an 11 inch lens and shutter was fitted inside the barrel casing to enable 14 exposures to be made on rollfilm. The camera was operated exactly how the gun would be fired: the photograph was taken by pulling the trigger. Even the ammunition cartridge provided a purpose in activating a film perforator to show the instructor that the drill had been carried out correctly. A photograph taken by the gun camera in 1916 shows an aircraft targeted securely within the sights.

This purpose specific camera would have helped many an airman hone his skills before tackling the airborne enemy. Peter told me how this camera became a target itself – one of misunderstanding: someone he knew was arrested after police assumed he was wielding a machine gun instead of trying to focus a photograph! Although production ceased at Thornton Pickard in 1939, the company left a legacy of quality cameras that are highly sought after by a new generation of analogue process enthusiasts. Although digital is quicker, easier, inexpensive and ubiquitous, there is nothing quite like producing a handmade print using a century old camera with so much exquisite detail contained within the negative. Fine art photographers are rediscovering the quality and uniqueness of the old processes and equipment, and Peter is seeing a resurgence of interest in these classic cameras. Peter has gradually assembled his own collection from auctions and private sales, often

He has an encyclopaedic knowledge of makes and models and used to process film and develop photos in his own darkroom. More recently, he attends photographic collectors fairs to buy, sell and exchange stories with other enthusiasts. In the past, Peter was a member of Burgess Hill Camera Club, which meets weekly and is always keen to recruit new members. As I took photos of a small selection of Peter’s collection, my camera made instantly viewable images in a tiny fraction of a second. John Thornton and Edgar Pickard could have scarcely dreamed of digital photography, let alone camera phones or the constant stream of online imagery now woven into our lives. Their pioneering designs were the distant relatives of the devices we use every day. Thanks to collectors like Peter, their legacy will never be forgotten.

How do you make a woman happy at Christmas? Think about it.

Christmas shopping for girls is easy. We all like little surprises, just as long as they’re good ones. And therein lies the trick: A little bit of thought goes a long way. Any woman who has suffered the indignation (no, the sheer hurt!) of being presented with petrol station flowers, hastily bought with the sole and very obvious intention of keeping Her Indoors from moaning, will immediately be able to tell the difference between a genuine romantic gesture and a perfunctory gift. If your partner should suffer from the occasional bout of acute cluelessness when it comes to present shopping, perhaps it’s time to act. Simple tactics tend to work best: make sure he knows what you like – and encourage him to buy you the luxe version for Christmas. Get him to swap the utilitarian for the frivolous – equally applicable to undies and choccies! I’ve gone one step further; I have a wish list on the go all year round where I jot down things I come across that I would love someone to give to me – little luxuries, of no particular consequence on their own, that would make me happy. Technically, I suppose I could buy the odd item myself, but where’s the fun in that? Delayed gratification, especially when combined with receiving a present from a significant other, is a powerful endorphin booster. Hand cream is always a winner, especially when it has a gorgeous smell. Budget-wise there’s nothing

much to worry about, since even the most top-end product couldn’t possibly cost more than £20. Shawls and scarves – can you ever have too many? Personally, I like handmade ones in natural fabrics and vibrant colours that work with my ‘autumn’ colouring: wool, silk, cashmere – it’s all good. Candles and Christmas go together like mince and pie, and they make the perfect gift. Naturally scented candles are nicest, and if they come in a pretty glass votive, so much the better. And then there’s jewellery – soooo much gorgeous jewellery out there… A very personal choice, so it’s best to take your man with you, making the transaction a moment to remember for both of you. I’m lucky that my other half knows my favourite jewellery shop, where I know he can literally do no wrong. And anyway, sometimes budgets are there to be stretched. If all else fails, a voucher can make a surprisingly good gift, provided a little extra thought has gone into choosing it. Gift cards from a shop lack imagination and can easily smack of last-minute panic buying. So instead, think about giving ‘quality time’ in the form of an ‘experience’ voucher you can redeem together – romantic dinner, tickets to a concert, special day trip, pamper day… how could any woman fail to feel the obvious love?

links newick and north Chailey via field paths and woodland.

From The Bull on the Green pub at Newick, turn right along Church Road passing The Royal Oak on your left and shortly The Crown Inn on your right. At the cul-de-sac on your left leading down to Newick Church, take the track opposite signed to the The Twitten House. At the entrance to the house, sidestep to your right to follow an enclosed path between hedges. At the playing field, cross diagonally to the far left-hand corner. Go through a metal gate and follow the hard surfaced path ahead; at a path junction, carry on ahead. Go through a wooden gate, ignoring the path off to your right, and maintain direction ahead. Shortly, look out for a three-way signpost in the hedge, and follow in the direction indicated to a visible signpost in the hedgerow. Go through a gap in the hedge and turn hard left to walk downhill on a left-hand field edge to a sign at the bottom of the field. Pass through a gap in the hedge and bear half-right towards the far right-hand corner, ignoring the more obvious path that goes straight down into woodland. Cross a footbridge, go over a stile and where the woodland bears away to your left, go slightly right uphill to a stile which leads to an enclosed path and the buildings of Tilehurst Farm. Follow the track out to a lane in the vicinity of Cornwell’s Bank.

Cross to the narrow path opposite and follow this out to another road by the property ‘Sandrock’. Turn left along the road, ignoring the turning signed to Newick and Barcombe, and after about 100 metres, go right over a stile and follow the obvious path ahead between two oak trees to go over two more stiles and into a strip of woodland by a four arm signpost. Carry on ahead through a strip of woodland, soon to go right over a stile and into a field. Follow a meandering path left through the field, ignoring a signed path in the top right-hand corner, and go through a gap in the hedge by a signpost. Pass round two sides of a tennis court and out to a track. Opposite a house, go right over a stile and into a field. Cross this field on an obvious path to a stile in the top right-hand corner. Go over the stile and follow the wide grassy path ahead from where, on a fine day, there are extensive views southwards with the South Downs in the distance. continued on next page SuSSex Living December 2013

The track bears right and drops steeply downhill; at the bottom, turn left at a signpost to walk just inside the wood parallel with the field. The track bears right to cross a substantial bridge and shortly, at a fork in the paths, take the left-hand path and follow this uphill through Frick Wood to emerge alongside a field which takes you out to the A272 at the junction with Downs View. Turn left along Downs View to join the A275 close to The King’s Head pub and the crossroads.

Have you ever wondered who was the first pantomime dame, or why panto has such a strong association with Christmas? The tradition goes back a very long way.

Like many of our best-loved Yuletide traditions, pantomime far predates the Christian festival of Christmas. The first references to the art form come from Ancient Greece – and by the 1st century AD, Roman orators were already condemning panto for its ‘erotic’ content and the ‘effeminacy’ of its dancing. But it wasn’t until the 17th century that this continental commedia dell’arte came to England. Already known for their love of slapstick and their comedic folk plays, the English took the Italian tradition and made it their own. The first real pantomime revolved around the story of Harlequin and Columbine: two eloping lovers, who are pursued by Columbine’s father Pantaloon and his comic servants Clown and Pierrot. In the 18th century, London’s theatres began competing to put on the most popular and creative panto production. Early performances included Tavern Bilkers at Drury Lane, The Loves of Mars and Venus - a new Entertainment in Dancing after the manner of the Antient Pantomimes, and The Necromancer; or, History of Dr. Faustus at Lincoln’s Inn.

There’s nothing like a dame

Gender role reversal had been used to comic effect since the early origins of theatre, but it wasn’t until Victorian panto that the ‘dame’ became a true tradition. A law change in 1843 allowed pantomimes – at that time, mostly mime acts – to follow a spoken script. This encouraged writers to adapt traditional fairytales into comic productions. And, from the very beginning, characters like the Widow Twankey in Aladdin and Jack and the Beanstalk’s Dame Trott were played by men. The Victorians adored and applauded famous drag acts like original dame Dan Leno and George Lacy, just as modern panto audiences can’t get enough of Shaun Prendergast, Lily Savage and Stanley Baxter. Today, no pantomime would be complete without the introduction of a comic cross-dresser. Few people, however, realise the connection between the dame and the introduction of panto as a Christmas tradition. continued on next page SuSSex Living December 2013

The Christmas connection The old festival of Twelfth Night, a night of feasting on 5th January, has been celebrated in England since pre-Christian times. The theme of the festivities is the turn of the year, and our ancestors used to literally think that this meant the world ‘turning upside down’. Gender role reversal was a key theme of Twelfth Night, hence the comic confusion caused by men and women swapping dress in Shakespeare’s play of the same name. In the Middle Ages, it became traditional for a Mummer’s Play to be performed on Twelfth Night, with men dressing up in women’s costumes and vice versa. This was both the earliest origin of the pantomime dame, and the beginning of a long association between panto and the Christmas season. So, when you attend a post-Christmas panto, you’re following a tradition that goes back for hundreds of years.

Pantomime today The journalist Leigh Hunt once wrote that not to like panto is not to like love – and the incredible popularity of this festive art form backs him up. In York, the country’s biggest panto destination, more than 55,000 people attend the annual production. Dozens of pantomimes will take place this year in Mid Sussex alone, ranging from big productions at East Grinstead and Haywards Heath to smaller, amateur showings at villages across the area. In recent times, it’s become popular to attract audiences with a celebrity cast. Expect to see a glitzy array of celebs in Sussex pantos this season, including Catchphrase presenter Stephen Mulhern and Sid Sloane in Crawley’s production of Cinderella, and TOWIE star Mario Falcone in Worthing’s Wizard of Oz. Whether they feature soap stars or schoolchildren, however, pantomimes are about one thing: bringing us together to enjoy a fabulous, festive laugh.

Christmas around the world While pantomime has become a popular festive tradition in Britain, other countries have their own ways of celebrating the season. In the Netherlands, Christmas begins on the last Saturday in November, when St Nicholas arrives by boat to bring the children presents. Sweden’s Saint Lucia’s Day on 13th December sees a procession of young girls holding lights and sweets parade through the towns and villages. Mexico celebrates Epiphany on 6th January, and it’s the Three Kings who distribute presents to Mexican children. In Norway, children receive their gifts from a very different source. Instead of Santa, they have the Julebukk: a goat-like gnome who comes bearing toys and sweets. Many countries also believe in mischievous Christmas spirits. In Norway, Jul Nisse plays tricks on children who don’t leave him porridge. Kids in the Netherlands live in fear of St Nicholas’s helper, Black Pete, who punishes bad children. And in Greece, fresh basil is wrapped around a wooden cross to deter Killantzaroi – naughty goblins that turn milk sour and ride on people’s backs.

When it comes to Christmas presents – and the time is fast approaching – I believe that the surprise element is almost more important than the usefulness or value of the ‘pressie’. Asking someone what they want for Christmas is all very well and ensures that at least somebody is satisfied with the transaction, but it’s hardly in the spirit of Christmas. My Scottish mother, who was not exactly a romantic flibbertygibbet, would say something like “Is that a new jersey?” “Yes,” you’d reply. “How much did it cost?” she’d go on, and you, knowing where this was leading, would reply “About thirty quid, Mum.” “Fine,” she’d say, “I’ll give you that for your Christmas.” Job done. She may perhaps have been an extreme example of the let’s-not-have-any-fun brigade, but she did once send her 12-year-old granddaughter a Christmas present with instructions that it shouldn’t be opened in front of her brothers because it contained pants! Of course, if she hadn’t included the instructions it would have worked brilliantly. Not only would it have been a complete surprise for her granddaughter (though not necessarily in a good way), but it would have afforded her brothers more fun than any of their own presents. Surprise means that you’ve given the matter some original thought. And the act of giving should give you as much pleasure as the person receiving the gift. Anything else is simply ticking a box – like using wedding present lists. Where’s the fun in that? Inevitably, not all surprises will be entirely successful, as my wife remarked on unwrapping my Christmas gift of exactly the same stylish top as I had given her for her birthday only three months previously. And some surprises are more creative than others. When my family were asked to buy me fishing-themed presents for Christmas one year, one of my children gave me a CD of the The Trout – Schubert’s Piano Quintet in A Major. Salmon is traditional Christmas fare, but not all that long ago I discovered gravad lax (buried salmon). This is a Nordic dish consisting of raw salmon, cured (buried) in salt, sugar, and dill. It is usually served as an appetizer, sliced thinly and accompanied by hovmästarsås (also known as gravlaxsås), a dill and mustard sauce, either on bread of some kind, or with boiled potatoes. It goes very well with scrambled eggs. Do try it. If you prefer your salmon unburied, how about a frittata?

smoked salmon & Chive Frittata 4-5 slices of smoked salmon, very finely sliced 3 tablespoons of finely chopped chives* 6 large eggs, beaten lemon or lime wedges, to serve A 24-hole mini muffin tin, well oiled 1. Heat the oven to 200º C, 180º C fan, 400º F, Gas Mark 6.

2. Divide the smoked salmon and chives between the muffin cases.

3. Then season the beaten egg and divide it between the cases.

4. Cook until the mixture has puffed up and

become golden (approx. 8-10 minutes) and serve immediately.

*If you buy your chives from a supermarket, they will almost certainly come in a bundle about as thick as a finger, held together by a couple of rubber bands. The easiest way to deal with this is to keep the chives in their bundle and snip the chives into tiny pieces with a pair of scissors. Be careful not to include the rubber bands.

Now for the biggest decision of the season, at least as far as the kitchen is concerned: which bird is it to be – chicken, duck, turkey, or goose? The turkey is a fairly recent (and generally pretty tasteless) arrival at our Christmas feasts. Not long ago, the goose was king. I’ve found that ducks are a jolly good alternative; you’re more likely to have not quite enough, rather than too much in the case of turkey, or too much fat in the case of the goose. Chickens are out, since we consume enough of them during the rest of the year. But then there is always the somewhat contrary solution of having all your eggs in one basket, as it were. You could, believe it or not, have a Twelve Bird Roast. Take a deep breath; this colossal solution to your perennial ‘What shall we have for Christmas Dinner?’ question consists of: A turkey stuffed with a goose, stuffed with a chicken, stuffed with a pheasant, stuffed with an Ayelesbury duck, stuffed with a Barbary duck, stuffed with a poussin, stuffed with a guinea fowl, stuffed with a partridge, stuffed with a pigeon, stuffed with a mallard duck, stuffed with a quail! I can think of all sorts of fitting names for this uber-gluttonous construction, but as it’s the season of goodwill, I shall rein myself in. With one bird for each of the 12 days of Christmas, this dish is the True Love Roast. Have a wonderful Christmas. www.sussexliving.com

The first recipe for Brussels Sprouts appeared in Modern Cookery by eliza Acton, published in 1845. In fact, if it hadn’t been for Mrs Beeton, Eliza would be a lot better known today than she is; Mrs Beeton is said to have ‘borrowed’ well over 100 of Eliza’s recipes for her own book. Almost inevitably, there will be tensions and disagreements at Christmas, and often they centre around food preferences. So it might be helpful to know that there’s a genetic explanation as to why some people love Brussels sprouts and others most definitely don’t. Scientists from the Eden Project have a theory that a love or hate of sprouts comes down to your DNA and a particular mutated gene, present in about half of the world’s population, which decides whether or not we will like sprouts. People with the mutation are said not to taste the bitterness of the Brussels sprouts. So, please forgive me if you are genetically unable to enjoy the following recipes.

Food & drink

Brussels Sprouts with Bacon and Chestnuts INGREDIENTS: 1 kg of Brussels sprouts (weight after trimming) 6 or more rashers of smoked streaky bacon, cut into bite-sized pieces 200g of vacuum-packed chestnuts 50g of unsalted butter 1. Bring a large saucepan of salted water to the

boil, add the sprouts and cook for 5 minutes. Drain, then run under the cold tap and drain again.

2. Heat a large frying pan, add the bacon and

gently fry until crisp and golden (approx. 10 minutes). Take the bacon out of the pan, leaving the fat behind.

3. Add the chestnuts and fry them over a high

heat or until they are just coloured (approx. 5 minutes), then tip them onto a plate.

4. Add the sprouts to the frying pan with a

splash of water, then cover the pan and finish cooking, stirring now and again, over a medium heat until the sprouts are just tender (approx. 5 minutes).

5. Uncover the pan, turn up the heat and add most of the butter. Sauté the sprouts for another 2 minutes.

6. Add the bacon and chestnuts, season them

generously with salt and pepper, then serve with the last knob of butter on top.

You could, the day before, or even two days before, par-boil the sprouts, drain and cool them, then chill them in the fridge. You could also fry the bacon and chestnuts in advance and chill them too. On the day, just finish cooking the sprouts and assemble the dish.

INGREDIENTS: 200g Brussels sprouts, trimmed and sliced 500g potatoes, cooked and crushed 1 egg, beaten 50g plain flour 100g finely ground breadcrumbs, seasoned

1. Drop the sprouts into boiling water and blanch for 2-3 minutes. Drain and refresh with cold water. Combine with the potato, mashing them together with a fork. Season well and form the mixture into 12 croquettes.

2. Put the egg in a bowl, the flour on a plate and the

breadcrumbs on a second plate. Dip each croquette into the flour first, to coat, then the egg and lastly the breadcrumbs. Make sure each is fully covered. Chill in the fridge for 30 minutes, or up to 24 hours.

3. To make the dip, combine the tomatoes, coriander,

Worcester sauce and shallot, season and set aside. You can leave the dip chunky or, for kids, blend it smooth.

4. Pour the oil into a large, deep frying pan, to a depth of about 4cm, and put over a medium-high heat. Fry the croquettes until golden all over for a total of 5 minutes – you may need to do this in 2 batches to avoid overcrowding the pan. Drain on kitchen paper and serve immediately with the dip.

of the parsley and season to taste. Whizz until semismooth so it still has some texture.

100ml double cream 1tsp grated nutmeg Small bunch fresh parsley roughly chopped Black pepper

3. Check the seasoning then spoon into a warm

serving dish and scatter with the remaining parsley and a good grind of black pepper.

1. Finely shred the sprouts using a grater, knife or mandolin.

You can also add some diced crisp bacon to this recipe if you like. Also, any leftover sprouts can be use in Bubble & Squeak the next day.

2. In a small bowl combine the oil, balsamic vinegar and lemon zest and season to taste.

3. In a frying pan toast the pumpkin seeds until

browned. In a serving bowl combine the shredded sprouts with the dressing and half the seeds mixing well then scatter over the remaining seeds.

Delicious served with smoked mackerel or a cheesy quiche. Alternatively it makes a great BBQ side dish.

Coaching Inns through Sussex London commuters may grumble about delayed trains and traffic jams on the A23 – but that’s nothing compared with the journey from coast to capital 250 years ago.

Before the Prince Regent made Brighton his playground by the sea, the London to Brighton road was a treacherous, often impassable track. Horace Walpole remarked in 1749 that “if you love good roads, be so kind as to never go into Sussex. Coaches grow there no more than balm or spices” while overturned carriages, snapped poles and injured passengers were commonplace. As the century progressed, a road building boom began and old taverns along the coach roads were spruced up, and new inns were built to cater for rest and refreshment while horses were changed. The new buildings had simple stone fronts and an arched access to an inner courtyard with stables. Mail coaches, introduced in 1784, cut hours from the journey and for the next 80 years, inn owners enjoyed a constant stream of traffic en route to and from the coast. The Sussex Advertiser complained in 1791 that “you are paid no attention to at the inns where you stop, although you pay exorbitantly for refreshment.” The George Hotel in Crawley became a halfway house for coaches bound for the coast. The Prince of Wales’ famous yellow carriage (his barouche) often

occupied the courtyard, while Whig statesman Charles James Fox was a frequent visitor. A great regency gambler called Colonel Mellish used to alight here for a bottle, and all the noted bare-fist fighters of the period used to stay there before their bouts at Crawley Down. As many as 50 coaches a day would change horses at The George and the last postboy was finally paid off in 1887. The names of the coaches conveyed the new found speed made possible by the improved roads. An itinerary of 1821 lists the Meteor, the Royal Eagle, the Eclipse, the Dart, the Rocket and the Tally-ho. Journey times varied from just over five hours to around seven hours to cover the fifty-odd miles, depending on the route taken. East Grinstead was an important stop on the southbound coach road and the Dorset Arms gave rest and recuperation to several famous guests. Prime Minister Spencer Perceval was a frequent visitor before his assassination in the lobby of the House of Commons. Perdita Robinson, society beauty and mistress of the Prince of Wales, would lunch there on her way to Brighton, as did Princess Victoria with her mother, the Duchess of Kent. Perdita apparently never paid her bills; they were eventually settled by the state. Staplefield. Rabbit pies were a house speciality and lunch usually lasted for at least two hours. The Kings Head in Cuckfield was a busy coaching inn that frequently took in injured travellers from the London to Brighton road. In 1819, the Coburg coach overturned at Cuckfield, killing one and injuring several passengers. After changing horses, the leaders started off “in an unruly fashion”, according to an eye witness account, and the coach collided with a waggon. The inn was home to an Act of Parliament clock in the bar, made by Smiths of Cuckfield in 1797, when Parliament imposed a tax of five shillings on every watch and clock. People sold their personal timepieces, relying instead of communal clocks such as this, which always had large, unglazed faces to be easily seen at a distance. The Kings Head had room for 40 pairs of horses and there would have been plenty of work for ostlers, grooms, saddlers, blacksmiths and

chambermaids. By the end of the 18th century, 50 coaches a day were passing through Cuckfield. The High Street must have rung with hoofbeats and coach horns as heavy waggons rumbled down the hill. Children gathered to watch royalty alight from their fine carriages outside the Kings Head. Local clockmaker Edward Bates noted in his diary: “1813 August 26th the Prince of Orange and the Russian Ambassador passed though Cuckfield.” Further diary entries reveal visits by the Prince Regent, Baron Dinsdale (who died at the Kings Head), the Grand Duchess of Oldenburg and the Earl of Fife. When the London bound coaches stopped for a long time at Cuckfield, passengers often walked to Handcross where the publican of the Red Lion would appear, carrying a gallon bottle of gin and a basket of gingerbread. According to Shergold in his Recollections of Brighton in Olden Times, he would announce, “you must be tired, gentlemen. Come! Take a glass and a slice.”

The Friars Oak in Hassocks was a frequent stop for George IV when changing horses en route to London. During one particularly treacherous winter’s evening, he was snowed up there for the night. Keen coaching man James Selby bet that he could drive the Old Thames Coach the 108 miles from Brighton to London and back in eight hours; changing horses at the Oak in under 60 seconds, he won his wager with ten anxious minutes to spare. The Oak, with its long and varied history, was later used by Sir Arthur Conan Doyle, creator of Sherlock Holmes, as the setting for his story Rodney Stone. Smoke on the horizon heralded the end of the coaching days, as railways took over from horse and carriage. Coaching inns had to change with the times and although some closed for good, many still remain, echoing to the sound of traffic and smart phones rather than the clatter of wheel and hoof.
