This is why at SWISS we’re mak­ ing targeted use of all the oppor­ tunities that growing digitalisation offers in every possible field, to pay due and full regard to these changed and changing needs. Be it in the air or on the ground, we work continually on further innovations to make your travel even easier and even more enjoyable.

The foundation of a truly ­memorable travel experience, though, is still our attractive premium ­product. That’s why we’re currently investing some 100 million Swiss francs in modernising our Airbus A340-300 fleet (see pages 108 to 113), to give ourselves a consistent and particularly comfortable cabin product in all three seating classes throughout our long-haul network – with full Internet connectivity aloft, of course, for our digital age.

After studying machine engineering at Zurich’s ETH, Dimitrios ­Antonitsis made a remarkable U-turn in his life. Today, he’s an internationally renowned Athens-based artist whose large-­ format ­aluminium sculptures and jewellery creations were most recently shown in Berlin.

Ingredients:

1 kg Kichererbsen 400 g gepökeltes Schweinefleisch, in Stücke geschnitten 150 ml Olivenöl 500 g Zwiebeln 1 Knoblauchzehe 1 kleiner Kohlkopf 800 g Mangold 400 g Spinat Saft einer Zitrone 1 EL fein gehackter Rosmarin 1 EL fein gehacktes ­Fenchelgrün 1 TL Kümmel Salz und schwarzer Pfeffer

1 kg chickpeas 400 g salty pork, cut in portions 150 ml olive oil 500 g onions 1 garlic clove 1 small cabbage 800 g Swiss chard 400 g spinach Juice from 1 lemon 1 tablespoon of fresh rosemary, finely chopped 1 teaspoon of fennel, finely chopped 1 teaspoon of cumin Salt and black pepper

Preparation Zubereitung 1. Die Kichererbsen mindestens 12 Stunden in kaltem Wasser einweichen. Danach abgiessen, abspülen und in einem Topf mit frischem kaltem Wasser zum ­Kochen bringen. Circa 45 Minuten bei schwacher ­Hitze köcheln lassen, bis sie weich sind, dabei laufend den weis­sen Schaum abschöpfen.

2. In der Zwischenzeit die Zwiebeln und den Knoblauch hacken. Den Kohl zerteilen und waschen, Spinat und Mangold ebenfalls waschen. Die Zwiebeln in einem flachen Topf mit Olivenöl andünsten. Knoblauch, Kümmel und Kohl zufügen und weiterdünsten, bis alles weich ist. Dann die Kichererbsen mit der Kochflüssigkeit zufügen, den Kochtopf abdecken und im Ofen bei 180 Grad für ca. 40 Minuten schmoren.

3. Das gepökelte Schweinefleisch in einer Pfanne sanft anbraten und zu allen weiteren Zutaten in den flachen Topf geben. 10 Minuten weiterköcheln und mit Salz und Pfeffer abschmecken.

1. Soak the chickpeas in cold water for at least 12 hours.

Drain, rinse and place the chickpeas in a pot with fresh water. Bring to the boil. Skim the surface all the time of the cooking. Boil in a low temperature until tender (about 45 minutes).

2. Meanwhile, finely chop the onions and the garlic. Cut the cabbage in large pieces and wash it. Wash the ­spinach and the Swiss chard well. In a flat pot, sauté the onions with the olive oil. Add the garlic, cumin, and cab­ bage and continue cooking until soft. Add the chickpeas with the liquid from the pot. Cover the flat pot and con­ tinue cooking in the oven at 180 degrees centigrade for about 40 minutes.

3. In a pan, sauté the salty pork at very low temperature.

Add all the remaining ingredients in the flat pot and continue cooking for 10 minutes. Season with salt, ­pepper and taste.

Wir sprachen mit dem preisgekrönten Komponisten Howard Shore über die Bedeutung von Musik, ­Natur und Auszeichnungen.

We talked to multipleaward-­winning composer Howard Shore about the ­meaning of music, ­nature and awards.

Howard Shore, Ihre Musik ist sehr unter­ schiedlich. Woher rührt diese Vielfalt?

Ich bin mit einer Gruppe von Freunden aufge­ wachsen, die später Schriftsteller, Regisseure und Schauspieler wurden. Seit jeher fühlte ich mich als Teil eines künstlerischen Ensembles.

Wir machten Drama, wir machten Komödien – durch diesen frühen Bezug zur Theaterarbeit war es für mich als jungen Musiker und ange­ henden Komponisten nur natürlich, mich mit verschiedenen Genres zu beschäftigen.

Howard Shore, the music you have created is very diverse. Where does this diversity come from?

I grew up with a group of friends who became writers, directors and actors. So I always felt I was part of a repertory company. We did drama, we did comedy. Through that foundation in theatre work­ ing as a young musician who became a com­poser, it was natural for me to work with different genres.

Welche Musik hören Sie, wenn Sie alleine sind?

Ich mag Musik dann am liebsten, wenn sie live gespielt wird, und gehe deshalb regelmässig in die Oper. Zwei neue Werke haben mich kürz­ lich be­geistert: Nico Muhlys Oper «Marnie» und Thomas Adès’ neue Oper «The Exterminating Angel» fand ich beide überwältigend. Aufnah­ men höre ich eigentlich nur zu Recherche­ zwecken an. Und da ich mit dem ­Violinvirtuosen Ray Chen am Soundtrack für den neuen Film «The Song of Names» arbeite, hörte ich mir in letzter Zeit viele Violinkonzerte an – beispiels­ weise von Bruch und Dvořák.

What music do you listen to when you are alone?

I enjoy music the most when I listen to it in a live setting. I go to the opera regularly. Two of the pieces that I most enjoyed are new works: Nico Muhly’s opera “Marnie” and also Thomas Adès’ new opera “The Exterminating Angel” – they both excited me. If I’m listening to recordings I usually do that for research. Since I’m working with the virtuoso violinist Ray Chen on a score for a new film called “The Song of Names” I’ve been listening to violin concertos from Bruch and Dvořák.

You live in the countryside.

Does this serene environment inspire you?

Absolutely. I live in a house in the middle of an old for­est which was built around the end of the 19th century. As the house was r­ estored, we also restored the garden that led in to the forest, so we’ve lived in nature for many years. I think, as the house and the gardens im­ proved, my composition also improved. So nature is very important for me. I re­ ceived a lot of inspiration from it and I think my connection to ­Tolkien in creating his world with music was through nature.

Sie leben auf dem Land. Inspi­ riert Sie die ruhige Umgebung?

Absolut. Mein Haus liegt in ei­ nem Wald und wurde Ende des 19. Jahrhunderts erbaut. Als es restauriert wurde, haben wir auch den Garten neu angelegt, der direkt in den Wald führt. Wir leben sozusagen mitten in der Natur und ich denke, mit der Restaurierung von Haus und Garten wurden auch meine Kompositionen ­besser. Die Natur ist sehr wichtig für mich. Ich glaube, sie war auch das Bindeglied zu Tolkien, als ich seine Welt in Musik umgesetzt habe.

Sie verbringen aber auch viel Zeit in New York City. Beeinflussen diese gegensätzlichen Orte Ihre Arbeit?

On the other hand, you also spend time in New York City. Do these contrasting locations influence your work?

Well, I like the access to the city really for the theatre and the opera. But I prefer to write in the quiet ­environment of my studio in a more 19th-century setting.

Howard Shore (born in Toronto in 1946) is one of the great names of film music. He studied at the Berklee College of Music in Boston. With his compositions, he has given films such as “The Lord of the Rings”, “Panic Room”, “The Silence of the Lambs”, and “The Aviator” their very special touch. And as leader of the band on the NBC show “Saturday Night Live”, he also named the Blues Brothers. For his extensive work, Shore has ­received three Oscars, four Grammys and dozens of awards. He lives with his wife Elizabeth Cotnoir on a 19th-century estate about an hour outside of New York City.

An der Stadt schätze ich die Nähe zum Theater und zur Oper. Zum Schreiben bevorzuge ich aber die ruhige Um­ gebung meines Studios im Stil des 19. Jahrhunderts.

Können Sie die Methodik Ihrer Kompositionsarbeit beschreiben?

Die Musik entsteht durch Kontrapunk­ tik und Harmonie. Ich habe die Noten im Kopf und schreibe sie mit Bleistift auf. Später orchestriere ich sie in Tinte.

«Herr der Ringe» ist von Weite und beeindruckenden Landschaften geprägt. In «Panic Room» bringt uns die klaustrophobische Atmosphäre der Verzweiflung nahe. Wie bereiten Sie sich auf die emotionalen ­Anforderungen eines Jobs vor?

Bevor ich begann, für «Herr der Ringe» zu schreiben, habe ich intensiv recher­ chiert. Rund sechs Monate habe ich mich eingelesen, mich mit Tolkiens Welt beschäftigt, die kulturellen Auswirkungen der Bücher zum Zeit­ punkt ihrer Veröffentlichung und die Ein­flüsse, die ihn beim Erschaffen dieser Welt leiteten, untersucht.

Histo­rische Aspekte bei Werken wie diesem interessieren mich. Fast wäh­ rend der ganzen vier Jahre, in denen ich die Musik schrieb und die Aufnahmen machte, war Tolkiens Buch mein ständiger Begleiter. Für David Finchers «Panic Room» sah es ein we­ nig anders aus. Der Film hat keinen his­torischen Bezug. Ich sah mir den Film an und versuchte, Botschaften und Emotionen zu erfassen. Die Musik entstand aus meiner eigenen Vorstel­ lungskraft.

Wie Ihre Musik ist auch die Welt überaus vielfältig. Haben Sie Lieblingsorte?

Oh, ich bin sehr gerne in New York, in der Schweiz und in Frankreich. Durch meine Zusammenarbeit mit Ludwig Wicki, dem Stiftskapellmeister der Hof­ kirche, habe ich geraume Zeit in Luzern verbracht. Wir sind eng befreundet und er hat mir auch die Schönheit der Schweiz nähergebracht.

Face to Face

Can you describe the methods that you use for composing?

The music is created in counterpoint and harmonic sketches. I visualise the music and create the scores with pencil and then orchestrate in ink.

In “Lord of the Rings” we see vastness and impressive landscapes. And in “Panic Room”, the claustrophobic atmosphere makes us feel despair. How do you prepare yourself for the different emotional requirements of a job?

I did a lot of research before sitting down to write anything for “Lord of the Rings”.

I had six months of research for reading and study­ing Tolkien’s world, studying what impact he had on culture when the books were released and the influences that let him create his world. I’m interested in the historical aspect in works like that. Tol­kien’s book was a constant companion dur­ing the almost four years that it took to write and record the piece.

For David Fincher’s “Panic Room” my work was different. It’s not based on historical context, so I watched the film and I tried to capture the subtexts, the emotions. I could visualise the music that I wanted to create in my mind.

Like your music, the world is a very diverse place. Which parts of the world are your favourites?

I love being in New York, Switzerland and France. Because of my connection to the music dir­ector of the Hof Church, Ludwig Wicki, I go to Lu­cerne regularly to work with him. He is a great conduct­or. We have a strong friendship and he introduced me to the beauty of Switzerland.

You have received many awards for your work. Is there a specific one that has the most meaning for you?

I’m grateful for all the acclaim of my work and I love the fact that people listen to it and enjoy it. And I am very grateful for the Oscars and the Grammys and all the musicians that I’ve worked with. But the thing I love most is talking to chil­­­dren and upcoming musicians, finding out that they are interested in my music and want to know how something is

Sie haben zahlreiche Auszeichnungen für Ihr Schaffen erhalten. Gibt es eine, die eine ganz spezielle Bedeutung für Sie hat?

Ich bin dankbar für jede Anerkennung meiner Arbeit und es freut mich, dass Menschen meine Musik hören und geniessen. Und ich bin auch glücklich über die Oscars, die Grammys und über die Zusammenarbeit mit den vielen Musikern. Am meisten aber gefällt mir, von Kindern und Nachwuchsmusikern zu hören, dass sie sich für mein Werk und dessen Entstehung interessieren. Es ist ein grosses Vergnügen, etwas Positives von mir draussen in der Welt zu wissen.

An welchen Projekten arbeiten Sie derzeit?

Wir beenden gerade die Aufnahmen für «The Song of Names» mit dem Violinisten Ray Chen.

Es ist ein hochdramatischer Film, bei dem sich alles um Musik dreht. Dann war da die Messe für Ludwig Wicki in der Hofkirche Luzern.

Und im Mai fand die Premiere eines Gitarrenkonzertes statt, das ich für Miloš – einen brillanten Gitarristen aus Montenegro – geschrieben habe.

What are your latest projects?

I am just finishing the recordings for “The Song of Names” with violinist Ray Chen. It’s a very dramatic film, all based around music. Then there was the Latin Mass for Ludwig Wicki’s choir at­ ­Lucerne’s Hof Church. And actually, there was a prem­iere in May of a new guitar concerto that I wrote for Miloš, a bril­liant classical guitarist from Montenegro.

THE RISE OF THE RHINOPLASTY

One of the most popular cosmetic surgery procedures is the rhinoplasty or, as it is more commonly referred to, the nose job. The procedure, which aims to rectify those facial profiles and nose shapes deemed to be flawed or unattractive, is presently in high demand, particularly amongst younger individuals. But is surgery the only solution? Not necessarily, according to Dr Véronique Emmenegger, Medical Director at Clinic Lémanic.

Q: Dr Emmenegger, what does the procedure entail?

A: The goal of the cosmetic rhinoplasty is to adjust the shape of the nose, thereby helping to achieve a more harmonious appearance. It’s a plastic surgery procedure that involves changing the shape or position of bones and cartilage. Since the nose is the main organ for respiration, it is critically important to seek out a specialist who can perform the procedure without damaging respiratory functions.

Q: The nose is intrinsically linked to one’s character, so why the desire to change it?

A: Many young people today find fault with their nose. Too long, too big, humped, pointy, not upturned enough – the reasons for disliking your nose rapidly accumulate when you’re constantly snapping selfies and comparing yourself to influencers on social networks. But you should keep in mind that your nose often appears bigger or distorted in a selfie! This is why I often advise younger patients to avoid making surgery their first recourse. There are less radical solutions available.

Q: Solutions other than surgery?

A: Yes. Current technology and know-how make it possible to correct certain defects of the nose using injectable and absorbable products. For example, injections are highly effective in filling out hollows and reducing lumps on the nose.

For 20 years, Richter invited guests to the legendary Group 47 writer’s meetings.

His birthplace Bansin honours the literary figure with a museum. Especially worth seeing: the writing room, transported in its entirety from Munich to the Baltic Sea. The Usedom Literature Days have already welcomed Martin Walser here, among others.

He was an eccentric fellow, the painter who built his refuge known as Lüttenort here on the narrowest part of the island.

Around an old railway wagon, he put up several buildings and a beautiful garden. Enjoy a tour of the living rooms and studios, and do not miss the wonderful film about the “Cap’n”, as Niemeyer’s friends called him.

And so in the small bakery next to the windmill you can find not only delicious home-made cakes, but also books on the work of the German-American artist, who explored Usedom by bicycle 100 years ago.

«Höhe schafft Übersicht. Übersicht erleichtert ­Einsicht. Einsicht erzeugt – vielleicht – Rücksicht», so lautete das Credo des kürzlich verstorbenen Flugfotografen Georg Gerster. Mit seiner ­Kamera fing er nicht nur die Landschaften unter sich ein und machte ­deren Schönheit auf eine spezielle Weise sichtbar, sondern er versuchte auch, auf deren Zerstö­ rung durch den Men­ schen hinzuweisen und damit ein Bewusstsein für Nachhaltigkeit zu schaffen. Gersters Werke verbinden Ästhetik mit einer Botschaft und ­haben eine ureigene Aus­ druckskraft. So erinnern die Getreidespeicher ­entlang einer Dorfland­ schaft in Mali an Perlen­ schnüre. Gleichzeitig hat das Bild beim Kampf der Dorfbewohner gegen administrative Willkür zum Fortbestehen der Siedlung beigetragen.

Gerster entwickelte seine Bilder zu Instrumenten der Besinnung – diese Wirkung hält bis heute an.

He used his camera to record the landscapes below him, capturing their beauty, whilst also attempting to draw ­attention to the destruc­ tion wrought by man, and reinforce awareness of the concept of sustain­ ability. ­Gerster’s work combines aesthetic excel­ lence with a message, his images have a force of expression which is all their own. The grain ­silos dotted along a ­village landscape in Mali put one in mind of a string of pearls. But this same image also aided the v­ illagers in their ­battle against adminis­ trative arbitrariness to ensure the settlement’s con­tinued existence.

Gerster used his images as instruments to stimu­ late reflection – their ­impact still endures even today.

Georg Gerster Der Flugbildfotograf (1928 bis 2019) arbeitete zu Beginn seiner Karriere als Redaktor und freier Publizist. 1959 begann Georg Gerster seine Texte mit eigenen Bildern zu verknüpfen. Für seine Luft­ aufnahmen reiste er um die ganze Welt – in 117 Länder, gar bis in die Antarktis. Mit seinen Erlebnissen hätte der Schweizer ganze Bücher füllen können. Seine Flug­ bilder und Texte erschienen in internationalen Publi­ kationen wie «Paris Match», «Time», «Life» oder «Natio­ nal Geographic» und präg­ ten über 20 Jahre lang den optischen Auftritt von ­Swissair. Georg Gerster starb im Februar 2019 im ­Alter von 90 Jahren im ­Kreise seiner Familie. Er war ein Pionier und Meister ­seines Fachs, der mit seinen Werken in einzigar­ tiger Erin­nerung bleibt.

The aerial photographer (1928–2019) began his career as an editor and freelance journalist. In 1959, Georg Gerster began adding his own images to the texts he wrote.

For his aerial photographs, he travelled all over the world – to 117 countries, including Antarctica. Swiss-born ­Gerster could have filled many books with his adven­ tures. His works and texts have appeared in inter­ national publications such as “Paris Match”, “Time”, “Life” and “National Geographic”.

They also shaped the visual image of Swissair for over 20 years. Georg Gerster passed away in February 2019 at the age of 90, surrounded by his family. He was a pioneer and master of his craft and both he and his works will be vividly remembered.

Everything goes together perfectly: the pink house with its lovely terraces beneath old sycamores, the charming equanimity of the service team, the italianità. People greet each other warmly, lingering at tables here and there. This place exudes deep-rooted values. But, to tell the truth, the Grotto della Salute has little in common with a real grotto.

Manche Lokale, und es sind nicht eben viele, geben dem Sprach­ klischee von der «Stadtoase» seine Frische zurück. Die Brasserie ­Obstberg ist ein solches Lokal. Seit 1908 werden dort Gäste willkommen ­geheissen, und die Kiesterrasse ­unter alten Kastanien fühlt sich an Sommer­tagen so stimmig an, dass man ohne Reservation kaum ­einen Platz ergattern kann.

Some restaurants give back its freshness to the “city oasis” cliché.

And the Brasserie Obstberg is one of these rare places. Guests have been welcomed here since 1908, and the gravel terrace beneath old chestnut trees is so perfect on summer days that you can barely get hold of a seat without a reservation.

ie Schweiz ist ein von Brücken ge­ prägtes Land. Denn die abwechs­ lungsreiche Topografie sorgt schon seit frühester Zeit dafür, dass Wege­ bauer immer wieder vor Schluch­ ten, Tälern und Flüssen stehen, die es zu über­ winden gilt. Allein im Nationalstrassennetz sind rund 3000 Brücken eingebaut, im Schienennetz über 8200 und im Netzwerk der Fusswege noch unzählige mehr.

Die ganz grossen und imposanten Brücken, mit denen sich die Schweiz als Pionierin im Brü­ ckenbau etablieren konnte, wurden für Autos und Eisenbahnen gebaut. Zu diesen gehören vielfotografierte Bauten wie das Landwasser­ viadukt bei Filisur oder die Taminabrücke bei Pfäfers. Neben diesen Champions gibt es aber auch zahlreiche Fussgängerbrücken, die für ­allerlei Rekorde sorgen. Bei diesen handelt es sich zu ei­ nem beachtlichen Teil um Hängebrücken, die nicht nur einen Hauch Abenteuer ver­ sprühen, sondern sich auch bestens dazu eignen, steil ein­ geschnittene Täler zu über­ winden, ohne dass massive Pfeiler und andere Konstruk­ tionselemente die Natur be­ einträchtigen.

witzerland is a nation of bridges. Since the earliest days, its varied topography ensured that road builders continually found themselves confronted with canyons, valleys, and rivers that needed to be overcome. Around 3,000 bridges are built into the national road network alone, over 8,200 into the rail system, and countless more into the network of footpaths.

The very large and imposing bridges that helped Switzerland establish itself as a pioneer in bridge construction were designed for cars and railways. These include often-photographed struc­tures such as the Landwasser Viaduct near Filisur and the Tamina Bridge near Pfäfers. And these landmarks have been increasingly joined by pedestrian bridges, which have set all kinds of rec­ords. Many of these works are suspension bridges that not only exude a touch of adventure, but are also ideally suited to overcoming steep valleys without massive pillars or other construction elements that interfere with nature.

Once at the top, hikers are awaited by an impressive panoramic vista.

Take a deep ­breath

die kühle Welt der Gletscher ein, denn der Weg zum spektakulären Cliff Walk führt mitten durch das blaue Eis, in dem eine einzigartige Stimmung herrscht. Hinter der Gletschergrotte ragt eine Aussichtsplattform aus dem Fels ins Leere hinaus.

Dort beginnt der Cliff Walk über einen 500 Meter tiefen Abgrund, von wo der Blick fast nur in die Tiefe schweifen kann.

Immerhin lohnt sich die schwindelerregende Überquerung, denn auf der anderen Seite der Brücke lockt der Sessellift «Gletscherflyer» mit der Möglichkeit, bei einem sanften Gleitflug über den Gletscher wieder zur Ruhe zu kommen.

Für Einsteiger

Gletscheranblicke erwarten auch die Besucher der Triftbrücke bei Gadmen im Berner Oberland. Allerdings in einer laufend grösser werdenden Distanz, denn der Triftgletscher, der noch vor wenigen Jahren als Brücke über das Tal diente, hat sich bis zum gegenüberliegenden Ufer des nahen Triftsees zurückgezogen. Um den Zugang zur Trifthütte auf der anderen ­Talseite wieder zu gewährleisten, wurde 2004 die erste Triftbrücke gebaut, die bald viel zu reden gab. Denn dank ihrer nepalesischen Konstruktion wurde die Hängebrücke rasch zum Touristenmagnet und zog auch schlecht ausgerüstete Alpinisten an, für die sie nicht wirklich geeignet war. Daher wurde die Brücke schon 2009 durch eine stabilere Konstruktion ersetzt, die auch grösseren Besuchergruppen eine risikoarme Begehung ermöglicht.

Heute ist der Besuch der 170 Meter langen Brücke, die 100 Meter über dem blaugrauen Gletschersee das Tal überquert, ein sicheres Spektakel, das keine Wünsche offenlässt. Und dank der Gondelbahn ist sie in einer 90-minütigen Bergwanderung erreichbar, auf der man die Alpenflora bestaunen kann, die hier seit der letzten Eiszeit aufblühen konnte.

Glacier-filled vistas also await visitors to the Trift Bridge near Gadmen in the Bernese Oberland. At an ever-growing ­distance, however, since the Trift Glacier, which served as a bridge over the valley up until just a few years ago, has retreated to the opposite shore of the nearby Trift Lake.

In order to ensure access to the Trift Hut on the other side of the valley, the first Trift Bridge was built in 2004 and soon drew considerable attention. Since, with its Nepalese construction, the suspension bridge quickly became a tourist magnet in addition to attracting poorly equipped mountaineers, for whom it was not designed. The bridge was thus replaced in 2009 by a more stable construction that also enables a lowrisk crossing for larger groups of visitors.

Today a visit to the 170-metre-long bridge, which traverses the valley 100 metres above the blue-grey glacial lake, offers a safe spec­tacle that leaves nothing to be desired.

And, thanks to the gondola, it can be reached after a 90-minute mountain hike, during which you have ample opportunity to admire the alpine flora that has bloomed here since the last ice age.

Nespresso Im Kaffeegürtel – dem geografischen ­Gebiet rund um den Globus, in dem ­Kaffeepflanzen gedeihen – gibt es Gegen­ den, die unter politischen Konflikten, Wirtschaftskrisen oder Umweltkatastro­ phen leiden. Im Rahmen des Nespresso-AAA-Programms für nachhal­ tige Qualität arbeitet der Kaffeepro­duzent eng mit der globalen Non-Profit-Organi­ sation TechnoServe und den lokalen Kaf­ feebauern zusammen, um den Wieder­ aufbau der Kaffeeproduktion in diesen leidgeprüften Regionen zu fördern. Die Investitionen tragen Früchte: Mit den da­ raus entstandenen Single-Origin-Kaffees Tamuka mu Zimbabwe und ­Esperanza de Colombia kann Nespresso Kaffeeliebha­ bern auf der ganzen Welt ein völlig neues Geschmackserlebnis ermöglichen.

A number of places in the coffee belt – the area around the globe in which coffee trees grow – are suffering from political con­ flicts, economic crises and environmental disasters. The department of ­Caquetá in ­Colombia and eastern Z­ imbabwe are two such regions. They used to produce ex­ quisite, rare coffees, but the plants have ­disappeared over the years and are thus ­almost unheard of in the rest of the world.

With its new Reviving Origins Initiative, Nespresso is bringing coffee cultivation back to these regions. As part of its AAA Sustainable Quality Program, ­­Nespresso works with global non-profit organisation TechnoServe and local coffee farmers to help bring back coffee production to these crisis-stricken regions. The investments are bearing fruit: With the single-origin Tamuka mu Zimbabwe and ­Esperanza ­de ­Colombia coffees, ­Nespresso allows coffee lovers across the globe to experience com­ pletely new flavours.

n der Werft Wollishofen herrscht reger Betrieb; das historische Dampfschiff «Stadt Rapperswil» wird für die erste Fahrt der Saison vorbereitet. Mittendrin mit einem wachsamen Auge auf das Geschehen und einem anerkennenden Wort für jedes Crewmitglied steht Chefkapitän Pascal Wieders. Wir begleiten ihn heute auf der grossen Rundfahrt über den ganzen See von Zürich nach Rapperswil und wieder zurück. Wieders sieht nicht aus, wie man sich einen typischen Seemann vorstellt, doch sobald er zu erzählen beginnt, merkt man, dass er mit Leib und Seele Schiffskapitän ist. Er teilt seine Begeisterung für die Schifffahrt gerne und erzählt mit Enthusiasmus von seinem Beruf auf dem Wasser, der im Binnenland Schweiz doch eher exotisch ist.

Auf einem Schiffsrundgang gehen wir über das Deck, wo ­gerade die Festbeflaggung zur Feier des Tages angebracht wird, und erklimmen den Steuerstand über eine steile Leiter.

Das schöne hölzerne Steuerrad in der alten Kabine sei tatsächlich nur noch Dekoration, ­erklärt Wieders. «Die Dampfmaschine wird aus dem Maschinenraum heraus gesteuert.

Deshalb ist das Sprachrohr hier extrem wichtig.» Er zeigt auf ein glänzendes Rohr, das an ein Blechblasinstrument erinnert und oben offen ist. «Über dieses Rohr findet die ganze Kommunikation statt: Ich rufe meine Kommandos in den Maschinenraum runter, und die Maschinisten führen sie aus, ohne nach draussen zu sehen. Da muss man einander wirklich gut kennen und ein eingespieltes Team sein! Ich bin sozusagen die Augen, und der ­Maschinist die Hände.»

Bevor wir in See stechen, trommelt Wieders die gesamte Mannschaft für ein kurzes Briefing zusammen, um die wichtigsten Punkte durchzugehen. Dann begibt sich jeder auf seinen Posten, er selbst steigt wieder hoch in den Steuerstand. «Bereit?!», ruft er übers Sprachrohr in den Maschinenraum runter und holt auch das Okay der Heckwache ein. «Zurück!», gibt er schliesslich das Kommando – die Maschine setzt sich langsam in Bewegung und wir fahren in den noch etwas grauen Vormittag hinaus. Ein Lächeln macht sich auf Wieders Gesicht breit: «Das ist der schönste Moment des Tages!» Mit ­einem engen Turn geht’s aus der Werft hinaus

he shipyard in Wollishofen is bustling with activity; the historic steamboat “Stadt Rapperswil” is being prepared for the first trip of the season. In the middle of it all, with a watchful eye on the action and a word of appreciation for each crew member, stands head captain Pascal ­Wieders. We accompany him today on the journey across the entire lake, from Zurich to Rapperswil and back again. Wieders doesn’t look the part of your typ­ical sailor, but the moment he starts talk­ ing, it is clear that he is a ship’s captain with heart and soul. He enjoys sharing his passion for seafar­ ing as he speaks enthusiastically about his job on the water – a rather exotic one here in landlocked Switzerland.

As part of a boat tour, we cross the deck where the flags are being raised to celebrate the day, then climb up to the helm via a steep ladder. ­Today, the beautiful wooden wheel in the old cabin is actually just a decor­ ation, as Wieders e­ xplains. “The steam engine is controlled from the ­engine room. That’s why the voice pipe is extremely import­ ant.” He points to a shiny pipe, somewhat reminiscent of a brass instrument and open at the top.

“The entire communication happens through this. I shout my commands down into the engine room, and the en­gineers e­ xecute them without looking outside. You’ve got to know each other r­ eally well and be a well-coordinated team! I am the eyes, the engineer is the hands.”

Before we pull out to sea, Wieders gathers the entire crew for a short briefing and goes over the main points. Then everyone proceeds to their posts as he himself climbs back up to the helm.

“Ready?!” he calls down through the voice pipe into the engine room, and gets the okay from the after lookout. “Back!” he finally gives the com­ mand – the vessel slowly starts moving and we set out into the still-grey morning. A smile spreads across Wieders’ face: “This is the best moment of the day!” With a forceful turn, the vessel leaves the shipyard and we begin riding swiftly towards Zurich. “We’ll be making a starboard landing at Bürkliplatz,” explains Wieders. Upon arriving, we are greeted by the waiting crowd consisting of loyal fans and Sunday trippers. Wieders smiles and raises his hand in greeting. The sailors moor the ropes and the passengers board. The journey continues along the beautiful lake shore. A fresh,

und wir fahren zügig Richtung Zürich. «Wir machen eine Steuerbordlandung am Bürkli­ platz», erklärt Wieders. Dort werden wir von ei­ ner wartenden Menschenmenge begrüsst; treue Fans und Sonntagsausflügler. Wieders lächelt und hebt grüssend die Hand. Die Matrosen ver­ täuen die Seile und die Passagiere steigen ein.

Weiter geht die Fahrt dem schönen Seeufer ent­ lang. Es weht ein noch frühlingshaft frischer Wind. Wir legen regelmässig am Ufer an und es steigen Passagiere zu. Jede Anlegestelle ist ­anders von Wind, Strömungen und allfälligen Untiefen her. «Das Manövrieren eines Dampfers mit dem Seitenradantrieb ist äusserst an­ spruchsvoll. Es gibt ein einziges Ruderblatt hin­ ten am Heck und wenn wir zu langsam sind, ist das Schiff nicht mehr manövrierfähig! Am Steg anlegen ist deshalb so schwierig, weil man mit hoher Geschwindigkeit darauf zufahren muss!

Ein Motorschiff etwa könnte man bei dieser ­Geschwindigkeit nicht mehr abbremsen! Das

“With its side-wheel propulsion, manoeuvring a steamer is extremely demanding. There’s a single rudder blade on the stern in the rear, and if we’re too slow, the ship is no longer manoeuvrable! The reason it’s so difficult to moor at the dock is that you have to ride towards it at high speed! This ­demands a lot of effort in the beginning. If it were a motor boat, you couldn’t slow down on time at that speed! This requires gut feeling and finesse, along with mental strength. The old captains ­always said in training: During your first years, the ship steers you – and eventually at some point, you begin to steer the ship!” No wonder training as a steamboat captain is the culmination of a captain’s career. It is only possible to undergo this training after a full 20 years of professional ex­peri­ence. Wieders began his career at the Lake ­Zurich Navigation Company (ZSG) 28 years ago

braucht Bauch- und Feingefühl … und mentale Stärke. Die alten Kapitäne sagten stets in der Ausbildung: In den ersten Jahren fährt das Schiff mit dir, erst nach einigen Jahren Erfahrung beginnst du richtig, das Schiff zu fahren.»

Kein Wunder, ist die Ausbildung zum Dampfschiffkapitän die Krönung einer Kapitänskarriere. Erst nach sage und schreibe 20 Jahren Berufserfahrung kann man diese Ausbildung machen. Wieders begann seine Karriere bei der Zürichsee-Schifffahrtsgesellschaft (ZSG) vor 28 Jahren als Matrose und arbeitete sich zum Kapitän hoch, von den kleineren zu den grossen Schiffen. Seit 2013 ist er Dampfschiffkapitän und seit 2016 Chefkapitän auf dem Zürichsee.

Noch heute fährt er alle Schiffe der ZSG bis zum kleinen Limmatboot. Aber auf dem Dampfschiff herrsche schon eine spezielle Atmosphäre, meint er. «Man ist aufeinander angewiesen und es ist eine besondere Zusammenarbeit. Einen Dampfer fahren ist noch richtiges Handwerk, Nautik pur!»

Endlich statten wir auch dem Maschinenraum, dem Herzstück des Dampfers, einen Besuch ab. Heiss ist es dort unten und laut wegen der arbeitenden Maschinen. Die beiden Maschinisten sind wahre Meister ihres Fachs. Sie kennen jede Schraube der Dampfmaschine, denn den Winter über arbeiten sie in der Werft an der Wartung der Maschine und führen die nötigen Reparaturen selbst aus.

Auch für Verpflegung ist auf dem Schiff ­bestens gesorgt: Oben im Restaurant werden frischer Salat und Fischknusperli serviert.

Nach dem Kaffee steigen wir wieder hoch in den Steuerstand. Den Blick immer aufmerksam aufs Wasser gerichtet, um Hindernisse frühzeitig zu erkennen, erzählt Wieders Anekdoten aus seinem Berufsalltag und teilt sein Wissen mit uns. Die Zeit vergeht wie im Flug – und trotzdem fühlt man sich tiefenentspannt, wenn man Stunden später wieder in Zürich ­ankommt – als wäre man weit weg gewesen.

as a sailor and worked his way up to the position of captain, from the smaller to the big ships. Since 2013, he has been a steamboat captain, and, since 2016, head captain on Lake Zurich. Even today he drives all of the ZSG’s ships, down to the diminu­ tive Limmat boat. But the steamboat truly has a special atmosphere, he says. “You depend on each other and it’s a special kind of collaboration.

Navigating a steamer is still very much a real craft, an authentic nautical experience!”

Finally, we also pay a visit to the engine room, the heart of the steamer. It’s hot down there, and noisy from the working machines. The two engin­ eers are true masters of their trade. They know each and every screw of the steam engine, since they spend the winter in the shipyard taking care of the main­tenance of the engine and carrying out the necessary repairs themselves.

Meals are also well provided for here on the ship; the restaurant located on the top serves up fresh salad and fish strips. ­After a coffee, we climb back up to the helm. ­Always keeping an eye on the water in order to spot obstacles well beforehand, Wieders tells a­ necdotes about his day-to-day pro­ fessional life while sharing his knowledge with us. Time flies by, and at the same time, when you arrive back in Zurich hours later, you feel deeply relaxed – as if you had just returned from far away.

Heute ist Pascal Wieders Chef­ kapitän auf dem Zürich­see und verant­ wortet die Ausbildung und Prüfung der Kapi­ täne. 95 Prozent der anfallenden Arbeiten an den Schiffen, von Instandhaltung bis hin zu Umbauten, werden von den eigenen Leu­ ten gemacht, die im Winter die Uniform ge­ gen ein Arbeitsgewand tauschen. Das ganze technische Wissen wird betriebsintern weiter­ gegeben. Jüngere lernen von einem Paten, der sie durch die Ausbil­ dung begleitet.

Today, Pascal Wieders is head captain on Lake Zurich and is respon­ sible for the training and examination of cap­ tains. Ninety-five per cent of the work on the ships, from mainten­ ance to renovations, is done by the com­pany’s own staff, who exchange their uniforms for work­ ing clothes in the winter.

All technical knowledge is passed on within the company. Younger staff members learn from a mentor who accom­ panies them through their training.

Am 25. Juni 1919 hob die Junkers F 13 zum Erstflug ab und revolutionierte weltweit die Verkehrsluftfahrt. Mitte der 1920er Jahre wurden bis zu 40 % des Weltluftverkehrs von Junkers Flugzeugen bedient. Auch die SWISS Vorgängerin Ad Astra Aero nutzte die Junkers F13 in ihrer Flotte.

Einhundert Jahre nach seinem Erstflug wird das erste Ganzmetall-Verkehrsflugzeug der Welt wieder detailgetreu von Meisterhand in Serie gebaut.

On 25 June 1919, the Junkers F 13 took off for its maiden flight and revolutionised commercial aviation. In the mid-1920s up to 40% of the world commercial air traffic was operated by Junkers aircraft. SWISS, the predecessor of Ad Astra Aero, also used the Junkers F13 in its fleet.

One hundred years later, the first all-metal airplane in the world is being manufactured by skilled craftsmen in complete compliance with the original design details.

SWISS verfügt über eine der modernsten Flotten in Europa.

Das Durchschnittsalter aller ­Flugzeuge beträgt gerade mal ­ 9,5 Jahre. Auf der Langstrecke haben zehn Boeing 777 mit einem neuen Kabinenprodukt in den ­vergangenen drei Jahren grossteils die Airbus A340-300 ­ ab­­gelöst. Die fünf in der Flotte ­verbliebenen Maschinen werden derzeit in den Elbe Flugzeug­ werken in Dresden umgerüstet und modernisiert.

SWISS operates one of Europe’s most advanced aircraft fleets, with an average aircraft age of just 9.5 years. On its long-haul network, the ten Boeing 777s with their new cabin product have largely ­replaced its Airbus A340-300 fleet over the past three years. The five A340-300s that remain in service are now being equipped with totally new and modernised cabins.

The work is being performed at Elbe Flugzeugwerke in Dresden, Germany.

Ein solcher Umbau dauert in der Regel fünf bis sechs Wochen pro Flugzeug und ist ein kom­ plexes Zusammenspiel verschiedener Akteure, die an einem solchen Projekt beteiligt sind. Von Seiten SWISS arbeiten bis zu acht Personen vor Ort in Dresden, wo die Flugzeuge umgebaut werden. Sie sind vor allem mit der Koordination und dem Projektmanagement, der Überwa­ chung des Einbaufortschritts vor Ort und der Behebung auftretender Probleme beschäftigt. Von Seiten der Elbe Flugzeugwerke sind rund 100 Spezialisten vom Flugzeugmechaniker über den Elektroniker bis hin zum Kabinen­ interieur-Spezialisten an diesem Umbau betei­ ligt. Hinzu kommen noch Fachleute von Airbus,

A cabin refurbishment of this kind takes five to six weeks per aircraft. It’s a complex interplay involving various participants. From the SWISS side, up to eight personnel have been temporarily transferred to Dresden, where the work is being carried out. These people are largely responsible for the project’s management and coordination, for monitoring progress and for helping to rectify any problems that arise. Elbe Flugzeugwerke has around 100 employees assigned to the programme, from aircraft engineers and electronics technicians through to cabin interior specialists.

A340 Cabin Refurbishment Bevor die neuen Sitze in allen drei Klassen eingebaut werden können, müssen im leergeräumten Flugzeugrumpf die elektrischen Leitungen und weitere technische Installationen erneuert werden.

Sitzhersteller und Inflight-Entertainment-­ System/Connectivity. Gearbeitet wird rund um die Uhr, oft in drei Schichten und am Wochen­ ende, um den straffen Umbauzeitplan einhalten zu können.

Der Umbau erfolgt in verschiedenen Arbeitsschritten, die präzise aufeinander abgestimmt sind. Als Erstes wird die Maschine komplett ausgeräumt. Das heisst, alle alten Sitze werden abgeschraubt, die Galleys (Bordküchen) und Toiletten ausgebaut, Gepäckfächer entfernt und auch die gesamte Innenverkleidung demontiert.

The work is performed around the clock, often in three shifts and on weekends, to ensure that the tight timetable is observed.

The refurbishment is conducted in a series of work phases that are closely coordinated. The first step is to gut the aircraft completely: All the seats, galleys and toilets are removed, along with the baggage bins and the internal panelling.

Parallel zu den Elektroarbeiten in der Kabine wird im grossen Flugzeughangar das neue Kabinenmobiliar bereitgestellt und zum Teil, beispielsweise die FirstClass-Sitze, vor Ort fertig zusammen­ gebaut. Ist die Verkabelung im Inneren des Flugzeugs abgeschlossen und getestet, erfolgt der Einbau der neuen Sitze, Galleys und Toiletten. Auch die Decken- und die Seitenverkleidungen sowie die Teppiche werden wieder ­montiert beziehungsweise verlegt.

Bevor der A340-300 jedoch mit dem neuen Interieur wieder in den Liniendienst zurückkehrt, führen SWISS ­Piloten gemeinsam mit den Ingenieuren einen Testflug durch, bei dem die neue Inneneinrichtung bei normalen und auch extremen Flugbedingungen auf ihre einwandfreie Tauglichkeit ­überprüft wird. In den Umbau der fünf Flugzeuge investiert SWISS rund 100 Millionen Franken.

and ventilation ducts and all the elec­ trical wiring above the ceiling, beneath the floor and along the sides. And the second step is then to replace all this, a process that entails laying twelve kilometres of new cables.

While this electrical work is proceeding on board, the new cabin furnishings are readied in the large aircraft hangar.

Some of these – such as the First Class seats – are so voluminous that they have to be assembled on-site. Once all the new wiring has been laid and tested, work can begin on installing the new seats, galleys and toilets. The ceiling and wall panelling are also refitted, and the cabin floor carpets are laid. There’s one more task, though, before the newly ­refurbished A340-300 can return to SWISS service. This is a test flight during which the new cabin interior is put fully through its paces in both normal and extreme flying conditions to ensure that everything works faultlessly. SWISS is investing some 100 million Swiss francs in the cabin refurbishment of its five-aircraft Airbus A340-300 fleet.

Christoph, das Umbauprojekt gehört zu den komplexeren Projekten der vergangenen Jahre bei SWISS. Wann ist es gestartet?

Im Sommer 2016 haben wir mit den Projektierungs- und Planungsarbeiten begonnen. Ich selber bin im Februar 2017 zum Projekt gestossen. Im Dezember 2018 begann man dann mit dem Umbau der ersten Maschine.

Welches sind die grössten Herausforderungen eines solchen Umbaus?

Eigentlich alles. (lacht) Airlines möchten die Kabine nach ihren eigenen Vorstellungen gestalten. Das geht von der Anordnung der Sitze über die Sitze selbst und die Küchen bis hin zur Farbe der Vorhänge und der Abdeckungen. Das hat zur Folge, dass die Entwicklung der einzelnen Bestandteile – wie eben zum Beispiel eines ­Sitzes – sehr viel Zeit beansprucht. Es gibt kein einziges Element in der Kabine, das wir nicht in irgendeiner Form anfassen, ausbauen, verschieben oder ersetzen.

Vor Inbetriebnahme werden umfangreiche Tests durchgeführt. Wie sehen diese aus?

Einerseits werden die Sitze auf ihre verschiedenen Funktionen geprüft. Dann werden alle

v­ orhandenen Materialkombinationen einem ­Brandtest unterzogen. Im Anschluss folgen umfangreiche Belastungstests mit Kraft­ einwirkungen von allen Seiten. Und zum Schluss wird – wie bei einem Auto-Crashtest – eine ­Sitzkombination sprichwörtlich «an die Wand gefahren», um zu prüfen, ob alle eingebauten Elemente fix an ihrem Platz bleiben. Nach dem Einbau im Flugzeug werden nochmals alle Funktionen geprüft, um sicherzustellen, dass alles wie gewünscht umgesetzt wurde.

Warum werden die Flugzeuge in Dresden umgebaut?

Ursprünglich war geplant, die Arbeiten bei ­Sabena Technics in Bordeaux vornehmen zu lassen. Aufgrund von Lieferverzögerungen, hauptsächlich für die Sitze der First Class, waren wir kurzfristig gezwungen, einen anderen ­Partner zu suchen. Die Elbe Flugzeugwerke in Dresden konnten uns glücklicherweise die ­erforderlichen Kapazitäten anbieten. Ein vorteil­ hafter Nebeneffekt: SWISS fliegt zweimal täglich direkt nach Dresden, was uns bei der komplexen Materiallogistik deutlich hilft.

Christoph, this must be one of SWISS’s more complex projects of the past few years.

When has it started?

We began with the project’s definition and planning in summer 2016. I joined the project team in February 2017. And the work on refurbishing our first aircraft started last December.

What would you say are the biggest challenges in a refurbishment like this?

Pretty much everything! (laughs) Every airline has its own preferences for its aircraft cabin design, from the seat configuration to the seats themselves, the galleys and the colours of the curtains and the wall panels. This means that it takes a very long time to develop each individual element – like a seat, for example. And with our A340-300 project, there hasn’t been a single cabin item that we haven’t touched, changed, moved or replaced.

Each refurbished aircraft is subjected to a series of comprehensive tests before it’s returned to service. What do these involve?

All the new seats have all their functions tested.

And then all the combinations of materials that we’ve used on them are subjected to a fire test. After that come the loading tests, where the seat is exposed to sizeable forces from ­various angles. And finally, just like a car crash test, we take a set of seats and “run it into a wall” to ensure that all the elements which are built into it remain in place. Once they’ve been installed on the aircraft, all the seats are then tested again to make sure that they’re fully ­functioning exactly as they should be.

Why is all this work being done in Dresden?

We had originally planned to have these ­refurbishments performed at Sabena Technics in Bordeaux. But then, owing to delivery delays – primarily of our new First Class seats – we had to find a new partner for this work at short notice.

Fortunately, Elbe Flugzeugwerke of Dresden was able to offer us the capacities we needed.

And our choice of Dresden also has the added ad­­vantage that it’s served by two SWISS flights a day, which has been a great help to us, given the complex materials logistics involved.
