LONGER HOURS OF sunlight beckon unhurried strolls through many of the most spectacular landscapes our region has to offer. Bring your mask and consider visiting one or all of the following venues in April. Enjoying the outdoors is a treasure not to be missed. Covington Garden Club’s Annual Flower Show, “Happiness is Homemade,” Apr 8, 1-3 pm at Bogue Falaya Hall, 317 N. Jefferson Avenue in Covington. Be inspired by the creative competition of horticultural exhibitions emphasizing flowers and other plant material. Always a beautiful show, it is truly an opportunity to learn more about plants and art! Free and open to the public.

Longue Vue House and Gardens, located at 7 Bamboo Road in New Orleans, has several events sure to delight: April 1 – Louisiana Iris Day. Co-hosting with the Greater New Orleans Iris Society, Free! April 4 – Easter Sunday. 1-5 pm, gardens will be open and picnics are highly encouraged, Free! April 24 – Kentucky Derby Fascinator Workshop, Saturday 10-11:30 am. Nothing is too extravagant when fashioning the perfect headpiece with live plant material.

Northlake Nature Center, located on Highway 190, is east of Mandeville on beautiful Bayou Castine. This non-profit corporation has 400 acres and 8 miles of biking and hiking trails, including a canoe launch. Maintenance and program development is conducted mostly by volunteers with some costs defrayed by membership fees. View native plants, including several varieties of Louisiana irises, in their natural habitat. Spot several bird species during their migration north from Mexico and South America is possible. Free!

Fontainebleau State Park, located on Hwy 190 in Mandeville includes 2,800 acres bordered by Lake Pontchartrain, Bayou Cane, and Bayou Castine. See how many native plants and wildlife you can spot on a 1.25 mile nature trail. Or for a longer walk, try the 4.8 mile hiking trail. Picnic under moss-covered oaks and cypress or on a sandy beach. Gates open daily 6 am-9 pm. Admission is $3; free for seniors age 62 and older, and children age 3 and under.

"Hats Off " To Token of Love!

Star Rooney — Founder & Executive Director I am a wife and mother of five children and currently foster a six year old. I was born in New Orleans and moved to the Northshore in 2001. I have an extensive background in business, advocacy, compassion and fundraising. I’m the founder and Executive Director of Token of Love Foundation since 2013 — a nonprofit 501(c)3 that helps women who are hurting. My level of empathy for these precious women comes from a real place of pain in my past. I spearhead Token of Love Foundation initiatives, direct all fundraising efforts and oversee the "New Life Program" while walking alongside these women. I’m a successful real estate broker on the Northshore with services extending to Greater New Orleans. My passion for humanitarian causes has propelled my work with the Token of Love Foundation. Once I became a Christian and found my healing through Jesus, I vowed to give back to women in my community.

Melissa Cavalier — Texas Regional Director I came to Token of Love Foundation in 2017 and served as the Foundation's Education and Workforce Development Director. I lead initiatives to ensure at-risk women in our local communities received access to job force training programs and educational scholarships to further their vocational advancement after coming out of recovery. From 2018-2020 I served as the Foundation's Executive Director and oversaw operations, all fundraising and event planning. However, in true 2020 fashion, I was relocated to Dallas, Texas in July for my husband's job. But when life gives you lemons, you make lemonade, and the decision was made to expand Token of Love Foundation to Texas. I now serve as the Texas Regional Director. In partnership with the Dallas Dream Center, Token of Love Foundation will now be able to expand its mission of helping women realize their purpose after abuse and addiction.

Cox Williams was dating her high school sweetheart and studying speech therapy at USL in Lafayette (now ULL). Deep down, though, she felt the need to seek something more. Now, from her well-appointed,

Slidell law office, Angela recalls those uncertain times. “I struggled to split $200 in rent, went without air conditioning and heard things scurrying in my apartment’s attic. A friend suggested joining the military to help with finances.” In May of 1993, Angela joined the Louisiana Army National Guard and was placed in a JAG unit based on an aptitude test. Alone with just $20 in her pocket, she flew to Fort Jackson, South Carolina for basic training. “All divisions, male and female trained together back then. We endured strict routines, 4:30 am wake-up calls and long days of survival training. It was physically and emotionally challenging but probably the most intense and formative period in my life.”

ANGELA COX WILLIAMS switched her major to political science after gaining legal experience while working in her National Guard JAG unit during college. She recalls, “I thought I’d work in the legal field but wasn’t sure about law school.” When the Army suggested court reporting school, she seized the opportunity and drove to Fort Polk for the typing exam. “It was April 19, 1995 and I arrived to chaos - alarms going off, people huddled around TVs.” It was the day of the Oklahoma City bombing and 26 years later, remembering those events still brings the family advocate to tears. “I can still see that fireman handing the limp child to his mother.” I failed the test that day. Shortly thereafter, one of Angela’s superior officers suggested she take the LSAT. A solid score gave her the confidence to follow her strengths. While attending LSU Law School, Angela married Kevin, whom she’d known growing up in Slidell and who later became a neighbor in her humble college apartment complex. They moved back to Slidell in 2000 where she opened her law practice and sought to grow a family. “Then the next challenge presented itself,” the counselor matter-of-factly recalls. “We struggled with fertility problems, but through the grace of God and medical technology, I was able to have three sons.” As evidenced by the myriad of family photos adorning her office, Angela beams, “They are the greatest blessings of my life!” Although Angela and Kevin divorced after 13 years of marriage, the commitment to amicably raise their sons, Jude, 17, and Jonah, 15, is strong. Both families live in the same neighborhood, as does Angela’s father. “Throughout my career, I’ve been drawn to family law. The key is finding a compromise both sides can live with. Regarding co-parenting, I try to practice what I preach and keep our top priority the well-being and best interest of our boys. Going through my own divorce gave me a greater appreciation of the process. It’s a stressful, emotional, life-altering experience. I’ve changed things in my practice since then. Becoming financially fit can be accomplished with just a little time and minimal effort; no burpees needed. According to the College for Financial Planning, the first two steps of the Financial Planning Process are to (1) Establish Financial Goals and Objectives, and (2) Gather Data. Whether the goal is saving for travel, purchasing a new home, or putting away for retirement, a trusted source for financial advice who can act as an accountability partner is essential. You wouldn’t go from the sofa to a marathon on your own or in one day; nor should you go it alone on your financial security. STPPS Students Named State Student of the Year Finalists Mandeville High senior Raedan Stephens and Madisonville Junior High eighth grader Zoë Dieringer have been selected as finalists in the state’s 2021 Students of the Year competition. “We are extremely proud of these students, and we are excited to have them represent St. Tammany at the state competition,” said Superintendent Frank Jabbia. “Raedan and Zoë are leaders in their respective schools and are well-rounded teens who give back to their communities.”

Raedan Stephens is a well-rounded student with an impressive 4.6 GPA in rigorous honors, gifted and AP, and scored a perfect 36 on the ACT. He is a leader on campus and has been elected class president for the past three years, founded the Economics Club, and represented his school on the Superintendent’s Student Advisory Panel. Extracurricular activities include woodworking, piano, horseback riding, archery, violin, and volunteering with Northshore Humane Society and his church. He was selected Louisiana Youth Advisory Council representative, named National Merit Semifinalist and AP Scholar with Distinction, attended the Louisiana Literary Rally multiple times, and earned several industrybased certifications. He interns at a cybersecurity firm and co-owns a sustainably sourced wooden watch company. He plans to triple-major in neuroscience, computer science, and biomedical engineering with hopes to start a biotech company that will research and develop devices that interface with the brain to treat various diseases.

A two-time district-level Student of the Year, Zoë Dieringer has maintained a perfect 4.0 GPA while pursuing her many passions: dance, theatre, flute, piano, writing, swimming and volunteering. At Madisonville Junior High, she has participated in the student council, Eagle Buddies, band and talented theater. She is a competitive dancer and has participated in the Youth American Grand Prix, Universal Ballet Competition, and American Dance Competition International Ballet Competition. She also gives back to the community as a volunteer with the Northshore Humane Society. She was the 2017-2018 STPPS "Elementary Student of the Year" and went on to win the state competition. Her aspirations are to continue to journey the road less traveled, attend Harvard University and major in genetics while participating in the Harvard Ballet Company.

PREPARE PHYLLO CRISPS

1-1/2 cups orange juice

5 sheets phyllo, defrosted

1/2 cup water

4 eggs

1-1/2 cups sugar

1/2 cup sugar

Preheat oven to 250 degrees. Place five sheets of phyllo dough on a pan next to each other in the oven and heat for about an hour until crisp. Turn them over half way through baking time. Remove from oven and break the phyllo into small pieces. Set aside.

1 cup extra virgin olive oil 2 teaspoons vanilla extract 7-1/2 ounces yogurt 2 teaspoons baking powder

PREPARE SYRUP MIXTURE In a small sauce pan, mix the orange juice, water, 1-1/2 cups sugar and the cinnamon stick. Bring to a boil, then lower the heat and simmer for 7 minutes Set aside to cool.

NOTE: Let the cake rest for 2-3 hours in the refrigerator before serving. Cut in squares, garish with a thin orange slice and drizzle the saved syrup before serving.

In a large bowl, add eggs, sugar, olive oil and vanilla. Beat until frothy. In a smaller bowl, mix yogurt and baking powder. Set aside for 2 - 3 minutes. Add the yogurt to egg mixture and slowly fold it in. Add the orange zest and the crumbled phyllo gradually, gently mixing. Increase the oven temperature to 350 degrees. Pour the mixture into a greased 9” x 13” casserole dish and even it out using a spatula. Bake for 35 - 40 minutes until the surface is a dark golden color. Remove from the oven and make a few slits with a knife. Then immediately slowly drizzle the syrup using a large spoon. Save about 2 tablespoons of the syrup.

1 tablespoon sugar 8 fresh mint leaves 1 teaspoon matcha green tea powder 3 lime wedges 1-1/2 ounces white rum 8 ounces seltzer water

Combine tequila, lemon juice, pink grapefruit juice, agave nectar and Maraschino liqueur in shaker. Shake vigorously for 30 seconds. Strain into a rocks glass filled with ice. Garnish with a sprig of rosemary.

In a tumbler glass, add sugar, mint leaves, matcha green tea powder and juice from limes. Muddle ingredients. Add rum and stir until matcha powder is dissolved. Fill glass with ice and top with seltzer water. Garnish with mint sprig.

Fill a cocktail shaker with ice. Add lemon juice, simple syrup and rum and shake until cold. Fill a highball glass with ice, then strain in the liquid. Top off with soda water. Garnish with mint leaves and lemon slice.

Cut the kumquats in half. Add kumquats, vodka and simple syrup to a shaker and muddle. Add crushed ice and shake. Pour into a sugar-rimmed martini glass. Float orange liqueur on top and garnish with kumquat slices. Sophisticated Woman | April 2021 27
