Wayne Songy Sr. has been an icon of the New Orleans real estate scene for decades. He served as Executive Vice President for Wagner & Truax/Better Homes & Gardens where he built his knowledge in rental and property management, and was in charge of as many as 450 agents within the company. When that company was sold, Wayne Sr. began his own company, Wayne Songy and Associates, to continue helping people achieve their dreams. Wayne Sr. continued his education through the GRI (Graduate Realtors® Institute), CRB (Certified Residential Broker), and CAM (Certified Apartment Manager. During his career, Wayne Sr. also served as President of the Jefferson Board of Realtors®, District President of the Arkansas/LA District Exchange Clubs and President of the New Orleans Real Estate Investors Association. After 20 years of teaching, Wayne Songy Jr. followed his own dream and began working along his father at the family real estate company. ayne and Stephanie Songy are quite a team. They met at UNO, married in 1992, and started their life in Slidell as teachers and coaches at a private school while beginning their family. They became involved in the community through church and local sports with their three children, Hayden, Abby, and Grace. All three children attended Slidell High School, with their son and oldest daughter both graduating from Southeastern and the youngest currently attending Southeastern majoring in Social Media Marketing. Wayne and Stephanie are very proud of their children and their growing families, and anxiously await the arrival of their first grandchild this summer. They both love the business and get the most joy from helping clients, especially former students and their families, achieve their real estate goals. The ACA from Kimberly educates camp owners and directors in health and safety for both staff and campers as well as program quality. It then accredits camps that meet the ACA’s standards.

By Kimberly Blaker Whether you’re looking for enrichment for your child, a way to keep them occupied and supervised while you work, or a short reprieve from parenting, there’s sure to be a summer camp that’s the right fit. Even with COVID concerns, summer camps will either offer alternative programs or follow safety protocols to reduce the risk to campers and staff. THE BENEFITS OF SUMMER CAMP Many kids are thrilled with the idea of going away to summer camp. Still, for some kids, particularly those who are shy, introverted, or homebodies, the thought of going away for a night, let alone a week or more, can cause considerable anxiety. When kids are adamantly opposed, forcing summer camp on them may not be in their best interest. But for kids who are eager – or at least willing to give it a shot – summer camp offers opportunities kids may not have elsewhere. Summer camp provides kids the following benefits: fostering independence, developing new friendships and new skills, discovering new interests, hobbies, creative expression, a break from being pluggedin, daily exercise, improving self-esteem, teaching teamwork, offering community and reducing summer learning loss. GETTING STARTED IN YOUR SEARCH Create a list of your considerations including: budget, purpose, day or

NEXT STEPS TO FINDING THE PERFECT SUMMER CAMP Once you’ve selected a few summer camps that meet your primary criteria, and that fit your child’s interests, share the choices with your child to see what excites him or her. Be sure to let your child know upfront that you still need to thoroughly investigate the camp(s) before making a final decision. But do keep your child’s choices in mind to ensure your child gets the most out of summer camp. Once you and your child have narrowed the list down to a manageable selection, you’ll want to investigate the camps further. There are several things you’ll want to consider.

WHAT ARE THE RULES? Each camp has its own set of rules. So, find out whether your child is allowed to call you. If it’s a summer-long residential camp, can parents come and visit? Can kids bring along a cell phone or electronics? Also, how much money can they bring, and how is it managed? DON’T SWEAT IT Keep in mind, although there are many great camps, no camp is likely to offer everything precisely the way you want it. Just choose the one that best fits your child and satisfies your most important criteria. Remember, your child will have many summers to come and plenty more opportunities to work in more exciting camp experiences.

WHAT ARE THE STAFF’S QUALIFICATIONS? Many summer camps use teens to staff the camps. Teens make excellent mentors and can bring liveliness to summer camp programs. However, the programs themselves should be developed by professionals and have professional oversight to ensure kids are getting the most from their camp experience. HOW DOES THE CAMP ENSURE YOUR CHILD’S SAFETY? Find out what kind of safety training the camp provides its staffers. Also, is there staff on hand at all times that knows CPR? What are the camp’s procedures in the event your child becomes ill, has an accident, or an emergency? WHAT IS THE DAILY SCHEDULE FOR CAMPERS? Ask for a daily itinerary, so you know your child will be getting everything you and your child anticipate from the program.

in her beauty business stems from the strong foundation provided by her parents and her sister/best friend, Saige. As a child, Bailey excelled in her first creative endeavor with Northshore Academy of Dance, where she went on to teach hip-hop until having her first baby. Those experiences taught discipline, dedication and the joy that comes from doing something you love. While dance was her first love, gifting beauty and confidence through styling hair is her passion. “I want to help change the industry. I’m pushing for hair stylists to become hair artists,” she smiles enthusiastically, “reflecting the respect for creativity and skill that other artists get.” Bailey has earned her own respect, having won The Northshore’s Best 2017, 2018, & 2019.

The young entrepreneur recalls when beauty school was not highly regarded. “I was fascinated by

salons early on, especially hair color. I watched everything and learned. When I graduated from Fontainebleau

in 2010, I was doing friends’ hair for prom and parties, and my current hair stylist encouraged me to follow my dreams.” With the support of her family and friends, Bailey attended Paul Mitchell in Baton Rouge, finished ahead of schedule, and earned Student of the Year for her dedication and mastery of color. “Color is more complicated than it looks. There’s a science behind it along with the creative process, and I’m just totally into it.” After attending school in Baton Rouge, Bailey would return to her Northshore roots, but not without challenges. “My first job in a salon was as an assistant/shampoo girl. The long hours were stressful, and I saw clients at home afterwards to continue building my clientele, but I learned a lot.” During this time, she also met her future husband, Aaron. So, before turning 22, her life’s path exemplified the valued words of her mother – Let go, let God. “I’m not very patient, so those words have become my life motto,” says Bailey humbly. “They’re tattooed on my arm in my mother’s handwriting. They help during difficult times like now when we’ve had so many delays moving to our new location. I thought we’d be in by now, but I know from experience that God has a plan, and I just need to go with it.” Aaron and Bailey wed in 2015 and after starting their family with two cherished puppies, Hartley and Louie, they added their boys, Ezra and Jude. “My boys push me every day to be the best version of myself. Aaron is my rock and supports every dream I’ve ever had. He is willing and ready to do anything to help me succeed. When I opened The Beauty Bar in 2017, it really was a dream come true." Along with elevating the respect of her profession, Bailey says she’s also determined to create an environment where she and her team can do their magic with energy and enthusiasm. “Being a mom is the best gift in the world, but it was a difficult transition. At first, I thought ‘Oh no, now I love this other part of my life. How can I balance this?’ But I learned how to make it work, which is still not always easy. Owning a business and being a mom can have its challenges, but I wouldn’t trade either for anything.” Bailey says one key to her success was growing her team slowly. “I take my time while hiring, making sure each artist shares our values and morals. Our relationships are strong and healthy because we consider each other family. Each member of my team plays a valuable role in our success, I couldn’t feel more blessed to have them.” Although her team grew slowly, the salons clientele grew rapidly. To truly impact the industry, Bailey believes it’s important to share her model of success. She’s created a vigorous apprenticeship program for students to not just work, but also to learn. It’s hands-on education that’s challenging, but very rewarding. “Watching stylists begin as assistants then grow into artists booked several weeks out is just amazing.” In 2020, Bailey became certified in Natural Beaded Rows luxury hair extensions. Always pushing herself, Bailey is continuing her education in The Academy. “By the end of the program you’re considered an expert and become licensed in the method. This program is just as much about business as it is about the extension application, and that’s a game changer for me.” On moving into her new space, which she designed with the help of her mom, she says, “It’s earthy but bright and edgy too - laid back luxury to make customers feel comfortable and pampered. Business is booming, so I envision opening more locations in the future. I want to grow our family too, I just love being a mom.” No matter what challenges each day present, through her foundation rooted in faith and family, Bailey has found happiness by letting go and letting God. Strong and accomplished for her years, she is a sweet and shining example to her students, her staff, her clients and her family with much inspiration and beauty to give all. Youth Service Bureau's Chef Soirée: The Purpose Behind the Party WRITTEN BY JAN WINDHORST

THE NORTHSHORE’S LONGEST-RUNNING, high profile charity event entices guests with gourmet food, top shelf libations, two live music stages, fireworks, a new car raffle and a vibe that energizes Bogue Falaya Park. It’s no wonder Chef Soirée has grown into a household name over the last 38 years, now drawing approximately 3,000 revelers. And while scores of volunteers work tirelessly to create a night of frivolity for guests, the motivation is the ongoing, serious purpose of the beneficiary. The dedicated staff at the Youth Service Bureau (YSB) relentlessly provide advocacy, counseling, education, and intervention for St. Tammany and Washington Parish youth and their families. “The effects of the pandemic have escalated substance abuse,” says Cleveland Wester, MSW, YSB President and CEO. “We’ve seen a huge uptick in our Options program as well as our FINS program.” Wester explains that YSB administers many programs: CASA—special advocates for abused and neglected children; TASC addressing truancy; FINS aimed at juvenile delinquency prevention; Crossroads for juvenile delinquency intervention; and Options, which offers outpatient substance abuse treatment for teens. “Overall, there’s a twentyfive to thirty percent increase in the need for our services from a year ago. Our programs are for all families and kids who need it. If they can’t afford program fees, no one is turned away for services. The Chef Soiree is our major fundraiser and critical to our advocacy. It allows us to make sure kids and their families reach their full potential.” Crossroads Program Director, Mary Kay Walden, concurs, “Crossroads offers delinquency intervention for those who have broken the law to keep them from entering the adult system. We work to get them off the road they’re on and steer them towards becoming a productive part of society. The pandemic has definitely increased the amount of youth we’re serving. There are increased mental health issues like learned helplessness. Our clients feel like they have no control over anything going on, and they are dealing with depression from lack of ability to socialize. In addition, demographics play a role with some parents feeling they are unable to manage the pressures of remote schooling from home. The types of crimes we see are cyclical, and now we’re seeing more substance abuse including the use of marijuana and dab pens as a way to cope. Both the children and their families need help.” Walden said that their low recidivism rate is their success story. “Not seeing them again is how we know we’ve done a good job. Eighty-nine percent finish the program and eighty-five percent don’t re-offend. Those numbers are

really phenomenal.” The dedicated director also reports a ninety-four percent satisfaction rate from the program’s clients and their parents. Last year, Walden’s exceptional work was recognized with the Judge John W. Green Award for Outstanding Agency Contribution for 2021. In her youth, Walden actually met Judge Green, but under very different and serious circumstances. “Right after I turned seventeen, I stole a vehicle and was convicted in Judge Green’s court. I was sentenced to two years in the St. Gabriel penitentiary. He granted me a suspended sentence with three years probation. Unfortunately, I stayed with a bad crowd and got arrested again for drugs. Once again Judge Green believed in my rehabilitation and arranged treatment at Odyssey House in New Orleans.” Walden says she was shocked to receive the award but honored and humbled to make Green’s judgment correct. “Because one man had the insight to help change the trajectory of my life, I have the opportunity to pay forward that belief he had in me. I truly believe my past was a blessing and God’s plan all along.” Walden says it took time, but she eventually got married and raised four children, then earned a Bachelor’s Degree in Education and a Master’s Degree in Supervision and Administration. After retiring from education, Walden joined YSB. “I wish Judge Green was around to see my life come full circle by receiving the award named for him. I did meet him after he had retired and thanked him for his life-saving work. I’m proud to carry on his legacy.” Walden and Wester both stress the importance of the Chef Soiree to YSB’s mission. As a non-profit, the bureau relies heavily on grants, and fundraising – of which the Chef Soirée is by far their largest endeavor. Says Wester, “This event is so important to ensuring our troubled children and families get the critical services they need.” Walden adds, “The Chef Soirée is an amazing way for the whole community to come together and support a mission that’s important to our very future. I feel it’s my true purpose in life, and I know all involved with the bureau who work tirelessly all year long rely on the emotional and financial support that comes with the outpouring the event brings.”

THE WORLD HAS changed… how we live, where we work. It’s a new construct, and people need professionals with a broad and sophisticated skill set for construction solutions for these new situations. Through Velvet Pines Developers, John Barry and his team have built an outstanding reputation delivering a variety of residential and commercial builds that truly delight their customers. Now they’re using their talents and commitment to excellence to offer next-level innovation for rapidly changing times. John explains that new trends his company is addressing are multigenerational living and aging-in-place renovations which reflect families’ response to the pandemic. “People don’t want to accept the uncertainty of being separated for extended periods from aging parents who may be in assisted living or reside far away. When people combine households, we provide creative ways for each generation to feel integrated while still maintaining privacy with elements like common areas for the whole family, which also provide buffers to personal spaces.” John adds that they can also modify for wheelchairs, add grab bars and design other customizations to make living there sustainable for their lifetime. Another residential trend is to add more multi-use applications with in-home office and study spaces, and amenities such as elevators and back-up generators previously seen in only commercial buildings. “Having extensive experience in commercial and residential building puts us ahead of the curve and is a key difference Velvet Pines offers - delivering a home that is truly customized and meets the needs that clients didn’t have just a few years ago.” John began as a general contractor decades ago in New York city. The rigorous permitting and inspection process along with experience on a variety of projects provided a solid foundation to his love of the building process. After becoming engaged to a hotel industry executive named Sandy, the couple chose to settle in Louisiana, near Sandy’s family. With Sandy as CEO and John as COO, Velvet Pines began. John quickly set himself apart as a problem solver capable of physically doing the work and able to collaborate with designers, architects, and craftsmen. “Because of my experience with steel construction in New York, I have a different eye and can communicate effectively with architects and engineers while speaking in layman’s terms for the customer. I also understand the challenges of building on South Louisiana land.” As his reputation grew, he was called on for more involved commercial projects including gas stations, dry cleaners, and restaurants. During his career, he has also built and built out spaces for his own businesses making him uniquely qualified to understand and give valuable input in designing spaces that enhance their function by design.

Along with delivering innovation, the key to clients’ satisfaction is communication and the effectiveness of his team. Jokingly describing himself as the chief bottle washer, John stresses the value of his team both in skill and a true desire to connect with and please clients. At the location of a recent high-profile project - incorporating Desi Vega’s Steakhouse into the Aprés Lounge in Covington - he proudly introduces Jill Lerille-Office manager, Katie Rylee-Project Manager and Scott Martin-Field Superintendent. He explains that the team meets with clients multiple times before a project is even started to make sure they are the right fit, and adds that his experts listen and brainstorm as a group to make sure they deliver the client’s big-picture vision. “We deliver a turnkey product. Clients benefit from our experience and don’t have to worry or micromanage. Now you want to protect them and have them work for you. The following are just a few strategies on how to do so, and you can decide which one is right for you. To be clear, Louisiana is a community property state. This means that, in the absence of a legal agreement stating otherwise, if two parties get married and then divorced at any point, each spouse acquires half of the other spouse’s assets as part of the community during the marriage. However, there are several ways to deviate from the community property regime of a marriage. Some items may be automatically classified as separate property for certain reasons, such as inheritance or specific property acquired before the marriage. It is important that these assets are not commingled with community property funds in order to preserve them in the event of a divorce. There are also two documents you can create to be certain you protect and preserve your assets when entering a marriage. These are a prenuptial agreement

300 Carroll Street at the corner

of Jefferson, also known as the Arthemise Goertz Roome House, was built circa 1893. The idyllic Eastlake-style cottage retains many original details and has also undergone renovations which have added modern amenities. According to the Historic Mandeville Marker Tour on which the Old Mandeville residence is a stop, this hidden gem is described as follows: “This Victorian, L-shaped shotgun house, sheltered under a huge live oak, has original details such as dropped-cap columns, quoins, jigsaw balustrade, fan brackets and unusual chevron-patterned lattice. Unlike many properties from Mandeville's early days, this one enjoyed long tenure by one family. The most prominent member of this family and occupant of this house would be author Arthemise Goertz (1903-2000), (who) was a New Orleans native, Tulane University 'magna cum laud' graduate, intrepid traveler and witness, with her mother, to WWII as a prisoner of war in Tokyo, Japan.” Goertz’s last novel is dedicated to the home and tells the story of 'turn-ofthe-century' Mandeville and its aristocratic, Creole French-speaking society during a long summer in 1909. Today, visitors enter the estate, which sits on three lots, by climbing the charming steps of the wooden porch that lead to French doors that look out onto Our Lady of the Lake’s beautifully kept grounds. A curtain of bamboo and the cover of Spanish moss swaying from the majestic oak dominate the street corner providing tranquility and privacy. A tin roof caps the two-bedroom, two-bathroom, 1416 square foot cottage in period style. A welcoming parlor offers 12-foot ceilings, heart pine floors and beadboard walls, and opens to the home’s primary bedroom. A large bay window that faces Jefferson Street adds architectural interest and abundant light to the bedroom. The en suite bath is eclectic with azure blue penny tile flooring, marble countertop and whimsically colorful, monkey-themed Schumacher wallpaper. As one makes their way through the home, they are ushered from the parlor to the dining area by a shared, angled, double fireplace. The crowning jewel of the dining area is the Flambeaux chandelier fanning out in tones of gold. home feature A large kitchen island is topped with light colored marble and surrounded by upscale appliances, including an Iive gas range and Frigidaire oversized, side-by-side column refrigerator and freezer. Accessed through French doors shared by the dining/kitchen area, a side porch faces Jefferson Street and mirrors the architectural details of the front porch. Throughout much of the home and the porches, the ceilings are painted Haint Blue. This term describes a collection of pale shades of blue-green traditionally used in the South, storied originally to keep evil spirits away. Today, the color is said to attract insects up and away from the people below. The home’s outdoor living area consists of a peaceful oasis boasting a large rectangular pool with slate surround, hot tub and swim out shelf. The homeowner describes this area as a family favorite. “We use this area all year round and all times of day. We regularly go out to drink coffee and watch our younger son swim. My husband and son watch TV and games out there. It’s used as much as the interior living spaces.” Other outdoor areas on the estate include a relaxing veranda at the back of the house and a large, grassed yard which accommodates the garage accessed on Jefferson Street. There is also a large peagraveled parking area accessed by an electric gate on Carroll Street that provides parking for multiple vehicles. Above the spacious garage is a bonus, openconcept, 640 square foot guest house with a bedroom area, kitchenette and bath. The owners use these quarters for visits from their college-aged son and out-of-town relatives, noting that it’s nice for guests to have their own separate and private space. The area could also be used as an office space, artist’s studio, game room or simply a secluded retreat. The owner describes the charm of the property’s layout and the neighborhood, “It has the peaceful feel of living in the country with a lot of land, but you’re able to walk to restaurants, church, school, shopping and green spaces. It’s fun to hear the school children laughing and church bells ringing. It gives the house and neighborhood a lively energy. You can get complete privacy by the pool, but you can also sit on the porch and see all the neighborhood activity — walkers, bikers, kids. The no-kill shelter in Covington, LA invites children ages six to thirteen to spend a week celebrating companion animals as they engage in fun interactive games and activities; meet animal experts and ambassadors; and put their compassion into action through service projects that benefit the shelter’s homeless animals. Children will symbolically adopt a shelter pet and be given an opportunity to interact with the rescued dogs and cats at the rescue. NHS summer camp programs foster a sense of responsibility and respect for animals through inquiry and experienced-based learning. More info can be found below: Activities will include helping the rescued pets here at our facility as well as learning the importance of pet care and advocacy. A variety of animalrelated guest speakers attend each week including St. Tammany Parish Canine Unit, Love on a Leash, animal control officers, veterinarians and many more! Camp weeks run from the end of May through the end of July. Camp is Monday through Friday, 9:00 am to 4:00 pm. Dropoff begins at 8:30 am. One week of camp is $250 per child. PERHAPS SPRING FEVER is embedded in our DNA. Vernal or spring equinox means day and night are equal in length. The chemical processes that occur from shorter nights signal sleepy time is over for all living things. Plants begin new growth, animals emerge from hibernation, birds nest, mate or start to migrate. Get your garden spring show-ready with these tips. Branches that appear dead may only have dropped their leaves from cold weather. Prune shrubs, trees and woody tropicals after new growth sprouts. While shrubs can be planted any month of the year, they benefit from cooler temperatures. March is the last optimal month for roots to recover before the high heat of later months. Roses pruned last month will be abundantly growing in March. Fertilize with 1 cup alfalfa meal, 1 cup fish meal, ½ cup blood meal, ½ cup rock phosphate and 1 cup greensand if you haven’t already. Established perennials benefit from a slow release, balanced fertilizer. Finish dividing clumps and transplants. They recover from transplant shock faster when temperatures are still mild. Lawns reward those who wait to fertilize until mid-April. But now would be an ideal time to apply weed-control, service the mower, and sharpen or replace blades. Vines are setting blooms on old wood during this time. Prune after blooms have finished. Trim any brown ground covers and ornamental grasses as soon as possible before new growth appears. Root-bound houseplants or ones showing signs of insect damage or stress benefit from repotting now. Bugs and slugs are also awakening. Maintaining a safe environment for pets and children also benefits butterflies, bees, and birds. Focused attention to grow the most vigorous healthy plant possible is the best strategy. Otherwise, choose your poison wisely and follow all directions. Increased hours of daylight means more energy for growing in all ways. Time to get busy. Happy Growing! IN OUR JANUARY column we covered an introduction to service dog laws. This month we are digging into Emotional Support Animals (also known as “ESA”). An emotional support dog cannot go everywhere with you like a service dog can. You must have permission from the owner of a business to have your dog with you or be granted an exception for housing under the Fair Housing Act. In order to qualify as an ESA the handler must present a letter to the housing authority. This letter must be signed by a current, licensed mental health professional or doctor. It must state that they have a mental illness that substantially limits one or more major life activities and that the presence of the animal is necessary for the individual's mental health. The fact that your dog curls up with you when you're sad or anxious isn't enough; you need that documented illness and prescription. If you qualify with your ESA, then your landlord cannot ask for a pet deposit or have breed restrictions. You must provide documentation from your physician or counselor

IF YOU SUFFER from TMJ, or you’ve ever opened your mouth and felt a loud crack and pain in your jaw, you know just how debilitating it can be. The temporomandibular joint (TMJ) is a small joint that makes up your jaw. It hinges back and forth to allow the jaw to open and close. In between the two bones of the TMJ is a small piece of tissue, or disc (similar to the meniscus in your knee), that guides normal movement. There are several muscles that attach around this joint to help with opening, closing, talking, and chewing food. Dysfunction in this area is known as temporomandibular dysfunction (TMD). This can be caused by pain in the joint, disc, or in the surrounding muscles. These muscles can spasm and cause a lot of stiffness, headaches, and discomfort. Often patients complain of a clicking sounds when they open their mouth due to abnormal movement of the disc. You may also have pain with opening and chewing your foods. Treatment of jaw pain usually starts with a visit to your dentist. For many this provides a lot of relief. But if you still have pain after your dental treatment, physical therapy can be a great addition to your care. Physical Therapists are experts at addressing muscle and joint pain. OF FUN AND SUCCESS Written by Nicholas Gristina and Curt Aertker Covington Youth Soccer Association (CYSA) is proudly celebrating 40 years of providing youth soccer to St. Tammany Parish. As the longest serving soccer organization in West St. Tammany, CYSA is blessed with numerous second generation CYSA families. CYSA’s sustained success results from the collaboration of volunteer and professional soccer coaches and directors that nurture a family-focused, non-profit organization independent from any public recreational park. This autonomy enables CYSA to serve the whole parish without charging any out-of-district fees while providing fun and innovative platforms for children of all ages and abilities. CYSA offers 3 levels of play in fall, spring and summer leagues: a recreational platform for ages U5-18; the Covington FC Juniors academy program for ages U9-10; and the Covington FC competitive program for ages U11-19 that competes at the highest levels of soccer in Louisiana and beyond. Cody Ludwig, CYSA alum and current coach says, “As a kid, I played for CYSA from little bitty all the way through high school. It’s a special place, and when it came time to sign our girls up, there was no other place we’d rather be. My husband also played all through high school and won two state championships at CYSA. We both coach each of our daughters’ teams and love watching them on the same fields we grew up playing on!” CYSA’s success is due to its unique player-development philosophy. Equally important, CYSA teaches children profound life skills including teamwork, discipline, commitment, physical fitness, self-esteem, leadership, and fellowship. Coach Curt Aertker adds, “We are thrilled that our recreational program is thriving under our Recreational Director, Crystal Gristina. Our Covington FC Juniors program has had terrific success in teaching the technical, tactical, physical, and mental aspects of soccer as players transition from recreational to competitive programming. Our competitive teams have achieved great things at the state, regional, and national level. Our signature player-development model and exceptional coaching staff enable us to punch well above our weight. 2 tablespoons olive oil

1. Preheat oven to 350°.

3 pounds beef stew meat

2. Heat the olive oil in a large pot over medium high heat. Season the beef generously with salt and pepper to taste.

1 cup onion coarsely chopped 1 tablespoon minced garlic ¼ cup all purpose flour 1 cup Irish stout beer 4 cups beef broth ¼ cup tomato paste 2 pounds small yellow potatoes halved

3. Add half the beef cubes to the pot in a single layer. Cook for 3-4 minutes per side or until browned. Remove the beef from the pot and repeat with remaining meat. Remove all the browned meat from the pot. 4. Add the onions to the pot and cook for 5-6 minutes or until tender. Add the garlic and cook for 30 seconds. 5. Return the meat to the pot. Add the flour and stir to coat the meat and onions.

½ teaspoon dried thyme leaves 2 cups carrots peeled, halved and cut into 1 inch pieces salt and pepper to taste 2 tablespoons chopped parsley

6. Add the beer, beef broth, tomato paste, potatoes, thyme and carrots to the pot. Season with salt and pepper to taste. Stir to combine and bring the pot to a simmer. 7. Cover the pot. Place it in the oven and bake for 2½ - 3 hours or until meat and vegetables are tender. Sprinkle with parsley, then serve.

Muddle the lime quarters with the raw sugar in a tumbler to gently crush and squeeze out the lime juice. Add the cachaça to lime juice and stir well. Add crushed ice to the glass and stir. Garnish with a lime slice and mint leaf.

Warm a glass mug by filling it with hot water. and let sit for a few minutes. Then pour out the water. Add Irish whiskey, Irish cream and butterscotch schnapps into the warm mug. Fill with coffee and stir. Stir in a drizzle of caramel syrup.

1 ounce kale juice 1½ ounces white rum ⅓ ounce cucumber juice 1 ounce ginger beer ¼ ounce simple syrup

1½ ounces tequila 1 tablespoon agave nectar ½ ounce lemon juice ½ kiwi fruit Club soda Fresh mint & blueberry for garnish

Add kale juice, white rum, cucumber juice, ginger beer, simple syrup and lime juice to a blender filled with one cup of ice. Blend on medium speed for 30-45 seconds. Pour into tumbler and garnish with a kale leaf.

In a shaker, combine tequila, agave nectar and lemon juice. Muddle in kiwi and mint. Shake vigorously, then top with club soda to taste. Garnish with blueberry, kiwi and mint. Sophisticated Woman | March 2022 39
