publisher's note
Marvelous in May SPRING IS IN
the air. It`s a season of new
beginnings, longer lighter days and the month we honor our mothers by celebrating Mother’s Day. It feels like only yesterday, my daughter Brooklie said her first word, and shortly after she was starting high school. In the blink of an eye, she’s graduated from college, and is now off to law school. As a daughter and a mother, I know the meaning of unconditional love and in these pages, we have compiled gift ideas and recipes to help make the day special for those we care for. This month I had the pleasure of spending the day of May’s cover photo shoot with two incredible women. The minute I walked in to Cured. On Columbia, I was greeted with a warm welcome, a glass of wine and one of their special charcuterie boards as they told me their incredible success story. Get to meet this amazingly talented couple that are living their authentic lives. Read their full story on page 21. May’s fashion spread showcases spring attire that is trending on the national style scene. On page 12, see what’s hot for the season. And on page 24, our home feature reveals a stunning private paradise on the Tchefuncte that has everything a family could want to make their dreams come true. You have to this renovated and luxury-appointed estate to believe it’s right in the heart of Mandeville. Whether it’s family get-togethers, shopping, dining or festival-going, May is the month to enjoy the gorgeous weather, our ability to gather once again, and all our community has to offer. Cheers to moms and the strong women who’ve shaped our lives and this wonderful place we are fortunate to call home.

Cheers to Mothers! happy mother's day
WRITTEN BY JAN WINDHORST
Honoring the love and dedication of mothers surely dates back to the dawn of motherhood. Documentation of those celebrations, according to History.com, go as far back as ancient Greek and Roman times, when festivals honoring their mother goddesses Rhea and Cybele were held. In early Christian times, the holiday took the form of “Mothering Sunday”, a festival popular in Europe during Lent when the faithful would return to the church of the childhood for a special service. In later centuries, the custom of children presenting their mothers with flowers and gifts turned the holiday into a more secular celebration which then took the form of modern Mother’s Day in the 1930s and 1940s. The American version of Mother’s Day was created by Anna Jarvis in 1908. Her inspiration was her own mother, Ann Reeves Jarvis, who organized Mothers’ Day Work Clubs in West Virginia to teach women how to better care for their children. By 1912 its popularity had grown enough for Anna to establish the Mother’s Day International Association to help the holiday be recognized nationally. Anna embarked on an extensive campaign targeting newspapers and politicians lobbying for the designation of a special day honoring motherhood. Mother’s Day became an official U.S. holiday in 1914 when President Woodrow Wilson signed a measure establishing the second Sunday in May as Mother’s Day. Today, moms and mother figures can be treated to cards, flowers, gifts, meals and sometimes even a break from their traditional duties. It’s a beautiful time of year to celebrate with family, and in this issue are ideas to make our favorite women feel special and appreciated with meaningful gifts, pampering and celebrations. Cheers to mothers and all they do to make us who we are!

Best Blueberry Waffles + Blueberry Sauce! Makes 4 waffles or 2 Large Belgian-Style Waffles | Prep 10 minutes | Ready 10 minutes
These fluffy Blueberry Waffles are about to become Mom's favorite! Topped with a quick blueberry sauce, they’re Mother's Day Brunch perfection on a plate. I N G R E D I E N TS 1 cup all-purpose flour ½ cup whole wheat flour 2 teaspoons baking powder ½ teaspoon cinnamon ½ teaspoon kosher salt 1 large egg 4 tablespoons butter, melted (substitute coconut oil for dairy-free) 1 ¼ cups milk (substitute non-dairy milk for dairy-free) 1 teaspoon vanilla extract 2 tablespoons maple syrup 2/3 cup fresh or frozen blueberries 1 recipe Quick Blueberry Sauce, for serving Greek yogurt, Homemade Whipped Cream or Yogurt Whipped Cream, for serving (optional)
B LU E B E R RY S A U C E 2 cups blueberries, fresh or frozen ¼ cup granulated sugar ¼ cup + 2 tablespoons water, divided 1 tablespoon cornstarch ½ tablespoon lemon juice 1 pinch salt
10 Sophisticated Woman | May 2022
INSTRUCTIONS 1. Preheat the waffle iron to the high heat setting. 2. In a medium bowl, mix the all-purpose flour, whole wheat flour, baking powder, cinnamon, and kosher salt until thoroughly combined. In another bowl, whisk the egg. Then stir in the melted butter, milk, vanilla, and maple syrup. Pour the wet ingredients into the dry ingredients and mix gently until just combined. Stir in the blueberries. 3. Immediately, add the batter into the center of the waffle iron and let it spread it to within 1/2-inch of the sides, then cook according to the waffle iron’s instructions. Remove the cooked waffles and place them on a baking sheet without stacking. Make the waffles to order, or place cooked waffles in a 300°F oven to keep warm. Serve with Quick Blueberry Sauce. Note: These blueberry waffles stick to the waffle iron a bit more than a standard waffle, so make sure to clean it afterwards. 4. Cooked waffles can be frozen; place them in a plastic bag and remove the remaining air with a straw before sealing. To reheat, remove from the freezer and lightly toast in a toaster.
INSTRUCTIONS 1. Place the blueberries, sugar, and ¼ cup water in a saucepan and heat over medium heat. Bring to a low boil, then cook, stirring occasionally, for about 5 minutes until the blueberries begin to break down, mashing them with a wooden spoon. Make sure not to let the pot boil over. 2. Place the cornstarch in a small bowl and mix with 2 tablespoons water. Add it to the sauce and simmer for about 1 minute, stirring constantly, until thickened. 3. Remove from the heat and stir in the lemon juice and salt. The sauce will thicken even more as it cools. Serve immediately or refrigerate until serving (store up to 1 week refrigerated).

MAY FASHIONS REFLECT the colors and patterns of the season. When choosing whether to opt for florals or solids, fashion pundits say pick a bunch of both. Pastel florals can bring out the beauty of your delicate side and color blocks of bold brights pay homage to the brilliant blooms this month brings. Textures bring throwback trends into the spotlight. Soft colors allow pretty pleats and ruffles to draw the eye with feminine silhouettes and shapes that mimic spring flowers. Open backs with string ties are also making waves as an easy way to show off your glow. Warmer weather welcomes the timeless trend of showing more skin, with short, short skirts and dresses – mini-length to be exact. What’s

The
pendulum is swingingback to center with moderate heels, open toes and sexy straps as the holy trinity of dressy spring footwear. Sara Holzman, Style Editor at Marie Claire says that practical, classic staples are what’s in for the season. “We’re Raylen

cover story
Finding Their Cure WRITTEN BY JAN WINDHORST PHOTOS BY STEVE RANDON
IT'S SAID THAT cooking made with love can heal the soul. Anna Watkins and Amanda Birdsong have found the recipe to do just that through their new culinary venture, Cured. On Columbia. Brought together by mutual friends while living in Baton Rouge, Anna and Amanda bonded over gatherings of good meals and good company, beginning the journey that would lead to creating their haven in Downtown Covington. While Anna joined the partnership as a seasoned restaurant professional with a particular talent for exceptional guest experiences, having worked front of house and in operations, Amanda began dabbling in the culinary arts as a stress relief from her job as an x-ray technician. Anna explains, “I started working in restaurants during my early teens and rose to executive positions. I learned about the business and about myself along the way. Along with handling operations and management duties, I grew to understand that the guest experience is key not only to success, but it’s the heart and soul of the restaurant. Amanda quickly took her cooking to an artform and was urged to pursue that gift by the many friends and clients we’ve served. Now, we’ve created a space where we want to be,” she laughs, “which is good because we’re here more than we’re at home. We want to relate to all walks of life and offer new things for guests to try.” As I prepared to write this May cover story, my expectation of conducting a quiet interview in a modest café at 10 am on a Tuesday was, delightfully, not met. The bright, open concept design that welcomes guests into a living area (rather than a grid of tabletops) was already abuzz with conversation, business meetings and baby coos atop a blanket of coffee machine whirs, clanking dinnerware and retro rock. The microcosm of guests reflected Covington’s downtown vibe, with up-and-comers in Gen Z styles; a car-seat-toting mom taking a break from shopping; an ear-phoned, remote worker tapping his laptop; suited professionals; and aspiring health afficionados in their athleisurewear. Regretting my decision to politely decline refreshments while conducting the interview, the growls of my stomach added to the lively atmosphere. Over the bustle, Chef Amanda shared the couple’s vision. “We love going on food, wine and travel adventures. Whether a night in the city or a trip to Europe, starting at one place for appetizers, then wandering, exploring and finding new tastes and experiences are what inspired me to become a chef and inspired our menu. Travels in Hungary piqued my interest in cured meats, pickling and charcuterie boards. Our boards have become signature dishes, and they’re a great source of creativity and pride for me and the kitchen staff.” Using fresh, vibrant ingredients, elevated preparations and out of the ordinary twists are what keeps Amanda passionate about her craft and Cured’s underlying mission. Just as the eclectic café attracts a variety of clientele, the menu selections seek to satisfy a variety of tastes and preferences in an atmosphere that celebrates diversity. For instance, along with charcuterie’s traditional meat and cheese offerings, Cured boards also come in meatless varieties including hummus prepared three ways. The Beats on Beets Board offers marinated beets with beet hummus, honey goat cheese, greens, and brown butter crostinis; the Lox board includes smoked salmon and accoutrements; and there’s even a grilled cheese and tomato basil soup board. The Cured Club, Rye Rye Reuben and Hot Italian sandwiches are a meat lover’s dream personalized with Amanda’s hand-created additions. And speaking of Ruebens, it took Sophisticated Woman | May 2022 21
cover story less than 24 hours for me to return to Cured, off duty, to enjoy that lunch favorite I spied the day before. Just enough of the traditional tastes paired with bright twists were the perfect bite. Salads sporting less traditional additions such as truffle and chili oil, cured egg, coconut aminos, sliced prosciutto and ginger ailoi round out the menu with lighter fare. “Those dinner parties with friends were the seeds that grew into Cured,” Anna mused. “Food is so tied into to our memories and emotions, and you really can taste the care and personality that a good chef can deliver. After each gathering where we brought a new and unique creation, our friends insisted that this be more than a hobby for us.” Word of mouth grew, parties for clients were booked, and A2 Table and Meals grew to prepping and shipping 300 to 500 meals per week from West Baton Rouge to Florida. The success of that business propelled them towards their next step. As they considered moving to Florida, the opportunity to occupy what was Susan’s on Columbia was presented. Anna says it was a huge compliment. “Susan was well-respected and emotionally connected to the business, but she wanted more time with her family. It was a big deal for her to choose us to carry on and trust that we’d honor her tradition of a welcoming space with healthy options.” At least a half dozen menu items earn Ocshner’s Eat Fit logo, others qualify as Keto, and healthier versions of food and drink are available. Anna, who is certified as a sommelier, adds that Cured’s wine selections are chosen for their conservative approach to processing with specialized fermentation techniques and less filtration. “The result is a more natural product with a funkier taste that pairs very well with our food.” Along with specialty teas and their own Ethiopian and Columbian Superior coffee blend by Abita Roasting, Cured even offers a healthy probiotic soda of lavender and hibiscus that can be upgraded to a cocktail for those special occasions. From their personal layout for the interior design and the seasonal menu selections, to the way food is ordered and presented, Amanda says the experience is designed to mirror their favorite food and drink adventures. “The beauty of not having table service is that you can go at your own pace without being rushed. It’s not fine dining, it’s not full service, but we deliver the unexpected which makes for an interesting experience. We invite guests to get coffee in the morning, come back for lunch, wander to the wine case after work, select a bottle to share with a date on our comfy couches – just create their own experience. We aren’t about labels or being put in a box – that would take the mystery and the fun out of it. We’re kid friendly, dog friendly and on weekend nights we turn into a lounge with candles, swanky music and different drinks to try.” Despite the rigors of bringing their new business to life, including additional challenges from Covid and South Louisiana weather, Amanda and Anna are appreciative of the help of family during renovations and the hectic days leading up to their opening in October of 2020. They overlap recounting their thoughts as they recall the roller coaster of emotions during the process, “We were on the edge of our seat every day during phone negotiations while we were in Florida at the beginning of the pandemic…,” “Are we really going to take this huge risk that’s also our dream?” “Will we be judged in this smaller community?” On opening day, customers tired of sheltering at home came in for a change of scenery and the start of something fresh. Anna says, “We still had hurdles to jump, but we knew we belonged here.” From the beginning, Amanda says, one particular item showcased her personal style and the essence of Cured. “The Smorgasbord is first and foremost an adventurous, one-of-a-kind meal to be shared with friends. It’s our version of a chef’s feed-me where the food selection and presentation will be different every time based on what’s fresh and which chef is creating it. The meats and cheese are sourced from Europe. Everything pickled, the confit garlic, hummus, bark candy and more are made in house. It can be an appetizer or an entrée and is served on a bamboo tray that can go to a table or out to a festival or picnic. It’s bringing different and sometimes unfamiliar things together to make people happy.” Anna, who serves as the couple’s capable and confident grounding force and Amanda’s cheerleader quickly adds, “These boards are a canvas for her elaborate works of art. I love that at this special place we’ve built together, she can challenge herself to be creative every day while giving the gift of lovingly made food to share with friends. And that I can take my experience at corporate restaurants to realize my vision and be in charge of my own destiny.” Amanda returns the sentiment, “After being in a job that often didn’t embrace the real me, I look around and say, ‘Wow, how did this happen?’ Anna gave me the freedom and confidence to come into my own personally and professionally in this place that reflects us.” Not only healing for their patrons, Anna and Amanda’s gift of food as the centerpiece of a philosophy of inclusion and acceptance has brought a purpose and fulfillment to their lives as well – one that seems only possible with each other. While the future always brings challenges and the unexpected, they are living their dream. They are - Cured. On Columbia. Cured. On Columbia is located at 415 N. Columbia Street in Covington. Ten sprawling acres alongside the navigable Tchefuncte River surround a 9,450 square foot luxury home that offers comfort, privacy and a host of amazing amenities. Renovated with quality, this chic home features a gated entry, grand marble foyer, spacious light-filled living areas, incredible chef’s kitchen, luxurious primary suite, custom furniture, a media room, game room, heated salt water pool and spa, yacht dockage and much more.

The three-story French chateau style architecture houses five bedrooms, five full baths, four half baths, and includes a garage with ample storage for three vehicles. The current owners, Mark and Chi Bergeron, renovated the home upon purchasing it four years ago. Chi explains, “The house and the grounds were everything we wanted, but we also wanted to put our own touch on it. The interior was dark, and we wanted it lighter and brighter. We removed a wall to make the flow better and replaced windows to maximize the beautiful natural light that comes in.”

home feature Performing design duties herself, Chi chose a largely monochromatic palette in shades of white with gold accents. The Bergerons added marble floors and vanities, quartzite countertops and extended the bar in the kitchen to achieve more countertop area. Because Mark is in the restaurant business and loves to cook, the kitchen appliances were upgraded to Wolf Sub-Zero. Outdoors, the pool and pool house were renovated, and a palm treesurrounded hot tub with fire feature was added. The choice of high end materials, oversized rooms, custom designed furnishings and expansive windows throughout are just some of the features that qualify the home as a luxury property, but Chi’s first priority was making the house a haven for her family. “I wanted the design to be modern, fun and livable with lots of natural light and these wonderful views. Between the pool, two game rooms and the movie room, we always had kids in and out. It was so easy for Mark to take everyone on a boat ride to Madisonville for the day – those were great times. And there’s plenty of parking for guests. Now that the kids are grown and out of the house, it’s time to turn it over for the next family to enjoy.” Some of the Bergerons' favorite memories are sitting in the living room around the piano and fireplace (one of three in the house), and enjoying the pool area, including the pool house which features a kitchen, bath, sitting room and grilling area. A full outdoor kitchen is also currently under construction. Chi says that of the ten acres, five Sophisticated Woman | May 2022 27
home feature were left in their natural state offering privacy and the feel of a resort. Nature trails and boardwalks wind throughout the trees leading to their 125-foot dock on the river. An additional covered dock measures 100 feet. “It’s easy to forget you’re in Mandeville back here. It’s a real retreat, but still incredibly convenient.” Chi explains more of the history of the house saying that the previous owner named their street after the abundance of irises on the property. That owner also designed the house and grounds according to the principles of feng shui which includes achieving balance, openness, and letting in air, light and nature. Building on that initial plan, the Bergerons have elevated the design with their own improvements to its beauty, form and function to create a home that will be a dream come true for its next fun-loving family. WITH MAY FLOWERS on the horizon, ‘tis the season for gardening enthusiasts. If you’re interested in upping your gardening game, the LSU AgCenter offers The Louisiana Master Gardener Program. In this volunteer development program, Master Gardener volunteers are highly trained and provide proven, research-based educational programs to Louisiana residents. Together, new and tenured volunteers provided as much as 39,788 hours per year of volunteer service throughout the state in the past. Those hours equate to 22 full-time employees and an economic impact of just over $1.2 million dollars. Volunteers continue their education by completing continuing education units (CEUs). Since its inception in 1994, more than 3,500 individuals have participated in the program to become certified Louisiana Master Gardeners. Volunteers assist Louisiana Cooperative Extension Service personnel extend the educational arm of the university to the public by providing horticultural information based on university research and recommendations. In other words, the Louisiana Master Gardener program is a place for volunteers to have a fun, educational experience while serving the community in which they live. Any Louisiana resident with an interest in horticulture and a desire to volunteer for community service may apply to the Master Gardener Training Program. To help you decide if you should apply to be a Master Gardener, ask yourself these questions: • • • •
Do I want to learn more about the culture and maintenance of many types of plants? Am I eager to participate in a practical and intense training program? Do I look forward to sharing my knowledge with people in my community? Do I have enough time to attend training and to complete the volunteer service?
If you answered yes to these questions, the Master Gardener program could be for you. Although the training is rigorous, it can be rewarding. For more information visit lsuagcenter.com.
ONE IMPORTANT DOCUMENT
to
consider having in place is a Power of Attorney. The person who creates the document and gives someone the right to legally act on their behalf is called the Mandatary, and the person accepting that power granted to them is called the Agent. A Power of Attorney is a document that can take effect, should you ever become incapacitated or incapable of making financial or medical decisions on your own. It can also come into play if your competency is not at issue, but you are unable to be present to sign, and you need your Agent to sign on your behalf. You have different options when generating a Power of Attorney. The first option is a General Power of Attorney that encompasses all decisionmaking aspects, including financial and health decisions. The second is a Healthcare Power of Attorney that specifically addresses HIPPA laws and allows for your loved ones to make informed decisions regarding your healthcare in the event that you are unable to make these decisions on your own. Both kinds of Powers of Attorney are usually durable or considered legally effective for the duration of the Mandatary’s life, but it is important to note that Powers of Attorney terminate upon the death of either the Mandatary or the Agent. You can revoke your Power of Attorney at any time, and you can change Agents, as well. Just be sure to take any steps necessary to ensure that everything is up-to-date and legally binding. As always, it is important to consult with an attorney who primarily handles these areas of law to discuss further details of these documents, decide what is appropriate for your situation, and help ensure your financial and health needs are being met, so that you can relax and know you are secure and protected.

A therapy animal is trained to provide comfort to the public at large. While the most common animal that you’ll see are dogs, therapy animals just to name a few other species. These animals can be used in a variety of settings to help decrease stress and bring a sense of home to people who need it most. Some places you will see therapy animals include hospitals, schools, assisted living homes, disaster zones, and courthouses. There is no national registry or certification required for a therapy animal. However, due to the interactions with the public, most organizations you will want to visit with your animal will require a few things: (1) you and your animal are trained through a third-party organization, (2) your animal is nonaggressive to humans and animals, and (3) you and your animal have liability insurance coverage.

To keep your coverage with the organization you train and volunteer under, you typically cannot ask for payment for your visits with your animal.

Piriformis Syndrome: An Uncommon Cause of Sciatica WRITTEN BY BILLY BEAUDREAU, PT, DPT, MTC, OCS, FAAOMPT
MANY PEOPLE SUFFER
and have a
reduced quality of life due to pain, numbness, and tingling down the legs. For a lot of people this can be caused by pinched nerves in the lower back and responds very well to conservative treatment. But what if your pain doesn’t go away? Your issues may be caused by Piriformis Syndrome. Piriformis Syndrome is caused by the Sciatic Nerve (large nerve in the back of the hips/legs that causes Sciatica) getting pinched by a small muscle in your hips called your Piriformis. Pain is usually triggered by prolonged sitting, climbing stairs, sitting on a wallet or cell phone, or prolonged walking/jogging. Estimates say up to 5% of sciatica is caused by this condition. Symptoms commonly consist of sharp radiating pain in the buttocks, spasms in the muscles of the buttocks that progressed towards numbness and tingling down the legs. Treatment for Piriformis syndrome begins

with an accurate diagnosis. A comprehensive physical therapy evaluation will help to determine why the piriformis muscle is spasming and assist in strengthening and stretching surrounding muscles to offload the stress from the Piriformis muscle. As the piriformis muscle calms down, the pressure on the Sciatic nerve is reduced. Your Physical Therapist will also discuss methods you can use on your own to reduce the irritation to this muscle. With proper treatment, the prognosis for this condition is really good! Bottom line, if you have been suffering from pain, numbness, and tingling that hasn’t responded well to previous treatment, talk to a Doctor of Physical Therapy about whether you may have Piriformis Syndrome. The sooner your find out, the faster you can begin to find relief.
