Paddle Through the Marsh Big Branch Marsh National Wildlife Refuge is 15,000 acres of pine flatwoods and coastal marsh. This diverse habitat is home to hundreds of bird species, including the bald eagles and the rare red-cockaded woodpecker. Three-hour guided canoe tours on Bayou Lacombe begin at 9 am. Spring tour dates are March 7, 21, and 28. Also offered is the Junior Ranger Spring Break Day Camp for kids ages 8 to 10 held April, 13 through April 17. Campers enjoy outdoor activities such as canoeing, fishing, wildlife observation, hiking, and habitat restoration projects. For information, please visit: fws.gov/refuge/Big_Branch_Marsh.
Roam the Mandeville Lakefront Cycle or walk the seawall paths under moss-hung oak trees and check out two playgrounds located on the east and west ends. Kids fly high on the swing-sets near the intersection of Lakeshore Drive and Carroll Street, and restaurants, shopping and even a candy store are in walking distance.
Stroll or Cycle the Tammany Trace The 31-mile path offers a scenic path through St. Tammany Parish with trailheads in Covington, Abita Springs, Mandeville, Lacombe and Slidell. Highlights include playgrounds at the Abita Springs and Koop Drive trailheads, a drawbridge over Bayou Lacombe and splash pads at the Mandeville and Abita Springs trailheads. Bike rentals are available in Covington and Mandeville.
Splish Splash Along with the Abita and Mandeville trailhead locations, interactive water features are located at the Pearl River Water Park at James Lavigne Park, Heritage Park in Slidell, Chappapeela Sports Park in Hammond, at the East Lakefront Park in Mandeville, and at Fontainebleau State Park.
Fontainebleau State Park in Mandeville This historic park offers 2,800 acres with beautiful cabins built over Lake Pontchartrain, more than 300 campsites, nature trails, lodge, sandy beach, playground, and the ruins of an 1829 sugar mill situated among towering oaks. Visit the sandy beach and shallow Lake Pontchartrain swimming area and cook out on the nearby barbecue grills. Join a guided hike and learn about the history and features of the park on Tuesdays, Fridays and Sundays at 10 am, and on Fridays and Saturdays at 1 pm. The Visitor Center is open from 9 am to 5:30 pm Saturday through Wednesday. For more information, call 985-624-4443.
Bogue Chitto State Park in Franklinton Visitors experience diverse natural habitats on the scenic Bogue Chitto River—one of most traveled rivers in Louisiana by canoe, kayak and tubing enthusiasts. The 1,786-acre site includes small streams, cypress tupelo swamps, a hardwood forest and a rolling landscape that makes for great hiking trips. Overnight visitors can choose from tent and RV camping to cabins overlooking the bluffs. The park also offers a group camp and a conference room. 14 miles of equestrian trails wind through interesting topography with the trailhead located near Fricke's Cave. 11 stocked lakes offer a variety of freshwater fish like bass, perch, brim, and catfish. Youth Service Bureau's Chef Soirée: The Purpose Behind the Party THE PARTY ENTICES guests with a cornucopia of fine food and drink, two live music stages, fireworks, a new car raffle and a vibe that sets the grounds surrounding the Covington Trailhead abuzz. It’s no wonder Chef Soirée has grown into a household name over the last 35 years, now drawing approximately 3,000 revelers. And while scores of volunteers work tirelessly to create a night of frivolity for guests, the motivation is the ongoing, serious purpose of the beneficiary. The dedicated staff of 30 at the Youth Service Bureau (YSB) relentlessly provide advocacy, counseling, education and intervention for St. Tammany and Washington Parish youth and their families. “They’re often shocked, angry and confused, never expecting to be in a situation requiring them to talk to us. Drugs and alcohol don’t discriminate. Substance use and addiction can affect almost any family,” says Mary Slazer, YSB President and CEO. Slazer explains that YSB administers many programs: CASA—special advocates for abused and neglected children; TASC addressing truancy; FINS aimed at juvenile delinquency prevention; Crossroads for juvenile delinquency intervention; and Options, which offers outpatient substance abuse treatment for teens. “Conservative estimates show one in four high-schoolers has experimented with pot. This is regardless of school, religion, gender or any socioeconomic factors—it’s across the board,” continues Slazer. “So chances are, your child or someone they’re close to is in this group.” YSB Licensed addiction counselor Jennifer Walkenford concurs, “What’s so dangerous is that this isn’t the pot of the 70s and 80s. Today’s strains have tripled in potency. Vape pens are a problem, but dab pens take it to the next level. Two puffs on a dab pen is equivalent to smoking a whole joint. The high lasts up to six hours.” Although dab refers to the amount of wax held in the pen’s small cartridge, that “dab” is 97% hallucinogenic THC. Along with its inconspicuous size, the pen looks like a writing instrument, so it’s easily hidden. And because the smell only lingers for about five seconds, Walkenford says teens can take a puff while walking to the bus in the morning, sneak another on the way home and go in their room at night for a puff before bed. That results in the potential for them to be high all day, every day. Whether referred by the courts, the school system or self-referred, Walkenford says parents come in to the Options program sometimes
blindsided, sometimes aware there was a problem, but always overwhelmed. “Kids can buy drugs from other kids at their school and even from siblings. They’re easy to get, easy to hide, affordable and highly addictive to children whose center of reasoning, their not-yet-developed frontal cortex, is further impaired. With today’s increased strength and frequency of drug use, issues like irritability, fights with parents, loss of friends, declining grades and lack of empathy escalate much more quickly into problems at school and problems with the law.” Even when parents try to talk with their kids, they are often so heavily caught in the cycle, neither parent nor child can use reason to better the situation. “But”, says the passionate counselor, “there is hope.” Options works to find the child’s internal motivation—for example sports, music or family relationships. Walkenford says the beginning of empathy and reasoning return after remaining sober for about 30 days, and she relays a common scenario. “A star athlete came in conflicted about why they should choose sports over pot. We worked on the motivation that if they didn’t stay on the high school team, they would never progress to a college team forfeiting any hope of a professional sports career. After the family’s completion of the entire 12-week program including individual and group therapy, drug testing and parent education, the student’s grades improved dramatically, they were signed to a collegiate scholarship, and the parents learned to better communicate and bond with their child.” For other youth who don’t have the lifeline of sports, creative interests or parental help, Walkenford says that often their motivation is to break the cycle of dysfunction. “We teach them to look to themselves, to see their value, develop meaningful relationships and improve academically.” With emotion, her compassion and love shine through as she speaks of those under her care. “These kids are so awesome—we have much success with them, and they fill me with hope to continue doing work that can be very difficult at times. I can’t say enough about this organization and the teamwork and sense of family here. It’s too intense not to support each other in every way. "Hats Off" to Token of Love! MELISSA CAVALIER is the Executive Director for Token of Love Foundation, a Covington based nonprofit that helps women who have come from situations of abuse, addiction and human sex trafficking. Melissa is a New Orleans native and a graduate of Southeastern Louisiana University. She has years of experience in business development with a particular interest in the staffing industry, and she is passionate about education. She has served on the education committee for the Hammond Chamber of Commerce and fought alongside others for reform in Tangipahoa Parish. As the newly appointed Executive Director, Melissa is devoted to assisting women in the community overcome the trials of their pasts by helping to cast a vision for their futures. Prior to her role as Executive Director, she served as the foundation's Education and Workforce Development Director. Her passion has always been speaking out for women's rights, so taking the helm at the Token of Love Foundation was a natural fit for her. Her calling to help exploited women was fueled by her own difficult trials that she experienced in the workplace in 2011. Before the prevalence of the #MeToo movement of 2017, she felt there was very little that could be done, other than leave her place of employment. Melissa found herself at a crossroads in her career wherein she had to make
a decision to continue to endure abuse and harassment for the sake of supporting her family, or muster up the courage to fight back and take a stand. In the wake of such a difficult ordeal, she realized that she was not alone in her struggles. It was out of these struggles that her calling to help empower women was born. Many women in our local communities and across the country endure abuse and exploitation every day in order to continue supporting themselves and their families. With her knowledge of business and the staffing industry, Melissa created the Esther Elizabeth Scholarship Fund through the Token of Love Foundation. This scholarship fund provides women the opportunity to go back to school to pursue their interests and fuel their dreams. Token of Love Foundation also provides vocational training, life coaching and Christian counseling for women through their New Life Program. This year, Sophisticated Woman is honored to have Melissa Cavalier as the Keynote Speaker for our annual "Hats Off" Luncheon. seminars, regional plant sales and tours that have been scheduled nearly every weekend until summer. The following are steps for preparing an area to receive plants. Step One: Remove unwanted vegetation within the desired bed or planting area. This can be done by oldfashioned hand pulling/digging. Be certain to remove the entire root system of the unwanted plants/weeds. What may appear to be dormant above ground may have an extensive set of runners/rhizomes/bulbs below ground. If physical removal is not your style, eradicate existing growth by use of an herbicide such as glyphosate. Always read and follow the complete instructions for proper use and confer with your local nursery if in doubt. Step Two: Turn the soil eight to ten inches with a garden spade or shovel. Break large soil clumps into smaller pieces. Step Three: Add two to four inches of organic matter. This can be from your own compost pile or a favorite blend from your local nurseries in the form of aged manures or finely ground composted pine bark. Step Four: Thoroughly blend the added composts and the existing soil within the prepared bed. Step Five: Rake the bed smooth and level. Create sides at the boundaries to increase drainage because the prepared bed is now at a higher level. The bed is now ready to receive your desired plant. 1. Bring the potatoes to a boil in salted water over medium-high heat. Reduce the heat to low and simmer for 10 minutes until tender. Drain the potatoes and transfer to a large bowl.

2. Add 1/2 cup milk and butter, and mash until smooth. Stir in the remaining milk, flour, egg, salt, pepper, cheese and chopped chives. 3. In another bowl, mix the ground beef, onion, garlic salt, 1 egg, and bread crumbs. 4. Heat the olive oil in a large non-stick skillet and pour in the potato batter, using a spatula to form 3-inch circles. 5. Place about 2 teaspoons of beef mixture filling on the pancakes, spreading the filling almost to the edges. 6. Drop another rounded tablespoon of potato mixture on top of the beef mixture and spread it out to completely cover the mixture.

1 ounce Irish whiskey 1 ounce green chartreuse 1 ounce maraschino liqueur 1 ounce lime 3-5 mint leaves
2 ounces melon liqueor 4 ounces sweet and sour mix 2 ounces lemon-lime soda ½ ounce fresh lime juice
Combine the Irish Whiskey, green chartreuse and maraschino liqueur into cocktail shaker and shake until chilled. Stir in the lime juice. Strain into a rocks glass and garnish with a mint leaf.
Fill shaker with ice. Add melon liqueor, sweet and sour mix, lime juice and lemon-lime soda. Shake well and pour into glass over ice. Add fruit garish and top with lemon-lime soda if desired.

Pat Brister: A Legacy of Distinguished Leadership
AS I BEGIN my first term as St. Tammany Parish President, I’ve started to implement my plans to rebuild trust between Parish Government and our residents, and have plans to create a climate where every business can thrive and prosper with the right infrastructure to support it. We will create an environment where people can easily reach their elected officials to share their ideas and concerns through open lines of communication. And, of course, we’ll continue to build on the sense of community we all know and feel. We will work to ensure every tax dollar is used for what you need and expect from your government—solid infrastructure including wellmaintained roads, enhanced flood protection, and keeping St. Tammany clean. We’ll spend our tax dollars on priority projects that address our basic and most pressing needs in the best, most efficient ways possible, while instilling lasting respect for our environment. Having been in office just over one month, I’ve worked to get to know the people who serve us in the day-to-day operations of Parish Government. I have learned about each department, their functions, and how they bring services to residents. Sadly, during this time, we learned of the untimely passing of Pat Brister, my predecessor. This was a difficult time for Parish Government as well as our community as a whole, as Pat served St. Tammany for 16 years in Parish Government alone. She will be greatly missed. We will continue to work to fulfill our plans for a prosperous and accessible Parish Government. We're all in this together, and together we will go forward into the next four years to shape St. Tammany Parish through trust, accessibility, and community.

PAT BRISTER HAS been lauded as a graceful, compassionate, extraordinary woman with vision, drive, tenacity, and follow-through. A mentor, a trailblazer, an exceptional example of leadership. Here in St. Tammany where her heart and soul were anchored — we knew her best. She loved St. Tammany. She loved the people, the politics and the possibilities. She served St. Tammany in Parish Government for 16 years, but she served in countless other ways. She was a force driven by her passion for helping people who created lasting, generational changes for the betterment of her community and her state. She was instrumental in the start of Hope House, an active participant in builds for Habitat for Humanity St. Tammany Chapters. She was called upon to serve on boards throughout St. Tammany and beyond, including: the St. Tammany Hospital System, Federal Home Loan Bank of Dallas, Louisiana State Museum, Children’s Advocacy Center, St. Tammany Commission on Families, and Volunteers of America. She served as Ambassador to the United Nations Commission on the Status of Women. She participated in You Night, Cancer Survivor Empowerment Programs. She spoke with the youth of St. Tammany and personally recognized their achievements. She loved the Veterans’ community and worked to raise awareness for their causes. Behavioral healthcare was a cause very dear to her heart, and she championed her vision of Safe Haven, as it became a reality. She deeply felt others’ pain and provided resources for help, or personally helped them. She cherished her family. She was a friend to many and a close friend to fewer, but still many — who describe her as someone who loved to entertain and cook for them. Also, someone who loved to dance and sing to the oldies, and someone who made a heck of an Old Fashioned. She and her husband of over 40 years, Joe, were partners in parenthood, business, and life. They faced and defeated illness and dove successfully into politics. She called him her biggest champion. She nurtured him through illness in his final years until his death in 2017. Pat Brister will be remembered as a woman and a public servant leader who lived with passion, vision, purpose and intent. She loved St. Tammany and fought to make it better every single day. Professional Women of St. Tammany PWST is a non-profit group working to empower, educate and support women in the community. It offers unique annual events, monthly luncheons and yearly scholarships.
