Beyond One Lump or Two Sweetener Choices Around the World Condensed milk—the sweetener of choice for the Thai in their steaming cup of steeped hot tea. Sweet, thick and sticky, one can only imagine how it transforms the taste of this hot beverage into rich creamy nectar. Personal preference in what sweetener tea and coffee drinkers choose often comes down to traditions learned through the surrounding culture. The ritual for preparation of Moroccan tea involves several steps including chiseling out morsels of sugar with a copper hammer from a loaf of sugar. These are then added to the already moist ingredients in hefty quantities (about five teaspoons for teaspoon of tea leaves), and topped with boiling water. When the tea has reached its peak flavor (around four minutes) it is poured from the pot at a considerable height from the glass to induce frothing, which aerates the tea. It is then poured back into the pot from the glasses and decanted for a final time in the same fashion, where the flavor is often enhanced with mint, pine nuts and herbs. Often part of a holiday ritual, sweeteners can be used as a
luxuriant symbol of celebration. Wealthy Eastern European Jews were known to celebrate Hanukkah with the flaming tea ceremony. Guests were served their cups of tea accompanied by a sugar cube soaked in brandy which was then ignited. Singing ensued and after a specific cue, the cubes were submerged in the tea, and everyone drank in celebration. The common population of Eastern European Jews were said to drink their tea Russian style—while holding a sugar cube in the teeth in the back of their mouths. The Russians take things a step further, adding rich plum jam directly into the cup for flavor. Jaggery, gur, or panela is made of concentrated sugarcane juice. Because it is unrefined and the molasses remains, it is often a rich to golden brown color. Used in and around the Caribbean, Asia, Africa and Latin America, it is often the sweetener of choice for both coffee and tea. In American society, tea and coffee are rarely served without sugar alternatives. Splenda, Equal, Sweet & Low, Stevia, agave nectar and unrefined sugar are often among the many choices offered. Whether it is the appeal of little or no calories found in aspartame and other sugar substitutes, or the all-natural appeal of plant-based options, Americans are unafraid to embrace something atypical. Throughout the world, traditions range from the English—who (in a tradition dating back into the 17th and 18th centuries) are known for pouring milk into their cups ahead of the hot beverage to prevent cracks in the fine china, to the Koreans who choose cinnamon and ginger to sweeten the pot, to here in America, where everything from sugar, to sugar substitutes, to honey and molasses find their way into our cups. Convenience Stores Becoming the Go-To Place for Coffee While the proliferation of specialty coffee houses has abated over the last few years, new figures from the National Coffee Association (NCA) show that coffee consumption has rebounded to 2008-2009 industry high levels. With 40 percent of 18-24 year-olds and more than half of 25-39 year-olds drinking coffee daily, the opportunity for substantial market growth lies with convenience stores. In fact, consumers stop to buy coffee from gas station convenience stores more than they fill up their cars. That is certainly the case for James Ybarzabal of Mandeville, LA. As the only member of his family that drinks coffee, James finds it easier to stop at the corner gas station for his morning cup of joe. “The coffee is always fresh and hot,” he said. “I never have to worry about stocking up on coffee, cream and sugar at home. It’s all right here for me. I go in, pour and pay, and get back on the road in no time.” According to the NCA, regular coffee is the number one hot beverage of choice among c-store customers, with 78 percent of sales in the hot dispensed beverage category. While gourmet coffee and cappuccino are a distant second with 13 percent, this segment of the market has great potential. Over the last few years, this category has grown by 20 percent annually.

Proposing a Toast—Tasty Ideas for Holiday Beverages While it may seem like the least exciting event you will plan this holiday season, it does not have to be. You can add a distinct flair to any typical office fête with creative choices in the beverage department. By creating an area where party guests can design their own coffee, tea or hot chocolate concoctions, both conversation and socialization are encouraged. The flow of the party is kept alive and guests have the option to enjoy a simple cup of coffee, or create a visually and flavorfully stimulating indulgence. Start off with the basics, which include: freshly brewed coffee— both regular and decaffeinated, an ample tea bag and chocolate mix selection with hot water at the ready, cups, spoons, napkins, and plates and tastefully provided waste containers. Let the party guests finish their own drinks with delectable extras. Bowls of toppings should be set out with spoons for serving.
