We met up with Chelsea at About Face of Mandeville as she prepped for her photo shoot with the help of Natalie Cogan and Heather Arthur. As Natalie applied her make up, we got the chance to know a different side of Chelsea.
SW: What does your usual day consist of ? CS: A nice long walk in the morning with my dog,
Bourré, before work. Then, I head to work where I teach classes all morning. After lunch, I head home to do behind the scenes work for The Little Gym. I usually wrap it up with some house chores and another long walk with Mr. B before dinner! I love to go to bed early!

Training Studios A Practical Approach to Achieving the Best You WRITTEN BY ANNA LEDONNE
AS A SINGLE mother of three and owner of an expanding business, Ingrid Rinck knows what it feels like to put your own health last on the list of a long line of priorities. “Making time to wash your hair or shave your legs can be a struggle, not to mention making time to actually go to the gym or prepare a healthy meal,” Ingrid says. This is what originally inspired the idea behind FITCAMP, a place where women would want to go at the end of the day for an upbeat calorie-burning workout and a sense of camaraderie. Over the past five years, this idea has blossomed into a successful business, trumpeted by its many happy clients. For example, Lauren Davis, a mother of two under the age of three, wondered if she’d ever be able to get out of her post-baby weight loss plateau, “FITCAMP was my answer. The location, affordability and creative variety of classes was an immediate fit for me. I am down 30 pounds in five months and never looking back!” she said. Six-week programs, no contracts and effective, original choreographed workouts like Glow in the Dark Hip Hop and Party Step keep people motivated, having fun and losing weight. However, even with over 17 years of personal training experience, Ingrid is not impervious to the health obstacles that women face on a daily basis. Between the success and growth of her business and the birth of her third child, Ingrid’s weight had climbed to over 200 pounds and she found herself making the same excuses she tells her clients not to use. “I finally decided to use the tools at my disposal and make a change. It’s like I always tell my clients, you need to be emotionally and mentally ready to do something about it.” Embracing this mindset, Ingrid has subsequently lost over 120 pounds in eight months. “It’s wonderful to be able to physically embody your philosophy and show people, it really does work! It can be done if you want to.” One major hurdle women face when trying to lose weight is what they’re eating and the time to make it. “You have to take in fewer calories than you are burning in order to lose weight.
It’s that simple,” Ingrid explains, “A calorie restricted program for weight loss allows the body to burn calories from your fat storage. But it is often difficult to prepare meals for the week when you don’t know what to cook or you don’t have time to do it.” Another seemingly simple problem has inspired another solution—Sensible Portions meals. Sensible Portions meals are all portioned at 1000 calories (or 1300 calories for men), the ideal calorie count for weight loss. Each week the meals are different, but you will receive three meals per day for five days, and the kicker is—it’s only $80 per week. That’s probably less than the money you would spend buying all of the food at the grocery. Dina Carbello lost four pounds in her first three days on the meal plan, “I was on another much more expensive meal plan and lost no weight, I am so grateful Ingrid offers an affordable meal plan that actually works.”

It’s this personal attention to detail that sets Ingrid and her trainers apart from the rest. All trainers at FITCAMP were once clients, at one-time struggling and ultimately coming to optimum fitness. These trainers, like Ingrid, are inspired by their own journey to bring others to their weight-loss goals. Presently, he is a member of multiple continuing education groups including The Lake Pontchartrain Study Club and the Slidell Spear Study Club. In addition, he is a part-time associate clinical professor at the LSU School of Dentistry, where his father also teaches

OVER THE PAST 20 years, Dr. Charles A. Schof of the Mandeville Center for Dental Excellence has been a part of the evolution of the dental field and one of the most exciting changes he has seen in his career is the affordability and availability of dental implants. For many people with serious dental problems, a chance at optimum oral health can feel hopeless. health Beach Bummers ONCE, A LAWYER came into my office with an unusual problem—a perfectly circular ring of dark pigment on his abdomen. He’d recently spent a week vacationing in the Caribbean. I asked (rhetorically), “Did you, by chance, drink any margaritas?” Believe it or not, he had! The dark circle was pigmentation caused by a reaction between the tropical sun and lime juice which had dripped down the side of the glass while resting on his abdomen, forming a perfect ring. Here are a few suggestions for other, more serious and painful conditions encountered at the beach: Jellyfish stings result from tiny pods of poison within their tentacles, which attach to the skin. Remove the tentacles by scraping with a credit card or similar sharp edge, then bathe in salt water and/or apply vinegar or baking soda made into paste with saltwater or seawater. Do not rub the site or use fresh water as it activates the poison. Sting ray wounds are also common and result usually from stepping on a ray buried in the sand. The intense pain can be remedied by flushing with hot water, whether from a tap or from the out-flowing “pisser” on an outboard motor, after which medical attention should be sought.

requires careful attention to detail and fine technique. Steps must be taken to ensure the patient has a comfortable recovery and that the surrounding teeth and bone will not be adversely affected. This is why Dr. Nathan Brown approaches each procedure, no matter how “routine” or simple, with utmost care. Renowned landscaper, Ellen Shipman, worked on that garden until her death in 1950. Edith and Edgar Stern, owners of the home, made a lifetime commitment to making their home a place of beauty inside and out and sharing their love of Nature with their community. Opened in 1998, the Discovery Garden is a place of education for children and adults as well. Hours are Sunday 1–5 p.m. and Monday–Saturday 10 a.m.–5 p.m.
Houmas House Plantation and Gardens— Stunning gardens abound here year round. Wonderful examples of Louisiana plant life, as well as exotic plants, will be sure to inspire you with ideas for your own backyard. Sit under the oaks or stroll around many beautiful water features. Stirred Not Shaken: The Louisiana Craft Cocktail WRITTEN BY JAN ROBERT
ALTHOUGH I WAS pretty lousy at chemistry, I always wanted a chemistry set. You remember what I am talking about. Those really cool kits that came neatly packaged with the beakers and test tubes and little glass pipettes and a microscope. Even the words associated with chemistry had sex appeal: osmosis and diffusion, solvents and solutes, acids, bases and combustion. I always imagined myself precipitating a chemical reaction dressed in a white lab coat standing over a Bunsen burner with some concoction bubbling and hissing wildly as I stirred and chanted some voodoo prayer. Never did get that chemistry set. 16 Sophisticated Woman | August 2015
But now, I have discovered that I can practice chemistry with my friends in my own kitchen. And we can consume our concoctions. And not die. In fact, we may even feel better. I am referring to the craft cocktail, brewery and distillery movement that has swept across the country in recent years and has a strong presence on the Northshore in our local bars and restaurants. Craft brew houses are prolific. The Barley Oak and Old Rail Brewing in Mandeville, the granddaddy of them all, Abita Brewery, and the Covington Brewhouse have earned local and national recognition. Louisiana entrepreneurs at New Orleans Rum, Bayou Rum and
Rougaroux are true locavores and use only Louisiana grown sugar cane and other local products to distill and age their premium small batch rums. And, how many American cities have their own signature cocktail? New Orleans has the Sazerac, which has remained unchanged since 1874 and holds the distinct honor of being declared the official cocktail of the city. The entire process of creating the perfect Louisiana summer cocktail enraptures me. From making the oversized ice cubes, to the preparation of infused fruit syrups, muddled herbs and shrubs, to the mixing of other local ingredients resulting in the beguiling summer cocktail. I love the blackberry basil infused vodka cocktail at Lola in Covington. Using local seasonal blueberries and homegrown basil, I have concocted a knock off basil blueberry infused drink that will satisfy your thirst on a hot summer night. Meet the Blueberry-Basil Vodka Martini. Last week I discovered a locally made syrup from Louisiana sugar cane by Cocktail and Sons. I purchased the “Spiced Demarara” which is perfect for my Rye based Old Fashioned. Complex syrup for simple drinks. Stir and do not shake! Looking for more cool summer drink recipes? Blueberry Basil Vodka Martini YOU WILL NEED
a cocktail shaker and a muddler to make this drink. Ingredients: 2 handfuls of fresh Louisiana blueberries 6–8 basil leaves 1–2 teaspoons of lime juice 1 teaspoon simple syrup (can omit if you prefer) 2 ounces vodka 1 ounce St. Germain Splash of club soda or sparkling water Directions: Place blueberries, basil leaves, lime juice, and simple syrup in a cocktail shaker. Muddle all ingredients well. Add vodka and St. Germain. Then add a little ice to chill the ingredients. Cover cocktail shaker, shake well then pour through a strainer into a martini glass. Garnish with basil leaves and a couple of fresh blueberries. Cheers!

Use a muddler to crush sugar cube and combine with bitters or a spoon to stir syrup with bitters. Add Rye Whiskey. Then add one over sized perfectly formed ice cube and a splash of soda. (I make mine in the oversized square or sphere silicone ice cube trays.) Garnish with orange zest and sip slowly. Mmmmmm!

Memories of Writing for SW JUNE 2002 was the first month my advice column was published in Sophisticated Woman Magazine. I was so pleased to see my words in print that I drove around to distribution sights and picked up copies of the magazine. I didn’t want to take all the copies from any one site, so I kept driving. I tried to casually work the column into conversations. “Like you were a teenager once, right. You might like to see this column that I wrote...”
I have supplied a column for every publication since June 2002. I loved that June column about adolescents, their physical, emotional, intellectual and spiritual needs. I have supplied a column for every publication since June 2002. The issue we all missed was the Katrina aftermath issue of September 2005. My October 2005 column was about the exercise of our faith, so tested in the days getting past the storm. I have the same excitement today that I had at the beginning about writing the column. I love people telling me that something that I have written has had a positive impact and they shared the column with others. They used to clip and mail but now usually email or share on Facebook. walked into The Little Gym in Baton Rouge during her sophomore year of college, she was looking for a part-time job. Never in her wildest dreams did she think she would find her career. Yet, the concept and teaching philosophy was such a natural fit for this kinesiology major that she actually began the paperwork to open a Lafayette franchise two months before graduation. Immediately after she received her degree, Chelsea jumped right into the role of business owner; and she hasn’t looked back since. In fact, she opened her second gym earlier this year in Covington. Just as it was with the gym in Lafayette, timing and circumstances aligned perfectly to make the decision to expand to Covington an easy one. “My parents, who have partnered with me in the gyms, are actively involved in the Lafayette location. We have a great staff in place there, so I knew it would be in good hands,” she explained. “We decided to open our second location on the Northshore because we knew the concept would compliment the family-friendly nature of the area.” Chelsea actually scouted locations for the gym at the same time she searched for a place to live. “I knew I needed to be in close proximity to the Covington gym in order to give it the time and attention it deserved. I wasn’t going to open if I couldn’t be here and be fully committed. She continued, “I am at a place in my life where I can give my blood, sweat and tears to this expansion.” While the location has been open less than a year, Chelsea said parents are coming from as far away as Slidell to take part in The Little Gym’s programming. The Little Gym concept was founded in 1976 by Robin Wes. An innovative educator, musician and kinesiologist, he wanted to create a place for children to explore their physical development, while growing socially, emotionally and intellectually. The Little Gym offers themed, age-appropriate learning units for children ages four months to 12 years. The curriculum leads to a natural progression of skills, with each lesson building from the previous week. As Chelsea explained, The Little Gym teaches gymnastics skills in a non-competitive environment. While classes are

Not pictured: Devin Brown. taught under USA Gymnastics guidelines, the focus is on the spirit to achieve rather than the pressure to win. “We teach skills and development techniques to build Olympic-sized confidence,” she said. Over the course of the last 35 years, The Little Gym has expanded its programming to include karate, sports skills and dance—tap, ballet, creative movement and hip hop. Chelsea said she expects to begin offering these classes at the Northshore location early next year. The Little Gym also offers several activities that not only help children, but parents as well. Parent-Child Classes (up to age three) are available to help develop critical social and developmental skills while fostering the bonds between parent and child. Turnkey birthday party packages allow parents to relax and focus their attention on their child and their guests. With a 10:1 ratio of children to staff during a party and an exclusive partnership with Lego and Duplo, there is no shortage of fun. “Through the years, we’ve had families hold their child’s first birthday party with us, and parties every year thereafter,” Chelsea said. “It is rewarding to have families place so much trust in us.” One Friday each month, The Little Gym also offers Parent Survival Night from 6–9 p.m. “Bathroom independent children, three to 12 years-old, are engaged in activities and games in a safe, controlled environment while parents can receive a muchneeded time out,” she said. Together with her beloved Shih Tzu, Bourré, Chelsea said she is settling in to life on the Northshore. In addition to childhood and college friends who live in the area, she has forged friendships with many of the moms whose children attend The Little Gym. With dining out, attending sports events and watching movies as some of her favorite pastimes, the area is as perfect a fit for her on a personal level as The Little Gym has been for her on a professional one.
“The Little Gym corporation has been amazing. It is not only a company that provides support, training and structure based on 35 years of experience. It’s also a company that believes in giving back,” Chelsea said. Through its Big Heart philanthropy, the Little Gym supports the SeriousFun Children’s Network, a global community of camps and programs that serve children coping with serious illnesses and their families. “Being able to accommodate special needs children goes a long way to empowering them. We want all of our children to feel special, not different,” she explained. One of the most rewarding parts of Chelsea’s career is one that she could not have foreseen when she started as a part-time gymnastics teacher at the Little Gym in Baton Rouge. With two of her own franchises, Chelsea now has the ability to offer employment and career opportunities to young people who are just like she was seven years ago. health What Can Exercise Do for You? AS WE ALL KNOW, exercise can be beneficial when it is done regularly and the right way. Its benefits include weight loss by burning calories, lowering blood pressure, and controlling blood sugar. It can also lower stress, help with depression, keep bones strong, and decrease cardiovascular risk for stroke & heart attack. There are three main types of exercise: 1. Aerobic: raises one’s heart rate and thus burns calories. (e.g. walking, running, sprinting) 2. Resistance training: helps strengthen muscles. (e.g. weight lifting) 3. Stretching: Helps your muscles and joints move more easily.
However, besides providing benefits to you, exercise can be harmful when you’re not doing it right, either by being unfamiliar with the exercise program you’re doing or being careless with the way you approach exercise. Being prepared before each exercise regimen is important; examples include stretching before and after to prevent muscle/joint injury and staying well hydrated to prevent dehydration. Some of the common harmful effects of exercise, to name a few, include bodily injury, popping a hernia, or acute rhabdomyolysis and renal failure (especially seen in those individuals who use anabolic steroids or muscle building supplements and are not well-hydrated). Furthermore, exercise can cause a heart attack, especially if you have an underlying coronary artery disease and have been sedentary too long. YELLOW CROCUSES are the first sign of spring. They are small flowers that can induce great change, and in this novel, the tradition of searching for them makes the greatest of differences. Set in Virginia in the decades before the Civil War, Yellow Crocus by Laila Ibrahim tells the true story of Lisbeth and Mattie. Lisbeth Wainwright is the privileged daughter of a Virginia plantation owner, and Mattie is a black slave on that plantation, who is chosen to become Lisbeth’s wet nurse. Ripped from her own three-month son in the early hours of the morning, Mattie is brought to the big house and given this milky white little girl to care for. And care for her she did. The bond between Mattie and Lisbeth grew with every passing day. As Lisbeth grew, she loved Mattie with all her heart and came to know Mattie’s family as well as her own. She even teaches Mattie’s little boy to read and write. As a child, she had no idea what that could do for her slaves in the changing times of abolitionists. Even after Mattie is ripped away from her, that bond remains with Lisbeth throughout her life, forcing her to view things differently than the rest of her world. legal Immediate Access to Decedent’s Assets SOMETIMES IT IS NECESSARY

to access a decedent’s assets rather quickly in order to pay funeral costs and other important immediate expenses. However, in many cases we find that the decedent’s accounts have already been frozen when the institution is made aware of the decedent’s death. Depending on certain circumstances, there may be a quick and easy solution to accessing some of these monies. If the decedent did not have a Will (this means the decedent died “intestate”) and leaves a surviving spouse and/or heirs (usually children), they may access up to $5,000 from the financial institution by providing them with an affidavit stating the aforementioned facts. Most banks already have these affidavits available for you if you inquire. Even if the decedent had a Last Will (e.g. was not “intestate”), and leaves only a surviving spouse, then a bank may pay to the surviving spouse up to $10,000 without needing any court proceedings. The surviving spouse must submit an affidavit (again, most banks have these readily available) stating that the total funds withdrawn using this procedure have not exceeded $10,000. The surviving spouse (or children if no surviving spouse) may also receive all of a decedent’s last wages,
sick leave, unpaid leave, and/or any other benefits due the decedent from their employer, regardless of value. The employer will require the surviving spouse (or children, if no spouse) to request the payment in a writing which shall be witnessed by two people stating the facts similar to the affidavits above. Many employers will have these forms available that have already been drafted by their legal teams. If a decedent’s gross estate is valued at $75,000 or less, and they have died intestate, then there is no judicial procedure needed to transfer title to the rest of the decedent’s assets. Please see my recent June 2015 article regarding “Affidavits of Small Succession” for a more detailed discussion. In most situations, an attorney is eventually needed to transfer a decedent’s assets to their loved ones through a formal “Succession” procedure approved by the court, but the above can be extraordinarily helpful in those circumstances where these assets are needed immediately. French Connection WHEN ANDREA AND JAMISON Bagwell purchased their home on the sixth hole of Tchefuncta Country Club, they wanted the interior to be just as stunning as the surrounding landscape. Andrea has always been a Francophile and collector of antiques, so Anne Hammett and Cindy St. Romain, the designers at St. Romain Interiors were a natural fit to decorate a home for the family of four. The home strikes the perfect cord of traditional and modern with furniture sourced through St. Romain Interiors and some of the homeowners’ own collection of antiques. “When we bought the house, there were a lot of different colors on the walls and it wasn’t very well defined, so
Cindy and Anne came in and unified the entire space,” says Andrea. The travertine floors are accented by a custom paint color, similar to Sherwin William’s Ivory Lace. “Once we came in and ‘neutralized’ the area, it was easy to design for the Bagwell’s modern French style,” says Anne. The living room is bright and open, anchored by a view of the golf course, framed by silk taffeta custom drapes in a shade of butter cream. Beneath the window, a French antique settee upholstered in burlap is accented with an antique Rebecca Vizard embroidered pillow. A new gilded, glass coffee table sits atop a sisal rug and brings a bit of modernity into the mostly
old world room. The sofa and chairs are both custom slip covered in Belgian linen. The sofa is appointed with custom pillows and flanked by antique brass pharmacy lamps to lend a bit of added character. “We love using antiques in our designs because each piece has a unique story and history behind it,” adds Cindy. These types of timeless pieces, like the antique chest and gold gilt French bergere chairs in the living room entryway, transform and define the space. Solid crystal balustrade lamps adorn the chest along with an antique French architectural element. Andrea actually created the arrangement of shadowboxed black coral herself, creating an interesting design feature. Sophisticated Woman | August 2015 33
Breakfast Room: “We wanted the breakfast room to be the room we use on a daily basis. Even when we have guests over, we rarely use the dining room. This is where we spend the majority of our time,” says Andrea. The antique Belgian farm table is the focal point of this space, enhanced by eighteenth century candlesticks and a Swedish dough bowl filled with aromatic lemons. Surrounded by Louis XVI hat back chairs with original paint and upholstered in Belgian linen, the room easily transitions from a casual breakfast for their two children, Harrison and Hudsyn, to an elegant dinner for eight.
Vignette: Surprises abound in every corner of the Bagwell household. This little French, eighteenth century walnut table is appointed with a beautiful Venetian tray, hand blown glasses and lamp sourced from St. Romain Interiors. A French artist’s work hangs beneath an antique starburst mirror creating a perfect hallway vignette. “Cindy and Anne took the antiques we already had and complimented them with more antiques and modern pieces, creating a timeless look we will be able to keep forever, even if it’s in a different home,” explains Andrea.

Jarvis–Bolyard Wedding ON APRIL 6, 2013 at half past six in the evening, Stephanie Jamie Jarvis married David Neil Bolyard, Junior. Stephanie is the daughter of Tom and Bridget Jarvis of Mandeville and David is the son of David Bolyard, Julie Beth Bolyard, Pat Ross and Bill Ross. The ceremony took place on the dock of the Lake Pontchartrain Basin Maritime Museum and was performed by the Reverend Gene Finnell of Munhullen United Methodist Church, a lifelong friend of both families. As guests arrived, they were offered a celebratory cocktail of “Ponchatoula Strawberry Sangria” while they waited for the ceremony to begin. The groom and groomsmen arrived by boat dressed in khaki suits with handmade fishing flies as boutonnieres. The
bridesmaids wore navy blue dupioni silk dresses in different styles. Stephanie’s stunning wedding gown was an ivory mermaid style dress, also of dupioni silk designed by Lea Anne Belter. The bride and bridesmaids’ dresses all came from Olivier Couture. After the ceremony, the guests and bridal party settled into the reception on the patio in front of the museum. They enjoyed food catered by The Lakehouse, Chef Stefani Sollberger and music provided by the band, At Fault. The entire event was styled by the Girls in Black with flowers by Kim Starr Wise. At the end of the reception, the bride and groom departed by boat amid an aisle of lit sparklers and fireworks over the Tchefuncta River.
