JUNE IS THE MONTH
we honor all the men in our lives from the fathers, husbands and sons to the men in our community that lead and help us in our daily lives. In this issue, we have our Men in Business section where we get to meet some interesting men on the Northshore. Our Enterprising Man, Dr. Kevin Darr, welcomed us into his home that was still being rebuilt after the recent floods. We heard about the cutting edge technology he is using in his practice here on the Northshore and met his adorable Labradoodle, Belle. Growing up as a child in my parents’ boarding school, we had a staff that included cooks, so for most of the year, neither of my parents cooked. Our summers were spent traveling, so I was a teenager before a second kitchen was built and my mother began to cook for us on a regular basis. My father would take over the duties one day of the year on Good Friday and spend hours following some complicated fish recipe. One year, the recipe called for grapes, and they were not available in England at that time, so my father purchased tins of fruit cocktail and picked the grapes out of each tin. Once my father retired, he found a passion for cooking and would always surprise us with some delicious and unusual dish when visiting him. The dish was always served with a perfect wine pairing. Recently having gone through the heartbreak of losing my father, all those memories we made over the years are even more treasured. Happy Father’s Day and enjoy the issue,

business If You Build it, Will They Come? YOU KNOW THAT
a web presence is important in today’s digital world, so now you have a shiny, new website. That should do it, right? Not unless you’ve taken a number of steps to be found online. A website is just a tool like a brochure is a tool—it’s only useful if you have the distribution channels to get it into the right hands. If you’re not actively helping customers find your website, it’s about as useful as a stack of brochures sitting on a storeroom shelf. So what can you do? There are two broad categories of search engine optimization (SEO) activities to help your site be found—on-site SEO and off-site digital presence management. This month, we’ll look at on-site SEO. Keywords are key. Keywords describe the contents of a web page. Make a list of five to ten keywords or phrases, and use these throughout the site—in the copy, in headings and in behind-the-scenes HTML code. Not sure which keywords to choose? Think about how customers look for a business like yours. What search terms would they use? Competitors’ sites are another useful source for keyword research.
A website is just a tool like a brochure is a tool.
Each page of your website needs a unique meta description, a short summary of the page contents that shows up in search results. It’s entered in the backend of the site and should contain your most important keywords. Image tags are vital to the success of the website. Search engines cannot read pictures— unless they are coded with an alt (image) tag that describes what the image shows. Alt tags help with SEO. If your site is in a content management system such as WordPress, these are all tasks you can do yourself just as you can update copy. There are also more technical aspects of on-site SEO that require the help of a pro. With these on-site basics, you are on your way to ensuring your site is found.

Balancing the Scales George R.Tucker WRITTEN BY KIM BERGERON PHOTOS BY TOM BALLANTINE
IT’S BEEN SAID that children live what they learn. As the son of a teacher, George Tucker was destined to a lifetime of learning. The many lessons he has embraced along the way have paved the way for him to pay it forward with insightful guidance, invaluable assistance and a passion for possibilities. He firmly believes that his purpose in life is to help others whether through his profession as an attorney or through mentorship of impressionable young adults. Tucker was the youngest of three boys born to Alma Tucker, an educator who taught in the public school system for over 40 years before retiring. Though she will celebrate her 80th birthday this year, she continues to serve as a substitute teacher as needed. As a young boy, Tucker witnessed the challenges of his single mother doing her best to balance responsibilities of a career, parenthood and a desire to help others in need. That has included care for over 30 foster children, two of whom grew up alongside Tucker and his brothers. “We were five boys, all at once,” he laughs. “I don’t know how she did it. I have so much respect for all that she has done for us for her foresight and work ethics she instilled in her children. It’s a debt I can never repay.” Tucker credits his mother’s “no excuses” discipline as the foundation for his career. He also lauds one of his teachers for proving the advice that led to his choice of profession. “It was Wilmeta Hutson at St. Helena Middle School,” he says with a chuckle. “She was a tough teacher, and she saw the full potential in each of us. I remember the day that she told me that because I talked so much, I better find a profession that utilized that, or I was destined to be broke.” That conversation planted the seed for a lofty goal for the seventh grader—he set his sights on becoming an attorney. After graduating high school, Tucker attended Southern University on a football scholarship and was a four year letterman. This leadership role then led to a scholarship offer for Southern Law

School. Ms. Hutson has since passed, but not before her ambitious student had an opportunity to reconnect with her and advise her that he had succeeded in his efforts. She had never doubted he would. His profession and upbringing have provided him the opportunity to do what he loves best—helping others. Tucker says he has always had a tendency to side with the underdog, most likely because he can relate to such due to his modest upbringing. He understands the challenges and wants to provide support to those who may not be aware of their options.
His profession and upbringing have provided him the opportunity to do what he loves best—helping others “I want to be the first choice for the last line of defense to give others a voice when they need it,” he says. “When they put their trust in me, I work to be part of the solution.” The majority of those he serves turn to him following an injury caused by accidents. However, Tucker also addresses those whose constitutional rights have been violated. These are the people that can and should be protected, he says, because everyone has that right. Tucker recalls many of the individuals who have influenced him throughout his 20 years of practice. Among his early mentors are “The Plank Road Boys” a trio of attorneys including Judge Freddie Pitcher, the late Judge Ralph Tyson and the late Edselle Cunningham.
Beyond his profession, Tucker’s desire to help others extends to helping young adults find and build their dreams. “I enjoy providing them exposure to the many facets of life, in the hopes of broadening their perspectives and helping them find their own passions,” he says. “It’s all about developing self-esteem and confidence. They learn that it’s okay to let people see them struggle, and that failure is temporary—it just means they have to work harder if they want to succeed.” He is proud to share that some of the young adults with whom he has worked have gone on to play football for LSU, Southern, Southeastern, Stanford, Utah, and the University of South Carolina. He’s looking forward to the fall when two more will join the LSU Tigers—his godson (and soon-to-be quarterback,) Lindsey Scott Jr., and Edwin Alexander. The attorney recently made the move to Madisonville. “I was drawn to the mystique of the area and its people,” says Tucker. “Though I love Tangipahoa, St. Tammany has a different feel to it, and I was ready for a change. Plus, now I am closer to New Orleans while still having convenient access to the Tangipahoa area. It’s like the best of all worlds.” His is a life filled with the perfect balance of family, career and civic service, and he wouldn’t trade a moment of it for anything else. “I feel like I’m living a dream,” he says. “I get a chance to do what I love to do, both professionally and personally. The opportunity to help people is incredibly rewarding. I feel blessed.”
He sums up his life philosophy in three simple words: Do your best. “It’s how my mother ends every conversation that we have,” he says. “It’s how she motivated us as we were growing up, and how she continues to inspire us to this day.” The mantra remains Tucker’s ideal as he serves those who turn to him for help, whether professionally or personally. He does his best. Tucker Law Firm is located at 124 SW Railroad Ave., Hammond, and can be reached at 985-542-5221. RECENTLY, MY WIFE
and I were watching a local TV morning news show, and the meteorologist said, “It’ll be overcast all day today, so you won’t have to worry about sunscreen!” Any dermatologist will tell you that some of the worst sunburns we see are the result of being unprotected on overcast days. Although the sun’s visible light is obscured, harmful ultraviolet (UV) rays which are largely unaffected by cloud cover are not. In fact, there is sound scientific evidence that UV is actually increased by 25-50 percent in some cloudy conditions making sunscreen that much more necessary. Why is it such a big deal? It’s like chainsmoking’s effect on the lungs. With each lovely tan, one thing is inescapable from the outset— DNA damage to the cells of your skin. Our DNA never forgets each sun exposure but rather accumulates the damage relentlessly until its threshold is reached. At this point, usually in the twenties or thirties, fine wrinkles, pigmented sunspots and eventually abnormal clones of cells start to appear. If unchecked and fertilized by continued UV exposure, skin cancer is likely.

South Louisiana Hearing and Balance Center WRITTEN BY SARAH HERNDON
HEARING IS ONE
of the many things that we take for granted. Once it starts to fail us, or we lose it all together, it becomes problematic. After serving in the Marine Corp, Dr. JJ Martinez received his doctoral degree from LSUHSC New Orleans. He saw a need for audiology services on the Northshore and started the South Louisiana Hearing and Balance Center three years ago. Dr. Martinez offers a myriad of services aimed to help individuals suffering from loss of hearing as well as balance issues. He conducts hearing evaluations on patients of all ages, specializes in aural rehabilitation including hearing aid fittings and takes a special interest in ear protectors like swim plugs and musician monitors. For those coming in complaining of balance problems, Dr. Martinez can perform in-office repositioning therapy for the relief of ailments such as vertigo. The location is ideal for individuals to receive a diagnosis and treatment all in one day. Dr. Martinez’s center is housed with other medical professionals in the same arena. This includes
a separate clinic for Ear, Nose and Throat, facial plastics, sleep disorders and allergies. He is proud that he and his colleagues can provide such quality care and feels this sets them apart from other standalone offices. “A patient does not have to run all over town for these issues and the service is better,” he says. Dr. Martinez likes all of the challenging aspects that come with his job, but he does have a favorite part. “Hearing is one of those things that you don’t miss until it’s gone. Restoring the hearing in those individuals who lost it for whatever reason—that is pretty gratifying,” he says. JJ Martinez, AuD., CCC-A, FAAA The South Louisiana Hearing and Balance Center is located at 1420 N. Causeway Blvd. in Mandeville. For more information, call 985-273-5795 or visit their website southlouisianamd.com.
With each lovely tan, one thing is inescapable from the outset—DNA damage to the cells of your skin. So whether it’s your cute little five-year-old who tans so well for her age, your teenage granddaughter who just has to be brown and beautiful for the prom or your son helping Uncle Jake on construction projects, each missed application of sunscreen is another figurative unfiltered Marlboro cigarette destroying more DNA. Which sunscreen is the best? The one that you’ll use. Broad spectrum UVA/UVB sunscreen is optimal with its unending variations. Long gone are the days of toothpaste-like texture, so seek and ye shall find the one which fits your preferences and your needs! From Pain to Health MATT SLIMMING – STAR PT WRITTEN BY MARIA D’ANTONIO
THERE’S
MORE
to physical therapy than exercise and the latest medical technology. Physical Therapist Matt Slimming realized this when he opened Star Physical Therapy in 2001, and this vision has made the organization stand out for fifteen years. After he graduated from physical therapy school in his home Australia, he decided to
Star Physical Therapy’s true strength, though, is the emphasis on patient care. The therapists do more than restore the patient back to normal function; they also encourage them to adopt a healthier lifestyle. A health coach on staff works with all patients free of charge and guides them into a healthy lifestyle especially through proper diet and exercise. “It’s not easy transitioning to a healthy, exercise lifestyle. My favorite thing is seeing a patient go from being in pain through to being fully functional and into a healthy lifestyle. That has great generational effects.” he com-
The therapists do more than restore the patient back to normal function; they also encourage them to adopt a healthier lifestyle. see the world, including New Orleans. Here, he met his wife Kelly and obtained his first job at Slidell Memorial Hospital. Soon, however, it would be time for a new venture. “I saw that there was a need in the market for people to benefit from a hands-on approach rather than just exercise,” he said. Matt wanted to provide an approach where the therapist uses manual skills in addition to exercise. Patients on the Northshore needed this type of physical therapy, and Star Physical Therapy was born. However, this is just part of the treatment. Using the latest medical equipment in conjunction helps ensure that the clinics provide the best care possible. Matt Slimming explained that the facility has computerized spinal strengthening equipment that measures spinal strength and identifies weaknesses. “The same equipment allows us to strengthen people in a very safe, scientific and efficient manner,” he added, “Almost everyone with neck or back pain has some component of weakness. Unless we can return them to normal strength, they probably won’t get back to 100 percent. This equipment is crucial in achieving that.”
mented. That’s not the only thing Matt loves about Star Physical Therapy. The team effort makes the clinic comforting to the patients as well as a very rewarding place to work. He supports the staff in every way he can, helping them achieve their goals. “This really isn’t about me at all,” he reflected.
Support does not end with the team for him but continues with his wife, Kelly, who also works at Star Physical Therapy and handles much of the behind the scenes financial management that keeps the company thriving. “She’s the backbone of the organization,” he emphasized. The devotion to patient care and convenience does not end with a supportive team of therapists and staff, latest medical equipment, and multifaceted approach to physical therapy. fishing and crabbing skills at an early age from my dad and my grandfather on the Gulf Coast at my grandparents’ home, Cockes’ Roost, in Clermont Harbor, Mississippi. We would rise early in the morning giddy with excitement and head down to Bayou Caddy with our pirogue and fishing gear to hopefully hook a few croakers. My grandmother would fry the croakers and serve these tasty, crunchy little fish with creamy grits for a hearty summer breakfast. Later in the morning, my cousins, siblings and I would load up the wagon with crab nets and chicken parts and hike to the community pier to set our nets for the day. After tying the cold, slimy chicken parts in the middle of the nets, we would carefully cast them off the side of the pier watching until we saw them land upright on the sand below. We would take turns checking the nets all day. What a thrill to pull up a net with one, or maybe more, wriggling crabs, and toss them into the hamper to proudly carry them home to my grandfather, Popee, at the end of the day. I loved these hours of late afternoon quiet time with my grandfather scaling fish and cleaning and boiling hampers of crabs in the dark, damp basement that smelled of marsh and brine. Sometimes in the evenings after sunset, if our parents had an ounce of energy remaining, we would return to the beach with flashlights and gigs to flounder. Beware the unexpecting flounder that thought that he had hidden himself from these young water warriors.
These early experiences prepared me for my later experiences in a professional restaurant kitchen. As an apprentice chef at La Chaudiere, I was expected to clean and cut open sea urchins, shuck fresh oysters, slaughter live lobsters and scale and gut fish. Popee was there in spirit at my side and made sure that I had the skills and the courage to tackle these spiny, foreboding creatures of the sea. Gayden, my husband, recently took our daughter, Maggie, her boyfriend, Fernando, and his brother, Francisco Silva, for a first time fishing experience in Shell Beach. A required stop before hitting the water was Blackie Campo’s Marina in St. Bernard Parish that has been in business since 1905. The Campos have fresh shrimp for bait and lures, and they are always happy to share secrets on where the fish are biting. Hallelujah! It was speckled trout and redfish season. The winds were blowing hard that day so the trout were a little elusive. The redfish, however, were plentiful in the marsh and more protected waters so the novice fishermen, and woman, were successful in landing their limit of 5 redfish per person as well as a couple of lagniappe sheepshead and trout. When the anglers returned home with their fresh catch, we put everyone to work in the kitchen to prepare our favorite redfish classics; Fernando’s ceviche, Gayden’s redfish on the half shell and Maggie’s courtbouillon. You can find all of our favorite redfish recipes at sophisticatedwoman.com/foodies-friends.

Directions: Season filleted meat with Tony’s, a little sea salt and fresh black pepper. Spray oil on the skin side to keep fish from sticking to the grill. Mix butter, garlic and lemon juice in saucepan. Pour over fillets while cooking on grill for approximately 15 minutes (different grills may vary in time cooked). Do not turn the fish. When fillets begin to curl up on the ends, take a spatula and slide it under the fillet to separate it from the skin and scales and serve.

High Fashion at Home in New Orleans, Michele Marcombe is a true native of the “Big Easy.” From rolling on Monkey Hill, to learning to roller skate in Jackson Square, to leaving school early to see a parade, to her dad sneaking her backstage at a local music club to hear the band, New Orleans is the only place where life makes sense. After a brief stint in Atlanta, New York, and Los Angeles working with MTV, Sundance Film Festival and New York and Los Angeles Fashion Weeks, Michele came back to share her love of style with her first love—Louisiana. As the owner of MICHELE Boutique in Mandeville and Creative Director of NOLA Bikinis and POP!Rock PUP!Rock, the fashionista oversees the buying and design of her companies’ collections. After graduating design school and spending time in New York’s fashion industry, Michele moved to Atlanta to begin a career in modeling. However, through working as a fashion show producer with Saks Fifth Avenue and AmericasMart, she found her true calling in the industry and all the excitement it brings. While at Saks Fifth Avenue, Michele was able to work alongside celebrated, high-end designers such as Narciso Rodriguez, Oscar de la Renta, Givenchy and Carolina Herrera just to name a few. Michele’s highly accomplished pet wear collection, PUP!Rock, designed exclusively for Jeffrey NY, was a Swarovski Crystal Design nominee and was featured on the New York Pet Fashion Week Runway in Japan. Her collections of POP!Rock PUP!Rock became one of the “go-to” gifting suites at Sundance Film Festival along with a “TRL” request for the MTV Video Music Awards. The experienced designer’s latest venture is the fashion savvy, truly hip and affordable MICHELE Boutique focusing on fashion forward style located on the Northshore. The new boutique caters to any style through a variety of different pieces in keeping with the latest trends. Her NOLA Bikinis collection has been featured in the Saintsations’ swimsuit calendar, made the news with the Hubigs Pie Bikini and soon will be expanding into active wear.

Who Handles the Finances in Your Family? WRITTEN BY RONDA M. GABB
OFTEN A COUPLE
may divide up everyday chores. One person may take care of the “indoor chores,” like cooking and cleaning, while the other person may do “outdoor chores,” like mowing the lawn, raking the leaves. One person may purchase holiday and birthday gifts while the other person may pay the bills and handle financial matters. Dividing up the work can be a great way to ease the burdens of life. However, it is also important that each person knows how to do all the chores, in case they need to take them on some day. If the “cook” is sick, the other person will need to step in until the cook is back on their feet. But, what would happen if the person responsible for money matters died or suffered an incapacitating event? Let’s look at a couple who had that experience. Chris and Pat divided up the chores. Chris had responsibility for money matters. It worked well for them. Chris was good with money and Pat hated all the paperwork. However, when Chris had a stroke, became incapacitated, and died unexpectedly at age 50, Pat did not know anything about their financial affairs. In addition to grieving for the loss, there was confusion and uncertainty on the finances. Nobody even knew where to send the mortgage payment. Teaching each other the skills involved in the other’s chores is especially important in financial matters. It’s important that both parties know the basics. Here’s a list of important questions for your financial well-being: 1. Are the bills sent electronically, how do you pay them, and from which account? 2. Do you have any automatic money transfers set up? 3. Where are the checking accounts?
4. Where are the savings accounts? 5. Where are the brokerage accounts? 6. What are the passwords and account numbers? 7. Where are the health insurance cards kept? 8. Is there any life insurance? 9. Do you each have financial and health care powers of attorney (and a Living Will) and do you know their location? (Powers of attorney allow your appointed “agent” to manage your assets and health care in the event of your incapacity.) 10. Do you have a Will and/or Trust and know where it is? 11. Do you have a funeral plan in place and/or does someone know your wishes? E.g., do you wish to be buried, cremated, donated to a medical school? 12. Who are your trusted advisors and do you have their contact information? Such as estate planning attorney, CPA, primary care physician, broker, and insurance agent? When illness, incapacity, or death strike, it’s important to know where things are and what to do. Make sure you know the answers to the dozen questions above. Take a moment today to learn about the finances. You’ll sleep better once you do. Ronda M. Kevin Darr, M.D. ENTERPRISING MAN Time Well Spent WRITTEN BY JILL WILLIE PHOTOS BY STEVE RANDON
EVERY YEAR,
Dr. Kevin Darr, his wife, Mary, and their blended family of seven children take a trip to a national park or preserve. For a full week, they spend time with the people they love, enjoying things they love—hiking, biking, kayaking, swimming and fishing. Being able to celebrate all the activities in life is what Dr. Darr is all about. As an orthopedic surgeon and a visionary in cell therapy, Dr. Darr’s sole mission is to give his patients the ability to enjoy the things they love. Whether it is a professional athlete recovering from a sports-related injury, a weekend warrior training for a marathon or a patient in need of a joint replacement, Dr. Darr employs a variety of surgical and non-surgical therapies in his practice. Dr. Darr is in his third year of treating patients with a combination cell therapy regimen, which builds on his six years of experience in successful Platelet Rich Plasma (PRP) treatments. Combining PRP with mesenchymal bone marrow cells and fat grafts, the therapy utilizes a patient’s own (autologous) cells to stimulate healing. Cells are harvested from three sites in Dr. Darr’s office under local anesthesia with minimal discomfort. These cells are later injected into tissue damaged by conditions such as osteoarthritis, ligament and tendon disorders and avascular necrosis. Moreover, his certification in Musculoskeletal Ultrasound enables him to use this ultrasound technology to ensure that all injections are made to the precise location of damage. Combination cell therapy has also been highly effective in repairing damaged bones in conjunction with micro-fracture techniques. Dr. Darr drills holes in areas with the most arthritic wear to promote bleeding and then several weeks later injects a combination of cells to help heal lesions. “The results we are seeing from these treatments are outstanding,” Dr. Darr said. “Cell therapy is a game changer. It’s the biggest thing to happen in orthopedics since the arthroscope. 92 percent of patients treated get some level of relief through cell therapy.” In fact, an assessment of osteoarthritis patients undergoing combination cell therapy for the knee show an average of 41 percent improvement in Visual Analog Scale (VAS) for pain

Dr. Darr does more than play an integral role in the recovery and rehabilitation of his patients—he is involved in their overall health as well. “When it comes down to it, I am not just treating a shoulder, hip or knee. I’m treating the whole person,” he said. “Helping my patients become healthier in order to prevent or reduce the risk of injuries is
Revealing a genetic profile for key markers related to nutrition, fitness and behavior, GenoVive customizes a diet and exercise program based on an individual’s own DNA. after one year. Function is also improved dramatically after one year with 47 percent overall improvement and double digit improvements in activities such as walking on a flat surface, going up and down stairs and getting in and out of a car. Dr. Darr explained that because cell therapy harnesses the body’s own ability to heal itself, it can be used independently or to accelerate recovery following surgery. “Not all therapies work for all patients. What is so exciting is that we have the ability to combine surgical and non surgical techniques to provide the best possible outcomes for patients.” Cell therapy is just one the tools available to Dr. Darr and his team of nurse practitioners, nurses, techs and support staff. State of the art technology such as ARP WaveTM is often used to prevent and treat muscle atrophy by emitting a series of external bio-electrical currents to increase blood circulation, promote muscle relaxation and improve and increase a patient’s range of motion. “Every step I have taken in my career has been to bring my patients cutting edge options—both surgical and non-surgical. It is my vocation. I have never been as excited in my career as I am right now. It is so very gratifying to see our patients improve to a level not seen before,” he said.

just as important to me as restoring health after an injury occurs.” The DEXA (Dual energy X-ray absorptiometry) Scan is useful in identifying osteoporosis, overall muscle strength and body composition, as well as serving as a predictor of bone fractures throughout the body. Dr. Darr explained that this technology enables him to identify where patients are prone to storing fat, pinpoint muscle weakness and identify muscle imbalances that can be corrected with proper training. Dr. Darr’s practice not only offers advanced diagnostic labs to help with nutrition and weight loss—it also offers a nutritionist on-site to provide ongoing support and assessment. In addition to dietary supplements to address nutrient deficiencies and aid in healing, there is also the GenoViveTM weight loss system.
Yoga. He and his family eat healthy, organic meals that often incorporate seasonal fruits and vegetables they’ve grown from their own garden. Yet, the most important part of their dining routine is not the food—it’s the commitment of the family to share dinner together as often as possible. “Being able to spend quality time with Mary and the kids around the dinner table is a gift,” he said. “Our children range in age from 28 to 13, so we are acutely aware of how special it is to spend quality time with each and every one of them. I love being a husband, a father and a surgeon. I am very blessed to be all three.” Kevin F. Darr, MD is board certified in orthopaedic surgery, sports medicine, musculoskeletal ultrasound and regenerative medicine. His office is located at 19343 Sunshine Avenue in Covington. DO YOU HAVE
a favorite house or garden plant? This would be a great time of the year to make cuttings that you can share or gift to some of your favorite people. Cuttings make it easy to grow a new plant from a mother plant while giving the mother plant a facelift! Some of my favorite plants happen to be succulents or cacti. I usually root them in a little container of water in my kitchen window. The stringy roots may take a couple of weeks to appear. At this point, I simply transfer my cutting to a pot filled with a mixture of sand and potting soil. The great benefit of growing a plant from a cutting is that the new plant will look and behave just like the original plant. Many herbaceous and woody garden plants will easily grow from cuttings. Let’s go over the basics and create a simple inexpensive way to give it a go. Get some used water bottles and a used gallon milk jug. Cut the top of the milk jug off about half way down and recycle it. Use a pair of sharp scissors to poke some drainage holes in the bottom of the jug. Now fill with a mixture of three parts sand to one part potting mix all the way to the top. Water this thoroughly. Obtain your cuttings—use a garden clipper and make a cutting three to five inches long from your desired plant. The cutting should not be in bloom nor have buds for the best and quickest results. Remove the bottom two
inches of leaves, and use a sharp knife to skim the bottom inch of the stem. Pretend you are peeling a carrot. Create a solution of one teaspoon honey, three teaspoons white vinegar and 1/2 cup warm water in a tall glass. Let your cuttings soak in this overnight. Now, use a pencil to make a hole in the soil in the jug about halfway down, and insert your stripped and soaked cuttings. Use the small water bottles to make a dome for each cutting by simply slicing off the bottom. Keep the screw top closed to keep the moisture in. Place the domed jug in a grocery store plastic bag and set in a shady area. Check every four days to make sure moisture is consistent. If it feels dry inside the bag, add water to the jug. In six to eight weeks, you should see some new growth on the cutting or feel a resistance if you try to remove it from the soil. Now give the cutting its own pot or spot in the garden and watch it grow! Whether your garden favorite is a rose or an azalea, try an experiment and see if you can get on the cutting edge! After all, you really have nothing but a few trimmings and recyclables to lose and lots of new plants and friends to gain! Email your gardening questions and comments to Lisa at shakeslyons@aol.com.

WITH AN EXTENSIVE
Face Time WRITTEN BY DR. MARY W. SPEED
THE GROOM WAITS looking down the aisle to see his soon to be wife take a life changing walk. The bride looks ahead, hesitant as so many eyes are on her, yet she’s more confident as her steps take her closer to him. They stand side by side hearing ancient words about commitment, respect and devotion. Then, they stand face to face and utter words aloud to each other promising to be there through sickness, health...and forever be a couple. Together, husband and wife walk from the altar to their reception aglow with the purity of this newness. And, it can be forever this way and often is for couples who make time for holding hands and face time. The face encompasses all the senses. Newlyweds look for ways to show each other surprises and wear fragrances and colognes for the other. They recognize each other’s touch and test foods that they learn to enjoy together or do without. They save their best stories to tell each other. I find this delightful in couples young and old—the telling of each other’s stories that show glimpses of the history they have made together. My brother, John, and his wife, Tolanda, seem to love showing off the other in the best light. These two have an amazing bond. When I see one without the other, the longing in each of them to see the other is palpable. I find myself looking and waiting too for the other one to show up, so he or she can be right again, whole. They have been married 40 years and are more in love today than they were yesterday. You hear it in their voices and see it in their eyes. They crave face time with one another. They made it happen for them, and face time can make it happen for you, too.
background in interior design, Casey Robert has provided excellent service to her clients through her business, Casey P. Robert Interiors, LLC., since 2009. She now offers an extension of her business and expertise in the form of a retail store, Chaleureux, which features home décor, furnishings, local artwork and more. “I have always loved visiting locally-owned shops that offer a taste of their locale. Our area has so many individuals who produce wonderful work, and I wanted to offer a resource for people who are looking for something local or unique for their homes,” Casey said. Chaleureux houses one of a kind pieces that are handmade and locally produced for a variety of budgets and will add character to any home. Custom framing, window solutions and fabrics are also featured in the Ponchatoula store. “There is a misconception that interior design is only for the wealthy; that’s not true. Same with art—original doesn’t always mean
expensive, and handmade items add such life to a home,” explained the Ponchatoula native. Casey offers a variety of design packages from one room to the entire house. Kids T hat C ook Winner of Chopped Junior WRITTEN BY KATIE RUTH PRIEST
FOOD NETWORK’S
hit series Chopped Junior is a highly competitive cooking competition where four young chefs from around the country compete to be named champion. Emily Roche, a sixth grader at Mandeville Middle School, earned the coveted title as family and supporters across Mandeville watched and brought pride and a $10,000 prize back to the Northshore. Her experiences as a kid chef in the kitchen led her to successfully audition for the hit show and eventually win the whole competition. The 12-year-old aspiring chef began cooking at age five with her grandparents and has been a student with Culinary Kids, an entertaining and educational teaching kitchen in Mandeville, for over four years. “Our goal is to inspire children and encourage family time in the kitchen,” says Sherri Hansen, owner of Culinary Kids, “so when we heard that one of our students had been selected for Chopped Junior, we were thrilled!”

Emily is a natural in the kitchen as well as a natural leader. As student council president, she helps the students at her school—a rewarding task she is happy to do. Her kind-nature and leadership transitioned into the kitchen where she was able to stay calm to complete her dishes on time and even help her competition. Emily offered a required ingredient to a fellow contestant after the competition spilled her own.
“I really like how creative I can be with cooking, and it’s a great life skill to have,” says the young chef. Competing in categories of appetizer, entrée and dessert, Emily advanced each round showing off her advanced culinary skills she learned from her grandparents, mom and Culinary Kids. “I really like how creative I can be with cooking, and it’s a great life skill to have,” says the young chef. Emily astonished the judges by preparing three dishes with mystery ingredients including beef tongue and quail. These foods, not usually appetizing to the palette of a 12-year-old, do not scare Emily but only intrigue her to be more creative with her dishes. Emily has developed that desired creativity through Culinary Kids and cooking to accommodate her own allergy, peanut and tree nuts. “Empowering families to work around dietary obstacles is important to us. Food should be fun, not frightening, and we help people retain that joy,” says Sherri.

Thinking forward to the future, Emily can see herself using her leadership skills by working in government. However, she believes being a chef would be more fun by combining those skills and her passion for cooking. Emily is one step closer to achieving her dream of becoming a professional chef after becoming Chopped Junior Champion. “It was intense, but I met some of my favorite celebrities and had a great time making new friends…we all stay in touch!” says Emily of her experience on the show. A surprise assembly at Mandeville Middle School was held in Emily’s honor and some of her signature dishes will be featured in Culinary Kid’s Summer Cooking Club. Emily will be putting her leadership skills to use again by taking part teaching other students this summer. “To support a young person like Emily reaching the next level and accomplishing her dreams is a true blessing…this is why we do what we do!” adds Sherri.

Taking care of our young ones is the best gift a parent can give a child. For many of us, we are searching for magical foods that will not only delight our children, but also provide them with excellent nutrition. Incorporating foods that will infuse their bodies with superb fuel can be challenging given their hyped-up romance with junk foods and fast foods. However, there are many options that are nutritious and delicious, but the tough part for many parents is getting their child to gobble up these earthly delights. Simple Secrets for Teaching Children about Healthy Foods they will love: Teach your children they are what they eat. What they put inside their bodies builds their bodies. Be an excellent role model. Have fun with this and set a good example for your children by making excellent food choices. Get your children in the kitchen with you. Food preparation at home is an opportunity to teach your children and have fun with them as well. When they feel a part of the process, they are more likely to try new foods. Make a family decision to have more meals at home. Cook a family meal together. Here is an easy side dish to try with your young ones: Since all kids love chips, give this recipe a try. Slice up those carrots, parsnips, kale and sweet potatoes. Sprinkle with some extra virgin olive oil, and add some sea salt. Roast at 400 F. The kale takes about 5 –8 minutes, and the remaining veggies take about 10–15 min. YUM!

A S torybook Home
The home of Daphne and Bobby Gelpi sits picturesquely between two fairways and Bayou Tete L’ours deep in the heart of Beau Chêne in Mandeville. The stately, Colonial Georgian home is covered in creeping ivy and entered through an English garden path. While the home is close to their neighbors and near enough to Mandeville’s many activities, it somehow manages to feel private and far away. This is partially due to the home’s construction—it was designed with windows only on the front and back of the house so that the views from inside are of the golf course and bayou. Unlike many modern constructions, the home’s design is a departure from the popular open floor plan; rather, you move through the house meandering from each perfectly assigned room to the next. When the Gelpis began to decorate the home, the original plan was to open walls and create an open floor plan. However, after consideration, it was decided that the original design of the house offered cozier and more comfortable rooms that were accommodating to the couple, their six children and 11 grandchildren. “When I am home I want to feel comfortable and cocooned,” says Daphne, “I love that there are so many spaces for that here.” Upon entering the house, you are ushered into an adorable sitting room. Daphne favors an eclectic mix of antiques and modern pieces for a cohesive and charming look. The room features items such as her grandfather’s sideboard topped with Carrara marble and crystal balustrade lamps, antique china from the 1800s which splay across the wall, toile slipcovered chairs, a Robert Seago painting and a bird’s nest! Each room offers an equally interesting and meaningful blending of styles.

“I like to go with the flow,” Daphne explains, “There is a connection with the house, and I let it tell me what it wants.” Moving into the kitchen, the original, gorgeous Italian tiles are complemented by floor to ceiling beaded board which was done by the homeowner herself. An antique marble-top table seamlessly extends the island and a cabinet from “Daphne,” her former store in downtown Covington, is set atop the countertop to function as a pantry. “I love thinking of new ways to use things to bring new life to the piece and complete the room,” she says. The dining room opens up into the kitchen. Since it is one of the few rooms without windows, Daphne created the perfect backdrop—a mirror that looks like a window complete with reclaimed shutters. My favorite space in the house, the living room, is cozy yet spacious. Each direction you look in has its own motif. The room is filled with antiques like a marble-top coffee table, the original mantle and Daphne’s grandmother’s trays. Comparatively, new linen slipcovered sofa and chairs from Niche are accented with designer and Pottery Barn pillows, tables are finished with topiaries and the walls are covered in memories—from paintings of their travels to antique plates to Daphne’s favorite magazines. From the moment you enter this charming home, each room is telling a different chapter of the story of their lives. As Daphne says, “This is a forever home,” and their memories and stories will decorate it for years to come. Sophisticated Woman | June 2016 35

Movie Nights 2016 WRITTEN BY ALEX CAROLLO
ARE YOU LOOKING
for some action and adventure this summer? How about a summer romance? Something to make you laugh? A little song and dance to brighten up your night? You can find all of this and much more this summer at the City of Slidell’s third annual Slidell Movie Nights held in Heritage Park. Over the last three years, thousands of people have brought their blankets and chairs, picnic baskets and ice chests, and enjoyed great movies along the bayou and under the stars in Heritage Park. It has been a tremendous success with Slidell’s citizens and visitors, and we look forward to another successful season. Slidell Movie Nights began as a Leadership Northshore 2014 class project. In September 2013, the Leadership group approached the City of Slidell about partnering with the Department of Cultural & Public Affairs and hosting a free movie series for families to enjoy during Christmas Under the Stars, the city’s annual holiday celebration in Griffith Park. The city agreed, and the Leadership Northshore Group 5 team members Jill Cahill, Jennifer Franzo, Bobby Juge, Joe Pepe and Jonna Turner secured sponsorships from eSYNCS, Ochsner Medical Center – Northshore and Winn-Dixie. Through sponsorships, they were able to purchase the hardware to design and construct a large 22 x 11 foot outdoor movie screen and began preparing for the event. However, things didn’t turn out so well at first.
Slidell The first weekend they planned to show Polar Express, but it was rained out. The second weekend, Elf, was rained out, but that didn’t stop them. The next week, they showed both movies and hundreds of people turned out in freezing 40 degree weather with their blankets and cups of hot chocolate. They knew then that it would be a big success and that they would need a bigger venue. During the summer of 2014, the Leadership group donated the screen to the City of Slidell with the promise that the city would continue to host Slidell Movie Nights, and they did. Thousands of people came out to Heritage Park to enjoy the first summer series of movies, Raiders of the Lost Ark, How to Train Your Dragon, The Princess Bride and Grease. Grease was truly a turning point for Slidell Movie Nights. People came dressed in their 50s costumes and were dancing and singing along to the songs. It was a special moment that really brought our community together and made Slidell Movie Nights a not-to-be-missed event. The following Christmas, the City of Slidell partnered with the Slidell Boys and Girls Club to host Slidell Movie Nights in Heritage Park during the first annual Slidell’s Bayou Christmas event in Heritage Park. Despite the frigid temperatures, hundreds of families came out dressed up as Anna and Elsa to enjoy Frozen. With the great success of Slidell Movie Nights, it was clear that a new Slidell tradition was born. People were excited and the response on

community social media was amazing. The city received over 1,000 responses in 2015 when they posted a message on Facebook asking for movie recommendations. And like Pinocchio’s nose when he fibbed, the audiences for the 2015 season grew and grew. Slidell Movie Nights continues this summer with movies in Heritage Park on Saturday, June 4 and 18 and July 9 and 23 with movies starting at 8:30 p.m. Admission is free. CiCi’s Pizza and Olde Towne Slidell Main Street will sell movie concessions for a nominal charge. Motion picture licensing prevents us from advertising the names of the movies, but for the list of movies and additional information, please visit the City of Slidell’s website at MySlidell.com, the “Slidell Movie Nights” and “City of Slidell, Louisiana” Facebook pages, or call the city’s Department of Cultural & Public Affairs at (985) 646-4375.
