ONE OF OUR FAMILY’S favorite stories about Signature _____________________________________ the wonderment of the Christmas season is a short story called The Runaway Boy. But this young man is deeply troubled. When he quietly starts to cry, the older man sitting next to him asks what is troubling him. The boy tells him that he ran away from home after a huge fight with his father some months earlier. He was afraid to admit how badly he wanted to come home, but finally he did. He asked his father to put a red ribbon on the elm tree behind their home where the train would pass on the way to the station into town, if the boy was welcome to return. The older man shares with him the story of the prodigal son from his Bible. Suddenly, the young man feels reassured that maybe his father too can welcome him home. With such a demanding schedule, she truly enjoyed the pampering she received on the day of her Enterprising Woman photo shoot. Her makeup was applied by Alisa Nye, and her hair was styled by her long-time hair stylist Don Paul—both of Paris Parker Salon in Mandeville. THERE IS PERHAPS no other time of year when anticipation of the upcoming season is so fervent, as in advance of the holidays. Christmas and the New Year renew the senses and bring most everyone back to a time when the innocence of childhood was alive in their souls. But with this whimsical sense of nostalgia, also comes the realistic sense of stress. Stress about how every task will be completed, every mouth will be fed and every person will harmoniously interact. Practical skills are often forgotten as the frenzy of the season takes over. Just talk to friends and you will likely hear phrases like, “It just crept up on me this year,” and “How did we get to December already?” With a little pre-planning and simple steps to stay organized, you, the hostess, can enjoy the season along with all of your guests. Stock your beverage supply in advance of the day. Stock up on adult beverages you plan to offer, and children’s drinks. Remember, for simplicity’s sake keep choices to a minimum for guests of all ages. Everyone will find something they enjoy. Keep ice, extra glasses and napkins on hand. Keep your menu simple. Choose the centerpiece of your meal (poultry, beef, seafood) and build around it. Make as many holiday sides in advance as possible. Ask family members to bring their favorites and lessen your cooking burden. Chop vegetables the day you tote them home from the grocery store and store them in the refrigerator so all of your ingredients are “prepped” as you need them. For breads, dough can be bought or made, frozen and then baked off as needed. Prepare appetizers in advance as well. Fresh veggie trays, homemade dips and bite-sized baked treats can all be pre-made and stored until your guests arrive. Decorations enhance the holiday mood. It helps to choose a color scheme or theme of some sort, and repeat it throughout the rooms in your home. During the Christmas season, reds, whites and greens are often popular. However, colors like purple, silver, blue and gold make a statement as well. Sometimes it helps to pull out a favorite item like a wreath or a platter and use that item as a starting point to decorate around. The most important tip of all is perhaps to remember why everyone is gathered together in the first place. The holidays are a celebration. They are a time to reconnect with family near and far. They are a time to relax if you can, and relish in the wonderment of the season—just as we did as children.

GROUNDED IN FAMILY, FAITH, TRADITION and deep British roots, Georgie Brooks Myrtle is an amalgam of the quintessential English lady, and the genteel Southern belle. She will tell you, she is a traditionalist at heart. As a young girl, Georgie spent many weekends with her maternal grandmother at her home in Wales and England. It was there that she realized and absorbed her grandmother’s gift of baking. “I always remember her in the kitchen, baking something delicious,” Georgie says. “While my mother was a wonderful cook, I credit my grandmother with passing on her baking expertise to me.” Generations of tried and true authentic family recipes were passed on to Georgie as well. She sustained them even after she moved from England and made Covington her home in 1984, and through her years as a hands-on Mom, as she raised her three children and plunged herself into the surrounding community. “I became what you might call a ‘professional volunteer.’ I spent many hours helping in whatever way I could at my church, Christ Episcopal, and my children’s schools. I consider the people in this community my family.” People soon began to anticipate Georgie’s understated, yet highly regarded delicacies. So much so that in 2007, just on the heels of her eldest son’s departure for college, a dear friend suggested Georgie sell her illustrious shortbread that everyone had grown to love. “With the encouragement of my children and late husband, I came up with packaging and I started the business out of my home. Well, once the word got out, I was inundated with orders for Thanksgiving and Christmas. I was elated.” Georgie joined the local Covington farmers market where, along with her shortbread, she introduced her scones and fresh lemon curd. “I used fresh, seasonal items. she had amassed a loyal following, and she had expanded her product line to include soups, quiches and desserts. “I was so grateful. The warm reception I got every place I went was wonderful.” So, when a local coffee house approached and asked Georgie to deliver fresh scones, she was flattered but at the same time, unsure of how she could reliably deliver such a request. “I am by my nature, tenacious, so I offered them something that I was already doing. Every evening, I would prepare the dough for the scones for the following day. I would place it into the freezer and cook the scones the next morning for the markets,” she explained. “The dough baked beautifully. It was a great solution which gave them fresh hot scones every day.” It was also the catalyst that sent Georgie’s English Kitchen & Garden into an entirely new realm. “I decided to pursue placing the frozen line into grocery stores,” she says. “I managed all the steps, from the store front, to the nutritional analysis, to the packaging and cooking instructions. My regular customers at the farmers markets were my test kitchen. I gave them the prototypes and asked them to try them out and provide honest feedback. They did, and I am forever grateful.” To date, Georgie has placed her products in over 30 stores locally and throughout the Gulf region in three states. One of her favorite ways to relax is through gardening which as it turns out, is actually the other arm of Georgie’s English Kitchen & Garden. “This is another aspect of the business I truly enjoy. I personally assemble every garden gift basket,” she reveals. “We offer a combination of plants in pots artfully arranged in wicker baskets. I also

THE ABILITY TO SEE structures of the head and neck has long been limited to two dimensional images. These images, or x-rays, are a two dimensional representation of a three dimensional structure (unless the subject is Flat Stanley). In order to determine the position of impacted teeth, multiple x-rays must be taken from different orientations. Recently, dental computer tomography (CT) machines, also referred to as cone beam, have become available and provide images that can be viewed in all three planes of space. In addition, these images, or volumes, can be rendered into a true three dimensional reconstruction of the patient. What does this mean for the patient and practitioner? The practitioner can use these volumes to determine the exact location of impacted wisdom teeth, impacted canines and extra teeth. THE CHRISTMAS JOURNEY, written by Donna Van Liere, is appealing at first glance with its subtle, yet beautiful cover illustrated by Michael Storrings. As the reader opens the cover, the book becomes a vehicle which transports them into a meditation of the first Christmas journey made by the Holy Family. The slim volume, illustrated with simple watercolor paintings, opens with the biblical translation of the Nativity from Luke 2: 1–20. The top of each page is embellished with a graceful, continuous banner of gold ivy. The scripture is followed by a description of modern–day Christmas activities. The brief denunciation of today’s celebrations of the sacred holiday, prepares the reader for the main text of “The Christmas Journey.” This is the author’s re-creation of Mary and Joseph’s experiences of the events surrounding Christmas night and the events which follow. Jesus’ foster parents are depicted as a devoted, simple, loving couple, who are attempting to follow God’s will although they do not understand it. The sparse dialogue and simple prose contrast with the mysteries of that miraculous night. The author, Donna Van Liere, has successfully written several popular Christmas stories. The most renowned—The Christmas Shoes—was recreated as a Christmas song, and made into a film. Unlike The Christmas Shoes which seemed overly sentimental, The Christmas Journey is not. I recommend reading The Christmas Journey as a meaningful activity with family and friends in preparation for your personal Christmas journey. I AM INVITING ALL citizens to the City of Slidell’s Christmas Under the Stars holiday celebration in Heritage Park. This four-day event, featuring live entertainment, visits with Santa and Mrs. Claus, and holiday decorations begins December 9, with Ballet Espirit and Southern Youth Ballet’s performance of The Nutcracker. The festivities continue on December 10, 16 and 17, from 6–9 p.m. with a different theme each night, including Holidays Around the World, The Art of Christmas and Community Caroling. Admission is free. While you’re in Olde Towne, be sure to stop at Slidell City Hall to see the Christmas Train and Village display in the City Hall Community Room, and the Andy Warhol:
Celebrities exhibit from the New Orleans Museum of Art in the Slidell Cultural Center. Both exhibits offer free admission and will be open from 6–8 p.m. on December 10, 16 and 17. IT’S CHRISTMAS IN MANDEVILLE. Come and celebrate with us on December 10th, as the Old Mandeville Business Association begins their new event, Noel À Mandeville, at 9:00 a.m. on Girod Street. It will run both Saturday and Sunday, complete with vendors, entertainment and fun for the family. One change to note— this year the annual Christmas parade will begin at 4 p.m. on Girod Street, instead of Lakeshore Drive. The City’s annual Winter on the Water event will also begin at 4 p.m. at the Lakefront Gazebo. I will illuminate the lakefront with the traditional lighting of the oaks, along with musical performances by Mandeville Elementary and Woodlake schools as well as the Kathy DeRouen Quintet. The boat parade on Lake Pontchartrain will end the full day of festivities. This is a sight to see and longtime Mandeville favorite.
Our residents and visitors delight in sitting along the seawall or standing around the gazebo, enjoying refreshments by Project Graduation and taking in the marvelous show of decorated boats glimmering on the waterfront while cruising to holiday music. Noel À Mandeville will continue Sunday morning at 8:30 a.m. with the “Running of the Reindeer” on Girod Street. Vendors will continue during the day and The St. Tammany Historical Society will have a historic home tour from 2–5 p.m., followed by caroling. OUTGOING AND INCOMING board members met recently at our annual Board Retreat to discuss all things Chamber. Leadership development training was facilitated by Bruce Wilkinson of Wilkinson Seminars and Presentations. This nationally-recognized but locally-based speaker presented Implementing a One Voice Culture of Excellence. Attendees left feeling energized and committed to the overall mission of the Chamber. We also reviewed the results of our 2011 membership survey from nearly 300 members. When asked about their main reason for joining the Chamber, number one was business support and networking with a 67 percent response. A close second was small business services at 37 percent. For the top priorities of the Chamber in 2012, our members chose small business support and development (51 percent), public
policy (41 percent) and building coalitions in the parish, region and state (28 percent). When asked about specific issues the Chamber should address, property tax issues ranked the highest at 58 percent, with election forums and federal healthcare reform ranking second and third. As part of the Northshore Legislative Alliance, weekly updates were sent to our members during the 2011 legislative session. 80 percent of responders read them and 73 percent found the updates helpful. We take our role in providing information to our members and the community at large very seriously. After reviewing the results and brainstorming new ideas, we are now in the process of determining goals to meet the needs of our current 1,100 members. With this, we look forward to a prosperous and successful 2012.

Resolutions Include Revelry and Revitalization

AS 2012 APPROACHES, I anticipate many great opportunities. The following include several of my New Year’s resolutions as Mayor. Support community wellness. My administration is involved in an initiative that will promote healthy lifestyles among our citizens. Beginning in 2012, we hope to reshape our city’s environment to support wellness and physical activity and prevent obesity. Proposals include roadside bike paths, educational programs in schools and the incorporation of healthy items in restaurant menus. I am confident that we can significantly decrease the community’s rate of obesity, particularly among our youth. Celebrate history. Around Labor Day 2012, the City of Covington will begin a year-long celebration of its bicentennial, which will culminate in July 2013. The Covington Bicentennial Planning Committee has been developing plans for the commemoration of this
monumental occasion with activities that focus on the city’s history, culture, character and charm. Groups or individuals who wish to participate in the Covington Bicentennial can contact Bicentennial Chair Roslyn Hanson at roslynhanson@charter.net. Revitalize the downtown. 2012 will mark the beginning of several revitalization projects. Citizens can expect to see oxlot signage in the oxlot public parking areas around town, and the removal of all metal poles lining downtown streets. Citizens can look for repaved streets as well as new sidewalks and planters in the CBD. Look for streetlight standards along Boston Street. Additionally, negotiations are underway for the revitalization of the old Southern Hotel building on Boston Street. Enjoy the holiday season, and have a safe and happy New Year!

DURING OUR FAMILY’S Thanksgiving each year we circle the table, offering gratitude for something or someone special in each of our lives. A few years ago my six-year-old nephew declared enthusiastically that he especially wanted to thank God for purple popsicles. Sometimes it takes a child’s declaration to make us realize that while we may have much to appreciate in our lives, often it’s the little things that matter most. While this time between Thanksgiving and Christmas is busy for everyone, there is no better time to reflect on the many gifts that life has to offer, including the many gifts associated with living in a small city such as Ponchatoula. Small towns offer a powerful sense of community
involvement and volunteerism. In Ponchatoula we are thankful for strawberries, as well as the historical locomotive and the railroad system that intercepts our town. We are grateful for quilts, country markets, vegetable and fruit farmers, local artists, specialty and boutique shops, and antiques. Let us be thankful for this busy season, when there are dozens of cookies to bake, shopping to complete, cards to send, gifts to wrap, and parties to attend; yet let us each take a cleansing breath and consider the gifts small-city living has to offer.
