pictures. I smile. The people smile. Celebrations of ribbon cuttings, recipients of plaques, weddings. Professional photographers arrange people in rows and height, and I take pictures of people getting in line. I capture the unrehearsed pose. The awkward face about to be a smile. I like giving pictures too. The surprise of seeing oneself is fun. People can get caught up in happiness. I hope you will too this November. This is our time to count up the who, the what, the where of our blessings. What is wonderful about Thanksgiving is that boundaries become clear. When we pause and think for a moment about who we stand with in pictures, who does come to dinner; we have a lot to smile about. This year, I encourage everyone to celebrate Thanksgiving. Set the standard high for rest and relaxation and low for meal presentations. Let’s concentrate on the giving of thanks. Get caught up in giving thanks for a day then the day after that. You will be happier than you have ever been. I say this because it is true. Happiness begins in you. Giving thanks for what you see and hear is an amazing discipline. A friend of mine has macular degeneration and tells me, “Rather than focus on what I can’t see; I thank God for what I can see.” I like what I can hear too. Seagulls, for example. I love hearing the ebb and flow of their squawking. I am reminded of Newfoundland, Massachusetts, Galveston Island, Mobile and places I love. Simple. This Thanksgiving, stop, look and listen to what makes your heart sing. Give... thanks.

Savoring the Holidays WRITTEN BY LISA RIBBECK LYONS

IF YOU ARE from the South, you know one of the most popular holiday ingredients is the pecan. It is used to make sweet desserts (pecan pie, pralines, bourbon pecan balls) and savory favorites (pecan stuffing, green beanpecan casserole, pecan topped trout). But do you have a pecan tree in your own garden? If not, now would be the perfect time to begin your orchard! Yes, I said orchard because the pecan is really a drupe or fruit with a single stone surrounded by a husk. Pecan trees that occur from natural beginnings would be called a grove and these trees are native to North America. When planted by humans, we would label them an orchard. They are members of the hickory genus and will become a very large tree over time. A ten-year-old sapling will be about 16-feet tall, but at full maturity could measure 131 feet in height with a 39- to 75-foot spread. For this reason, you must have ample space on your property to plant one of these trees. Here are some essential tips for your successful endeavor into the world of pecans: • Plant the tree at least 20 feet away from any structures of your home. • Check the variety when you purchase your young pecan. Recommended varieties for this area are Candy, Elliott, Sumner, Melrose, Houma, Oconee and Caddo. • 4–5 feet in height or smaller is the recommended size for your new tree. • Water the newly purchased tree over night by placing the root system in a bucket of

warm water. • Choose a well-drained section of the garden that also gets good light. Pecan trees need lots of nutrients from the soil so plant away from competitors. • The hole for planting should be larger and deeper than the root ball and should be firm at the bottom. Use good organic topsoil to hold moisture around the roots and tamp the fill to eliminate settling. • Mulch well around the planting to retain moisture. • Soak new plantings with water once a week for the first few weeks. The time can be extended to 10 days gradually but the first few years need that weekly saturation. • Fertilize late in the spring or summer following planting. A young tree needs time to develop its root system. It may take 5 years before you get your first crop of fruit. The leaves make the food that produce the nuts and it takes 40 leaflets to make a single pecan. Patience, yes, but well worth the effort! LIKE ALL GREAT success stories, this one began with a simple passion. From a young age, Valerie Aldridge has adored vintage finds and unique treasures. Growing up in New Orleans, she grew fond of the antique pieces that surrounded her in her childhood home. It was this respect for the vintage and adoration of the unique, which lead Valerie to open le Lapin Velours in October. More than a home décor shop, le Lapin Velours specializes in one-of-akind, vintage pieces. “Our clients are graced with the experience of true exclusivity on every piece they choose for their home,” emphasizes Valerie. With pieces ranging from French Country, Gothic and Rococo to Industrial, Mid-century and Chinoiserie; not only will patrons be sure to find something to suit their tastes but they can also discover how different design themes complement one another. “It is my belief that no matter what your decorating style is, true vintage one-ofa-kind pieces can enhance any design,” commented Valerie. Le Lapin Velours also takes pride in offering 100 percent Pure Thai silk taffeta drapery. These beautiful panels come in single and double widths of varying lengths. Customers may choose from a variety of fine colors and headings including French pleat, rod pocket, smocked or box pleat. Valerie’s mother taught her that the true value of vintage and antique furniture wasn’t on the price tag, but in

something deeper. “The value was in the fact that they were in our family and had been cared for and passed down from generation to generation, each piece has its own story,” said Valerie. Though her career path has changed course from her time as a Registered Nurse in critical care, she never lost her enthusiasm for vintage items and love for decorating with unique pieces. After she lost her mother to breast cancer, she began repurposing and redecorating everything she felt was too “new.” “I began to feel that my mother was alive in me,” said Valerie. Finally, it was her daughter, Abigail, who recognized that her talents should be taken to the next level. Le Lapin Velours, named lovingly after her cat, “Velvet Bunny,” celebrated a successful grand opening on October 20. senior living MediCARE vs. MediCAID ONE OF THE

biggest misconceptions I hear in my consults is that Medicare will pay the bill if the senior (assuming those age 65 or over for this article) needed to go into a nursing home or skilled care facility for long-term care. The truth is, at best, Medicare will pay for up to the first 20 days of a nursing home stay, then depending on your supplemental/MediCARE Advantage plan (like People’s Health or Humana), some (or all) of days 21–100 will be paid by the plan. After that, you are 100 percent responsible for paying the facility! Where the confusion lies is that it is not MediCARE that pays for long-term skilled care, it is the MediCAID program. Now we need to discuss the differences between MediCARE and MediCAID. Medicare is only one program that is entirely federally funded and administered, whereby every state has a Medicaid program that is funded by both the state and the federal government. Assets and income have no bearing on whether or not someone receives Medicare coverage (Warren Buffet can receive Medicare coverage), yet Medicaid is entirely asset and income determinative. In order to qualify for Medicaid, a single person’s countable assets cannot exceed $2,000, where an “at-home” spouse can have up

to $119,220. The primary home is not a “countable” asset (if valued under $552,000), but that doesn’t mean that Medicaid may not seek to recover upon the death of both spouses. Additionally, there is a lot of confusion about what type of care Medicaid will actually pay for. Medicaid does not pay for assisted-living or at-home care (sitters/ caregivers); it only pays for skilled 24-hour nursing home care. You also need to be sure that the nursing home you choose accepts Medicaid (most do). The rules of qualifying for Medicaid are very complex and misinformation abounds, even coming from “professionals” (CPAs, attorneys, nursing homes, etc.). Some planning missteps cannot be “undone” therefore, you need to be sure the advice you seek comes from someone with vast experience in long-term care planning for seniors (this includes but is not limited to Medicaid, VA Aid and Attendance Improved Pension). green trees, yet minutes away from downtown Covington, the residents of the Trace Senior Community Center thrive, attending socials as well as hosting them, all while receiving top-notch care. The Trace is home to seniors from all walks of life, ranging from WWII veterans to actors to CEOs. To accommodate as many needs as possible, the Trace residents reside in independent living, assisted living or Memory Care. All residents have their own private apartment with amenities such as kitchenettes, cable TV and housekeeping services at an all-inclusive price. Those with assisted living services also receive aid in daily tasks such as dressing, ambulation and medicine reminders. Because residents in independent and assisted living live side by side, there’s not much fuss if transition is required; it is merely a matter of paper work. “Residents who require assisted living are integrated with those who are independent,” explained Executive Director Richard Totorico. “We don’t have a separate wing. If someone goes from independent to assisted, they do not have to move apartments.” Among their many renovations, including the expansion of the dining room and the addition of a theater room and a coffee bar, perhaps their greatest triumph is Maison Grace. It is there, in a building attached to the main center, where those in Memory Care reside. “Our state-of-the-art facility was built for those who have cognitive issues,” said Mr. Totorico. Those who suffer from cognitive diseases like dementia can receive the care and attention they need. With an on duty nurse as well as a specialized staff, residents in Memory Care can live comfortably. However, they aren’t confined to Maison Grace.

Those in Memory Care who are able often participate in the same activities with the rest of the Trace community, and activities aren’t limited to the Trace. There are social events weekly and the residents choose where to go, such as shopping ventures or dining out. However, for those unable to go out, it doesn’t mean that they can’t participate in the community. Children come to trick-or-treat for Halloween. Mardi Gras comes to the Trace complete with marching bands and dance teams. The year is scattered with luaus and crawfish boils as well as educational series. “Folks that are in Memory Care can live throughout the community and take advantage of social events that go on here,” said Mr. Totorico. “It helps keep them independent.” The Trace Senior Community has won Northshore’s Best Senior Living Facility four years in a row, and the credit goes to the staff. “We take a great deal of pride in who we hire here and the training they receive,” said Mr. Totorico. The Trace is staffed 24/7 with a supervisor always on duty. With a low turnover rate, the result is a very dedicated, caring staff that puts the needs of the residents first. MY CULINARY AWAKENING took place in my year abroad in France. Although I was a poor student, Europe presented me with rich food and eating adventures from Norway to Greece. When I returned to the U.S., I brought my European exploits and my more refined palate to the kitchen. I cooked my way through hundreds of recipes, experimented on family and friends, and wore out my copies of From Julia Child’s Kitchen and Mastering The Art of French Cooking I and II. As Julia Powell stated in her clever book Julie and Julia, “I didn’t understand for a long time, but what attracted me to Mastering the Art of French Cooking was the deeply buried aroma of hope and discovery of fulfillment in it. I thought I was using the book to learn to cook French food, but really I was learning to sniff out the secret doors of possibility.” Fall fever is here. What is behind those secret doors of possibility? Some people think football. I am thinking about the possibilities of the fresh and colorful bounty of seasonal

vegetables available at the farmers market and how to transform them into fall comfort food. The first hints of the season make me crave hearty, one-pot meals and rustic dishes of salty, tender meats and root vegetables soaking in dark, rich and flavorful sauces. Voila! Coq au vin. Julia Child’s coq au vin to be more exact. Nothing else will satisfy my palate and the craving for this complex but simple earthy dish. I pull out my battered and worn copy of Mastering the Art of French Cooking. My treasured cookbook falls open to the stained and dogeared worn pages to the perfect centerpiece for a fall farm to table feast. Coq au vin, a classic French dish from Burgundy, traditionally made with chicken, mushrooms, onions, bacon and herbs cooked in a hearty red wine sauce. The best part about the cooking experience is that you get to practice your flaming or flambé technique. There is something very exciting about dousing the chicken with cognac, torching it and watching the blue flame leap out of the pot and then slowly die down to a fragrant

simmer. Try not to singe your eyebrows or lashes. Yes, this can really happen! Now you get to sit back and enjoy the tantalizing aromas as the ingredients intermingle to create your own masterpiece of French cooking. Coq au vin is like so many of our Cajun and Creole traditional pot foods. The flavors only get better as they have time to steep. Julia Child suggests serving the coq au vin with rice or potatoes (something to soak up the luscious sauce) and a touch of green. I like the heartiness of root vegetables as an accompaniment particularly after they are roasted. Think carrots, parsnips and sweet potatoes. I can picture it now. The perfect fragrant coq au vin served outside under twinkling lights at dusk, just as the sun goes down and the day turns from warm to heavenly. Can you smell the aroma of hope and feel the warmth of this, the ultimate comfort food? Coq au Vin Ingredients: 3–4 ounces bacon, cut into small strips Cooking oil 2.5-3 lb frying chicken ½ teaspoon salt 1 /8 teaspoon pepper ¼ cup cognac 3 cups red wine preferably Burgundy 1–2 cups beef stock 1 tablespoon tomato paste 2 cloves garlic ¼ teaspoon thyme 1 bay leaf 12–24 pearl onions ½ pound mushrooms 3 tablespoons flour 2 tablespoons softened butter Directions: In a heavy cast iron Dutch oven, sauté bacon slowly in 2 tablespoons oil. Remove when browned. Dry chicken, then brown in hot fat remaining in pan. Season with salt and pepper. Return bacon to pan, cover and cook slowly for 10 minutes, turning chicken once. Uncover, pour in cognac and ignite. Shake pan back and forth until flames subside. Pour in wine and add enough stock to cover. Stir in tomato paste, garlic, thyme and bay leaf. Bring to a simmer, then cover and cook slowly for about 30 minutes. While chicken is cooking, drop small pearl onions into boiling water and cook for 1 minute. Drain and peel. Sauté onions in 1–2 tablespoons oil until lightly browned. Add water to pan, salt and simmer onions for 30 minutes. Slice mushrooms and sauté in 1 tablespoon butter until lightly browned. When chicken is done, remove from pot. Increase heat to medium high and reduce sauce to about 2–2.25 cups liquid. Remove from heat. Combine 3 tablespoons flour and 2 tablespoons butter in small bowl. Beat into cooking liquid, beurre manie, to thicken sauce. Add mushrooms and onions. Pour sauce over chicken and serve.

favorite places is City of Rocks State Park in New Mexico. An avid outdoorsperson and camping enthusiast, Beverly vividly remembers her delight when upon entering the park as a young girl, she read the signs that said, “Please play on the rocks.” “I had expected the signs to tell us what not to do,” she recalled. “Instead, we were being encouraged to explore. It was an unexpected surprise.” Exploring and enjoying the unexpected is something Beverly has been doing for most of her 17 years of life. At merely nine years old, she co-created a fashion show fundraiser and workshop to benefit pediatric leukemia patients with her sister Mary-Brent. The theme of the fundraiser was, “To be beautiful, you have to be yourself.” It was a sold out event raising over $11,000. Not long after, the two burgeoning philanthropists created the Lemonade Brigade®, a program that provides youth with tools, training and support to start their own businesses and give back to their communities. Taking on a huge endeavor at such a young age would be daunting for most. But Beverly knows that to accomplish something big you need to think big, take risks, and be prepared. “When we decided that we wanted

to put on our first fashion show fundraiser, we took a ‘go big or go home’ approach,” she explained. “Before we even posed the idea to our parents, we had already researched how we would put it together, where we would host it, and how much it would cost. Even then, it took a while to convince our parents that we were committed to seeing it through.” Now, eight years later, that commitment is readily apparent. A senior at St. Scholastica Academy, Beverly has seen the seeds of service they’ve sown during their pre-teen and teenage years pay fruitful dividends. Through their Kids Wanna Help® nonprofit, youth have raised $140,689 and donated it to causes that are important to them. But perhaps even more significant is the message these youth have received. Through Kids Wanna Help, they have been encouraged to explore, to try things they thought kids couldn’t do, and to take risks to achieve higher goals. By being encouraged to “play on the rocks,” they have experiences under their belt that will give them confidence to continue exploring without worrying about what other people may think. Acknowledging these efforts, the Association of Fundraising Professionals—Greater Northshore Chapter recognized Kids Wanna Help as Foundation of the Year in 2012, an honor which Beverly says makes her “very proud.”

One program is a unique partnership with Lyon Elementary, a Title 1 school in Covington. Lemonade Brigade workshops have been integrated into the third grade economics curriculum. Beverly teaches classes during the semester where she introduces the students to the concepts of supply and demand, fiscal responsibility, marketing, management, and charitable giving by walking the students through the process of opening a lemonade stand. Teachers explore these concepts with the students throughout the year as they prepare to open and manage their own professional lemonade stands. The group made their debut during Monster Mash—raising money for the St. Tammany Parish Hospital Parenting Center—and will soon open on campus where they will sell lemonade to the entire student body once a month. Kids Wanna Help matched the funds raised at Monster Mash with a donation to Lyon Elementary that will fund the third graders’ first visit to the State Capitol.

Teacher Samantha Anderson explained that the program at Lyon Elementary has energized students while also teaching real-life skills and developing a lifelong commitment to community service. “Beverly has such an exceptional rapport with the kids. The fact that she was their age when she started really hits home for them. Beverly is proof that age doesn’t have to be a factor in achieving your goals.” Beverly believes the key to all community service activities is for people to choose causes about which they are most passionate. This is especially true for children. “As kids research the types of charities and organizations out there, they begin to get a bigger picture of the needs of their community. One charity may not be the right one for them now, but it may become the right fit in the future,” she said. While Beverly’s own community service interests run the gamut, fortunately for Covington they include the arts. It was her interest in the arts that compelled Beverly to begin volunteering with the Three Rivers Arts Festival six years ago. The festival, Covington’s largest annual event, brings 200 juried artists and 50,000 visitors to the city each November. Starting as a co-chair of the Children’s Discovery Area, Beverly has also served as a block captain and as chairperson of the Three Rivers Race. Last year Beverly was asked to take on the role as volunteer coordinator for the entire festival. This is the second year that she will be working in this capacity—recruiting, training and coordinating schedules for more than 100 volunteers over the two-day event. “Beverly has been a valuable asset to the festival,” said event coordinator Sarada Bonnett. “Many people would be overwhelmed with managing a project of this size. Add the fact that you need to manage both adults and teens, and it truly becomes a daunting task.

Beverly is proof that age doesn’t have to be a factor in achieving your goals. Yet, Beverly has been unfazed. She handles everything with assuredness and grace.” Beverly’s collective experiences and adventurous spirit will no doubt serve her well in life. Combining her love of science and interest in space, she plans to pursue a career in aerospace engineering. Beverly said her original plans were to help put other people into space, but she is now opening up to the idea of going herself, if the opportunity arises. Taking a cue from her experiences rock climbing and rappelling, Beverly admits to being nervous before she steps off the cliff, but says she has “learned not to let fear keep her from doing new things.” Perhaps one day, Beverly will continue playing on the rocks—on Mars. THE HOME of Jan and Gayden Robert sits in the midst of historic downtown Covington, just one block from restaurants, shopping and art galleries and even closer to the concerts at the landing and festivals in the park. The Roberts revel in food, family and good company; and their proximity to nearly every event means they spend more time entertaining than most. They’ve created a space that is relaxing and comfortable—inviting guests to eat, drink and enjoy life. When the opportunity arose for the pair to renovate this craftsman bungalow and downsize from the home where they raised their two children, they didn’t hesitate. Over the course of 16 months, they opened walls and added a bit of square footage to the small home. They “took” one of the home’s three bedrooms for the living area, and then added another bedroom to the second story. Post-renovation, the living area spans the width of the house in front and then extends into a dining area and kitchen, leaving plenty of room for entertaining. The arts and crafts style bungalow was quite a challenge to renovate. With the help of architect James “Randy” Aultman, they set out to open the floor plan, and add architecturally appropriate features to the 1920s home. While the columns and covered porch look original, they were actually added seamlessly during the renovation. Virginia Provosty Bessent designed the slate and monkey grass landscaping which draws attention to the façade, anchored by its orange door. “The door

is painted Sherwin Williams, Cayenne,” Jan shares, “people knock on the door to ask for the paint color all the time.” A wood-burning fireplace was constructed to bring warmth and a new focal point in the welcoming living area, and craftsman-style details like tapered columns separating the dining room and kitchen were also added. Original hardwood floors flow throughout the living and dining areas to the well-loved kitchen. Jan is responsible for Sophisticated Woman’s “Foodies and Friends” blog, which focuses on recipes, and enjoying food with friends, so you can imagine that the kitchen is the heart of this home. Off the kitchen, a large screened-in sleeper porch is adorned with a table, chairs and ample seating arrangements. Adjacent is their master bedroom, which somehow manages to be both grand and cozy. Their mahogany, four-poster bed is a family heirloom from the 1800s, and a gorgeous antique oriental rug anchors the space. “We joke that we actually designed the house around the furniture,” says Jan, “There were some pieces we couldn’t possibly leave behind, like the mahogany dining table that has been in Gayden’s family for over 100 years.” The eclectic mix of antique pieces and artwork collected over many years of travels create a warm and welcoming environment. The Robert home proves that “bigger” is not always “better” and that a small but open space creates a leisurely atmosphere perfect for you and your guests.

The 2015 Kickin’ Parkinson’s party and twilight run hosted at Stone Creek Club and Spa, in support of Team Fox, was its most successful event to date. Milestones included its first live auction and a record 550 guests in attendance. The first Michael J. Fox Foundation Research Roundtable was also held, along with a new Caregiver Award and the Wilbur P. Reisig Scholarship Award. With almost $700,000 donated to date, Kickin’ Parkinson’s is making a difference and speeding the progress to a cure while helping those who are dealing with Parkinson’s today. Sophisticated Woman hosted its inaugural Sophisticated Weddings Bridal Show at the Southern Hotel on September 27 to coincide with the debut issue of Sophisticated Wedding Magazine. This event was created specifically with the Northshore in mind, featuring only the most exceptional vendors available to Northshore brides. There was also a fashion show that featured wedding dresses as well as attire for the entire bridal party from Southern Bridal, Bella Bridesmaids and Fleurt Boutique. Hundreds of brides to be, their friends and families attended the show where amongst the festivities and giveaways, each guest received a complimentary glass of champagne and a gift bag was given to the first 100 brides.
