IN ENGLAND, we never take good weather for granted and have to be prepared for any type of weather all year long. The last few weeks’ weather has reminded me of that with beautiful spring days followed by torrential rain. The historic floods were unprecedented in our area and so many of our friends and neighbors were affected. During the worst of times, we sometimes see the best in human nature and hear stories of great kindness. Many have begun to help with relief efforts, and we have listed a few places that our readers can donate to the victims of the flooding on page 8. This month’s weather kept us indoors for our fashion photo shoot. Photo shoots are always an intricate part of producing the magazine and one of our gracious advertisers, Stephanie, opened up her store, deCoeur, so that we could seek shelter from the rain. On the other hand, our cover shoot took place on a sunny spring day on the banks on the Tchefuncte River. It was easy to see Shawn Catalano’s passion for the river and surrounding area. Her work with the Tchefuncte River Foundation is doing important work to conserve and protect the area. I was also lucky enough to spend time visiting one of the new baby giraffes at Global Wildlife and was even able to take part in the feeding of baby Elsa. More of Elsa’s story can be found in our Northshore’s Best pullout guide. We are excited to bring you the much anticipated results of Northshore’s Best; congratulations to all the winners and to all the businesses that received votes. WHILE TRUE BODY NUTRITION is brand new to the Northshore, the owner is a veteran in the fields of nutrition and wellness. A registered dietitian for eight years, Rebecca Lee, RDN, LDN aspired to open her own business and her vision has come to life through hard work and dedication. With a background in journalism and nutrition, Rebecca brings a non-traditional perspective to nutritional counseling. “I believe treating health issues such as diabetes and heart disease first with weight loss is more effective than reactively managing these conditions with traditional approaches,” Rebecca says. Beyond her nutritional philosophy that has evolved over time, she uses her well-developed counseling skills to uncover underlying emotional issues at the root of negative eating habits and helps redirect her clients to healthier behaviors. Weight loss is mostly a mind game. “Fix the mind and the body will fix itself,” Rebecca says. She takes this approach when needed with her clients who receive oneon-one wellness coaching through True Body Nutrition. She walks through the health journey with her clients, teaching them along the way so they learn how to sustain a healthy lifestyle beyond the program. “Where do I start? First, the old food pyramid is essentially upside down,” Rebecca explains. These principles are reinforced through the wellness coaching she provides for her clients participating in the Ideal Protein Weight Loss Method. As an Independent Authorized Ideal Protein Clinic, Rebecca uses the personalized weekly coaching model to help her clients not only lose weight, but also improve their overall lifestyle. Taking her clients beyond losing weight is a big focus with True Body Nutrition. A proponent of the farm-totable movement, not only does Rebecca help her clients find the freshest local produce, meat and eggs, but helps 6 Sophisticated Woman | April 2016

them learn how to use those ingredients to avoid waste. In addition to supporting local farmers and companies, shopping locally and seasonally helps her clients consume the highest levels of nutrients available. This is the bedrock principle behind her clean eating program. However, when shopping farmers markets is not a practical option, Rebecca offers other options and ideas for her clients including the use of local produce distribution companies and grocery store tours. Shopping the perimeter of the grocery store for local, seasonal selections is a decent way to achieve a similar goal. Being able to make healthy lifestyle choices independently is ultimately the end goal for her clients. Eating habits are usually instilled early on, depending on experiences as a child. For instance, Rebecca grew up in a healthy household with a garden outside and a home cooked meal every night. Her interests in nutrition started while sitting in her mother’s kitchen, watching and helping her cook. This interest developed into a passion, which advanced into a career of helping others in their own health journey. While some people may believe healthy eating will lack flavor, Rebecca teaches clients how to prepare delicious food that is also nutritious. She will be offering basic and advanced cooking classes for her clients in the near future. With True Body Nutrition, the focus is not just about following a diet. The focus


is on overall lifestyle change, including how to help fight depression, heart disease and diabetes by eating the right kinds of foods in combination with a healthy exercise regimen. When faced with challenges, Rebecca motivates her clients to come up with positive solutions. “Simply put, there is no room for negativity at True Body Nutrition,” Rebecca says. “Sharing in the joy of success and the life changing experience of reaching sustainable health goals can sum up the True Body Nutrition experience.” Practicing what she preaches, Rebecca’s pantry and refrigerator exemplify what it means to live nutritiously. Filled with foods such as quinoa, olive and coconut oil, lean meats, fresh fruit and vegetables, free-range eggs, milk, and Greek yogurt, she has instilled healthy eating habits in her family. “I love the fact that my daughter’s favorite thing to eat for dinner is quinoa, salmon and kale,” Rebecca said smiling, “We try to eat as healthy as possible even with a busy lifestyle.” At the Lee house, cooking and dinnertime is a family event. On most weeknights, Rebecca comes home to her husband and daughter cooking together while listening to their favorite music.

With aspirations to one day become a physician committed to integrative health and wellness, Rebecca has been spending most of her time over the past two years studying and attending classes required for medical school acceptance, while continuing to work as a dietitian. Although her spare time is limited, Rebecca loves spending time with her husband and daughter. Her hobbies include endurance events along with playing the piano, journaling, blogging and even writing a fiction novel. Rebecca enjoys living on the Northshore with her family because it is close enough to her hometown of New Orleans but still fosters that unique sense of community. The close, supportive and strong network of people is why she enjoys working on this side of the lake. The Northshore, according to Rebecca who has worked with clients from all over, is one of the healthiest areas in the state. “Food is our culture in South Louisiana,” Rebecca says. “Going against the grain is hard, but social changes are beginning to happen, even though we have a long way to go.” Rebecca can help anyone begin their journey to a nutritious life no matter where they may fall on the health scale. DR. NATHAN BROWN was certain he wanted to be a trauma surgeon while in medical school; he ran to the emergency room during off hours, learning all he could in the hustle of the trauma bay and operating room. During complicated cases, he would encounter the team that repaired the face and jaws of trauma victims, the oral and maxillofacial surgeons. He became fascinated by the complexities of the facial skeleton. “I love surgery and was especially drawn to trauma. I enjoy repairing patients, and the detail of oral surgery suited me. It is very necessary work,” says Dr. Brown. After completing his medical degree and surgical internship, Dr. Brown received his dental degree from the University of Alabama in Birmingham and stayed on to complete his oral and maxillofacial surgery residency. ably had lived a very full life! Now you may think, “Ouch, who would want to lay down on a rose bush?” My first thought, too! But who does not enjoy the lovely blooms that the sometimes ugly, thorny bush creates? Most importantly, who amongst us does not look forward to the amazing scents a rose can produce? Shakespeare wrote, “That which we call a rose, by any other name would smell as sweet.” Through the ages, roses have been a part of man’s garden. They grow wild in many areas, but have also been heavily cultivated for their durability, beauty and scent. There are species roses, heirloom roses and modern roses. The species rose occurs naturally and include many plants you may not even think belong to the rose family—some fruit trees, Hawthorn, strawberries and Spiraea are good examples here. Then, you have the heirloom roses. These were cultivated over time to be the garden queens. They have beautiful blooms and most importantly, beautiful scents. Today, most plant nurseries carry the modern roses. Okay, now that we know a little about the rose, how do we grow them in our own garden? First and foremost, plant them where they will receive ample sunlight—at least a third of the day. They do not require the best soil, but it is important that the area they grow in drains

well. They should receive about one inch of water per week in the summer and be fertilized only during their growing season. Most roses will bloom when the temperatures are cooler, but some of the modern varieties will produce showy blooms all summer long. You will need to do some pruning in the winter months and perhaps watch for disease when the weather is wettest. Do a little research online before you make your rose garden decisions. You will find lots of information, pictures and growing advice there. Be sure to look up hardiness in zone 9 and don’t forget to look for at least one or two varieties that still have the beautiful scents. As in life, the rose bed will, at times, be beautiful and abundant. However, there will also be times when all you see are thorns and sticks. Without the contrast, how would we ever truly appreciate the beauty and delight a simple bloom has to offer? Experience life, but don’t forget the garden gloves! OAXACA?

Never heard of it! I had thoroughly explored the Yucatan in my youth from Isla Mujeres to the ruins in Tulum and Chichen Itza. But Oaxaca? First, I needed to get oriented geographically. Oaxaca City is in the state of Oaxaca in the southern region of Mexico. I used the opportunity during the brief two-hour flight from Houston directly to Oaxaca to study notes and recommendations from a few friends that had visited there. My husband’s cousin, Penny Morrill, a published and renowned expert on pre-Colonial Mexican art history, provided us with a wealth of information regarding the indigenous cultures, ruins, museums and abundance of churches in Oaxaca. I also did my own research on the markets and learned where to purchase local

Zapotec and Mixta folk art. Local art includes red, green and black pottery; woolen rugs from Teotitlan de Valle and the whimsical and meticulously hand painted carved copal wood figures known as “alebrijes.” What I was amazed to discover was that Oaxaca is internationally renowned as one of the “foodie” capitals of Mexico. It was truly fate that I should land in Oaxaca. Ah yes, I could now fulfill one of the goals at the top of my culinary bucket list: learn to master the fine art of preparing the complex mole negro. I had arrived at the source. From the streets, to the market, to the high-end cafes, Oaxaca’s colorful and varied gastronomic offerings range from street pozole to modern takes on traditional Oaxacan cuisine at upscale restaurants

serving locally sourced innovative foods. Using simple indigenous ingredients such as corn, quesillo (Oaxacan string cheese), black beans, chiles, chocolate, grains, locally-sourced meats and a smattering of vegetables to make tamales, tlayudas, tacos (we loved the barbecued goat tacos), empanadas, moles and more, Oaxaca offers a variety of taste sensations that surprise and, at times, overload the senses. These savory foods are paired with the distinctive Oaxacan smoky flavored tequila, mescal, that is typically served with “sal con gusano,” salt with a dried extract of the Maguey worm. Chapulines, or grasshoppers, are eaten as part of the regular diet in Oaxaca. They are abundant and sold on the street at markets and prepared fried in olive oil with peppers and garlic in restaurants. Yes, I tasted them. Took me back to the days when my kids were younger and they ate chocolate covered ants and crickets at the zoo. I am not sure if the chapulines have any nutritional value but they did add an interesting element of crunch to our tacos and quesadillas.

Back to the quest for the perfect mole. Oaxaca is known as the land of seven moles. Some of the mole types include Negro, Rojo, Coloradito, Amarillo, and Verde. Rice is usually included to help sop up every delicious drop. Oaxacan moles require a complex combination of up to 25–30 ingredients and long cooking times, and for this reason, are traditionally served only for special occasions. I was determined to learn to make a mole negro while in Oaxaca, so I signed myself and my traveling companions up for a five-hour authentic Oaxaca cooking class, mescal included, in Esperanza and Augustin’s kitchen. We worked nonstop for six hours, with several eating and drinking breaks in between, to prepare guacamole, salsa rojo and verde, white corn tortillas, squash blossom quesadillas and chicken tinga, typical Mexican street fare followed by the piece de resistance, mole negro. To effectively manage your social media efforts, start with an editorial calendar that plots out posting strategy over a set period of time, preferably monthly or quarterly. IN ORDER FOR the Tchefuncte River to thrive, the natural balance within its delicate ecosystem needs to be restored. Just like this beloved river, achieving balance is something that Shawn Catalano, Executive Director of the Tchefuncte River Foundation (TRF), strives for each and every day. Balancing her busy schedule as a wife, mother and Business Development Manager for Keystone Engineering’s Mandeville office, is a feat in and of itself; when you add running the non-profit TRF to the mix, her balancing act becomes much more precarious. Shawn was born and raised in New Orleans, graduated from the University of New Orleans with a B.S. in Electrical Engineering and a M.S. in Engineering Management. She and her husband Kyle Catalano currently reside in Madisonville. Together they have four sons: Branden Keller (19), Justin Keller (18), Ethan Keller (12), Haydon Keller (10); and one daughter, Kyley Catalano (18). Preserving the Tchefuncte River became a priority after the couple discovered that a familiar sandbar had eroded away. Over the last six years, Shawn and Kyle, who is the President of TRF, along with TRF Vice President Jay Blossman, have taken up the mantle to protect and restore one of the Northshore’s most treasured natural resources. “We had no experience with creating, funding or running a nonprofit foundation, but once we realized that there was no organization in place to protect the river, we got up to speed pretty quickly,” Shawn explained. The couple held its first fundraiser in February 2011 at Morton’s Seafood. “Any trepidation we felt about the undertaking was eliminated after that event. The support we received from Madisonville residents and the entire community fortified our decision to move forward,” she said. “The event did more than increase the awareness of coastal erosion and storm surge on the north side of Lake Pontchartrain—it ignited a passion for people to actively participate in preservation efforts.” The first order of business, in addition to creating the 501(c)(3) organization, was the commissioning of an environmental assessment to identify specific action items and assess costs. Shawn and Kyle realized very quickly that the focus could not be centered on the sandbar. Without cleaning up and removing derelict boats from the river, fortifying the riverbanks and constructing a breakwater, the sandbar would not be sustainable. 22 Sophisticated Woman | April 2016

Title searches were also conducted on dilapidated and sunken boats in order to expedite the boat removal project that was conducted last summer. With its first two goals (acquisition of land and removal of boats) accomplished, the creation of a breakwater is now the foundation’s top priority. This is where Shawn’s professional expertise has really come into play. She regularly confers with engineers on construction materials and design elements in order to identify the most cost effective and efficient matter to construct a breakwater. Pointing to recent storm damage at the Coast Guard Boat Launch, Shawn highlighted

the urgent need for a breakwater. “We desperately need another line of defense from weather and coastal erosion.” The initial proposed Breakwater Project consists of preliminary engineering, permitting and detailed engineering design services that are required for the construction of a breakwater at the mouth of the Tchefuncte River and the restoration of the beach along the structure. This includes surveying and geotechnical data gathering of the lake and river bottoms in the project site area. Under Shawn’s guidance, TRF will secure all the necessary permit applications to all federal, state and local entities. Based on a preliminary assessment by Kyle and Associates, the proposed breakwater will

Process: Implement a quit-claim deed procedure where TRF assists St. Tammany Parish in identifying owners of blighted boats and structures. If an owner is found, he or she is given the opportunity to rehabilitate or remove the property. After due diligence in finding the owner (advertising in its official journal for 30 days), the parish then claims the property and authorizes its removal. During an 18-month period, TRF worked in cooperation with the parish to designate structures for the project. The foundation then contracted with Davie Shoring to raise, drain, remove and crush debris. “Just as we were facing a larger environmental issue, we were also facing a larger cultural issue,” Shawn said. “The Tchefuncte River has shaped the entire area—influencing our cuisine, our recreational activities and our economy,” she said. Luckily Shawn’s technical background in engineering and Kyle’s experience in real estate and title work with Clean Title, LLC have been invaluable to the organization— especially since it has no paid employees on staff. Taking ownership of the beachfront property and peninsula, for instance, was key in controlling reseeding and maintenance efforts. Kyle performed a title search and discovered the original owners, whom he convinced to donate the land to the foundation. By the end of 2011, TRF became the owner of 150.56 acres

be approximately 3,750 feet long and cost an estimated $2.8 million. In order to coordinate efforts and leverage fundraising activities, TRF has partnered with the Save the Lighthouse Committee of the Lake Pontchartrain Basin Maritime Museum. The groups will be co-hosting a luau on Saturday, July 16 at the Covington Country Club. Less formal than previous galas, the “Tikis on the Tchefuncte” will feature a traditional cochon de lait, accompanied by beer and wine, and entertainment by the Bucktown All-Stars. Tickets are $75 per person, with 6-top tables available for $600. All proceeds will go toward the breakwater project and the restoration of the historical Madisonville Lighthouse. Despite a demanding career, Shawn has balanced the oversight, planning and fundraising for TRF—all while remaining true to her calling as mother to a blended family of five children. “From the very beginning, the river has been a special place for our family. Kyle and I were married on the riverbank and hosted our reception at Coquille Cottage— Abita Roasting in Madisonville. Our kids spend a lot of time volunteering during our seasonal clean up days and for special events. It is fulfilling to see them sharing our passion, yet what is really special is sharing quality time together,” she explained. “Our work with TRF has provided our family with great balance. Throughout this entire journey, we have been able to instill values like perseverance, confidence and focus in our children. We have taught them the importance of service to their community. With the home’s unique situation on a natural incline, it was important for the architect and the homeowners to leave the property in its most natural state. Their solution was for the floor slabs to step down periodically throughout the home for a difference of five feet in elevation from the foyer to the master bedroom. “The home was carefully sited in order to protect the natural beauty and existing drainage features,” explains Tom.

WHEN ARCHITECT Tom Pistorius first met with Marilyn and Tag Galloway to conceptualize their rural Ponchatoula home, Marilyn came armed with hundreds of photos and bits of inspiration. Through careful consultation and a thorough understanding of the unique piece of property, the couple and their architect were able to take these ideas and establish their own vernacular for the look they had in mind. The term they coined for their home is Southern Non-Traditional—an amalgam of classic southern architecture with touches of modern materials. The traditional elements encompass sacked white brick exteriors and an “Old Baton Rouge” color palette with modern elements of stained cypress and copper accents.

Entering the home through wrought iron gates from the circular motor court, a grand foyer opens up to the dining, living and kitchen areas. The space is open but well defined, with focal walls guiding you in to the next interior space. Marilyn chose a palette of simple yet elegant pewter and gray, which complements the high-contrast white and bronze tones in the architectural details. The central living area contains a gourmet kitchen, butler’s room and social space—all focused around views of the lake, back deck and infinity pool. A circular rotunda serves a practical purpose on the exterior of the home, forming an “elbow” where two different pitches of the roof come together. On the interior, this rotunda creates a visual centerpiece in the living area and functions as a wet bar. Marilyn’s eye for elegance and simplicity was utilized in the interior design of the kitchen and living spaces. She selected each light fixture and design accent in accordance with her chosen color palette.

The private living area of the home is separated by an actual bridge, which allows for natural drainage under the home and forms a unique hallway with breathtaking views from the floor-to-ceiling windows. “It’s a wonderful place to sit and enjoy the daylight while sipping a cup of coffee,” says Marilyn. An expansive project encompassing over 7,500 square feet, bridging the social and private spaces of the home was no simple task. Yet, the final home manages to conform to the natural slope, preserve natural vegetation and blend unique styles from different genres to create a new and cohesive style all its own. legal I Don’t Have a Will…or do I? WHEN SOMEONE DIES

without a valid Last Will and Testament (“Will”), they have died “intestate.” As a result, the intestacy laws of Louisiana dictate to whom your assets will be distributed. In essence, the State has created your Will! Louisiana laws of intestacy are designed to protect the “bloodline.” If you have children, your assets go to them in equal portions (or to the children of a child who has predeceased you, called “per stirpes”). Contrary to what many people assume, your spouse does not inherit—he or she has only a “usufruct” (the right to “use” the assets and collect the income) until their death or remarriage, whichever comes first. This usufruct only applies to community property assets, meaning those acquired during the marriage with community funds. The usufruct does not extend to separate property, which is property acquired before the marriage, or during the marriage through gifts or inheritances. A person with a usufruct is called a “usufructuary” and cannot sell assets without the permission of the children. If the surviving spouse remarries, the children become full owners of the decedent’s assets and may now force the surviving spouse to “settle up” with them.

The children could force the sale of the home (even though the surviving spouse still owns one-half in full ownership!), and request repayment of the decedent’s cash assets used by the surviving spouse while he or she was usufructuary. In the event there are no children to inherit the assets, the community assets are distributed to the surviving spouse in full ownership. However, any separate property still follows the bloodline, going first to siblings (per stirpes), with a usufruct to the decedent’s parents. Whether a Notarial Will (prepared by a Notary Public) or a handwritten Will (called an “olographic” Will), a valid Last Will and Testament will avoid intestacy, and can be a vital part of your estate plan. Falaya F ling St. Scholastica Academy’s annual fundraising event, Falaya Fling, was held March 14 on SSA’s campus. Over 30 restaurants were in attendance accompanied by a live auction during the event. A silent auction was held online, allowing those not in attendance to bid from home. The event’s theme was “SSA Our Home You’ll Always Be.”
