I HAVE MANY treasured memories of my mum growing up; my parents ran a boys boarding school in England, so I was lucky that she was always home after school. I would even walk home from school during lunch to share a family lunchtime together. My parents would always take Wednesday afternoon off— my father from his teaching and my mother from her duties. with health care clients, I know firsthand that it’s a difficult time to be in the medical business. With all the other challenges they face, how are health care providers to focus on customer service? The fact is that outstanding customer service in other industries, such as hospitality, retail and banking, has spoiled the consumer, and there’s no going back. Now that we’ve had a taste of good service, we’re looking for it in all of our business transactions, and we’re less tolerant of poor service. Fortunately, it doesn’t cost extra to take basic steps toward better customer service. Things as simple as good manners can make all of the difference to patients. Here are some words of advice that anyone can adopt: Staff your practice with “people-people.” Those who interact with patients and their families must have good people skills. As your director of first impressions, the receptionist sets the tone for the patient’s entire experience with the practice. Hire for attitude and train for skills in front office staff. Take the time to listen. An attorney client once told me that probably half of all medical malpractice cases could be avoided if physicians would just take the time to listen to what their patients have to say. Time spent listening is much less costly than litigation. Respect patients’ time. Patients who are kept waiting for hours are not going to be your practice’s strongest allies. When emergencies arise that cause delays, let patients know. I have a hair stylist who texts or calls if she’s running late so that I’m not sitting around waiting. Could you take similar measures in your practice? In our increasingly connected and social world, customer satisfaction is a critical component of marketing. It behooves the savvy health care practitioner to provide it.

Turn Up the Volume ONCE UPON A TIME,

the aging face was thought of as a mass of loose, sagging skin, which had to be nipped, tucked, and “taken up,” much like an oversized hand-me-down garment. In the last two decades, understanding the multiple components of the aging face has broadened to include the substructure of the skin, namely the fat layers, muscle, bone, cartilage and dentition. With time, these all shrink in volume contributing substantially to the jowls, the hollows of our cheeks and temples and to deep shadow lines around the mouth and eyes. What once was treated with facelift surgery is approached today with methods that fill the hollows and restore that substructure thus re-inflating the skin to its youthful contour.

One size definitely does not fit all needs, and this is why it’s most important to choose board-certified specialists. A few of us cosmetic surgeons were using injections of the patient’s own fat to achieve this way back in the ‘80s, but since then, the menu of volume-enhancing substances has burgeoned to a point where there is a filler for just about every layer and every wrinkle, lasting from a few months to many years. I AM NOT

a good mother, not a terrible mother, but not excellent. I mean I wanted to be a good mother but had no training on the subject. What I had and obeyed was the sticker that came with all the baby furnishings that read, “NEVER LEAVE BABY UNATTENDED.” So, I didn’t. I took my baby with me to the end of the driveway to check the mailbox. I took my baby into the kitchen when I was cooking and explained the process of things. The sticker didn’t say to do that, but it seemed the logical thing to do, so I did. My children are wonderful adults. By the grace of God, they grew up and are excellent. I haven’t progressed much though in knowing about how to be a mother. I was at a crawfish boil on Good Friday and saw William and Cheryl Vanderbrook’s brilliant grandson; I looked down at him and said, “Hello, little boy.” He said, “I’m not a little boy; I’m just short.” Then he found his mother to verify and said, “Tell her I’m not a little boy; I’m just short.” Seems like I could have found something better to say to him. I was trying to say something I guess in the way of a greeting. I wanted to tell him, since he mentioned it, “Precious child, you won’t be short for long, nor will you be a little boy much longer.” That is the promise of mothering, it is rather a small window of time to raise children to grow, and then, it’s their turn. I see that in my children. They don’t leave me unattended. They check in and check up on me. I sit with many mothers in sessions—expectant mothers, grieving mothers, daughters and sons who have lost their mothers, and all have a common hope for happiness. A hope that our mothers’ mothers had and one that has not changed for anyone born of another. Hope is the desire for better, and the faith that things will be better. Mothers tenderize by love which is attends.

Described as irregular and abnormal respiratory patterns during sleep with periods of silence followed by loud snorts or snoring, it may also manifest as nocturnal chest pain, awakening the affected individual from sleep with the sensation of choking, gasping or smothering. The end result is disturbed sleep affecting its quality and thus the individual’s health. If left untreated, obstructive sleep apnea can cause excessive daytime sleepiness, fatigue and poor concentration. These symptoms tend to be misdiagnosed as other illness such as ADD and mistreatment ensues. The major comorbidities one needs to avoid are cardiovascular outcomes associated with untreated sleep apnea, such as resistant Systemic Hypertension. The Apnea-Hypopnea index depicts that greater than 5 events an hour indicates sleep apnea and greater than 30 events an hour indicates increased risk for all-cause mortality.

True Love: Best Brownie Recipes WRITTEN BY JAN ROBERT

YOU MAY HAVE deduced from previous articles that I do have a bit of a weakness for and an addiction to chocolate. Chocolate mousse, chocolate raspberry truffle tarts, chocolate dipped strawberries and don’t forget Dark Secrets chocolate desserts. It’s not too difficult to figure out that I have had a long-standing love affair with all things chocolate. After reading the most recent edition of Sophisticated Woman’s “Northshore’s Best for 2016,” I was inspired to share my list of best and favorite brownies that I have collected and thoroughly tested over the years on family, foodie friends and myself. I have never been particularly fond of cakes, pies and other desserts. However, give me a perfectly baked cookie or a rich, dense, chewy brownie with a delicate crust, and I lose all sense of judgment and control. I look for any excuse to make a batch of brownies. It’s a beautiful, sunny day, so let’s make brownies. Rainy and overcast? Brownies! Is it your birthday, anniversary, special occasion? Brownies! How do you like your brownies? Fudgy, cakey, gooey, chewy, dense or light? Do you like your brownies frosted, plain or with ice cream and chocolate sauce on top? Most purists

prefer simple, straightforward, honest brownies without nuts or other spices. Maybe you just like licking the bowl and eating the raw batter better than a warm brownie just out of the oven. Do you like the crispy edge brownies or the ones from the middle of the pan that are soft and sometimes caving in? Depending on my mood, I may add a little cinnamon and/or coffee to balance the sweetness if I use brown sugar and semisweet chocolate. I also like nuts, such as pecans and walnuts, to add texture and heighten flavors. Before you choose a recipe, stop and think about the flavor, consistency and texture that you personally love and most desire, so you can choose the ingredients accordingly to get the result that you are trying to achieve. I personally love the richness and chocolate goodness that cocoa brings to a brownie. If you ever had any reservations about cocoa powder brownies, they will be resolved after you make the “Best Cocoa Brownies.” Cocoa brownies have the softest center and chewiest candy like top “crust.” Check out my recipe, and fall in love with these tasty treats. These brownies are five to six bites each. They’re incredibly fudgy in the middle and chewy on the edges.

realized my dream of traveling to Ithaca, New York, to visit the original Moosewood Restaurant. I have a picture of it in my mind as the original hippie joint. Our two Moosewood vegetarian cookbooks have completely fallen apart from constant use and too much love. These brownies are guaranteed to deliver your brownie fix for the brown sugar, chocolate and cinnamon flavor combination. Ingredients: ½ pound butter, 2 sticks, let them soften or place in the microwave for 10 seconds, DO NOT MELT Melt 5 ounces chocolate chips Cream the butter with 1 3/4 cups brown sugar and 5 eggs. Use a hand held mixer or a kitchen aid mixer and beat on high speed until creamy and forms a ribbon Add ½ tablespoon vanilla extract ½ tablespoon cinnamon Directions: Beat in the melted cooled chocolate and 1 cup flour. Spread into a buttered 9x13 baking pan. Bake 20-30 minutes at 350 F. Cool before cutting. I put them in the fridge and let them get cold so they are easier to cut. These brownies are soft and a little gooey. Optional: can add chopped nuts or 1 tablespoon instant coffee.

TRULY A MONTH of celebration for all of nature, May is green and full of blooms. Whether you are attending a graduation, a party for Mother’s Day or the crowning of the May Queen—this is the moment to let the flowers of May pay tribute to the celebration. A single bloom accented with greenery is always a nice gift for someone special, but why stop there? Grab your garden shears and walk the garden to make a bouquet sure to brighten any celebration. Not sure how to make an arrangement? Let’s go over the basics. • Decide on the container for the arrangement. As a rule, the height and width of an arrangement are determined by the container. Height should be 1 and ½ that of the container and width should look balanced. You can deviate on this rule—for example, if you use very short cuts of the same flower and pack them evenly just a bit above the edge of the container making a snow cone effect. • Make sure the container is waterproof. Be creative in your choices as the container can be a gift in itself. A teapot, mixing bowl or a simple mug would make a nice gift for that going away graduate! • Cut the flowers and greenery a day before, and season them in warm water with floral

preservative. If you have nothing of interest in your yard, go to the grocery. Most now have floral departments where you can get fresh blooms and floral preservative. Also they will have floral foam to put in the container if necessary. While at the grocery, look for some fresh herbs to add to the arrangement for a little fragrance! • Trim the stems again when making the arrangement, and remove leaves that will be below the water line. • Place large heavy flowers in first and work from the lower part of the arrangement up. Turn the arrangement in front of you to get a good view of your design from all angles. Don’t be afraid to move a bud or bloom if the placement looks funny. Fill in with greenery, some of the fresh herbs or even tall grasses make great filler. • Keep water fresh. Now you have the perfect gift for any celebration. Don’t let fear of arranging hold you back from enjoying the look of surprise and enjoyment on the face of your recipient. Let this May be your happiest yet! Sophisticated Woman held its 11th Annual Hats Off Enterprising Woman of the Year Luncheon at the Tchefuncta Country Club in Covington. Guests, adorned in spring hats, fascinators and cloches, enjoyed lunch and socialized among silent auction items donated by local retailers. The luncheon was a huge success. Angelle Albright of Chemo Beanies shared her inspiring story while money and awareness were raised for Compassion That Compels. Decorating Den Interiors The Accidental Art Lover NOT THAT KIND OF GUY Ryan Turk, like most men, spent the majority of his life uninterested in art. He wasn’t “that kind of guy.” One fine spring day this changed when he stepped into an art gallery on Royal Street and fell in love with Poppies by Petra Seipel. The fact he knew nothing of art and had never owned any, nor imagined that he’d want to, suddenly did not matter. He connected with the painting, and he wanted it. Poppies became the inspiration for a living room makeover, so he commissioned a matching piece. The gallery owner arranged a conference call with Petra, who lived in Germany, and Orange Tulips arrived within a few months. “It was very exciting,” says his wife Jeanette, “the only requirement for the work was that it be of a specific size and color palette. Not knowing what she would paint was thrilling.” Ryan thought his small art collection was complete until he met Happy Einstein by Aaron Reichert. If Poppies was love at first sight, Happy Einstein was pure infatuation. He and Jeanette visited the gallery on three different occasions before Jeanette surprised him with it as a birthday gift. The painting hangs opposite of Ryan’s favorite chair and greets him with a smile each evening. “Happy makes me smile every day because it reminds me not to take life too seriously,” he says. FROM THE MIDDLE EAST TO A BEACH HOUSE ON 30A While traveling earlier this year with friends in the Middle East, Ryan took a photograph of the Alila Jabal Ahkdar Hotel. It was a once in a lifetime trip in an extraordinarily special place so he commissioned Stephanie Torregrossa to paint a piece using the photo as inspiration. “Our beach house on 30A is scheduled for completion at the end of this month. I wanted to infuse the memories of that trip into the decor of our beach home. Art gives me a way to do that and to make the space beautiful and personal,” says Ryan. “People think we create spaces, which of course we do, but what we really do is create an emotional connection to a space. Original art embellishes this emotion by making it very personal for the owner which is why we are so excited about this promotion. We try to incorporate our client’s “valued treasures” into all of our designs. Usually, it’s a photograph, a keepsake from a trip or a family heirloom. FOR LETICIA RUBIO family is not something she relegates to personal time. In fact, family is front and center in her personal life as well. It is more than being in business with her brother; it’s more than incorporating their mother’s favorite recipes in their restaurants. For Leticia Rubio, family is evident in the way she feels about her employees and certainly in the way she treats guests. As co-owner of the La Carreta restaurants in Mandeville, Covington and Ponchatoula, Leticia brings a deeper meaning to the words “family restaurant.” Her affection and passion towards her work, coupled with her business acumen, has helped create a comfortable environment where people are assured not only a great meal but a great experience. “Everyday is a party in the restaurant,” she said. “We provide a festive atmosphere that celebrates our Mexican heritage with a South Louisiana flair. It is a combination that people love. And we love giving it to them.” Leticia moved from Mexico to help her brother, Saul Rubio, run his burgeoning restaurant business. The two had grown up working at their mother’s restaurant, Fonda Tina, in their hometown of Queretaro, Mexico. Inspired to honor her legacy in the United States, Saul moved to Hammond and opened La Carreta in 1998. Leticia followed three years later. “I always knew I wanted to have my own businesses. Working with Saul confirmed that the restaurant business was the right direction for me. I did everything to learn all the aspects of La Carreta. When the time was right, I pitched the idea of opening La Carreta in Mandeville, where the two of us would be business partners. Everything took off from there,” she said. Leticia’s choice of Mandeville was a deliberate one. The location was one where she felt an instant connection. “It just felt like home to me. I moved there in 2008. When it came time to open a new restaurant, I knew I wanted to work in the same place I lived. It means a lot to be a part of the community.” 22 Sophisticated Woman | May 2016


“When people ask me for a particular recipe, I remind them that the most important ingredient in cooking is love.” Five years after launching the restaurant, Leticia felt the time was right to open another restaurant. Once again, the pull of a certain area played a huge part in the choice of location. Although it was less than five miles away from Mandeville, Leticia knew Covington would be a good fit. She explained that it took a bit of convincing to get Saul to agree to opening La Carreta on Highway 190 in Covington. “He thought I was a little crazy,” she said. “He was worried that it would pull people away from Mandeville, but I didn’t see it that way. I thought it was a great opportunity to bring our unique blend of food and festivity to another part of the Northshore. When I walked into the restaurant space, I saw more than the empty room it was—I saw what it could be. I told Saul to trust me. I knew in my heart it was the right thing.” Today, the Covington location bears no resemblance to the restaurants that were there before it. From the stucco exterior to the Spanish tile roof, the exterior looks like a little slice of Mexico. And while the interior has a definite Mexican vibe, the décor also pays homage to its local roots. In addition to the lamps that were hand-painted by students from St. Thomas Aquinas High School in Hammond, the décor also features a huge mural that was designed and decorated by La Carreta staff. “It is their restaurant as much as it is ours,” Leticia explained. “We want our employees to be involved and engaged. It makes for a happier workplace, but it also makes for a happier customer experience. All of us here love what we do. It shows in our food and our service. When people ask me for a particular recipe, I remind them that the most important ingredient in cooking is love.” In December 2015, Leticia opened a new restaurant on Magazine Street in the lower Garden District. Serving “urban” Mexican food in an eclectic environment, Rosa Mezcal is already receiving rave reviews from critics and customers alike. Even with this new venture, Leticia is a constant fixture in Mandeville and Covington. Priding herself on providing the freshest quality ingredients, she samples many of the dishes on a daily basis.

“The biggest influence on the restaurant is my mom. Our recipes, our service, our commitment to our employees—we learned all of these things from her. Even today, my mom leads by example. She is still creating new dishes and testing new ingredient combinations. She shows us that no matter your age, or your level of success, we should still try to improve our skills,” Leticia said. “My mom is the strongest, most honest woman I know.” The line of strong women in the Rubio family does not stop at Tina. of Veterans Affairs (VA) Aid & Attendance Improved Pension program provides monetary assistance to wartime veterans, and their spouses, who need regular personal assistance. Qualifying aid or assistance can be provided at home, in an assisted living facility, or in a nursing home, and can be provided by friends, family members, or healthcare professionals. For 2016, the Aid & Attendance tax-free pension can provide up to $1,788 per month to an unmarried veteran, $1,149 per month to the surviving spouse of a deceased veteran, $2,120 per month for a veteran and spouse who both need care, $2,837 per month for two married veterans who both need care, or $1,406 per month to a veteran whose spouse needs care. If you or someone you love is a wartime veteran and needs help with daily activities like cooking, cleaning, dressing, driving, mobility, or other assistance, the Aid & Attendance pension can provide funds you need to pay for that help. Many elderly veterans and surviving spouses whose incomes are above the congressionallymandated legal limit for a VA pension may still be eligible for monthly Aid & Attendance benefits if they have high expenses for care, including many assisted living facility costs or sitter care in their own home, that are not reimbursed by insurance or other sources.

Who is eligible for Aid & Attendance? For a qualifying wartime veteran or surviving spouse to qualify for this special monthly pension, the veteran must have: 1) served at least ninety (90) consecutive days of active military service with only one (1) of those days during a period of war (WWII, Korea, Vietnam, Desert Storm, Iraq and Afghanistan); 2) been discharged under conditions other than dishonorable; and 3) the claimant must have limited income and assets available. Anyone who assists a veteran or family member with the preparation, presentation or prosecution of a claim for VA benefits must be accredited by the VA to legally provide assistance. THE TITLE The Nightingale conjures images of a quiet night, nightingales singing in the trees and perhaps a young couple in love. Kristin Hannah’s novel The Nightingale, however, is anything but a love story. It is a beautifully written story of one of the most horrific times in world history—World War II. The Nightingale follows two sisters in France beginning a few months before the start of WWII in Europe in August of 1939. Instead of tracking battles and soldiers, Hannah writes of how the two sisters survive in Nazi-occupied France, and how they make a difference. Vianne and Isabelle are as different as sisters can be. With their Maman dead and their father permanently changed from The Great War and neglectful, they have learned how to survive on their own. Vianne, the elder sister, found her comfort in her best friend Rachel, her husband Antoine and her daughter Sophie. However, when Antoine is called to the front, Vianne reverts into the scared girl she once was. Isabelle is the rebel. Feeling unloved and unwanted by every member of her family (and the countless schools and convents that expelled her), she speaks her mind and acts impetuously without considering the consequences. When the war begins and the Nazis occupy France, the sisters reunite in Carriveau with Vianne in denial about the war, and Isabelle itching to fight back. Eventually they part on somewhat rocky terms, but both continue to fight in their own way. As the war continues, Isabelle throws herself fearlessly into the French resistance and Vianne does everything she can to keep her and her children alive. Hannah’s beautiful writing style expresses vivid, horrifying and heartbreaking images of this gruesome war, conveys the impact women had in WWII and what they went through behind the lines. In the April edition of Sophisticated Woman, we featured the Ponchatoula home of Tag and Marilyn Galloway. Some homes, however, are so extensive and well designed that they deserve a second look. This month, we are pleased to show you the exterior living space of this sprawling home designed by Tom Pistorius. The home is uniquely situated on a natural incline, which inspired the step down layout throughout the space. “The home was carefully sited in order to protect the natural beauty and existing drainage features of the property,” explains Tom. Approaching the home, you are greeted with a grand, circular motorcade and a set of wroughtiron doors welcome you in. The exterior is a combination of traditional and modern elements including an “Old Baton Rouge” color palette with white sacked brick walls, copper and weathered cypress accents. Brick corbels at each gable and a decorative pigonier add to the Southern charm that the architect was looking to create. The interior of the home is open but well defined, utilizing palettes of pewter and grays to complement the high-contrast white and bronze


tones in the architectural details. There is one thing you will notice in nearly every room of the large house; it is beckoning you to go outside. The main living area features a gourmet kitchen, butler’s room and social space—all focused around views of the lake, back deck and infinity pool. A circular rotunda creates a visual centerpiece in the living area and functions as a wet bar. On the exterior, this serves a practical purpose, forming an “elbow” where two different pitches of the roof come together. The wet bar leads out to a gourmet barbecue area and out to the exterior entertainment space. It was important to the Galloways for the home to flow seamlessly from inside to outside. Three sets of French doors in the main living area leading out to the deck accomplish just that. The infinity pool is accessible from every area of the back deck. Like the home itself, the deck gently terraces down the slope. The brick retaining walls house the pool and various outdoor seating areas. “Stepping out and away from the home, you can glance back and experience all that this elegant home has to offer,” says Tom. From this angle, you can see the many roof gables and pitches that conform to the plan and create this unique style.

for everyone. The period beginning in late March through the first couple of weeks in May is crammed with what seems to be a thousand festivals in South Louisiana. If it can be eaten, there will be a festival dedicated to whatever peculiar Louisiana culinary offering worth celebrating. Deciding on whatever food is worth celebrating is easy. Tomatoes, gumbo, sauce piquant, jambalaya, po-boy sandwiches, boudin and other gastronomical delights are the themes of festivals, and, of course, the venerable crawfish are the focus of a number of events. The food may be the theme of the event, but let’s admit the truth—choosing a kind of food for a festival is just an excuse to have a good time. Some things we just seem to do better than most other places. Good food is not just an addition to the events, it is an expectation. Food is only one of the things we do well. A number of events are dedicated to celebrating our wonderful musical heritage. Huge events are devoted to music. Louisiana is blessed with an abundance of music and musical styles that surpass other places. Examples of pure Louisiana music include Cajun, Zydeco, New Orleans Rhythm and Blues and, of course, traditional Jazz. We love our music and people

come from all parts of the world to hear and share in the celebration. The New Orleans Jazz and Heritage Festival, French Quarter Festival and the Festival Internationale in Lafayette are examples of mega events that attract huge crowds of music lovers. We also love good music on the Northshore, but how can we go about celebrating our great musical heritage without simply doing what is already being done all over the state during the good weather months in which festivals abound? Where do we fit in? The month of April is crammed with great music and places hear it. In Abita Springs, we have discovered a great pool of talent and a time to showcase it—the third Sunday in April. That pool of talent is deep and filled with a group of accomplished young musicians who are collectively referred to as “Buskers.” Buskers are street musicians who can usually be found playing their music on places like Royal Street for tips. They are hoping to catch the attention of tourists who might hear something worth listening to and drop money into the tip bucket or open guitar case. Busking is a competitive enterprise; they have to show up very early to get a good spot and also have to perform with high energy and a skill level that will


community attract attention. More importantly, they have to perform traditional music. The Abita Springs Opry became a natural fit for the Buskers. The first busker group to take our stage, Tuba Skinny, wowed our audience. Following Tuba Skinny, the Opry invited others to perform who have become a regular feature at the Opry performing different genres. We have presented several Jazz groups like the Royal Roses, Smoking Time Jazz Club and Meschiya Lake and the Little Big Horns. The Shotgun Jazz Band featured an unusually powerful singer, Marla Dixon, and had three standing ovations. Other groups, like the Wasted Lives and the Deslondes, performed country music, and others performed a very catchy blues style referred to as “Jug Band” music. We noted the audience reaction and came to the conclusion that a festival devoted exclusively to the Buskers would be a good idea. The New Orleans Jazz and Heritage Festival Foundation also believe it is a good idea, and they have supported us all six years the festival has been held. WWOZ Radio also believes in the festival and sent a camera crew to the festival to live stream the musical performances. The set date for the festival is the third Sunday in April that follows the Abita Springs Opry the night before. The festival also falls on the weekend between the French Quarter Festival and Jazz Fest. At that time, the buskers are all in town. A lot of tourists come in town who want to hear Louisiana music and are likely to tip the musicians who are performing what they came to hear. Many of them are also scheduled to perform at the larger festivals, but they love the Busker festival. The word is out in that close-knit family of musicians that there is a festival dedicated strictly to them, and there is a place where their music is appreciated. This year’s festival was well attended, and the music was great. We are proud to be associated with these young people who have mostly gravitated to New Orleans following Katrina. Some buskers came here to help with the cleanup and fell in love with this area and our rich culture. They are well educated, well organized and accomplished musicians. More importantly, their goal is to study and perform traditional music and become part of our wonderful family of musicians as well as important members of the Abita Springs Opry family of musicians. These musicians help fulfil the reason for our existence and our mission statement, “The Preservation and Presentation of Louisiana Roots Music.”

Chef SoirĂŠe 2016 was a huge success with the best food, drink and entertainment on the Northshore. The Covington Trailhead provided a beautiful backdrop for the event that raffled away a 2016 Ford Mustang donated by Banner Ford. Proceeds help the Youth Service Bureau provide services to at-risk youth and families in St. Tammany and Washington Parishes.
