WE ARE IN the thick of it now. Summer, that is. July marks quite a milestone in our family this year as my mother celebrates 80 years of living. She remembers so many things that happened in our great country that allow us to enjoy what we do today. Her father (my grandfather) was part of the crew who built the ingenious Higgins Boats used in World War II, which many assert, changed the way the war was fought. My grandmother, whom he affectionately referred to as the Secretary of War, contributed as well, not only as an industrial worker, but as so many of the wives and mothers did collecting scrap, conserving resources and keeping their families in tact while the war raged. My mother was a witness to it all, and often participated in the war effort as many children of that era did. Her generation learned through necessity what it meant to be “One Nation,” and they took it very seriously. Independence meant working together to secure the safety of all. We can learn so much from them. In this issue, we celebrate the U.S.A. as we meet our Enterprising Woman who embodies what free enterprise is all about, and who knows personally the sacrifices that our military families make. Our Fashion Editor, Patty Beal, has gathered items made right here in America. And finally, we bring you Premier Physicians of the Northshore who personify everything the United States stands for— innovation, excellence and hard work. So this July, as you enjoy the Fourth, we hope you will celebrate our country, our community, our families and our freedom. I wish a special happy birthday to my mother, and to my young daughter who marks her ninth birthday.

SHERRÍ HANSEN’S FONDEST memory of her childhood is squashing French bread in the kitchen sink for her mother’s turkey stuffing, while Grandma tended to every minute detail of the dirty rice. “I learned from them what I hope I’m teaching my children today—the value of friendships and family relationships, and how to connect over memorable meals.” For Sherrí, these life lessons carry beyond her personal life as the wife of an EMS helicopter pilot and an expectant mother already raising three young boys, into her professional life as Owner/Director of Culinary Kids, an interactive, educational establishment designed to create bonds among people of all ages and across all walks of life. “Food is a centerpiece in our culture,” she notes. “Down here, we give driving directions based on landmark restaurants and while we eat dinner together, we talk about what we ate last week.” In a society where family recipes are priceless treasures passed down for generations, she recognizes how much young people enjoy being part of the tradition that keeps memories alive. As an educator with the desire to play a role in strengthening the community by bringing families and friends together, Sherrí was given a unique opportunity to transform what was once the franchise Young Chef’s Academy into what is now her vision—the privately owned
Culinary Kids, educating and connecting all ages and all members of the community using the universal language of food. Sherrí explains, “My background in nutrition and educational development, coupled with my creative skills in the kitchen, have led me to develop quality programs that not only entertain but educate and encourage kids and adults to adopt a healthy lifestyle despite our speed of life. Let’s be realistic, we all fall back on convenient, less-than-healthy food options, knowing we should make good choices and I want people to know it can be done, and it can be delicious fun!” Her decades-long career in educational development and years as a military wife led Sherrí down many paths. What started as a career in youth education at the San Diego Zoo soon evolved into community based educational and nutritional programs for local schools in both California and Virginia. But the crown jewel of her education career was her position as Director/Developer of a Boys and Girls Club facility in Washington State which she designed from conception to completion, and programmed especially for the children within the community facing hardships and difficult circumstances. “This facility breathed new life into that community,” Sherrí remembers. “Teachers from surrounding schools phoned me to ask how we were reaching

these kids because they could see a marked improvement in classroom behavior. It was all just a matter of time and attention. I just have a deep passion for mentorship. It’s in my bones.” Sherrí’s applied expertise in developmental education protocols would ultimately evolve into her own formula for childhood education. This hands-on, kid-centric formula is the model on which Culinary Kids is based. “We keep children involved every step of the way while developing valuable life skills, confidence and a little more freedom to exercise some control over what they put on their plates.” Sherrí also guarantees direct communication with teachers to tailor field trips that reinforce and apply current school curriculum. She states, “We can apply the principles of any subject in our kitchen— mathematics, biology, chemistry, literacy, language and cultural arts, fitness and nutrition, history, geography and more.” The home-like kitchen design includes the same equipment you’ll find in your own

home, and as Sherrí points out, “It’s easy to take what is learned here and bring it to the family kitchen. My goal is to draw kids out of the living room, away from computers for a while and into the kitchen for quality, family time together. Everyone has to eat, so why not turn this necessity into that ever-elusive, cherished ‘family time’?” Events like Family Dinner Nights, where families come in together to prepare and eat their meals for about the cost of a night out at a restaurant, offer the chance to have fun preparing a meal, and sit down as a family to enjoy it in a relaxed setting, all while learning a
few culinary tricks. “These are ideal evenings for anyone who needs a change from the same old routine or for families with children who have special needs and don’t go out to eat very often.” Sherrí realizes that there is an underlying stress associated with bringing a child with special needs into an overly-simulating restaurant environment. The quiet worry that they may have a disruptive moment in public affects the experience. “At Culinary Kids that worry can be left at the door. Patient, compassionate, professional staff members are ready to make it happen,” Sherrí states. “There is no reason in my mind that anyone with any physical, mental or dietary challenge should not come here and have a seamless experience. Families can relax as if at home, but get the feel of a special night out all in one. We will do all of the advanced preparation and you don’t even have to wash the dishes.” Birthday events for all ages (even adults), scout outings, Parent’s Night Out, Corks and Cooking evenings for adults, and summer and holiday day camps are just a small sample of what Culinary Kids has to offer. “We also welcome home school groups with tailored curriculum, weekly cooking classes for kids, and have even partnered with well-known local chefs to offer lessons on gourmet dishes and culinary nuances like how make that delectable balsamic vinaigrette or garlic aioli sauce, the practice of proper knife skills, and the secrets behind perfect sauces,” states Sherrí. Children’s programs always include good manners, healthy choices and table etiquette as well

as safe kitchen practices like the best way to open a hot oven, safe slicing techniques using the “bear claw” grip, and ensuring that adults always supervise the use of kitchen equipment. “In short,” says Sherrí, “we teach patrons how to run a commonsense kitchen.” As a mother of a child who must have a gluten-free diet, Sherrí can assure strict levels of cleanliness are adhered to and the chances of cross-contamination have been eliminated. “Every member of our management team is Serve Safe certified through the Louisiana Restaurant Association, and also holds CPR and first aid certifications,” she says. “The safety of everyone who walks through these doors is of paramount importance to our team.” She plans to offer classes on gluten-free nutrition and how nutrition may play a role in diseases like Autism, Asperger Syndrome, Diabetes and more. “I personally understand how medical conditions and dietary restrictions affect our lives, and make food something of a chore at times, so we
make a point to accommodate and support people with dietary restrictions.” Children can safely attend school field trips despite peanut allergies or other dietary concerns as Culinary Kids keeps food positive and enjoyable for all, regardless of limitations. Communication with parents, continued education and staff training are priorities especially when it comes to dietary sensitivities. Sherrí has created a space where people come together for the basics and leave with a sense of lasting attachments, both to one another and to the many avenues of the culinary world. As she describes her partnerships and plans supporting a list of non-profit community organizations in St. Tammany Parish she remarks that, “There is a bigger picture in our world, and I believe you should contribute if you’re lucky enough to have the chance.” She says with a smile, “My goal is to connect children and families. You can never fully measure the effect you have as a teacher, but when I saw that moment when a mother and son left my

LOCAL DOCTORS Jennifer Miles, MD, and Arlette Delcham, MD, will lead the way as St. Tammany Physicians Network (STPN) expands primary care into Madisonville this summer. The STPN Madisonville office will join the already established physicians’ offices in Covington and Mandeville. A Franklinton primary care practice likewise brings world-class care to St. Tammany Parish Hospital’s patients in Washington Parish. The new location will specialize in family medicine, including pediatrics and internal medicine, between the town limits and parish line. “It’s very important to be able to serve families near their homes, where they live out their daily lives,” Dr. Miles says. “For example, children’s annual school physicals and well-baby visits are great ways to ensure health over the lifespan.” As with the Mandeville and Covington offices, the new office will provide care for local patients of every age, from newborns to seniors. Same-day appointments will often be available, and the location will accept most major healthinsurance carriers. The board-certified physicians at the Madisonville office will have full access to the resources of St. Tammany Parish Hospital (STPH) as do all STPN locations, from laboratory services and radiology to home health, respiratory care and physical therapy. Services at the new site will include appointments for acute care, chronic illness and yearly physical exams for work, school and sports. “For adults, regular preventative visits detect disease in early stages when they’re most treatable. Seasonal or chronic allergies are not curable, but they are infinitely treatable with appropriate advice,” says Dr. Delcham. “That’s just the kind of primary care we intend to bring into the Madisonville-Ponchatoula area.” Baseline results from regular physicals and key screenings are two great reasons regular visits to your primary health provider are vital to good health. This can lead to chronic problems such as sore muscles, back aches, sleep issues and health problems. “We make it our mission to educate patients on systems that can permanently correct the spine.

Among them, neck pain, headaches (especially migraines), fatigue, numbness in the arms and legs, and tension in the shoulder area. AS AN ORTHODONTIST, there are two phrases that we hear most frequently— “I want my braces on,” and “I want my braces off.” Patients are anxious. Parents, on the other hand, just want answers to questions like, “How long will he wear the braces? How often will we need to make appointments? Will we continue to see the general dentist while in braces?” All of the questions that are answered by the orthodontist fall on deaf ears of the child. They are busy going through in their mind all of the possible color combinations they will be able to wear. Then, all too soon in most cases, once the appliances have been in place for several months, they begin to ask the question, “When am I going to get them off?” Orthodontic movement of the teeth into the correct positions and proper jaw alignment takes time. Most treatment times will average, 12 to 24 months depending upon the individual’s needs. Appointments are usually scheduled every four to six weeks. There are four areas to focus on to complete orthodontic correction in a timely manner. Keep appointments. Missed appointments delay treatment time. Keep teeth and braces clean. Poor oral health slows the process. While in orthodontic treatment, continue to regularly see your general dentist. Avoid foods that damage your braces. Breakage results in added appointments and delayed progress. Wear elastics as instructed by your orthodontist. AGENA, MD, always knew he wanted to find a career where he ultimately helped people. “What drew me to the medical profession was the innate sense that I wanted to do for others, in addition to the fact that I have always loved science and math,” he says. “What drew me to Obstetrics and Gynecology (OBGYN) as my specialty was that after my medical school rotation at LSU, it just felt like a natural fit for me.” As a comprehensive OBGYN practice, Dr. Agena offers care at all levels from routine yearly exams, to high-risk obstetrical needs, and more intricate issues like urinary incontinence and minimally invasive surgeries. “I find it fascinating to perform surgery, just as I find it fascinating to help women through problems like urinary incontinence, where there are so many viable options available on so many levels.” Certified as both a da Vinci gynecologic surgeon, as well as da Vinci instructor, Dr. Agena believes strongly in the robotic system as a comparable option to traditional, more invasive methods. “The daVinci system has a number of benefits,” he notes. “You can tackle more complex problems while minimizing risk.” Large fibroids that may affect fertility removed through conventional surgery can mean a six week recovery period. Robotic surgery can be done with three or four small incisions, and reduce recovery time to approximately two to three weeks. “With hysterectomies, for women who are not candidates for vaginal removal of the uterus, the robotic method offers cosmesis through minimal incisions, less blood loss, and a shorter recovery period all around.” Dr. Agena encourages all women to have their initial baseline gynecologic exam at least by the age of 18. “By this time, all of the developmental phases have likely been reached,” he notes. But he recommends that young women consult a physician earlier if they present with a problem that needs to be addressed. “I will be more than happy to sit with a mother and daughter to discuss what is going on and what can be expected at their initial exam. It is so important for young women to become comfortable with their gynecologic health routine.” A Northshore resident, Dr. Agena enjoys the sense of community and the “over-the-fence” type of neighborliness he has found here, which carries over into his medical practice. “In this type of practice, patients usually come to me in a state of wellness, in an effort to maintain their health. I am able to work in a field where I get to know each of my patients, and over time, most of their families as they decide to have children. Weight-loss surgery is a well-established method of long-term weight control for morbidly obese adults. Compared to non-surgical treatments, it yields the longest period of sustained weight loss in patients who have failed other therapies. AGING GRACEFULLY IS often easier said than done. Dr. John Simon, of Timeless Rx in Covington, sees clients every day who struggle against the effects of aging and who seek solutions to make the struggle easier. “When people reach a certain age, it is the natural progression of things for hormone levels to become imbalanced and for certain symptoms to begin creeping in,” Dr. Simon notes. “Here, we listen to clients’ symptoms, perform a complete blood workup, and then decide on a plan of action using an array of products at our fingertips. But the focal point of our treatment is Bio-identical hormones, which are chemically identical to the hormones produced within the body.” As human beings age, hormone levels may begin to dip toward the lower end of the normal range. When this occurs, usually in post-menopausal women and men over the age of 35, women and men start to experience tell-tale symptoms. For women, things like breakthrough bleeding between menstrual cycles, mood swings, lowered libido, fatigue and decreased ability to lose weight are chief complaints. Men may experience decreased sex drive, fatigue, loss of muscle mass, and a decreased feeling of well-being. According to Dr. Simon, many of these issues are linked directly to hormone fluctuation. “We of course determine that there is indeed a shift in levels to below or near the low end of normal,” he notes. “If there is, then our goal is to bring you back into the higher end of the normal range so that these symptoms can be abated.” To do this for women and men, Dr. Simon touts hormone pellets, placed directly under the skin. “The pellet delivers a continuous, balanced dose of hormones so there is little or no fluctuation,” he says. “Also, the pellet is administered only three times per year for men, and for the majority of women who choose this method.” In addition he recommends Bio-identical hormone therapy and estrogen and testosterone injections. “When you bring a woman’s testosterone back into the high end of her normal range, you will see an increase in energy and in sex drive,” he says. For Whom the Bell Tolls—Healthcare Reform? THERE ARE THOSE, including the ancient Mayans, who say that on December 21, 2012, the world as we know it will forever change— and not for the better. I would like to propose another date: January 1, 2014. Before I tell you why, please indulge me in a metaphor which illustrates this looming change. Imagine, if on that date, we are all given a card which entitles us to free groceries. All we have to do is present the card at the checkout counter, and our food is free. The first month or so we go to the store as usual and procure our grocery list as we use up the supplies we still have in the pantry. But, as cupboards become bare, parking lots at all grocers become overfull at all hours. After a long wait, we enter and because of the nowoverwhelming demand for foodstuffs, we are presented with a flyer announcing a simple new rule—only five items allowed per family per day. As you walk down the crowded aisle, you notice that many familiar, quality items are either in short supply or simply not available. When you inquire about a special roast or fish your family particularly likes, your name is put on a waiting list of special requests until these items become available. After negotiating the mile-long checkout line, your five items, enough for a day or two, are purchased with your card. As time goes on, life revolves more and more around hours-long trips to the
grocery every couple of days. Those who are too old or otherwise unable to access the store gradually become malnourished or eventually starve—the ultimate consequence of the government’s “generous” free food program. I have personally witnessed a system like this while living in a modern country overseas, but it was not a government-run grocery program. It was government-run healthcare. For example, a sixty-five-year-old patient and friend of mine felt tired and went to her family doctor. She was found to have iron-deficiency anemia. In our present U.S. system, she would have been tested for uterine or colon cancer, but budgetary restraints regarding diagnostic tests limited her treatment to only a prescription for iron pills. She died 18 months later of metastatic colon cancer. Whether the Mayan apocalypse of 2012 or the federal health care mandates of 2014, let’s hope the future is brighter than the predictions.

Does Chicken Skin Bug You? I RECENTLY SAW a new client who was bothered by these white bumps on the back of her arms. What bothered her more was not being able to shave her underarms because of these bumps. When sleeveless is in style in the summertime, chicken skin or goose bumps can be especially unsightly and problematic. This skin issue, called Keratosis Pilaris (KP), affects quite a few of our clients’ bodies and faces. Protein in the skin, called keratin, forms hard plugs within the hair follicles. There is no cure, it can only be managed. Body Sugaring paste exfoliates, moisturizes and removes the unwanted hair that shaving, plucking or waxing only complicates. Exfoliating the affected skin helped my client deal with the bumps, and prepared her for an extremely pleasant experience that proved to be the answer to her going sleeveless with confidence this summer. THE TIME TRAVELER’S WIFE, by Audrey Niffenegger, is an unusual love story written in an easy-to-read style, and enhanced by elements of science fiction. A woman named Clare meets her future husband, a handsome time-traveling librarian named Henry, when she is six years old, and he is 36 years old. His rare genetic disorder, Chrono-Displacement, causes him to bounce back and forth in time, usually without warning and arriving (inconveniently) naked. The novel is told from both Henry’s and Clare’s points of view, allowing them each to express their individual frustrations with the affliction. Above all, Henry desires a normal life, but due to his disorder, he experiences only glimpses of normality, which he treasures. For the harried Henry, Clare embodies security, comfort, and safety. She is a refuge from his unpredictable and sometimes dangerous world. Clare longs for normalcy. Much of the tension in the novel is due to the secrecy of their sporadic relationship prior to their marriage, during Clare’s early years. Unfortunately, after the marriage, they are both concerned about passing Henry’s affliction on to their offspring. Despite their problems, the love between Henry and Clare is the glue that holds their world together through time, and through their increasingly problematic life. IT HAS BEEN a tremendous privilege to serve the citizens of Covington over the past year. Since taking office last July, my administration has taken on many challenges. I am proud to say that we have already accomplished some major goals and have made great progress toward achieving others. In April, we went live with our new City website, www.covla.com, which has made information and services much more accessible to our citizens. In addition, we have streamlined and simplified city forms and applications, all of which are currently available online. We have successfully designated money in the 2012 budget for vital capital improvement projects, particularly the much-needed overlaying of streets and alleys throughout the downtown. Also, the Department of Transportation and Development will be overlaying
Columbia Street from Collins Boulevard to Boston Street this year. When the project is complete, the city will take over maintenance of it. In the coming months, citizens can expect to see new signage, planters and kiosks in downtown, as part of the Boston Beautification Project, which has been made possible through grant funding from the state. My administration has placed much emphasis on the improvement and upkeep of Covington’s landscape, as evidenced by our first place victory in the Louisiana Garden Club Federation’s Cleanest City District Competition. All of these improvements and more will serve to better the quality of life for our citizens and promote economic growth in our city. I look forward to continuing to serve our community in the years to come.

AFTER WINNING FIRST place in the District for the Cleanest City Award, sponsored by the Louisiana Federation of Garden Clubs, Mandeville took third in the State. I want to thank all of our residents, the Keep Mandeville Beautiful Board and volunteers who worked hard to keep our city clean. Our lakefront has never looked better. The gazebo has been landscaped, the historic water fountain renovated and landscaped, swings and arbors have been installed, and playground equipment is going in at the harbor playground. Citizens from both the east and west sides of Mandeville in committees on city planning have brought in creative ideas and recommendations for future development. Public Works does a great job in making our city a desirable place to live.
We re-signed a new contract with Progressive Waste Solutions of Louisiana, Inc. to collect our solid waste garbage, recycle waste and green waste. The competitive RFP process involved city staff and citizens rating the best company with a competitive price to handle our needs. Our Mandeville Police continue to provide a safe community for our peace of mind. Their rapid response and quick resolution of crimes sends the signal to those looking to prey on Mandeville citizens. Our community would not be what it is without the safety and security we enjoy. If it’s been a while, I hope you visit Mandeville soon. It’s a great place to dine, shop, stay and play.

WE ALL MAKE resolutions for the New Year, and I can safely say that probably 75 percent of us have committed to get fit in 2012. We know what it entails to be ‘fit’ as an individual, but what are the characteristics of a ‘fit’ community? Here are some questions we should ask ourselves and our leadership. Do our community members desire to take on leadership roles? Is there a high degree of cooperation among our organizations? Is there a soaring level of civic pride and ways for citizens to demonstrate this pride? Does our community encourage its youth to take on active volunteer roles? Is there a thriving art community? Does our community have
a strong cultural and spiritual life? Does it welcome newcomers showing respect regardless of differences? Does our community invest in economic development and business retention programs to promote a diverse and vital economy? Does it work diligently and creatively towards environmental sustainability? Does our leadership consider the well-being of surrounding rural areas in their planning? Last but not least, does our community have a vision of what it considers community fitness and does it have a strategic plan in place to achieve that vision? If the answer to these questions is a resounding yes—you quite possibly live in the fit city of Ponchatoula.

AS A CHAMBER, we recognize the importance of an educated workforce and the benefit it brings to our members. We are very fortunate to have the strongest school system in the state right here in St. Tammany Parish. The Education Committee’s mission is to connect local businesses with the students and school systems. Chaired by board member, Steve Kernahan, it also serves to enhance student skill development, as well as to help our members be aware of and participate in, opportunities to provide mentorship and career experiences with local school students. Students who need career experience and mentorship can connect with businesses in need of employees. The Chamber presented scholarships to three outstanding students who demonstrated academic excellence, are involved in extracurricular activities, and
give back to the community through service hours and community involvement. They were, Amber Fern Soileau, Pearl River High School; Nicole Irene Kernahan, Northshore High School; and Laura Elizabeth Garcia, Salmen High School. The Educator of Distinction award recognizes an educator with devotion and commitment to his or her students. The 2012 Educator of Distinction honoree is Theresa Ellen Braud of Slidell High School. Educators Laura Aysen, Erik DuBuisson, Emily Fowler, Chanel Cousin-Hawkins, Charity LeBlanc, Suzanne Pichon and Joshua St. Cyr, were also recognized for excellence in education.
