Growing up with three sisters and two brothers, along with an extended family of boarders that lived in my parent’s boarding school, I was reminded of the special bond we share with our siblings when I met Christina and Amberleigh Carter, our July Enterprising Women. They have both taken different paths and pursued their desire to help others lead healthier lives. award for its coffee house in Madisonville and a brand-new second location in Covington, Abita Roasting Co. has remained true to the company’s original mission—to be the best purveyor and roaster of specialty coffees in the Gulf South region. So while the coffee shops are gaining popularity for their breakfast offerings, lunch specials and gourmet sandwiches, they are—at its core—all about the coffee. Kyle Ross, Abita Roasting Co.’s founder and roast master turned his passion into a business eight years ago. Equipped with a coffee roaster, packaging supplies and website, Kyle began roasting in small quantities while still working full-time as a regional sales manager. “From the moment a friend introduced me to specialty coffee, I was hooked,” Kyle explained. “My involvement evolved from ordering coffee online and learning more about nuances of

different coffees to finding a specialty roaster in Mississippi and ordering directly from him. It wasn’t until Hurricane Katrina wiped out his roasting facility that I transitioned from coffee enthusiast to coffee roaster. By that time, there was no way I could go back to purchasing coffee from the grocery store.” The company picked up momentum over the first few years, attracting a loyal following from clients across the country and moving into the wholesale arena with the acquisition of Money Hill as its first corporate account (an account it still holds today). By 2012, Abita Roasting had reached a critical mass. Kyle knew he could not continue working 60+ hours per week if he wanted to grow the business to its full potential. His wife Arie offered to return to work full time as a nurse so that Kyle could devote his full attention toward the business. “I’m not sure I could have pulled the trigger without her support and dedication to helping me achieve this dream,” he said.

It is safe to say that Kyle’s dream has already achieved more than he ever imagined. With over 100 restaurants or hospitality venues in South Louisiana and Mississippi, Abita Roasting now roasts more coffee in 10 days than it did during its first full year of operations. With the coffee gaining popularity on the wholesale side, it was only a matter of time before the idea of retail coffee shops would

Yet, without experience in the food and beverage side of the business, Kyle was hesitant to expand into this area. When lifelong friend, businessman and owner of Friends Coastal Restaurant Ryan Richard proposed a partnership in the coffee houses, Kyle knew the missing piece of the puzzle had been filled. The pair opened its location on Water St. in Madisonville in September, 2013. Located in a charming Coquille cottage, the coffee house originally served coffee and a few pastries supplied by local bakers. In response to customer demand, they added additional breakfast items and a few sandwiches. Both locations now offer a wide range of menu items during the day and wine and cocktails in the evening. The Madisonville location, with its lush courtyard, is also available for special events, private parties and wedding receptions. And of course, there is the coffee. In addition to freshly ground coffees, espressos and iced creations that customers can drink on-site, there are one-pound bags of coffee beans in a variety of signature blends and single estate coffees are available for purchase. “The expansion of our menu and services really came as a response to customer demand,” Ryan said. “People liked the atmosphere so much that they lingered longer. The longer they would stay, the more options we wanted to provide. We put as much attention into the quality of food and service as we do to the coffee.” As the only commercial roaster in St. Tammany Parish, Abita Roasting will increase its footprint when it opens its new roasting facility in the Abita Springs city limits early next year. Along with additional space for roasting and packaging, the facility will also have a private tasting room. “Our focus has always been on our customers. you can really understand the South if you don’t understand barbecue, as food, process, and event” says John Shelton Reed in Barbecue Sociology. It’s July and the dog days of summer have arrived ablaze with a sultry, steamy barely whisper of a breeze. The last thing you want to do is turn on the oven or perform any activity that may generate extra heat. I look longingly at the outdoor grill and the empty cold smoker and recall my most memorable barbecue experiences across the back roads and blue highways of the south. I am a brisket lovin’, rib gnawing, pulled chicken lover participant in the burning nationwide barbecue debate. Barbecue is the slowest of slow cooked foods and brings regional lore and traditions with it from across the south. Barbecue is a basic piece of Americana and a summer pastime for Foodies and Friends. In my lifelong quest to discover the perfect barbecue, I have had the good fortune of visiting many of the celebrated barbecue temples of the south. My first introduction to Texas style barbecue was in Fort Worth at Angelo’s and Sonny Bryant’s in Dallas. Angelo’s delicate beef brisket and pork ribs slowly smoked over hickory with a dry rub brought me to my knees. Could this really be barbecue? I thought barbecue was chicken thrown on a grill and slathered with an insipid red sauce from a jar.

This exquisite experience was beyond any food reality that I had ever known. From that point forward I was a convert. Barbecue became my religion and I was on the road seeking barbecue adventures. Next stops: the Rendevous in Memphis. Dry charcoal cooked ribs, with a fiery mustard slaw and secret seasoning. Lexington barbecue in North Carolina. Pulled pork shoulder cooked over oak or hickory served with a traditional vinegary relish like slaw and a thin vinegar and ketchup sauce. Abe’s in Clarksdale, Mississippi at the crossroads of the Delta. Barbecue beef and pork or tamales, with saltines of course, and their signature tangy sauce with sides of beans and slaw or potato salad. These are just a sampling of my favorite barbecue experiences. Now fire up the grill or the smoker and call a few friends. You just have to decide on the meat: pork, chicken, beef or maybe all three. Your preferred method of cooking: smoking or charcoal grilling. What kind of wood to burn: hickory, pecan or another favorite. Mix up a sizzling side sauce and finally, but not ever to be forgotten, the all important sides: baked beans, potato salad and slaw. Barbecue cannot be enjoyed alone. Mark Dudley’s Simply Perfect Smoked Meats MY FRIEND

Mark Dudley makes the best smoked meats. I anxiously await my invitation to their home each year for the annual Christmas party or other holidays because I know that Mark will have prepared a smoked turkey, brisket or pork butt. I have learned from him that the art is in the slow cooking. He also makes a mean Sazarac…which was probably a survival strategy that evolved from the 8-12 hour cooking and waiting process. Here is his simple, but tried and true, smoking method that he learned from his dad. After 45 years of smoking, he hopes to pass on this art and technique to his three sons.

Ingredients: 1 Brisket and/or pork butt, 8-10 lbs, bone in 2. Tony Chachere’s

Directions: Rub the meats with a thick layer of Tony Chachere’s and place in the fridge overnight. Mark swears by his electric smoker. The trick is to never open it if possible. He uses hickory chips or cherry wood chips but not chunks, and follows the instructions for the smoker on how to add these. Fill the water pan to the top. Place the meats on the upper and lower levels of the smoker and cook the meats for 8-12 hours. If you hear the smoker sizzling, you may need to open it and add more water and wood chips, quickly. Some people use a thermometer that provides a constant reading outside of the smoker. When finished, remove meats from the smoker, place on a platter and cover tightly with foil. Let the meat rest for 30-60 minutes before slicing. 2 0 11

One and Done I HAD A CONVERSATION

with an old shrimper who recently trawled in Lake Borne and caught a boat full of shrimp after only a few hours of trawling. This reminded me of a treasured memory: my grandfather and I throwing a cast net off the Lake Pontchartrain seawall, netting a few shrimp at a time until we could finally return home triumphantly with a full ice chest. In many tasks in life, there are basically two approaches— the slower, measured, methodical approach and the “one and done” approach. The former involves less preparation, less skill, less risk, and more repetition such as catching shrimp with a cast net. The latter requires specialized equipment (boat, trawl, winch, expertise in the art of trawling for shrimp), more preparation, risk and expense—but much less time. One yields a few pounds, the other a few hundred. What in the world has this to do with cosmetic surgery and dermatology? When treating skin concerns, whether from aging, sun damage, or genetic tendencies, there are two basic approaches, both with advantages and drawbacks. Many prefer the “small catch” approach because our busy lifestyles today necessitate little or no downtime or risk, although all treatments have tangible risks. For the face, these include Botox® and its cousins; injectable fillers; spa treatments (such as microdermabrasion and gentle peels) and various radiofrequency, ultrasound, and non-ablative laser treatments. Body applications include

cryolipolysis and massage/suction/laser-type devices—all of which must typically be done in multiples, often producing only minimal and/ or temporary improvement. While this “drivethrough” approach allows for less downtime, the need for multiple treatments and the incremental, often fast-fading results must be considered before choosing one of these treatments. The “one and done” approach almost always involves more healing time, although rarely more than a week. Is Sitting the new Poison? FIRST THERE WAS FAT. It was evil and it was going to kill us if we didn’t rid it completely from our diets. It made sense and we all believed it. Then they said, well fats aren’t really all that bad. The things that are actually killing us are all of those nasty carbohydrates, especially the simple ones…whatever they are. Then more recently, something new came on the horizon: the infamous gluten. Very few know what it is, we all just know that it must be bad for us and there are now complete rows in grocery stores that offer gluten-free products. Well, don’t look now but there’s a new poison on the block! And that poison is…wait for it…sitting! Yes, sitting is the thing that is actually killing us. There is an emerging field of research out there that some refer to as “inactivity studies.” Researchers in this field are looking at how unhealthy various groups of people are and relating it to their daily activities. Some of these studies have shown that people who sit down for more than six hours out of the day have a significant elevation of risk for obesity, diabetes, cardiovascular diseases (stroke, heart attack, high blood pressure), mortality and yes even cancer. Many of these researchers are proposing that office work should now be accomplished in the standing position. Enter the “Standing Workstation.” The fanatics are incorporating a treadmill! They must be more coordinated than I am.

All of this is good news for your local vein doctor because prolonged standing as part of your profession is one of the greatest risk factors for the development of Chronic Venous Insufficiency. Many of our patients are in professions like nursing, teaching and retail. When leg muscles aren’t contracting, the veins in the legs don’t work as well and this ultimately leads to valve failure and major vein issues like varicose veins, spider veins, swelling, achiness and skin darkening. Do I believe all the hype about standing at work? Of course not. Activity is good and it should probably be incorporated into every aspect of our lives in some reasonable way. Looking like a gerbil in the workplace however is probably not necessary. For my purposes I think I’ll just get my benefit by walking up and down the “all natural, organic, fat-free, sugar-free, low carb and of course gluten-free” aisle of my local grocery.

a flight, I noticed the man standing in front of me giving up a bottle, which I am sure he needed, I mean who travels with calamine lotion? I am familiar with this because of my annual summer rendezvous with poison ivy. Friday, I was embarrassed to call my dermatologist to say that it happened AGAIN. He has rescued me with shots, steroids and topicals. Before calling him I had tried essential oils, vinegar and calamine lotion, which didn’t provide relief quickly enough. I think the problem is that I am too confident that I can overcome this problem. One year, Katie came home from LSU, saw my eyes swollen half shut, and immediately brought me to instant care. I hadn’t thought to go myself; I thought it would get better. The ivy really isn’t the problem either. Ivy does what ivy does, I need to change my behavior and admit that I am no match for the family of ivy. Apparently, I find that hard to admit. It starts out innocently; I go outside, notice a weed, pull it up, get another weed, pinch a dead blossom, then before I know it an hour or more has gone by, and I’ve gotten into poison ivy, which doesn’t even bother me one bit at the time; it is sneaky. It is like when I used to smoke and a friend troubled by a weight issue explained to me. “You don’t have to smoke; it’s easier for you to stop, but I have to eat.” I think I have to go outside. I want to go outside, in fact, I really enjoy doing yard work. My plan, now is to buy elbow length gloves and cover in cotton clothes from head to toe. Sitting here covered in welts, applying topicals, it is easy to promise myself that next time, I will practice doing yard work in moderation... I hope you can too with the things that seem to sneak up and overcome your good intentions.

Amberleigh and C hristina Carter ENTERPRISING WOMEN Back to Basics SIMPLICITY. PURITY. CLARITY.

Sisters Christina and Amberleigh Carter do more than live by these words—they work by them as well. Because both women experienced certain health ailments as children that were exacerbated by prescription medications, their mother Bonita sought out alternatives. With the interest and support of their father Gary, their parents began introducing herbs and natural supplements into their diets, and they both experienced substantial and immediate improvement in their wellbeing. As part of a health-conscious family, Christina and Amberleigh, along with their older sister Brittany, continued to thrive throughout their pre-teen and teenage years. Graduates of Our Lady of the Lake Elementary School and St. Scholastica Academy, they were well-rounded students—participating in outdoor activities, playing musical instruments, painting and volunteering in the community. They did not realize at the time, but all of these experiences would set the stage for their future and their careers. Christina incorporates her extensive education in psychology with an acknowledgment of nutrition and love for the creative arts in order to help children who are struggling with behavioral problems or interpersonal issues through her company, Intu It Parenting and Wellness. In a similar way, Amberleigh has combined her background in science and the human anatomy with her passion for nutrition and exercise to form the basis for her company, Kinection Holistic Health. Christina said that from the time she was a young teen, babysitting and volunteering with youth organizations and summer camps, she knew she wanted to work with children. “I’ve always felt a special connection with kids,” she explained. “In college, and later in my graduate

In fact, I wrote my master’s degree thesis on the parent-child relationship.” The goal of her practice is to offer parents and children a holistic approach to identify and transform maladaptive behaviors, thoughts and habits into functional and harmonious wellbeing. Focusing on creating a balance between the mind, body and spirit, Christina helps families become more mindful and present in their relationships with one another. “Intu It provides therapies that take into account every aspect of a client’s life—from diet and sleeping habits to stress levels and exercise. Together we work to get back to basics—re-establishing lines of communication and other tools to address challenges. Everyone is accountable for the roles they play in the relationship,” she said. While this approach is relatively new, Christina believes people on the Northshore are looking for alternative therapies, especially as it relates to children. “For years, the common practice was to medicate children with behavioral problems. Parents today are more empowered to ask questions of their physicians and to seek more natural solutions to their problems. With the movement toward holistic medicine and nutrition, it is only natural that we are now looking at emotional and behavioral issues through that lens as well.” When Christina wants to consult with Amberleigh on nutrition and exercise for her clients, she only needs to walk a few steps from her own office door. Both women’s offices are located inside Indigo Studio in Covington. In fact, it is quite common that the two bounce ideas off one another in their practices. “While I lean more toward health and the physical body and Christina leans more toward behavior and the emotional body, we recognize that all of these factors are interconnected. It is great to have a resource that is not just close in proximity but also close in philosophy,” Amberleigh explained. As a young girl, Amberleigh was deeply affected by watching their grandmother suffer from and succumb to diabetes complications. She became determined to enter the healthcare field, particularly in the area of preventive medicine. Yet, her own health challenges in college led her to pursue a more natural route to wellness. Experimenting with recommended guidelines for food intake and exercise, she had bought into every “healthy snack” on the market and focused on moving more than she ate. However, by cutting calories and moving more, she gained a substantial amount of weight, along with other unhealthy symptoms. “I was eating salads and avoiding meat, milk, butter and carbohydrates. I was doing cardio at least once per day, most often two times a day. And yet I was still gaining weight,” she said. “I began reading everything I could on nutrition and started integrating carbs, meat and natural fats back into my diet. I replaced most of my cardio with strength training. I ditched the processed, low-calorie snacks for real food, made sleep and cooking for myself a priority, and I immediately felt better, having reshaped my body in the process. I began to focus on moving and eating in the right way.”

Through Kinection Holistic Health, Amberleigh teaches people how to eliminate disease and dysfunction by eating the right foods at the right times and in the right ratios for each person’s particular body. She also integrates exercise and movement into her overall prescription for health. INTERIOR DESIGN is often a blend of the styles and tastes of the homeowners and designer. A melding of old furniture, new high-end pieces and flea market finds. It is actually rare for an interior designer to see his or her design from the beginning stages of inspiration, to fruition in its entirety. When the designers at Niche Modern Home were given the opportunity to design a home for the Home Builders Association’s Parade of Homes, they leapt at the chance. For almost a year, Steve Macloud, Jeff McNeally and Kim Banton worked with Highland Homes to create an innovative and beautiful space in TerraBella Village for this year’s parade. From the finishes, to the wall colors, tile and lighting the Niche team was able to design a home that exudes modern coastal living. The moment you approach the home, the curb appeal draws you in. SmokeTree Landscape designed and landscaped the outdoor area and Niche designed the water features and living space—a sugar kettle in front of the home and an outdoor fireplace, seating area and fountain in the courtyard.

Soft colors and planked walls in the entry way lead in to an open floor plan featuring living, kitchen and dining areas as well as a gorgeous outdoor living area. The kitchen and dining area boast wooden beams and two coordinating rustic chandeliers, one over the dining table and one over the crisp, modern, white quartz island countertop. The kitchen features a large pantry, allowing you to eliminate clutter from the rest of the room. The living area backs up to the kitchen, separated by a French country style sofa table and pair of large lamps. It is serene, with classic linen slip covered sofas and chairs, artwork by local artist Abby Sembera and an oak coffee table made with wood reclaimed from European warehouses. The master bedroom also follows the tranquil, spa-like atmosphere, opting for a neutral color palate paired with soft blues. The pale blue, linen slip covered headboard makes a subtle statement flanked by matching elm nightstands topped with blown glass lamps made from recycled glass. The en-suite master bath, finished with sleek white cabinets and modern blue walls (“Kentucky Haze� by Benjamin Moore) brings more tranquility into the already relaxing master. Contemporary brass light fixtures and wide-plank tile complete this luxury bathroom. All lighting, accessories and furniture were ordered specifically for the home and are available at Niche.

legal Beneficiary Basics MOST OF US will have at least one asset that pays upon

their death through a beneficiary designation. These beneficiary-driven assets are retirement accounts (e.g. IRA, 401k, 403b, TSP, deferred comp plan), life insurances, and annuities. Beneficiary-driven assets pay upon the account holder’s death to the named beneficiaries without needing to open a succession/probate proceeding through the Court, and without the assistance of a lawyer. Generally, all that is needed for payment is a death certificate and the beneficiary’s claim form. However, we often find that when someone dies, his or her beneficiary-driven accounts have no named beneficiary. Sometimes this is because a beneficiary was not named at all (which no good financial advisor should allow) or the beneficiary that was named has predeceased the account holder and there was not a contingent (or secondary) beneficiary named. If you are not 100 percent sure of whom your primary and contingent beneficiaries are then I suggest you do the following: locate all of your beneficiary-driven assets and request new “change of beneficiary” (COB) forms from the providers. Clearly name your primary beneficiaries. The company’s form usually requires the beneficiary’s legal name, date of birth, social security number

and address. Many forms now allow a “per stirpes” designation (meaning “by branch” in Latin). This means if your named beneficiary predeceases you and leaves children, instead of paying to the other surviving primary beneficiaries, it will pay to the issue of the deceased beneficiary. Be sure to name a contingent beneficiary in the event all the primary beneficiaries (and their issue if you have selected “per stirpes”) have predeceased the account holder. It is common to name your spouse as the 100 percent primary beneficiary and all the children, equally and “per stirpes,” as the contingent beneficiaries. Keep a hard copy of your COB form with your important documents and follow-up with your provider if you do not receive some type of “confirmation of beneficiary” acknowledgement (and double-check it for accuracy). Most banks now offer “payable on death” (POD) designations on all accounts held at their institution. However, Louisiana still does not allow “transfer on death” (TOD) designations for brokerage accounts. Ronda M. JULY IS A MONTH

of independence! School is out, kids are home and vacations are in full swing! The garden is full of green and sparkles after all of spring’s preparation--or is it? When the temperature heats up, who wants to spend hours working in the hot sun? Not this reluctant gardener, for sure! I want to sit back and sip a cool libation and dream of soft sea breeze kissing my face! Dreams are nice, but to appreciate independence there is always some work that must be done. My suggestion for this July: 1. Mow and edge the lawn weekly—set the blade a little higher now that the summer heat has set in. 2. Pull weeds as soon as they appear—a daily check of flower beds makes weeds easier to control and less likely to spread. Kids could easily be taught to make a game of this. Most weeds—win a prize! 3. Trim unruly new growth on shrubs and trees—doing this now will prevent clipping growth that may hold blooms for next spring. When fall comes around clipping should be discouraged. 4. Pinch the annuals to make them spread— blooming annuals need a little pinched off at the tip to make the plant sprout a new growth stem and not get too spindly. Also, remember to deadhead the finished blooms. Pinch them off and turn them into the soil near the plant. If they had seeds, they may come back next spring.

5. Water thoroughly at least once a week— this means the whole yard. Let the sprinkler run until you start to see a small puddle. Hopefully this will keep the lawn and the plants quenched. 6. Add some easy care bloomers—daylilies would be a great addition to any sunny spot in the yard. They are easy to care for, will multiply easily so give them space and come in a wonderful variety of colors and sizes. Plant now and watch them bloom ‘til frost sets in, and then watch them return next year. 7. Finally, to honor the summer sun, plant sunflower seeds. This is a fun project for the whole family. Purchase some small, planting containers or use an egg carton and some potting soil. Place one or two seeds in each compartment. Keep them moist and in partial sun. When the sprouted plant is 4-6 inches tall, replant in a sunny garden. About 60 days later you should have some buds and then a welcome bit of color in the garden. Seeds are edible (birds love them too). Watch the big sunflowers follow the sun! Now, go enjoy your independence: splash in a cool pool, sip lemonade and laugh when the sunshine lands on your shoulder! Summer in the garden can be a vacation every day! Women Build & W.A.T.C.H. Appreciation Reception

Habitat for Humanity St. Tammany West held a Women Accepting The Challenge of Housing (W.A.T.C.H.) and Women Build appreciation reception at the home of Pierre and Suzie Villere on Wednesday, June 10. W.A.T.C.H., a group of dedicated ladies who ensure Women Build continues to thrive in western St. Tammany, donated $32,000 toward building three safe, affordable homes during Women Build 2014. This annual fundraiser for Habitat for Humanity St. Tammany West had 60 groups and 354 volunteers that helped build the new homes in Mandeville.
